Dazzling Milan The most wonderful time of the year has begun with Christmas gift shopping, holiday cocktails and family dinners. The atmosphere is cheerful and festive. You can feel it in the streets of the historical district, decked out with lights and decorations, and then there is the spectacular Christmas tree in the Galleria. Even here at the Mandarin Oriental, Milan, holiday festivities are taken very seriously. Everything takes on a new look. At the Seta Restaurant and the Mandarin Bar & Bistrot, we have prepared customized menus with new and interesting dishes to celebrate Christmas Day lunch and New Year’s Eve in style. There is no lack of creativity and originality in the choice of cocktails, perfect for all those holiday toasts, so much so that the Mandarin Bar & Bistrot has been ranked among the top 45 Hotel Bars worldwide by the Verified List for 2019’s World’s Best Hotel Bars presented by the Forbes Travel Guide. It wouldn’t be a party without a good Panettone: in Milan, this special dessert is an institution as well as a tradition and today, the typical holiday treat is experiencing a moment of renewed interest. Our Pastry Chef, Nicola di Lena, together with his team, has prepared it following an old recipe: have a piece sitting comfortably at the bar or buy one to give as a gift. It’s wrapping is an ode to joy, inspired by Federico Fellini since next year will be full of celebrations marking the 100th anniversary of his birth. A real delight bound to impress. And lastly, the most glamorous event of Milan’s winter season is Opening Night at La Scala on December 7th. This year, the 2020 season will be inaugurated with Tosca, Giacomo Puccini’s famous opera, sung by superstar soprano Anna Netrebko and conducted by Riccardo Chailly. Happy holidays!

A Walk on the Bright Side
In Milan, the first Van Cleef & Arpels exhibition in Italy, the Haute Joaillerie Maison with style, craftsmanship and a vision.
A jewel is eternal and, at the same time, ephemeral. In it, art, beauty, seduction and tradition coexist in perfect harmony. All this and much more is on display at the Palazzo Reale exhibition. Over 500 creations of jewellery, watches, precious objects and archival documents have been collected from the founding of the maison in 1906 to its present. Wandering through the stunning rooms of the Prince’s Apartment and the Hall of Tapestries, you will see over a century of goldsmith mastery, illustrating Van Cleef & Arpels’ ability to be an exemplary interpreter of the times, without ever compromising on aesthetic values.

There are three sections – hence the name of the exhibition, Van Cleef & Arpels: Time, Nature, Love – chosen by the curator, Alba Cappellieri, professor at the Polytechnic University of Milan and director of the Vicenza Jewellery Museum. She selected the key concepts using inspiration from the great writer Italo Calvino and his book Six Memos for the Next Millennium.

The first part is dedicated to time. The time necessary to create these small treasures, but also time as a historical period, which has inevitably left its mark and inspired the creations themselves. It is divided into ten rooms, the first which is entirely dedicated to Paris. The next part is on love, with creations representing some of the most passionate love affairs in history, like that of Wallis Simpson and the Prince of Windsor. The final section is on nature, which has always been a source of inspiration for the house. Throughout the course of its history, nature emerges in the Maison’s ability to transform flowers, animals and insects into an enchanted world of a thousand shapes and colours.

On December 31st, the New Year’s Eve dinner will be a moment to remember, the perfect way to end the year and start 2020 in style: at the Mandarin Bar & Bistrot, you won’t want to miss the pig’s trotter with lentils, one of the most traditional and symbolic Italian dishes for the last evening of the year. This is accompanied by creative proposals like sea bass with thymescented broth, ravigote and seafood sauce and tonka bean flavoured veal cheek with almond milk celery cream. The finale is the Gâteau Saint Honoré, prepared by pastry chef Nicola di Lena while in the background, live music animates the entire evening.

For those who prefer a more intimate celebration and enjoy haute cuisine at this special time of year, Executive Chef Guida at the Seta has created an eight-course menu, from crustaceans ravioli with king crab soup to turbot with Jerusalem artichokes and caviar. Waking up on the first of the year should be slow, sweet and cozy. Over brunch between friends, make yourself comfortable at the Mandarin Bar & Bistrot with its soft lighting and relaxed atmosphere. Here you can enjoy tortelli pasta in broth, roasted chicken with rosemary scented potatoes and honey sauce, accompanied by an excellent Bloody Mary, the most famous of brunch cocktails, or by a mimosa. The dessert buffet is a triumph in itself to start the year off the right way.

Sweet Dreams From breakfast choices to refined creations for the Seta Restaurant: working behind the scenes in this sweet and sparkling world is Pastry Chef Nicola Di Lena, recently honoured by the prestigious food and wine group, Gambero Rosso, in their “Pasticceri & Pasticcerie” (Pastry Chefs and Shops) guide for 2020.
Apulian roots, Sicilian mother – “the croissant with ice cream is one of my favourite desserts and I offer it here at the Mandarin Oriental, Milan” – and a long-standing relationship with Chef Antonio Guida, with whom he has worked for fifteen years. “I have free reign in the dessert realm, we always find a meeting point,” says Di Lena. When we arrive for our interview, the panettone production has just begun. Panettone is a typical Milanese dessert and Di Lena serves it to patrons of the Mandarin Bar & Bistrot, accompanied by mascarpone cream. It is also available in a colourful and cheerful parcel, a nod to Fellini. We make our panettone following a historic Milanese recipe, without icing and almonds, using raisins, candied fruit and a hint of vanilla” explains the pastry chef, who together with his right-hand man Marco Pinna and a team of seven pastry chefs, creates wonders that enchant and delight all the guests. Croissants and breakfast cakes to single portions served for lunch and dinner to handmade bread and breadsticks for the complete gourmet experience.

“While you prepare the batter and combine the ingredients, you feel a special kind of energy” shares Di Lena, whose passion and technique have earned him important awards, including the prestigious Prix au Chef Pâtissier 2019 and most recently, the “Best Pastry Chef ” award in the “Pasticceri & Pasticcerie” 2020 guide under the section dedicated to the most “interesting pastry talents in the hospitality industry,” to quote the guide itself. Even though the dessert menu changes seasonally, there are a few signature creations like Tobacco, liquorice and coffee: “everyday we try to grow and improve, adding new ingredients, experimenting and running trial upon trial, without ever forgetting the aesthetic factor. Sweets must be especially pleasing to the eye,” he concludes.

The Scent of a City
Face to face with Paolo Vranjes, founder and nose of the famous Florentine brand of home fragrances and cosmetics, Dr. Vranjes Firenze.
The skyscrapers of Porta Nuova and the narrow streets of Brera, creativity and business, traditions and ideas, fashion and design: encapsulated in an aroma. It is Milano, the home fragrance by Dr. Vranjes Firenze dedicated to the city of the Madonnina: «A scented palette of harmonies that captures the city’s personality: dynamic, innovative, sophisticated», explains Paolo Vranjes, founder and nose of the celebrated Florentine brand of home fragrances and cosmetics that bears his name. Milano is also the scent that welcomes guests at the Mandarin Oriental, Milan: General Manager, Luca Finardi, wanted this fragrance to become a distinctive feature of the hotel. A question of elective affinity. Dr. Vranjes, what does Milan smell like? When it comes to this city, it was only natural for me to look for the most refined raw materials: cardamom, a series of peppery notes, a very specific Madagascar vanilla, a hint of cedar and sandalwood. Do the Mandarin guests appreciate it? Yes, they often come to the store asking about the fragrance. That’s what happened, for example, with Mohammed Alshaya (owner of one of the largest retail franchises in the Middle East, ed.): after smelling this fragrance in the hotel, he invited me to his home in Kuwait and a wonderful collaboration was born. It foresees the opening of ten monobrand stores in the next few years, two of which are already active in Kuwait City and Dubai. How did your love for essences come about? My grandfather had a collection of essential oil bottles and by the time I was six, I was already attracted by those particular smells. At 12, I had created a semi-professional chemical laboratory: once a month, I used to spend my allowance on flasks, distillers, separators and reagents. From that moment on, I followed a one-way track: I graduated in chemistry and then went for my pharmacy degree. Why did you choose to specialize in home fragrances? Because they deal with the most intimate aspect of people. It’s what you want to smell when you go back to your habitat, your refuge: you choose them for yourself, to feel something, and it’s not based on the way you want to look.

For 36 years, you’ve been the only nose of the Dr. Vranjes Firenze brand. Where do you get your inspiration? At the heart of it all burns the curiosity to continually discover new scents. I work with more than 2,200 essences: in order to stimulate creativity, it is essential to take the time, in silence, of going through them one by one. But inspiration is also found in travels, a person, or a place. Speaking of places: Florence has always been at the heart of your creative and productive process. Why this city? I was born and raised in Bologna, but I crossed the Apennine Mountains twice for love: love for the city, which immerses you in beauty, and love for my wife, who has always been a fundamental part in the growth of the company. What kind of year will 2020 be? Two new fragrances will be presented, one in the spring with fresh, sparkling notes, another at the end of 2020 with an incense base. We will also continue expanding our line of fragrance furnishings: in addition to hand blown glass candles produced by artisan glassworkers in Empoli, scents for the car and many other objects will be coming out. With these objects, you can “decorate” every area with various scented essences. We like to consider ourselves fragrance architects.

And the Winner Is… A shower of awards in 2019 for Food & Beverage offerings at the Mandarin Oriental, Milan.
The Mandarin Oriental, Milan stands out once again this year for its Food & Beverage offerings. Besides being highly appreciated by customers and guests, it has been recognized by the most important guides and rankings. Starting with the starred Seta Restaurant, run by chef Antonio Guida, which has been awarded the prestigious Cinque Cappelli (Five Hats) recognition from the I Ristoranti e i Vini d’Italia 2020 Espresso guide, positioning itself as one of the leading restaurants in the Milanese and national culinary scene. “It’s a real honour to receive this and be the only restaurant in Milan to have been given the Cinque Cappelli award. It gives my team and me further incentive to continue giving our best,” shares Executive Chef Antonio Guida, whose culinary creations are an intermingling of Apulian roots and influences from his many years of experience in France and Tuscany. From the Scottish countryside to Milan: Hawico has brought the best of the cashmere knitting tradition to Italy’s fashion capital and all around the world, without losing its soul and character.
The Mill in Hawick recently received a special visit from Charles, Prince of Wales. Of course, it’s not surprising if you think that the Hawico company has a history that dates back to 1874 – tradition, craftsmanship and savoir-faire in true Scottish style. While the factory, surrounded by rolling hills and stunning countryside, sits on the banks of the River Teviot in the middle of the town of Hawick in the Scottish Borders, Hawico has planned a worldwide expansion with boutiques scattered across the globe (13 owned “flagship” stores and 50 speciality retailers). Japan is next on the list. In Milan, they have found a home in one of the most exclusive piazzas of the city, piazza Niccolò Tommaseo, both reserved and ultra chic, like the brand itself. They are now where the beloved Pupi Solari store once stood, which has retained only a small area dedicated to children’s clothing collections.

“A long friendship binds us to Pupi (Solari, ed.), and the idea of creating our flagship here came naturally,” shares Matthew Thomson, the new generation of the family who, together with the Sanderson family, took over the company twenty-eight years ago. It was initially repositioned to concentrate exclusively on cashmere, primarily making “private label” for key accounts like Chanel, Celine, Dior, Calvin Klein and Hugo Boss. Today 95% of the production is sold under their own label. Light floods through the large windows of the elegant and refined space where the men and women’s collections are on display. Knitwear and outerwear in wool and cashmere are their core business. The pieces are soft to the touch but slightly rough, since they are not overly worked, as per Scottish tradition, and are made to last. “Just like my father always said, buy once, buy well,” jokes Matthew Thomson. Among the unique characteristics of which they are most proud is their ability to combine craftsmanship, deeply rooted in history, with the latest technologies: “The company has been at the forefront of the seamless knitting revolution and operates the very latest Shima Seiki whole garment machines. This investment has allowed us to offer great flexibility in design,” says William Sanderson. They don’t have e-commerce – “We want to have a relationship with our customers, we want purchasing to be an experience,” explains Sanderson; for this reason, they also have a bespoke service that allows you to create a garment based on your own taste and needs, as well as collections that differ in colours and shapes depending on the country in which they are distributed. “Here in Italy, you love grey, blue, minimal lines and an elegant understatement,” concludes Thomson.
