Fun Fall Food �

Fall has officially arrived; the season of falling leaves and falling temperatures. That cool, colorful season where the terrain explodes in vibrant shades of red, orange, and yellow. It’s also the season for comfort food. Soups, stews, casseroles, breads and chili top the list.

Fall is also synonymous with everything pumpkin. This bright orange gourd reigns supreme every September, October, and November. We incorporate it into every dish and drink imaginable. To enhance your fall experience, below are two spins on traditional comfort foods that feature this versatile fruit.

Pumpkin Chili Seasoning mix: 1 tablespoon salt 1 tablespoon paprika 3 tablespoons chili powder 1 teaspoon cinnamon 1 tablespoon cumin ½ teaspoon cayenne pepper Chili: 2 lbs ground beef 2 14 oz. cans petite diced tomatoes, undrained 1 medium onion, chopped 1 15 oz. can pumpkin puree 1 red bell pepper, chopped 3/4 cup water 2 tablespoons minced garlic Prepare the seasoning mix: In a small bowl, mix together the kosher salt, chili powder, cumin, paprika, cinnamon, and cayenne. Set aside.

Combine beef, onion, and bell pepper in a large, deep saucepan. Cook over medium heat, stirring frequently to break up the beef. Cook until beef is browned. Add the garlic and seasoning mix. Cook, stirring until well incorporated into the beef mixture, about 1 minute. Add the tomatoes, pumpkin, and water. Stir to combine. Bring to a boil. Reduce heat to low and cook, covered, for 30 minutes. Stir occasionally.

Pumpkin Cornbread 1 cup yellow cornmeal ¾ teaspoon salt 1 cup all-purpose flour 1 cup pumpkin puree 1 tablespoon baking powder ½ cup sour cream 1 teaspoon ground cinnamon 1/3 cup packed brown sugar ¼ teaspoon ground nutmeg ¼ cup melted butter ½ teaspoon baking soda 2 eggs Preheat oven to 400° and grease a 9” square baking dish with cooking spray. In a large bowl, whisk together cornmeal, flour, baking powder, cinnamon, nutmeg, baking soda, and salt.

In a separate medium bowl, whisk together pumpkin puree, sour cream, brown sugar, and melted butter until smooth. Add eggs one at a time, beating well between each addition. Pour over the dry ingredients and stir until just combined.

Spread batter in prepared baking dish and bake until a toothpick inserted into the center comes out clean, about 20 minutes. Let cool before slicing into squares.

While some schools’ sports programs hope to win, Cheyenne East High expects championships.

Expectations at the school are so high that the athletic department has adopted a quick version of “All I Do is Win,” a song by DJ Khaled, to play at the end of any contest.

It’s true, no school can win every championship, but East is determined to make every program the best. One program that is now finding the winning way is girls tennis. For the first time in 30 years, the Lady Thunderbirds won the South Regional tennis championship.

Leading the way to the title was East’s Sydney O’Brien and Finley Kastens, who beat Green River’s Alicia Harrison and Kiley Strange, 7-6, 7-6, to win the No. 1 doubles title.

O’Brien and Kastens’ match was nerve-wracking, as they trailed late in the second set and then had to rally in the tie-breaker.

East also got a runner-up finish from senior Nedra McIlwaine at No. 2 singles, and the No. 3 doubles team of Serena Farris and Zoey Woods.

Second-year East coach Nicole Cameron was voted the South Region girls coach of the year.

The state tournament starts September 23 in Gillette.

East High football is ready for another run at the title

Coming off a state title, expectations are high in the football locker room. As one of the perennial top teams in the state, Thunderbird football knows what it takes to win.

In the opening game of the season, the Thunderbirds were shocked by Thunder Basin after East took a 28-0 halftime lead. The Bolts allowed four straight touchdowns from the Thunderbirds to start the game. But after staring down a 28-0 deficit on the scoreboard, Thunder Basin was able to score 39 consecutive points to take down the defending Class 4A champions 39-34.

In the second game of the season, it took a stop from Cheyenne East’s defense with 36 seconds remaining to propel it to a 14-13 win over Natrona County in Casper.

The Thunderbirds then faced the Campbell County Camels for homecoming. The Camels nearly realized the upset after leading the Thunderbirds, 21-14, going into the fourth quarter. But East scored two touchdowns in the final 9 minutes of the game to hold on to a 27-21 win to improve to 2-1 on the season.

The Thunderbirds then face the Laramie Plainsmen. Riding a five-touchdown first half from senior quarterback Gavin Goff, East posted a 49-0 lead going into the break. The Thunderbirds emptied their bench for the final two quarters, as Laramie started to find production on both sides of the ball, but East secured the 49-8 win and improving its record to 3-1.

Up next for East is the #1-ranked Sheridan Broncs, set for a 6:00 kick-off at Okie Blanchard Stadium.

Registration Open for Adult Hockey League

The Cheyenne Ice and Events Center, 1530 West Lincolnway, is providing an adult hockey league for players of all levels. Must be 18 years old to participate. $400 for 20 games, $200 for goalies, goalies will be first-come, first serve. (The first six people to inquire about becoming goalies will be accepted. All others must plan to skate out.) Must be registered prior to September 24, at 12:00pm. After 12:00pm, the cost increases by $100. Cost will be adjusted if games start late, and the season ends up being shorter. USA Hockey registration is required and must be obtained before the first game. Pre-draft skate will take place on September 30, from 6:00pm-7:00pm.

The draft is October 7, from 6:00pm-8:00pm. Start date is October 13, at 8:00pm.

If so, A Matter of Balance: Managing Concerns About Falls, is a program for you. Fear of falling can be just as dangerous as falling itself. People who develop this fear often limit their activities, which can result in severe physical weakness, making the risk of falling even greater.

Many older adults also experience increased isolation and depression when they limit their interactions with family and friends. A Matter of Balance can help people improve their quality of life and remain independent. Participants learn to set realistic goals to increase activity, change their environment to reduce fall risk factors and learn simple exercises to increase strength and balance.

A celebration of all things archaeolgy will take place during the 7th Annual Archaeology Fair at the Wyoming Territorial Prison State Historic Site in Laramie, Saturday, September 25. This event is free and open to the public from 10:00am-3:00pm. The Fair provides unique hands on learning experiences for all ages, including flint knapping, atlatl throwing, pottery making, hide painting, soapstone carving and more. Do you have a question about something archaeological? Throughout the day, attendees will have an opportunity to meet local archaeologists, ask questions, find answers and get hands-on with these experts. The Archaeology Fair is held in conjunction with Wyoming Archaeology Awareness Month held annually during September. On September 1, Governor Mark Gordon proclaimed September Wyoming Archaeology Awareness Month.

MAAFA Remembrance Day Conference

Sankofa African Heritage, Inc., a 501 (c) (3) education nonprofit, presents the 10th annual MAAFA Education Conference: Debunking Racial Myths and Divisive Assertions That Nullify Community Relations and Hinder Social Development.

Dr. Fredrick Douglass Dixon, Head of the Black Studies Department at Wyoming University will speak on: The Study of Blacks Versus Black Studies as well as chair other presenters: Nate Breen, The Fordham Report and Wyoming Social Studies Standards-Grade F; James Peebles Ph.D., Critical Biblical Race Theory and Western Theologians; and A. Meadows-Fernandez; Learning for the Legacy of Medical Apartheid. The conference will be held at Laramie County Community College, Union Pacific Center Rooms, 1400 East College Drive, Saturday, October 9, from 8:30am-12:00pm. The city of Cheyenne is experiencing a high volume of catalytic convertor thefts. Catalytic convertors can be sold at salvage yards and over the internet. The rare earth minerals used in catalytic convertors is what makes them so valuable. The thieves typically hit high profile vehicles because they are easier to crawl under.

They also steal from fleet vehicles that are not driven every day. The thieves typically use a battery operated reciprocating saw to cut the catalytic convertors off of vehicles. The Cheyenne Police Department recommends that the public park in driveways or in well lighted areas to avoid becoming a victim of this crime.
