Spicy Peanut Cucumber Salad

Serves 4

12 baby cucumbers, halved & sliced

pinch salt

Sauce:

5 tbsp. natural peanut butter

2 tbsp. rice wine vinegar

3 tbsp. tamari

1 tbsp. coconut sugar

1 tsp. red pepper flakes

1 large handful cilantro, roughly chopped

Garnish:

lime wedges

1 tbsp cilantro, chopped

2 tbsp. roasted peanuts, chopped

What you need to do

Add the sliced cucumbers to a colander, sprinkle a pinch or 2 of salt and set aside for 10 minutes.

Place the sauce ingredients (except for the cilantro) into a bowl and whisk until smooth.

Add the cucumbers to a large mixing bowl then drizzle about ¾ of the sauce onto the cucumbers, reserving some for garnish. Gently toss the cucumbers in the sauce, then add the cilantro and toss again.

Place the cucumbers into a serving bowl, pour over the remaining sauce and garnish with lime wedges, cilantro and chopped peanuts.
