Dear Members, Welcome to the 'Third issue of Gavashni,’ a Newsletter for our Zoroastrian community members residing in the Gulf region! What a year 2014 has been! After months of anticipation and preparation we hosted the Enterprise Dubai event from 19th to 21st December, 2014 at the Crowne Plaza Hotel and it did not disappoint us. We welcomed 600 professionals and businessmen through the doors of Jumairah Ball Room offering them an excellent platform for exclusive networking and exploring business and career openings as Dubai prepares itself to host the World Expo 2020. On live stage, we featured plenary sessions, panel discussions, awards ceremony, fashion show, game show entertainment programs, business and cricket quizzes, masters of the home kitchen competition and more… Our erudite speakers spoke on various topics ranging from trade and communication, to technology, to medicine to women power... An exclusive area was earmarked for exhibition. Super brands like Dubai Duty Free, Godrej, Titans, Malabar Gold and Diamonds, Bank of Baroda, and prominent retail stores like Crystal Gallery and Chinese Furnishings exhibited their goods and services. On cultural side, Zenobia Davar, the charismatic couturier showcased her fabulous gara sarees, kurtis, jari borders, jablas, kasbi topis and embroidered frames. The ‘Wall of fame’ paying tribute to the legends and their legacies was admired by all. Elsewhere in this issue, we have covered a lead story on a corporate leader Homi Gandhi, owner and chief consulting officer, Arithmus Consulting; a success story on Roshni Mithaiwala and her father Firoz Burjor Mithaiwala of Funkie Town restaurant; regional news from Bahrain, an exclusive article on Parsis, recipes by Shiromi Anklesaria, Executive Chef, Pizza Pino, Dubai; a story with a moral lesson and profiles of two young members who will represent Dubai at the 6th World Zoroastrian Youth Congress in New Zealand in December, 2015. From Employee to Entrepreneur – Taking the leap Former Head of RAKBANK Direct, and now the Owner and Chief Consulting Officer of Arithmus Consulting, Homi Keki Gandhi is a fine example of a corporate leader. He has broken records every step of the way in his illustrious career. Endowed with a vibrant personality, he has the ability to infuse energy into every project he undertakes and tries to bring out the best in others. Homi considers the establishment of his firm as a stupendous achievement and the most momentous occasion in his life. In a very short span of time, he has managed to bring on board a unique blend of bespoke business houses and large corporates as clients of Arithmus Consulting catering to their diverse needs from advice on technology to business management. He is working hard to sign on more alliances and partnerships with other professionals offering them more extensive suite of services. He proudly mentions that at least 2 of these alliances are with Zarthushthis. Embarking on a career in 2001, as a senior officer in HDFC Bank in New Delhi, he went on to become the Project Manager responsible for network expansion for HDFC Bank in North and East India. With excellence as his hallmark, competence and sincerity as his strengths, Homi Gandhi scaled new heights in the banking sector for years and has lately taken the leap to become an entrepreneur. In a life punctuated with successes, the one thing that stands out for Homi is the setting up of his own company Arithmus Consulting. It is never too easy to leave a lucrative job to launch a startup, but sometimes circumstances align and the entrepreneur knows that the time is right to make the leap. Arithmus Consulting, provides advisory services to senior management of established organizations. For creators of startups – it provides inputs for setup, growth, and/or maintenance. The company’s suite of services include – financial management, infrastructure and network management, distribution management, people management and banking and finance sector expertise.

In 2004, Homi left India for greener pastures and joined RAKBANK in Dubai as a Business Development Manager. Here he rose to the zenith of his profession and became the Head of RAKBank Direct in 2010 crossing an astounding number of milestones along the way, by the dint of his merit and work ethics. During his stint with RAKBANK (2004 to 2014), Homi handled a variety of portfolios. In 2005, as Head of Bancassurance, a totally new unit was set up by him, which ushered in a new era of bank’s marketing - cradle to grave Insurance products, for the benefit of the customers. Homi along with his team was instrumental in the aggressive growth of the Bancassurance business making the bank a market leader in this business. In 2007, as the Head of Mortgages, despite the recessionary market conditions, the mortgage business doubled in a short span of time. From 2010 to 2014, he set up a new vertical called RAKBANK direct and led his team aggressively to grow the Banks direct banking platform by
adding Mobile Banking to the existing suite of Digital Channels and launching one of the first online portals to distribute Banking and Insurance products online called rakbankdirect.ae. He was also instrumental in the growth of the Bank’s ATM estate providing customers multifunction facilities through the ATM. As an advocate of new digital technology, he spearheaded the bank’s entry into social media with Twitter, Facebook, Foursquare, Google Maps, and Instagram, ensuring they became a viable service and a good outreach channel for the Bank. Homi has the ability in him to rejuvenate the workforce, and enrich the institutions he is associated with. A highly motivated person, he believes that success comes to those who are ready to seize opportunities in life. A high flyer, he recounts, “Your Job is what you will make it to be. Never take ‘No’ for an answer. In the world of Business ‘NO’ simply means Not Now.” Inheriting the Zoroastrian attributes of honesty and trustworthiness and the spirit of enterprise, he has imbibed the tenets of his Faith. “They’ve been etched in my mind and emboldened me. I begin every day by giving my best and leaving the rest to the Almighty.” With his irrepressible zest for life, “he has always thought that if you rest, you’ll rust. Life is an unending and ever-evolving experience!” Homi is happily married to Tooshna, and they have two wonderful children Kainaz and Bahram. Here are a few excerpts from a tête-àtête with Homi Gandhi: What attracted you in taking a leap from Employee to Entrepreneur? Something that I read in recent years stayed with me, “Your time is limited, so

don’t waste it living someone else’s life. Don’t be trapped by dogma – which is living with the results of other people’s thinking. Don’t let the noise of other’s opinions drown out your own inner voice. And most importantly, have the courage to follow your heart and intuition. They somehow already know what you truly want to become. Everything else is secondary.”- Steve Jobs Tooshna my wife said to me during one of our conversations about this move: “You had subconsciously made up your mind a year before you put in your papers at the bank, that it was time to move on, we could feel it coming. You just had to wait for when you felt the timing was right” Tell us something about your business. “Ideas are easy. Implementation is not” (Guy Kawasaki) and that is where Arithmus Consulting comes in. Businesses can spend a lot of money chasing good ideas, but may not have the necessary experience, tools and resources for deliberating and validating the Idea and for good execution. This applies in particular to new businesses and existing businesses wanting to do something new. Arithmus Consulting at its core offers Management Consultancy services, and our clients currently operate in a wide range of business verticals which
include Dotcom’s, Information Technology, Recruitment and Human Resources, and Digital Marketing. Who is your role model? I have been fortunate to have been surrounded by so many wonderful people who have influenced my life in rather unique ways. Growing up as a child it was my late mother Margaret, for her unwillingness to accept ‘No’ for an answer and to get what she wanted no matter what the odds were; my father Keki Gandhi for his commitment, intellect, business acumen but most importantly for his kindness and generosity of time for his fellow colleagues; his brother and my late uncle Adi for his humility and kindness to me as a child, and a close family friend late Mr.Yezi Tata for his work ethics and relationship skills. In more recent years, my ex-boss and mentor late Mr. David Martin who was the business advisor to RAKBANK had a huge influence in my career and inspired me to keep moving ahead no matter what challenges lay ahead. What is your greatest dream? I hope that Arithmus Consulting or its future Avtar’s will be a big enough umbrella, under which Tooshna my wife and
children will pursue their entrepreneurial aspirations one day. What is your #1 principle in business? Perseverance and hard work pays. In your workday, what is the one thing you cannot do without? I am not ashamed to say it is my iPhone and Lunch! I am quite the foodie and four out of five days you would catch me at some café or restaurant either on my own or with clients and fellow professionals eating. What has been your most challenging assignment/project to date? My assignment in setting up RAKBANK Direct was probably the most challenging, as it involved the creation of a new unit which was put together by the Top Management of the Bank by carving out pieces of other units. Acceptance of the newly put together teams coupled with a new vision and delivery of stiff objectives in an area where technology and trends are ever evolving was a mammoth task. The most daunting assignment however was making the transition from being a client for 15 years to being a new vendor trying to set up his new business. It calls for a huge personality shift.

Smart Turn out at Enterprise Dubai Enterprise Dubai, one of the most awaited events of the year 2014, took place in the fabled city of Dubai from 19th to 21st December, 2014 at the Crowne Plaza Hotel. The program met with its objectives of bringing in high net-worth businessmen and professionals from around the world, to explore business and career opportunities that Dubai going forward will offer as it prepares itself to host the World Expo in 2020. We welcomed 600 delegates through the doors of Jumairah Ballroom, each receiving a fabulous welcome package containing high end gift items such as perfumes, pashmina shawls, tie holders, clutches, traditional dates, all items put together worth more than Aed.1500/- plus a lovely coffee table book – Fathers and Sons, Mothers and Daughters authored by Meher Bhesania. The event was hosted under the auspices of The World Zoroastrian Congress 2009. Mounted on a large scale it was attended by a Member of the Royal family, the Ambassador of India to the UAE, the Consul General of India, government officials, diplomats and businessmen from the UAE. The event was listed by the Department of Dubai Tourism and Marketing in their Calendar of Events for 2014 which was a big achievement. The attendees comprised decision and policy makers, corporate leaders, academicians, financial experts; media and opinion makers; entrepreneurs and Emiratis. World renowned speakers spoke on various topics.
Cyrus Debara, the Master of Ceremonies, in his welcome speech to the delegates said that the talks and panel discussions would range from trade and communication to new technologies and education.

Overall, 38 sessions took place and 80 distinguished Speakers spoke on engaging topics. The event offered start up guidance to individuals who were interested in setting up new businesses and gave a chance to the professionals to meet with the job consultants. Everyone carried wonderful memories of the event. It was heartening to see a healthy mix comprising 45% of young delegates and 55% above 45 years of age who actually had the means to start new businesses in Dubai.
Dubai has to offer. She envisaged that the journey was going to be uphill for Dubai as it prepares itself to host the Expo 2020, but it will certainly be a saga of success. The people from around the world will breathe life into the Expo. Cross roads will become revelations and obstacles will become milestones. With 25 million Indians settled in 110 nations, it was heartening to see several leading personalities from around the world present at the event. Enterprise Dubai had been in making from November, 2013, since the time Dubai won bid to host the World Expo 2020. The event was a tribute to the Ruling family and the Visionaries who have kept Dubai in the forefront as a center for trade and tourism. Many superbrands and retailers exhibited their goods and services in the exhibition area.
Lord Karan Bilimoria CBE DL, the first Parsi in the British House of Lords, shared his erudite views on the Global Economy and the Road to Leadership. He explained how Margaret Thatcher exemplified transformational leadership. “I was privileged to have known her. She turned Britain around and opened up the economy.” Strong individuals with strong values, make strong countries, Lord Bilimoria said.
The event timings were from 9.30 a.m to 4.00 p.m. including lunches and hi teas. The delegates were thereafter taken to the Dubai Mall for two hours of shopping. Dinner was served at 8.00 p.m and entertainment programs started at 9.00 p.m. 19th December, 2014
The event started with the lighting of the lamp by H.E. Mr. Mirza Al Sayegh, Director, Office of H.H Sheikh Hamdan bin Rashid Al Maktoum, Deputy Ruler of Dubai accompanied by Lord Karan Bilimoria CBE DL., H.E. Mr. Fali Major, Air Chief Marshal of India (Retd.), Mr. Byram Jeejeebhoy, Chairman, Byramjee Jeejeebhoy Pvt. Ltd. and Mr. Colm McLoughlin, Executive Vice Chairman, Dubai Duty Free. In her opening address, Meher Bhesania, on behalf of the Organizing Team, thanked the delegates for attending the event. She said that the main purpose of holding Enterprise Dubai event was to position the Indian Diaspora and the Zoroastrian Parsee community as a strong partner of World Expo 2020 and promote trade, tourism and other opportunities to businessmen and professionals that
The event started with the grand opening ceremony of ‘Flowering of truth’ by Coloratura Soprano, Farah Ghadiali, an operatic soprano specializing in music; standing tall and draped in flowing white garments, and the Internationally renowned violinist Jamshed Turel from Canada on the piano. Thereafter, Luc Marin the famous sand artist narrated the story of My Dubai My City in sand. Flashed on the screen was a goodwill message from Shri Narendra Modi, The Honorable Prime Minister of India.
H.E. Mr. Mirza Al Sayegh, Director, Office of H.H. Sheikh Hamdan bin Rashid Al Maktoum, Deputy Ruler of Dubai, delivered the Keynote address. He said that “UAE will always remain an oasis of stability and peace.” This was very reassuring to all.
Colm McLoughlin, Executive Vice Chairman, Dubai Duty Free, spoke on The Success story of Dubai Duty Free and how it started from scratch and is a successful business model today.
The Ambassador of India, His Excellency Mr. T.P.Seetharam, spoke on The UAE and India multi-dimensional relations, a very appropriate topic as trade between India and UAE is at its highest peak today. He alluded, that ties between India and the UAE go back a long way, when the

Indian rupee used to be the currency here, and the best silks from India would be brought for those getting married and pearls, salted fish and dates were sent to India. He referred to the 100 flights daily from India to the UAE and the US$15 billion remittances from the UAE to India.
Vada Dasturji Saheb, Khurshed Dastoor of Udvada, invoked blessings on the Ruling Family and wished strength, peace and harmony to every participant. He was happy to see that Dubai offered opportunities for businessmen to start new businesses. He was honored with a shawl and a gift by the organisers which was presented to him by eminent jurist Fali Nariman. A day before the event, the Jashan Ceremony was performed by Vada Dasturji Saheb, along with Mobed Jimmy Kotwal, Mobed Hanoz Navdar and Mobed Aazman Bhathela.
Padma Bhushan and Padma Vibhushan, Fali Nariman spoke on The Ethics of Leadership that captivated everyone’s attention. He cited anecdotes from the lives of notable personalities like JRD Tata, Mother Teresa, Napoleon, Desmond Tutu and Mahatma Gandhi.
Just before lunch, Dr. Padmaja Yadav spoke on Vaastu Shastra, an architectural science, and advised the importance of harmony in nature.
Post lunch, a panel discussion on Corporate Social Responsibility & Good Governance was conducted by Nozer Buchia, a well-known Speaker, Author & Entrepreneur from U.S.A. The panel members included Lord Karan Bilimoria, CBE, DL; Minoo Shroff; Byram Jeejeebhoy; Neville Shroff; Homa Petit and Dinshaw Tamboly. Several questions on CSR and good Governance were put to panel members and their insightfull views were captured. India being the first country to make 2% CSR statutory was uplauded.

Another Panel discussion was conducted by Mr. Suresh Kumar, Chairman Federal Bank on Can UAE become the Business Capital of the world and the benefits of World Expo 2020. The panelists included Mohan Valrani, Chairman, Al Shirawi Group of Companies, Surender Kandhari, Al Dabovi Group and Kalpesh Sampat, Director SPF Realty. Each of them offered their viewpoints showcasing Dubai’s nimbleness to grow into a progressive city, the fantastic infrastructure and educational facilities it offers, the security, peace and harmony that exists and how Dubai is one of the best cities to live in the world today. Late afternoon saw the Business Quiz ‘Idea, Innovate and Implement’ chaired by Yazdi Tantra, Managing Director, On-Lyne Computer Systems. The contest honored the best and brightest innovators and entrepreneurs. A total of 30 entries

were received. Six candidates made it to the final round. Prize money of Rs. 7 lacs sponsored by WZCC and Enterprise Dubai was offered to first and second winners. Darius Aga from Mumbai, won the first prize of Rs.500,000/- and Dr. Rashneh Pardiwala and Kitayun Rustom won the second prize of Rs.200,000/-. The jury comprised eminent personalities from USA, India and the UAE.

Time was allocated to businessmen who were interested in setting up new businesses in the UAE to discuss matters with BDO Consultants who were present at the event. Similarly those interested in exploring career opportunities were guided to meet ABC Recruitment firm. The event being held in the city that has the world’s largest shopping malls – it was time for the delegates to visit the Dubai Mall at 4.00 p.m; that has some of the most elegant shops in the world.

Who wants to be a Millionaire game show took place in the evening. It was an innovative show with a glass cubicle specially designed by Suresh Joga Ram of Joga Ram Co., in Dubai. The Directors of the program - Urvaksh Tantra and Charmaine Taraporvala handled the game show extremely well. Over 20 participants participated. Dr. Ashie Deboo won the prize money of Aed. 1000/plus the floating currency amount that was collected by her in the cubicle to be invested in the millionaire scheme.

The dinner served at 8.00 p.m was a feast for the delegates. Thanks to Mahrukh Dadachanji, Gool Navdar and Dara Rajwadewala who as Directors of hospitality drew up excellent menus for breakfast, lunches and dinners for all three days with the Crowne Plaza Hotel authorities and provided guidance to the chefs in preparing the Parsi dishes with special masalas arranged from Mumbai. The Directors were on their toes all the time during the three days of the event

The ceremonial lamp, in the morning, was lit by Nadir Godrej, Ronnie Screwvala, Fali Nariman, H.E Mr. Fali Major, and H.E Mr. Anurag Bhushan, the Consul General of India. A message of good wishes received from Mrs. Smriti Irani, Union Minister HRD, India, was flashed on the screen.
Minoo Shroff, spoke on ‘Staying ahead of economic currents and building enterprises during uncertainties. He provided useful tips to businessmen setting up businesses abroad. Coloratura Soprano, Farah Ghadiali from London and internationally renowned violinist Jamshed Turel from Canada rendered the Ashem Vohu. The philosophical meaning being - Truth is the highest good, true happiness comes to those who follow truth for its own sake without thought of reward or punishment. The second rendition was Yatha Ahu Vairyo - blessings of the Good mind come to those who help the poor and needy and serve their fellow human beings. The performance elevated the spirits of the delegates.
Ronnie Screwvala spoke on - Building Businesses and Social Foundations. Ronnie stressed that – “the mindset needs a change in India. There is trepidation to step out and do something on your own. There is apprehension of failure…but failure is a comma, not a full stop.”
H.E. Mr. Anurag Bhushan, the Consul General of India to Dubai and Northern Emirates, spoke on Indian Diaspora makes Nation proud. He paid rich tribute to the Indian community that has been an integral part of Dubai’s development story. “Of the $70 billion sent by NRIs as remittances to India, $20 billion comes from Gulf Cooperative Council. He said, "If we want to make this century ours, the support of Indian NRIs through their ideas on how to help India to reach its potential, is vital.”

Yet another interesting competition, Masters of the Home Kitchen, developed by Kashmira Kotwal, the Director of this program, saw the involvement from both males and females. The participants were divided into 4 teams and the contest was conducted in three rounds. The team comprising veterans of food, Mahrukh Dadachandji, Goolcher Navdar and Gulshan Kavarana emerged as winners. A cash prize of Rs.50,000/was presented by Chief Guest Firdosh Mehta to the team. The book authored by Meher Bhesania contains short inspirational and motivational stories of distinguished fathers and sons mothers and daughters from our community who have taken their family legacies to newer heights.

It started with a breakfast at the Burj Park, followed by a sightseeing tour of Dubai, a fabulous dhow cruise in the afternoon, and a trip to the Global village / Desert Safari in the evening depending on the choice of the delegate. Compliments are still pouring in from various attendees saying Dubai has done it again. Truly, the program achieved its objectives and made the community as well as the country proud!

Exactly three years ago, Roshni lived a perfect life as a Private Banker managing assets under management worth US$100 million on behalf of her clients at the Emirates NBD Bank, but soon thereafter, escaped the corporate world and traded her cubicle to pursue her ultimate dream of becoming an entrepreneur. Roshni hails from a family that possesses rich culinary skills. Her father, Firoz Burjor Mithaiwala, is a professional hotelier with over 45 years of work experience with leading hotels such as The Oberoi, The Leela Kempenski and The Sea Princess Hotel. Her great grandmother Perrin and her grandmother Shirin were successful caterers who kept the family wheels turning and catered to 250 bhonas in Mumbai for a long period of time from 1934 to 1990; so switching careers for Roshni was not very difficult. She ultimately found her life’s calling in the Restaurant business. With her family’s experience spanning over several years in the catering/hotel industry and hers in the field of finance and operations, the business is bound to succeed. Lured by the charm of the old Iranian Cafes, the father-daughter duo right from
start decided to give their restaurant the quintessential look of Irani Café’s that existed in cosmopolitan Bombay in the 70’s. To revive old recipes, and not let go the old culture, they drew up a list of delicious Iranian and Parsi dishes that would leave a mark on the palates of the diners. “Of course there were a lot of trials and toil that went in before the final menu came out. But the final dishes are the ones that we personally felt people would like,” says Roshni. Thereafter, they focused on selecting the right name for their restaurant. To be a bit different, they took the famous songs of the 70’s and after listening to several, zeroed in on - "won’t you take me to FUNKY TOWN” and named their new startup - Cafe Funkie Town. The restaurant is located at JLT, (Jumeirah Lake Towers) an area that is fast developing in Dubai and surrounded by lakes. It offers a wide variety of freshly prepared food that can be easily customized. The menu is from their heart or shall we say from their hunger cravings? Guess that’s what makes it so good! Choices are abundant, and the offerings render uniqueness to food.
Their cutting edge Irani style ‘Chai’ made from tea spiced water and fresh milk (not evaporated milk) gives out a rich aroma, and is served with the best combination of old Irani style bun maska or khari buiscuit. Roshni and her father Firoz are happy to see people visit their restaurant from all over the U.A.E. The place is comfy, calming, charming and no stranger to the Parsi cuisine, with the traditional flavors. Their fast-paced kitchen culture makes it one of Dubai’s leading dining establishments. Apart from youngsters, many families come with their parents, sit and enjoy the food and feel right at home as it transports them back to the settings of the old Iranian Cafes that existed in 70’s. Sadly, not more than 25 Irani cafes exist today in Mumbai with their old world interior that is so unique and irreplaceable. Incredible Potential A Story with a Lesson O
nce there was a king who received a gift of two magnificent falcons from Arabia. He gave the precious birds to his head falconer to get them trained. Months passed and one day the head falconer informed the king that though one of the falcons was flying majestically, soaring high in the sky, the other bird had not moved from its branch since the day it had arrived. The king summoned healers and sorcerers from all the land to tend to the falcon, but no one could make the bird fly. He presented the task to the member of his court, but the next day, the king saw through the palace window that the bird had still not moved from its branch.
With his head bowed, the farmer said to the king, "It was very easy, your highness, I simply cut the branch where the bird was sitting."
Having tried everything else, the king thought to himself... "May be I need someone more familiar with the countryside to understand the nature of this problem." So he cried out to his court, "Go and get a farmer."
We are all made to fly to realise our incredible potential as human beings, but at times we sit in our branches, clinging to the things that are familiar to us. The possibilities are endless, but for most of us, they remain undiscovered.
In the morning the king was thrilled to see the falcon soaring high above the palace gardens. He said to his court, "Bring me the doer of this miracle."
We confine to the familiar, 'comfort zone', so most part of our lives are mediocre instead of being exciting, thrilling and fulfilling.
The court quickly located the farmer, who came and stood before the king. The king asked him, "How did you make the falcon fly?"
So let us learn to destroy the branch of laziness or fear we cling to and free ourselves to the glory of flight!

The Parsi - influences & confluences The Parsis are the most successful, most unique and as many would say the most charming community. With a dwindling minority of 69,000 in India on last count, their contribution to the field of art, science and commerce has been enormous. They are also known to be great philanthropists. They originally came from Iran around the 10th century AD, and integrated themselves into the Indian society; at the same time maintaining their own distinct customs, tradition and religion. As the story goes, when the Zoroastrians sought refuge in Gujarat the local ruler Jadi Rana showed them a glass full of milk and said that their land was already over populated, where would he keep them? The head priest added a spoon of sugar to the milk and said that like sugar in the glass of milk they would blend only adding sweetness without causing the milk to overflow. The King granted them the permission to settle in Sanjan, a small town in Gujarat. As time passed by these people adapted themselves to the newly adopted homeland and came to be known as Parsis after the province of Pars in ancient Iran. What really interests others about the Parsis is their ability to adapt and change to local conditions and create something exclusive and unique. They observe a simple reverence for god’s good creation such as the cattle, the plants, the earth, the sky, the water, the sun and believe in - 'Good thoughts, Good words and Good deeds.' Their values emanate from their great religion which lays stress on acquiring knowledge and wisdom. As many would know some Parsi merchants went to China in the 18th century and traded in tea, silk, ivory, spices, cotton… Soon trade flourished between China and India. This made the Parsis of that era phenomenally rich who in turn gave back in ample measures to the community. The Gara sari, a distinctive item of Parsi women’s clothing was introduced by Jeejeebhoy who would return from his trips with 6 meters of hand woven Chinese silk from Canton. No family closet is complete without the Parsi Gara – a piece of art embroidered with exotic chinese patterns –pagodas, pavilions, bridges, peonies, bamboos, peacocks and phoenixes – on monochromatic white on brightly colored silks. Davar in Mumbai enthralls uberstylish fashionistas in India with her collection of authentic hand embroidered Gara Saris, Jablas, Kurtis, and real Zari border saris. Likewise Parsi Food had an interesting journey to the gates of India. When the Persians came to India they preserved their unique recipes and culinary skills. While they added nuts, dry fruits and saffron to the food, typical of Iranian cuisine, they learned the art of adding onions, garlic and ginger from India. A popular dish among Parsis is the Sali Murgi a lightly spiced simmered chicken preparation served with straw potatoes. A Parsi classic is Dhan Sak, a favourite Sunday meal of rice served with a lentil curry accompanied by meat balls or kebabs. Parsis have a voracious appetite for eggs generally served on top of vegetables or as akuri deliciously scrambled with onion and tomatoes. Parsis like the Chinese consider fish a symbol of good luck and have a very good dish called the Patra ni Machi which is steamed fish wrapped in banana leaves. In this story of ours which talks about influences and confluences - we must include the famous Parsi theatre a charming confluence of different dramatic languages – English, Gujarati, Urdu and Hindi and varied musical scores drawing on western, Indian and Arabic music heritage.

After completing her high school studies in Dubai, Jasmine Tavadia left for the U.S. to secure her graduate and postgraduate degree in Biopsychology and Cognitive Sciences from the University of Michigan, Ann Arbor, a reputed university in America. Upon her return to Dubai, the analytical aspects of her qualifications offered her an opportunity to secure a job with Emirates Airline, where she is currently working as a Revenue Optimisation Analyst and hopes to rise within the industry by the dint of hard work and merit.
Being born and raised in the UAE, has given Charmaine the opportunity to experience and appreciate many cultures in Dubai known as the melting pot with 204 nationalities in the Middle East.
Deriving her Zen moments in Dubai, and seeing the way it has transformed itself from a small sleepy village into a big metropolis, this city holds a special place in her heart and is home to her.
She is currently working as Planning Engineer with Dubai Air Wing and aspires to take her work experience to higher levels and become a leader in her field. Hopefully, this will be an inspiration to the youth of our community to break barriers and follow their aspirations. Mentoring the youth with similar vocational interests is always a pleasure and an honour for her.
Her interests include reading, travelling and playing with her dog, Cookie.
Charmaine completed her Aerospace Engineering in Emirates Aviation College and Kingston University, London and secured a bright and growth oriented future in the ever changing and fast paced aviation industry.
A good role model, and being interested in youth affairs, she is the Chairperson of Emirates Zoroastrian Youth (EZY), the youth wing of the Zoroastrian community in the UAE. Her future plans are to someday start her own business: a Doggie Day Care/Training/Grooming facility

Regional News – Bahrain Bahrain Zoroastrian Association’s Annual General Meeting (AGM) held on 2nd May, 2014, saw the existing executive committee being unanimously re-elected for another year. With a prayer on their lips and goodwill in their hearts, Bahrain’s Parsis gathered at the Postwala residence on 30th May, 2014 for a Khushahli-Nu- Jashan performed by Ervad Kaizad Sanjana, followed by snacks and jolly banter. They again rubbed shoulders for the Summer Samba on 27th June, for Navroz on 18th August, and then again for Oktoberfest on 10th October, 2014 to hobnob and catch up with each other. Bahrain Zoroastrian Association (BZA) turned 58 on 30th November 2014, and the Parsis of the island celebrated this milestone on a picnic on 5th December, 2014 at the Asry Beach. In the cooler climes of February 2015, the executive committee organized ‘Tamasha in the Tent’, a desert soiree at Sakhir, where the young-at-heart BZAites participated in a number of outdoor games; running, jumping and dancing to the DJ late into the night. This was a memorable event for one and all. In keeping with tradition, the devout met at the BZA Aramgarh on Farvardin Roj Farvardin Mah and on Ava Roj Parab as well. Broccoli & Toasted Almond Soup Serving Size - 8 INGREDIENTS • 1 Tbsp butter • 1 Tbsp extra virgin olive oil • 1 medium onion, chopped • 1 stalk celery, chopped • 2 cloves garlic, chopped • 1 tsp chopped fresh thyme or parsley • 8 cup chopped broccoli (stems and florets) • 2 cup water • 4 cup reduced-sodium chicken broth, • 1/2 tsp salt • freshly ground pepper to taste • 30 gms Almond flakes (toasted) for garnish
DIRECTIONS 1. Heat butter and oil in a pot over medium heat until the butter melts. Add onion and celery; cook, stirring occasionally, until softened, 4 to 6 minutes. Add garlic and thyme (or parsley); cook, stirring, until fragrant, about 10 seconds. 2. Stir in broccoli. Add water and broth; bring to a lively simmer over high heat and cook until very tender. Set aside a few broccoli florets for garnish. 3. Puree the soup in batches in a blender until smooth. Add salt and pepper. 4. Serve hot garnished with toasted almond flakes and mini broccoli florets.

Salmon With Garlic & Rosemary Serving Size - 4

INGREDIENTS

• 600gms skinless salmon fillets (approx 150gms each) • kosher salt and freshly ground pepper • 4 sprigs fresh rosemary • 1 Tbsp crushed red pepper flakes (or sliced red chili) • 1/2 cup extra-virgin olive oil • 2 cup dry white wine (optional) • 1 cup torn fresh basil leaves
• 4 Tbsp extra-virgin olive oil, divided • 2 cup thinly sliced leeks, rinsed and well drained • 5 cloves garlic, thinly sliced • 1/2 tsp salt, divided • 1/2 tsp freshly ground pepper, divided • 3 large tomatoes, sliced 1/4 inch thick • 1 small summer squash or zucchini, sliced diagonally 1/4 inch thick • 1 small eggplant, sliced 1/4 inch thick • 1/3 cup finely shredded pecorino Romano or Parmesan cheese • 1 teaspoon dried oregano
DIRECTIONS 1. Preheat oven at 180 C. 2. Season the salmon on both sides with salt and black pepper. Lay out 4 large pieces of aluminum foil. In the center of each piece, put piece of salmon, 1 sprig rosemary, 3/4 teaspoon red pepper flakes, and 2 tablespoons olive oil. Evenly distribute the garlic among the piles and season with salt and black pepper. Bring up all 4 corners of the foil to begin to form a pouch. Before sealing, drizzle white wine to each packet. Tightly seal the packets. 3. Put the packets in the pre-heated oven. Cook until done for about 15 minutes. Remove from the oven, open, and top each with 1/4 cup basil. Serve immediately. Tips: You can substitute the salmon for kingfish fillets but make sure that they skinless and are thinly sliced. And you can also substitute white wine with diluted fish stock and a dash of lemon juice.
DIRECTIONS 1. Preheat oven to 180°C. 2. Heat 2 tablespoons oil in a large skillet over medium heat. Add leeks, garlic, 1/4 teaspoon each salt and pepper and cook, stirring, until soft and beginning to brown, about 6 minutes. Transfer the mixture to a shallow 2-quart baking dish. 3. Layer tomatoes, summer squash (or zucchini) and eggplant slices in an alternating single pattern over the leek mixture (they will overlap quite a bit). Sprinkle the vegetables with the remaining 1/4 teaspoon each salt and pepper and drizzle with the remaining 2 tablespoons oil. 4. Bake the vegetables for 15 to 20 minutes. Sprinkle cheese and oregano over the top. Continue baking until the edges are browned and the vegetables are very tender, about 10 minutes more. Let cool for about 5 minutes before serving.
