I don’t believe in coincidences. I believe that everything happens for a reason, so when a recent conversation about the book The Celestine Prophecy came up while discussing nutrition, it felt like the perfect fit for my letter. More than 50 million americans each year suffer from chronic, long-term sleep disorders and an additional 30 million experience sleeping problems. AMONG THE MORE THAN 80 KNOWN SLEEP DISORDERS, most can be managed effectively once they are correctly diagnosed. The most common sleep disorders include insomnia, sleep apnea, restless leg syndrome and narcolepsy. Sleep apnea is a disorder that affects breathing during sleep. Apnea comes from a Greek word that means “want of breath.” Sleep apnea is a chronic health problem and is also a progressive condition, which means it can potentially worsen over time. These cessations of breathing can last a minimum of 10 to 30 seconds and those with severe sleep apnea can have as many as four hundred per night. Even symptoms that seem harmless, such as snoring, negatively impact one’s health and performance. Once these symptoms are identified, those individuals will benefit considerably from diagnosis and treatment. These and other sleep disorders can all be diagnosed at Delta Sleep Labs (DSL), where patients undergo an overnight sleep study to monitor the symptoms and ascertain their cause. More than 50 million Americans each year suffer from chronic, long-term sleep disorders and an additional 30 million experience sleeping problems. Sleep deprivation caused by these disorders interferes with work, family, sexual drive and many other social activities. These disorders also account for over an estimated $16 billion in medical costs annually.
“Despite the prevalence of sleep-disordered breathing, there is a lack of adequate diagnostic facilities in Ventura County,” with emphasis directly placed on the word adequate, says Robert W. Currently, facilities are being built in substandard commercial office buildings with no consideration of medical necessity. “You will find that other so called labs, were built on cosmetic specifications that only require a television and full size bed, to open a business and call it a sleep lab,” says Lewis, “this is exactly where Delta makes a difference.” DSL is a 3900-square-foot, custom built, six-suite facility that was built to the accreditation standards of the American Academy of Sleep Medicine and was constructed to meet the highest level of the Americans with Disabilities and Occupational Safety Health Administration code requirements. All hallways and entrances are custom designed to allow for oversized or manual and electric mobility aids. Each suite is spaciously constructed with a material called “Quite Rock,” which is one of the highest and most dense grades of dry wall. It is specifically designed for noise elimination so that loud snoring, television or communication does not travel from suite to suite. Each room was designed with its own thermostat control and custom canned lighting with individual dimmer switches to deliver a personalized mood control environment. DSL also offers over 170 channels of cable television viewable on a 42” flat screen HD television.

A registered Polysomnographic Technologist is a fully-trained sleep technologist who has met the rigorous requirements to become credentialed by the Board of Registered Polysomnographic Technologists. More than Chiropractic Care Alan Duben was a college athlete who competed in Olympic weightlifting and had plans to be a professional coach when he was benched by a serious lower-back injury in 1996. “I dragged myself to lots of traditional doctors and therapists trying to get relief from the excruciating pain, but I wasn’t getting better,” recalled Duben, who was a student at California State University, Sacramento at the time studying kinesiology. “After two months of searching and frustration, I came across a doctor of chiropractic who got me back on my feet in less than a week,” said Duben, who went on to become two-time collegiate national champion in 1997 and 1998. “I owe a great deal to him for my athletic accomplishments; he kept my body balanced and after that I rarely got hurt or even ill.” The experience was so profound, “I realized I could help more people as a chiropractor than a coach.” With a BS in kinesiology from CSU Sacramento, followed by pre-med courses, he went on to graduate cum laude from the Palmer College of Chiropractic West, where he received The Clinical Excellence Award — the school’s highest award for clinical excellence. Plants were at the mercy of bugs, blight and the weather. Weeds were removed by hand and hoe. Animals grazed in wild pastures or were fed a portion of crops grown for silage. If they got sick, they died or got better on their own. After the farmer’s family took what it needed, the rest was sold at the market. The farm sustained itself. But, as agriculture grew into an industry, the dirty business began to take on a sinister aspect. Genetically modified seeds now produce giant fruit, sprayed with pesticides and then gassed to ripen, coated in wax and shipped thousands of miles to market. Soil is amended with synthetic fertilizers. Weeds are poisoned with toxins that stay in the soil. Animals live in conditions dangerous to life. And the scientist/farmer works for corporations that feed the world. Somewhere along the line, people noticed that where they were working and what they were doing was making them sick; the land didn’t produce very well. The animals they tended weren’t well either. They realized they’d fallen out of touch with the earth and its natural cycles.

In the 1940s a movement was started in the U.S. by J.I. Rodale to return to farming practices from the days of yore. Based on the teachings of Austrian, Rudolf Steiner, an advocate of biodynamic farming, a farm should be a “sustainable, ecologically stable, self-contained unit, biologically complete and balanced — a dynamic, living, organic whole.” Thus, the term organic entered the American agricultural lexicon.

In 1972, the FDA conducted 50,000 food safety inspections. In 2006, the FDA conducted only 9,164. Organics is the fastest growing food segment, increasing 20% annually. Farmer’s markets allow farmers to keep 80 to 90 cents of each dollar spent by the consumer. (Only about 20 percent of money spent by consumers on food goes to the farmers and ranchers raising the crops and animals) The average meal travels 1500 miles from the farm to your dinner plate.
As an organoculturist, Rodale paid attention to “the ways of soil and crops, observing the reaction of the land to the actions of man.” By the 1990s, the National Organic Program (NOP) came into being as a system managed in accordance with the Organic Foods Production Act of 1990 (OFPA). This act was amended through public law in 2005 and specifies exactly what the NOP entails, from planning to execution. With organic labeling comes the idea that foods produced and handled according to the laws are healthier, taste better and are more nutritious. The debate rages on the Internet and in the media between those who argue that paying significantly more for the same product is ludicrous and those who say it’s just as crazy to ingest pollutants and chemicals in conventionally grown products. The best way to solve this dilemma is to look at the facts about what it means when a farmer adheres to the Organic Foods Production Act and to be aware of what the National List of Allowed and Prohibited Substances contains.
What’s in the Act? In order for a farmer or food handler to use the organic label, they must have an organic plan and meet the Department of Agriculture’s (USDA’s) standards for organic production and handling. The detailed plan covers soil fertility, manuring, livestock provisions, mixed crop and livestock, and han-
dling of all agricultural products. Next, the farm must be inspected by certified agents. Residue testing is carried out and accurate records are kept which are accessible to the public. According to the USDA agriculture library, organic food is produced “without using most conventional pesticides; fertilizers made with synthetic ingredients or sewage sludge; bioengineering; or ionizing radiation. Before a product can be labeled organic, companies that handle or process organic food before it gets to your local supermarket or restaurant must be certified, too.” The real work lies in the specific features of each section of a company’s organic plan. For example, according to the OFPA, for organic livestock there is to be: 1. No manure refeeding. 2. No plastic pellets for roughage. 3. No feed with urea content. 4. No growth promoters or hormones. 5. No subtherapeutic antibiotic doses or synthetic trace elements to stimulate growth or production. 6. No internal parasiticides.
Addressing organic soil concerns, there is to be: 1. No plastic mulch. 2. No synthetic fertilizers or commercially blended fertilizers containing phosphorus, lime, potash, or nitrates. 3. No heavy metals or toxic residues. 4. No sulfites or nitrites. 5. No natural poisons (arsenic or lead salts) that have “long-term effects and persist in the environment.” 6. No preservatives, fungicides or fumigants.

Agents who certify farms and the products they produce as organic carry out wellorganized inspections where findings are systematically documented. But the USDA National Organic Standards Board (NOSB) provides a disclaimer: “Organic agriculture practices cannot ensure that products are completely free of residues; however, methods are used to minimize pollution from air, soil and water. Organic food handlers, processors and retailers adhere to standards that maintain the integrity of organic agricultural products.� The bottom line is that organic farming practices follow very specific guidelines with the goal of decreasing human, animal and environmental exposure to synthetic and toxic residues and pollutants. It is hard to argue that this is a bad or self-serving objective. However, a lot of money rides on the question of whether going organic is the wave of the future. Many would rather focus on whether products meet basic food safety rules and regulations. And if this is actually the issue, then whether something is organically grown or conventionally grown is irrelevant.

Apparently the new OFPA regulations have been enacted to help the organic industry as consumers become more confident in the labeling as larger corporations enter the organic foods market. Consumers should be aware that if something is labeled 100 percent organic, this product is completely organic or made of all organic ingredients. If a label just says organic, then the product contains 95 percent organic ingredients. Finally, if something is labeled as made with organic ingredients, this product contains at least 70 percent organic ingredients and the organic seal can’t be used on this package. The final decision lies with the consumer: he/she can choose to buy organic goods for a number of reasons — for example, they may like what organic farmers do for the environment, going pesticide- and chemical-free may appeal to their sense of health, or they may perceive that organic food tastes better. Or the consumer can purchase conventionally-grown products which have been ascertained to be safe for consumption by the FDA. Whichever route people take, it is important for them to know exactly what they’re getting. The exact cause is unknown. “If left untreated and the causes of gout unresolved, the resulting arthritic inflammation can cause damage to joints and tendons around joints,” said Jonathan Breslow, a licensed acupuncturist and clinical nutritionist. The true answer to gout lies in treating both the symptoms and the cause, Breslow said. “It is a misconception that the use of drugs is the answer. Nonsteroidal, anti-inflammatory drugs may cause side effects like gastrointestinal bleeding and ulceration. They have limitations.” Therefore, “commitment to making dietary lifestyle changes is essential with gout.” One of the biggest misunderstandings about gout is that “the patient will just have to live with the pain — that medication is the only option,” said Amanda Rosaasen, MD, who is board certified in family medicine. As a primary care provider who regularly treats patients with gout, she said the dangers of not treating gout include continued pain and deformity. To help offset gout, “dietary and lifestyle choices that are effective include reducing intake of food such as meat and seafood, consuming adequate vitamin C, limiting alcohol and fructose consumption and avoiding obesity.” Lauren Richter D.O., assistant medical director at the Center for Integrative Medicine, said one of the biggest myths about gout is that diet alone will stop the attacks. “Although certain foods such as seafood and particular types of alcohol (beer, spirits), can increase the risk for an attack, they are not the only cause. Most gout is genetic.”

Another myth is that there are no long-term effects with gout — the only problem is the pain you have during an attack, Richter said. “This is not so. Regular attacks can lead to permanent joint damage.”
A lot of information out there says you can cure gout, Richter added. “In most cases where gout is genetic, it can be managed but not cured. “You can cure gout if it is a result of another medical issue such as the use of diuretics for high blood pressure or if the gout is triggered by morbid obesity.” Read on for three medical professionals’ approaches to diagnosing and treating gout.

02 INTEGRATIVE The basis of treatment for acute gout attacks is to reduce inflammation. From a Western perspective, we generally use non-steroidal, anti-inflammatory medications such as indomethacin or naproxen. We also use colchicine to treat acute gout. From an herbal perspective we often use autumn crocus — the herb from which colchicine is made. Devil’s claw is another herb often used for inflammatory joint problems, including gout. If I am using an integrative approach to any disease process, I look at nutrition, gut function, immune function, the body’s detoxification ability, hormone balance and psycho-spiritual issues and how all those things may lead to the person developing gout. We do not just treat the gout symptoms. We try to figure out what root causes led to the expression of the gout. Proper balance of the whole person is critical. Although most gout is genetic, we do have some say over the expression of our genetics. So the best way to avoid the manifestation of any disease is to eat right, exercise regularly, sleep well and manage stress.

MalnouriShMent THE CONCEPT OF MALNUTRITION IN OBESE PEOPLE IS A FAIRLY RECENT PHENOMENON. CURRENT TRENDS IN THE FIELD OF NUTRITIONAL SCIENCE ARE REDEFINING THE TERM MALNOURISHED, MAKING ROOM FOR OBESE PEOPLE FOUND TO BE DEFICIENT IN SPECIFIC MICRONUTRIENTS.
Whether due to diet or surgical intervention, critically low levels of micronutrients are being recorded in a population that few ever thought to view as malnourished. Traditionally the word malnourished conjures images of glassy-eyed children with bloated tummies and stick-like limbs. But physicians and those in the allied health fields have begun studying vitamin, protein and mineral levels in the obese population due to the increasing popularity of gastric bypass surgery. “A lot of patients are malnourished because they don’t eat the right things,” says Dr. Mercedeh Baghai, a specialist in minimally-invasive gastrointestinal and bariatric surgery. “This is an under-diagnosed problem, but because of surgery we are more aware of the nutritional status of our patients.” As a treatment for morbid obesity, shortening the intestinal tract and decreasing the size of the stomach have definite repercussions on individuals’ abilities to glean vitamins and minerals essential for proper functioning of the body. 2010, other factors contributing to malnutrition in the morbidly obese include young age, nutritionally poor diet, low socioeconomic status and lack of vitamin supplementation.
THE FACTS Three hundred thousand deaths in the U.S. each year are directly related to obesity. The average life expectancy of someone who is obese is 20 years shorter than normal. Data from the Centers for Disease Control (CDC) in 2007 through 2008 document one third of the U.S. population as obese, with blacks having a 51 percent higher prevalence of obesity and Hispanics having a 21 percent higher prevalence compared to whites. Generally speaking, doctors aren’t satisfied with acknowledging that morbidly obese people are unhealthy — examining specifically how they are unhealthy may unlock more avenues of treatment and help explain why some treatments work and some don’t. This approach may also explain why certain diseases are more common in the obese, such as insulin resistant Type II diabetes, cardiovascular disease, hypertension, stroke, colon, prostate, uterine, breast and gall bladder cancers, gout, female infertility and arthritis. Dr. Baghai feels that screening/wellness exams in obese individuals are under-performed. “This population doesn’t get screening exams done routinely because their weight makes the exams very uncomfortable. As a result, most obese people have metabolic syndrome (see Side Bar 1) along with more common diseases, including colon disease, gynecologic diseases and cancer, because their primary care is subpar and diseases aren’t prevented or caught early on.”
WHAT’S IN YOUR DIET? The U.S. Department of Agriculture and the U.S. Department of Health and Human Services at www.dietaryguidelines.gov, state that 27 micronutrients are necessary for healthy body function, most of which are ingested. Micronutrients are elements, minerals and vitamins which are organic compounds required by many biochemical reactions in the body (see Page 36 for list). These are in addition to macronutrients such as protein, fats and carbohydrates, which serve as energy sources.
What is Metabolic Syndrome? The metabolic syndrome is a grouping of risk factors including abdominal obesity, insulin resistance, dyslipidemia (high triglycerides and cholesterol), hyperglycemia, and elevated blood pressure, which leads to an increased risk of diabetes and cardiovascular disease (Cardiovascular Diabetol 2009; 8: 7). A number of studies indicate a relationship between low 25-hydroxyvitamin D, hypocalcemia, insulin resistance and metabolic syndrome. RH Eckel, SM Grundy (The Lancet, April 2005; 365: 9468) noted that in the last 20 years, there has been a striking increase in the number of people with the metabolic syndrome worldwide. Although this increase is associated with the global epidemic of obesity and diabetes, the International Obesity Task Force emphasized that obesity (BMI) indices vary between ethnicities; therefore, not all obese individuals will have metabolic syndrome, though they may have increased cardiovascular risks and other imbalances.

Pre-operatively, Dr. Baghai checks blood chemistry panels, electrolytes and all vitamins. “We routinely find significant deficiencies in vitamins D (all three categories), A, B1 (thiamin), B12, folate (aka folic acid), iron (iron panel), calcium, zinc, magnesium, phosphorus, potassium and sodium,” she says. These findings are corroborated in numerous published studies, many of which explore the direct link between obesity and low levels of specific micronutrients, including vitamin D, calcium, phosphorus, zinc and the B vitamins. 1. Iron and Minerals Blood chemistries showing hemoglobin, iron, and the iron-binding protein, ferritin concentrations are often low in the obese population. Iron is an integral part of the hemoglobin molecule in red blood cells, and it is obtained only through dietary intake, as are most other elements such as calcium, magnesium, potassium and zinc. Ernst, et. al. reported significantly low levels of calcium and zinc in their study of 232 preop bariatric surgery patients (Obesity Surgery, May 2010). This is probably due to the influence of the larger volume of estrogen-producing fat cells, which have a positive effect on osteoporosis. Increased weight-bearing on the bones may also lend to boneprotective effects of overweight/obesity, since bone protects itself from stress by laying down more bone material. 2. Vitamin D

Metabolically, zinc is used in biochemical processes regulating the breakdown of carbohydrates by directly influencing the synthesis, storage and secretion of insulin. Thus, a deficiency in this mineral may play a role in the occurrence of various diseases commonly found in obese patients.
Mislabeled as a vitamin, this compound is a hormone precursor made by the body and activated in the presence of sunlight. In its activated forms, calcidiol and calcitriol, it’s responsible for regulating the absorption of calcium and phosphorus (which may explain the low concentrations of these minerals in obese people if their D levels are subpar), maintaining bone health, and modulating cell growth, neuromuscular and immune function, and reducing inflammation.

Finally, low vitamin D levels are associated with increased risk of breast cancer and prostate cancer. This is being explored by research into the role vitamin D plays in immunity and cell death. At this time, because vitamin D is a fat-soluble vitamin stored by the body, a physician’s care is recommended when using this supplement as a medical treatment.

paper published in the June 2010 issue of Journal of the International Society of Sports Nutrition: Are multivitamins necessary for good health? For years professionals at www.nutrition.gov have stated “healthy individuals can get all the vitamins and minerals they need from a well-balanced diet.” However, Calton’s examination of four popular diet plans (touted as healthy and well-balanced) came to the conclusion that a person would have to eat more than 27,000 calories on these diets before they would reach the recommended daily intake of 27 micronutrients considered essential for good health. This is both unreasonable and unhealthy. Proponents of dietary supplementation are trying to change the information physicians and the government have been doling out. Drs. Fairfield and Fletcher of Harvard University and writers of the new guidelines for JAMA state, “Even people who eat five daily servings of fruits and vegetables may not get enough of certain vitamins for optimum health.” According to Dr. Fletcher and Calton’s study, micronutrient deficiency may be more widespread than commonly thought and may be why the American Medical Association reversed their longstanding anti-vitamin policy when they advised all adults to take at least one multivitamin pill each day.
TREATMENT As physicians and ancillary care providers, including personal trainers, nutritionists and psychologists, work together in researching how best to approach the cure for morbid obesity, it is clearly a complex health problem. The battle between the exercise vs. diet as-a-cure-for-obesity camps still wages, while surgeons claim that bariatric surgery is the number one cure for type II diabetes related to obesity. Evidence of the benefits of micronutrient supplementation continues to mount though, with studies such as Y. Li’s and C. Wang, et. al. (International Journal of Obesity, June 2010), showing improvement in obese women’s body weight and fatness (adiposity) due to possible increased energy expenditure and fat oxidation when they were treated with multivitamin and mineral supplementation. Micronutrient supplementation, when indicated by physiciandirected tests, seems to improve the health of obese patients overall. And in the case of postop bariatric surgery patients, supplementation is crucial. “Surgery makes it necessary to take supplements daily, forever,” says Dr. Baghai. “These people physically can’t eat enough food to allow for the necessary amount of nutrients per day. When an obese person makes poor choices in addition to eating small volumes of food, this can lead to malnourishment.”

THE BUZZ There is a special kind of honey from New Zealand that is just starting to get some attention in the U.S. But Aboriginal people have used it for centuries for a variety of medicinal applications. Manuka honey is from bees gathering nectar from the flowers of the manuka or tea tree bush, which is indigenous to New Zealand.
HEALTH BENEFITS Some manuka honeys are labeled as active, meaning they have antimicrobial properties not present in most other honeys. It is not entirely clear why this is the case but a lab test can detect the presence of these properties. Active manuka honey has been used to treat a variety of conditions and ailments, both internal and external.
Active manuka honey has very powerful antibacterial properties and can destroy some strong bacteria such as the staph aureus and streptococcus bacteria.

Internally, active manuka honey has been studied for its potential positive effect on helping treat symptoms of chronic illnesses such as mesothelioma and gastrointestinal disorders such as irritable bowel syndrome (IBS), acid reflux, heartburn, stomach ulcer, H. pylori, diverticulitis and gastritis, among others. Externally, it is applied on wounds, boils, sores, scars, burns, varicose ulcers, skin ulcers, diabetic ulcers and infections (examples: eye, ear, sinus). It is also believed to improve skin health and treat acne and eczema. Lately, findings have suggested that manuka honey’s benefits extend to the dental field too. According to a

Other studies have suggested manuka honey can help reduce or enhance the effect of radiotherapy on some cancers.
SELECTION “[Manuka honey] can be quite expensive and difficult to find in the United States,” said Lisagor, a registered dietitian. Some specialty health stores may carry it, and it can be found online. However, experts recommend using only medical-grade, active manuka honey with a unique manuka factor (UMF) rating of 10 to 16 — a standard way of describing its anti-bacterial strength. Endometriosis is a chronic condition affecting 6.3 million women in the United States and many more millions worldwide. Endometriosis is a painful and often debilitating condition where the normal cells lining the uterus, called the endometrium, grow in abnormal areas outside the uterus. This tissue can attach to any surface outside the uterus including the abdominal wall, pelvic wall, ovaries, colon, bladder, fallopian tubes, and has even been found on the lungs. When this misplaced endometrium responds to monthly hormonal changes, it thickens and sheds just like the normal tissue does on the inside of the uterus. The resulting irritation causes the formation of scar tissue and adhesions that cause women suffering from endometriosis to experience infertility, fatigue, painful intercourse, and urinary and bowel problems. Additionally, studies have found the stress of dealing with infertility, coupled with the pressures from coping with chronic pain, increases the prevalence of depression in women with endometriosis. There is no cure for endometriosis but treatments often include pain relievers, hormonal treatment and surgery. However, a host of less conventional, less expensive, alternative treatment options exist that may be more effective at treating the body as a whole. The main goals for controlling endometriosis naturally are reducing the effects of estrogen, reducing inflammation and reducing stress.
ESTROGEN Endometriosis is an estrogen-sensitive disease. This means the symptoms and complications are often exacerbated when excess levels of estrogen are present in the blood. By

eliminating excess environmental estrogens, the most severe symptoms can often be decreased. Think Green — Fruits and vegetables are just plain good for you. You know that! Broccoli, cabbage, mustard greens and turnips are especially helpful in ridding the body of excess estrogen. Go Organic — By choosing lean, organic meat, you can avoid ingesting many of the hormones given to commercially-farmed animals (poultry is, by law, already hormone-free). Additionally, organic meats and produce usually have lower levels of hormone-responsive toxins from chemical pesticides and herbicides. Say No to Soy — Two isoflavones in soy were found to demonstrate toxicity in estrogen-sensitive tissues. Avoid soy beans, soy protein and soy milk. Limit caffeine and alcohol — Large amounts of caffeine have been found to raise estrogen levels. Alcohol uses up Vitamin B stored in the liver which is essential for clearing excess estrogen out of the body. Pro Progesterone — Progesterone has a natural countering effect on estrogen and is therefore helpful in minimizing symptoms of endometriosis. Many OB/Gyns prescribe bio-identical progesterone cream as a natural alternative to synthetic hormones with great results.
INFLAMMATION Controlling the pain-causing prostaglandins by avoiding inflammatory foods allows the body to operate on the offensive, the way it was designed to, rather than on the destructive defensive. Oust the Sugar and Fat — Not only are refined sugars and trans fats damaging to your waistline, they are extremely inflammatory and should be avoided at all costs. Dairy-free Diet — Milk products have proven to be especially inflammatory because they stimulate the production of two types of prostaglandins. Some studies tout organic goat milk products as an alternative due to their anti-inflammatory properties. Gone with Gluten — While gluten is inflammatory for everyone, women with endometriosis often have a gluten intolerance in addition to irritable bowel syndrome (IBS). Gluten blocks the absorption of critical nutrients that typically reduce pain and inflammation.
Coconut Oil — An anti-Candida yeast diet has proven to be quite helpful for women with endometriosis. Coconut oil is an essential element in fighting Candida yeast because of its anti-fungal properties. Among many other benefits, coconut oil is also a natural anti-inflammatory. Up the Omegas — Three forms of Omega-3 are naturally anti-inflammatory and are especially helpful for those with endometriosis: Evening primrose oil is converted to DHA and helps to counter effects of prostaglandins. Flax meal not only is loaded with Omega-3s, it is also a phytoestrogen that is especially effective at binding to estrogen receptor sites helping to “take up real estate” on cells that would normally be overrun by estrogen. The oil from walnuts has the highest Omega-3 content of all nuts and can be added easily to salads or eaten raw.
STRESS Studies have shown a direct link between stress and the severity of symptoms related to endometriosis. While nearly impossible to remove all stress, it is important for women with endometriosis to learn to control stress to help treat the disease. Exercise — Endorphin levels in the brain are naturally raised with exercise. These feel-good endorphins are powerful pain relievers. Less pain is achieved through lower stress levels. Exercise also regulates hormones, it keeps weight in check which lowers inflammation and it helps flush out toxins through the lymphatic system lowering stress on the body’s systems. Aim for 30 minutes of moderate intensity exercise each day. Rest — We all know we should get at least 8 hours of sleep per night because overtired bodies are more susceptible to stress (and our mothers always told us so). Sleep is especially important for women with endometriosis since it regulates hormone levels and reduces inflammation. Relaxation — Just 10 minutes in a quiet, dark space is enough to counter the harmful effects of stress on the body. Try listening to peaceful music, focusing on breathing techniques or praying. As always, it is a good idea to work with your doctor to develop a game plan that is best suited for your specific needs. Not all alternative therapies are the same. The brother and sister team of Jerad Sanders and Renee Allman can attest to this. Sanders, CEO of the nonprofit organization Life Light Therapy Institute and an industrial farmer and his friend and colleague Lynn Kenny, undertook extensive research and study when his best friend succumbed to cancer. In comparing many types of alternative therapies, Sanders discovered frequency technology therapy and found it to be the most effective in alleviating his friend’s worsening symptoms. Like her brother, Allman, a senior executive at Life Light, is also passionate about health and nutrition. When her husband suffered a debilitating injury, Allman also used frequency technology therapy to nurse him back to health. In the process, she became certified in BioAcoustics. BioAcoustics involves the analysis of the human voice and corresponding frequencies to diagnose and treat a variety of ailments from multiple sclerosis to brain trauma. According to the Sound Health Research Institute’s website, “Hidden or underlying stresses in the body that are expressed as disease can be detected” through a procedure called voice spectral analysis. “It’s been proven and tested,” echoed Evans, of this inexpensive and non-invasive diagnostic procedure which is performed routinely at the institute. Using a software program, a client’s voice is captured using a unidirectional condenser microphone. The unique vocal print is evaluated, analyzed and profiled for the presence or absence of toxins, pathogens, allergens and nutritional supplements. The vocal print can also reveal a person’s physical, biochemical and emotional states, as well as imbalances. It also helps determine which treatment modality or nutrient frequency is best for the client. This health management tool allows the body to self-diagnose, self-prescribe and self-manage. Using the voice as a health indicator is still a fairly new concept even in the alternative therapy field. However, alternative therapy practitioners predict it won’t be too long before it becomes a common diagnostic practice, akin to taking blood pressure or body temperature.

TREATMENT MODALITIES Frequency Technology Therapy Frequency technology therapy can kill harmful microorganisms. Its inventor, Raymond Rife, was able to determine which specific frequency could target a disease successfully, and the microorganisms associated with it. Rife first used this technology to help in the treatment of tuberculosis and then cancer. There are more than 850 frequencies, according to Evans, who is also a frequency therapy practitioner. “Depending on the disease, there is a frequency geared toward it. Using frequency technology therapy, many diseases including diabetes, lupus, arthritis, various types of cancer and even the common flu, have been treated at the institute. “One patient even came out of a diabetic coma. 60 to 70 percent of processed foods have some genetically modified ingredient. As a consumer, it is important for you to know what this means to you and your health. Genetic engineering carries unique risks. The Institute for Responsible Technology (IRT), a consumer advocate group, outlines some of these risks below:
CROPS AND FOOD There have been attempts to increase nutritional benefits or productivity of crops through genetic engineering. However, the two main traits that have been added are herbicide tolerance and the ability of the plant to produce its own pesticide. Herbicide tolerance allows the farmer to spray weed-killer directly on the crop without killing it. Genetic engineers have encountered unintended side effects – GM plants create toxins, react to weather differently, contain too much or too little nutrients, become diseased or malfunction and die. When foreign genes are inserted, new or unknown proteins can

be created or the output of existing proteins inside the plant can be altered. The effects of consuming these new combinations of proteins are unknown.
ANIMALS In traditional breeding it is possible to mate a horse with another horse and get a new variety, but is not possible to mate a horse with a tomato or a rat. Genetic engineering, allows scientists to breach species barriers set up by nature. The results are plants (or animals) with traits that would be practically impossible to achieve through natural processes, such as crossbreeding or grafting.
ENVIRONMENTAL RISKS Crosspollination Pollen from GM crops and trees can contaminate nearby crops and wild plants of the same type. Crosspollination has made it impossible for some organic farmers to grow organic crops.
Toxicity Studies have shown that pesticide-producing crops contaminate nearby streams, possibly affecting aquatic life. Theses toxins may also harm beneficial insects. And, it has been found that previously insignificant insects which are not targeted by the GM varieties develop into pests. Super Weeds As weeds adapt to herbicides, they develop resistance and evolve into what are called “super weeds.” When that happens, herbicide use increases and the benefits of herbicide resistant crops are diminished, if not lost.
HEALTH RISKS In 2009, the American Academy of Environmental Medicine (AAEM) stated that, “Several animal studies indicate serious health risks associated with genetically modified (GM) food,” including infertility, immune problems, accelerated aging, faulty insulin regulation, and changes in major organs and the gastrointestinal system. The AAEM has asked physicians to advise all patients to avoid GM foods. Much is still not know about the long term effects of GMOs in our food supply. However, widespread, unpredictable changes are a major health risk of GMOs. The genetic engineering process causes mutations in hundreds or thousands of locations throughout a plant’s DNA. Natural genes can be deleted or permanently turned on or off, and hundreds may change their behavior. Even the inserted gene can be damaged or rearranged, and may create proteins that can trigger allergies or promote disease.
Consumers are ultimately in control. We have the power to avoid or support any product on the market. However, many consumers who do not approve of GMOs find it difficult to avoid them because the U.S. does not require food companies to label genetically modified ingredients. Consumers can use a Non-GMO Shopping Guide for an easy reference guide while doing their grocery shopping (www.nongmoshoppingguide.com). As with all controversial issues, knowledge is your most powerful tool to make responsible decisions. What can you do? 1. Get educated. Start with the websites listed below. 2. Get more information from the FDA, food manufacturers, your children’s schools, etc. so you can compare the pros and cons. 3. Get involved. HIGHLY SENSITIVE PEOPLE TAKE THINGS TOO PERSONALLY OR OVERANALYZE SITUATIONS. SOME OF THESE PEOPLE ARE DEFENSIVE AND OTHERS ARE UNCOMFORTABLE WHEN THINGS APPEAR OUT OF THEIR CONTROL. MANY ARE DEEPLY AFFECTED BY OTHER PEOPLE’S MOODS, WHILE OTHERS MAY BECOME IMMOBILIZED BY CHAOS, CLUTTER OR STRESS.
For example, a pet toy poodle jumps out of its owner’s arms and starts running down the street, hoping to receive some affection or a treat from a lady going out to her mailbox. The lady feels she is in mortal peril, as if a hungry, aggressive wild lion is attacking and will eat her. She screams, drops her mail, and runs as fast as she can back into her house. “While this example may seem ridiculous, less dramatic versions of it happen all the time,” Breslow said. The consciousness of a highly sensitive person is easily thrown off balance, often in specific areas, and they don’t perceive things as they really are.

GAD
HSP is not new, agreed Ed S. Jesalva, MD, a psychiatrist who specializes in treating psychiatric disorders including depression, anxiety, bipolar disorder, ADD/ADHD and substance or alcohol abuse. “It is a repackaging of anxiety symptoms that is less threatening and formalized compared to … what we call generalized anxiety disorder.” Known as GAD, the condition is characterized by excessive, hard-to-control feelings of being bothered — a worrying or nervousness about one or more circumstances ranging from family to money or from work to health. The difference between HSPs and normally sensitive people “is a matter of degree,” Jesalva said. “GAD encompasses anxiety symptoms that create a degree of negative impact in one’s level of functioning. Most people who are sensitive do fine in life. Those with the symptoms [of GAD] tend to have problems with school, work, relationships, drugs or alcohol abuse.”
THE DIFFERENCE IS A MATTER OF DEGREE “Highly sensitive people have limitations or sets of conditions and requirements that must be in place in order for them to feel okay,” Breslow said. “An example of this is someone who has a great five-speed manual shift car but is under the delusion that it only can operate in the lowest first gear, whereas actually the car runs fine in fifth gear on the highway. It is a sign of strength and health for a person who actually experienced this situation to be able to let go of it and not be freaked out by a tiny poodle running down the street. The truth and reality is that it is healthy to be present in the now of the moment responding appropriately to situations and not to be stuck in reactions from past traumatic circumstances.” “In general, HSPs can have greater degrees of anxiety or depression,” said Mark Robert Waldman, a therapist and associate fellow at the Center for Spirituality and the Mind, University of Pennsylvania. “They may also be more neurologically sensitive to incoming information: sensory, emotional, or cognitive.”

tional differences in key parts of the brain like the amygdala, which generates fear and anger,” Waldman said. “Meditators, however, develop stronger neural connections in the anterior cingulate, an area involved with social awareness and the capacity to feel empathy and compassion. Thus, one can argue that becoming more aware and conscious simultaneously creates greater inner peace and greater sensitivity toward the suffering of others.” Thus, it’s not surprising that highly sensitive people have a more difficult time handling confrontations, but they might be more inclined to promote peace, Waldman continued. “People with high and low sensitivity have both strengths and weaknesses. A soldier, policeman or conflict negotiator needs to be thick skinned, whereas a therapist, teacher or parent may need to show extraordinary sensitivity with patients, students and children.” While the trait of high sensitivity is often discussed as if it were a flaw or a weakness — many believe it is, in fact, a gift. Sensitivity is valued differently in different cultures, Aron added. “In cultures where it is not valued, HSPs tend to have low self-esteem. They are told ‘don’t be so sensitive,’ so that they feel abnormal.”
WHAT CAN CAUSE HSP? “For highly sensitive people, the condition can be acquired in utero or during one’s life,” Breslow said. A typical candidate “will be the child born to a mother who … during the pregnancy has experienced a lot of life circumstances which aggravate that particular area of sensitivity for the mother. The resulting stress and sensitivity will then be imbibed by the fetus and will be, so to say, at the core of the resulting person’s awareness — brain, nervous system, and cellular energy.” “Prenatal trauma is one of the biggest causative factors of extreme cases of highly sensitive people,” Breslow further emphasized. “It is not uncommon for the pregnant mother to be under hugely stressful circumstances; the unborn baby absorbs those reactions and is born preprogrammed.” Another significant cause is ongoing or acute situational trauma, either in childhood or later in life. “I believe soldiers returning from war who suffer from post traumatic stress syndromes are a type of highly sensitive person. They may be home in bed, safely sleeping next to their loving spouse; yet if there is a truck driving down the street they may wake up in a great fright or violent rage.” As far as the prevalence is concerned, about 80 percent of the population can be categorized as HSP on some level. “So it can be considered common,” Breslow said. “In my opinion the majority of people, say 80 percent, have some area of their life experience where they are overly sensitive. It is just that with some people it becomes more extreme and limiting — these are the obvious highly sensitive persons who suffer globally from their state, which I would guess to be about 15 percent of humanity.” “There are ways to help offset HSP,” Jesalva said, including regular exercise, proper nutrition, yoga and psychotherapy. Kava and chamomile herbal supplements are also useful, as well as traditional medications for moderate and severe symptoms.” Ultimately, Breslow added, “those persons who are aware of themselves and desire to experience optimal well-being and enjoy the most out of life will seek to evolve and improve these areas within themselves.”

WHAT DO CARROTS, WINTER SQUASH, CANTALOUPE AND TOMATOES HAVE IN COMMON? ASIDE FROM THEIR YELLOW-ORANGE COLOR, THESE VEGETABLES ARE ALSO RICH IN ALPHA-CAROTENE. This second most common form of carotene is one of 50 the body converts into retinol, an active form of vitamin A. It has approximately half of the vitamin A of its more widely known cousin, beta-carotene.
FOOD SOURCES The most popular sources of alpha-carotene are yellow-orange vegetables, followed by the dark green variety including broccoli, spinach, avocados, leaf lettuce, cilantro, Swiss chard, kale and green beans. To maximize nutrients, experts suggest just steaming these vegetables lightly or better yet, eating them raw. “We should not just eat a nutrient like alpha-carotene,” said Terri Lisagor, a registered dietitian and nutrition professor at California State University, Northridge. “We should eat a diet of mixed foods that provide nutrients. The more balanced your diet is, combined with a healthy lifestyle, the more you can maximize your potential,” added Lisagor.

How do you know if you are alpha-carotene deficient? “It’s the same symptoms associated with vitamin A deficiency,” explained Lisagor. “If a person is low on alpha-carotene, he or she is probably low on vitamin A and other nutrients in general,” she added. Though rare in industrialized countries, vitamin A deficiency is still a growing concern in developing and third world countries. Usually linked to malnutrition, prolonged vitamin A deficiency can lead to skin disorders, infections, diarrhea, respiratory disorders and xerophthalmia or dry eye. It is not hard to get the recommended daily allowance (RDA) of vitamin A. Infants and children usually need 300 to 600 international units (IU) a day. Adults usually need 700 to 1,300 IU, with pregnant and breastfeeding mothers on the higher end of the range.

A half-cup of cooked broccoli has 200 IU, while a half-cup of raw, chopped carrots has 1,700 IU. A teaspoon of cod liver oil tops the charts at 4,500 IU. One large carrot gives us enough vitamin A for approximately two days.
A+ IN HEALTH BENEFITS Beta-carotene is the most commonly identified vitamer (one of several related chemical substances fulfilling the same vitamin function) of vitamin A. Alpha-carotene may not be getting as much press, but it is just as important and beneficial to the body as its more popular cousin. Both beta- and alphacarotene are members of the carotenoid antioxidant family. Both alpha-carotene and beta-carotene help â&#x20AC;&#x153;keep the integrity of the cellular membrane intact,â&#x20AC;? according to Lisagor. Aside from being a top source of vitamin A, alpha-carotene also helps to protect the cells from the damaging effects of free radicals. Radicals or free radicals are unstable, organic molecules that cause aging, tissue damage and certain diseases. The antidotes to free radicals are antioxidants â&#x20AC;&#x201C; from nutrient-rich foods. Alpha-carotene also enhances the functions of the immune system as well as the reproductive system. It plays an important role in vision and bone growth. Recently alpha-carotene has been linked to longevity.

Results from a National Health and Nutrition Examination Survey suggest that people who consumed high levels of alphacarotene lived longer. The findings came from the analyzed information of 15,000 people who participated in the study. As reported in the Archives of Internal Medicine, researchers discovered that participants who had the highest levels of alpha-carotene in their system had up to a 39 percent lower mortality risk (Chaoyang et al, 2010).
BALANCE IS THE KEY However, the researchers were quick to point out that other antioxidants and nutrients may have contributed to the participantsâ&#x20AC;&#x2122; longevity. Experts who reviewed the findings were quick to stress that alpha-carotene and beta-carotene tend to travel together; thus the two have a lot of overlapping chemical qualities. However, there may be hints that alpha-carotene is 10 times more effective than beta-carotene in slowing down certain types of cancer.

INGREDIENTS: 1 qt. reduced sodium, organic chicken broth 2 cups water 1 Tbsp. olive oil 1 medium onion, diced 2 carrots, diced 1/2 cup white wine 1 1/2 cups pearl barley, uncooked 1 1/2 lbs. asparagus, trimmed 2 tsp. garlic, chopped 1 tsp. lemon zest 2 tsp. lemon juice 1/2 tsp sea salt 1/2 tsp. black pepper 1/3 cup grated parmesan cheese 1/4 cup hazelnuts, toasted and chopped 2 Tbsp. chopped parsley
DIRECTIONS: 1. Heat broth and water in saucepan until boiling. Turn down heat and simmer. 2. In large sautĂŠ pan, heat oil over medium heat. Add onion and carrots. SautĂŠ for 3 minutes. Add wine and continue cooking until liquid is absorbed. Add barley and hot broth, cook for 35-40 minutes until barley is tender. 3. Cut top third of each asparagus stalk into 1/2 inch pieces. Set aside. Coarsely chop remaining asparagus stalks, place in microwaveable bowl, add 1 Tbsp. water and microwave 4 minutes until tender. Set aside. 4. Steam asparagus tips in microwave for 3 minutes, until just tender. 5. Add chopped asparagus stems, garlic, lemon zest, lemon juice, salt and pepper to food processor. Puree until smooth. 6. When barley is tender, add asparagus puree, asparagus tips, parmesan, hazelnuts and parsley. Toss well. Adjust salt and pepper to taste.
