Trick-or-treat! Sick of sweets?: Healthy Halloween Recipes

Laced and loaded with sugar, candy is devoured by millions of trick-ortreaters every year on Halloween night. Is this essentially a bad thing? Of course not! What kid wouldn’t want to have a few sweets? But as the wrappers are torn and the cellophane is unraveled, most parents would agree: sugar should never serve as a main course. So even if your child isn’t dressed up as a chef this year, encourage them to help in the kitchen to make a nutritious meal on Halloween night. Try these healthy alternatives. The “Snack-o-Lantern” Ingredients: · navel oranges · fresh or canned fruit salad · green spoons for “stems” 1. To make a lantern, use a small knife to slice off the top of the orange. Set the top aside. Use an ice cream scoop or fork to dig out the pulp. Be sure to hollow out the entire orange. Chop the pulp and mix with fresh or canned fruit salad. Set mixture aside. 2. Carve facial features on one side of the hollowed orange. Carve triangles for eyes and nose like a traditional jack-o-lantern or get creative; carve a moon or cat. Make a small slit in the orange top and slide a green spoon through to create a stem or lid for the lantern. Fill lantern with pulp and fruit salad mixture. Place lid on lantern. Enjoy! Spider Bite Cookies Ingredients: · 3 tbsp. skim milk · 1/3 cup sugar · 1 tbsp. cocoa powder · 1 ½ tsp. vanilla · 1/3 cup crunchy regular or organic peanut butter · 1/8 cup wheat germ · 1 ½ tsp. ground flax seeds · 1 cup quick oatmeal · Cheerios · pretzel sticks
1. Heat milk, sugar, and cocoa over high heat until boiling. Be sure to mix frequently to assure the mixture doesn’t have a thick consistency. When mixture appears runny when dripped from a spoon, take off stove. 2. Stir in vanilla and peanut butter. Stir until the peanut butter melts completely. 3. Stir in wheat germ, flax seeds, and oatmeal. 4. Drop spoonfuls of mixture onto wax paper. 5. Before the cookies dry, place four pretzel sticks on each side of (Note : If you don’t have wheat the cookies for the germ or flax seeds, just use all “spider legs.” Place quick oatmeal) Cheerios on for the Courtesy of Family Fun Magazine and eyes. Learning Liberty A 13 Year Old’s Struggle With Lyme Disease

This is the saga of my precocious 13 year old
Liberty and her hard fought diagnosis of Lyme disease. We think it all started in July of 2007. We were camping in Southern Utah, with family, the two and four legged kind. The night we returned home, Liberty had a major seizure. We called 911 and headed to the nearest emergency room, in Tulia, Texas. There is no history of seizures in my family and she was not running a fever. Many tests and several doctors later, nothing was found to have caused this little episode. Little, my world turned upside down that night. She continued to average a seizure every three months for the next year or so. Our last seizure was September of 2008. All EEG’s, MRI’s and blood work were

 Looking back I can say that she went downhill slowly and steadily. Loss of motor skills, speaking ability decreased, walking was stiff, chewing became awkward, and cognitively she was different. I really thought it was psychological, because she was losing her sister to college and struggling in school or that something had been damaged during one of her seizures. Within a week of 7th grade starting, teachers were calling asking what was wrong with Liberty. She just wasn’t the same sharp, funny kid they had known in years past. Her handwriting was illegible and her speech was awful. By September she was shaking in her hands and toes, a lot. I requested that she be tested, for Special Education, to try to get her some help with math. On October 2, the diagnostician called me and told me that she really believed something terribly organic was going

on. Yes, there was definitely something wrong cognitively, but there had to be something going wrong with her body as well. My worst fears….
Early Childhood Intervention
We started with her primary care physician, then headed back to Lubbock for further brain scans. The shaking was getting worse and she was falling. She came very close to choking several times, due to problems chewing and swallowing. MRI, EEG, EKG all returned normal. All blood work was normal. We were referred to a children’s hospital in Ft. Worth. We went down on a Wednesday in November, saw the new Pediatric Neurologist on Thursday, and were scheduled for stay on Monday. We had no idea how long we would be there. This was the longest Liberty and her big sister had ever been apart. Our first day, we were told by two Pediatric Neurologists that whatever was going on with her was serious and to prepare ourselves. Hoping to raise $10,000 in donations, Student Crime Stoppers, and the Randall High School Tea Party will be volunteering on site throughout the season.
