TRADITION — Port St. Lucie’s City Council decided to hold off on selling Tradition Studios to advertise the building a little longer through different channels in hopes of attracting more offers. The council held a special meeting last Friday to review five proposals and share their progress with the public after receiving multiple public records requests. Five bids were submitted, ranging from $8.5 million - $15 million. The studio’s appraised value is $12.7 million. Many had wondered if the site would be sold, marking a new

School set to start with some changes Brandon Zeris Staff writer

ST. LUCIE COUNTY — Some changes are underway and new programs are being implemented this school year as about 42,000 students get ready for a new school year starting Aug. 18. Parent should be ready to give
their sons or daughters an extra quarter each day for lunch. Students in grades six through 12 will now have to pay $2.50 lunch, as opposed to $2.25 last year. The schools have little control over the price, if they intend to keep their funding, county school board chairwoman Debbie Hawley said.
Students who wish to work in the food service industry will have a chance to get a leg up on the competition while in high school with a new partnership with Indian River State College. Students will be able to culinary classes and earn college credits at the college starting
“It’s another one of those legislative requirements,” she said. The school is required to set prices that match the amount the federal government chooses to reimburse schools for free lunches they provide to students. “We don’t want to raise prices, but we certainly don’t want to lose our funding,” Hawley said.

Centennial and Central work out the preseason kinks befor e o pening day Brandon Zeris Staff writer
bzeris@YourVoiceWeekly.com
ST. LUCIE WEST — St. Lucie West Centennial and Fort Pierce Central held two 7-on-7 games the past two weeks to get a taste of the upcoming season. Players lined up without pads and played touch football. Linemen, aside from the center to snap the ball, don’t participate in 7-on-7s. During last Wednesday’s contest, each team got off to a solid start. Central relied on lots of short slants and outs, letting their athletic receivers shake defenders in open space. Central scored on eight out of 11 possessions, while Centennial scored on four out of their 11 chances. Centennial scored on their first play with quarterback Javid Ellis tossing a perfect ball to Shawn Peterson for a 35-yard score. Central’s coverage got better as the game went on, though,
making it tough for Ellis to get a drive going. Central senior cornerback Courtney Mimms was impressive, shutting down his receiver nearly every play. “I never have to worry about him,” Central defensive coordinator Charlie Matthews said. “He runs a 4.39 (40-yard dash). We went on a camp tour, and he won fastest player in four out of eight.” Matthews is excited about his secondary and thinks it will be a strength. “Once we get pads on, no one’s got a chance,” he said. “That one over there,” he said, pointing to junior safety Bill Sauver, “he was a linebacker, and I moved him to safety. He’s a hitter.” After exchanging turnovers and scores, Central scored on four straight drives nearly all from series of short passes. That was until Central took a shot downfield. Jake Celidonio threw a 30-yard pass down the

Adopt-A-Class program hopes to increase opportunities for student success FOR YOUR VOICE NEWS & VIEWS
ST. LUCIE COUNTY — The St. Lucie Education Foundation is heavily promoting its Adopt-AClass program to increase opportunities for student success by providing teachers with the tools to educate our children. Classrooms may be adopted by individuals, organizations and businesses in the community. Adoption levels range from $25 to $200 and allow teachers to invest in bringing creative techniques and experiences to your students. Apart from providing financial support, they exhibit the community’s support for teachers and their efforts to best educate our students. Introduced in March 2013, the program was expanded in 2014 to include all teachers and instructional staff during the 2013-2014 school year. This
year will be the first full year of the Adopt-A-Class program. The foundation hopes for adoptions of as many of the 2,500 classrooms as possible. More about the St. Lucie Education Foundation: Established in 1990 as a nonprofit organization, the St. Lucie County Education Foundation was organized to provide direct support to the students and teachers through programs not supported by tax revenue. The foundation advances K-12 public education in St. Lucie County public schools by increasing the capacity and resources of the district through grants, student scholarships, facilitating project funding, and classroom adoptions. SCHOOL from page 1 this year. This year, the district will be looking to improve on the schools’ state report card grades that showed mostly average results county-wide. Hawley also said administrators have been working to find out what each school needs help with. “The plan is in place now. We’ve looked at each school individually and are doing everything we can to help our students,” she said. Information specific to each school, including locations, safe routes to school and bell times is at www.stlucie.k12.fl.us/school/ index.aspx The district’s website, www.stlucieschools.org, is the district’s hub for all important information. www.YourVoiceWeekly.com Bill Keenan pitches his vision for vacant Tradition Studios at the Aug. 1 special City Council meeting. Keenan submitted a bid for $12 million to lease it to Keiser University so it could consolidate its other two Port St. Lucie campuses into one, central Tradition location. Four other bids were submitted, ranging from $8.5 million to $15 million.

STUDIO from page 1 chapter since Digital Domain abandoned the city and left it paying off the $39.9 million loan it took out to help build the studio. The yearly payments have been about $3.4 million. The council opted for a more cautionary approach, however. Instead of simply awarding it the current highest bidder, which was initially submitted by James Hall for $15 million, the city will post the listing on its website and advertise it through Enterprise Florida and St. Lucie County’s Economic Development Council, City Manager Jeff Bremer said. The official process is called a request for proposal and could have been completed sooner, in hopes of avoiding the next debt payment of $2.5 million, but Bremer said it’s important to be cautious and not rush the process. “If it takes some time, it takes some time. We don’t want what happened last time happening again,” he said.
“We needed to get to this point. It tells me, based on desire, they are willing to pay more than the appraised value,” Bremer said, adding that the value could be driven up further as time goes on due to the representatives learning what the actual market value is based on the current bids. The Offers An attorney turned developer, Hall said he envisions Port St. Lucie as a city that will foster future growth and lead new industry growth. He did not have a specific plan for the building, but his $15 million cash offer was the most impressive initially, though. Councilman Ron Bowen took issue with Hall not having a set plan. “I’m not sure of your business techniques. It seems odd,” Bowen said. Bowen asked if Hall’s business plan “is all upstairs,” and Hall said it is. Hall said he has a major inter-

“I get concerned with anybody who associates with the former tenant. My concern is that it’s another black eye and will be a continuous one.” PSL Councilwoman Michele Berger est in digital animation, including holograms, like those former Digital Domain CEO John Textor worked on prior to his company’s downfall in Tradition. Assistant City Attorney Azlina Goldstein said Hall had not ruled out Textor being a potential tenant, which made some leery. “I get concerned with anybody who associates with the former tenant,” Councilwoman Michele Berger said, referring to Textor. “My concern is that it’s another black eye and will be a continuous one.” That was the leading offer until Mario Marsden, representing Encasa Entertainment, increased the company’s offer to $15 million at the meeting. Encasa’s offer was not put in writing, and council wanted to see a more formal proposal. Marsden said the Encasa executives are willing to do whatever it takes to get a deal done. They plan to use the building for a hotel and restaurant complex, paired with a center to hold boxing matches, car shows and ethnic festivals. The complex would create about 500 jobs, averaging a $35 per hour wage, Marsden said. The most complete proposal was submitted by Keenan Development for $12 million. The company would lease the site to Keiser University so they could move their campus along U.S. 1 and Golf and Sports Management campus to Tradition. The proposal would need some work to be financially competitive with the others, however. The closing date would be a year from the date a contract is signed, which means the city would continue making debt payments. Bremer said, after those payments are made, the net gain for
the city would be $7.6 million. Keenan Development President Bill Keenan said it would be possible to revisit the closing date. Bowen said it may be beneficial to consider the long-term impact rather than just looking at the sale price. If the deal didn’t go through, Keiser may have to look into other options outside the city for a new campus, once their leases end. “In addition to the money from it being sold, you would get something more,” Keenan said. The new campus would generate about $25 million annually, according to Keiser’s U.S. 1 Campus President Tom Creola, but that doesn’t account for lost revenue from abandoning the other two existing campuses. Two other companies are interested but did not attend the meeting. One unanimous company submitted a letter of interest to create the Center of the Arts at Tradition. The bid would be for $12.7 million. The center would have two theaters and an outdoor amphitheater. It would also have classrooms, galleries and banquet rooms, according to the letter. The final proposal was for a call center with a bid for $8.5 million. Some council members preferred the Keiser route, despite the financials. “The council’s vision was always to bring a university,” Mayor JoAnn Faiella said. It’s not all about the money, Bowen said. “(With Keiser), we’re getting predictability. We know what we’re getting. Mr. Hall’s is more money, but it’s theory. The council will wait it out, however, and hope for a better offer to be made.

Cannon hopes to unseat Negron in Republican primary Patrick McCallister Staff writer

TREASURE COAST — Brandon Cannon is an upstart political figure. He’s never held an elected or appointed office. Nevertheless, he hopes for a Republican primary Cinderella story in the State Senate District 32 race. That’ll require taking down incumbent Sen. Joe Negron, a longtime veteran of state politics who holds influential positions, such as the chair of the Florida Senate’s appropriations committee. “In my head, it’s pretty simple: I’m not happy with the way things are,” Cannon said. “My family and friends aren’t happy with the way things are. The people I’m meeting on the street are not happy with the way things are. To me, it comes down to this — we have all these problems that go on year after year, and (the same) people who go into office year

Duplexes to be built in Tradition Brandon Zeris Staff writer
bzeris@YourVoiceWeekly.com
TRADITION — Duplexes are going to be built in Tradition, and, to many residents’ dismay, there’s nothing they can do about it. The developers are trying to ease the situation, however. The first phase of housing construction in the Town Park area brought a community full of single-family homes, but some residents have been upset because the community they were originally drawn to is going to change a bit. Much of the fear surrounds the potential for 55-plus communities, which Minto Communities, the development firm, spokesman Don Hearing said is likely follow in the next six months or so.
Frank Carapazza has been one of the most outspoken community members, saying that home values are going to decline if the communities are built. “Many are not opposed to the villas, but expect a higher starting price to help protect the residents that purchased during the height of the market in 2006,” Carapazza said in a letter to city council. “Owners of larger two story homes or estate homes are concerned their home values will again decrease. Many home owners have stuck through the recent housing crisis and are trying to recoup some of the value they have already lost. “It’s also apparent they will not be able to break even for years,” he said. Hearing assured residents that duplexes wouldn’t be built by the existing single-family homes, which
should help property values. Hearing also said Minto wants to work with the residents and added some provisions to the agreement city council approved last Monday. One of them will free up traffic near the first wave of home construction. The old construction crew entrance will be removed and built on a more westward site. Wild boars have also been a problem, running about in the soon-to-be duplex land, so Hearing said they will clear them out. Another requirement makes it so the developers have hold meetings with residents to inform them of future development plans, hopefully so residents and developers can work everything out. “Communication is the best thing to solve all problems,” Hearing said.

CANNON from page 7 Treasure Coast in 2006. Some remember Cannon for his staunch efforts against H.B. 155 in 2013. The Florida Legislature overwhelmingly approved and, Gov. Rick Scott signed the bill that tightly regulated gaming arcades that operated under what many considered to be loopholes the state’s sweepstakes laws. Supporters saw the arcades as harmless entertainment, particularly popular with retirees. Opponents as neighborhood casinos attracting undesirable activities. Cannon’s family was in the business. Negron voted for the bill. At a recent candidate forum sponsored by the local League of Women Voters and American Association of University Women, Cannon and other candidates were asked about whether they’d support allowing more casinos in the state. “I believe if the Seminoles can do it, residents of the state should be able to do it,” he answered. The Seminole Tribe of Florida, based in Hollywood, is a sovereign government with reservations that have to maintain municipal services, such as police. More than 90 percent of the tribe’s income is from various gambling operations. The tribe’s gambling operations are regulated by the Indian Gaming Regula-

“I think we need to engage more people into the political process. Every aspect of life is touched some way by government. I think the focus should be showing who the people in Tallahassee are and what they do.” Brandon Cannon tory Act and agreements with the state. Cannon — who’s not related to former Speaker of the House Dean Cannon — said the most pressing issue in the 32 District is increasing constituent involvement. “It’s more what we can do in the district,” he said. “I think we need to engage more people into the political process. Every aspect of life is touched some way by government. I think the focus should be showing who the people in Tallahassee are and what they do.” Among measurable issues facing the district, Cannon said the quality of local waterways is the most pressing concern. That has gotten much attention by the Florida Senate recently after there was a widespread public outcry against releases of large amounts of water from Lake Okeechobee into canals that ultimately flowed to the St. Lucie and Indian rivers. The senate’s Select Committee on Indian River Lagoon and Lake Okeechobee put forth an am-
Reich
bitious wish list for Everglades restoration and water-cleaning efforts with a $220 million price tag spread over three years. Instead it got about $232 million, about $12 million more than requested, out of a $77.1 billion budget the Florida Legislature approved this last session. Cannon pointed to that as an example of why more constituent involvement is needed on many concerns. “The issue we’re having with our water has been going on for a century,” he said. “It shouldn’t have taken last year’s uprising to get this going. We shouldn’t have to wait this long. We shouldn’t have to wait until we have thousands rallying at the locks to get this action.” Cannon said another issue facing the district is the Common Core State Standards, adopted in 2010. So far 43 states, including Florida, have adopted the education standards. Critics maintain that the standards and approaches to teaching them are detrimen-
tal to children’s learning. “The first thing is completely taking Common Core out of the state,” Cannon said. “Follow that by returning more control back to the local school board.” District 32 covers the eastern halves of St. Lucie and Martin counties, along with a northeast section of Palm Beach, and southeast part of Indian River counties. Cannon and Negron are the only Republicans vying to face Democrat Bruno Moore in the general election. The primary election will be on Aug. 26. Early voting will be from Aug. 16-23. The general election will be on Nov. 4. Early voting will be from Oct. 20 to Nov. 1. More about Cannon is at www. cannoncampaign.com. The campaign’s phone number is (561) 667-3497.

newspapers, too. Moore said that, while he’s covered government during his reporting career, it never was a great love of his. “Politics to me was stuffy and mundane,” he said. “Cerebral.” Moore said in 2008 then presidential candidate Barack Obama inspired him to believe there can be a hopeful future for everybody. That got him interested in policy and government. “I started watching politics like a lot of people watch sports,” Moore said. “I call politics my sport of choice.” In 2012 Moore worked locally on Obama’s campaign. Moore said that helped him see the majority of Republicans and Democrats share many things in common. One of them is most struggle to make ends meet. “I’ve been fortunate to have jobs that paid very well,” Moore said. “I’ve also faced difficult times working part-time for minimum wage. I was a waiter at Red Lobster a couple years ago. I’ve had to reach out and collect unemployment to help my family get by. I understand what my constituency is going through from that angle.” Moore said that the most im-
portant concern facing the 32 District is the quality of area waters. “You’re going to hear from every candidate out there: water, water, water, he said, “And it’s an important issue. But we’ve got to do something with our blighted neighborhoods.” Moore said that he’s still researching existing efforts to help vitalize blighted neighborhoods, such as the state’s Community Redevelopment Areas, to understand how to augment what’s already being done. “There’s a lot of resources in the blighted communities we need to take a better look at,” he said. The 42-year-old lives in Port St. Lucie with his wife, Mollie, and their 2-year-old son. He said that he doesn’t have all the answers to every concern facing the district. Neither does any other candidate, Moore said. He said that realization will keep him listening. District 32 covers the eastern halves of St. Lucie and Martin counties, along with a northeast section of Palm Beach, and southeast part of Indian River counties. More about Moore is at www. brunoforsenate.com. The campaign phone number is (561) 255-3668.

Joe Negron aims to hold Senate seat
We Will Design A Full And Complete Travel Plan For You. A Party Of 1,2, Or 200+. Where To Go? How To Go? Where To Stay? Who And When To Tip, Or To Not Tip At All.
Patrick McCallister Staff writer

TREAUSRUE COAST — State Senator Joe Negron hopes voters will give him another term in the District 32 seat. “There’s still some more I want to accomplish,” he said. Negron has a Republican primary challenger, Brandon Cannon (no relation to former Speaker of the House Dean Cannon). If he wins the primary, he’ll face Democrat Bruno Moore in the general election. Negron is well established in state politics. The West Palm Beach native was elected to the Florida House of Representatives in 2000. He represented the 82 District until 2006. MaryLynn Magar now represents that House district. Negron headed to the Florida Senate in 2009 after a special election in the 28 District, which at the time included eastern Indian River and Martin counties, along with the southern end of St. Lucie and northern side of Palm Beach counties. Reapportionment after the 2010 census put Negron into the 32 District. He won an election for that seat in 2012. The 52-year-old has consistently campaigned primarily on protecting area waters. He tapped last year’s large public outcry against Army Corps of Engineers’ releases of nutrient-rich waters from Lake Okeechobee into canals that fed into the St. Lucie and Indian rivers. Negron chaired the Florida Senate Select Committee on Indian River Lagoon and Lake Okeechobee. The committee put forth an ambitious project wish list with a $220 million price tag spread over three years. Instead it got about $232 million out of a $77.1 billion budget the Florida Legislature approved this session. “There’s more to be done, but we’ve made significant progress sending the water south,” Negron said. The Stuart resident said area water quality remains the most important issue facing the 32 District. He said the second most important issue is carefully fostering the state and local economic recoveries. He said the most important part of that is taking a page from Ronald Reagan’s book — keep government from meddling too much. “While there’s still suffering in our community, we’re making a comeback,” he said. “The Senate can do no harm, first of all,

Senator Joe Negron and not take any steps that slow down the recovery.” During Negron’s time in the Senate, the state’s unemployment peaked in March 2010. That month the state was at 12.3 percent seasonally adjusted unemployment rate. The state’s seasonally adjusted unemployment rate in June was 6.2 percent, according to Department of Economic Opportunity. Negon chaired the Senate’s powerful appropriations committee last session. He used that position to reduce some state vehicle-related fees by about $400 million a year. “That’s a good way to give broad tax relief to the citizens, because we don’t have an income tax,” Negron said. If elected, Negron will not qualify to run again in 2018. Florida senators may serve only two contiguous terms. He’s married to Martin County School Board member Rebecca Negron. They have three children. Negron counted among his accomplishments in the last legislative session raising the monthly personal care allowance Medicaid recipients in nursing homes receive. “The average resident is an 85-year-old woman,” he said. “They were getting $35 a month for haircuts and things like that. We increased that this session to $105.” District 32 covers the eastern halves of St. Lucie and Martin counties, along with a northeast section of Palm Beach, and southeast part of Indian River counties. The primary election will be on Aug. 26. Early voting will be from Aug. 16-23. The general election will be on Nov. 4. Early voting will be from Oct. 20 to Nov. 1. More information is at www. joenegron.com. The campaign phone number is (772) 678-6868.

Health officials confirm case of chikungunya fever FOR YOUR VOICE NEWS & VIEWS
ST. LUCIE COUNTY — The Florida Department of Health in St Lucie County last week confirmed a case of locally-acquired chikungunya (\chik-en-gun-ye) fever, a disease spread by bites from infected mosquitoes. If a person is infected and bitten by a mosquito, that mosquito may later spread the infection by biting another person. The county’s first locally acquired case was an adult who lives in a residential area north of Dan McCarty School in Fort Pierce. The individual did not require hospitalization and is recovering. St. Lucie County Mosquito Control began aggressive efforts in the surrounding neighborhood on Monday morning. Mosquito Control and the health department work closely to protect the public’s health from mosquito-borne diseases especially when a suspect case is identified. Symptoms of chikungunya include sudden onset of high fever (over 102 degrees Fahrenheit), severe joint pain mainly in the arms and legs, headache, muscle pain, back pain and rash. Symptoms appear on average three to seven days after being bitten by an infected mosquito. Most patients feel better after a few days or weeks, however, some people may develop long-term effects. Complications are more common in infants younger than a year old; those older than 65; and people with chronic medical conditions, such as diabetes and hypertension. If you experience symptoms of chikungunya fever, consult with your health care provider immediately and protect yourself against further mosquito bites. Avoiding mosquito bites while you are sick will help to protect others from getting infected. “Avoiding mosquito bites is the key to preventing infection with chikungunya and other mosquito-borne diseases,” said Larry Lee, St Lucie County Health officer. “Floridians and visitors are encouraged to take precautionary measures to help reduce the chance of being bitten. Remem-
ber to drain and cover.” Drain standing water to stop mosquitoes from multiplying. • Drain water from garbage cans, house gutters, buckets, pool covers, coolers, toys, flower pots or any other containers where sprinkler or rain water has collected. • Discard old tires, drums, bottles, cans, pots and pans, broken appliances and other items that aren’t being used. • Empty and clean birdbaths and pet’s water bowls at least once or twice a week. • Protect boats and vehicles from rain with tarps that don’t accumulate water. • Maintain swimming pools in good condition and appropriately chlorinated. Empty plastic swimming pools when not in use. Cover skin with clothing or repellent. • Wear shoes, socks, long pants and long sleeves. • Apply mosquito repellent to bare skin and clothing. • Always use repellents according to the label. Repellents with DEET, picaridin, oil of lemon eucalyptus and IR3535 are effective. Cover doors and windows with screens to keep mosquitoes out. • Keep mosquitoes out of your house. Repair broken screens on windows, doors, porches, and patios. FOOTBALL from page 3 middle of the field to Nahari Crawford. Celidonio threw it about 15 yards and Crawford ran straight down the field the rest of the way. Central is returning three of their top wide receivers from last year in Crawford, Mike McInnis and Sha-mar Pierre. “We’ll take our shots downfield with them. It just depends on our game plan,” Shaffer said. “Consistent QB play is going to be important to spread the ball around and get it to those guys.” Celidonio was accurate, de-
livering the ball to his athletic receivers and letting them run free. The strategy worked, for the most part, aside from one interception and a few missed reads, much like the first game when Central scored on 10 out of their 11 possessions. “I think we’ve got (consistent quarterback) play now. He’s good in the pocket,” Shaffer said. Ellis then threw a ball into the back left corner of the end zone to wide receiver Jon Magloire, who is also one of team’s starting cornerbacks. Centennial couldn’t get anything going the next two drives, with the first ending on a turn-
over on downs and the next being an interception off a deflection to Central defensive tackle Will Davis, who had dropped to linebacker for the play. Their biggest offensive struggle during each scrimmage was drops, which frustrated Offensive Coordinator Stu Rogers. “You can’t drop the ball 15 times and expect to succeed,” he said. “However, we made some good plays and did some things well. These kids can succeed. They have to believe that.” Centennial finished with a 15yard pass from Ellis to Bradshaw and another turnover on downs. Central’s defense just didn’t
allow the Centennial receivers to get any separation. It was a good showing for Central, moving forward into camp, Shaffer said. “I loved it … we just need to keep getting better.” Parker said Centennial improved from the games, and the players did a better job at picking up their assignments on defense. “The effort was good. We got outmatched, and you saw (Central’s) athleticism,” he said. “But, we’re going to be physical. That’s something we always try to be. We’ll just have to see what happens when we put the pads on.”

With new technology and techniques, the limb salvage team at Martin Health has a reputation for saving legs with remarkable success. Thanks to the leadership of Dr. Julio Sanguily III, general and vascular surgeon, older adults with diabetes and arterial disease on the Treasure Coast now have a good alternative to amputation. “Advancements in technology allow surgeries that were unimaginable 10 to 15 years ago,” Sanguily said. “We’ve been able to re-establish circulation in extremities that were once routinely amputated.” An estimated 150,000 Americans lose their limbs annually, primarily due to diabetes and arterial disease. “Fifty percent of patients who have an amputation will never walk again, and half of them will die within 18 months,” Sanguily said. “It also costs more to amputate a leg than to prevent it. Amputations cost the U.S. $10.6 million a year. It just doesn’t make sense when you have better options.” Peripheral arterial disease occurs when plaque builds up in arteries that carry blood to the limbs. When that plaque becomes calcified, it cuts off blood flow which can lead to pain, numbness, increased chance of infection and tissue death. Smoking, diabetes, age and heart disease are all risk factors for developing peripheral arterial disease. Sanguily and his team have a 90 percent success rate with patients who have a salvageable situation. They have undergone specialized training and use state-of-the-art technology that allows them to open blood vessels below the knee that are difficult to access. As a result, limbs pre-

Major amputations should never be considered a conservative treatment for this disease.” Sanguily finds the work immensely rewarding. “When you save a limb, you save a life,” he said. “We are making a real difference for patients here in southern Florida.” For more information on Martin Health’s limb salvage program, call (772) 221-2003.

Sanguily is currently the only surgeon in the tri-county area who is using this device. They are also training other physicians who then bring back these innovative techniques to their own hospitals. In the five years since he started the limb salvage program at Martin Health, Sanguily has trained more than 60 physicians. Some have come from as far away as California. Depending on the severity of the case, some patients can arrive for surgery in the morning

Tutto Fresco: It’s like going to Italy without the airfare Brandon Zeris Staff writer
bzeris@YourVoiceWeekly.com
ST. LUCIE WEST — Like most nights at a new restaurant, I began my evening at Tutto Fresco with the usual — about 10 minutes worth of indecisiveness, followed by asking the waiter for a recommendation. Our server, Gregorio, said the chef’s choice was in order. My guest and I told him what we liked — mostly everything — and what we didn’t like – clams, mussels, not much else. He asked us if there was anything we definitely wanted to see. I told him fish would be nice. I had been fishing a lot recently with little luck and wanted to enjoy someone else’s hard work in reeling one in. Gregorio took our requests to Head Chef Pasquale Lamarra and he got to work. In the meantime, we sipped on wine and snacked on garlic rolls, topped with freshly-grated asiago cheese and olive oil. I had a Pine Ridge chenin blanc, per our server’s recommendation, of course, and my guest had a glass of a Kendall-Jackson Chardonnay, to be paired with our first course — the
big surprise. Each time I saw Gregorio enter the dining area without two plates, I became more curious. After about 15 minutes, he arrived, wielding two plates, held high enough where I couldn’t see them. My guest, Justin, was tall enough, however. “Those are lobster tails,” he said in excitement. “You were just saying the other day how you wanted lobster,” he pointed out to me. Gregorio called it lobster oregonata. It was bright red cold-water lobster tail from Maine coated in bread crumbs, on top of a serving on green beans with cherry tomatoes on the side. The lobster was tender and the bread crumbs added a nice crunch. The cherry tomatoes were a pleasant surprise. Lamarra’s secret is that he marinates them in garlic, butter and a white wine reduction. I made quick work of my plate, and a kind waitress named Tina was quick to take my plate and refill my water, just after changing the tablecloth at another table. Next up was spaghetti puttanes-

Staff photo by Brandon Zeris The second course at our Tutto Fresco chef’s choice was spaghetti puttanesca, a traditional pasta dish with plum tomatoes, olives and garlic. Our server topped it with fresh asiago cheese and cracked pepper.
DINING from page 29 ca, a linguine with extra virgin olive oil, plum tomatoes, olives, garlic and an anchovy puree. For a second, I had regretted not mentioning I had no interest in anything anchovy. It didn’t matter; the pasta was delicious. The saltiness from the olives may be a bit much for some, but I enjoyed it. The pasta was cooked perfectly, too. It had a nice bite, but wasn’t quite al dente. For our next round of wine, Gregorio brought us each a glass of Pinot Grigio. I had thought maybe that fish would flop onto my plate,
soon. It did. After a few minutes of listening to the classic Italian music, two red snapper filets had arrived. “We’re going simple here,” Gregorio said. “We have red snapper, seared in olive oil with capers, garlic and olive oil on top.” The fish was flaky and the capers were an excellent addition. I was running out of room, but someone had to eat the seared filet mignon that was soon placed in front of me. It was served with a side of spinach and red potatoes with a red wine sauce. In the center of the plate was some toasted gorgonzola cheese,
which was one of my favorite items. Afterwards the chef and the owner, Joey Gambina, made their rounds to all the guests and invited everyone out to the patio for music, dancing and drinks. First, I wanted to ask to find out where Lamarra went to culinary school. He said he hadn’t and learned everything he knew from firsthand experience in a kitchen. “When I say I was born in a kitchen, I really mean it,” Lamarra says. “I got to experiment working in a lot of restaurants.” The chef’s choice is great if you don’t know what to order. Give you’re server a price you’re willing
to spend, and he’ll take it from there. The minimum is “about $50,” Lamarra says. “The sky is the limit.” To conclude the night, most from the dining area and Lamarra and Gambina joined the party outside. Larry Johnson and the Girls played music and people danced as the night went on. Even the wait staff was getting into the beats. The man behind the excellent steaks and pasta took it easy for a bit, too, after hours of cooking excellent meals. “It’s tough. We get into the restaurant business and work hard because it makes the scotch taste a little better at the end of the night.”
Staff photo by Brandon Zeris Our server, Gregorio, started my guest and I with two lobster oregonatas – Maine lobster tails, covered in bread crumbs with green beans and cherry tomatoes on the side.
