Dear Members, Welcome to the seventh issue of Gavashni, a Newsletter for our Zoroastrian community in the Middle East region.

It’s been seven years we started this publication which offers a window to the activities and events that take place in this region. Whether you yearn for success stories… clamor for culture… desire a glimpse of visionaries, or wish to read business news and short stories, this issue offers everything to you. It is a carefully crafted publication. It’s comprehensive, credible and thoroughly exhaustive.

The lead story this year is on Firoz Tarapore, CEO – Dubai Aerospace Enterprise, a man of sound academics and rich experience across continents. As a fiscally conscious and goals driven person, he approaches his business challenge with intrinsic flair for innovation, creative problem solving and measured risk taking. He is an inspiring business icon who has brought innovation to Dubai.

Thereafter, we have profiles of eminent professionals who have achieved tremendous success in their respective careers. Articles on STEM education, a story from Shahnameh, healthy recipes for breakfast and much more... is what makes this publication informative and interesting.

Further, we have covered regional news from Bahrain and Muscat as our members are pretty much active there. The kids had a wonderful trip to Al Rawabi Dairy Farm arranged by WZCCME in association with India Club. You can read more about this trip in this issue. On a lighter side, the matchstick puzzles and quizzes will keep the old and the young engrossed.

INTERVIEW FIROZ TARAPORE, CEO – DUBAI AEROSPACE ENTERPRISE

A Man of Ideas and Excellence What truly defines a great leader? Is it the ability to lead? Seek out opportunities and harness talent? Be able to understand people and the market? Of course it varies from business to business but the underlying concept remains the same - successful leaders in the UAE are leaving a trail in their field of expertise and inspiring others to grow.

This story is on Firoz Tarapore, an articulate visionary who is adding value to the aerospace industry in Dubai. Hard work, perseverance, subject knowledge and business acumen exemplify him who has now spent over 10 years in Dubai. He relocated here from New York after a stint in financial services to become the Chief Financial Officer of a newly started aerospace company and is now the Chief Executive Officer of the company which today is a globally recognized aerospace enterprise. With clients in 60 countries, Firoz is more reliably found on an Emirates Airline flight than at his home in Dubai. As his young sons remind him regularly, “Enough travel already, dad … we want to see you at home every day.”

Excerpts from our interview with Firoz.

Tell us a bit about your business.

How do you maintain a work life balance?

Dubai Aerospace Enterprise is an entity owned by the government of Dubai. We lease aircraft to over 100 commercial airlines in 60 countries, and we provide engineering and maintenance services to airlines in the Middle East, Europe, Africa and South Asia.

Less gracefully than I’d like. I try not to compartmentalize my day/week/month/year/life into work and non-work sections. I prioritize what is important, whether it be work or non-work, focus on that and then just get on with the rest of it. I find it easier when balance finds me instead of me trying to find it!

What has been the most challenging experience to date and how did you resolve it?

When my mother was in India and in not-so-good health, staying on top of the situation from New York was challenging and agita-inducing. I moved to Dubai, and shortly thereafter moved my mother to stay with us. I think she appreciated it – God bless her soul.

Any advice for youngsters just getting into the professional arena?

Relax, keep your head down and find a way to contribute in ways big and small, learn something new every day, be kind, loving and generous and plan for tomorrow. There is great merit to the old saying … If you don’t know where you’re going, how will you know when you’ve arrived?

What advice would you give your younger self, if you could?

What would you say is your greatest dream professionally?

Set your moral compass to true north and stay on that path. Only good things can come from it.

THE GOLDEN ERA OF UAE - INDIA RELATIONS Relations between the UAE and India have always been strong, and both sides have enjoyed a surge in business across various industries said the experts at the Institute of Directors (IOD) Dubai Global Convention 2019 held on 5 & 6th March, 2019 at the Hotel Habtoor Palace, in Dubai. They added, that bilateral relations between both countries are currently in a "golden era."

The IOD Global Convention was held under the patronage of His Highness Sheikh Nahyan bin Mubarak Al Nahyan, UAE Minister of State for Tolerance and was organized in collaboration with the UAE Ministry of Economy and the Consulate-General of India Dubai.

The Expo will offer an opportunity to young people from across the region to new ideas, cultures and experiences from every corner of the world, expanding their future possibilities and instilling hope and optimism. It will continue to create, opportunities for Indian firms to showcase the “Made in India” brand.

Addressing the attendees at the event, Sultan bin Saeed Al Mansoori, UAE Minister of Economy, described the relation between the UAE and India as a very special one. The UAE is the No.1 trading partner for India in the Arab World and India is the second-biggest trading partner in the world for the UAE. Further, India is part of our future growth. It is important for us to continue to invest in opportunities in India across various sectors."

Abdulla Al Saleh, Under-secretary for foreign trade at the Ministry of Economy said, that the Indian community, has made many contributions to the UAE, not only economically, but also socially and culturally.

"Since its inception, the UAE has always been a beacon for innovation. We know that innovation is the future of human investment. The leadership of the UAE has emphasised the need for innovation across all sectors in the UAE Vision 2021, which focuses on the country transitioning to a knowledge-based economy."

H.E. Navdeep Singh Suri, Ambassador of India to the UAE, said that relations between the UAE and India are going through "a golden era" and will only continue to grow from strength-to-strength. "We have a momentum that we haven't seen previously, and 6 May, 2019

Expo 2020 a game-changer Expo 2020 is ticking all the boxes on project side. Also, it is curating a chance to learn, innovate and build a better future together.

Dr Ahmed Al Banna, Ambassador of the UAE to India, noted that the weight and prestige of the UAE playing host to the mega event was evident right from the time of voting phase in France. “There is a lot of work currently going on to have everything ready in time for the event, and we are sure to deliver an unforgettable experience.”

H.E. Navdeep Singh Suri, Ambassador of India to the UAE, said that India went for the biggest plot size that was available and selected the 'Opportunity Segment' for its participation. "The government of the UAE was kind enough to allow us to retain the pavilion after the show and this is important because the location of the pavilion is in the heart of the new developments in Dubai. We want to send a message to Indian companies back home that they don't have to wait until Expo 2020 for the business opportunities that are available. We also want to highlight that this is a nation-building event, it is not just a trade show."

WHERE INNOVATION MEETS EDUCATION

STEM is one of the most talked about topics in education these days. But what exactly is STEM? It stands for Science, Technology, Engineering and Mathematics. It has grown to represent a unique approach to teaching and learning. So why is 'STEM' getting so much attention? To understand more on this subject, we approached Nargish Khambatta, an educationist and Principal of Gems Modern Academy in Dubai who shares her views with us on this subject.

Perhaps it’s the Dubai Syndrome…

Having lived for so long in this innovative city, it is difficult to believe that the world is under the illusion that a gender gap still exists in the field of technology and we are underrepresented in STEM. At the first women-only hackathon, sponsored by the Meera Kaul Foundation as part of the Women in STEM 2015 Conference and Awards, a five woman Saudi national team headed by Feda Abdullah Al-Majed, won the first place in the two day coding completion, winning the $5,000 prize for a prototype app they created in nine hours! In her book ‘Five Scarves’, hijabdonning Rana Dajani, an Associate Professor at the Hashemite University in Jordon, debunks stereotypes about women in STEM in the Middle East.

Girls from GEMS schools, including the school I head, GEMS Modern Academy, are equally passionate about all things STEM. And now, with the emphasis on Art, it is STEAM that is gaining traction.

Research shows that by the age of six girls start doubting their STEM intelligence and continue to lose confidence as the boys seem to ‘get’ the math and science. It is every school’s responsibility to ensure that students are encouraged to participate in STEM activities irrespective of their gender.

Amy Ryman, who founded STEMgirls is a case in point – she is empowering girls to choose a career in STEM. I believe there are 3 major early

Mentorship plays a significant role in inspiring girls and dynamic female STEM teachers who influence students are treasured, as they are effective role models. If you are a parent reading this, catch them young! There are many fun, interesting activities that you can craft for your children, nephews, nieces and their friends. Allow them the luxury of failure and their understanding will deepen. Permit them to experiment and make a mess. Once hooked, they will be enthusiasts for life and hunger for more. For as Stephanie Kwolek, the chemist who invented 'Kevlar' and was awarded the 'Lavoisier Medal' for technical achievements said, ‘All sorts of things can happen when you are open to new ideas and playing around with things.’

Stereotypes and misconceptions must be counteracted! There is nothing that is ‘better for boys’. Introduce children to powerful role models of both genders.

Movies like Hidden Figures arrive like a breath of fresh air. How could you not be inspired by Katherine Johnson, the mathematician who calculated flight trajectories for 'Project Mercury' at NASA? Competitions at the National and local level in the UAE like 'ThinkScience', 'Global Innovation Challenge' and 'Innovation Melas' witness high

participation from girls in school and universities. At events like 'GESS' and 'Hackathons' organized by companies and the Government, eminent guest speakers, thought leaders and STEM companies vie for audience attention and the number of women who are selected to participate in government initiatives like the 'Emirates Mars Mission' (EMM) – Hope Probe and future space projects is heartening.

Social media is being effectively leveraged and accessibility to information is diminishing the gender gap. If you still have a doubt that females are being left behind in the STEM race, follow the hashtags #globalstemettes #GirlsInSTEM #girlsintech #WomenInSTEM #WomenInTech and you will be pleasantly surprised.

To all the girls out there, whenever in doubt, remember the words of Mae Jemison, the first African American woman astronaut in space - “Don't let anyone rob you of your imagination, your creativity, or your curiosity. It's your place in the world; it's your life.

Go on and do all you can with it, and make it the life you want to live.”

His fondest memory of childhood was going to watch the epic India versus Pakistan cricket encounters with his dad, his friends and his closest buddies at the Sharjah Cricket Stadium. It was here that he first saw the game and eventually became extremely passionate about it. He spent most of his young age, playing competitive cricket (in between studying and being regularly punished by his teachers for skipping class to fit in a few quick overs) initially through his school and later on through local division cricket in the UAE until he left the country for a short while to complete his degree in Economics.

Nahid Shroff Nahid Shroff, a communication and creative specialist with over 14 years of experience in advertising, strategic planning and digital marketing has worked in India, London (3 months transfer agreement) and the UAE. Having worked across key brands in varied categories from FMCG to automobiles, from healthcare to financial services; she has a deep understanding of human insights and what makes communication effective.

She has worked on global and regional brands in the UAE including Baskin Robbins, Huggies, Kleenex, Kraft Foods, Mahindra Automobiles, Noor cooking oil, Autotrust UAE, NMC Group and Adam Vital Healthcare Group; among others.

On his return, he started his career in one of the leading Audit firms in 2003, and slowly climbed the corporate ladder, working for prominent local companies such as ENOC and Arab Media Group, all whilst studying for his Master’s degree. With experience from his initial years, he was hired by 3M in 2010, and by the grace of God has never looked back. Today, he is the Regional Finance Lead for the Middle East and Africa Health Care Business Group and thoroughly enjoys all the challenges the role brings.

He credits a lot of who he is today to his father who has always been a strong influence and guiding light from his early days working for KPMG. She moved to Dubai after marriage to Firdaus Irani, the MD of the Village Office, a company, that specialises in office and educational interiors. Kairmein and Firdaus have two beautiful children, Anaissa and Rayaan. Dubai has been home to them for the last 15 years.

Kairmein Irani Kairmein Irani (daughter of late Dr. Arameity and Farok Deboo, well-loved personalities in the late 20th century, in Dubai) is a qualified architect with a Bachelor’s Degree from Manipal Institute of Technology and Masters in Architecture and Conservation studies from UWM-Milwaukee. On completing

Every day is a new day for Kairmein as it is filled with excitement and challenges at work. She is the Principal Urban Planner and Designer at Arcadis (formerly Hyder Consulting) and leads the Master Planning and Urban Design team on key Master Planning projects.

Her expertise lies in developing urban design and master plan frameworks and design regulations to create livable distinctive communities. Her everyday work involves dealing with multi-disciplinary engineering teams to create workable solutions to meet client and authority requirements, be it the visioning of project from a blank canvas to existing developments with new growth strategies.

Kairmein has been awarded the ‘UNESCO Asia Pacific Award’ for Restoration of St. Thomas Cathedral project, Mumbai. In the UAE – she is involved through MAHE Manipal Dubai Campus - Sharjah Museums Department in a comprehensive conservation study for Al Mahatta Museum, the first Airport in UAE. Over the years she has been involved in notable projects that include Burj Khalifa Downtown District, EMAAR south, Masdar City, Wahat AL Zaweya, Dubai Industrial City, Madainat Badr, and several TECOM-Tamdeen projects such as, DIAC-DOZ, Dubai Studio City and IMPZ villas.

Her success mantra is - "Alone, we do so little; together we can do so much.”

Like her parents and grandparents she believes in Zoroastrian Philosophy and culture and helps her husband Firdaus, the Chapter Chair of WZCCME who is involved in building the spirit of entrepreneurship among community members in the UAE. She also involves herself in youth related activities.

Loss of a Great Parsi

Noshir Motiwalla (1924 – 2018)

A well-loved businessman from a well-loved family, Noshir Motiwalla came from Aden, where three generations of his family once flourished. Arriving in Dubai, the new bustling port of call, he and his brothers built a reputation for themselves with their entrepreneurial wisdom, perseverance and hard work. Their grace, their dignity and their very presence in any gathering added a fresh luster to the occasion and his iconic family etched out a name for itself in the annals of the UAE’s mercantile history.

Born in Mumbai in 1924, Noshir Motiwalla completed his schooling from Billimoria Boarding School, Panchgani, India, and graduated from the Daver’s Commercial College, Mumbai, in 1946, specialising in Finance and Accounting. He joined his family business, Bhicajee Cowasjee Ltd., in Aden in 1946 and took charge of the business after his father’s demise in 1949. Making exploratory trips to Dubai in 1965-1967, the Motiwalla family established Allied Enterprises Ltd., a joint venture company in 1967. They also set up Allied Holdings International Ltd. and Pearl Investments Ltd.

and conducted different types of businesses under the two banners.

Noshir Motiwalla who exuded a quiet gentleness that emanated from years of experience, wisdom and leadership continued as the Managing Director of Allied Holdings International Ltd. and ADM Enterprises, LLC in Dubai till the end. He was one of those who believed in the adage, ‘service with a smile’ and during one of his thanksgiving speeches to his customers, he said: “To thank you as we would like to do is far beyond our powers, for if we did not have friends like you, there would be no firm like ours.”

Taking pride in his Zoroastrian identity, he considered the moving of the holy atash from Aden to India as the most momentous occasion in his life. As a Trustee of the Aden Parsi Punchayat, he played a key role in organising it and was assisted by late Rusi Kooka and by late Cowasjee Nussarvanjee Adenwalla, whose family and ancestors were responsible for building and establishing the agiary in Aden. The diplomatic negotiations took almost three years. When the time arrived, doors opened and the 'Atash'

was transported in a special cage around an urn in a flight specially chartered for this purpose. Today, Adariansaheb rests majestically in Adenwalla Agiary at Lonavla, to be worshipped and revered by generations of Zoroastrians in the future. This to him was of special significance.

Noshir Motiwalla, was not only helpful to his community but contributed to the economy and the community of both Aden and Dubai. Sadly, after a brief illness, he passed away at the age of 95 on 18th December, 2018.

He was the President of the Indian Association of Aden from 1963 until migrating to Dubai. He was the Regional Board Member of the World Zarathushti Chamber of Commerce, Middle East, 20032009 and a Member of the General Counsel, 2004-2009 for the 9th World Zoroastrian Congress, held in December 2009, in Dubai. May God grant Garothman Behest to his soul!

THE FIELD TRIP TO – AL RAWABI DAIRY FARM

WZCCME in association with India Club organised a “Field Trip to Al Rawabi Dairy Farm” located at Al Khawaneej in Dubai on 23rd February, 2019. Community kids, Mazdyar Dadrewalla, Zeus Dadrewala, Dale Dadrewala, and Rayhan Rajwadewala joined the trip with twenty more children from the Club.

Al Rawabi, as we know, is a leading dairy and juice company in the UAE. It offers a wide range of products from milk, yoghurt, laban, juice as well as other functional products. The company was established in the year 1989 with a herd of 500 Holstein and Friesian cattle imported from Germany and 10 trucks for distributing the products.

Today the cattle stock is over 13,500 cows and the company produces 275,000 liters of dairy products every single day. The company operates with more than 13,000 stores in the UAE and Oman.

The Al Rawabi Company was the first to introduce plastic bottles in the year 1991 and fresh juices in the GCC in 1995. The new functional products of the company are enriched with multivitamins and minerals, and designed to help solve the health concerns of the GCC population. The company has received numerous awards for environmental suitability and animal welfare.

Here are a few excerpts from our talk with the kids: Tell us a bit about the farm.

Al Rawabi is the biggest farm in the UAE with approx. 14,000 cows.

It has a special cooling system for cows to be kept stress free from heat. That’s why they are called “Happy Cows.” Each cow has a special ear tag and is monitored 24/7. They teach the baby cows to chew and give them cornflakes with milk. Each cow has a special feeding program according to its daily requirements. A nutrition doctor is part of the 15 veterinary doctor’s team.

Tell us what you liked the most about your trip to Al Rawabi Farm in Dubai.

Undoubtedly - the ‘Dairy Museum.’ It is the best. It offers the public a chance to view the history and artefacts of Europe and GCC. Which products of Al Rawabi do you like the most?

Of course! Cheese, Milk and Juices.

Hi everyone, My name is Rayhan Afrosh Rajwadewala. On Feb 23rd 2019, I went on a visit to AL RAWABI FARM. My grandfather took me to India Club. My bus was ready to take the children to the Farm. There were many other kids in the bus including a staff from India club and Zarin Gandevia who served us yummy snacks and cold drinks.

On the way, we had lots of fun. It took us 45 minutes to reach. As soon as we reached, we were welcomed warmly by the staff who took us to the Dairy section. There were hundreds of cows in a line. Pipes were attached to them for extracting the pure fresh milk which they use for making flavored milk and other delicious and healthy products. The farm was very clean and hygienic. All the workers and the staff were in their uniforms and net caps on their heads.

Thereafter, we went inside the factory where we observed many interesting things through the glass window. We saw the workers putting the caps on the milk bottles and labelling them, which was very interesting. We then went to the bus and one of the staff members gave us fresh and delicious yummy mango and lychee milk. It was very fresh and delicious. Thereafter we returned to India Cub. Over all, it was an amazing experience and quite educative!

'FAMILY FUN DAY' AT ZABEEL PARK

Green grass with dew drops and sunshine playing hide and seek in clouds, games, balloons, art, laughter, fun and of course, food, sounds like a great day for an escapade, but add 40 Zoroastrians – old and young, the little mischievous ones and the funny ones and it will turn out to be a perfect family fun day out! That was how our WZCCME Family Fun Day was on Friday, 1st March, 2019.

Around 11.00 a.m. when the clouds gave way to better weather, the WZCCME team got the participants together for the races. Over 30 young and old members lined up to take part in the games. Four teams were formed. It was a bitter sweet joy to see the participants running the fastest 100 meters race in human history. The team that scored the highest points won the final prize.

Despite the slightly inclement weather, which in a way added charm to the event, all members arrived at the Park at 10.30 a.m. and settled down on the lush green lawns of Zabeel Park. A warm and comfortable breakfast of yummy Akuri with Pao was served with cutting chai which made their taste buds sing. Being away from the hustle and bustle of city life, they all looked relaxed. The young ones had their fair share of jumping and running around and catching up with their friends. Delicious jam sandwiches, courtesy Goolcher Navdar, were served on breakfast to keep their energy going.

With stomachs growling by lunch time, Chicken Palao, farcha, Potato wedges, with dahi ni kachumbar were served. Food was catered by Cafe Funkie Town who did a good job. Healthy lunch boxes containing sandwiches and cookies were served to the little zoros for lunch, catered by Pinaz Virjee.

NORUZ IN DUBAI

Parsis of the United Arab Emirates (Dubai, Abu Dhabi and Sharjah) celebrated Noruz, marking the advent of spring on 21st March. The event organised by members of the Emirates Parsis Working Group (EPWG), worked tirelessly to hold an evening of fun, merriment and being together as a community. Some 250 Zarathushtis welcomed the Spring Equinox at Radisson Blu Hotel, Dubai Deira Creek, at a gala evening comprising a buffet dinner, games and dance.

A passionate rendition of 'Chhaiye Amey Zarthosti' kicked off the evening’s celebrations, setting the tone of the evening’s entertainment.

A minute’s silence was observed to pay homage to late Mr. Noshir Motiwala, a formidable entrepreneur and community veteran who passed away in December 2018. The stage was then set for the ever-popular games where adults and children eagerly and joyfully competed with each other.

The competitive spirit of participants, supported by the audience provided further entertainment. There was no 18 May, 2019

dearth of prizes for the winners – from gifts hampers and coupons to wine bottles – all generously sponsored by community members themselves, including Nargish and Hoshedar Khambatta and other well-wishers.

The event also saw World Zarathushti Chamber of Commerce Middle East (WZCCME) founding director and ME and cultural director of the Global Working Group, Meher Bhesania, screening for the first time in Dubai, an insightful and informative docu-drama film on our prophet Zarathushtra (Titled Zarathushtra: The Story of His Life). The film was produced last year

by Meher Bhesania and directed by the eminent film-maker Adi Pocha of Mumbai. It was launched at the World Zoroastrian Congress in Perth, Australia and was well-appreciated.

Adults and children enjoyed the enactment of the milestones in the historic life of Zarathushtra. The audience’s engagement with the show was incentivised further with a post screening quiz where correct answers

were rewarded with prizes of 'Fathers and Sons, Mothers and Daughters,' coffee-table book authored by Meher Bhesania. This book highlights over forty inspirational stories of distinguished and eminent members of our Zoroastrian community.

The WZCCME also took the occasion as an opportunity to felicitate and bestow the 'Community Service Award' on its youth director Cyrus Debara in appreciation of his outstanding and dedicated service to the WZCC UAE chapter and to the people in our community. The affable MC – a role he enthusiastically fulfilled - leaves UAE’s shores after 17 years to head for Germany. This Noruz event was his last as MC and event anchor. We wish Cyrus and his family all the very best in Germany.

The much-anticipated raffle draw, a regular feature of this community function in Dubai, followed the hearty dinner spread. Several gifts were distributed to lucky ticket - holders but student Danesh Sutaria proved to

community’s love for life, fun, friends and most importantly, good food.

REGIONAL NEWS - MUSCAT PARSI COMMUNITY IN OMAN

Parsis have been present in Oman since 1970, when Shapoorji Pallonji, the Construction Magnate, built the Al Alam Palace for His Majesty Sultan Qaboos bin Said Al Said, in Muscat, undoubtedly an iconic structure that stands testament to exquisite Islamic design. Established in 1975, the Oman Shapoorji Company LLC, (OSCO) has become a part of Oman’s growth story and delivered some of the finest landmarks in the Sultanate.

Demographically, in 1970s and 1980s, there were well over 500 Parsis in Oman, but today the total count stands at 250, as several families have migrated to other countries over the past few years. Regardless of the small numbers, the vibrant community never fails to come together to celebrate two auspicious occasions - the Jamshedi Navroze on 21st March, and the Parsi New Year in August. While Jamshedi Navroze function is generally hosted

by Freny and Firoze Irani at their lovely residence, the Parsi New Year dinner function is organised by caring ladies from the community at a prestigious property, each year. Further, the community has had the good fortune of having some good Mobeds like Mobed Dinyar Dastoor and Mobed Gustasp Vimadalal who rendered selfless service to the community, but have now returned to India. Currently, Mobed Ervard Rustom Nozar Vazifdar performs Jashans for community members in Muscat and keeps the spirit of our culture, customs and traditions alive. Last year, a community Gambhar was arranged at the Oman Shapoorji Hall and a picnic at Barkha farm.

The Oman Parsis have also done the community proud by winning awards and accolades. Shenaz Kaiyomarse Khodaiji was awarded the “Best Teacher Award” across all the Indian Schools in Oman. Olivia Rustom Vazifdar, won the "Oman Woman of the Year 2019 award" in the category of Executive Secretary.

Khursheed Raja, recently participated in Oman’s first International Art Fair.

As a creative artist, her work was widely appreciated for using unusual

art materials. Niloufer Viraf Aga runs a successful Parsi food catering business.

This year, the community bid adieu to three prominent families. Jal and Shermeen Kaikobad, Daraius and Binaifer Basu, and Kaiyomarse and Shenaz Khodaiji, who after residing for long, long years have returned to their home countries carrying happy memories of Muscat with them.

Collectively the community pays tribute to those eminent Parsis of Oman who have left for their heavenly abode - Julian Kaikobad (oldest Parsi resident of Oman), Eddy Kotwal, Jehangir Anklesaria, Eruch Commissariat, Minoo Unwalla and Homiyar Bilimoria. May their souls rest in eternal peace!

STORY FROM SHAHNAMEH

KING HOSHANG

Discovers Divinity in Fire King Hoshang was the grandson of King Kayomars, also known as Gayomard. His title is Paradhata “the first law giver” from which the first royal dynasty Peshdad got its name. After ascending the throne, King Hoshang pledged to rule justly and compassionately for the betterment of mankind.

Human Progress King Hoshang was a noble King. He was greatly pained seeing his subjects toil all day to get food. He taught his subjects to extract metals from ores and then make implements. The first such metal to be extracted was iron, and the profession of blacksmith was born. For the first time in human civilisation, iron axes, saws, spades, ploughs, hoes and several other useful implements were made.

Happy by this success, the king taught his subjects to till the land by the newly made implement of plough and then sow seeds. With improved iron implements, the practice of agriculture flourished. As more seeds were sown, there was a good production of crops, which inspired people to develop the arts of reaping and harvesting of crops.

The more the people worked, the greater ideas they got. Gradually they started digging canals from rivers upto the fields, so that there was all round availability of water.

Domestic animals also came in handy in another way. People learnt to make clothes from their wool and fur. This was another great stride in civilisation.

The Majesty of Fire Once, when King Hoshang had gone hunting along with his retinue, they saw a huge, long, black slithering creature with red shiny eyes. This was an Azdah, which was a large dragon like creature found in ancient times, now extinct. On seeing them, the creature fled. King Hoshang and a few of his soldiers followed it to hunt it down. In those days they used huge stones as weapons. When they started hurling the stones, they missed their mark and hit other stones causing sparks to fly. This ignited the dry branches of the Sadeh tree, resulting in a huge fire.

All these beneficial changes, resulted in the people stopping their nomadic life and living in small groups, near their own fields, tilling their own personal lands. Thus started the first settled civilisations.

On seeing this gigantic blaze, the soldiers were terrified and started running away. However, King Hoshang instantly recognised the majesty of God in the blazing fire. He bowed down before it and offered praises to its Creator. He stopped the terrified soldiers from fleeing and exhorted, “Don’t fear this majestic Fire. It is the radiance of God. He who is wise shall revere it.”

With the development of agriculture started the practice of domesticating animals like goat, sheep, cows, bulls and donkeys, which would be helpful in the farm. Certain domestic animals were used for fieldwork and others for purposes like guarding and riding.

Relieved by their King’s assurance, the soldiers returned, bowed down before the fire and fed it with wood. At night the King and his subjects performed a thanksgiving ritual called Jashan around this fire with great zest and festivity. They celebrated this day

as the festival of Sadeh, which was exactly fifty days before the New Year.

Firdausi, the great poet, while recounting this story in his Shahnameh, cautions people not to call the Iranians fire-worshippers. He says: Ma gui ke ātash parastā budand, Parastande-e pāk yazdān budand, which means, “Do not call them fire worshippers, they are worshippers of God through fire.”

King Hoshang ruled for forty years. He is recognised as a Saoshyant, that is, a benefactor of mankind.

Great Moral Story

This is Jim Thorpe, the world's greatest athlete. Look closely at the picture, you can see that he's wearing different socks and shoes. This wasn't a fashion statement. It was the 1912 Olympics, and Jim, an American Indian from Oklahoma represented the U.S. in track and field. On the morning of his competitions, his shoes were stolen. Luckily, Jim ended up finding two shoes in a garbage can. That's the pair that he's wearing in the photo. But one of the shoes was too big, so he had to wear an extra sock. Wearing these shoes, Jim won two gold medals that day.

This is a perfect reminder that you don't have to resign to the excuses that have held you back. So what if life hasn't been fair? What are you going to do about it today?

Whatever you woke up with this morning; stolen shoes, ill health, failed relationships, failed business, don't let it stop you from running your race. You can experience more in life if you'll get over the excuses and get on with living.

Remember: "You can have reasons or you can have results...but you can't have both!"

Blueberry French Toast

INGREDIENTS: Milk 250 ml., Whole Egg 2 nos, Sugar 50gms, Nutmeg 3 gms, Vanilla Essence 7 ml, Cream Cheese 40 gms, Brioche Bread 120 gms, Blueberries 50 gms, Frozen Blueberries 30 gms, Corn Flour 3 gms, Sugar 5 gms, Lemon Zest 2 gms, Maple Syrup 30 ml, Icing Sugar 2 gms, Mascarpone Cheese 25 gms.

PROCEDURE: Mix milk with beaten egg, sugar, nutmeg and vanilla to make a custard mixture. Strain and fill bake proof bowls with the toasted brioche cubes and blueberries and pour the custard mixture into the bowls. Let it soak for few minutes. Before baking pipe in a few blobs of cream cheese into the brioche mixture and bake in a preheated oven at 180 degrees centigrade for 15 to 20 mins.

For the blueberry compote.

Mix together the frozen blueberries with the sugar and heat until the juice starts to leave from the berries. Add the corn flour and then lastly mix in the lemon juice.

Serve the French Toast with a blob of mascarpone cheese along with maple syrup and the blueberry compote.

Pistachio Pancakes

Serves: 2

PROCEDURE: Slice the muffin into two halves and apply butter top with grated cheddar cheese and toast until the cheese is slightly melted. Sautee the mushroom with olive oil. Poach the egg to your liking in boiled water with vinegar. Place the poached eggs on the halved toasted muffins and top them with the hollandaise sauce. Garnish with some drops of the balsamic reduction and sakura mix.

For The Hollandaise Sauce Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume.

Remove from heat, whisk in salt and pepper. Cover and place in a warm spot until ready to use for the eggs benedict.

Savory Crepe Rolls

Serves: 2

INGREDIENTS: Flour 700 gms, Milk 200 gms, Yoghurt 700 gms, Sugar 300 gms, Vanilla Essence 10 ml, Baking Powder 30 gms, Butter (Melted) 100 gms, Whole Egg 3nos, Pistachio Powder 50 gms, Icing Sugar 5 gms, Caramel Sauce 20 ml, Dates 4 nos.

PROCEDURE: In a large bowl, combine the flour, pistachios, sugar, baking powder, soda and salt. Whisk together until combined. In a smaller bowl, whisk together the eggs, milk, vanilla extract and butter. Add the wet ingredients to the dry, mixing until smooth and combined.

Heat a large skillet or electric griddle over medium heat.

Add a bit of butter if desired, then pour 1/4 cup of batter on the hot skillet and repeat, leaving an inch between pancakes. Cook until the pancakes bubble on the top and edges, about 2 minutes. Flip and cook for another minute or two until golden and set.

For the plating, stack the pancakes one on top of each other then drizzle the caramel sauce, dust with icing sugar and garnish with sliced dates and pistachios.

Serves: 2

INGREDIENTS: Wild Mushrooms 25 gms, Cheddar Cheese 35 gms, Baby Spinach 15 gms, Salt 2 gms, Pepper 1 gm, English Muffin 1 nos, Balsamic Reduction 5 gms, Egg 2nos, Sakura Mix (optional) 3 gms Olive Oil 10 gms, Avocado 15 gms Hollandaise Sauce Egg Yolks 2nos, Lemon Juice 5 ml, Unsalted Butter, melted 50 ml, Salt 1 gm, Pepper 1 gm.

Serves: 2

INGREDIENTS: Milk 200 gms, Egg 1 no, Flour 100 gms, Butter 25 gms, Salt 2 gms, Pepper 1 gm, Turkey Bacon 50 gms, Asparagus 20 gms, Baby Spinach 20 gms.

PROCEDURE: Combine the eggs, salt, flour & milk and whisk until well mixed. The mixture should then be the consistency of heavy cream.

Heat a nonstick skillet over medium-high heat. Brush with the melted butter, then pour 1/4 cup of batter into the skillet, swirling the pan to coat the bottom evenly. Fully cook until golden on one side, then flip and cook 30 seconds more. Top with grated cheddar cheese. Remove to a plate and continue with the remaining batter to make a total of 4 crepes.

Grill the turkey bacon and cut into jullienes and add it to the crepe along with blanched baby spinach and sprigs of asparagus.

Plate as shown in the picture and serve with a small side salad or just plain.

KHASAB - OMAN

Khasab in Oman is truly an untouched place. It is the largest city on the Musandam Peninsular. The most adventurous route is to take the ferry from Muscat. Travelling to Khasab takes you through the spectacular Strait of Hormuz, past hundreds and hundreds of oil tankers and cargo ships, so it really gives you a sense of the importance of this narrow sea lane in world politics and economics.

The year 2019 has been proclaimed by His Highness Sheikh Khalifa bin Zayed Al Nahyan, President of the UAE, as the "The Year of Tolerance" in the UAE which reflects UAE's founding principles of promoting peaceful co-existence and acceptance among peoples of different nationalities, identities, and cultural backgrounds.

Why the Ghaf?

The Ghaf tree has been chosen as a symbol of the Year of Tolerance. Do you know why? This is because it is associated with the heritage; it stands as a symbol of stability of the desert and is a witness to old customs. Have a look at the spectacular image shown below which exhibits the four pillars of tolerance which the tree stands for.

With a steady and inexhaustible crop, the Ghaf tree is a symbol of generosity and sustainability. It is a source of food for humans, domesticated animals and wildlife alike.

For centuries, our ancestors used to gather in the shade of the Ghaf trees that became a hub for assemblies, social solidarity and diversity. Tribes came together around these trees to hold traditional meetings and discuss various issues.
