Designed to take its stylish wearers from sea to shore and back again, Breitling’s 1950s-era SuperOcean dive watch was the inspiration for the new Superocean Heritage ’57 Highlands Capsule Collection. Inviting Breitling fans on a new coastal journey: exploring the rocky shores and misty peaks of the Scottish Highlands, the capsule collection counts a limited volume, available for a limited time. Each piece comes at a 38 mm diameter, featuring vibrant land-and-sea-inspired dial colours of beige, green, mustard, and blue. Like their vintage SuperOcean predecessor, they feature mid-century-inspired triangular indexes marking the hours. One distinctly Scottish detail showcased throughout the Highlands Capsule Collection is a tweed- inspired fabric strap, made of a sumptuous blend of silk and wool. All the watches are sold on a metal mesh bracelet, while the complementary fabric strap comes in a separate pouch, along with a springboard tool for easy strap changes. Each subtly speckled, tweed-inspired strap complements its coloured dial: the blue version is paired with a dark brown strap, the beige dial with a classic brown strap, and both the green and the mustard-toned dials with a green strap. The land was once owned by Edward the Confessor and the property itself, designed by R.A. Briggs. Having been used as a safe place during the war, the property and its rolling land has also been widely recognised as the inspiration for Lewis Carroll's Alice in
Wonderland. DEHYDRATED AND CANDIED MINI RED BEETS 5 Pieces of Mini Beets with Greens | 40ml Grape Seed Oil 1 Bunch of Bay Leaves Wash the beets. Cut the greens 2cm above the beet head, leaving 3cm of the root. Buff the mini beets with a green scrub pad to remove the outer skin and smooth the beet. Confit the mini beets in bay leaf-infused oil at 70°C for 1 hour 30 minutes. Reserve half of the beets for the service and place the other half in a dehydrator at 50°C for 6 to 7 hours. BEET GUM 80g Red Beets | 55ml Beet Juice Wash and peel the beets. Dice them into 1cm brunoise. Place the brunoise in a dehydrator at 50°C for 6 hours Before the service, rehydrate the beet cubes in warm beet juice. Drain and reserve at room temperature. BEET PICKLES 15g Red Beets | 15g White Wine | 7.5g White Vinegar Wash and peel the beets. Use a deli slicer to cut thin 0.5cm slices. Punch out circles with a 4 cm diameter and arrange them in an airtight jar. Pour the solution over the beets. Let it cool at room temperature for 2 hours, then store the sealed jar in the refrigerator.

Make a smooth beet puree without seasoning. In a pot, sauté onions with olive oil and sugar. Add tomato paste and cook for 2 minutes. Add ginger, garlic and pepper. Continue cooking for a minute. Deglaze with rice vinegar, soy sauce and beet puree. Cook for a minimum of 10 min. Strain and cool before serving. BEETROOT MILK 40ml Red Beet Juice | 4g Lime Juice | 8g Rose Hip Paste 2.4g Fresh Ginger | Salt To Taste | 0.8g Kuzu Blend the beet juice with all the ingredients. Strain the mixture and heat it unit lit simmers to curdle the juice. Add the kuzu and stir until it reaches a syrupy consistency. Cool it on ice. MILD CHILI OIL 1.2g Sweet Béarn Pepper | 8g Pimenton | 40ml Grape Seed Oil Heat the oil to 284°F (140°C). Blend the oil with the peppers. Filter and cool the mixture. Put it in piping bag. Let it settle in the fridge overnight. The next day, remove the water and keep the clarified oil.

NEW YEAR, NEW CHAMPAGNE HABITS The New Year brings new habits and a new mindset. With that, the beginning of 2024 marks the opportunity to try something a bit different - low sugar Champagnes, known as Brut Nature or zero dosage, are a great option. As such, the Champagne Bureau UK is here to guide you through dosage (sugar content) in Champagne. Dosage is the final touch added to Champagne before corking. This final addition is a mixture of cane sugar dissolved in wine which is known as ‘liqueur de dosage’ and the type of Champagne is determined by the quantity of liqueur used. A Champagne Brut contains less than 12 grams of sugar per litre, whereas a Champagne Brut Nature contains less than 3 grams of sugar per litre and no dosage liqueur will have been added to it (though there may be some residual and natural sugar present). Champagnes with this low level of sugar can also be known as a Champagne zéro dosage. Champagne Brut Nature’s are perfect for pairing with food because they are not too sweet and have a high level of acidity. The most important thing to note with Champagne pairings is to ensure that the food will have a greater impact on the Champagne rather than negatively impacting its aromas and structure. With this in mind, fish dishes such as sushi or seafood as well as the classic pairing of oysters work particularly well - this is primarily due to the saltiness of the seafood complimenting the dryness and acidity of this low-sugar Champagne. Champagne Brut Nature is also the perfect option for light vegetable dishes or salads - particularly those including cucumber, asparagus - making this style a great option for those taking part in Veganuary this month. With the New Year also brings the opportunity to enjoy a glass of Champagne at one of the many new Champane bars in London. B L U E - B E N Z Production of the Mercedes-Benz 230 SL began in June 1963 making this car one of the earlier examples of just 1,465 built in that year. Borne from the W112 platform developed for the new S-Class at the time, the 230 SL featured a reduced wheelbase and a considerably different style. Available in two-door roadster and optional two-door hard-top 'pagoda' coupé guise, the 230 SL was a revelation for the marque.

In the world of interior deign, colour can have a profound impact on how we experience and ‘feel’ our surroundings. As we step into the new year, Pantone, the world-leading authority on colour, have recently announced their ‘Colour of the Year 2024’ as ‘Peach Fuzz.’ Describing it as a colour radiating with warmth and modern elegance, Pantone have chosen wisely to capture the spirit of 2024. I started my career in interior design back in the 1980s when peach was a trend colour and it has taken me three decades to be ready for it again, but I’m here for it and will certainly be
incorporating it into interior schemes in the year ahead. Here’s a few ideas to use Peach Fuzz to best effect and why it’s such a good colour in the home. As a colour experience, Peach Fuzz exudes a sense of calm and tranquillity creating a soft and glowing ambience. Its versatility allows for a seamless integration into both classic and contemporary, minimalist interiors offering either a gentle, tonal look or creating a punch when combined with complementary colours. One of the key attributes of the colour is the easy transition through the seasons. As a Spring/Summer colour it will offer a fresh, light look but will equally create a necessary feeling of warmth in the Autumn and Winter. As a colour choice for decorating, this is good news! Similar tones in ready-mixed paint can be found in Little Greene’s ‘Conche’ and ‘Shrimp Pink,’ Lick ‘Orange 05 and Dulux ‘Sunblush Peach.’ To create a pastel scheme, combine with mint green or lavender, with sage green and terracotta for an earthy look, or with off-white or soft cool-beige for a muted, tonal interior. YOUR INTERIOR a tired bathroom to life as readily as the main colour for a living area. Textural choices are a key decision to determine the end result. Combine with natural rattan and linen for a mediterranean vibe or with plush velvet for opulence. Cool metallics are a perfect counterpoint but I can also see rose gold metallics creating an interesting visual feast. If you bought into the boucle trend, and a great many of us did, Peach Fuzz as a wall colour will certainly elevate the look of a neutral boucle sofa bringing the room bang up to date. Add in a few peach accent items also to create balance around the room. One of the main reasons for choosing the colour is its ability to instantly add a warming energy to a room and good natural daylight and clever artificial lighting are both required to make it sing. In an easterly facing room, the morning sun will ensure the colour glows like the sunrise instantly creating a space you want to start the day. For a bedroom this would be wonderful. In the evening, ensure lighting can be dimmable to allow the colour to gently illuminate with a serene, warming glow, perfect to wind down at the end of the day. Although traditionally spring and autumn are the most popular times to sell a house, there is still plenty of opportunity when it comes to selling your home during the winter season. Savvy sellers are realising that listing a property at this time of year can mean there is less competition which in turn means their property is more visible to would-be buyers. As the evenings draw in and we wave goodbye to the long days of summer, it is even more important to make sure your property stands out. While you can’t control the sometimes inclement weather, there is plenty you can do to create a warm welcome for those viewing your home. If you are selling your home over the winter months, here are some tips for creating a cosy and inviting space.
A Fine First Impression First impressions really do count, so a fresh lick of paint on the front door will ensure your home catches the eye and appears welcoming from the start. Make sure your house number, or name, is foliage-free and easy to spot, and polish any brass door fixtures to perfection. A couple of oversized lanterns on either side of the door will illuminate the entrance and look enticing to visitors. If you have a driveway, make sure any wet or fallen leaves (which can be slippery as well as untidy) are swept away and any pots with plants in them are neat and tidy.
Ambience You will want to make sure your viewer has a warm welcome so you may want to switch the heating on ahead of viewings and, if you have one, light the fire for a golden glow. Switch on table and floor lamps which will soften any overhead lighting and create a relaxed mood. Scented candles or a diffuser will fill your home with soothing aromas. Tapping into multiple senses will also make sure your home is even more memorable.
Layer Up Layering different materials and fabrics will help create depth to your interiors, so you may want to layer up with throws, blankets and cushions in bedrooms and living rooms. More is more here, so opt for woven textiles, boucle materials and chunky knits draped over armchairs, sofas and window seats. If you have wooden flooring or tiles, add soft rugs for comfort and colour underfoot.

YOUR PROPERTY Set The Stage To help a potential buyer envisage the life they could live in your home, you may want to set the scene. To do this, imagine you have friends coming for supper and set the table for a feast with coloured candles and glassware to provide pops of colour. A bowl of shiny seasonal clementines will brighten up the room. If you’re limited on space, set up an inviting drinks trolley in the corner of the sitting room to create a similar convivial feel.
Don’t Forget The Garden While the garden won’t be in full bloom at this time of year, any serious potential buyers will want to step out as outside space is still top of many wish lists. On a dry day before any viewings take place, you may want to cut the grass and have a general tidy-up of any borders. It’s worth investing in a few winter flowering plants which will brighten the dullest of days and provide a heady scent or some beautiful berries - camellias, mahonia’s, poinsettias and winter heather will work wonders.
Last But Not Least As is the case with selling at any other time of the year, make sure your home is clean, decluttered and tidy, and finish off any odd jobs around the house that need doing. Tidy up paintwork and fix damp patches, superficial cracks or stains on ceilings or walls left by previous leaks. These quick tasks are usually inexpensive to remedy but can be off-putting on viewings if not fixed.

In the world of interior deign, colour can have a profound impact on how we experience and ‘feel’ our surroundings. As we step into the new year, Pantone, the world-leading authority on colour, have recently announced their ‘Colour of the Year 2024’ as ‘Peach Fuzz.’ Describing it as a colour radiating with warmth and modern elegance, Pantone have chosen wisely to capture the spirit of 2024. I started my career in interior design back in the 1980s when peach was a trend colour and it has taken me three decades to be ready for it again, but I’m here for it and will certainly be
incorporating it into interior schemes in the year ahead. Here’s a few ideas to use Peach Fuzz to best effect and why it’s such a good colour in the home. As a colour experience, Peach Fuzz exudes a sense of calm and tranquillity creating a soft and glowing ambience. Its versatility allows for a seamless integration into both classic and contemporary, minimalist interiors offering either a gentle, tonal look or creating a punch when combined with complementary colours. One of the key attributes of the colour is the easy transition through the seasons. As a Spring/Summer colour it will offer a fresh, light look but will equally create a necessary feeling of warmth in the Autumn and Winter. As a colour choice for decorating, this is good news! Similar tones in ready-mixed paint can be found in Little Greene’s ‘Conche’ and ‘Shrimp Pink,’ Lick ‘Orange 05 and Dulux ‘Sunblush Peach.’ To create a pastel scheme, combine with mint green or lavender, with sage green and terracotta for an earthy look, or with off-white or soft cool-beige for a muted, tonal interior. For a truly knock-it-out-of-the-park scheme, I would consider deep navy or emerald green as a complementary colour. YOUR INTERIOR a tired bathroom to life as readily as the main colour for a living area. Textural choices are a key decision to determine the end result. Combine with natural rattan and linen for a mediterranean vibe or with plush velvet for opulence. Cool metallics are a perfect counterpoint but I can also see rose gold metallics creating an interesting visual feast. If you bought into the boucle trend, and a great many of us did, Peach Fuzz as a wall colour will certainly elevate the look of a neutral boucle sofa bringing the room bang up to date. Add in a few peach accent items also to create balance around the room. One of the main reasons for choosing the colour is its ability to instantly add a warming energy to a room and good natural daylight and clever artificial lighting are both required to make it sing. In an easterly facing room, the morning sun will ensure the colour glows like the sunrise instantly creating a space you want to start the day. For a bedroom this would be wonderful. In the evening, ensure lighting can be dimmable to allow the colour to gently illuminate with a serene, warming glow, perfect to wind down at the end of the day.
