This issue is overflowing with star talent. It’s the time when we celebrate our very best, our annual A-List issue, now in its third season. These designers are at the top of their game, whether they’ve been around for more than a decade like our Designers of the Year, the übertalented Les Ensembliers, or they’re a firm that’s just starting to make waves, like dynamic duo Carey Mudford and Erin Coe of Coe Mudford Interior Design. Richard Ouellette and Maxime Vandal, the internationally recognized pair behind Les Ensembliers, invite us to their Knowlton, Que., farm for a tour of their down-to-earth yet beautifully appointed coach house. The couple has recently planted 8,000 annual seeds and more than 15 varieties of dahlias on their land to support a burgeoning flower farm business. (Look for more in our 2020 summer issue.) Our 2017 Designer of the Year, Katherine Newman, returns with an art-filled penthouse in her signature palette that delights and challenges with its risk-taking compositions, while up-and-coming firm Coe Mudford Interior Design demonstrates a masterful

use of materials — think striped onyx, blue marble and honed granite — in one of its recent projects. With the holidays around the corner, we couldn’t help but be inspired by the majesty and beauty of Tara Hall, a heritage home in Prince Edward County, Ont., all decked out for the season with sweeping banister garlands and flower bombs. This is the kind of house you spot from the road as you drive by and wish you could get into. Well, we did — and the interior does not disappoint! Finally, we gate-crashed a fondue party hosted by two of Toronto’s hottest downtown scenesters, Sarah Keenlyside and Brandon Olsen, in anticipation of their latest venture, a wine bar called Man Ray. I tasted everything, from the cocktails to the shrimp toasts, and walked away into the night very happy. Here’s to many more parties and toasting the new year in style!

Water Works Gathering large plants in the shower saves time and soaks them thoroughly while allowing excess water to drain away

Proper watering techniques will keep houseplants healthy all winter long. If the first two inches of soil are dry, flood the plant with tepid water until a trickle appears from the drainage hole at the bottom, say Lauren Camilleri and Sophia Kaplan, authors of Leaf Supply: A Guide to Keeping Happy Houseplants. Let it soak up that water for 30 minutes, then empty any remaining water from the saucer. Also, succulents shouldn’t be misted; let the soil dry out completely and water about once a month. Travel Home, Caitlin and Julie’s new book, showcases the home of Danish fashion designer Malene Birger. She chose an ochre hue common in northern Italy for her Tremezzo dining room on Lake Como, Italy.

Globe-trotters trotters icture your mom as a favourite travelling companion, a sidekick who never gets tired of searching out obscure Parisian brocanteries, haggling over ikats in Uzbekistan or scouring Portugal for the perfect tile. Now think about working with Mom on a design book, where she, a neophyte author, helps pen the words. Travel Home: Design with a Global Spirit by Caitlin Flemming (the designer and blogger behind Sacramento Street) and her mother, Julie Goebel, is the result of the duo’s close relationship. The book visits the homes of 20 significant designers, from Vicente Wolf’s weekend digs in Montauk, N.Y., to the L.A. home of Nate Berkus. Caitlin attributes her eye for design to Julie taking her to live in Mexico City as a child where she first witnessed the wonder of unfamiliar lands. We spoke with Caitlin and Julie about the importance of travel when it comes to the world of design.

Q&A HOUSE & HOME: How did this book come about? JULIE GOEBEL: We were trying to think of a project to write together as mother and daughter. People kept telling us we should write a book about organization, but that sounded so boring! We’ve always travelled together, and many of the designers we admire are also big fans of travel. H&H: How did you choose the designers featured in the book? CAITLIN FLEMMING: Vicente Wolf was one of the four people we interviewed for our book proposal. I think we struck a chord with him: our phone conversation was two hours long! His whole design aesthetic is based on his travels. JG: Malene Birger was also at the top of our list. She’s the biggest nomad, so we were really excited to meet her. We thought we were shooting her London home and, suddenly, we got an email saying she was moving to Lake Como, Italy. She finished the house for our shoot, so it was the first-ever look at her home. H&H: How did you get involved in design after studying marketing? CF: My mother was an antiques dealer, so she would take me to flea markets all over the world. I feel like that was my education in design — going to all these places and asking questions. I studied business and marketing because I needed that kind of degree under my belt to run a business, and then I worked in publishing before I started my blog, Sacramento Street, 10 years ago. Two years in, people asked if I provided design services and, eventually, I started my own design business and haven’t looked back.

H&H: How important is a designer’s digital fingerprint to clients? CF: It’s a great calling card. I’ll get emails from people saying they’ve followed me for six years and they’re finally ready to decorate, and that they want me to do it. H&H: Do you have advice on what finds to shop for when you’re travelling? JG: Instead of souvenirs, shop for everyday items. In Mexico, it might be little baskets or brooms. Look outside the box, not just in tourist shops. H&H: If an exotic vacation isn’t in the cards, how can we get inspired by global influences? CF: Flea markets or books can transport you to a different place, and that’s what I love about our book. HOUSE & HOME: Why did you choose a black and white palette? INES MAZZOTTA: It’s no secret that it’s one of my favourite colour schemes, especially for kitchens. I love the quiet drama of the black lower cabinets, then wood tones bring warmth, which tempers the starkness of the black and white. H&H: Why was a soapstone countertop the right choice? IM: Soapstone has a beautiful, rich texture, and the colour was a perfect complement to the dark cabinets. H&H: Where did you unearth those incredible pantry doors? IM: I’ve always loved old doors and have long been inspired by how designer Sam Sacks uses them in interiors. This project was the perfect one to bring in some beautiful old doors. We looked high and low for the right size and eventually came across an amazing Indonesian rosewood armoire for a steal on Kijiji. We used the doors and drawer front to conceal the pantry. H&H: How does this kitchen jibe with the rest of the house? IM: The homeowner is a creative with wonderful, eclectic taste. Her home has a lot of original architectural elements, and she’s got a great collection of art and vintage furnishings. I wanted to make sure the kitchen felt like a natural extension of the rest of the house. I believe that, when done in a measured and well-considered way, the juxtaposition of old and new allows spaces to feel interesting and layered. H&H DECEMBER 2019 43

ICHARD OUELLETTE AND MAXIME VANDAL, the prolific duo behind the Montreal design firm Les Ensembliers, have designed 19 homes since merging their personal and professional lives in 2007. To be clear, that’s 19 of their own homes, which have ranged from an arty Chelsea pied-à-terre in New York to a weekend retreat in Charlevoix, Que., where they could watch breaching whales splash about in the St. Lawrence River. They’re serial renovators, for sure, but the habit is not merely an Ellen DeGeneres–like penchant for flipping houses. Each time they commit to a change of address, they genuinely think, “This will be our forever house.” But then they spot another place brimming with untapped potential, and the process of creating a new dream home starts all over again.

That Richard and Maxime exist in a constant state of reinvention and refinement helps explain why their interiors — realized for their clients or themselves — always generate excitement, even among die-hard design followers like the editors here at H&H. “That’s the key to design and experimentation: try it out on yourself before you do it with your clients,” says Richard. Even if the space is a transitory rental, they don’t hold back — the wallpaper is premium, the sight lines are well-considered, and traditional elements (like their trademark blue and white ginger jars) are given fresh appeal juxtaposed with bold patterns and colours. “When we create, we’re always in conversation,” says Richard. “Maxime will suggest something, and I’ll groan and be exasperated. But 15 minutes later, I realize it’s a great idea.” Maxime agrees: “We’re partners, but we’re complementary. SEE SOURCE GUIDE

“I’m obsessive about clean lines and a simple bed,” says Richard. The art over the bed comprises 56 photographs of a car pulled out of the Seine. Otherwise, you think you’re right all the time.” True to form, they swear their latest purchase — a vacation property dubbed Humming Hill — is for keeps. First transformed by an American tobacco heiress in the 1960s, the sprawling estate in Quebec’s Eastern Townships encompasses a main house, coach house, stables, outbuildings, a tennis court and a pool house. Buying it represents an evolution in their high-flying, high-pressure lifestyle to… flower farming. “We did a real-estate deal that became a lifestyle-changing experience,” says Maxime. Their plan is to renovate and live in the 2,000-squarefoot coach house while the 6,000-square-foot main house is being renovated, then vacate the coach house and turn it into a studio and farm production facility. Though the transformation of the main house is still in the concept stage, the coach house reflects what will eventually be a hardworking space: blond wood warms up concrete floors and bare windows, and any ornamentation is done simply. “The coach house architecture is an abstraction of a shingled farm building with no details, and gutters all hidden SEE SOURCE GUIDE

Richard adds that he was ready to live in a space that was more sparse and easy, where he didn’t have to spend time fluffing pillows. “At the farm, Maxime comes inside in rain boots,” he says, to which Maxime responds, “And I don’t get yelled at!” Yet, easy is also elegant when it’s envisioned by these two. Furnishings are upholstered in their luxe fabrics for an indulgent touch, and an installation by Maxime’s artist mother finds a natural fit on the gallery-like walls. Planning the property resulted in more than just a stylistic shift from Richard and Maxime’s lushly layered 64 H&H DECEMBER 2019

interiors. It also represents a major shift in thinking: for a couple who is nomadic by nature, this project has a sense of permanence. Last summer, the pair, along with Maxime’s brother, Bernard Vandal, planted 8,000 annual seeds and 15 varieties of dahlias, which they plan to specialize in. “Whenever we set a goal, we can’t do things halfway. This property and the houses on it are going to last a lifetime — we’re living our dream together,” says Richard. “The farm balances every sacrifice we’ve made: we both have peace here. When there’s too much stuff going on, where do you find yourself?” The answer is, at home. Finally. SEE SOURCE GUIDE

DECADE AGO, at a Toronto party celebrating tile trends, Carey Mudford and Erin Coe got to talking. As a hospitality designer, Erin revealed she was especially skilled at managing outrageously large orders: “I once sourced more than 300 pink chairs for a hotel,” she recalls saying. It just so happened that Carey was looking for another designer for her growing firm, which catered to owners of high-end homes where renovations regularly took years to complete. Soon after they met, she hired Erin, who was thrilled. “I was so happy to be working for someone who is well respected by builders and trades,” says Erin. “That’s not always the case in our industry.” For Carey’s part, she says Erin brought the office culture to life: “I’m more experienced and confident, with my head down, and she’s an in-the-know millennial who brings a fresh approach to the business.” Such synergy led Carey to make Erin partner in 2017 and rebrand as Coe Mudford Interior Design. The firm does everything from millwork drawings and electrical plans (the nerdy stuff) to furnishings and wall and window treatments (the showy stuff). But it’s the pair’s interest in standout surfaces that quickly distinguishes their projects (they did meet at a tile party, after all). Hallmarks of their work include intricate ceiling treatments, dramatic feature walls and metallic finishes, as well as the use of unexpected materials. While Pinterest offers endless images of Carrara marble countertops and cement tile floors, Carey and Erin are infatuated with more singular finishes like walls of backlit onyx. “You can also make furniture out of it,” says Erin enthusiastically. “It’s a vibrant stone that has that jaw-dropping effect.” Their focus found the perfect outlet in this gracious home in a sought-after uptown Toronto neighbourhood. a collection of daring art. A dream for this owner who loves to entertain, the home’s capacious rooms ramble over 6,887 square feet. The classic-modern house, with architecture by Lorne Rose and built by Silverado Custom Homes, puts surface materials first — nearly every room is adorned with eyecatching natural stone slabs. In the principal bedroom, for example, a backlit paprika-hued onyx headboard elegantly refutes the notion that bedrooms should be hushed, low-key zones. The kitchen, meanwhile, “has the boldest countertop I’ve ever done,” says Carey of the Patagonia quartz with its golden swirls. “We knew using this stone would be taking a risk — you’re either going to love it or hate it,” says Erin. Thankfully, the risk paid off; the owner loved it. “He’s not 72 H&H DECEMBER 2019

the type of person to have a vase of flowers in every room,” says Carey. “It’s more of a minimalist approach, where the millwork and materials are the essentials.” Alongside sumptuous textiles and collectible furniture, lighting is also a head-turning feature to admire here. Ceilings showcase unique fixtures ranging from edgy to elegant, and each of the owner’s 30 paintings and sculptures was carefully addressed in the detailed lighting plan that was installed over the three years the designers worked on the home. “Lighting is another art element; it should never be an afterthought,” says Erin. “A lot of people underestimate what a difference lighting makes.” Except in Hollywood, where celebrities have long understood the importance of good lighting. H&H: What are your current obsessions? CM: Fluted details and metal inlays. EC: Crushed velvet fabrics in modern interiors. And art! An interior is never truly finished without it. My favourite artist at the moment is Jessica Zoob. H&H: Biggest challenge you’ve faced on a project? CM: We had to install a 24-foot-long roller blind in a penthouse suite and never considered how to get it on site until the day before installation. After weighing

many costly solutions, we rode the blind up to the suite on the top of the elevator cab. H&H: Any highlights from the past year? EC: We were nominated in the Canadian Luxury Residence category for The International Design & Architecture Awards. The team flew to London, U.K. It was great to be recognized on a large platform. H&H: Colour crush? EC: Black. Benjamin Moore’s Onyx, to be precise.

CM: Black and white are favourites, though I love the pastel colours trending now. H&H: Whose design work excites you right now? CM: Kelly Wearstler’s. I love her modern-glamour approach. H&H: Where do you find inspiration? CM: Travelling, and visiting different restaurants and hotels. EC: Toronto is a great city to find ideas. OF THE YEAR As the interior designer on Netflix’s Queer Eye, Bobby Berk braves stained rugs and popcorn ceilings with aplomb, countering with sleek furnishings and an empathetic presence. In addition to starring in the Emmy Award–winning show, he’s created a furniture line and established his namesake design firm — not bad for a kid from small-town Missouri who left home at 15 and lived in his car. HOUSE & HOME: What’s the best thing about working on Queer Eye? BOBBY BERK: The heroes. As a designer, the best feeling is to have a client be happy in their own home, happy in their life, and being a part of that is something I’m grateful for.

Sarah Sherman Samuel is famous for her lovely, livable renovation of Mandy Moore’s mid-century modern bungalow in Pasadena, Calif. The L.A. designer first gained notice in 2012 for her lifestyle blog, Stories. Today, she runs a design studio and curates a selection of products and collaborations on her site. But it’s her popular Instagram feed that’s the stuff of dreams. HOUSE & HOME: What does being an influencer mean to you? SARAH SHERMAN SAMUEL: A successful influencer is probably one who doesn’t identify solely with the title. My favourite “influencers” are people who are doing interesting work, usually in a creative field: photographers, artists or designers. H&H: How has the social media landscape changed over the past five years? SSS: Back then, my feed was mostly for me. Now I use my account mainly for business, and I treat my IG stories as more personal. H&H: Where do you find design inspiration? SSS: As cliché as it is, inspiration is everywhere, and the best kind is off-line: in nature, travelling to new cities, museums, hotels, books and movies. When online, I’m often inspired by artists who work in different mediums than my own.

H&H: What’s the best way to get a read of the heroes’ decorating style? BB: You can pick up cues from the pieces that have been handed down to them, their art, where they’re from, and even the colours they wear. H&H: If someone wants to update their home, where’s the best place to start? BB: The bedroom! It’s important to have a space to recharge. H&H: What’s one design rule you love to break? BB: Using dark paint colours. There’s a misconception that they make rooms feel smaller, but they can help open up a room — if done correctly. They bring in a graphic element that keeps things feeling fresh and modern.

H&H ’s INAUGURAL DESIGNER OF THE YEAR, KATHERINE NEWMAN, TEAMED UP WITH LONGTIME CLIENTS TO TRANSFORM THEIR TORONTO PENTHOUSE INTO A ONE-OF-A-KIND SPACE.

STEPPING INSIDE this Katherine Newman–designed interior, a duplex penthouse on the 65th floor of Toronto’s tony Shangri-La Residences, is like entering the zero-gravity world of a brightly coloured Kandinsky composition — all suspended orbs, triangles and crisscrossing linear elements. Like his paintings, the effect is similar: alternately dynamic and calm, assertive and quiet. In keeping with art world naming conventions, let’s call this project Composition No. 4, since it’s the fourth time Katherine and her architect partner Peter Cebulak have collaborated with these clients. Their third project together was the couple’s main residence in Oakville, Ont., whose Regency Moderne kitchen was featured in the September issue of H&H. This 5,000-square-foot, three-bedroom, four-bathroom penthouse, purchased to serve as a weekend pied-à-terre for the owners and their Toronto-based kids, is a radical departure H&H DECEMBER 2019 79

from that style. “They were looking for a nod to minimalism tempered with a certain element of warmth and interest,” says Katherine. “Every job we take on is a departure; each project is its own expression. I don’t have a business model where I’m selling a certain aesthetic.” To create a feeling of geometric rigour throughout the penthouse, Katherine turned to colour. There’s a gallery feel to the home, but it’s not a plain white box: contrasting feature walls are a background for art in almost every room, from the entry to the dining room to the principal and secondary bedrooms. The most arresting example is a 180- by 100-inch steel and enamel wall sculpture in the living room that was handcrafted by Peter at their Toronto studio. Carefully considered anchor elements also create continuity and discipline from room to room. “We don’t see each space as its own distinct environment — continuity is imperative,” says Katherine. “If you placed all contents in one room they would harmoniously connect.” The kitchen, for example, sits comfortably within the open living area. home and gift store Kokito, in Bloomfield, Ont., and the owner of Keep, in Picton, Ont., while Ian is part of a commercial directing team, The Perlorian Brothers. Together they took on the renovation, painstakingly peeling back wallpaper, opening up partitions and turning ballrooms into comfortable salons and former maids’ quarters into guest rooms. Tara Hall has seen 180 Christmases since the original owner, merchant Archibald McFaul, moved into the home with his family. In those early days, the owners were famous for hosting lavish parties, some rumoured to have lasted several days. Under Shelley and Ian’s stewardship, the house continues to rise to the occasion.

W

WHAT DO YOU GET WHEN YOU COMBINE a history buff and a retailer with a keen curatorial eye? Only the perfect couple to tackle a historical home that’s so stately it has its own Wikipedia page. Cited as “an outstanding achievement in its day,” Tara Hall in Wellington, Prince Edward County, Ont., was originally built as a family home in 1839, but it only functioned as one for a few short years. Since then, the sprawling Georgian house has served as a boarding school, a Masonic lodge, an antique shop and a bed-and-breakfast. Homeowners Shelley Durnin and Ian Letts bought the house in 2011 and have since toiled to bring back its original grandeur. Shelley is the co-owner of

HOUSE & HOME: How did you find this place? IAN LETTS: We lived at our cottage on Consecon Lake for about three years after moving from Toronto, and we would occasionally pass this house, which had a for sale sign up. It was being used to warehouse antiques — nobody lived here. SHELLEY DURNIN: I was one of those nosy people who just wanted to see the house before somebody else bought it and had their way with it. When I walked into the front hallway, that was it for me. I’m tall, and the 12-foot-high ceilings felt quite luxurious. Simple cedar swags were draped over the doorway for a classic Scandinavian feel. Instead of ornaments, Alison tucked feathery dried florals into the branches of a Christmas tree.

BLOOMING WONDERFUL For holiday decorations that last all season, Alison Westlake of Coriander Girl took a fresh approach to dried flowers.

Thankfully, dried flowers have evolved from the powdery bunches of baby’s breath and shrivelled roses that earned the trend a bad rap in the ’80s. Today’s versions, arranged in sculptural bouquets and decorative accents, add an artful element to rooms and table settings. “Dried elements bring nature indoors on garlands, wreaths and doorknob hangers, and you don’t have to replace them every week,” says Alison. In Tara Hall, she combined simple boughs, undecorated

trees and dried flowers for an old-fashioned feel. Plus, she adds: “Many of the fresh flowers we used dry beautifully, letting the arrangement evolve through the holidays.” HER FAVOURITE DRIED FLOWER FOR HOLIDAY ARRANGEMENTS “Hydrangea. An entire wreath made solely of dried hydrangea is really special,” she says. Other favourites include juniper berries, lunaria, sumac, boxwood, pussy willow, yarrow, pomegranates, lavender and thistle.

HOW TO MAKE A FLOWER CLOUD To create the floating floral arrangement in the dining room (left), Alison started by rolling chicken wire into two loose rectangular boxes. “We wanted this floral piece to feel cloud-like,” she says. Pluming grasses, dried cotton and preserved ruscus were added, layering the florals asymmetrically and building out. Lastly, she added asparagus fern spray-painted rose gold to pop against the white cotton and bleached ruscus. H&H DECEMBER 2019 91

H&H: With the scope of your renovation, how did you know where to start? SD: The very first thing we did was remove the wall between the breakfast room and the parlour. When the air and light started flowing between the rooms, it was as if the house breathed a sigh of relief. The plaster was starting to crumble in parts of the front hall and stairway — the wallpaper was the only thing holding it together! We used seven different colours of paint on the repaired plaster to match the walls. The wallpaper was installed in the late 1960s or early ’70s; it’s flocked and perfectly hung. I took the wallpaper down in the hallways because there was one teeny edge flipped up just begging me to tug on it. When I saw the green paint, I was so excited that I pulled off a whole piece, so there was no going SEE SOURCE GUIDE

back! We never guessed the patina would be so consistent throughout or that it would be so beautiful. I love that it shows the age of the house. The patina may feel itchy and scratchy to some but, to me, it feels textured and luxurious. IL: The house had only ever been painted once — that’s the green — and the patina is from years of wood smoke. We’re outfitting several fireplaces with gas. H&H: How did you bridge the old with the new? IL: Tara Hall was an out-of-place oddity back in the day in terms of its style and scale — it’s unexpectedly grand in a little village of a few hundred people. So, it can be eccentric again and a little fun, too. With the rigid Georgian plan, you want to feel like there’s some softness around the edges, something playful. H&H: Are you absolutely inundated with curious guests? IL: From the moment you enter, it’s obvious that Tara Hall was constructed for the purpose of welcoming guests. At no time of the year is that more true than the holidays. We like opening our doors to friends and family for dinners, parties and New Year’s levees to celebrate and reconnect. SD: Throughout the year, we also host yoga classes, coffee klatches and mini concerts. This house says: Bring in the people! H&H DECEMBER 2019 93

La Banane, their first restaurant, was an instant hit with Toronto diners for its modernized French menu and sumptuous design. For me, relaxing is making sure the food is perfect.” Sarah’s colourful, art-filled Kensington Market loft makes a perfect backdrop for her preferred style of casual entertaining. “I definitely don’t use my dining room table very much,” she says with a laugh. “I mean, why do I even have it? Most of my parties are about spreads that I put on my kitchen island or coffee table.” But casual does not mean that everything hasn’t been considered. FOOD & ENTERTAINING what she calls “candlelight, times two.” She’s pulled out her collection of vintage glasses and plates. Disco plays on the stereo. “We both believe that the environment is just as important as what’s on the plate,” she says. Of course, it doesn’t hurt that Brandon is pitching in chef skills with what’s on the menu. He’s prepping decadent shrimp toasts and the deconstructed seared duck bites guests can make themselves. And of course, there are the fondues — one cheese, one chocolate. How did fondues become the core of Man Ray’s identity? “Sarah and I have this nostalgic love for old-school things,” says Brandon. “With Man Ray, we wanted to do something no one in Toronto is doing. And what’s better than dipping bread into a pot of melted cheese?” To get it right, the duo jetted off to Switzerland to experience fondue in its birthplace. They loved everything about the traditional restaurants they visited, from the look of the fondue pots to the way fondue requires people to share. It’s time to pop the champagne for the cocktail they call French 227. “Our restaurant La Banane has been described as a New Year’s Eve party every night,” says Sarah. “Whether it’s in the restaurant or at home, I want people to feel like it’s special.”

I would love to recreate this at home. Can you get me the recipe? — RUTH, Chicago A: For his version of the classic, Greg bakes an almond sponge cake instead of using lady fingers and turns the mascarpone mixture into a light mousse. Individual servings are placed on a cookie base and coated with a chocolate and coffee glaze. It’s a bit of a project for the home cook, so we’ve simplified the recipe. Mulled Wine Punch SERVES 14

PLAN AHEAD: Make at least 1 hour ahead to allow spices to infuse punch PREP TIME: 15 minutes TOTAL TIME: 15 minutes The longer this punch stands, the spicier the mixture will be. Strain out flavourings when it tastes right to you, and warm gently before serving, if desired. 750 mL full-bodied red wine (ideally Cabernet Sauvignon) 750 mL ruby port 1 cup French brandy ½ cup sugar ¼ cup raisins 1 2" piece fresh peeled ginger, chopped (3 tbsp) Zest 1 navel orange, in long, wide strips 3 cinnamon sticks 6 cloves 6 cardamom pods 2 star anise pods 1 orange, cut in half and sliced, for garnish MAKE PUNCH 1. In large, deep pot over medium-high heat, combine wine, port and brandy. Add sugar, raisins, ginger, orange zest, cinnamon sticks, cloves, cardamom and star anise. Slowly bring to a simmer, stirring to dissolve sugar, then reduce heat to low and cook for 5 more minutes. Remove from heat and let stand for 1 hour to let spices infuse. 2. Transfer to heatproof punch bowl and garnish with slices of orange.

Shrimp Filling 1 lb. shelled raw shrimp 2 large eggs ¼ cup crème fraîche 2 tbsp chopped garlic 3 tbsp chopped parsley ¼ cup chopped chives, plus more for garnish Salt and pepper Toast 16 slices brioche, ¼" thick 1 cup clarified butter, or ghee MAKE FILLING 1. In food processor, combine shrimp, eggs, crème fraîche and garlic. Pulse until mixture is puréed and well combined. Fold in parsley and chives, and season well with salt and pepper. TOAST SANDWICHES 1. Divide shrimp filling between 8 slices of brioche and spread evenly, right to edges. Top each with another slice of brioche to make 8 sandwiches. 2. Heat nonstick pan over medium heat. Add ¼ cup of clarified butter to pan and, when hot, place 1 to 2 sandwiches in pan at a time (they need space between them). Gently fry sandwiches on both sides for 5 minutes, or until golden brown. Repeat with remaining sandwiches. 3. Allow to rest for 1 to 2 minutes, then cut off crusts and slice each sandwich into 2 triangles. Dip one side of each sandwich into chopped chives to garnish. Serve warm.

PREP TIME: 25 minutes TOTAL TIME: 35 minutes Brandon fries these sandwiches in clarified butter so the toast doesn’t burn while preserving the delicious flavour. To make clarified butter, you’ll need to bring melted butter to a simmer in a small pot to allow the water and milk solids to boil off, or you could buy ghee. 110 H&H DECEMBER 2019

PREPARE SCALLOPS, ARTICHOKES AND LEMON 1. On paper towel–lined plate, spread out scallops to dry. The drier the surface of the scallops, the better they will sear. 2. Separate delicate leaves of artichokes from meaty heart. Reserve leaves. 3. Quarter preserved lemon, and use knife to separate flesh from rind. Squeeze juice from flesh and reserve. Thinly slice peel into strips for garnish. PURÉE ARTICHOKES 1. In food processor, purée artichoke hearts with some preserved lemon juice (about 1 tbsp or, to taste). Add olive oil and blend until smooth. Season with salt and pepper, to taste, and set aside. SEAR SCALLOPS AND ASSEMBLE 1. Heat medium cast-iron pan over high heat. Add 1 tbsp of canola oil to pan. Season scallops with salt and pepper. Working in batches so as not to crowd pan and using more oil as needed, add scallops and sear for 2 to 3 minutes on both sides, or until golden brown and just cooked through. Transfer to serving plate. 2. Spoon dollop of artichoke purée on each scallop, then artfully top with a few reserved artichokes leaves. Garnish with a few slices of preserved lemon, squeeze of lemon juice and pinch of Espelette pepper.

Seared Scallops and Artichokes MAKES 16 PIECES

Seared Duck with Prune and Endive

PREP TIME: 20 minutes TOTAL TIME: 30 minutes

Shrimp Toasts MAKES 16 PIECES

3 tbsp olive oil Salt and pepper, to taste 2–3 tbsp canola oil ½ lemon ½ tsp ground Espelette pepper

The numeral 10/20 refers to the size of scallop (10–20 scallops per pound). Look for Espelette pepper at gourmet stores, or online through The Spice Trader. 16 pieces 10/20 scallops, side muscle removed 1 350 mL jar artichoke hearts (in oil) 1 preserved lemon

PREP TIME: 25 minutes TOTAL TIME: 50 minutes This is a great recipe for a cocktail party. Guests can assemble bites as they wish! 1 ½ ½ 2

cup dried, pitted prunes, halved cup water cup French brandy tbsp sugar


1 large fresh duck breast Salt and pepper 2 cloves garlic 2 sprigs thyme 2 tbsp unsalted butter 2 heads Belgian endive 1 wedge blue cheese (ideally Gorgonzola) ¼ cup chopped chives, for garnish COOK PRUNES 1. In pot, combine prunes, water, brandy and sugar. Bring to a boil, then reduce heat to simmer and cook gently for 10 minutes, or until prunes are soft. Set aside and allow to cool. PREPARE DUCK BREAST 1. Straight out of refrigerator, gently cut crosshatched pattern into skin of duck breast — don’t cut into meat, just into fatty skin. This will allow skin to render its fat better. COOK DUCK BREAST 1. Preheat oven to 350°F. 2. Heat medium cast-iron pan over medium heat. Season breast with salt and pepper, and place skin-side down in pan. 3. Slowly render fat, draining liquid out of pan from time to time. Once skin is golden brown and fat has been rendered, about 12 minutes, flip over and top with garlic, thyme and butter. Use spoon to baste duck with drippings for 1 to 2 minutes. 4. Remove meat from pan and place skin-side up on wire rack over baking sheet. Cook in oven for 12 to 15 minutes, or until desired doneness is reached. Remove from oven and let rest for 10 minutes. ASSEMBLE 1. Slice off endive root end and separate leaves. Cover leaves with damp towel to keep fresh. 2. On large board, arrange sliced duck and endive leaves in fan shape and garnish with chives. Place prunes in small bowl and serve with blue cheese, allowing guests to construct their own bites.

Cheese Fondue with Fried Bread SERVES 8

PREP TIME: 25 minutes TOTAL TIME: 45 minutes For this recipe, it’s important that the wine mixture doesn’t get too hot or your cheese will separate and curdle. Bread and Potatoes 1 loaf rustic white bread, crusts removed 2–3 tbsp canola oil ½ lb. mini potatoes Fondue 200 g Emmenthal, grated (2½ cups) 200 g Gruyère, grated (2½ cups) 2 tbsp cornstarch 1 clove garlic, peeled and lightly crushed to release juices 1 cup white wine 2 tbsp kirsch 2 tbsp fresh strained lemon juice Nutmeg, to taste Freshly ground pepper, to taste Serve with sliced pear and apple, halved radishes and thick slices of cured sausage FRY BREAD AND BOIL POTATOES 1. Tear or cut bread into 1" cubes. In medium pan, add canola oil and heat to medium. Add bread cubes and slowly cook, stirring, for 8 to 10 minutes, or until golden brown. Season with salt. Remove bread and place on paper towel– lined tray. 2. Meanwhile, fill pot with cold, salted water and add potatoes. Bring to a boil, reduce heat to simmer and cook for 12 minutes, or until tender. Drain and chill in refrigerator until ready to serve. MAKE FONDUE 1. In bowl, combine grated cheeses and cornstarch, and toss to coat. 2. Add 1" of water in bottom of double boiler or pot, and heat on medium. 3. Rub top section of double boiler (or metal bowl that fits on top of pot) with garlic clove. Add wine and kirsch, and heat until wine mixture is steaming.

Add cheese a handful at a time, while stirring, until nearly melted. Repeat until all cheese is added and mixture is smooth. Stir in lemon juice and season with nutmeg and pepper, to taste. 4. Transfer mixture to fondue pot and place pot on stand with burner on. 5. Arrange fried bread, cooked potatoes and other accompaniments on platter to be dipped in cheese fondue.

Banana “Corks” with Chocolate Fondue MAKES 20 PIECES

PREP TIME: 45 minutes TOTAL TIME: 75 minutes Brandon uses a silicone bouchon or “cork” mould to make these lovely little cakes. Buy the moulds online or use a muffin tin, but you’ll get 14 larger cakes instead of 20 bouchons if using a muffin tin. Cake 135 g (1 cup) all-purpose flour ½ tsp baking powder ¼ tsp salt 1 cup unsalted butter, at room temperature 1 cup plus 2 tbsp sugar 3 large eggs ½ tsp vanilla extract 1¼ cups diced banana, in ½" pieces Fondue 1 cup dark chocolate, chopped 2 cups cream (35%) MAKE CAKE 1. Preheat oven to 350°F. Grease bouchon moulds or muffin tins well. 2. In bowl, sift flour, baking powder and salt together. Set aside. 3. In another bowl, beat butter and sugar together with electric mixer until light and fluffy. 4. Add eggs, one at a time, and beat until well-combined. Beat in vanilla. Add flour mixture and beat until just incorporated. Fold in diced bananas. 5. Spoon batter into prepared pans, filling to about ½" from top of bouchon wells. H&H DECEMBER 2019 111

6. Bake for 30 to 35 minutes, or until bouchons are golden brown. Allow bouchons to cool fully before popping out of mould or tin (you may need to run edge of knife around bouchons to loosen). MAKE FONDUE 1. In medium bowl, add chocolate. 2. In medium pot over medium heat, bring cream to a boil, then pour hot cream over chocolate. 3. Let mixture sit for 1 minute, then stir, until chocolate is melted. Place mixture in clean, medium pot and keep on low heat until needed. 4. Serve bouchons with warm chocolate fondue. Slice fresh pineapple or other fruit for dipping, if desired.

French 227 Cocktail MAKES 1 COCKTAIL

PREP TIME: 5 minutes TOTAL TIME: 5 minutes This take on the classic cocktail is named for 227 Ossington Ave. — the address of Man Ray Bar à Vin and La Banane. Make a batch by multiplying the ingredients by eight, then combining the gin, liqueur and lemon juice in a container. Shake quantities over ice and top with bubbles. 1 oz. gin ½ oz. St-Germain elderflower liqueur ½ oz. (1 tbsp) freshly squeezed lemon juice Champagne or sparkling wine Sprig thyme, for garnish 1. In cocktail shaker, combine gin, liqueur and lemon juice with ice and shake well. Strain into coupe glass and top with champagne or sparkling wine. Garnish with sprig of thyme.

PLAN AHEAD: Mousse needs at least 2 hours to set PREP TIME: 60 minutes TOTAL TIME: 90 minutes Almond Sponge Cake 75 g (¾ cup) almond flour 75 g (½ cup plus 2 tbsp) sifted icing sugar ½ tsp kosher salt 2 large eggs 2 large egg yolks 4 large egg whites, room temperature ¼ cup sugar 64 g (½ cup) all-purpose flour Coffee Syrup 1 cup water ½ cup sugar 3 tbsp instant coffee Mascarpone Mousse 4 large egg yolks ⅔ cup sugar ¼ cup water plus 3 tbsp, divided 1 package powdered unflavoured gelatin 1 cup plus 2 tbsp whipping cream (35%) 1 cup mascarpone Cocoa powder, for garnish MAKE CAKE AND COFFEE SYRUP 1. Preheat oven to 325°F and line 18" x 13" rimmed baking sheet with parchment paper. 2. In bowl, combine almond flour, icing sugar, salt, eggs and egg yolks. Using electric mixer, beat for 5 minutes, or until mixture has lightened in colour and is thick enough to leave trail on top of batter when beaters are lifted. 3. In separate bowl, beat egg whites until frothy. While beating, begin adding sugar a little at a time, until dissolved. Continue beating just until mixture forms peaks with drooping tips. 4. Add flour to almond mixture. With rubber spatula, fold to combine. 5. Add egg white mixture to almond mixture a third at a time. With rubber spatula, fold to combine, keeping the most possible volume of batter.

6. On prepared baking sheet, spread batter into even layer and bake in centre of oven for 18 minutes, or until cake is lightly golden. Set on rack to cool. Trim edges, if desired, and use ruler and knife to cut cake into three 5½" x 12½" cakes. Reserve. 7. To make syrup, in small pot over medium heat, combine water and sugar, and stir until dissolved. Remove from heat and stir in instant coffee. Set aside to cool. MAKE MOUSSE 1. In heatproof bowl, add egg yolks. 2. In small pot over medium heat, combine sugar and 3 tbsp of water, stirring to moisten sugar and bringing just to a boil. Into bowl with egg yolks pour sugar syrup in slow, steady stream, whisking constantly, until fully combined. 3. Wash pot and fill with 1" of water. Return to heat and bring to a simmer. 4. Place mixing bowl with egg mixture over simmering water, and whisk for 3 minutes, or until temperature of eggs has reached 185°F. 5. Scrape mixture into bowl of stand mixer and beat on high for 10 minutes, or until cooled to room temperature. 6. In small glass bowl, add remaining ¼ cup of water and sprinkle with gelatin. Let stand for 5 minutes, or until gelatin has absorbed water. Add 2 tbsp of whipping cream and melt in microwave for 15 seconds, or until gelatin is dissolved. Add to egg mixture. 7. Whip 1 cup of cream to soft peaks. 8. Place mascarpone in separate bowl and add egg mixture a little at a time until fully incorporated. Fold in whipped cream. ASSEMBLE 1. Peel parchment from cake layers and set porous-side up. Place 1 layer of cake on serving plate or set into 9" x 13" dish. 2. Brush cake well with ⅓ cup of coffee syrup. Spread a third of mousse mixture evenly over cake, going right to edges. Repeat with two remaining cake layers, soaking each with coffee syrup and spreading with mousse until 3 layers of each are complete. 3. Chill tiramisu in refrigerator, or freeze slightly to get cleanest slices. Dust top with cocoa powder just before serving.

There are many moments of levity, too. “An element of whimsy is always present in our work,” says Katherine, pointing to the giant eye in Peter’s metal wall sculpture, the different ocular mirror sculptures over the fireplace and Peter’s multipiece installation, Bubblemorphosa, next to the stairs. The showstopping Annie Morris work from the series Stack sculptured is like a nine-foot-tall painter’s palette. “Unless a project starts with an existing collection of art that needs to be considered, our process is interior architecture, interior content and then art, in that order,” says Katherine. When pondering the kind of commitment it takes to pull off such an artful approach, Katherine says, “I don’t really look to the left, and I don’t really look to the right. We just do what we do.” Of course, none of it would be possible without the all-in endorsement of the owners, whose working relationship with Katherine and Peter is now approaching 20 years. Their enthusiasm, decisiveness and temperance make them ideal clients. Katherine notes that their understanding of balance in all aspects of life is exemplary. “We have a lot of gratitude for their confidence in us,” she says. It’s a sentiment most certainly shared by any design enthusiast.

I’d like to pull my dining room together and give it some style, but I want to keep my furniture. Where do I start? — B.B., Montreal

The good news is that you can definitely make this room feel fresh and beautiful while keeping your existing dining set. Take inspiration from the lovely room designed by M+M Interior Design — the hand-painted mural is the perfect backdrop for classic furniture. Add a similar energy to your space by installing romantic wallpaper with a botanical motif. Then, paint the ceiling a watery blue to pick up on the tones in the wallpaper and give the room another subtle hit of colour. Next, remove the vase of branches and chairs flanking the sideboard to give your table and chairs some breathing room. If you have a match for the white upholstered chair, consider using them at the ends of your table. Otherwise, invest in two new

upholstered end chairs to break up the set and add an element of softness. Update your lighting by installing a pair of classic brass lantern sconces and add sparkle by replacing your ceiling fixture with a traditional chandelier. Then, switch out your art above the sideboard for a tall mirror that will bounce light around and add brightness to the space. Finally, bring in texture and cosiness with a basketweave-style sisal rug. Make sure it’s large enough so that the chairs fit onto it when they’re pulled out. A great way to get a custom-size rug is to start with your preferred dimensions of broadloom and have a band added around the edge.
