VA gives first nod to Culinary skills at school $25 million for Copas home Patrick McCallister STAFF WRITER

TRADITION — It’s an early and conditional nod, but a valuable and promising nod nonetheless. The federal Department of Veterans Affairs recently released a list of proposed and existing state veterans nursing facilities in line for construction and renovation grants in 2016. The proposed Ardie R. Copas State Veterans’ Nursing Home was number 11 on the list and in line for up to $25 million from the VA. “This latest action once again reminds us of the number of partners who are working hard to complete this project,” Mayor Greg Oravec said in an emailed response to queries. “We can’t wait until the doors open and veterans have another place to call ‘home’ in Port St. Lucie.” The VA’s decision follows Gov.

Rick Scott’s recent request for the State Legislature to put about $6.7 million during the state’s next fiscal year toward building the home. The federal VA’s state veterans home program funds up to 65 percent for construction of new homes. The states receiving the construction grants must fund the remainders. The Copas Home is projected to be almost a $40 million construction project, and will take about two years to build once started. Groundbreaking could be next fall. Steve Murray, communications director at the Florida Department of Veterans Affairs — a state department not associated with the federal VA — said there’s much that has to go right before those federal dollars head to Tradition to build the home. TRADITION — The Port St. Lucie City Council was happy to give Keiser University the last thumbs up needed for a site plan. “This is an opportunity to say, “Yee-haw,’” Councilwoman Michelle Berger said. At its regular meeting on Mon-

day, Dec. 7, the council approved Tradition Land Company’s final site plan for a 74,000-square-foot building on eight acres nestled between Village Parkway and Interstate 95 south of Discovery Way. That’ll be home to Keiser University’s Tradition campus. Patricia Tobin, the city’s director of planning and zoning, said in a phone interview after the meeting that the only hurdles left for Keis-

er University’s Tradition campus are “staff level reviews.” “We’ve had it in since, probably, April, May,” Tobin said. “A lot of things had to happen.” Jeff Bremer, city manager, told the council the new campus will bring with it numerous bonuses. “That’s a big improvement for us,” he said. “It’s a big opportunity to see some development on the western side (of the city).”

Mayor Greg Oravec chimed into the festive spirit at the meeting. “This is another positive in what is now a string of positives,” he said. Tradition was the site of two spectacular economic-development failures: the Vaccine & Gene Therapy Institute of Florida and Digital Domain. Both were

ST. LUCIE WEST — Lindsey Parent looks like a soccer player. She’s lithe, tall and a dominating force on Centennial High School’s soccer team. While there are many excellent players, Lindsey’s edge sets her apart from many. That edge to the competitive team she plays for as well — Boca United in the ECNL, Elite Club National League Division. She plays outside midfield. Of course, she’s doing all the things a great student athlete is expected to do. She’s balancing a social life with school and athletics and she’s looking ahead to college. Lindsey will be graduating in May 2016 with a 3.6 GPA. Then she’ll be heading to DeLand to wear a cowboy hat with those soccer cleats. Stetson University has offered her a slot on the Lady Hatters. Yes, the school was named after John. B. Stetson, of Stetson Hats fame. Lindsey was named Centennial High School’s “Best Offensive Player” in 2012, and the team MVP in 2014. Currently she’s team captain with 18 goals in 8 games. Lindsey’s mother says it’s been a long time coming. “She started at 4 years old playing recre-

Tradition wins landscaping award FOR YOUR VOICE NEWS & VIEWS

ST. LUCIE WEST — Though at times the inflow of new residents and the building of new homes may increase or decrease at the Town of Tradition, one constant has been the beauty of the community. Over the years, the landscaping has included 3 million square feet of turf, more than 400,000 square feet of ornamental beds, 2,500 native trees, 1,500 palms and 4,000 annual flowers. The flowers are selected to complement the trees and shrubs. Recently all that effort to maintain that beauty received recognition. Tradition received the Landscape Award of Excellence from the National Association of Landscape Professionals. Joseph Barnes, marketing manager for Yellowstone Landscape, said that the company submitted Tradition for the award. Factors in submitting it included the quality of the landscaping, the trees and shrubs and the scales of the projects. Yellowstone does the landscap-

ing for the Town of Tradition. Barnes said that at Tradition employees do mowing, hedging and maintain irrigation as part of the landscaping job. Barnes said the good working relationship between Yellowstone, the property management and local government has helped lead to good landscaping. What’s impressive about the award, he said, is that the competition for it is national and that only limited numbers of properties can be submitted each year. John Gallagher, president of the Tradition Community Association, said that good landscaping is important not only for keeping an area beautiful. But, he said, it also keeps a community vibrant. It is “very important to the continued growth of the community,” he said. “It’s a very good thing.” When people visit Tradition and look at it as a possible location for a new home, its attractiveness encourages them to make a positive decision, Gallagher said. “We were very pleased,” he said about the award. “It’s in recognition of a lot of hard work to keep the community at its absolute best.” Jane Rowley, a former Port St.

state has 180 days to complete an ongoing design approval process with the VA it started about this time last year. “We’re in the process of dotting i’s and crossing t’s,” Murray said in a phone interview. He added, “What we have to do for the next 180 days is continue to work with the VA.” Despite the many ifs involved, Congressman Patrick Murphy said in a press release that the proposed veterans home making the VA’s list is noteworthy progress. “Even though we have more to do until this center is up and running, this marks an important step towards providing veterans of the Treasure Coast and surrounding areas the health care, follow-up assistance, and long-term care services that they deserve,” Murphy said in the release. Erin M. Hale, the Congressman’s communications director, said in an emailed response to queries that the 180 days are a make-orbreak time for the proposed facility. “If the project requirements are not met within 180 days, the project will be ineligible for a final grant award,” Hale said in the email. Murray said there are runner ups on the federal list that includes more than 100 proposed construction and renovation proj-

800 MHZ radio system will bring the county’s aging system up to current standards and provide support to first responders and public safety agencies. The Motorola radio system will be upgraded throughout the 15-year agreement in order to keep the system current throughout the term. The existing radio system is 17 years old and is used by all law enforcement, fire-rescue and government agencies within St. Lucie County. Because of the age of the system, many of the hardware manufacturers no longer exist. St. Lucie County is partnering with Martin County on the system upgrades to take advantage of sharing radio towers and reducing costs (estimated to be more than $4 million overall). County Commissioners agreed to a phased upgrade of the current system instead of purchasing a new system. The county’s consultants identified more than $3 million worth of existing radios that would need be replaced if an entirely new system were to be purchased. “Cities and counties have boundaries, but bad guys don’t,” said Commission Vice Chair Chris Dzadovsky who made the motion to approve the agenda item during the meeting, adding

Chris Dzadovsky that this upgrade creates a “great partnership” to improve public safety across the region. On a separate item, the Board approved more than $3.2 million in security upgrades at the St. Lucie County Jail. These new improvements will bring the jail into compliance with state of the art technologies including video surveillance and electronic security controls that will improve the ability of the Sheriff’s staff to provide a safe and secure environment at the Rock Road facility.

ST. LUCIE WEST — Chanukah is known as the Festival of Lights and at Temple Beth El Israel this was certainly true as more than 160 attended a Chanukah dinner and service on Friday, Dec. 11. Chanukah is an eight-day festival beginning at sundown on the 25th day of the Jewish month of Kislev, which corresponded to Dec. 6 this year. Chanukah celebrates the successful revolt of the Maccabees against the Greek King Antiochus who destroyed the Second Temple in Jerusalem and outlawed Judaism in 165 B.C.E. The Temple was restored and rededicated. Searching for olive oil to re-light the candelabrum, a flask was found with only enough oil to burn for one day. A miracle occurred when the oil lasted for eight days. A festival was declared to commemorate this miracle. One tradition associated with this holiday is eating fried foods. Latkes, which are potato pancakes, were served, along with sour cream and applesauce. Members brought their menorahs, also called hanukiah, and placed it on one of two tables set up at the front of the sanctuary. Hanukiah are nine-branched menorahs. One candle called the shamash is used to light the other candles, starting with one on

the first night of Chanukah and progressing to eight candles on the final night. Some menorahs that members brought were traditional in design. Others were more modern and featured Disney characters, motor vehicles, or sports themes. One element all hanukiah have in common is that the holder for the shamash is higher than the other candles. At the service the lights in the sanctuary were turned off as Rabbi Bruce Benson called the members to come up and light their menorahs. It was truly a magical moment. LUCIE COUNTY — St. Lucie Public Schools is partnering with Grace Packs Organization to fill donation boxes to the brim with nonperishable food items such as peanut butter, oatmeal, cereal, canned goods, and more. These food items contribute to help meet an essential need of many students and their families in St. Lucie County who are food insecure which means they do not know where their next meal is coming from. “Our food drive campaign in December provides a boost for the Organization’s ability to support students; however, the need to meet the basic nutritional requirements of our students stretches beyond the ‘giving season.’ Student hunger hampers student learning. We want to remove barriers to help our stu-

dents succeed, and Grace Packs helps us do that,” said Superintendent E. Wayne Gent. Grace Packs is a nonprofit organization that provides students and their families with weekend food source packages. The need is great as a recent Child Food Insecurity study shows that one in four students in St. Lucie County suffer from hunger. The program began in 2011 at Oak Hammock K – 8 School with over 600 Grace Packs distributed. The following year, the program expanded and more than doubled its distribution benefit. Today, Grace Packs Organization serves students and their families in many schools throughout St. Lucie County during the course of the year. The VA’s announcement came the same week Port St. Lucie and the Vaccine & Gene Therapy Institute of Florida headed to a hearing to present a judge with an agreement in ongoing legal wrangling over the biotech firm’s closure. The city was VGTI’s largest creditor. Port St. Lucie borrowed almost $65 million to build VGTI’s Tradition facilities. Additionally the city famously lost about $60 million in economic-development hopes when Digital Domain shuttered Tradition Studies in 2012. The city sold the building to Christ Fellowship for $13 million earlier this year. But during a dark time of failed or failing economic-development projects in Tradition, the state started looking for a place to build its seventh veterans nursing home in early 2013. St. Lucie County was one of eight proposed locations a site-selection committee visited during the summer of 2014. The Tradition

Land Company donated about 28 acres to St. Lucie County to bolster its bid to get the next home. Tradition was picked for the state’s next, and seventh, veterans nursing home after a contentious selection process. Other counties challenged the site-selection committee’s decision. The state veterans department, nevertheless, recommended Tradition to the Florida Cabinet, which approved the location. There’s a reason for the competitions surrounding state veterans nursing homes. Murray said when running the Copas Home will employ about 190 and add about $7 million a year in wages to Port St. Lucie, along with another $5 million in locally-purchased products and services. It’ll have private rooms for 120 to 128 veterans. Murray said all the state homes stay at capacity. Wayne Teegardin, St. Lucie County’s veterans services manager, said the home will generate additional economic activity to St. Lucie West and Tradition. “I think the community realizes there’s going to be an economic impact, a positive economic impact,” he said. “It should be a draw for people coming in to visit their veterans. There’s going to be impacts spread around for goods and services.”

PACE financing is not currently available for homeowners, but SELF offers small micro-loans for similar home improvement projects, and to date, has financed more than $4 million in 7 counties throughout the Sunshine State. As background, the Florida Legislature unanimously passed PACE enabling legislation in 2009, and Leon and St. Lucie Counties were the first two local governments respectively to optin and develop their own local PACE programs. Dozens of local governments in Florida have since developed, or are beginning to develop, comparable programs, and some states, such as California, have already exceeded a billion dollars of PACE projects. Counties and cities play a vital role in facilitating the state-prescribed PACE program at the local level through the tax assessment and collection process but no taxpayer money is put at risk for these loans. SLC Boys & Girls Clubs names new executive director FOR YOUR VOICE NEWS & VIEWS

ST. LUCIE COUNTY — The Boys & Girls Clubs of St. Lucie County has removed the Interim and named William Armstead Executive Director. He will be responsible for the day-to-day operation of the local nonprofit organization. The Selection Committee completed a nationwide search and reviewed over 50 resumes. They narrowed the list down to the top eight candidates before selecting the three finalists. After the review process was completed, the Selection Committee determined that Interim Executive Director Will Armstead was the best candidate to further our mission and continue our work serving the youth of St. Lucie County, especially those that need us most. Armstead served as a Board Member and President with the Boys & Girls Clubs of St. Lucie County, before accepting the role of Interim Executive Director. He has served in that role for the past four months. “We are extremely pleased with Will’s leadership,” stated Nate Spera, Board President. “He has done a great job working with staff, community leaders and meeting people in our community.” Armstead has over 15 years of extensive executive experience with large cross functional operations in multiple states with the second largest contract services management company in the country. ational soccer in Connecticut,” she said. “We moved here when she was 6 and the head of coaching asked us if she would be interested in playing when she was 7.” But it hasn’t been an easy journey. Lindsey says soccer has been her life and it’s been a learning process to warm up to that idea. “When my friends went out, I wouldn’t be able to go out,” Lindsey said. “I really didn’t do anything but play soccer but my friends in college are going to be the team. So whatever they do, we’ll be able to do together.” Her family has had to make the same sort of sacrifices. It’s worth it, her mother says. It’s tough, but it’s worth it. “It’s not only physically demanding, it’s financially demanding. You get to a point where all you do is travel. The friends that you make are parents from other teams.” Wendy’s husband works overtime to afford trips and equipment and Wendy plays the role of Soccer Mom, literally. That, she says, extends beyond just a mini-van full of kids and soccer equipment. “One team she played on, I played the role of team manag-

er. She’s played with some really amazing girls.” Lindsey’s soccer stardom, however, almost stopped before it even started. During middle school, as Lindsey’s parents were encouraging her to try out for a competitive team in Boca, Lindsey had other plans. “For starters, she didn’t even want to try out,” her mom said. “She didn’t make the cut the first year and she kind of regressed a little.” But her competitive coach convinced her to try out the following year and Lindsey agreed under the caveat that if she wasn’t selected this time there’d be no more pressure. Out of 200 girls, 30 made the cut. One was Lindsey. Looking back, Lindsey sees how the hard work has worked in her favor. “It definitely has paid off. It’s a lot of dedication and I really don’t do anything but play soccer. I’m not going to regret it.” Stetson is offering her a 90 percent ride and she’s been on their radar since her sophomore year. In February 2016, she inks the deal. In August, she moves away to college. “When they started talking to me, it’s like ‘all my work is getting me somewhere’. It felt really good,” she said.

St. Lucie County and the non-profit SELF organization have collaborated for several years to create and customize the local PACE program. SELF also helped secure the PACE capital provider from Chicago and administers the program for the county. ST. LUCIE COUNTY — John Kaminsky, arrested Dec. 11 afternoon on fugitive warrants from New Jersey, now faces drug and explosives charges, according to St. Lucie County Sheriff Ken J. Mascara. “Thursday afternoon, the U.S. Marshals task force, including members of the St. Lucie County Sheriff’s Office, arrested Kaminsky, 30, at 398 S.W. Duval Ave., Port St. Lucie,” Sheriff Mascara said. “He is wanted in New Jersey for failing to appear in court on a charge of assault using an auto and another charged of failing to pay child support. He is being held without bond at the St. Lucie County jail until he can be extradited to New Jersey.” The Sheriff said when the task force arrested Kaminsky, they found marijuana at the home where he was living. He is now charged with possessing more than 20 grams of marijuana and possession of drug equipment. In addition, Kaminsky told investigators that he had explosive

materials in the home which he uses to make fireworks. Nearby homes were evacuated and traffic in the 300 block of John Kaminsky Duval Avenue was closed to traffic for five hours Thursday afternoon and early evening while members of the St. Lucie County Sheriff’s bomb squad and officers of the federal Bureau of Alcohol, Tobacco, Firearms and Explosives removed the materials from the home. These materials appeared to be components of explosive devices with fuses and materials for making explosive devices. Investigators carefully removed the materials and took them to a safe location for further analysis. Kaminsky is being additionally charged with 45 counts of manufacturing explosive devices, Sheriff Mascara said.

ST. LUCIE WEST — The St. Lucie West Services District’s Board of Directors has a vacancy to fill. Harvey Cutler, chairman, died on Sunday, Nov. 29, at the Treasure Coast Hospice House. He was 88 and leaves a legacy of strong fiscal conservativism and creativity. Dennis Pickle, manager and utilities director, said the district is taking applications. At its next regular meeting — Tuesday, Jan. 5 — the board will select an appointee to fill Cutler’s term, which is until November of 2018. “(Applicants) have to be a resident and be a registered voter,” Pickle said. If a household receives water bills from the St. Lucie West Services District, the occupants qualify as residents. All board seats are at large. The St. Lucie West Services District hasn’t had a rate increase since 2010. However, as infrastructure ages and costs of doing business increase, it’s likely to have to consider rate increases in

ST. LUCIE COUNTY — The Education Foundation of St. Lucie County (EDSLC) has received $25,000 in a matching funds grant through the School District Education Foundation Matching Grant Program. The funds are provided by the Consortium of Florida Education Foundations (CFEF). The EDSLC awarded $50,000 to the St. Lucie County School Board. The funds will provide 30 grants to teachers, schools and the district. The programs all focus on increasing graduation rates a key metric for the school district and cover areas such as: literacy, improving low performing students, technical career education, STEAM (science, technology, engineering, arts and math), and increasing teaching quality. Through the collaborative effort of its members, the CFEF successfully advocated for the creation of legislative matching funds in 2000 which has provided a dollar-for-dollar incentive for local education foundations to raise private contributions for eligible projects. “Helping our children in St Lucie County obtain a better education has been a key goal for me,” stated Larry Lee, State Representative for District

84. “I’m proud to support the state matching grant program.” The CFEF is the membership organization for Florida’s school district-wide local education foundations. Established in 1987, the CFEF seeks to advance student achievement in Florida by increasing private sector investment and involvement in public education. The CFEF now has 61 member foundations with 1,100 business and community leaders serving as volunteer board members. Collectively, they raise more than $45 million annually to support students, teachers and schools through a variety of programs. The CFEF has facilitated more than $37 million to local education foundations since 2002 through various private-and public-sector partnerships, including the State of Florida School District Education Foundation Matching Grant Program. The Education Foundation of St. Lucie County is a 501(c)3 not-forprofit corporation dedicating to advancing public K-12 education. The Foundation has been providing grants to teachers and scholarships to students in St. Lucie County since 1990. ST. LUCIE COUNTY — The 5th Annual Hibiscus Children’s Center St. Lucie County Charity Golf Tournament was held on Saturday, Dec. 5, at Indian Hills Golf Course in Fort Pierce. It was a day of friendly competition, great food and prizes, and more importantly, supporting abused children in our community. Not even the rain could stop this dedicated group! Event co-chairs Jeff Emmeluth, Kori Benton, Michael Waninger, and Shawna Taylor, coordinated a fun event that was kicked off by a continental breakfast donated by Panera Bread and followed by a shotgun start with a four-person scramble format. The Awards Luncheon was held immediately following the tournament and generously sponsored by Scott Van Duzer and Big Apple Pizza of Fort Pierce. Lucky winners received great drawing prizes and the best golfers were proud to receive their awards! We were honored to have a team from the St. Lucie County Sheriff’s Department join us and they won first place, second flight. Our skilled overall winners were Matthew Frias, Jon Applebee, Mark Bouton, and Michael Woodall. All proceeds from the tournament directly support the mission of Hibiscus Children’s Center and its efforts to improve the lives of children in St. Lucie County. The Hibiscus Community Services Office is located in Ft. Pierce and houses Mental Health Services and Supporting Families in Crisis Programs. announce the initial stocking of 3,500 bluegill and redear sunfish into the 7-acre created lake at the Treasure Coast Research Park. “We are excited about this project which will provide both a new fishing opportunity and educational venue for Florida’s residents and visitors,” said FWC fisheries biologist John Cimbaro. Supported by Sport Fish Restoration and fishing license revenue, the stocked fish will grow and reproduce, providing a balanced sport fish community. The bluegill and redear sunfish will provide forage for the largemouth bass which will be added in spring, 2016. They will also provide a food source for wading birds like egrets and herons, helping to establish the aquatic community. Once established, in addition to the sustainable aquatic environment being created through the partnership and the stocking, the lake is expected to provide a new, local fishing opportunity in the near future. Currently, the lake also provides Advanced Placement Environmental Students from Westwood High School an outdoor classroom and handson learning opportunity. The students, a diverse and talented group of Westwood High School students who have been chosen to participate in the program which is housed at Florida Atlantic University’s Oceanographic Institution, have been taking samples, doing monthly tests, and conducting research on site since September. The Advanced Placement Environmental Science students has also been enjoying discussions and presentations from world-class research sci-

entists during Lunch and Learn sessions. Created in 2005 as a partnership between the St. Lucie Board of County Commissioners and the University of Florida, the Treasure Coast Research Park, located just off Kings Highway, less than a mile from Florida’s Turnpike, Interstate 95, and less than 5 miles from St. Lucie County International Airport, was designed to spotlight and encourage bio-technological and agricultural research. In addition to creating an atmosphere conducive to research and education, the Treasure Coast Education Research Development Authority has created an infrastructure to encourage and support research in the areas of food, energy and water. The collaboration with Florida’s Fish and Wildlife Commission (FCW), the St. Lucie County School Board, Florida Atlantic University and the United States Department of Agriculture (USDA) research facilities on site at the Treasure Coast Research Park just west of Kings Highway in Fort Pierce was a natural evolution of the mission of the facility and its leadership. TREASURE COAST — The Sunrise Theatre has continued to add to its lineup for the 2015-2016 season with two legends and two tribute groups. Graham Nash is a double inductee into the Rock and Roll Hall of Fame. He was honored for his work with Crosby, Stills and Nash and his work with the Hollies. Nash will present a show, “This Path Tonight,” that will feature hit songs and introduce new ones from his soon-to-be-released studio album. Nash is one of the great singer/ songwriters from the 1970s with Crosby, Stills and Nash and later with the original three and Neil Young. He wrote songs such as “Marrakesh Express,” “Just a Song Before I Go,” “Wasted on the Way, “Our House,” and the wonderful “Teach Your Children.” Nash will perform Jan. 30 at 8 p.m. Just in time for Valentine’s Day comes Miss Gladys Knight. The Feb. 13 concert will feature the seven-time Grammy winner,

who has recorded more than 40 albums and topped the charts in Pop, Gospel, R & B and Contemporary. She is a Rock and Roll Hall of Fame inductee and has a star of the Hollywood Walk of Fame. She will sing the hits: “Midnight Train to Georgia, “Help Me Make it Through the Night,” “License to Kill,” “The Way We Were,” and “Baby Don’t Change Your Mind.” In addition, she will perform tracks from her latest album, “Where My Heart Belongs.” Feb. 27 brings The Australian Bee Gees Show: A tribute to the Bee Gees. This group has performed for 19 years all over the world. The show is a multi-media concert with state-of-the–art sound, lighting and giant screens with video clips and graphics. The show is presented from a contemporary perspective and is a tribute to the great music of the brothers Gibb. “Natural Wonder: The Ultimate Stevie Wonder Tribute,” comes to the Sunrise March 3. The Sunrise Theatre presents the national touring company of “Ragtime” as part of its Broadway series Jan. 10 at 7 p.m. Matthew Curiano, who pays Tateh, spoke about the show and why it is as important as it is entertaining. “It is iconic,” Curiano said. “The songs are just magnificent in how expansive they are. Although it takes place at the turn of the 20th century, the same issues the groups struggle with are still relevant today. We’re in a very interesting social and political climate these days and the show really speaks to that, which is amazing. It was written in 1998, but it seems almost more relevant now.” The lyricist Lynn Ahrens and composer Stephen Flaherty came to the final rehearsal before the tour headed out. “They said it was a story the country needs to hear,” Curiano said. “What a gift to be able to do that and be part of a show that does more than entertain. It has a message. The three groups struggle to achieve the American dream. It’s a true struggle and the only way is to work together and help each other. It’s about love, family, racism, respecting people and seeing their lives through their eyes. The stories are our stories.” Historical figures interspersed though the show help guide the story, added Curiano. This gives

She smiled. She puts on a wonderful show and is a consummate pro. While she’s been Pip-less for many years, she’s had so many hits. It will be an evening of non-stop hits. “I’ve not worked with Graham Nash, but last March, we had David Crosby and he sold out. I

expect Graham Nash to sell out too.” Wilkes said he is looking forward to “Natural Wonder” and has a special guarantee to go with it. “It has a 12-piece band and he looks and sounds like Stevie Wonder,” he said. “It’s uncanny. A Christmas dinner, prime rib of beef

N

ow that Thanksgiving is behind us and most of us have had our fill of turkey and pumpkin pie, our thoughts are now consumed by the holiday dinner parties fast approaching. For me, my thoughts roll back to my family’s Christmas dinners of yesterday. Mom always prepared a special Italian platter of either home-made lasagna or ravioli for starters followed by a huge roast prime rib of beef and all the trimmings. Well, I still carry on with the family tradition and especially look forward to preparing my Christmas dinner with the Italian first course followed by the prime rib as the feature. Before you make a $75-dollar investment in hunk of beef with the hope that it will turn out okay, take just a few minutes to consider the technique that has worked for me and the in-the-know professional chefs time and again. First you must start with a good cut of meat. Always select a choice grade or better and do not hesitate to ask your butcher for guidance. Ask them to trim and tie the roast and make it ready for oven roasting. They will know exactly how much fat to remove

Peter Perry Sr. and how to separate and tie the roast especially if you buy a bone-in cut. A four-rib roast will serve anywhere from six to seven portions. A full seven-rib roast will yield at least 12 to 13 healthy portions, but will vary based on weight and portion size. There are three simple yet very important elements that you will use to produce excellent results. Seasoning. Cooking temperature. Cooking time. Step 1. Start at least four or five hours before your time of service. Remove from the refrig-

erator to allow the meat to get to room temperature. Seasoning is a matter of taste and several combinations will work well. You may have a family favorite that works for you so go for it. The one shown in this recipe has yielded good results for me. But, do not season the roast until you first sear the roast at high temperature. The only seasoning you need in the first step is to insert three or four whole cloves of garlic in the roast between the meat and the rib bones. If it is boneless, insert between the layer of fat between the lip and meat portions of the roast. This provides a sweet garlic aroma throughout, yet avoids the bitterness of burnt garlic. Step 2. Pat-dry the roast and place in a shallow and open roasting pan with sides at least two inches high. Do not cover. It will help if you have a method to elevate the roast slightly above the bottom of the pan to allow for browning on all sides. A few bunches of aluminum foil will work. Now place in a pre-heated oven set at least to a temperature of 425 to 450 degrees. The hotter the better. The important

first step at high temperature serves to seal the juices in the roast. If you place the seasoning on during this high temperature first step, it will burn and make the seasoning bitter. Time will vary depending on your oven and be sure to run your exhaust fan at high since there may be some smoking as the roast browns up. I set my supercharged oven to 500 degrees because I have an outside vented exhaust fan. Step 3. While the roast is browning mix ground thyme, black pepper rosemary and onion powder in equal proportions. About two tablespoons of each. Add a half teaspoon of salt and then some soy sauce and some maple syrup (honey works as well), enough to make a paste consistency. Sometimes I will use a little Dijon mustard. Step 4. Roast for about 30 to 40 minutes during this first high temperature phase until it achieves a crispy dark brown appearance. Do not open the oven door. Your roast will start to talk to you as it crackles delicious sounds from your oven. Once good color and browning is achieved remove from the oven and allow it to cool for a few minutes. Turn the oven off. Rub the seasoning paste on all sides of the roast. Now remove the foil under the roast which had elevated the roast and substitute with a medium onion cut in quarters, three stalks of celery and 3 carrots. This will serve as the new bed to rest your roast on and will emit wonderful flavors into your gravy during the next cooking phase. Cover with foil and set aside. Step 5. Now timing is everything, so at about two to two and a half hours before dinner service, remove the foil and place the roast in the oven uncovered set at 285 degrees. Then after about two hours begin to check the internal temperature of the roast. You will need a cooking thermometer. You want 120 to 125 for rare, 130 to 140 for medium and if it goes beyond 145 you have pretty much ar-

rived at a well done tasty yet still tender rib roast. When desired temperature is reached, remove from oven, and place the roast on a serving platter. Cover with foil and let stand at least 30 minutes before carving. It will continue to cook as it redistributes the juices internally. Step 6. The roasting pan should contain a reasonable amount of very tasty and well-seasoned drippings. This is loaded with flavor so now place the roasting pan on top of the stove over medium-high heat and bring to a fast simmer. Scrape the tasty bits from the bottom while deglazing with half a cup of white wine. Those little tasty brown bits are called fond. This is what the French named it and it is short for foundation. A foundation of flavors necessary for building flavors into your sauce. In some cases you may wish to remove some but not all of the fat. Now strain the sauce into a small pan and if you wish…you can add a touch of cooking sherry and salt and pepper to taste. Simmer on low. You do not need much sauce but if you need more, add a little chicken stock or beef stock. You now will realize that you not only have cooked a wonderful roast, but produced an excellent sauce as a bi-product of the process. Slices should be at least half inch to three quarters of an inch thick. Spoon just a small teaspoon of drippings over each cut. Chef’s tip: Actually it is rather simple. Seasoning, cooking temperature and timing. By working backwards from your planned time of service, you have removed all the guess work and math out of trying to figure out how low long to cook at what temperature based on the size of the roast. Only use whole cloves of garlic during the first step in roasting at high temperature. Optional-Try adding two pads of butter to sauce after removing from the heat. Birthday and a new play on Hurston’s life, friends and folklore. “I’ve LIVED” will introduce guests at The Sunrise Theatre with new stories, a review of her written work and her love of Fort Pierce. Hurston arrived in Fort Pierce in 1957, following a request from publisher C.E. Bolen to work for his black newspaper, The Chronicle. Hurston’s family knew Bolen from their days at Eatonville, an incorporated black community, northeast of Orlando. When Zora lost her job at the Patrick Air Force Base in Satellite Beach, Bolen invited her to Fort Pierce. She was writing articles about the local community and even her voodoo experiences in Haiti. Zora also received a request from Lincoln Park Academy to work as a 9th grade English teacher at the then-all black Lincoln Park Academy. She read many of her own books and other publications in the classroom and her students many years later realized who she was when they read her books in other venues. “Their Eyes Were Watching God” was one of her most well-known works, which was written in Haiti in seven

WWW.YOURVOICEWEEKLY.COM weeks and includes the history of the 1928 Florida Hurricane as its backdrop. Zora died in January 1960, following two strokes during her years in Fort Pierce. She resided in a private home owned by Dr. Clem Benton, who also knew her family in Eatonville. She was moved to the St. Lucie County Welfare Home following her first stroke. She died a year later in that facility, which today is the Agape Senior Center on No. 9th Street and is an exhibit as part of the Zora Neale Hurston Dust Tracks Heritage Trail in Fort Pierce. Cooper has developed the facility into an exhibit on Zora’s life. Written by local playwright Brenda Cooper, the story of Hurston’s life comes alive as Cooper and a cast of local actors present Zora in this drama production, scheduled for Saturday, Jan. 2 at 7 p.m. at The Sunrise. Tickets are $25 per person and are available at the downtown Box Office on South Second Street or by phone at (772) 4614775 or boxoffice@sunrisetheatre.com.
