The Holy Month of

Ramadan Ramadan a guide for non-Muslims

Ramadan is the ninth month in the Islamic calendar. That doesn’t mean September, (though this year, 2009, it will begin on August 21 and end September 19). The Islamic year has twelve lunar months, totaling 355 days. Each month starts on a new moon. This means that Ramadan begins about 10 days earlier each year. The Islamic New Year also advances by 10 days per year (compared with the Gregorian calendar used in the West).

What happens during Ramadan?

Muslims mark Ramadan by fasting each day from sunrise to sunset. This is a strict fast - no food and no drink of any sort, not even water. It is hard for smokers, because that too is disallowed. The faithful rise early in the morning and take a meal, Suhoor, before dawn and first prayers. Their next meal is called Iftar and is taken after the sunset prayer. Within the faith, exceptions are made for the old and infirm, young children and pregnant and nursing mothers. Throughout Ramadan, families get together to share food and company in the evenings and night-time, and the emphasis is always on reflection, prayer and charity. Ramadan is not a commercialized festival.

Some tips for non-Muslims If you live in the west, your life goes on as normal. Nevertheless, it is good to be aware that your Muslim colleagues may well be fasting. It is considerate to respect this, and not to make a show of eating and drinking in their presence. It is good to say ‘Ramadan Kareem’ in greeting. It will be appreciated, as I’m sure you would appreciate a ‘Merry Christmas’ from the locals if you were working in Saudi.

If you live in an Islamic country, Ramadan is enshrined in law; it is not simply a religious option. You are not obliged to fast, but you are required to respect the traditions. Here are some tips to avoid accidental offence: • Take a good breakfast in the privacy of your apartment before venturing out for the day. If you must have lunch, take a packed lunch and find a private place to eat it. Better still, try to do without. Most of us carry a few extra pounds anyway. • Don’t snack - avoid coffees, sweets, gum, etc. during the day. Most of this is habit, rather than necessity, so it’s a good discipline. You’ll want to drink water. Try to find a private place. • Try not to smoke. If you really must, find a private place, but also consider why you must!

Lailat

al-Qadr Lailat al-Qadr (“Night of Power”) marks the anniversary of the night on which the Prophet Muhammad first began receiving revelations from God, through the angel Gabriel. An entire chapter in the Quran deals with this night: “We have indeed revealed this (Message) in the Night of Power: and what will explain to thee what the Night of Power is? The Night of Power is better than a thousand months. Therein come down the angels and the Spirit by God’s permission, on every errand. Peace!...This until the rise of morn. ”(Chapter 97) Muslims believe Lailat al-Qadr is one of the last odd-numbered nights of Ramadan

Eid ul-Fitr after 29 or 30 days of fasting, as per the lunar sighting, marks the end of the fasting period of Ramadan and the first day of the following month, after another new moon has been sighted, The Eid falls, Eid ul-Fitr means the Festival of Breaking the Fast ; a special celebration is made. everyone puts on their best - usually new clothes- communal prayers are held in the early morning, The prayer is two rakaahs only, and it is optional (sunat) prayer as opposed to the compulsory five daily prayers, followed by donating to the poor, feasting and visiting relatives and friends. Eid is an Arabic word meaning “festivity”, while Fitr means “to break the fast” and so the holiday symbolizes the breaking of the fasting period. It is celebrated

starting on the first day of the Islamic month of Shawwal. Eid ul-Fitr AKA the “Smaller Eid” as compared to the Eid ul-Adha “Greater Eid” that lasts four days Eid ul-Fitr is a three days celebration. Muslims are commanded by the Qur’an to complete their fast to the last day of Ramadan and then recite the Takbir all throughout the period of Eid. after having confirmation that the moon of Shawwal is sighted on the eve of the last day of Ramadan The Takbir is recited. It continues until the start of the Eid prayer. Before the Eid prayer begins. Muslim who is able must pay Zakat al-ďŹ tr an alms for the month of Ramadan. This equates to about 2 kilograms (4.4 lb) of a basic foodstuff (wheat, barley, dates, raisins, etc.), or its cash equivalent and is typically collected at the mosque, distributed to needy local Muslims prior to the start of the Eid prayer. Although Eid ul-Fitr is always on the same day of the Islamic calendar, the date on the Gregorian calendar falls approximately 11 days earlier each successive year, since the Islamic calendar is lunar and the Gregorian calendar is solar. Eid may also vary from country to country depending on whether the moon has been sighted or not. The future dates are estimated at: 2009: 20 September 2010: 10 September 2011: 31 August 2012: 19 August 2013: 8 August 2014: 29 July 2015: 19 July Eid ul-Fitr begins the night before each of the above dates, at sunset.

Biryani Ingredients • 60 ml vegetable oil • 4 small potatoes, peeled and halved • 2 large onions, finely chopped • 2 cloves garlic, minced • 6 g minced fresh ginger root • 1 g chili powder • 1 g ground black pepper • 1 g ground turmeric • 2 g ground cumin • 6 g salt • 2 medium tomatoes, peeled and chopped • 30 ml plain yogurt • 3 g chopped fresh mint leaves • 1 g ground cardamom • 1 (2 inch) piece cinnamon stick • 1360 g boneless, skinless chicken pieces cut into chunks • 40 ml vegetable oil • 1 large onion, diced • 1 g powdered saffron • 0.2 g cardamom • 3 whole cloves • 1 (1 inch) piece cinnamon stick • 0.9 g ground ginger • 455 g basmati rice • 950 ml chicken stock

Preparation: • In a large skillet, in 2 tablespoons vegetable oil (or ghee) fry potatoes until brown, drain and reserve the potatoes. Add remaining 2 tablespoons oil to the skillet and fry onion, garlic and ginger until onion is soft and golden. Add chili, pepper, turmeric, cumin, salt and the tomatoes. Fry, stirring constantly for 5 minutes. Add yogurt, mint, cardamom and cinnamon stick. Cover and cook over low heat, stirring occasionally until the tomatoes are cooked to a pulp. It may be necessary to add a little hot water if the mixture becomes too dry and starts to stick to the pan. • When the mixture is thick and smooth, add the chicken pieces and stir well to coat them with the spice mixture. Cover and cook over very low heat until the chicken is tender, approximately 35 to 45 minutes. There should only be a little very thick gravy left when chicken is finished cooking. If necessary cook uncovered for a few minutes to reduce the gravy. • Wash rice well and drain in colander for at least 30 minutes. • In a large skillet, heat vegetable oil (or ghee) and fry the onions until they are golden. Add saffron, cardamom, cloves, cinnamon stick, ginger and rice. Stir continuously until the rice is coated with the spices. • In a medium-size pot, heat the chicken stock and salt. When the mixture is hot pour it over the rice and stir well. Add the chicken mixture and the potatoes; gently mix them into the rice. Bring to boil. Cover the saucepan tightly, turn heat to very low and steam for 20 minutes. Do not lift lid or stir while cooking. Spoon biryani onto a warm serving dish.

Harira Harira is a soup from the Maghreb region of North Africa that is especially popular as an iftar meal to break the daily fast during Ramadan. There are innumerable variations of this hearty, healthy soup, but most recipes are for chunks of lamb slow simmered with tomatoes, chickpea, spices and herbs.

Ingredients • Olive oil or butter -- 1/4 cup • Lamb, cubed for stews -- 1 pound • Onion, chopped -- 1 large • Celery, chopped -- 2 stalks • Turmeric -- 1 teaspoon • Cinnamon -- 1 teaspoon • Ground ginger -- 1/2 teaspoon • Nutmeg -- 1/4 teaspoon • Saffron -- big pinch • Tomatoes, chopped -- 2 cups • Water or stock -- 2 quarts • Chickpeas, cooked and drained -- 2 cups • Lentils -- 1/2 cup • Salt and pepper -- to taste • Cilantro, chopped -- 1/2 cup • Parsley, chopped -- 1/2 cup • Lemons, cut into wedges -- 2

Preparation: • Heat the oil or butter in a large pot over medium-high flame. Add the lamb and brown on all sides. Remove the meat to a plate and set aside. • Reduce heat to medium and add the onions and celery. stir until the onions are translucent, 4-5 minutes. Add the spices and stir for another 1-2 minutes. • Stir in the tomatoes and cook for 3-4 minutes. Finally pour in the stock and return the meat to the pot. Bring to a boil, then reduce heat to medium-low and simmer for about 45 minutes. • Add the chickpeas, lentils, salt and pepper and simmer for another 20 minutes, or until the lentils cooked through and tender. • Adjust seasoning, stir in the cilantro and parsley and serve with lemon wedges for each diner to squeeze into their stew as desired.

MIDDLE EASTERN VEGETABLE SOUP

Ingredients • 3 white potatoes, chopped • 1/2 yellow onion, cut into eights • 4 carrots, sliced • 1 clove garlic, crushed • 1 celery stalk, sliced • 1/4 cup fresh parsley, finely chopped • 1/2 cup fresh string beans or canned • 1/4 teaspoon black pepper • 1/4 teaspoon cumin • 1/8 teaspoon ginger • 1/4 teaspoon salt • 4 cups water • 3 cups canned tomato sauce • 1 small can tomato paste

Preparation: In a large saucepan, combine water, tomato sauce and paste on medium heat. Stir well to make a good soup base. Add water or more tomato sauce as desired. Add vegetables and spices. Bring to a boil, and then reduce heat to low medium (about 3 on an electric range). Simmer for 45 minutes or until vegetables are tender.

Ramadan

Embarak Ramadan is the month of fasting for Muslims throughout the world. It is considered the most holy month during the year. Determined generally through the ďŹ rst sighting of the moon in the sky rather than the astronomical lunar cycle, the end of the month of Ramadan, and the beginning of the Eid El Fitr is celebrated with presents and family and friends visits. This month represents an opportunity for Muslims to get closer to the Almighty God through depriving the sensual pleasure of food, directing all the thoughts to the transcendent, and performing spiritual exercises, prayer and spiritual communion, whether in Mosques or at home. Fasting in Ramadan means going hungry for a long period of time during the day. In Jordan as in other Muslim countries, people can be gruff, sluggish and irritable, particularly in the rush hours. The rule for fasting during this holy month according to the holy Quran is to eat and drink freely until a white thread from a black thread by the daylight can be plainly distinguished. This is when people start the fast, and keep it until night. This is interpreted in practice as enormous breakfasts, night-time food markets and sunset feasts.

The tradition says that the telling of a lie, slander, denouncing someone behind his back, a false oath, and greed or covetousness, destroy the merits gained by fasting. This demonstrates that the objective of fasting is to intensify the perceptions of the Divine and organize the scattered everyday thoughts of mundane life. Without food or drink, particularly coffee, Jordanians become somehow testy during this holy month. Therefore, it is critical that everybody and especially foreigners abide by the restrictions on consumption imposed by the fast, as breaking these restrictions is considered and offence and can lead to severe penalties.

Health Tips Stay Healthy While Fasting Muslims around the world anticipate the arrival of the holiest month of the year. During Ramadan, the ninth month of the Islamic calendar, Muslims from all continents unite in a period of fasting and spiritual reflection. To ensure adequate nutrition and continued good health, follow these tips: • Prior to Ramadan, a Muslim should always consult with a doctor about the safety of fasting in individual health circumstances. • Even if you are generally healthy, recognize that Ramadan will take a toll. Plan your schedule and meals ahead of time in order to make sure you get the nutrients, hydration, and rest that you need. • Eat suhoor (A small meal traditionally eaten before dawn during Ramadan; the final meal before the day’s fast begins) Yes, it is hard to get up at that hour, which is why it has many benefits and rewards. It will help you to wake up for the Fajr prayer. The suhoor meal is Sunnah. Moreover, this morning meal is generally recognized as the single most important meal of the day. Do not overeat, though. Focus on taking in foods that are rich in complex carbohydrates and protein, fruits or vegetables, and plenty of water. For example: an egg on whole-grain toast, a few crackers with peanut butter, some orange slices, and two glasses of water. • During the hottest part of the day, stay in cool areas (indoors or in shade) and limit your physical activity. Rest if possible. • Avoid gorging yourself when breaking the fast at sunset. Follow the Sunnah: break your fast with dates and either milk, water, or fruit juice. After the maghrib prayer, continue with a light starter

such as soup and crackers. After a long period of fasting, you need to bring your fluids and blood sugar level up without overdoing it. • During the early evening (after maghrib), have a healthy and balanced dinner. Do not overeat, and be sure to drink a few more glasses of fluids. • During the evening hours, resist the temptation to drink tea, coffee, and soda. When visiting friends or family, ask for glasses of water. • Serve yourself, your family, and guests a “dessert” of fresh fruit and nuts. There are lovely choices available in this season, and they are much healthier than chocolates and candy. • Sip on water throughout the evening. Aim for 8 glasses by bedtime. To help you keep track, fill and refill a water bottle with a measured amount of water, and be sure to finish it. • Light exercise, such as walking for 15-20 minutes, is best done in the evening hours. • Avoid fried and spicy foods as they may cause heartburn or indigestion. • Speak to your doctor about an appropriate multi-vitamin. • Continue to brush and floss your teeth several times a day. • Wash your hands regularly, and avoid those who cough or sneeze. This is important to prevent the spread of viruses (such as seasonal flu and H1N1) and bacteria which may cause illness. • Quit smoking! • Organize your schedule so that you get enough sleep.

Laialy Libnan Ingredients Bottom Layer • 4 cups milk • 3/4 cup farina (or the finer semolina or smeed) • 1 teaspoon vanilla Cream Layer • 250g whipped cream (extra creamy) • 200g Nestle cream Atter (Syrup) • 1 1/2 cups water • 1 1/2 cups sugar Garnish • toasted coconut

Directions • Make the attar ahead of time. • Combine the water and sugar in a small pot and bring to a boil, let boil for about 3 minutes and set aside. • Combine the whip cream with the Nestle cream, gentle folding in, then once well combined put it back into the refrigerator. • Pour 4 cups of milk into a medium pot, add vanilla and sugar. • Bring to a boil, and add farina very slowly while stirring, so to avoid clumps. • Stir while milk and farina cooks, which will take about 5 minutes. • Place into small bowls, and let cool. • Once cooled, pour about 2-3 tablespoons of syrup on top of pudding. • Then spoon about 2-3 heaping tablespoons of whip cream mix onto pudding evenly. • Then top with toasted coconut. • You can enjoy it then or place in the fridge for later.

Katayef Ingredients Dough: - 1 Cup of Flour - 1 Cup of Milk - 1 Tea-spoon of Yeast - ½ Tea-spoon of Bicarbonate de Soda Cheese Filling (Filling option 1): - White sweetened cheese (found in supermarkets) - Pinch of cinnamon - Sugar to taste Nuts Filling (Filling option 2): - Ground pieces of walnuts - Pinch of cinnamon - Sugar to taste Syrup (Qater): - 1 Cup of Water - 1 Cup of Sugar - 2 Table-spoons of Lemon Juice - 1 Table-spoon of rose water

Steps:

First of all, we prepare the syrup so that it is cold when the Katayef are ready: - Put all Syrup ingredients in a deep pan, or a pot and stir until sugar is dissolved - Put the pan on the hob at a high temperature

- Stir from time to time - Remove from the hob as soon as the syrup is thick (not watery). This should take around 10 minutes. - Leave aside to cool down. Now we will prepare the Dough: - Whish the Flour, Milk, and Yeast until completely mixed - Leave aside for 2 hours - Use a big non-sticky flat-bottom pan to cook the katayef. Heat the pan first, then reduce temperature to minimum - Sprinkle the Bicarbonate de Soda on the dough and mix - Take 2 big table-spoons of the dough (depending on the desired size of the Katayef) and place them in the middle of the pan in a shape of a circle - Fry the Katayef on one side until golden. Remove with a spatula and leave to cool down - Repeat until all mixture has been used Preparing the Cheese Filling: - Cut the White Cheese into very small pieces and shred them by hand. - Add the Cinnamon and the Sugar and mix. Preparing the Nuts Filling: - Mix all the ingredients in a big bowl Final Preparation: - Place a small amount of either fillings in the center of the Katayef piece and fold one side over the other, stick the edges by pressing them with your finger. The final shape of each piece is a semi-circle - Now you have 2 options for cooking: • Fry (Maximum 2 minutes on both sides) with butter or vegetable oil (butter is better) until gets golden • Place all the Katayef pieces into an oven plate or tray, place a thin slice of butter over each of them, and bake until they get golden - Dip into the Syrup for a minute, then remove • Syrup should be at room temperature, while the Katayef should be hot Serve Hot

Fast to be

HEALTHY Fasting has its advantages from the point of view of health and hygiene. Islam wants a Muslim to be healthy, clean, alert, agile and energetic. “Fast to be healthy,” had said the Holy Prophet (S.A.W.). And physicians today acknowledge the many benefits of fasting that ensure health and the soundness of one’s body and mind. Some of these positive points have a direct influence on psychology and physique of the fasting individual. Fasting has been found to be an effective treatment for psychological and emotional disorders. It helps a person to firm up his will, cultivate and refine his taste and manners, strengthen his conviction of doing good, avoid controversy, petulance and rashness, which all contribute towards a sane and healthy personality. Besides nurturing resistance and ability to face hardships and endurance, fasting reflects on outward physical appearance by cutting out gluttony and getting rid of excess fat. The benefits of fasting on health do not stop there but are instrumental in alleviating a number of physical diseases, including those of the

digestive systems, such as chronic stomachache, inflammation of the colon, liver diseases, indigestion, and conditions such as obesity, arteriosclerosis, high blood pressure, asthma, diphtheria and many other maladies. A Swiss physician Dr. Barsilus noted that: The advantages of hunger as a remedy exceed those ingesting medicine several times. As readers are well aware, several physicians advise patients to skip meals, sometimes for a few days, before prescribing them a controlled diet. Generally speaking, fasting hastens the destruction of the decaying tissues of the body by means of hunger, and then builds new tissues through nutrition. This is why some scientists suggest that fasting should be regarded as an effective means of restoring youthfulness and longevity. However, Islam exempts from fasting sick and old people whose health is bound to deter. But fasting should have its regulations too, and not simply the in orderly skipping meals, that is bound to harm health and stamina, rather than improving them. Here again Islam provides the answer, and in order to realize the benefits of fasting, it recommends the late midnight meals called ‘Suhor’ (before the formal start of a fast) and the breaking of the fast at the time prescribed. Of course, to ensure good health one should abstain from gluttony after breaking fast. The best criterion is that which was stated by Imam Ali (AS): “Son! May I instruct you four words after which you will no longer need medicine? Do not eat unless you are hungry. Stop eating while you are still hungry. Chew food deliberately. Before sleeping, go to toilet. You will not need medicine if you follow.” In the holy Quran, there is a Verse gathering the whole matter of medicine. It is: “...Eat and drink but do not be excessive.” (7:31)
