Sitting just off Gorordo Avenue, La Maison Rose lives up to its name, its bright pink façade popping against the sprawling green lawn that it sits on.

Built in the 1930s, the art deco home used be the residence for members of the Velez family before Alliance Française de Cebu (AFC) started renting the house in 2012. “When I visited, it looked like the house was frozen in time; as if it hadn’t moved,” says Louis Thevenin, the organization’s director. “It seemed like it had history and a past, and that is what I loved instantly about the house.”

The allusion to a different age works well with the new tenants, Alliance Française being a satellite in Cebu for a culture that is rich in history. The AFC is the first and currently the largest collection of non-profit French teaching associations with interdependent local communities. Besides the growing number of French classes, the organization also has movie screenings and cultural events throughout the city, giving locals a taste of a French lifestyle.

the Profiteroles au Chocolat, which are pastry buns filled with sweet vanilla Chantilly cream and covered with hot chocolate sauce, or the Mango and Coconut Tiramisu, a French version of the Filipino mango float.

Diners looking for more variety will be glad to know that La Maison Rose is the only French restaurant in Cebu that offers 365 menus in a year, with a new special dish every day. The set menu includes an appetizer, main course and dessert at affordable prices of P500 for lunch, and P750 for dinner that comes with a glass of wine.

The restaurant even works in partnership with AFC’s activities upstairs.

January marks the beginning of yoga classes for kids and adults, a program that the organization promotes for wellness and wellbeing. Those availing of the program can also take advantage of the Yoga+Vegetarian menu, which has deliciously healthy dishes like the wild tofu served with fresh mushrooms and black rice, or bell pepper mille feuille, a dish with green and red bell peppers layered in sheets of crispy filo pastry.

Certainly, La Maison Rose is more than just a restaurant. It represents the cultural nuances of the French, while

culture like taking an actual taste, and La Maison Rose’s ground floor restaurant has an array of dishes that make French cuisine approachable and appealing to the Cebuano palate.

Although less than a year old, already locals have been raving about the dishes, the iPad menus and the restaurant itself.

With vibrant colors and a confluence of patterns, La Maison

and tender Pepper Steak are savory main courses, but the editors’ personal favorite is the Duck Confit and Potato Gratin.

The dish features a large suculent duck leg cooked in its own fat and fried to a crisp, creating a mouthful of flavors that is perfectly complemented by the oven-baked potatoes. Dessert is just as delightful—with top choices being

maintaining an affinity to the history and tastes of the Asian region Cebu belongs to. It’s a combination that works well for its look and its food, and it certainly has the locals positively tickled pink.

reminiscent of French Indochina, the colonial territories that included Vietnam, Laos and Cambodia.

Outside, blue parasols shade white garden furniture as a colorful complement to the greenery and taking advantage of the island’s mostly sunny weather.

The food, of course, is really what makes La Maison Rose a must-dine location in the city. While French food might normally be seen as intimidating, the restaurant keeps it simple but sumptuous, its classic dishes packed with flavors that need no translations. French chefs Antoine Rollin and Adrien Guerrey take inspiration from fresh ingredients available in the market and grown in the herb garden on the premises.

The Variation de Foie Gras—a selection of foie gras terrine layered with spiced bread, foie gras poached in red wine and served in thin slices, and a foie gras “crème brulee”—is an interesting mix of cooking styles and flavors to highlight the rich duck liver. “We like our antiques, and when something is broken, we fix them.

SIMBANG GABI

The Simbang Gabi or Misa de Gallo is a distinctly Filipino tradition of attending the nine-day devotional masses before Christmas, as is customary for Roman Catholics, at dawn. During the Spanish era, farmers had to work in the fields throughout the day and the priests sympathized with the workers who attend the novenas despite their obvious fatigue. The clergy then started holding masses in the morning before the natives went to work, and the tradition has remained throughout the years. Now, Filipinos continue to attend the dawn masses, usually at 4:00 or 5:00 AM, with the promise of a wish granted upon the completion of the nine days. It’s also been customary for churchgoers to grab servings of bibingka or local rice cake after the mass.

“It was a couple years back when Islands Souvenirs launched the ‘I Heart’ line, a brainchild of our president and CEO Jay Aldeguer, and it has since become a massive success,” Josh Eballe, the head of communications for the Islands Group, says about the personalized shirts that have been gaining a following from tourists and Cebuanos alike. “We wanted to bring Cebu closer to the Cebuanos.”

True enough, the campaign has become a way for locals to express their pride of place, giving way to variations that have wearers specifying what exactly it is about Cebu that they love.

It’s the kind of innovation that has kept the Islands Group on the forefront of the Cebu tourism industry for the past 20 years. while on vacation, along with local delicacies and products they can bring back home. The next few months will see more Pasalubong Centers throughout the city, in accessible locations such as Rain Tree Mall along Mango Avenue and on Archbishop Reyes across Ayala Center Cebu. The Islands Pasalubong Centers have a collection of merchandise that include local treats, beachwear and travel essentials, camera and electronics accessories, toiletries and, of course, Islands Souvenirs’ collection of colorful apparel.

The shirts do more than just have Cebu emblazoned on the cover; the Islands’ highly creative team come up with new concepts regularly and especially during special occasions. Already, festive new prints are coming out for Sinulog, vibrant and comfortable enough for partying out in the streets.

“Islands is very Cebu, and so is Sinulog. It’s like the Cebuano Christmas,” explains Josh. “The best way to commemorate our triumphs as Cebuanos is, of course, to be part of and celebrate with Sinulog.”

From showcasing the locals and their love for the place, to being a strong presence in Cebu’s biggest event of the year, the Islands Group continues to be firmly rooted in its hometown, even as it expands to other islands. Although it is very much a business that caters to the tourists, it’s a brand that takes pride in being local.

Sinulog seems like an invitation to the rest of the world to visit Cebu, party with the locals, indulge in the food, and immerse into a cultural activity that could very well be the highlight of most years. But more than the floats, the parties and the crowds, the Sinulog weekend is a celebration to commemorate the province’s acceptance of the Catholic faith, and to pay homage to the Santo Niño. photography Dan Douglas Ong

HISTORY Ferdinand Magellan presented the image of the child Jesus or the Santo Niño, as a gift to Hara Amihan, the wife of Cebu’s ruler Rajah Humabon, when he landed in Cebu in 1521. It’s said that Hara Amihan, later named Queen Juana, was overjoyed at the sight of the Santo Niño that she starting dancing, and eventually paved the way for the conversion of some 800 painting by Isabel natives to Christianity. When Oil Echevarria inspired

by Sinulog Miguel Lopez de Legazpi arrived more than 40 years later, his men found the Santo Niño in a house, along with other native idols. The devotion to the Santo Niño has steadily grown stronger since then, with the annual Sinulog parade that has only gained momentum since it started in 1980.

THE FESTIVITIES The Sinulog festivities include a nine-day novena before finally culminating in the grand parade on the third Sunday of January. Before the weekend’s festivities, it has become tradition that the Santo Niño is brought to visit his parents. The image is brought to the St. Joseph Parish in Mandaue, where he spends the night as

devotees hold vigil. Come dawn, the image is then brought by boat through the Mactan Channel to visit the Virgen dela Regla or the Virgin of the Rule. By the time the sun is up, a fleet of colorful boats join the Santo Niño in its journey back to Cebu City to reenact the Cebuano’s acceptance of Christianity from the Spanish. At sundown, a solemn procession is held throughout the city’s main roads, where the large crowd can number in the millions as they walk with the Santo Niño as it returns to the Basilica. On Sunday, the crowd goes into a more festive mood, with the grand parade of floats and dancers through the city’s main roads. Contingents from around the island and the neighboring provinces make their way through the streets and into the Cebu City Sports Complex to show off their choreographed presentations. Outside, revelers celebrate throughout the afternoon, dancing alongside performers while done up in face paint and feathered accessories.

The day culminates with elaborate fireworks displays throughout the city, while the crowd continues to party well into the night.

When was the last time you were on a date with a zombie or a mummy? For some people, it was at Level Ei8ht’s Spooktoberfest Halloween Party, where guests enjoyed Level Ei8ht’s newly expanded and re-furnished resto-lounge.

People were decked out in the most colorful array of costumes while enjoying music from the Renaissance Band. Afterwards, Archie Marcial entertained the crowd with the accompaniment of the Level Up Band before DJ Allan got everyone on the dance floor until 2AM. The Level Ei8ht staff kept with the spirit, serving guests as zombies and witches, along with PR consultant Tico Aldanese as the Monk From Hell.
