W

elcome to the fourth edition of Yalla See It All Tourist Guide™. The guide was born of the need to have a one-stop guide to enjoying everything there is to do, see, and experience in the capital of the UAE: Abu Dhabi. 2019 has been declared the Year of Tolerance and look no further than Pope Francis’s February visit or March’s epic hosting of the Special Olympics World Games to understand that Abu Dhabi walks the walk. H.E. Sheikh Nahayan Mabarak Al Nahayan, the Minister of Tolerance — the only such cabinet position in the world — opens the issue with salient words about how the “UAE’s model of tolerance has the potential to transcend national borders and become a global movement for good.” This minister is the embodiment of tolerance, and Yalla is humbled by his contribution. Speaking of tolerance, Abu Dhabi residents are particularly resilient when it comes to change. Our shape shifting skyline is rarely the same twice, which is half the fun of visiting the capital over and over again. In this issue, we take a look at the city’s architecture, highlighting its skyscrapers as well as its unsung historic buildings. With every edition, our dining section is dressed to impress with its blend of useful information and quirky tips for finding food you love. In this edition, we give ample reasons to get out of your hotel. Our beloved Eat Like A Local section lets readers in on the food haunts of prominent residents. In this issue, we go straight to the chefs to learn about the places they visit and the foods they tuck into when set free from their hotel’s kitchens — the results were surprising! If you are in town to shop, you’re not alone. There’s a reason that global shoppers flock to the UAE. The fabulous range of designer brands and high street favourites, and variety of traditional souks, where you can pick up a range of Arabic items is just part of the draw, but Yalla will let you in on a little local secret: the summer is the season for sales. You might have noticed in previous editions that Yalla has upped its game in our expanded Art section. Learn where to explore Abu Dhabi’s art scene and to mix and mingle with artists. Enjoy discovering the very best of what Abu Dhabi has to offer. Happy hunting for your next Abu Dhabi adventure. Special thanks to Tommaso Ciancio for our glorious Etihad Towers cover shot.

THE UNITED ARAB EMIRATES

Understanding the UAE is impossible without understanding the life of Sheikh Zayed and his deep religious faith, vision, determination and hard work. Emiratis are very proud of their present as well as their past, and their Founding Father Sheikh Zayed was quoted saying: “He who does not know his past cannot make the best of his present and future, for it is from the past that we learn.”

The United Arab Emirates Before you begin exploring Abu Dhabi, we thought we would provide a quick overview of the United Arab Emirates (UAE). Situated along the Arabian Gulf, the UAE has it all. With year-round sunshine, sandy beaches, great shopping, rich heritage, theme parks, major events and dining to suit every taste, there is something for everyone here.

PHOTOGRAPHY BY BIGSTOCK

The ruler of Abu Dhabi, His Highness Sheikh Khalifa bin Zayed Al Nahyan took office in 2004, following the death of his father, the UAE’s founder, Sheikh Zayed who founded the UAE in 1971. Abu Dhabi was named capital of the other six emirates: Dubai, Sharjah, Ajman, Umm Al Quwain, Fujairah, and Ras Al Khaimah. During your visit, it won’t take you long to experience the warmth and welcoming nature of the Emirati people, and the friendly outlook of the expats who have settled here. Emiratis adore family life, so the lifestyle here is very much focused on maintaining a family-orientated society. This guide is about Abu Dhabi, because Yalla believes that no trip to the UAE is complete without a visit to the capital. As you read through the guide, you’ll discover more about Abu Dhabi, and, hopefully, this will help you decide which attractions and sights you will want to see.

The city of Abu Dhabi is unlike anywhere you have ever visited. At just 47-years-old, the city is young, yet steeped in a rich history with so much to see, do and experience. Downtown, the vibrant city centre boasts an impressive skyline of soaring towers, an 8km stretch of coastline known as the Corniche,

The luxurious 5-star Emirates Palace and the strikingly beautiful Presidential Palace both sit in prime positions at the end of the Corniche. swimming pools within hotels. If you seek adventure during your stay, most beaches offer an extensive range of water-sports, both relaxing and exhilarating. Prefer exploring? Abu Dhabi offers a range of culture and heritage sites, attractions, shopping malls, restaurants, live entertainment as well as options for sightseeing by road, sea or air. As the capital of the UAE, the Emirate of Abu Dhabi is also home to neighbouring Al Ain city (with six UNESCO World Heritage Sites) and Al Dhafra, which makes up around two thirds of Abu Dhabi, with its vast desert area including the Liwa oasis and hundreds of kilometres of coastline. Turn to our Al Ain pages to learn more about the best attractions to visit. Today, the capital is home to around 1.1 million people, with residents comprising over 200 different nationalities. Due to the discovery of oil, Abu Dhabi has changed rapidly over the last century. It has developed into a diverse, fascinating and lively city and region. So, what are you waiting for? Yalla, as they say in Arabic, meaning ‘Let’s go!’

2019 Year of Tolerance

By H.E. Sheikh Nahayan Mabarak Al Nahayan

T

he President of the United Arab Emirates, His Highness Sheikh Khalifa bin Zayed Al-Nahyan, declared 2019 as the Year of Tolerance in the UAE. It follows 2018’s Year of Zayed that marked the birth centennial of the UAE’s late founder, His Highness Sheikh Zayed bin Sultan Al Nahyan. The tolerance of Sheikh Zayed’s distinguished his leadership. Sheikh Zayed warmly welcomed talented and ambitious people to the UAE irrespective of their nationality, ethnicity, gender, net worth, religious or philosophical beliefs. He sheltered them safely under a welcoming Arab tent. Sheikh Zayed made the UAE a stunningly diverse nation where people from some 200 countries live and work together in peace. To ensure such harmony in the UAE, the government established a Ministry of Tolerance — the only one in the world. The Ministry promotes and nourishes tolerance in the country, and, in this Year of Tolerance, the Ministry seeks to explain its meaning. Tolerance is certainly an attitude and arguably a virtue, but tolerance is not a natural state. At its most basic level, tolerance motivates me to “put up” with people different from me. I say nothing and do nothing even though other people may disagree with me, irritate me, or displease me. The same people may regard me as such, and they also say nothing. We demonstrate tolerance. We do not threaten or harm one another. Our mutual silence allows us to coexist. Basic tolerance helps governments maintain law and order and exercise their power effectively. But basic tolerance fails to satisfy the moral person. It fails to animate a lively society. It ignores the potential power of the virtue of tolerance.

strangers — all of whom are different and unique. The Ministry of Tolerance is, among many other actions, demonstrating the beneficial power of tolerance in a program that intends to touch our youth and by extension the entire UAE population. The Ministry led three legions of young men and women from diverse national and religious backgrounds in a study of the complexities of six practices and attitudes that emanate from a spirit of tolerance. We believe that the study of empathy, compassion, dialogue, conflict resolution, resilience, and teamwork will prepare those young people to become effective advocates for tolerance. We have designated them “Champions of Tolerance,” and their mandate is to initiate discussions with other groups of diverse young people around the country. It is our belief that the ensuing conversations will reinforce tolerance in the consciousness of the nation and inspire complementary actions in families, schools, universities, and businesses.

The UAE Ministry of Tolerance aims to nurture that potential power. The Ministry advocates a tolerance that encourages and enables people to engage people different from themselves, to imagine their feelings, thoughts, and experiences, to understand each person as a unique individual, to develop a sympathetic consciousness of the concerns of other people. Empathy and compassion arise from honest and respectful dialogue.

The UAE believes that acts motivated by the virtue of tolerance will slow and perhaps reverse such moral deterioration. The virtues of tolerance have the power to create safe, secure, peaceful, and prosperous communities and societies. The UAE’s model of tolerance has the potential to transcend national borders and become a global movement for good.

PHOTOGRAPHY BY MINISTRY OF TOLERANCE

The United Arab Emirates provides the perfect breeding ground for the cultivation of tolerance. A grand global education is at hand, and our cities are crowded with

The Year of Tolerance will be a triumphant year as it elevates the attitude of tolerance from the level of passive endurance to the higher level of active virtue. On their recent visit to the UAE, His Holiness Pope Francis and the Grand Imam of Al-Azhar Ahmad Al-Tayyeb made a joint declaration that, while noting “positive steps taken by our modern civilization,” insists that “there exists both a moral deterioration that influences international action and a weakening of spiritual values and responsibility.”

History in the Making In a city that seemingly represents all things new and bold, there’s a historic structure in the heart of the city that simply must be on any visitor’s cultural itinerary: Qasr Al Hosn.

I

n a nation of soaring skyscrapers and futuristic architecture, buildings like Qasr Al Hosn are rare. Located just off the Corniche, Qasr Al Hosn is the oldest coral and stone structure in the city. It serves as a subject of immense historical and archaeological importance, as it is one of the few historical buildings left as the modern city soared around it. Built in 1761, it originally served as a watchtower for what was Abu Dhabi’s only well, and in 1793 it became a small fort under the command of Shakhbut Dhiyab Al Nahyan. The Inner Fort exhibition traces the story of Qasr Al Hosn and the many historic events it has witnessed, from the exploration of the settlement of Abu Dhabi island to everyday life in the Fort, and how this historic landmark served once as both a ruling family home and a busy administrative centre. Qasr Al Hosn reopened in late 2018 with a host of new offerings in addition to the renovated fort. The city block now features the Al Hosn Palace, the Cultural Foundation, the House of Artisans and soon to open is a Children’s Library and theatre.

to the safeguarding and the promotion of the UAE’s intangible heritage. Exhibitions, workshops, and training courses that focus on traditional Emirati handicrafts such as Al Sadu (weaving), Khoos (palm frond braiding), and Talli (embroidery) will enable the transmission of knowledge and pass on the skills around these crafts, ensuring their future survival. The crafts represented in House of Artisans celebrate the creative and artistic relationship between the people of the UAE and their use of locally available natural resources. Within the diverse landscapes of the UAE — from the desert, to the oases, to the coast and sea — artisans have developed skills to meet functional and economic needs. Bait Al Gahwa is an initiative dedicated to preserving coffee’s important link to Arabian hospitality through the transmission of the tradition to future generations. No visit to Abu Dhabi is complete without a visit to Qasr Al Hosn to learn the history and culture of your host country. Visit Qasralhosn.ae to learn more or book your tour.

Make Way for the Arts Abu Dhabi’s recently reopened Cultural Foundation intends to be a beacon for the arts and a platform to launch countless art careers. Art and culture play a vital role in a city’s livability and its social cohesion, so smart cities invest in their creative capital. The UAE is no exception. “Artists can be catalysts for big things to happen,” says jewellery designer and sculptor Azza Al Qubaisi. “Cultural centres thrive when artists are encouraged and supported by their cities. The Cultural Foundation was built to house the arts.” In 1971, the late Sheikh Zayed bin Sultan al Nahyan conceived a cultural institution to breathe new life into the new nation’s artistic gifts and to spur intellectual growth. He envisioned a cultural renaissance to help usher in an era of modernity. And in 1981, this haven for art and cultural initiatives opened its doors. The Cultural Foundation would be a national landmark that, while staying true to Arab-Islamic style, would exude the aspirations for modernity and progress. With its library, theatre, and exhibit halls, the Foundation quickly became a treasured hub for the arts. Between offering workshops, studio space for artists to work in, and walls for artists to exhibition upon, the Cultural Foundation was the art incubator to launch a thousand careers. Many UAE artists with thriving careers today made their start at the foundation. “I owe my career to the Cultural Foundation,” Azza beams. “If I had not had the opportunity to exhibit at the Foundation and learn the ropes, I wouldn’t be where I am today.”

Get involved by taking a variety of workshops led by guest instructors and resident artists to get a feel for the Foundation and a pulse of the UAE grassroots art scene. To learn more, visit Culturalfoundation.ae

Sheikh Zayed Grand Mosque

In Numbers

The Sheikh Zayed Grand Mosque is incredibly beautiful and awe-inspiring with its 82 white gleaming domes, golden colonnades, and giant marble flower inlays. It spans across an area of 555,000 square metres and its four impressive main minarets soar 106 metres into the sky.

PHOTOGRAPHY BY TOMMASO CIANCIO

At Night

A little-known feature of the Mosque is its unique lighting system, which is designed to reflect the phases of the moon. There are 22 light towers which project soft clouds of a ‘bluish grey’ colour onto the exterior of the mosque and change according to the moon phase every night.

Most Visited

The Sheikh Zayed Grand Mosque — the largest mosque in the world — opened in 2007. Built over a 11-year period, the mosque attracts over 4.5 million worshippers and visitors each year. Today, it remains the most visited and Tripadvisor's number one attraction in Abu Dhabi.

Emirati Experiences The very best way to learn the lay of the land is to mingle with the locals, and Abu Dhabi makes this quite easy. Book an Emirati Experience or hire a local guide to discover the capital city.

Meet Moza Alameri On every excursion, Moza Alameri invites guests to view the marvellous city of Abu Dhabi through the lens of Pravda Studio and Moza, a licensed tour guide. The goal of her tours is to give you a glimpse into Arab culture with a modern spirit through pictures so good, you’ll want them out of your camera and onto your walls!

What inspired you to become a tour guide? I love to meet new people and share my culture. I also love to talk, so please come on my tours with lots of questions.

What are your guests most surprised to learn about on your tours? Unusually, they are most surprised to learn about how and why we dress the way they do. Most are embarrassed at first to ask, but once they realise that it’s okay to ask me anything, the floodgates open, and we end up learning so much about each other’s cultures.

I chose Sheikh Zayed Grand Mosque for my tours, because it’s so majestic. I never get tired of finding new angles and helping my guests to take photos so good of this place that they will want to hang them on their walls. Guests often write to tell me that they have framed their photos and cherish their memories of Abu Dhabi, and I think “this is why I do what I do.”

What’s your favourite place to take a selfie in the city? I don’t really enjoy snapping photos of myself, but I love to take photos of my guests, and I will take as many as we have time for. The Mosque at sunset from across the Wahat Al Karama reflection pool is a sublime backdrop no matter what the weather conditions — it’s always magical. Architecture can lift spirits when buildings soar above the stars, so follow local artist and architecture enthusiast Angelika Hamilton on her search for inspiration along the capital’s skyline.

bu Dhabi is a city of celebrity architecture. Norman Foster's World Trade Center souk immerses you in the spirit of the old market on whose site it sits. The fluid curves of the Zaha Hadid-designed Sheikh Zayed bridge welcomes visitors as you cross from the mainland to Abu Dhabi Island where shafts of light rain down the Louvre Abu Dhabi designed by Jean Nouvel – with celebrity architects like that make sure you have your camera ready! Abu Dhabi’s awe inspiring architecture is already on major tourist trails and offers fantastic photo opps, from the first round sky scraper in the Middle East (Aldar HQ), the world’s furthest leaning building (Andaz Capital Gate), to the innovative honeycomb façade of Al Bahar towers. However, a bit of a hidden secret to most visitors are the examples of amazing modernist and post-modernist buildings dotted throughout the city. Once regarded as a niche interest, the concrete structures built in the 70s and the 80s have a dedicated following

and are once again appreciated for the innovative ways the buildings broke architectural conventions. Abu Dhabi’s main bus terminal (BulgarConsult) and vegetable market and sports stadium (Henri Colbec) are prominent icons of modernism – all signs of the forward thinking in the post oil building boom that created a modern Arab capital. The leap is most pronounced in the Cultural Foundation designed by

From the 18th century nucleus of the city to Bauhaus - it is literally only a matter of steps. When I walk the streets of downtown Abu Dhabi, I have my lens constantly focused on the patterns, protruding angles, weaving façades, and how the people made the buildings their own – the modest next to the glitzy. The shop names reveal the origins of the shopkeepers as well as the ambition they brought to their new city, and the craftsmen bringing their traditions from different countries. The Opposite of Bling

Tania Nasir Master of geometry, artist Tania Nasir creates gleaming testaments to her faith using 24k gold and scant other simple materials. She gives Yalla a glimpse into her artwork.

Describe your art. My art is ornamental and illuminated geometric design. I have tried to make my paintings stand out by using handmade 24K gold paint — a fundamental element in Islamic illumination — alongside other traditional pigments. My designs are inspired from different Islamic era buildings or different era Islamic designers: Topkapi Palace, Alhambra Palace, and the Taj Mahal to name a few.

Your art involves so much geometry, how much time do you spend measuring versus painting? The geometry defines the boundaries I must work within. It does take a lot of planning and compass work. I probably spend one quarter of my time with geometry and design, and the rest is spent drawing, transferring, and painting. Patience is the key. I spend countless hours just making the gold paint alone. An 80x80cm painting with an intricate design will take anywhere between 4-6 weeks.

Explain your process using 24K gold. First, I crush the 24K gold leaf with honey or gum Arabic into fine paste for around 2 to 3 hours — yes, it takes that long — the finer the paste the brighter the paint will be. After the paste is finely ground, I pour water into paste, mix it, and then leave overnight to settle. The next day, the gold is settled at the bottom, and I empty and refill the water; repeating this process thrice. The final step is when the water is washed away, and I let the water fully evaporate from the paste. Once it’s dry, it’s ready to use. Once applied to paper, I burnish it with an agate stone to brighten it up.

To some, making art is a calling while for others it's a spiritual exercise. What is it to you? PHOTOGRAPHY BY TANIA NASIR

It is a complete spiritual journey and a form of mediation for me. Through our imaginations (khayāl), Islamic arts render the invisible divine visible. Follow Tania on Instagram @artspace_tania or by email at nasir.tania@gmail.com

The Eye of the Palm When she’s not prospecting palm fronds on her family’s date plantation or crafting transcendent jewellery pieces, Azza Al Qubaisi is in her studio at the Cultural Foundation making something, anything.

A

zza Al Qubaisi is a trailblazer, and her pieces reflect her thought-provoking perceptions of nature while preserving local traditions. Respectful of the past, she wants to pave the way for a new wave of Emirati artists. Yalla was lucky to catch up with Azza. Spiraling rapidly towards the sky, you can’t miss the rusting mild steel palm tree installation when you enter the Cultural Foundation. The sculpture is an elegant — if not poetic — reminder of the intricate details that can emerge from looking closely at any given object. We walk through her commissioned sculpture, Foundation of Life, on view in the lobby of the Cultural Foundation. “While I have worked in so many materials from 24k gold to asphalt, mild steel is my favourite medium,” Azza explains. “It feels earthy. I love how it rusts and ages. To me, it feels alive.”

Azza makes everything, but she first made a name for herself in jewellery design. She’s famous locally and internationally for her one-of-a-kind jewels. With this piece, she broke away from the limitations of wearable art, saying, “I wanted to create an artwork where the human feels small in relation to the art. In jewellery, the human wears it because it’s small, and it fits you. Here, the sculpture wears the viewer.” And, it does. One feels quite small within it.

PHOTOGRAPHY BY AZZA AL QUBAISI

As you spiral within the installation, the journey is dizzying, much like Azza’s own life experiences. “Palms reflect my identity. A decade ago, I pondered what it means to be Emirati. Is it how we dress, what we wear or eat? I had so many questions and debates with other artists. In the end, I decided to listen only to the inner me, what it meant for me to be Emirati. Collectively, it can be many things. Individually, we all have a different journey in life and experience of our nationality.” “This spiral reflects my journey: the people I’ve met

through life and my growth because we never become less of who we are; we have no choice but to grow. You only become more as you walk through life and people influence you, the ups and downs, and the losses and gains. I used palms to represent my journey. I tried to mimic nature as best I could.” Azza adds, “things in nature rarely grow symmetrically, much like our journey through life — things often go off course. When we go off course, we find the interesting bits, and I try to capture those offshoots in my art.” On the significance of working at this location, Azza says, “I have worked very closely with the Foundation in advance of its reopening since my first solo exhibition here in 2004. The Foundation is very meaningful to many UAE artists, because most of us got our start here in one way or another. It is both my mission and that of the Foundation to help more artists find their calling.” See Azza’s work at the Cultural Foundation and at Andaz Capital Gate Hotel through 30 March.

Beaches & Watersports

Life certainly is a beach in Abu Dhabi, and with so many beautiful and seemingly infinite stretches of sand to choose from, you might need some help deciding where to go. Yalla picks the six best spots to bask on Abu Dhabi’s beaches.

Beaches for All on the Corniche

The Corniche is the main promenade that separates Abu Dhabi city and the azure Arabian Gulf. Stretching for 8km, the Corniche is Abu Dhabi’s favourite promenade for strolling, cycling, people watching and admiring the views of the city’s sweeping coastline. The Corniche beach is open to the public; entry is free or a very reasonable AED10 per person on certain beaches, so arrive early to secure your sun lounger.

An Island of One’s Own

The most highly anticipated Island, Al Hudayriat, has opened to the public. Cross the capital’s crystal-clear blue waters by bridge to find a water and fitness enthusiast’s dream with 5km and 10km cycling and walking tracks as well as a pristine 600km beach. There is a cordoned off safe-swimming area as well as facilities for kayaking, diving, and jet-skiing. Food trucks are on standby to keep beachgoers going. Follow @alhudayriatad on Instagram for updates.

PHOTOGRAPHY BY © DEPARTMENT OF CULTURE AND TOURISM – ABU DHABI

Emirates Palace: A Royal Beach Club

Emirates Palace is the most opulent hotel in Abu Dhabi, so it makes sense that it would have a beach that is equally magnificent. The Beach Club has a water sports centre where visitors may enjoy kayaking, paddle-boarding and sailing as well as some motorised water sports. The Beach Club has a children’s section with waterslides and restaurants. During your visit to the Beach Club, be sure to drop by the hotel’s Bedouin tent to partake of a traditional Arabic coffee and a camel ride along the hotel’s white sandy beach.

Fun in the Sun at Yas Beach Club

Yas Island is known as Abu Dhabi’s ‘entertainment destination’ as it’s home to the F1 race track and countless family activities, And thanks to Yas Beach, it’s also a place to relax in Abu Dhabi’s endless sunshine during the day and get your groove on by night. Visitors can enjoy sun loungers, parasols, private cabanas and access to the beach bar (fees apply) with views of the mangrove forests. On Fridays, there’s an adults-only pool party, and Yas Beach is widely considered one of the best places in Abu Dhabi to watch the sunset.

Escape to Zaya Nurai Island

A 25-minute ferry ride from Abu Dhabi city, Zaya Nurai Island is a private island resort with one of the most luxurious beaches in the UAE. The island’s 32 luxury villas offer private access to their own little plot of beach. Day passes are available for guests who want to sample life’s luxury, and you can relax under the club’s cobalt blue parasols and feel like you’re in the Maldives. Zaya Nurai also offers a fabulous Friday brunch that is popular with the locals and expats and daily beach access is included in the price.

Find A Picture-Perfect Beach on Saadiyat Island

Saadiyat Island has it all with two beaches facing out on the azure sea. The public beach has changing facilities, showers and a café with a great family atmosphere. Those who want to enjoy Saadiyat’s white sandy beach with a touch of luxury opt for the Saadiyat Beach Club, which is home to chic cabanas, an infinity pool, a stylish restaurant and a weekend DJ to set the rhythm for your perfect day. Arabella Willing, marine biologist at the Park Hyatt Abu Dhabi, manages numerous conservation efforts along the beach to protect the endangered Hawksbill sea turtles. She carries out morning turtle nesting patrols for hotel guests to learn about the hotel’s valued beach dwellers.

Would you call yourself a Sushi Master?

No. A Sushi Master is a chef skilled only in preparing sushi. I consider myself a Japanese Cuisine Kitchen Master, because I excel in both hot and cold dishes.

What or who inspires your cooking?

I love my grandmother’s food. She introduced me to cooking, and she inspires me a lot.

Do you have a favourite ingredient, recipe, or dish?

Bonito flakes (Katsuoboshi) and Konbu (Kelp) are widely used Japanese ingredients. My favourite dish is the Gindara Misoyaki ( Grilled black cod marinated in miso).

WITH LIVE ENTERTAINMENT

What do you think makes sushi such a special dish compared to other Japanese dishes?

Sushi is special, because its preparation involves a unique variety of fresh seasonal seafood available throughout Japan.

Explain the concept of Omakase?

Omakase is simply put “Leave it to the Chef.” A multi-course menu is crafted by the Head Chef and always makes for a very memorable dining experience.

What can a diner expect when they order an Omakase menu at Tori No Su?

Food Rocks

When one thinks of Michelin-stars, they rarely think rock ‘n’ roll, but one young chef wants to add a dash of glitz to your tired dining routines. Meet Tom Aikens and learn how he keeps his kitchens sizzling

When you were asked to curate the EDITION’s culinary offerings, where did you begin?

I was given a general brief on the EDITION Abu Dhabi. I then created the three concepts. The three outlets are very different. Alba Terrace is inspired by all things Mediterranean. Oak Room is our informal, yet informed, British rock ‘n’ roll steakhouse. Market at EDITION, our all-day dining outlet, focusses on well-being and healthy eating and is inspired by global cuisine. We made sure that what we were doing was wholly unique in terms of the quality, originality, and value to what else was already available in Abu Dhabi.

The Oak Room is not your grandfather’s steakhouse. How did you infuse glitz and glam into what’s usually considered a stiff and stately occasion? Oak room is a British rock ‘n’ roll steakhouse, because, well, I’m a young British chef. We offer a wide selection of prime cuts from all over the world to match all tastes and price points, and we showcase our beef in a glass-fronted chiller cabinet. We have a “Schuther,” which is a new role that we created — think fully qualified butcher cum showman. Basically, he does all the beef preparation in the morning and then, when the restaurant opens, he explains the different cuts of beef to diners. He then presents the prepared steaks and carves them tableside. The atmosphere is relaxed and informal, yet informed thanks to our wellversed and professional staff.

PHOTOGRAPHY BY THE EDITION ABU DHABI

You are a British chef working with an American brand in the Middle East serving people from likely over 200 nations — globalism on a plate really. What are your thoughts on the mixing and mingling of cuisines? Expanding abroad is fun because you get to discover new places, produce, tastes, cooking techniques, and meet new chefs which greatly develop my cooking style. I hope that we are setting some trends in all the different offerings throughout the outlets, but let’s wait and see. I am not a follower of trends as they always go out of fashion. I love to change it up and to keep inventing the wheel, so I keep impressing my guests with unexpected and delicious food.

Shopping local farms, liquid nitrogen-prepped pesto, prowling festivals for ingredients, no frills grilled fish, steaming hotpots, and hand-pulled noodles – Yalla asks the Emirate’s best chefs' favourite local food experiences

Theo Rouvnas

Ta Van Ninh

Executive Chef at Eat Greek Kouzina

Chef De Cuisine at Hoi An – Shangri-La Hotel, Qaryat Al Beri, Abu Dhabi

“My Mediterranean neighbour, Roberto's, offers true Italian flair: cool vibes and authentic Italian food in such a modern restaurant. Here, you can enjoy a traditional perfect pizza with a pesto theatrically prepared tableside using liquid nitrogen at -196°.”

“One of the things that I like to do in Abu Dhabi in my time off is to take my family to Seven Hotpot, a Chinese restaurant located near Al Wahda Mall. My family loves the food there for its quality, and it also has great value for money.”

Rohan Patil

Jan Frederick Westhuizen

Sous Chef at Sofitel Abu Dhabi Corniche

Specialty Outlet Chef – Rodeo Grill, Beach Rotana Abu Dhabi

“There are small Indian restaurants hidden on every street corner in the city offering dishes from every region in India. The subcontinent’s very essence and strong flavours paired with the vibrant street energy and socialising, remind me of special memories in my hometown.”

“Fire wood, quality meat, and marinades are essential to braai. Everything is grilled on fire wood, distinguishing it from regular BBQs. I usually buy the Ina Paarman’s braai goods found in SA WAY. Also, a good braai needs great company which is found at our Friday Beats & Meats.”

Lee Kok Hua

Matthew Goodlet

“I often go to Off the Hook Seafood Restaurant, I like the simplicity of the way they present the food. There is a lot of emphasis on the freshness of the ingredients, and homemade sauce also is one of their signatures which enhance the flavour of the taste, a fair and reasonable price.”

Their Arabic desserts are divine, but their manakeesh is a savoury morning snack that is fast but much nicer than ‘fast food.’ I also love to buy produce from Greenheart Farm in Sharjah. Though it’s not in Abu Dhabi, this farm is worth a day trip.”

Don’t be fooled by the name. Beachside Buddha-Bar Beach Abu Dhabi is more than just a bar, it takes guests on a journey – through its music, décor, and menu. Yalla reveals seven things you might not know about the place. Buddha-Bar Beach Abu Dhabi sits within the St. Regis Saadiyat Island Resort, Abu Dhabi. The hotel is located in the Saadiyat Cultural District, which is home to many five-star hotels and the Louvre Abu Dhabi. It’s considered the area both to see, and be seen in.

1

The Concept

The Buddha-Bar concept was born in France in 1996, thanks to the visionary imagination of its founder Raymond Visan – owner of legendary Paris hangout Barfly – when he opened Buddha-Bar Paris on the chic Faubourg St Honoré. Taking aesthetic and culinary inspiration from the exotic cultures of the Pacific Rim, Visan’s vision of an “endless summer” lives on in the vibrant venue.

A first look

The Latest Addition The EDITION Abu Dhabi is the latest mark of exclusivity for the UAE capital, promising and delivering a glamorous new spot to the city’s luxury hunters to see and be seen

The Basics

Have you heard about the EDITION? If not, why are you always the last to know? The capital is the latest city to be graced by an EDITION hotel, an exclusive Marriott brand consisting of just 8 luxury boutique hotels, which offer "high-octane glamour," and were conceived of by hotelier Ian Schrager.

PHOTOGRAPHY BY THE EDITION ABU DHABI

The Location

The EDITION Abu Dhabi is located at Al Bateen Marina. The brand is distinguished interior design, but the hotel also commissioned a notable exterior, shrouding itself in a latticelike shell to represent the lateen sails of traditional dhow boats, which were historically built in the marina.

Michelin Star

Michelin-starred Chef Tom Aikens has curated the menus for three of the hotel’s outlets. His fresh approach to fine dining will be a welcome addition to the city's crowded gastronomic scene. Turn to page 38 to learn more about the chef and his thoroughly modern approach to fine food.

Level Up: A Night You Won’t Forget Looking for a night of glamorous and sophisticated nightclubbing? Head straight to the Annex and get in on Abu Dhabi’s newest secret hideaway. Explore three levels of completely different entertainment and ambiance to find a level that suits your fancy for your next big night out.

The Food

Aikens's all-day dining concept at Market focuses on imaginative and healthy lifestyle fare. Celebrate worldclass cuts with British rock ‘n’ roll flair at Oak Room. Indulge in locally sourced coffee, a light lunch, and Mediterranean style sharing plates overlooking the marina at Alba Terrace,

Bespoke Art

There are statement art pieces scattered throughout the hotel, but perhaps most notably in the lobby and Library Bar. The lobby has a kinetic art installation, so do look up when you are passing through. Captivating graphic artworks celebrating words line the walls of the Library.

Bottom Line

If you love all things new and novel, this is the hotel for you. Book your stay at The EDITION Abu Dhabi and be among the first of your friends to sample this inspired new take on hospitality. Mingle with Michelin stars and infuse your evenings with bespoke art, glitz, glam, and a dash of rock 'n' roll.

Meet Emily SPONSORED CONTENT

There’s a new marine biologist in town, and Yalla duck dives into her world to have a look at the hotel’s forward stance on sustainability

W

hen her early dreams of becoming a mermaid didn’t pan out, Emily Armstrong chose the next best thing; she became a marine biologist. As the new Marine and Environment Manager at the new Jumeirah at Saadiyat Island Resort (JSIR), she spends her days mingling with marine life on one of the most beautiful stretches of sand in the region. So, with the capital’s hawksbill turtle nesting season fast approaching (from April to July), we thought we’d pick her brains about the nature of her work.

What are your first impressions of Abu Dhabi?

So far, I like what I see! The city has so much to offer and is such a great mix of different cultures. One thing that has really stood out for me is the commitment to sustainability from both residents and local businesses; I’m happy to see so many people embracing a more environmentally-friendly lifestyle.

What animals are you most surprised to find here? Although they are not typical visitors, I was very surprised to hear about the whale sharks at Al Bateen and the Corniche! It’s so lovely though to see the amount of wildlife here, especially the diversity in the cooler winter months, as people might not usually expect such a wide variety of species from a city born out of the desert.

Tell us about your environmental programmes for kids at the hotel?

PHOTOGRAPHY BY JUMEIRAH SAADIYAT ISLAND RESORT & VILLAS

We wanted to offer activities in the Kids Club that get the children outside and exploring the local wildlife. In the Nature Ranger sessions. They can tour the resort and learn about our sustainability initiatives, the popular local wildlife and at the end learn what they themselves can do to help the environment. Alongside the Nature Ranger sessions, the kids can go on Saadiyat Safari to find and identify local species of flora and fauna. They can journey through the turtle’s life-cycle, and they can treasure hunt on the beach for nurdles (small plastic particles that are easily carried in the tide and wash up).

Your resort takes a forward stand on sustainability. What is your advice to people wanting to also make changes to their habits?

I would say first take a look at the bulk of your waste and see what is the main item you seem to be throwing away – is it food, packaging, containers? Then focus on that to begin with and make manageable changes. Sometimes it involves a little more planning for a day out, or a shopping trip, but doing something is always better than doing nothing.

The hotel must make decisions that aren’t in its best financial interest in order to protect the

animal life that was here first. Is this a metaphor for the less convenient things one must do to be more sustainable?

Absolutely! I feel many people these days choose convenience over the environment – yes it’s easier to take a disposable cup, for example, rather than remembering to bring and wash your flask every day, but we have to change the mindset that 5 minutes of our time is more important than the pressure these single-use resources are putting on the environment. If we all start to approach things differently, I am confident we can make a positive impact.

At what age did you know you want to become a marine biologist?

From as young as I can remember I only ever wanted to be a mermaid! As I grew up, the marine world fascinated me, and I decided from a young age to pursue marine biology. I love the mystery of the ocean and am excited to think how much we can still discover in the future.

What is your favourite thing to do outside of work? Scuba Diving, snorkeling, watersports, and hitting the beach – I chose this job for a reason.

What is your favourite marine animal? You can only pick one! That’s easy – the orca whale. Seeing them in the wild is a dream of mine.

Ask a Concierge

Alex Maaroufi, Head Concierge at the EDITION Abu Dhabi and Member of Les Clefs d’Or offers his best recommendations for meals, art, views, and more for every agenda

Tell me about one of your favourite places to send first-time Abu Dhabi visitors.

I always speak about art and what Abu Dhabi can offer culturally. I always mention the wonderful Grand Mosque at sunset and Manarat Al Saadiyat and Warehouse 421, which are two of my favourite places in town.

Tell me about your favourite hidden gem in Abu Dhabi.

I love a good, fuss-free Indian restaurant near Al Wadha Mall called Nasser. A classic place with authentic dishes.

Tell me about your favourite hidden gem in the city.

The old-fashioned Mina Port and Fish Souk offer a trip back in time. Once you purchase your fresh fish, you go to the side of the market where your choice of restaurants will prepare it for you as you like.

Where should I eat if I want to celebrate a special occasion? How hard is it to get a reservation in a nice restaurant while I’m in Abu Dhabi?

Coya has always been a wonderful brand. Here in Abu Dhabi, I know I can send my guests to their wonderful terrace with stunning views of Downtown and live latin music. Another option I usually recommend is Tamba, an original trendy place that is unique to the city. The people, décor and wonderful food make it up for a good meal or special occasion. It can be tricky to get a reservation at one of those restaurants during the weekends but that’s what our Concierge team is here for — we make things happen.

Your most unusual request as a concierge?

To order a helicopter to pick up a guest, which is no easy task in London, I learned. Back in London, I was asked to reschedule the Changing Of The Guard at Buckingham Palace to accommodate a guest — that was a laugh.

I want to experience historic Abu Dhabi. Where do you recommend that I go? Qasr al Hosn Fort has recently re-opened and it is great to experience the Emirati culture through its variety of exhibitions and activities reflecting the history of Abu Dhabi.

What tips do you give first-timers?

To be respectful of different cultures and have a lot of fun. Abu Dhabi is a great city which offers the opportunity to experience so many new things through its events, food, drinks, nature, history, and art. It is an Emirate with a lot to offer if you scratch the surface.

Currency

Behaviour

Weather

The local currency is the Emirati dirham, officially abbreviated “AED”. ATMs typically issue larger bank notes, but most hotels or money exchange outlets will offer an exchange service. Keep smaller notes ready for any taxi journeys as changing a larger note could be tricky.

The UAE follows Islamic traditions; therefore, everyone must understand and observe the social rules. Rude gestures or swear words, including on social media, are not permitted by law. It’s advisable to exercise common sense when posting comments about the UAE on social media.

One of the best things about the UAE is its guaranteed year-round sunshine. With refreshing water parks across the Emirate, and plenty of temperaturecontrolled indoor attractions and world-class shopping malls to keep visitors entertained, the emirate is a popular destination all year round.

Photography

People drive on the right-hand side of the road here. Seat belts are compulsory, and children under 12 must remain in the rear of the vehicle. Visitors can hire a car provided they are over 18 years old and hold a full driving licence from an approved country. Do check the rules before you hit the road.

It is forbidden to photograph people without consent. Avoid taking snaps of aircraft, or in restricted areas, such as bridges, courts, and government or military zones. Be careful when posting your photos of people on social media without their consent as it’s considered an invasion of privacy.

Clothing

Medication

People

Visitors and residents are advised to dress sensibly in public places. Swimsuits and bikinis are acceptable when by the beach or pool. It is suggested that women dress a bit more modestly than at home, but there is no need to cover your body from head to toe.

Some medicines available on prescription or at pharmacies in your home country may not be approved for sale or use here in the UAE. Visitors bringing medication with them, even if Abu Dhabi isn’t their final destination, should check to see if their medication is permitted before they leave.

It is easy to get around the city, and in particular to get to your final destination once you step off the plane at Abu Dhabi International Airport. Authorised metered taxis are available outside the Arrivals area at the airport, and a taxi into the city will cost you around AED100.

The UAE is an Islamic country and follows the customs, rules, and traditions of the Islamic faith. The daily call to prayer, which takes places five times, can be heard throughout the day. If you have time, a visit to the Sheikh Zayed Grand Mosque is highly recommended.
