What?
D
uring your sojourn in Singapore, you may have realised that Singaporeans often speak in a certain lingo that you had difficulty interpreting or understanding. Officially dubbed the “Singlish” (Singapore English) language, it has its own slang and syntax and much of its vocabulary are borrowed from the different languages and dialects spoken in multi-racial Singapore. To gain further insight into how to speak like a local, we introduce to you some of the basic Singlish terms and expressions that are widely used in some of our daily conversations.

kiasu
shiok
Another very commonly heard term around town, it means, “to estimate”. “The taxi fare from your hotel to city centre is agak-agak 10 dollars.”
From the Hokkien dialect, kiasu is a term used to describe someone who is afraid to lose out to others. It also means someone who is afraid to lose his dignity or as per the local term, “to lose face”.
alamak
A Punjabi term, meaning “Great!” A superlative expression of satisfaction. Originally “shauk” in Punjabi. Commonly used to describe a tasty dish. For example, “This chilli crab is shiok!””
lah
This is one of the most widely used term in Singapore. A malay expression for “Oh No”. “Alamak, why did he do that!?”
The most frequent Singaporean expression. It is used at the end of sentences for emphasis, such as “Okay, lah!”
cannot make it
lobang
uncle / auntie
Used to describe people or objects that are not of acceptable standards. “The food in this café cannot make it.”
In Malay slang, it literally translates “hole” but is actually used to denote as having a good contact or opportunity. “I am looking for a job, any lobang?”
Commonly used to address older men (uncle) and women (auntie). “Uncle, can I have a cup of coffee please?”

A handy term if you want to reserve seats in a hawker centre or food court. Derived from the word chop, which means to leave a mark. Singaporeans have a habit of leaving objects on seats to reserve places, such as tissue packets. “Don’t take this seat, I chope already.”

opitiam, also a leading food court operator’s brand name, is a traditional term used by the older generation to describe a coffee shop. Derived from a mixture of Malay and Hokkien, this particular term originated from the word kopi, which is a Malay term for coffee, while tiam means shop in Hokkien dialect. These traditional coffee shops are well known for their simple breakfast offerings of toast with kaya and half boiled eggs accompanied by thick, aromatic brews of coffee, tea and Milo, a popular malt and chocolate drink. Though the concept of kopitiam has somewhat evolved over the years, one thing that remains unchanged is that a kopitiam still serves as the common meeting place for people of all ages and ethnic backgrounds to gather and have a meal. For the most authentic kopitiam experience in Singapore, we shall introduce you to some of the best traditional coffee shops with rich history and background. n KILLINEY KOPITIAM A Hainanese kopitiam that was founded in late 1919, the humble shop has retained its existing shopfront at Killiney Road for nearly a century, though they have expanded to other parts of Singapore as well as opening franchises in Malaysia, Hong Kong and Australia. Even after a regular customer, T.S. Woon, bought over the store, Killiney has managed to preserve its traditional fare of well brewed coffee and tea along with charcoal-grilled bread toast in spite of modernisation over the years. n TOAST BOX Inspired from the coffee shops of the 60s and 70s era, Toast Box was invented as a concept to reminisce the good old times and allow the younger generation to experience the nostalgic breakfast tradition of the past. It all began with 15-year-old Loi Ah Koon, a Chinese immigrant who stumbled onto Singapore soil in 1926 and found work as an assistant in a Hainanese coffee stall. Not before long, the natural-born entrepreneur moved on to start his own coffee stall business in Telok Ayer Basin. Ten years later, Ah Koon’s wife joined in the business and perfected their own brand of homemade kaya, while Ah Koon developed his own technique of roasting coffee. The stall was renamed Ya Kun Coffeestall after relocating to Lau Pa Sat, and Ah Koon continued serving piping hot coffee and tea, egg and toast to his customers until his children took over and expanded the business.

n TELOK AYER MARKET ‘LAU PA SAT’ Nestled in the heart of the financial district is the Lau Pa Sat Festival Market, the grande dame of food markets in Singapore. Housed in a historical building that dates back to the 19th century, the beautiful octagonal shaped structure with its soaring arches, exquisite ornamental columns and majestic clock tower stands out even among the towering skyscrapers that dominate this area. Here is where you will find a whole gamut of local as well as international cuisine; with so many choices offered, you are sure to spend a long time making up your mind. n MAXWELL FOOD CENTRE Due to its history as a wet market in the Chinatown area in the 1950s, Maxwell Food Centre is the place where you will find one of the largest varieties of local Chinese food, all at affordable prices. n TIONG BAHRU FOOD MARKET AND HAWKER CENTRE Venture off the beaten path into the quaint neighbourhood of Tiong Bahru, and make a pit stop at the area’s iconic wet market and hawker centre, all rolled into one building. Expect some of the longest queues at Lee Hong Kee Cantonese Roasted, Jian Bo Shui Kueh and 178 Lor Mee as these stalls are renowned for their signature local food. Dig into the mouthwatering local specialties at the open, airy space of the hawker centre, before heading down to the first floor for your authentic local wet market experience.
n OLD AIRPORT ROAD FOOD CENTRE One of the largest and popular hawker centres in Singapore, Old Airport Road Food Centre was opened in 1973 and houses some of the most famous hawker legends in the country. Home to an overwhelming 168 food stalls, you will find almost any kind of local food dish that you happen to be craving for, including the best soya beancurd, hokkien mee (prawn noodles), lor mee (a Chinese-inspired noodle dish served in a thick starchy gravy and thick flat yellow noodles), chilli and pepper crabs as well as many others.
n HONG LIM MARKET AND FOOD CENTRE Hidden deep in the Chinatown enclave is this two-storey treasure trove, home to some of the best hawker stalls that have been in business since the 70’s. Known as one of the best hawker centres in town, their reputation is evident from the ceaseless queues that form during peak hours at some of the more popular food stalls, such as Teck Kee Ipoh Sah Hor Fun (a wide Chinese noodle made from rice) and Ji Ji Wanton Noodle Specialist. Singapore’s iconic dish n CHILLI CRAB One of Singapore’s most iconic dishes, the Chilli Crab is a popular signature that has retained its popularity among both locals and tourists. Do not be daunted by both its name and its striking red appearance, the mud crabs are stir-fried in a sweet and savoury tomato and chilli-based sauce, which means that it is not as spicy as you might expect. Often served with a side of deep fried buns, also known as mantou, it is best to dig in using your bare hands, using the mantou to scoop up all that leftover thick gravy.

An authentic roti prata experience is not complete without an eyeopening performance by the prata-maker as he kneads and flips a ball of dough till it stretches into a tissue-thin sheet. The dough is then folded and fried until crisp, before it is served with fish or mutton curry. Classic versions comes plain or with egg, but other creative fillings such as cheese, pork floss and even ice cream are beginning to pop up on local menus in recent years.
A fragrant rice dish where rice is cooked with coconut milk and pandan leaves, it is often accompanied by sides of deep-fried fish or chicken wings, otah (grilled fish paste), fried ikan bilis (anchovies) and peanuts, eggs, cucumber slices and sambal chilli. Even if you are not a fan of spicy food, the sweet yet spicy sambal chilli that enhances the flavourful aroma of the rice is sure to capture your taste buds.
n KAYA TOAST A local breakfast favourite that goes well with a cup of hot coffee or tea, kaya toast is made up of charcoal-grilled or toasted slices of bread with thin slices of butter and a generous spread of kaya, a traditional jam made from coconut and eggs, enveloped within. Savoury half-boiled eggs with dashes of dark soya sauce and ground white pepper are the usual complement to this simple, comfort dish.

Main Course n CHICKEN RICE With its roots in traditional Hainanese Chinese cuisine, Chicken Rice is a staple dish in Singapore starring just two humble ingredients - chicken and rice. The chicken is blanched till it is fully cooked, while the rice is cooked in chicken stock with ginger and pandan leaves for the right amount of oiliness and fragrance. Tangy red chilli sauce with minced garlic adds the final touch to this simple dish.

A popular Chinese dish in Singapore, Bak Kut Teh, also known as pork rib soup, is made up of pork ribs stewed with a variety of herbs and spices, giving rise to the full-bodied broth that packs a punch. In Singapore, there are two versions of Bak Kut Teh that you can enjoy; the Teochew style consists of a clear, peppery soup that is light in taste, whereas the Hokkien prefer the more robust flavour of a dark brown broth that is boiled with herbs, rock sugar and dark soy sauce.
Though there are many varieties of laksa available in Singapore, none is more famous than our very own, home-grown Katong Laksa. A Peranakan-inspired dish that consists of thick rice noodles or rice vermicelli cooked in a rich, spicy coconut-based soup stock, it is served topped with ingredients such as fishcake, cockles, prawns and tau pok (fried beancurd). Add a spoonful of sambal chilli for that additional kick, before slurping all that goodness up with a soup spoon.
n CHAR KWAY TEOW An all-time favourite of the locals, char kway teow serves up a mean plate of calories. Flat rice noodles are stir-fried with pork lard, bean sprouts, Chinese sausages, fishcake, eggs and blood cockles in dark, sweet soy sauce. For those who are more health-conscious, there are also healthier versions available that includes more vegetables and less oil.

Unlike the baked treat that you may be expecting, this dish does not contain any carrot, contradictory to its name. Rather, the local rendition of carrot cake actually comprises of radish cake in bite-sized cubes stir-fried with eggs, garlic and spring onion. Also known as chai tow kway in dialect, it also comes in “white’ and ‘black’ versions, where the same ingredients are fried with sweet dark sauce for the latter.
A local hawker dish known for its savoury taste, the oyster omelette is typically made from tapioca starch and sweet potato flour, which is mixed into egg batter (containing coriander, black pepper and scallion) before frying it over high heat. Oysters are then folded in when the omelette is cooked till golden brown in colour. The local version is usually served with specially made chilli sauce to add some zest.
Best enjoyed as a snack, popiah is essentially a Chinese-style fresh spring roll characterized by its soft, paper-thin skin. The skin is spread with some sweet or spicy sauce before adding a rich filling of cooked turnip, minced garlic, lettuce, bean sprouts, egg, prawn, parsley and grated peanuts. Usually hand-wrapped on the spot, the end result is two thick rolls overflowing with ingredients.
Chunks of marinated meat (choose from chicken, pork, beef and mutton) are skewered in kebab style, then grilled over hot charcoal. The sticks of satay are then served with chop cucumber, onion, pressed rice cakes (ketupat) and thick, sweet peanut dip. These are so addictive that you will find yourself reaching for stick after stick till the whole plate is cleared.

n DIM SUM
A form of traditional Chinese cuisine, dim sum consists of a wide variety of dishes prepared in small, bite-sized portions and are usually served in small, steamer baskets. A type of cuisine that is associated with the older tradition of tea-tasting in teahouses, it has been transformed into a type of comfort food available at any time of the day. Popular dishes include har gow (shrimp dumplings), xiao long bao (meat dumplings) and steamed fluffy buns with various fillings. 14

n TEOCHEW PORRIDGE
Another popular supper option among locals is the Teochew-style porridge, which has a more soupy texture unlike the typical mushy Asian congees. Usually served with a selection of Chinese side dishes, Teochew porridge is a simple fare that those with lighter palates will come to love. Dishes typically offered at a Teochew porridge stall include steamed fish, minced pork meat, braised duck and pork intestines, among many others.
Desserts n ICE KACHANG The perfect remedy to combat the unrelenting summer heat, ice kachang is an ingenious concoction of shaved ice, red beans, sweet corn, grass jelly, attap chee and cubes of jelly, topped with flavoured syrup and a drizzle of evaporated milk. One of Singapore’s most iconic dessert, it also comes in more contemporary versions that include various other fruits, flavourings and toppings, such as the more popular durian and crushed peanut.

A traditional dessert that usually consists of pandan-flavoured green starch jelly (shaped like a worm), gula melaka (palm sugar) and coconut milk, served with shaved ice. If you are one of those who prefer plenty of ingredients in your dessert, you can also choose to customise your chendol according to your tastes by adding on toppings like red beans, kidney beans, creamed corn and even durian paste!
A light, refreshing dessert drink that can be consumed either warm or chilled, it is full of ingredients such as longans, barley, malva nut, winter melon, white fungus, dried persimmons, lotus seeds and glutinous rice balls. This nourishing sweet soup is known for its cooling properties, and goes well with many local delicacies, making it a well-loved dessert among Singaporeans.

This is a simple Chinese dessert that is sweet-tasting and sticky in texture. Made using split mung beans, the sweet soup is naturally flavoured using pandan leaves (screw pine) and thickened by adding sweet potato flour starch. Best served with a side of fried dough fritters (or you tiao in local terms), it is sure to be a favourite among young and old.
An Asian sweet dessert that is both simple and fuss-free to prepare, it is made from black glutinous rice porridge with coconut milk and gula Melaka (palm sugar). Not only does black glutinous rice have a distinctive nutty flavour that is perfect for desserts, they are also a rich source of antioxidants and minerals, and contains a high amount of fibre. ingapore’s public transport system is one of the most efficient, clean and reasonably-priced in the world. With limited land space, Singapore is one of the few countries that impose restrictions on car population while locals are encouraged (and even incentivised) to use public transport. All these restrictions and incentives, are ways that our government try to keep our country clean and green. Most locals carry a CEPAS-enabled card and use this for their day-to-day travelling. This card is accepted by major public transport companies such as the Mass Rapid Transit (MRT) system as well as the buses.
SIA HOP-ON BUS Travel to the hottest tourist spots in Singapore in air-conditioned comfort and convenience on the SIA Hop-On Bus. Travel around Singapore on the SIA Hop-On Bus that lets you hop on and off at your own pace to visit ethnic districts, major attractions and entertainment hot spots. Passengers can get winning shots of the city’s top sights on our buses,while the audio commentary of the tour that is available in 10 languages - English, Chinese, Bahasa, German, French, Japanese, Korean, Italian, Spanish, Russian - will cater to the varying needs of visitors. If you would like to make your sightseeing experience an even more pleasant and memorable one, hop on the Sentosa Rhino Feeder, which links the City - Suntec, Singapore Flyer and Marina Bay Sands to/from Sentosa, Singapore’s popular island resort. BUSES Singapore is well-served by an efficient fleet of public buses that runs throughout the island. Due to the humid climate locally, all buses are air-conditioned. Bus fares are charged according to the distance travelled and start from $1.40 onwards. It is relatively easy to guide your way through the city via our buses; at every bus stop you will be able to reference the available bus services and routes for your ease of travel.
MASS RAPID TRANSIT (MRT) The MRT system brings you direct from Changi Airport to the heart of the city in about 40 minutes. This is probably the easiest way to get around the city with the stations well connected and located within the main shopping belt as well as popular sightseeing spots. There are currently 5 main lines, denoted by their colours; Green for East-West line, Red for North-South line, Purple for North East line, Yellow for Circle line and Blue for Downtown Line.
TAXIS Taxis can be flagged down and can usually be found at the designated taxi stands throughout the island. All taxis charge by the meter, though there are multiple surcharges that can be a little confusing for first-time travellers to Singapore. Fares range from $3.20 onwards for the normal taxis to $5 for the premium limousine-like ones. Passengers will also have to bear the cost of the ERP (Electronic Road Pricing) whenever the taxi passes through the gantries, which are mainly found within the city area.

TRANSFERS PROCEDURES Scheduled shuttle bus transfers Transfers are provided on scheduled shuttle bus arrangements to selected downtown hotels. Please refer www.singaporeair.com for the schedule. The shuttle bus will pick up passengers from the designated hotels at the scheduled timing to the airport. Please be at the designated pick up points at least 10 minutes before the scheduled pick up time. For baggage information, please refer to section on baggage allowance. Separate arrangement must be made for passengers arriving with wheelchair (either foldable or non-foldable) at a charge. Advance reservations are required and information can be obtained through the nearest Singapore Airlines or SilkAir office or with your local travel agent. Private Transfers Passenger may arrange for private transfers at a charge. Our driver will meet you at the exit of your luggage belt in the Arrival Hall with a meeting name sign. Waiting time is 1 hour from flight landing time. For passengers with private car transfers, our driver will hand the welcome kit and attraction card to the passengers at the arrival belt. LAND TOURS AND SIGHTSEEINGS Advanced reservations are required. Passengers taking tours to Malaysia and Indonesia are to ensure passports are valid for multiple entries into Singapore. Selected tours operate with a minimum of two adults. Information can be obtained through the nearest Singapore Airlines or SilkAir office or with your travel agent. Pick up service will be at your hotel 30 minutes before the tour departure time. BAGGAGE ALLOWANCE A maximum of two (2) pieces baggage with total weight not exceeding 30kg for check-in, one (1) piece of hand carry cabin bag not exceeding 7kg and the sum of length, width and height of each piece not exceeding 115cm are permitted. Only checked baggage will be stored in the vehicle luggage compartment. Baggage may be transported by luggage vans to your hotel or airport which means your bag may travel separately from you and may arrive at the hotel or airport at different time. Baggage surcharge applies for excess baggage. The charges are as follows : » SGD 7 for each piece of standard size baggage. » SGD 10 for each piece of outsized or bulky baggage such as boxes, crates etc. » SGD 85 for sporting equipment such as golfing and scuba diving equipment, surfboards, canoes, bicycles and musical equipment which are not allowed in the shuttle coach transfers and luggage van must be pre-booked and pre-arranged prior to your arrival into Singapore. CANCELLATIONS AND NO SHOWS For cancellations within 72 working hours prior to hotel check-in date and ‘no-shows’, please check with nearest local agent or Singapore Airlines or SilkAir office for cancellation policy. A different cancellation policy applies for stays from 15 to 18 September 2016 (both dates inclusive). 31st December cancellation require 7 working days.
