Serves: 4

Ingredients 800g frozen whole black tiger prawns 250g salted butter ½ bulb garlic 2 frozen cubes of chilli 3 lemons 4 frozen cubes of parsley 1 loaf frozen stone baked sourdough bread

Method

1. Defrost the prawns overnight in the fridge. Peel shell from the defrosted prawns, leaving the tail and head on, then de-vein. 2. Peel and finely chop the garlic, add to softened butter, parsley & chilli. Mix until smooth. 3. Bake bread to packet instructions. When cool, cut into 8 slices and toast.

4. Place prawns on an oven proof serving dish & divide butter between them. Season with salt & pepper. 5. Place prawns in a pre-heated oven at 180 celsius for 4-6 minutes. When cooked, spoon butter over prawns. 6. Finish with the zest and juice of a lemon. 7. Slice 2 lemons in half, then arrange on serving dishes with prawns and toast.

Ingredients 4 frozen swordfish portions 3 mixed peppers 300g white onion 6g ground coriander 3g ground cumin 3g turmeric 0.5g chilli powder 100g frozen sweetcorn Â˝ green cabbage 100g carrots 200ml salad cream 120ml natural yoghurt 1 lemon 50g salted butter 2 frozen cubes parsley Â˝ bulb garlic 20g fresh coriander Salt Pepper Bamboo skewers

Method 1. Defrost swordfish in fridge overnight & cut into small pieces (x24). 2. Cut peppers & onion into small pieces and cut lemon into eighths. 3. Arrange skewers with swordfish, peppers, onions & lemon. Drizzle with oil & all the spices. 4. Finely cut cabbage, onion & carrot. 12

Add cooked & cooled sweetcorn, salad cream, coriander, salt & pepper. 5. Mix yoghurt, lemon juice, lemon zest, salt & pepper. 6. Melt butter with garlic & parsley. 7. Season skewers with salt & pepper, lightly oil then grill. When cooked spoon over garlic & parsley butter & a squeeze of lemon. 8. Place skewers on a serving plate, along with lemon, coleslaw & yoghurt.

e arrived just a few months ago as a natural progression in his retail career spanning a number of years after spending time in both Portugal and England. A Portuguese citizen, he has spent the last four years with his wife and young daughter living and working in the UK. Although he had planned to stay in the UK, he has been lured back to the land of sunshine by the company that he used to work with some years ago. Now at the helm of one of Overseas’ larger stores and spearheading their expansion campaign in Portugal, Nuno is fitting right in, whether driving the forklift truck, clearing pallets or out canvassing for new properties. He is a welcome addition to the store and the company.

Hot Summer August Festivals in Spain There is no doubt that August is one of the best and most entertaining months for you to be in Spain. With a myriad of fiestas Spain has lined up for you during this month, fun and enjoyment is guaranteed during your stay for the month of August. Almost all of the major cities in Spain host some kind of festival , feria or fair so wherever you plan to stay in Spain, you won´t be far from one or more of them to enjoy.

Festa Major de Gracia in Barcelona (August 15 to 21) This one-week festival is one of the best fiestas Spain offers and a firm favourite for the residents of Barcelona. Famous for its elaborate distinction and colourful decorations, this festival offers all types of music ranging from classical Spanish, jazz and rock. Alongside the music come workshops, exhibitions, street markets, sporting activities, parades, dramatic performances, and many other activities that are specifically designed for kids. Verbena de la Paloma Madrid – 15th August Celebrated on August 15th in the La Latina quarter of La Paloma in Madrid. Even the intense August heat densest stop the streets filling up with music and dance. There is a great summer atmosphere for this popular festival with street parties, parades, food and drink and lost of music. A helpful tip is to try and find a good place with plenty of shade as the heat can be quite stifling in August.

Malaga Feria in Malaga – 13th to 20th August Now one of the largest festivals in Spain, the Feria de Malaga lasts for at least 7 days and is celebrated all around the city. The feria is held between the 15th and 22nd August and features music, shows, dancing, horses, fireworks and daily processions through the historic the centre of the city. La Tomatina – Valencia – 30th August in 2017 (variable dates) Bunol in Valenica is home to the La Tomatina the famous battle of the tomatoes. Tons of ripe tomatoes are thrown by locals historically from warring towns and villages – followed by music and dancing. Each year the party gets bigger and better and is celebrated on the last Wednesday of August. There are lots more festivals happening all over Spain and Locally, these are but a few.. but check out the website for full listings every month.

Scott Tierney - Area Manager Spain (Costa del Sol) & Portugal

The New Kid on the block Scott Tierney joined Overseas Supermarkets after a successful 25 year career with Morrisons Supermarkets based in the UK.

Previous roles have seen Scott managing stores throughout Edinburgh before moving to Spain for five years to be a part of the management team in MorrisonÂ´s Gibraltar branch, ultimately moving to London for a further five years to progress his career, responsible for the busiest and most prestigious stores in the company portfolio before returning to Spain to join the Overseas Adventure story. As well as spending time with his family, Scott enjoys several hobbies outside retail including scuba diving where he is a qualified PADI Instructor, snowboarding (Yes, even in Spain!) and also running, having previously completed the London, Paris and New York Marathons for charity.
