brandy cake
On New Year’s Eve or after the family lunch on the first day of the New Year, the family cuts into this aromatic cake, which has the year written in almonds on top and a lucky coin secreted inside. A piece is distributed to each family member, starting with the older ones, and whoever gets the symbolic coin is rewarded with a gift of money and starts the year with an advantage.
Preheat the oven to 375 F. Grease a 10-inch round cake pan. In a large bowl, with an electric mixer, beat the egg yolks with the sugar until light yellow and creamy, about three minutes. Add the butter or butter and olive oil and beat for one minute more. Beat in the orange juice and brandy.
Makes one 10-inch round cake
Whisk together the flour with the baking powder, baking soda, and the zests in another large bowl. Add to the yolk mixture and stir with a rubber spatula until incorporated.
• 4 large eggs, separated • 1 cup plus 2 tablespoons sugar • 12 tablespoons unsalted butter, melted • 1 1/4 cups freshly squeezed orange juice • 1/2 cup brandy • 4 cups all-purpose flour • 4 teaspoons baking powder • 1/4 teaspoon baking soda • grated zest of 1 orange • grated zest of 1 lemon • whole blanched almonds
In a large clean bowl, with clean beaters, beat the egg whites until they form soft peaks. Fold them into the batter. Pour the batter into the pan and shake gently to even the top. Decorate the top with the almonds. Bake the cake for about one hour, or until it is golden brown on top and a toothpick inserted into the center comes out clean. Cool on a rack before removing from the pan and serving.

Wild River Country, a water park that has already become a family tradition in central Arkansas for more than 25 years, is celebrating the holidays by transforming into “Wild Winter Country,” a winter-themed park with lots to do for the whole family. “We want to grow the park. You can’t grow the park on one hundred days of operation. We had to look for other revenue sources. We looked at a winter theme,” Shillcutt said.
Besides the business advantages of opening the park year-round, it “just made sense. It’s just fun. We lived in Atlanta for six years and they do it there. If they can do it in Atlanta, we can do it!” Stone Mountain Park in Atlanta, Georgia, the Gaylord Texan Resort and Convention Center in Grapevine, Texas, and Snowy Joe’s Winter Park in Anderson, South Carolina, are among the places to successfully use snow machines for winter fun. “My kids are really excited,” Shillcutt said. “We moved back to Arkansas last year - not enough snow. If we want to go snow tubing, we will be able to! We won’t be dependent on the weather. We will still have snow every day. It’s a guarantee.” General admission costs a reasonable $6.00 and a 90-minute snow tubing sessions is only $18 (including tax). Snow tubing sessions must be reserved in advance at WildWinterCountry.com; only 100 slots are available per hour. From November 2013 through March 2014, families can gather around a fire pit to roast marshmallows for the classic treat of s’mores. Festive lights and holiday music by local school groups will contribute to the joyful spirit as kids visit Santa and his helpers at the “Ski Lodge.” In Snowball Alley, anyone can take aim and fire snowballs at a special target range. While the older kids brave Tubin’ Ruben’s Slippery Slopes, the tykes can take to the Cub Paw Raceway for a less-intense downhill toboggan run.

Ever stop to consider how your productivity influences other aspects of your life? I’m not necessarily talking about being more productive at work to get that raise or promotion (even though that’s a definite plus), the focus here is about gaining control of your own happiness. Here are 3 examples of the benefits you can expect when being more productive at either work or in your personal life:

Just about everyone is on a lifelong quest to increase the amount of free time they have at their disposal. Whenever you can get more done in the day, you are gaining a little more control of your life. 2. Higher Self Esteem
When you experience the feeling of accomplishment by getting things done, it is natural to feel a greater sense of self worth. Once again the more productive you are, the more in control you feel, and this is a healthy feeling to have! Knowing you’re capable of increasing your skills and/or efficiency in any area of your life is a very liberating sensation, which in turns makes you feel good about yourself. Having a sense of confidence like this only serves to help make you even more productive simply because you are now more aware of your own capabilities.
3. Obvious Rewards
Whether it is cash, notoriety, recognition or simply the feeling of being in more control of your life, productivity has its rewards. Typically, increasing productivity earns you more respect and as mentioned above, it frees you up to pursue other things of your choosing. So whatever may be most important to you, whether it’s money, stature or just peace of mind can be yours by simply being more productive. Being able to increase your productivity affects other aspects of your life other than simply your work. Being more productive helps to also tremendously boost your self- esteem along with the feeling that you now have better control of your life. When your able to get more done in an efficient manner, you can expect to benefit both mentally and physically. It all boils down to simply being “all you can be” to better maintain control of your life. New Years Resolutions By Chuck Parinello
Guess what’s the top New Year’s resolution—and the first two guesses don’t count. That’s right the desire to lose weight. Now guess which resolution is broken more often—and the first two guesses don’t count. That’s right the goal of losing weight. We all know that each and every January, resolutions are made with conviction, only to be dropped like a hot potato some time before February as unattainable, or just plain boring. We vow to lose weight, spend more quality time with our spouse and children, get strong and buff, and even to quit smoking or drinking in order to become healthier. According to a study in the Journal of Clinical Psychology, after the resolution to lose weight comes:
• Getting organized • Spending less, saving more • Enjoying life to the fullest • Staying fit and healthy • Learning something new (like where did the idea of resolutions come from anyway?) 12 Your Arkansas Hometown Magazine
Revelry and resolutions have been essential to ringing in the New Year since 2000 B.C. when Babylonians held semi-annual festivals around the spring and autumn equinoxes. Back then, people marked the beginning of a New Year by paying off debts and returning borrowed goods. The practice carried over into Roman times with worshipers offering resolutions of good conduct to a double-faced deity named Janus, the god of beginnings and endings. With two faces, Janus could look back on past events and forward to the future. Thus he could look backward and forward at the same time. At midnight on December 31, the Romans imagined Janus looking back at the old year and forward to the new. Janus became the ancient symbol for resolutions and many Romans looked for forgiveness from their enemies and also exchanged gifts before the beginning of each year. When the Roman calendar was reformed, the first month of the year was renamed January in honor of Janus, establishing January 1 as the day of new beginnings. Although the date for New Year’s Day is not the same in every culture, it is always a time for celebration and for customs to ensure good luck in the coming year.

Going back to that psychology study, the number of Americans who make resolutions and those that don’t is surprisingly close. About 45 percent say they do make resolutions, while 38 percent don’t. Out of those that do make resolutions only eight percent achieve success. The study showed that people who make explicit resolutions have a better chance for success. So instead of saying you are going to lose weight, say you will lose 10 pounds by February. It seems younger people have a better chance of keep resolutions according to the study. Those in their 20s achieve their New Years resolutions 39 percent of the time, while those in their 50s do so only 14 percent of the time. But not all resolutions are about losing weight, improving knowledge, or giving up smoking. Some that have been seen on lists in recent years include: • Stop licking frozen flag poles. • Only getting divorced and remarried once a year. • Spending less than $1,825 for coffee at Starbucks in a year. • Help kids stay safe by not texting on the cell phone while eating McDonald’s and speeding through crosswalks in school zones with a frost covered windshield So all in all, the idea of promising to do this or do that at the end of each year is nothing new. The only thing that has changed is that, rather than making promises to gods, we make promises to ourselves. And since we cannot possibly rain thunders and lightning on ourselves as punishment for not keeping our promises, it need not surprise us that sooner or later we fail in staying true to our words. Psychologists explain this issue as follows: it often happens that people scribble down various New Year’s resolutions without taking the time to ponder on them and figure out how badly they want to change a given behavior and/or achieve a given goal.
Seeing how long-term behaviors do not go away just because we want them to, failure is right around the corner. As psychologist Paul Grant puts it, “People set goals that they haven’t really thought about. This increases the chances to not actually achieve them. Think about what strategies you’re going to use, how you are going to monitor them and how you are going to keep yourself on track,” Paul Grant goes on to add. In other words, people should ready themselves to experience minor and sometimes even major setbacks when trying to completely turn their lives around and walk an entirely different path. “If we are giving ourselves a hard time about not achieving our New Year’s resolution, that can make it a negative experience. Choosing something that you’re motivated to work towards is a big thing. Be aware that we’re much more likely to succeed in things if it is really important to us,” Paul Grant concluded. So why do we continue to make resolutions every year even though so few of us follow through? One reason, according to the shrinks, is the allure of starting from scratch. The idea of bettering ourselves is another motivator. “Most of us have a natural interest toward self-improvement,” says clinical psychologist John Duffy. And even though the New Year is an arbitrary date, Duffy explains that it “gives us time and a goal date to prepare for the change, to fire up for the shifts we plan to make.” Wanting to make resolutions is a good thing, experts say. The fact that people keep making resolutions even when they don’t always follow through ultimately means that they have hope and a certain level of belief in their ability to change and be more of who they really want to be. So here’s to a prosperous 2014 filled with many completed resolutions.
Moreover, almost nobody bothers to also piece together a strategy that would allow them to stick to their New Year’s resolutions. Most of the times, people just expect to simply wake up on the morning of January 1 and no longer feel the need to eat junk food, drink a tad too much or smoke.

As we enter the New Year, most people think about their resolutions and more importantly, how to make them stick this year. Though it is easy to set goals and feel inspired to make the changes, remaining faithful and diligent to them can be a challenge. BE SPECIFIC It isn’t enough to say, “I want to lose 10 pounds this year.” Many people fail to meet their goals because they are too vague. Humans are innately conditioned to meet small objectives and then move on to the next one. This year, structure your goals a little differently and set target dates for each milestone instead of trying to meet the goal as a whole. Although you probably want results sooner rather than later, practicing patience will do you and your workout goals well. For weight loss and fitness that will last, a safe amount to lose is between 1-2 pounds per week. So set that as your initial goal. This way when each week ends you have something to measure, and you can check it off your list. Meeting small goals often will work much better than an arbitrary goal that is just hanging in the breeze. Even though you are setting smaller goals, still remain focused on the large one as well. Give yourself a specific number of months to complete the goal. Average how many pounds per week you need to lose to meet that goal. FAKING IT While some do well with set schedules, most of us live hectic lives and trying to fit in a workout regimen often proves to be more difficult than we thought. Even more evident is that some of us simply dread working out in general. This year take the “fake it” approach; not with your routine and eating, but fake your body (and more so your brain). Fitness that you probably will end up donating your money to, commit to a fitness regimen that you actually enjoy that will offer cardio and strength training benefits. Think about what you love to do and find a creative way to turn it into a workout. For example, if you love to dance, join a Zumba or Salsa class. The social aspect of a group class makes it feel less like work. By disguising things that you love as fitness goals, you are more likely to stick with them. If you really want to join a gym, consider joining one that is multi-functional. Many gyms have a regular workout room, but join one that also has a racquetball or basketball court, a swimming pool and some group classes. This way you will have a whole host of activities available to you. The less you tire of your routine, the more apt you are to stay with it! If you can’t afford a gym consider some of the new apps that are available on your mobile device or join a free support club online. Connecting with others who are working towards the same goals as you will offer support and you can track your progress easily. REVAMP YOUR KITCHEN Purchase a juicer and incorporate more fruits and veggies into your diet. If your kitchen is equipped with things designed to make healthy foods, you can’t help but use them. Throw out any fattening equipment such as fryers. Next, do a New Year’s sweep of your cabinets and fridge and throw out (or better yet donate) your food to a soup kitchen. Get rid of sweets or any foods that will get in the way of your new goals and replace them with healthy snacks and foods. -Sammy Andrews

Revolutionizing Personal Computing
EVOLUTION OF THE MAC One day in 1976, 21 year old Steve Jobs resigned from his job at Atari and convinced friend Steve Wozniak to quit his job at Hewlett-Packard. Together, in Jobs’ California home garage, they founded a new company which they named “Apple”. Their goal - create a simple, inexpensive computer. On April Fool’s Day in 1976, they introduced the first Apple system, an encased circuit board known as the Apple I and sold it for $666.66 at a local electronics store. By the time the Apple II and the Mac rolled around, Jobs and Woz had popularized the personal computing revolution, and the rest, as they say, is history. After the release of the Apple I, Woz focused on improving the functionality and design of the product. First off, the Apple I was merely a play toy for computer hobbyists; Woz would have to add features to make the computer more attractive to the less “tech savvy” demographic. He added higher resolution graphics to allow for the display of pictures and words rather than words alone, produced a simple operating system and designed the floppy disk controller for the unit to facilitate basic data storage. A compact, self-contained Apple II was released in 1977. Priced at $2,698 for 48KB, the Apple II featured 16-bit processing, sound capabilities and loading and unloading of programs using an audio cassette-like device. The only disadvantage was an external monitor had to be attached to the unit. The result was pure genius: a personal computer that was both attractive and easy to operate for the everyday user. The idea would soon make a pair of twentysomethings working out of a garage into millionaires. Over time, models were released that improved speed and design. Woz created the first ever external 5.25” floppy disk drive that attached to the Apple II using an expansion slot. Jobs and Woz expanded the Apple II series with the release of the Apple II Plus in 1979 that featured expanded memory capabilities (a whole 48KB). The most popular of all Apple II models, the Apple IIe, followed in 1983. Enhancements included dual disk drives, improved graphics and memory capacities of 128KB (expandable with external cards to a whopping 1MB). Other models which came afterwards included the Apple IIc (1984), IIgs (1986) and IIc Plus (1988), and each featured improved memory and greater processing speed than its predecessors. Throughout the 80s and 90s, Apple II computers were standard for elementary schools. By the time the Apple II line became defunct, over 2 million Apple IIs had been sold, and personal computers were becoming quite common in most households and classrooms. The Macintosh computer was released to the public on January 22, 1984, following a Super Bowl HalfTime marketing blitz which premiered the famous commercial of a woman throwing a sledgehammer into
an Orwellian “Big Brother” video screen representing then enemy IBM. Retailing at a price of $2,495.00, the final product featured 128KB RAM, a Motorola 68000 processor operating at 8Mhz, an internal, 3.5” floppy disk drive, and 384x256 pixel bitmap display. While revolutionary in the way it defined personal computing, the Mac became an object of ridicule by hard-core computer users. At heart was the lack of viable software programs for the new platform, the scarce memory and the absence of a real hard disk drive. Apple knew it had to improve the original Mac to stay competitive. Even with the firing of Jobs in 1985, Apple released several versions of their Mac. One year later, Apple released the Macintosh Plus to address the limitations of the original Mac. The Macintosh Plus featured 1MB of RAM, a SCSI hard drive controller that allowed for the possibility of adding 6 additional devices and increased its floppy disk capacity to 800KB. In 1987, Apple introduced color graphics with the Macintosh II. To compete with plummeting PC prices, the Mac SE, a lower-cost version of the Macintosh II, was also released in the same year. The Mac IIx, Mac IIxi, Mac IIcx, Mac IIci, Mac II SE, and Mac IIfx followed into the 90s, each upgrade forced by the growing popularities of the lower-priced PC clones and the enhancements available in Microsoft’s cheaper operating systems. Apple even produced a line of popular portables during the late 80s and 90s, known as the PowerBook. By 1992, sales of Macintosh computers suffered due to the mass availability of inexpensive PC clones. However, Apple’s fortunes would soon change with the return of its founding leader Steve Jobs in 1997. The leadership and aesthetics that led to the creation of the Apple II and Macintosh computers came back with a roar in 1998 with the all-in-one iMac, priced at $999.00. It was designed much like the original Macintosh case in clear plastic and trimmed in translucent shades of blue or red. A smaller mouse and keyboard accompanied the new, sleek unit. An iMac portable would follow in 1999, using the same clear white and translucent design adopted by the iMacs. Upgrades to the platform would continue the iMac trend with the G3, G4, G5, and eMac systems. The Mac Mini was released in 2005 and would become the least expensive of all Apple computers. In 2006, Apple switched to Intel’s Core Duo processor which would provide twice the power and speed of the old Motorola processors and which now made operating Intel-processor based apps and software possible. Apple continues to be as relevant today as it was back at its creative height with the Apple II and Macintosh computers. Today, Apple continues to create bold, visionary products that attract the attention of consumers worldwide.
