Many people think about introducing dance to their child around three or four years old, but dancing with your baby plays a key role as well. Not only because it is such a fun and enjoyable way for everyone to pass some time, dancing also stimulates almost every area of your baby’s brain, encouraging the growth of vital neurotransmitters. You can include dance in your baby’s day from the earliest weeks after birth. Babies will generally love the rhythmic movement of dance – remember, they were rocked and swayed in utero for nine months. The gentle movement of dancing is repeating this soothing stimulation. Here are just some of the many developmental benefits to dancing with your precious bundle! 1. Dancing provides stimulation to very special nerve endings called vestibular receptors. The vestibular system is centered in the inner ear and almost any movement will stimulate the brain via these nerve endings. A well-modulated vestibular system is a crucial foundation building block for all learning. 2. Each time you dance with your baby, the vestibular/balance sensors in the ear sends messages to the brain about its location – up, down, sideways, and forward, backward or central. This vestibular stimulation is essential for the development of good balance, coordination and posture. 3. The stimulation your baby receives during dance also helps the development of muscle tone, space and body awareness, vision, hearing and touch as your baby is moved gently through different positions. 4. Dance helps your baby to develop a good sense of rhythm, form, time and flow. Your babe-in-arms will internalize the rhythmic movements and continue developing the understanding of a steady beat, the underlying, unchanging, repeating steady pulse he would have heard during pregnancy. 5. When dancing while holding your baby, you are replicating vestibular stimulation he would have experienced in utero – the rocking and swaying. This helps to calm your baby, helps him feel secure and provides many lovely parent/baby-bonding opportunities. 6. Dance allows for imitation, repetition, coordination and exploration of movement to the rhythm, mood and feeling of music. 7. Dances and songs provide opportunities for memory training and coordination, even at this early stage! There are many different ways to hold your baby while dancing. Variety in this respect is good as each position works on slightly different muscle tone, balance and vision development! How you hold your baby will depend on their level of muscle tone. Examples include holding your baby; in the tummy time position; facing towards you; facing away from you; lying on his right side, then his left side. Enjoy the snuggles with your new bundle of joy, but also remember to dance as well!

What’s So Important About Your Nervous System Anyway? Your nervous system controls and coordinates every cell, tissue and organ in your body. Why wouldn’t you want to take care of it? A message from “Without a sense of caring, there can be no sense of community.” ~Anthony D’Angelo From Scotia to Ballston Spa, Ballston Lake to Charlton we are one community. We may live in different counties and townships; but this has been known as the Rt. 50 corridor, the gateway to Saratoga since I was a child. The sense of caring doesn’t stop because a county line is drawn, the sense of community doesn’t end at the signs that mark the county lines. Our Flag Day Parade is proof that we are one with our neighbors. Since 2003 our celebration of Old Glory has encompassed the entire Rt. 50 corridor; Grand Marshals are chosen by their contributions to the community, not which side of the town line they are on. “I know there is strength in the differences between us. I know there is comfort, where we overlap.” ~Ani DiFranco Our local businesses range from working farms to automotive and everything in between. As different as they are, it is comforting to know they are all paying toward the same school and property taxes as the residents. The tax revenue from
our local businesses offsets a huge portion of the costs to maintain the town and the schools. The hamlet of Burnt Hills has no markets, very few restaurants, some locally owned businesses, a few good sized medical buildings, a CVS and a Stewarts. As costs of the town and school district increase and no new businesses coming in to offset the increased tax burden, our taxes will go up. Why? Our lack of infrastructure has stifled growth along the Rt. 50 corridor. Glenville and Ballston Spa have been able to improve their towns, keeping their tax increases to a minimum while building new parks and attracting new industry because they improved their infrastructure over the past 10 years. Forward thinking led by Chris Koetzle gave Glenville a jump on what was about to happen with or without planning — inevitable growth. The casino wasn’t even a twinkle in Schenectady’s eye when Chris began his improvement plan. Had the town not already positioned itself for new roads and improved intersections, the traffic from the casino would have placed a huge burden on the residents. What does that have to with us? With a casino on one end of Rt. 50, Saratoga on the other and Burnt Hills plopped in the middle, the Town of Ballston officials have proposed a new sewer line to be installed along southern Rt. 50 to prepare for inevitable growth. “At any given moment, public opinion is a chaos of superstition, misinformation and prejudice.” ~Gore Vidal I’m not going to pretend that people have no reason to feel as though they have been betrayed by the town in the past. There have been mistakes, perhaps outright disloyalty to the residents of Ballston that have negatively impacted our town financially along with our quality of life, creating distrust. There are roughly 440 residents and businesses that are eligible to vote on April 18th. There are good reasons on both sides of the issue as to why vote yes or no. Environmental,

financial; in the spirit of transparency I am not on the proposed sewer line therefore I cannot vote. What I can say without doubt is this. I have never seen such discord in our community in the 20 years I have lived here. For 10 years I have watched our local business owners donate thousands upon thousands of dollars to our schools, fire departments, highway cleanup, community events, Rotary, Kiwanis, scholarships...the list goes on and on. I myself have supported every charity, pancake breakfast, parade, rotary event, sent to me by running their announcements for free. I am personally hurt that the community has called for a boycott of our local businesses based on a proposal made by the town and put up for a vote. The business owners did not create this proposal. If they are on the proposed line they have every right to vote just like everyone else. For many a sewer line would improve their business, for others it may not. If the vote were to pass, depending on the size of the building, the business owners are incurring extremely high costs to have sewer hooked up. They will be required to pay per EDU, just like a resident. Except for they may have 25 EDU’s. To call for a boycott is irresponsible and frankly, downright mean. In the same spirit of transparency I have offered, I would ask those who are calling for a boycott to reveal if they have developed their land and are making an income from it? Many people who are against the project are against it because they do not want our area to lose it’s rural feeling. Developing your land to have several families living on it is a threat to rural living. I have done my homework. Sewer issues plague our state. We have an abundance of streams, tributaries and rivers. In our town we have piped in water and septic systems on small lots. The EPA is cracking down on towns and businesses that are polluting our environment. If you read or listen to local news, you know the Mohawk River is under the microscope, both literally and figuratively. To insinuate this proposal is only to benefit a few and has nothing to do with pollution is flat out wrong. I am not asking you to vote one way or the other. I am asking you to keep the sense of community alive in Burnt Hills. “In the End, we will remember not the words of our enemies, but the silence of our friends.” ~Martin Luther King, Jr. I have known the business owners in this community for a minimum of 10 years. Some I have known since I was at the Times Union. They are good people. I refuse to let them be demonized without speaking up.

Look Outside, It’s Spring! Spring Home Maintenance Tips from Christopher Haddon, Licensed Associate Real Estate Broker, Howard Hanna Real Estate Services
Spring is here and home maintenance thoughts start turning from inside to outside. Maybe you’re considering getting your home ready to sell and need to check out its “curb appeal”, or maybe you’re just getting things ready for the upcoming outdoor season – either way, the following checklist should help your plans to spruce things up and also give you a head start on warding off future maintenance problems. TREES In the wet and well-treed Northeast, you need to keep an eye on potential problems caused by the trees on your property. As you tour, look for limbs that have cracked or are sagging or trees that may have more of a lean than you remember. Check for overhanging limbs that may be shading the roof and causing mildew problems or that may be deposing leaves or pine needles that can clog gutters and create a fire hazard. FENCES A good place to start is with the perimeter of your property. Winter plays havoc with fences, so check them out carefully. Wiggle the posts to see that they’re still firmly set and look for loose fence boards and loose or rotted stringers. Check also to see if the fence is due for a fresh coat of paint or other finish. FOUNDATION Check the foundation for signs of cracks or other leakage problems. Small cracks can be a source for seepage into the crawl space and you especially want to take notice of larger cracks that may indicate movement in the ground under or around the home. If you’ve noticed water in your basement, keep that in mind as you analyze both the foundation and the surrounding drainage patterns. DRAINAGE While walking the property, be sure and think about drainage around your home as well. Winter storms can cause shifts in local topography that may change drainage patterns, allowing water to move or pool around the foundation or come into contact with your siding. Look for areas of water staining on the concrete or dirt or water stain patterns on siding. DECKS Rain and snow take their toll on your decks, so check them over carefully. Check the condition of the boards for rot or splitting. Walk the entire deck to check for protruding nails and also to see if everything feels solid – sometimes a simple walk will point up loose supports or areas that need additional bracing. You’ll also want to pay attention to deck rails, looking for loose boards, missing nails, separated joints and support posts that feel wobbly. Finally, check the condition of the deck’s finish and determine if a fresh coat is due this summer. SIDING Carefully examine the siding to see what winter has wrought. Look at the paint, especially on the main weather-exposure sides of the house. Check the caulking around windows, trim boards and siding penetrations such as lights and faucets. Look for cracked or sagging boards or nails that are working loose. HOUSE NUMBERS While you’re looking at the siding, take a moment to check your house numbers. Are they firmly attached and clearly visible from the street? Do they even exist? GUTTERS Bad gutters can cause a variety of moisture problems and also detract from the appearance of your home. properly away from the house. Check the paint for deterioration, especially around joints where you may find indications of leaks in the seams. ROOFING Let your eyes keep wandering upward and take a critical look at the condition of your roofing – you may even find that a pair of binoculars comes in handy. Check to see if shingles have blown off or worked loose if they’re starting to curl. For asphalt shingles, look at the overall condition of the mineral granules that coat the shingles. Look at the ridge shingles – especially wood ridge – to see if any are cracked or missing. Check the condition of flashings and skylights as well. Do you want to Bloom Where Planted or Spring into Action? To Bloom Where Planted... How can you positively change your life without changing a single thing outside of you? You simply empower yourself with a growth mindset. First, accept what is. As the author of The Power of Now Eckhart Tolle often says, “We suffer when we do not accept the isness of things.” We truly do! If we are operating in resistance to what is or how things are, we are causing ourselves stress. Acceptance does not mean agreeing to stay forever in the current state if it is undesired. To bloom, you need to hold yourself accountable to accepting where you are now, allowing self-compassion to be your supporter, and making plans for where you would like to go. How are you perceiving your situation? In order to bloom, you must be an appreciator rather than a depreciator. What this means is to appreciate what is working in your life and use this as a foundation for receiving more of that “wellness” in your life. Moving from depreciation means to cease dwelling on negative thoughts, anger or misery, resentments, or even over-thinking about what we do not think is working in our lives. Move to appreciation for anything and everything that is right in your life and allow this to be the energy that waters your growth, so that you may blossom, prosper, and thrive in this world! “If you change the way you look at things, the things you look at change.” ~ Wayne Dyer To Spring Into Action... Are you ready for change? Start by opening up to new routines in small every day actions that lead to long term success. Avoid overwhelming yourself with gigantic to do lists, but rather use S.M.A.R.T. goals - specific, measurable, achievable, realistic and timed - to achieve progress in life. Champion each step rather than defaulting to “all or nothing” thinking that defeats the spirit and
leads us to abandon our goals. A perfectionist mindset causes procrastination. Aim for progress over perfection. Whatever the change you are looking to make, be it adding healthy habits, losing weight, exercising more, finding a new job, career, or relationship, make your “springboard” the following: Set an intention, take small actionable steps each day, and celebrate your successes. Planning the Service You Desire When you choose cremation as your preferred mode of disposition By Kathleen A. Sanvidge, Licensed Funeral Director and Owner, Townley & Wheeler Funeral Home
I’m sure you have been gaining valuable information from our monthly articles about the process and procedure of arranging a funeral. My goal is to keep this simple and break down the steps of the arrangement conference. Last month, we talked about the first part of that conference, focusing on the vitals necessary to complete all paperwork with the state, veteran’s organizations, insurance companies and pension administrators. When a loved one dies, there are many decisions to make. The mode of disposition is one of them. This month, let’s focus on part two of the planning process…choosing cremation as your preferred mode of disposition. Cremation is the combustion, vaporization and oxidation of a human body to basic chemical compounds. It takes place at a crematory and there are several local cemeteries that provide cremation services in the area. Cremation is an alternative to burial or other forms of disposition in funeral practices. Once a death occurs and final disposition of cremation has been chosen, a death certificate is signed and filed. The cremation permit is then issued to the funeral director. A licensed funeral director must accompany the body with a signed authorization for cremation and permit to the crematory. There are many options available when you choose cremation. If you would like to arrange a traditional farewell, the body can be present before cremation takes place. In this case embalming is necessary. Many families prefer that the body be present in a casket during the calling hours and/or funeral of their loved one. You can choose to purchase or rent a casket for this purpose. When you rent a casket, part of the rental fee includes a new bed, pillow and lining for the rented “shell” of the casket. After services, the body is transported and cremated in that very same bed. If you purchase a casket, the body is transported and cremated in that purchased unit. Direct cremation means that there is no embalming or preparation of the body and the cremation takes place immediately and prior to any calling hours and/or funeral. At Townley & Wheeler, we will offer your family the opportunity to come to our home within 24 hours of the death for a private family visitation before direct cremation without any additional fees. We make it our primary focus to remove your loved one from the

home or hospital and carefully transport them to the crematory in a most timely fashion. We value and respect all human remains and we make every effort to ensure that you will have access to cremains within 48 hours of death. After the cremation process, you can count on us to receive your loved one and hold them in a place of honor at the funeral home. At this point, you can decide about the disposition of your loved one’s cremains. The ashes can be buried or placed in a wall niche at various locations or you can collect your loved one and keep the ashes in your possession. Many families like to scatter ashes in memorable locations. Since the cremains come back from the crematory in a suitable temporary container, it is not necessary to purchase an urn. We can help you decide if one would make sense for your situation. There are affordable and fitting urns according to your choice of final disposition of the cremains. Maybe you are interested in keepsakes or jewelry for cremains. Whatever you decide, we are here to assist with all your options. We hope you find these articles helpful and informative. Small Business Owner? Know What Can Happen If You Become Incapacitated or Pass Away Preparing your company for your incapacity or death is vital to the survival of the enterprise. Otherwise, your business will be disrupted, harming your customers, employees, vendors, and ultimately, your family. For this reason, proactive financial planning — including your business and your estate plan — is key. Below are some tips on how to protect your company and keep the business on track and operating day-to-day in your absence. Preparing for the Unexpected: If you are a small business owner, your focus is likely on keeping the company running on a daily basis. While this is important, looking beyond today to what will happen if you can’t run your business should be on the top of your to-do list. If you die or become incapacitated without a plan in place, you will leave your heirs without clear instructions on how to run your company. This can jeopardize the business you worked so hard to build. The right plan along with adequate insurance can help keep your business running regardless of what happens. Execute the Proper Business Documents: If your company has several owners, a buy-sell agreement is a must. This contract will outline the agreed upon plan for the business should an owner become incapacitated or die. Provisions in the buy-sell agreement will include: • how the sale price for the business and an owner’s interest are determined, • whether the remaining owners will have the option to buy the incapacitated or deceased member’s interest, and • whether certain individuals can be blocked from participating in the business. Execute the Proper Estate Planning Documents: A properly executed will or trust will allow you to state how you would like your assets to be transferred — and who will receive these assets — at your death. A will or a trust also lets you identify who will take charge of the assets and manage their disbursement (including your business accounts)
according to your wishes. Although a will can be used to pass assets at death, creating and properly funding a trust allows any assets owned by the trust to bypass the probate process making the distribution of assets to heirs much faster, private, as well as possibly reducing the legal fees your heirs will owe. Additionally, a revocable living trust can help your loved ones manage your trust assets if you become incapacitated. While you are alive and well, you typically act as the trustee of the revocable trust, so you can manage your business and assets with little change from the way you do now. But unlike a will, a trust allows your successor trustee to step in manage things if you become incapacitated. This process avoids court involvement, allows for a smooth transition of trust management, and proper continuing care for you in your time of need. Although having a will can be a great way to start, most business owners are much better off with a trust-based estate plan. Purchase Additional Insurance: Whether you own the business by yourself or are a co-owner, it is important to have separate term life insurance and a disability policy. The money from these policies will help with business cash flow while a transition team gets up to speed and will also help your family avoid financial hardship while the buyout procedures of buy-sell agreement are being carried out. Spring Bulb Care Finally the snow has melted and there are signs of life emerging from our flowerbeds. It’s amazing how the sight of fresh shoots from a clump of daffodils that we planted last fall can lift our spirits after a long cold winter. Planting bulbs in fall gives us a chance to thumb our noses at winter. It is an act of faith. By planting these bulbs, we are saying “I know that the next season will arrive a little brighter and better.” You may be planting flower bulbs, but you are really sowing Mother Nature’s promise that the dark days of winter will eventually pass…. and finally they have! The first of the bulbs to flower are the tiny Snowdrops that bloom so early that they are often surrounded by the last of the melting snow. They are followed by other small varieties like crocus, scilla, chionodoxa, and muscari. Then, from mid April on, the show accelerates as the larger bulbs spring to life. Daffodils, tulips, and fragrant hyacinths all burst into flower in rapid succession. Finally the tall, stately spheres of the giant allium provide a grand finale. Every spring, I find myself wishing I’d planted even more bulbs the previous fall. The reason we need to plan so far ahead for our spring flower show is because these bulbs must have 8 weeks of chilling to stimulate them into their next flowering and growth cycle. This chilling causes an enzyme change within the bulb. Without it, the bulb won’t be ready to grow in spring.

Spring is also when we need to take a couple of steps to insure that our bulbs grows stronger and larger so they will continue to flower in the future. Think of them as rechargeable batteries. They don’t store electricity but “growth energy”. When you buy bulbs and plant them in fall, they’re all “charged up” for you. The trick is knowing how to “recharge the battery” after they flower in spring. The “growth energy” stored in the bulb is quickly depleted during the all-out effort to flower in spring. After the flowers have finished, cut them off including the stem. This prevents the bulb from wasting “growth energy” producing seeds. Think of the bulb’s leaves as solar collectors that change sunlight into “growth energy” that is sent to the bulb below for storage. Don’t cut off these solar collectors when you remove the spent blossoms. Let them remain until they finish charging up your “bulb batteries”. This is also the time to feed your bulbs. I like to use Espmoa Bulb-Tone or Flower-Tone plant food for this. You can poke holes around your larger bulbs and pour a little food into them or simply scratch the food into the soil around the smaller ones. Mortensen Motorsport Update By Ron Szczerba
Scotia, NY - The winter off-season was a very special one for Mark Mortensen and wife Alisha as they welcomed into the world a healthy baby boy named Evan with Bonnie MortensenSzczerba, Ron Szczerba, Bob & Alice Mortensen, John Buehler, and Denise Leonard the proud grandparents. With the new addition to the family keeping the new parents very busy, Mark started working on the Your Hometowne sponsored #1M racecar with only a couple of weeks left to get the car ready for the Fonda Speedway car show at the Viaport Mall (formerly the Rotterdam Mall) in mid-March , totally stripping the parts off of the frame, repainting it, and then reassembling everything. Mark along with his brother Brett, his father Bob, and step father Ron worked all weekend one week prior to the racecar show in order to get the car done in time. Mark then worked until midnight in the days leading up to the car show in order to complete the car and on Thursday, March 15, the freshly lettered car done by Ricky Achzet of R3 Graphics & Signworks was pushed into the mall for the show. Pictures and pencils were handed out to all of the kids at the show with Mark there most of the weekend to greet the people who stopped by to look at the car. Once the car show was done, the car was brought back to the race shop and is now being prepared for the warmup session and inspection day at the “Track of Champions” Fonda Speedway on Saturday April 7 & 14 (weather permitting) with the first race of the season at Fonda scheduled for Saturday, April 21. Medications and Your Vision
At some point in our lives, taking medications for a number of different health problems can become a fact of life. Because the systems within the human body are all interrelated, it isn’t uncommon for these medications to affect our eyes as well. Below are some medications that may cause vision side effects. This list is not comprehensive, so if you have any questions about a drug you take, be sure to talk with your doctor. Antihistamines: (Allegra, Claritin, Zyrtec) Antihistamines block histamines produced by the body that cause a runny nose, watery eyes, sneezing, and itching. They might also cause your eyes to make fewer tears. That can lead to dry, irritated eyes. In some people, these drugs can cause an emergency condition called angle-closure glaucoma, which occurs when the pressure inside the eye increases rapidly. If you notice severe eye pain, sudden visual blurring, nausea or other symptoms of angle closure glaucoma, get immediate medical help. Antimalarial drugs: (hydroxychloroquine, Plaquenil, Quineprox, Chloroquine, Aralen) These medications treat rheumatoid arthritis and lupus. While rare, some people who take these medications over time can develop retinal toxicity, leading to permanent vision loss. Plaquenil toxicity of the retina is typically dose related, in other words, you have to be on a lot of it for a long time in order to be at a high risk. Before taking these medications, you should be examined by an ophthalmologist. Corticosteroids: (Prednisone, Deltasone, Meticorten, Orasone, Prednicot, Sterapred) Corticosteroids are used to treat conditions such as arthritis, lupus, psoriasis, severe allergies, ulcerative colitis, and breathing disorders. Prednisone is well known to increase a patient’s risk of developing cataract or glaucoma. The drug can cause an elevation in eye pressure, which is a major risk factor for developing glaucoma. If
you notice vision symptoms such as eye pain, halos around lights, or blurred vision, call your doctor right away. If you take corticosteroids often, get a comprehensive eye exam once a year to check for glaucoma or cataracts. Antiestrogens: (Tamoxifen, Soltamox, Nolvadex) Antiestrogen drugs can lead to a condition called crystalline retinopathy, where small, crystal-like deposits form in the retina, There can be functional and anatomical changes in the retina associated with tamoxifen. Medication side effects also may include blurred vision, corneal changes, and an increased risk for cataracts. Anticonvulsants: (Topiramate, Topamax, Topiragen) These medications are also associated with angle-closure glaucoma. If you have sudden vision changes, headache pain around the eyes, blurred vision, or double vision, seek medical help. When taking a medication, be sure to tell your doctor about any vision problems. It is especially important to let your eye doctor know what medications you are taking as well. Catching problems early can prevent permanent damage to your eyesight.

Tax Season is finally over. Of course, how much you pay in taxes depends on a variety of factors, many of which you can’t control. But you might give some thought to how you can manage your investment-related taxes. Here are some suggestions to consider: Contribute to your employer’s retirement plan. If your employer offers a 401(k) or similar plan, such as a 403(b) or 457(b), contribute as much as you can afford. The more pre-tax dollars you put in to your retirement plan, the lower your taxable income. Your employer also may offer a Roth 401(k) option, under which you invest after-tax dollars, so your annual income won’t be lowered and your withdrawals will be tax-free. Contribute to an IRA. Even if you have a 401(k) or similar plan, you may still be eligible to contribute to an IRA. With a traditional IRA, your contributions may be fully or partially deductible, depending on your income level; with a Roth IRA, contributions are not deductible, but your earnings can grow tax-free, provided you’ve had your account at least five years and you don’t start taking withdrawals until you’re 59½ . Follow a “buy-and-hold” strategy. You can’t control the price movements of your investments, but if you do achieve gains, you can decide when to take them – and this timing can make a substantial difference in your tax situation. If you sell investments that you’ve owned for one year or less and their value has increased, you may need to pay capital gains taxes at your personal income tax rate, which, in 2018, could be as high as 37 percent. But if you hold investments for more than one year before selling them, you’d be assessed the long-term capital gains rate, which is 0, 15 or 20 percent, or a combination of those rates. Consider municipal bonds. If you’re in one of the higher tax brackets, you may benefit from investing in municipal bonds. The interest on these bonds is typically free of federal taxes, and possibly even state and local taxes. Interest from some types of municipal bonds may be subject to the alternative minimum tax (AMT). However, because of the new tax laws, the AMT exemption amounts were increased significantly. You might be wondering what these new laws mean to investors. In terms of your regular investment activities, the effect might not be that significant. The tax brackets for qualified dividends and capital gains – such as those realized when you sell stocks – will remain about the same. This means that most investors will continue to pay 15% to 20% on long-term capital gains and dividends. Consequently, the new tax laws shouldn’t really affect you much in terms of your decisions on buying and selling stocks or investing in companies that may pay dividends. Of course, it’s still a good idea to consult with your tax advisor on how the totality of the new laws will affect you. Ultimately, your investment decisions shouldn’t be driven only by tax implications – nonetheless, it doesn’t hurt to take steps to become a tax-smart investor.

Luau Ribs Cream of Curried Carrot Souop • 1 large chopped onion • 3 tbsp. olive oil • 2 tbsp. butter • 2 pounds finely sliced carrot • 1 medium finely diced potato • 1 chicken bouillon cube • 1 tbsp. yellow curry • 2 cups whipping cream • 1 tbsp. fresh chopped rosemary • salt and pepper, to taste 1. In a large Dutch oven, sauté chopped onion in olive oil and butter until until tender and translucent. 2. Add chopped carrot, 4 cups of water, chicken boullion cube, curry, and potato to onions. Stir together. Cook vegetables on high for 30 minutes, or until tender. 3. Remove from heat and cool. In small portions, blend in food processor or blender until there are no more vegetable chunks and it is more or less the consistency of baby food. 4. Return to medium heat. Stir in cream, rosemary, salt and pepper until mixture is heated throughout. Serve warm.
• 1 (13 1/2 oz.) can (1 2/3 c.) crushed pineapple • 1/4 c. molasses • 1/4 c. Dijon mustard • 3 tbsp. lemon juice • 3 tbsp. soy sauce • 2 tbsp. Worcestershire sauce • Dash pepper • 4 lb. spareribs or loin back ribs
1. For Glaze: Combine first 8 ingredients. Set aside. 2. Salt ribs; place bone side down on grill over slow coals. (Keep eye on heat - ribs tend to dry out if have too much heat.) Grill about 2 minutes; turn meaty side down and grill until browned, approximately 10 minutes. 3. Turn meaty side up and brush with pineapple glaze. Continue grilling without turning for 30 to 45 minutes until meat is well done. (Loin back ribs will take longer.) 4. Slide a piece of foil under thinner cut of ribs if done before thicker end; continue cooking. 4 to 6 servings. Wiggle Room: Cook the day before and reheat on the grill for an easy quick dish!

Thai Chicken with Fresh Basil • 3 tbsp. vegetable oil • 1 lb. chicken breast, deboned • 2 tbsp. garlic, coarsely chopped • 3 tbsp. nuoc nam (fish sauce) • 3/4 cup basil, thinly sliced • 2 tbsp. sugar • 2 serrano chilies • 2 tbsp. water 1. Skin chicken and cut into 1.25x1-inch strips. 2. Remove stems from chilies and cut lengthwise into thin strips (discard the seeds). 3. Heat oil in wok or large skillet over high heat. 4. Add garlic and stir until golden brown, about 10 seconds. 5. Add 1/2 cup of basil and the chilies and stir-fry ust until basil wilts, about 1 minute. 6. Add chicken and stir-fry about 3 minutes. 7. Add nuoc mam, water and sugar and stir-fry until sauce bubbles and thickens slightly, about 2 minutes. 8. Add remaining 1/4 cup of basil and stir-fry until just wilted, about 5 seconds. Serve immediately with steamed rice. Wiggle Room: Add sautéed snap peas, carrots or water chestnuts for a crispy texture
