Hi & welcome to our September Issue September is my anniversary month on becoming the Editor of this magazine! This year we celebrate 3 years - woo hoo that has flown. Thinking back now Ollie was just a baby when I started this journey and it won’t be long before he starts school!! Time does fly when your having fun. September is also the time to say hello to Spring - I've been looking forward to seeing you again! A little bit of sunshine and warmer weather really changes my whole mood and makes me want to get outside and get moving. It's a great time to venture out and explore new places like the newly refurbished playground in Diamond Creek that we visited - check out page 10 for all the details and address. It’s also getting closer to another school break - and during the Spring Holidays the Royal Melbourne Show is on. If you haven’t already noticed we’re running a competition for one lucky family to win a family pass - saving you $80!! (Yay) Just head to our Facebook page to enter. Out and About
CONISTON STREET RESERVE 21-27 Coniston Street DIAMIOND CREEK This newly refurbished playground is located at the end of the street and is partially fenced allowing for a safer visit with children. The Nillumbik Council have done a great job at updating this small space. They’ve installed some great equipment that is a little different than the usual playground set up. My favourite section is the wooden teepee and stepping stone logs which could be used as seating or for games and imaginary play. I can envision lots of little camp fires being built here. There is also a large climbing frame that has numerous options for little hands and feet to

manoeuver on and over. These include a rope ladder, spider web, rock climbing wall, ladders and monkey bars. To complete the space they have included a set of swings, one with a toddler seat, a medium size wavey slide and a spinner big enough for two or more. Planting has been done which over time will provide shade from the sun. Overall it's a cute new park for little kids to adventure & have fun!

Lemongrass Pork Mince Tom Yum Noodle Soup Ingredients 1 stalk Lemongrass 1 small Onion 1 small Chilli Thumb of ginger 2 Kaffir lime leaves, stalk removed
2 ⁄ tbsp coconut oil 2 tbsp Tom yum paste 1 cup Chicken stock 150g pork mince 2 tbsp fish sauce ⁄ tsp sugar
1 tsp sesame oil 1 tbsp oyster sauce 150g Bean noodles 1 Bok choy stalk 5 Cherry tomatoes
Recipe provided by Lee Chan, presenter and social media influencer. She created this recipe using ingredients from the fresh food market at Box Hill Central.
Method § For the pork mince – start with the lemongrass

paste. Place all the ingredients into a food processor & blitz until it resembles a paste, a few chunks are okay. Set aside until ready to use. Start with the bean noodles. Boil a large pot of water & cook the noodles as per packet instructions or until soft but still slightly chewy. Drain & set aside. Heat fry pan on high heat. Add 1⁄2 tbsp of coconut oil, add cherry tomatoes & pan roast until they split. Set aside until ready to assemble. Using the same fry pan, add 1tbsp of coconut oil & 1tbsp of lemongrass paste. Fry until fragrant. Add pork mince to the lemongrass paste & cook for 5minutes. Stir through sesame oil, 1tbsp fish
sauce & oyster sauce. Cook for a further 3minutes, stirring to incorporate sauces. Remove from heat when done. § In a saucepan, heat 1tbsp coconut oil, add 1tbsp of lemongrass paste & tom yum paste. Stir fry until fragrant. Add chicken stock & bring to boil. § Reduce heat to a simmer; add 1tbsp fish sauce & 1⁄2 tsp of sugar. Taste & balance the flavours accordingly. If you need it to be saltier, add more fish sauce, if it's too salty add a little sugar at a time. The taste should be rich & sour. § Finally, to assemble, place noodles in the bowl first then arrange cherry tomatoes, pork mince & bok choy over the top, then pour the hot broth over the top. Enjoy immediately.
