ABSOLUTELY’S April issue highlights
The first man in business I knew was my father. He ran a very successful building company back in the 1980s/90s, so I was often found climbing around some scaffolding at one of the many jobs he had on at any given time (health and safety clearly wasn’t the same back then). What I found miraculous about all of this is that I have not got one DIY bone in my body. Visit my house and you’ll notice anything that I have had to install myself is a little wonky. I like to think it adds charm to our interior design.
Fast forward to 2023 and in this issue, we have met up with 11 Essex men in business, all of whom can boast very different skillsets and ideas behind their ventures. From the best in new cars to a legal firm that puts disabled people first, and an expert in aesthetics to niche menswear, all walks of life and business are covered – and I have to say, all of them have wonderfully individual personalities too.
Elsewhere this month, Ayshen Webbe talks about looking out for the future in entertainment talent and being married to one part of boyband Blue, we visit Chelmsford to uncover how much the city has to offer, and of course seek out the best Easter Egg trails around the county. Enjoy the issue!

Love can blossom when you least expect it and that’s exactly what happened after Ayshen Webbe split up from a long-term partner.
Little did she know that she would fall head over heels for Simon Webbe, member of boyband Blue.
But it certainly wasn’t love at first sight, admits Ayshen. “We saw each other at our local Virgin gym in Chigwell. There I was in the sauna and in walks Simon. We chatted and found out that we were both single and he asked me out on a date.
“There wasn’t the initial attraction because I just wasn’t in the headspace after splitting up with my partner of 12 years. But after our date I knew – he made me laugh so much. It was an epic 12-hour date at the Kings Oak Hotel in Loughton.”
Two years later Simon popped the question and the couple returned to the Kings Oak for their engagement party. In 2018, they wed in an intimate ceremony at the Corinthia Hotel in London in front of friends, family and Blue members Lee Ryan, Duncan James and Antony Costa.
It wasn’t the first time the loved-up couple had encountered each other, however.
“I was in a girl band called Fe-Nix back in the day, and I bumped into Simon on many occasions throughout my music journey. I definitely wouldn’t flirt when I am engaged to someone else! At music events, I would say ‘hi’ and walk o ,” she laughs.
“Those days were tough,” she admits.
“I used to work in the city as a personal assistant in the day and save my holidays for rehearsals and supporting N-Dubz on tour. I would finish my o ce job and head to meet the girls – trying to look half decent. I
look back and can’t believe I did it. Everything happens for a reason – I experienced the industry without the money and fame. I’m glad I did because I met my husband.”
Breaking into the industry wasn’t easy. “Simon and I often chat about this,” says Ayshen. “We both came from families that didn’t have money to go to stage schools. I always wanted to go to Sylvia Young Theatre School, but we couldn’t a ord it. I used to buy The Stage newspaper every Thursday, pull out the auditions and turn up and go for it. I sang my heart out every weekend until I found the right group.”
After a stint in the pop industry, Ayshen turned her attention to beauty and lifestyle blogging. These days the 43-year-old Hackneyborn talent manager runs Webbe Industries, working with her sister Bea and Simon to support talent across the entertainment industry. “It’s an intense job, we manage all the client emails, diaries, travel, logistics,

finances, everything that gets thrown at us,” she explains. “We reach out to brands, proactively pushing their career forward. The influencing world is fast-moving. If I didn’t have this job, I wouldn’t be able to raise my child at home in my pyjamas!”
Ayshen’s job fits neatly around her twoyear-old daughter Cyan, who was born at Harlow’s Princess Alexandra Hospital. “My sister had her second child at this hospital, and it featured on Delivering Babies, presented by Emma Willis. She went through hell, and they saved her life. The sta were so amazing I just knew we had to have Cyan there.”
Growing up in a tight-knit and supportive Turkish-Cypriot family, who live close by in Gants Hill, keeps Ayshen grounded. She is dedicated to talking about motherhood on her social media platforms and as a co-host to A Woman’s Journey with Chrissy Brown, founder of the Motivational Mums Club. She strongly believes in creating a safe place for women to share their experiences of motherhood and much more.
“It’s important to talk about motherhood,” she states. “I had a really bad pregnancy, and it took me a while to conceive – we experienced miscarriages and complications. The journey was awful due to Covid.
“The whole idea of women bouncing back after birth is frustrating. I had my baby when I was a bit older and everyone expected me to ‘bounce back’. I still had a pregnant belly after six months. I love being a mum, but it’s tiring, and mums shouldn’t be afraid to say that. I
try to talk about it on social media and that’s why I started this podcast. I just want to have an honest space for women to talk about any subject. You don’t even have to be a mum – it’s about a woman’s journey. We’ve had a lot of response already and I want to be honest and real about my body and how I am feeling.
“I was so lucky to have Simon around when Cyan was born, during the pandemic, he was so amazing,” Ayshen smiles. “He cooked, he cleaned, did night feeds. For me, it was weight issues that took over and I constantly felt like I had to lose the pounds. It really got me down. I see so many mums looking fabulous and full of energy in size eight jeans months after giving birth. But that’s not the reality for many mums. Women need to stick together and be honest. We need to be real!”
Busy with motherhood, work and scoping out a new home in Buckhurst Hill or Ongar, Ayshen and Simon try to make time for date nights in Aura restaurant in Loughton and love keeping it local. “Even though Simon is from Manchester, since he has lived Chigwell, he knows Essex better than I do! He is such an Essex boy,” she giggles.
As we chat, it’s clear Ayshen’s journey into motherhood hasn’t been easy, but her upbeat and positive tone suggests genuine contentment. “It can be hard when Simon is o on tour with Blue – you can end up feeling like a single mum because it’s intense. But I can’t tell you how truly grateful and super lucky I am.”

Q What's the story behind you originally being dubbed the “Face Junkie”?
A It was said jokingly to me by a lovely client back in the 90s and I remember thinking to myself, “that’ll be my brand name one day”. She taught me all about Zen, which teaches one to apply kindness, peace, patience, happiness and compassion to all aspects of our lives. That was the start of my love for all things holistic.
Q What actually inspired you to launch Face Junkie?
A It sounds a bit woo woo, but I really believe the stars aligned and that was it. I had reached my mid 40s and felt more self-assured and confident than I’d ever been before, I had rid my life of negative situations and toxic people and I was surrounded by my amazing girlfriends who insisted it was about time and had already been using all my lotions and potions for many years. My daughter was grown up and excelling at university and I had the love, support and encouragement from my wonderful husband and family.
Q What do you o er?
A Face Junkie is based on simplicity; for years I’ve seen people expecting a lot from their skincare, and although those needs can be relatively complex, the solutions are, more often than not, incredibly simple: fast-acting, e ective, uplifting products, designed to address what I call the six elements of skincare. Q How does running Face Junkie fit in with your home life?
A Running the business from home is an excellent fit for me, I’m up at 5am every weekday either doing yoga or some sort of HIIT workout on YouTube. Then it’s a few minutes of meditation and straight into the home o ce at 7am to start work. My daughter is living the dream in Bali at the moment, so we Facetime every morning when I’m at the desk drinking my cacao. She’s the content creator for Face Junkie’s social media, so it's amazing to have her on board. We love brainstorming new ideas together, she knows
Face Junkie inside out and always showcases the brand to its best potential. During the day I get to do whatever bits and pieces of housework need attending to, but my husband and I share all the responsibilities as we both work from home so it never feels like I can’t handle it all. By 4pm I’m usually good for nothing so I sneak a little cuddle with my dog Mia and catch a power nap.
Q How long have you lived in Loughton?
A I moved to Loughton with my daughter in 2016 from South London where I was born and raised after having a seven year ‘long distance’ relationship with a charming Essex boy who is now my husband. We always went to Loughton for dinner and I remember saying to him that when I move to Essex, Loughton is where I want to live. Everyone is so lovely and there’s such a sense of warmth and community. I like to think I’m an honorary Essex girl now.
Q Where are your favourite places in Loughton or further afield in Essex?
A My favourite place in Loughton is Tom, Dick and Harry’s, I literally go there for breakfast, lunch and dinner with my husband and our daughters and family. We enjoy a good relationship with the sta there and I always take my friends and family when they’re over from South London. Queens Road in Buckhurst Hill is another favourite place for me, I love the boutiques, I sometimes spend all day there shopping and sitting in the cafes. There’s also a health place there
called Be Superhuman where I go and have Cryotherapy, a full body three minute blast at -75, you come out feeling on top of the world.
Q With spring around the corner, are there any Essex outdoor spots you particularly love?
A I’m lucky enough to have Epping Forest just a few minutes’ walk from our house. It’s a great place to walk, run or just sit and chill out amongst the beautiful nature. Some parts look so mystical like something out of Harry Potter, the trees must be hundreds of years old. During the first lockdown, my daughter and I used to walk and sprint up the steep hills – once we had to use Google maps to find our way out.

After a busy 2022, there’s no slowing down in Chelmsford this year. Throughout 2023 there are plenty of events planned across the city, with something for everyone to enjoy. So, in this bumper year of activities, why not try something new?
With luscious, revamped bars and a brand-new cafe, you’ll want to book soon to see a show at Chelmsford Theatre. In April, Wodehouse in Wonderland, starring Robert Daws, sees P.G. Wodehouse attempting to write his latest instalment of Jeeves and Wooster. While the legendary
genre-defining murder mystery, Agatha Christie’s Mousetrap, will be coming to the theatre for six nights only in July. For families, a full programme of shows during the summer holidays features Olivier Award nominated Dragons and Mythical Beasts, live on stage in August, and the return of Horrible Histories in September with Barmy Britain
Plus, this year’s programme features an array of fantastic National Theatre Live Screenings, including a reimagining of one of Britain’s most powerful political plays – Good, starring David Tennant. A stage adaptation of the best-selling novel Life of Pi also presents a brilliant mix of puppetry, magic, and storytelling.

You can expect festivals galore throughout Chelmsford this year. As part of the Concrete Canvas Street Art Festival, organised by the city’s Business Improvement District, Chelmsford For You, blank spaces across the city centre will be decorated with murals by talented artists again in 2023, bringing a new lease of life to parts of the city to appreciate throughout the year.
From 10 June to 9 July, Chelmsford Arts and Culture Festival will bring together a host of artists, creative organisations, businesses, community groups and individuals in a month-long celebration of Chelmsford. Varied events as part of the festival include a day of dance, walkabout acts in the High Street, and a day of music making. The festival
culminates in a magnificent, colourful Carnival Parade from Shire Hall to Oaklands Park.
For a music fix, Fake Festival in Central Park brings you a fabulous selection of tribute acts, including spoof Oasis, Bowie, Blondie, and Pink. While foodies can devour street food and listen to local DJs and entertainers at Street Eats 'n' Beats in September, also in Central Park.
And don’t forget about Chelmsford’s biggest music event of the year. The epic Creamfields South festival will be staged at Hylands again in May. The world-famous festival has some of the biggest names in music lined up this year, including Calvin Harris, Swedish House Mafia, Tiësto, Becky Hill, Fatboy Slim and Patrick Topping.

Hylands Estate will be hosting many more seasonal events across 2023. Green-fingered plant parents should check out the National Flower Show, while those who simply adore animals won’t want to miss the waggy tails and flu y faces at All About Dogs and the National Country Show Live. At the Foodies Festival, you can see a star-studded line-up of celebrity chefs and chart-topping music stars while savouring fine food and artisan products. Over the summer, outdoor movie experience Adventure Cinema will be showing blockbuster films at Hylands, including Top Gun: Maverick, Encanto, and The Greatest Showman. At the Proms Spectacular, music fans can enjoy a picnic while appreciating four and half hours of melodic entertainment.
During Hylands’ Open Estate Days, you can take the opportunity to look around the House itself and discover more of its history. Held every third Sunday of the month, you can enjoy food and craft stalls, tours of the house, themed exhibitions, vintage afternoon teas, as well as kids crafts and storytelling. You can also take a stroll around the stunning 574-acre grounds, browse the bookshop and pop into the Artists’ Studios at The Stables.
Visits to the artists aren’t just restricted to Open Estate Days. The studios are open throughout the year and the artists frequently hold creative workshops sharing the secrets of their trade. Book a jewellery making session, an art class, or a beginners’ stained-glass workshop.
Over at the Meadows Shopping Centre, further creative workshops will be run throughout the year by charities The Art Place and Ideas Hub Chelmsford. Try your hand at amateur music sessions, beaded jewellery making or drawing in pencil and charcoal. Elsewhere in the High
Street, novice weightlifters can compete in August for the title of Essex’s Strongest.
Away from the city centre, the stunning 365-acre garden, RHS Hyde Hall, is hosting creative workshops in 2023, ranging from summer pruning to floral photography and botanical skincare. The major tourist attraction has an exciting programme of events planned in 2023. The annual RHS Garden Hyde Hall Flower Shower show will present a five-day floral extravaganza in August, featuring specialist nurseries, dazzling flower displays and expert tips. A celebration of the LGBTQ+ community will be coming to Chelmsford in June. Essex Pride will feature a spectacular march through the city centre for the second year and a festival in Central Park.
Of course, we should celebrate the LGBTQ+ community and push for progress throughout the year, not just during Pride month. That’s why Essex Pride will be running a series of events and workshops throughout 2023, exploring LGBTQ+ voices in Chelmsford and Essex. The monthly events will o er the community a chance to share their personal journeys in a safe space while building creative skills.
In support of this, an exhibition opening in June at Chelmsford Museum will share poems, photographs, objects, and videos, which reflect the experiences of the LGBTQ+ community. The exhibition will challenge stereotypes, explore changing attitudes in the county, look at what it means to be a member of the LGBTQ+ community in Essex and ask how people across the county can become more understanding.

Essex has lots to o er this Easter time, with spring walks in bluebell-filled woods, Easter egg hunts, and even the chance to meet the Easter bunny. Visit Essex, the county’s tourism body, gives you a rundown of the best things to do this Easter.
Easter is not complete without an exciting Easter Egg hunt, and where better to start
than at Epping Ongar Railway in Epping, where Bertie the Easter Bunny will be boarding trains throughout the day. Children will receive a sheet full of clues to find the hidden eggs, and you’ll need to hop on and o their steam and diesel trains, and keep your eyes peeled out of the window during your journey to spot them all. The Easter Egg hunt takes place over Easter weekend, on 7-10 April. Tickets are available to purchase on their website.
Layer Marney Tower in Colchester is also hosting a Toddler Easter Egg hunt on Easter Sunday and Easter Monday within its stunning grounds at 12pm and 2pm on both days. People of all ages can then take part in the Egg and Spoon Race, with competitive categories ranging from “Gently Does It” to “Speedy Gonzales”. While you’re there, why not climb the Tudor Tower, wander the gardens, or book yourself onto a Tractor and Trailer ride to visit the lambs? Tickets cost £10 for adults and £5 for children. There’s also plenty of Easter-themed fun to be had at Audley End Miniature Railway’s Easter Special. Running from 1-16 April this year, the miniature railway in Sa ron Walden is giving you the chance to ride deep in the woods to visit Alice and the Easter Bunny in their enchanted wonderland. You’ll spot an abundance of eggs along
the way, as well as little bunnies and spring chicks, and you can also wander through pathways on their Enchanted Fairy and Elf walk. Tickets cost £17.

Easter is the perfect time to go on a walk to see flowers blooming and bluebells providing a pop of colour in ancient woodlands. Follow one of the woodland trails at Shut Heath Wood in Great Totham, and you’ll find yourself immersed in a wonderful carpet of bluebells. The ancient woodland is a 50-acre reserve that is a true delight in the springtime.
Beth Chatto’s Plants and Gardens in Colchester is also a great place to see budding springtime flowers. Walk through the 7.5 acres of gardens, created by award-winning gardener Beth Chatto OBE, and spot a diverse range of interesting plants and blooming flowers. The gardens are also celebrating what would have been Beth Chatto’s 100th birthday this year, so what better time to visit? Tickets cost £12.50 for adults and £3.50 for children (aged 2-16).

HAVEN HOUSE CHILDREN'S HOSPICE 20TH BIRTHDAY BALL
Haven House Children’s Hospice cares for seriously ill babies and children (up to the age of 18) by creating a loving and warm environment for them and their families while they go through the toughest of times – and this year marks 20 years since their launch.
No family should have to face alone the di culties of looking after a child with a serious illness. Haven House provides round the clock care at their hospice, surrounded in beautiful grounds and woodland, in Woodford Green and through their outreach services in the home and local community. They provide day care, overnight stays, end
of life care, bereavement support, as well as life enriching activities such as sensory play, music therapy and physiotherapy.
To mark their 20th anniversary, they had 360 guests (including celebrities, supporters, their nurses and families) attend a special evening at the Londoner Hotel in Leicester Square. The host for the evening was television presenter and Haven House ambassador Mark Wright. He attended with his sister Jess Wright and his parents Carol and Mark Wright senior. Haven House’s ambassador Greg Shepherd and his family were also in attendance, and guests enjoyed a fizz reception and three-course dinner.
The incredible Function Band and world-renowned DJ Tony Perry provided the entertainment for the evening. During the event, nurses shared Oscar’s story, a child supported by Haven House, and received a standing ovation from the audience. There was a ra e, silent auction and live auction on the night.
Speaking on the night, Mark Wright said: “What a huge milestone. I am incredibly proud to have been appointed one of the first ambassadors of Haven House over 10
years ago now. Haven House is my local children’s hospice and holds a special place in my heart. It is great to be able to come together tonight to celebrate the amazing work of the hospice and to raise funds for families who need our support.
“It’s rare to walk through Haven House and not see a smile or experience something special. Inevitably, there are sad moments at a hospice, but the team work tirelessly to ensure that children and families enjoy their time and make as many memories as possible. Tonight is about raising as much money as we can for this wonderful charity so they can be there for seriously ill children and their families, now and long into the future.”
And raise money they did –some £174,000 of it – making the event a resounding success.

Q What originally inspired you to work for your business?
A From a very young age I always knew I would work with cars – my father is an accomplished mechanic, he and my mother inspired me to follow my passion for the industry. A I suppose it was inevitable that I’d go into healthcare as it suits my personality so well. A My days can be quite varied depending on where I’m working, ensuring every day is di erent and interesting. In Loughton I typically work from 9am-7pm on weekdays, my day is usually a mixture between consults, treatment sessions and regular meetings with pharmaceutical companies to find out about the latest treatments we can o er our clients.

A There’s not really any such thing as a typical day; we’re heavily guided by the needs of our clients. I like to make time to meet with people in-person, be it catching up with existing clients or fostering new relationships. That said, most days start with a trip to our local Costa! Then on to responding to enquiries, checking the markets, client contact and, if time allows, outreach and business development.

A I’m regularly in London; I’m a big lover of food and enjoy the plethora of restaurants across the City. My home town, Bishop’s Stortford, has loads to o er, and has a direct link in the opposite direction to Cambridge. I love the seaside, and in the good weather will often ride out with friends on my motorbike to the nearby coastal areas.

A Friends and family are so important to me. As the years have passed I have recognised this more. I very much enjoy travel, and get away as often as I can; the beauty of my work is that I can operate from anywhere. The gym will always be a big part of my life as a way to improve mental focus.
A We are focused on providing training for as many people as we can. In many ways disabled people are the most disadvantaged group in society and often this disadvantage can be addressed by training. We have some exciting training and potential speaker events lined up for the remainder of the year.

A It's not just a job, all our team are passionate about what we do and we pride ourselves on giving a friendly knowledgeable service in a relaxed convivial atmosphere. A The expansion of our suit o erings continues on the first floor of the store to cope with the

Q Describe a typical working day for you?
A I am usually up around 7am quietly planning my day/week. Putting images on social media, I get to the store between 10am and 11am. Tony opens the store early every day. We will then discuss our never out of stock o erings, planning merchandising and processing orders to suppliers and after that it's chat about making sure our customers are happy and find what they are looking for.
Q Out of work, where in the local area do you like to visit?
A Living in Colchester and being close to Su olk, there are some great coastline places. Therefore walking along a seafront and finding a local watering hole followed by a trip to the Su olk Food Hall for me makes a relaxing day out.
Q What do you always make time for away from work?
A Spending time with family and friends is the most important thing to me as time seems to pass quicker as you get older. Relaxing, drawing and painting if I really want to forget everything, but I should put this on hold until I semi retire.
A All my days vary as I cater my days around typically what needs to be done. I do my best to ensure all major meetings and conversations are conducted before 1pm as I personally feel that is when I’m at my best.

A I spend much of my spare time in Su olk either on the football pitch coaching or watching Ipswich Town Women, who as a firm we are a principal sponsor. Outside of this I enjoy taking long countryside walks, travelling and going out for meals with my other half.

A While on leave I always make time to relax and socialise with friends both far and near. I’m lucky to have friends all over the world.

A Service, service, service. We are very confident in our ability to out perform our competitors. We are the only local company that directly employ some of our installation sta and everyone knows quality and design are important, but good quality installation is key.

A When not in work, I’m lucky enough to live in Leigh, in walking distance from the Broadway and Old Leigh, so regularly take walks with my wife Sue around the area visiting the local restaurants and the odd pub or two.

A I do like to play golf and try to play once a week. However this is not enough to improve my somewhat erratic style or results. I am a classic car fan so drives out into the country on a Sunday for lunch can be really special.

A Foskett Marr Gadsby & Head is a family firm and, when I was young, my uncle was the Senior Partner. I never had any doubt that I would follow in his footsteps. My accomplishments for the day rarely match the list I arrived with!

A I have a two-year-old son, who is fascinated by trains, and a daughter who has a passion for horses, so I am usually either visiting, and riding on, the local trains or watching polo matches, trying to work out the rules. I have a season ticket at Luton Town FC and enjoy matches with my brother and my nephew and some old school friends. I love live music, dancing, and fish food, and if you can combine all three, that sounds like a great place to be.

Wholiday weekend with a bang. Islas Bar & Restaurant are kick-starting things with an Easter bottomless brunch that goes well into the evening. With pink decor, neon lights and flower walls, Islas is every budding influencer's dream. Plenty of selfie spots, gorgeous cocktails, and a delightful bottomless brunch – I'm looking at you unlimited prosecco! What really shines through about this restaurant is how creative and exciting the food options are compared to other bottomless brunches. The team at Jam Shack have created a culinary fusion by taking the traditional British roast dinner and combining it with a taste of the Caribbean. It features 24-hour marinated jerk chicken, rosemary roast potatoes, seasonal vegetables, rice and peas and a good old-fashioned Yorkshire covered in jerk gravy! The combination of spices and savoury flavours really do complement each other and make for something new and exciting – great for when the classic is no longer cutting it. Miguel Gouveia has been passionate about food since his childhood on the Atlantic island of Madeira. Most chefs end up on a path of indulgence, a world away from nutrition and wellbeing; however Miguel is di erent. He’s at the forefront of a healthy living revolution and an expert in plant-based diets. For generations society has been eating processed foods, full of salt, sugar, and fat, but people are waking up. The health fallout of poor diets cannot be denied. Q How young were you when you first became interested in cooking?
A I was 14-years-old when I started being interested in cooking, from seeing my mum and grandmother cook traditional Portuguese dishes.
Q What was the approach to food in Madeira when you were growing up?
A I had a great upbringing. Madeira has an amazing food culture, great dishes and flavours. Growing up I was exposed to all of this with an abundance of home grown produce.
Q When did you decide that being a chef was the career for you?
A When I started working in the kitchen, I gained a lot of passion and interest in learning with other, more experienced chefs and seeing the amazing flavours and dishes and how it was displayed. I realised that’s what I wanted to create, and this was the path that I wanted to learn and perfect.
Q When did you come to the UK and how di erent did you find the food scene over here?
A I used to spend my school summer holidays in the UK, so I was introduced to British cuisine early on and that played a part in my interest for cooking because of so many cultures in the UK and di erent products that we didn’t have in Madeira. It was great to try and be around it, and then I came permanently to the UK in 2002 and followed in my dad’s footsteps as he was also a chef.
Q Were you always interested in the connection between nutrition and wellbeing?
A My first chef job was in a private school cooking for children from various ages, so nutrition and wellbeing were always important. To become a better chef it’s important to learn the reasons we use certain products and the benefits – that made me have a better understanding as to what to use and why we use it.
Q How much has plant-based food come on over recent years?
A I feel that we are on the right path, but it will still take some time to educate people on using more plant-based dishes. Social media has helped a lot in sharing interest in plant-based food, so I feel if we keep sharing the message why plant-based food is beneficial to our diets, soon it will become part of our routine. For me, 2023
is the best year so far for plant-based food. We see restaurants adapting to certain meals, hotels, spas, and cafes, so plant-based is becoming more popular.
Q When did you join the Glass House and what attracted you to working there?
A I start working for Glass House in 2019. One of the things that attracted me to the Glass House was the passion and vision that they have and that made me want to be part of it. They are something so forward-thinking that would have such a great impact on society.
Q What does your role entail?
A My role entails managing the catering team, training chefs, developing menus, designing recipes, looking for new fresh products, making sure all the catering department follows the correct protocol and vision and to share my passion. We are a small team, and a very close management team who assist each other.
Q What kind of dishes do you create at the Glass House?
A At Glass House Retreat I create various types of menus from juicing, light choices to equilibrium (more sumptuous dishes), to afternoon tea, brunch, demos and private one-to-one classes. We will introduce our new summer menu soon with lighter dishes. A delicate, beautiful omelette is one of those pure dishes that makes you realise great food does not have to be about hundreds of ingredients on a plate. It’s about allowing a simple product to sing. I learnt that lesson back in the day when I worked for Gary Rhodes and we used to do a lobster omelette, which showcased the chef’s technique rather than putting a load of fancy things on the plate.
POACHED SMOKED HADDOCK INGREDIENTS
• 1 side of smoked haddock, 600g, skin and pin bones removed
• 600ml whole milk
METHOD
1 Check the smoked haddock for any tiny pin bones.
2 Bring the milk to the boil in a wide-based saucepan.
3 Carefully lay the smoked haddock in the pan, ensuring it is covered by the milk. Place a lid on the pan, turn o the heat and leave the fish to poach in the residual heat for about 10 minutes.
4 Once the haddock is cooked, remove it from the milk and gently flake the fish into a tray lined with greaseproof paper. Cover the tray with cling film and place in the fridge until ready to serve.
5 Pass the milk through a fine chinois into a clean saucepan and keep to one side.
SMOKED FISH BÉCHAMEL INGREDIENTS
• 250ml smoked haddock poaching liquor
• 15g unsalted butter
• 15g plain flour
• Sea salt and freshly ground pepper
METHOD
1 Bring the smoked haddock poaching liquor to a gentle simmer.
2 In a separate pan over a medium-low heat, melt the butter. Stir in the flour to make a roux and cook, stirring, for 2 minutes. Gradually ladle in the warm
poaching liquor, stirring as you do so to keep the sauce smooth.
3 Cook gently over a very low heat for 20 minutes.
4 Pass the sauce through a fine chinois and cover the surface with a piece of baking parchment or cling film to prevent a skin forming. Set aside until needed.
OMELETTE GLAZE INGREDIENTS
• 4 tbsp warm smoked haddock béchamel
• 4 tbsp hollandaise sauce
• 4 medium free-range egg yolks
• Sea salt and freshly ground pepper
METHOD
1 Gently warm the béchamel in a saucepan then pour into a bowl and whisk in the hollandaise and egg yolks.
2 Season with salt and pepper to taste and pass through a chinois into a warm jug or bowl. Keep warm to stop the glaze from splitting.
OMELETTE
To assemble & cook the omelette
INGREDIENTS
• 12 medium free-range eggs
• 4 tbsp unsalted butter
• 100g aged Parmesan, finely grated
• Sea salt and freshly ground pepper
1 Crack the eggs into a jug blender and blend briefly to combine. Pass through a chinois into a measuring jug.
2 Place 4 individual omelette pans (we use Staub) over a low heat.
3 Take the smoked haddock from the fridge, remove the cling film and lay on a grill tray. Warm under the salamander or grill.
4 To each omelette pan, add 1 tbsp butter and heat until melted and foaming. Pour the blended egg into the pans, dividing it equally.
5 Using a spatula, gently move the egg around in the pans until they start to firm up. Remove from the heat; you want the eggs to be slightly loose, as they will continue to cook o the heat.
6 Season the omelettes with salt and pepper and sprinkle the grated Parmesan over their surfaces.
7 Divide the flaked smoked haddock between the omelettes, then spoon on the glaze to cover the fish and extend to the edge of the pans. If the glaze spills over the side of the pan, wipe it away, as this will burn on the side when blowtorching.
8 To finish, wave a cook’s blowtorch over the surface of the omelettes to caramelise the glaze. Allow the glaze to become quite dark, as the bitterness will balance out the richness of all the other ingredients.

These hot dogs are based on everyone’s favourite Christmas side: pigs in blankets. Like Christmas trees, hot dogs are thought to originate in Germany, so I’ve added a bit of curry powder, German mustard and Bavarian cheese as a nod to that. The Butcher’s Tap & Grill is the place to get great hot dogs and bacon from to make this at home.
BARBECUE BURNT ONIONS
INGREDIENTS
• 2 large onions, finely sliced
• 3 tbsp vegetable oil
PIGS IN BLANKETS
INGREDIENTS
• 4 jumbo sausages
• 2 heaped tsp mild curry powder
• 12 rashers of streaky bacon
GERMAN MUSTARD MAYO
INGREDIENTS
• 100g thick mayonnaise
• 40g German mustard
• 3 tsp finely chopped shallot
• 10 cornichons, finely sliced
• 2 tbsp finely chopped dill
• Salt and freshly ground black pepper
TO ASSEMBLE
• 4 long hot dog rolls
• 8 thick slices of smoked Bavarian cheese
• 8 large slices of dill pickle
• A bunch of spring onions, green part only, finely sliced
Serves 6
1 To cook the onions, place a cast-iron pan on the hot barbecue and add the oil. When it is hot, add the onions with a generous pinch of salt. Stir well and cook for about 20 minutes until softened, dark and caramelised.
2 Meanwhile, prepare the sausages. Poke a metal skewer through the length of each sausage and lay the skewers on a tray. Season with the curry powder, trying to get an even coating all over the sausages. Wrap each one in bacon, using 3 rashers per sausage, and secure the bacon with a couple of cocktail sticks.
3 Lay the bacon-wrapped sausages on the hot barbecue and cook for about 10 minutes, turning every minute or two. While they are on the barbecue, mix the German mustard mayo ingredients together in a bowl, seasoning with salt and pepper to taste; set aside until needed.
4 Once the sausages are cooked through, lift them o the barbecue and place on a tray. Remove the cocktail sticks and metal skewers.
5 To build the hot dogs, slit the rolls open through the top and lay the cheese slices in them. Add the bacon-wrapped sausages and top with plenty of caramelised onions and the pickle slices.
6 Place the hot dogs on a sturdy baking tray on the barbecue, put the lid on and leave for a minute or two so that the cheese becomes all gooey and melted. Transfer the hot dogs to plates and spoon on the German mayo. Scatter over the spring onions for freshness and serve.
There isn’t a grain of rice in sight in this tasty ‘risotto’, which is made using two di erent kinds of mushrooms instead. The process is relatively simple, we combine finely diced king oyster mushrooms with a creamy mushroom puree. Parmesan and fresh chives finish it beautifully.
• 500g king oyster mushrooms, finely chopped (approx. 4mm)
• 315g button mushrooms, washed and finely chopped
• 140ml double cream
• 12g fine salt
• 40g button mushrooms, washed and finely chopped (additional to finish)
• 40g diced Mozzarella cheese
• 10g chives, finely chopped
• 25g best-quality Parmesan cheese, finely grated
1 Place the finely chopped king oyster mushrooms in a pan along with 100ml water. Cover with a lid and cook for 10 minutes. Drain and set aside.
2 Place the finely chopped button mushrooms into a medium pan along with the cream and salt.
3 Cover with a lid and cook over medium heat until the mushrooms are tender. Transfer this mixture to a blender and blend to a smooth puree.
4 Place equal amounts of the cooked king oyster mushrooms and mushroom puree into a pan over a medium heat to warm through.
5 Stir through the additional 40g finely chopped button mushrooms, then add the diced mozzarella about 30 seconds later.
6 Finish with the chopped chives and grated Parmesan before serving.

Dr Khan also told me that drinking ca einated beverages, like co ee, may increase your risk of developing stretch marks. Balance your fluid intake with plenty of water, herbal tea, and other ca eine-free fluids.
aAtLack of nutrition has a huge e ect. On the skin, eating foods that boost skin health may help. Ensure your diet includes foods rich in vitamin C, vitamin D, vitamin E, zinc and protein.
Dr Khan also discussed some of the non-invasive options available at the Ballingdon Hall Clinic. I was blown away by the available treatment options. A topical cream called Retinoid is a medical cream that a cosmetic doctor can prescribe. The appearance of your skin may improve after applying retinoid cream; it helps rebuild the collagen in your skin and makes the stretch marks less visible. However, Dr Khan advised that topical retinoids should not be used during pregnancy.
Summer is just around the corner, so now is the time to get working on your body. There’s no denying that stretch marks can be an unsightly condition to deal with, but take heart in knowing that it’s a common issue for many people. Even supermodels.
Stretch marks look like indented streaks in our skin, they can be purple or silver in appearance, and they appear white from the beginning, particularly on dark skin tones.They are found on our stomach, chest, hips, bottom, and thighs.
I booked an appointment with the renowned Dr Aamer Khan from the Ballingdon Clinic in Su olk for tips on how to treat stretch marks. Dr Khan says: “One of the most helpful things you can do to prevent stretch marks is to maintain a healthy weight.” Stretch marks can happen when your skin pulls apart quickly due to rapid weight gain.
You may also notice stretch marks after rapid weight loss. For example, some people develop stretch marks during growth spurts, such as puberty. Other people, like bodybuilders, notice them after significant gains from working out or using steroids.
Glycolic acid creams and chemical peels are other treatments for stretch marks. They work to help lessen the appearance of current stretch marks, but they do not keep new ones from forming.
A variety of laser treatments are available that will stimulate the growth of collagen or promote elasticity. Dr Khan’s favourite go-to treatment is the Fractional Radiofrequency treatment combined with Micro-needling; it stimulates collagen and helps reduce the appearance of stretch marks.

e don’t often need an excuse to head to the Essex coast, but the opportunity to meet Lindsey Wislocki certainly got us reaching for the bucket and spade – rather apt considering she is the architect behind some rather impressive projects in and around the area.
Hedgehog Architects is a small practice run by Lindsey, who has more than 20 years of experience as a qualified RIBA Architect. They specialise in residential architecture, concentrating on creating contemporary spaces for homeowners to enjoy. Lindsey is passionate about design and brings considerable knowledge and success in taking projects from concept stage, winning planning consent, through to completion.
Before we get on to the finer details, there’s just one place we have to start: why Hedgehog Architects?

“I have a spikey personality,” she smiles, “so I have been told!” We don’t detect anything of the sort during our conversation where we take in Lindsey’s background, passion for all things interiors, and some of her favourite projects in Essex.
Her background is certainly impressive, as she explains: “I studied Architecture at UCL and worked at Sheppard Robson, a large London architectural practice based in Camden with, at the time, 400 architects. I worked on large commercial projects, including Grosvenor Estate Headquarters o ce and AstraZeneca Headquarters o ce.
“In 2000 I went on a secondment to Aukett London to start an o ce for them in Warsaw, Poland,” she continues. “I had six years in Poland and developed an o ce with 30 sta . Our clients were all international, mainly AIG Lincoln, Citibank and Avon Cosmetics. I worked in Moscow, Prague, Budapest and all over Poland with Aukett.”
Returning to the UK, Lindsey was ready to strike out alone. “On my return from the UK, I started property developments and in parallel started a small architectural o ce concentrating on domestic work,” she says. “I wanted to prioritise my children, working from home and not commuting to London or Eastern Europe. I like people, and wanted to help people improve their homes. I love the enjoyment of transforming homes within budgets and making the clients smile.”
And for nigh on two decades she has done just that. “We o er free, initial consultations, either virtual or face to face depending on the location,” Lindsey says on how things work with clients. “We provide a written fee proposal which sets out our fixed stages of the project, which involves a survey of the existing property, scheme design to look at the options, the planning phase, and finally the technical building regulation phase where we work closely with building control and the structural engineer.”
Looking at Lindsey’s portfolio, there are countless examples of Essex properties revitalised under her watchful eye, covering all types of buildings. “We have built a number of di erent styles, but the project I am
most proud of is a scheme of six houses completed in Shoeburyness on the beach,” Lindsey says.
There are two other recent projects she also picks out. “There was one on Chalkwell Avenue in Southend-on-Sea. The client wanted a clean lined, minimal framed glazed multi use extension to their large property. Then, there was another on Royal Terrace, a modern extension on the back of an 1850 property. The clients were forward thinking 80-year-olds, with an amazing sense of style!”
Lindsey is currently busy with two new houses in Leigh-on-Sea and exciting extensions in Thorpe Bay with vaulted ceilings. And her ambitions for the future? “Staying reasonably local and focusing on delivering good quality architecture on a reasonable budget.”

Anew collaboration between Christian Fischbacher and Malaysian-British artist Rebecca Duckett-Wilkinson explores their shared passion for design with a colourful and captivating capsule collection of decorative prints and embroideries alongside handmade cushions and rugs. Caught o -guard by the onset of the pandemic, Rebecca spent several months in Piedmont, Italy, where she set herself the creative goal of painting 100 patterns in 100 days. During this time, expressive works of art emerged inspired by her daily walks in the surrounding area capturing dreamlike landscapes, the opulent colourfulness of seasonal change and the richness in detail of nature. At the peak of restrictions Rebecca could only venture 250m from home. As the surrounding area became more wild and overgrown, she found even more inspiration in aspects of nature she had previously not noticed. Rebecca also depicts from memory symbolic motifs including the cherry blossom and Malayan which tiger features in the capsule collection’s hero design.

Ikan is a cheerful fish motif digitally printed on a smooth medium-weight cotton ground. This characterful design captures the motion of energetic painterly brushstrokes and features a layered palette of colour and pattern. Blossom is a playful celebration of colour and pattern which sees a cheerful hot pink floral motif scattered across a geometric background. It is an exuberant design with an eclectic mix of colours that is digitally printed on a smooth, crisp cotton. Pinkweed is a charming composition of weeds and fallen leaves digitally printed on a medium-weight cotton weave. An indulgent depth of colour is explored in this scene through a bold combination of rich, vibrant tones.

Poppy is a medium-weight fabric featuring a bright and bold wildflower motif. Digitally printed to perfectly capture the bloom’s vibrant scarlet red petals on a vibrant background of cobalt blue, this uplifting design is printed on a smooth cotton weave that captures the detail of this striking print. Dawon is a lustrous linen-cotton blend embroidery which features intricately embroidered Malayan tigers interspersed with stylised tropical banana leaves and flowers with an abundance of colour and vibrancy. The embroidered outlines of the design are combined with hand crewel work. For this centuries-old technique, originally from Kashmir, a particularly thick wool yarn is used, creating a design with a bold visual appeal, intriguing depth and soft handle. Harimau, meaning tiger in Malay, is a hand-knotted rug depicting a Malayan tiger amongst stylised bamboo leaves and flowers. Nine out of ten children in the UK will own their own smartphone by the time they’re 11, according to a 2022 Ofcom study.
While this adoption of internet devices comes with many social and educational benefits, parents can be forgiven for wanting some sort of control over their kids’ digital lives. Despite this, Ofcom found that while 90% of parents are aware of internet safety controls, only 70% use them. As children’s lives become more entwined with the internet, it’s more important than ever for parents to understand exactly how parental controls work and how they protect kids.
More than a third of children have seen something ‘worrying or nasty’ online in the past 12 months, according to Ofcom.
Parental controls can help reduce this risk by limiting what kids see and who they speak to online, allowing parents to track their digital activity and keep an eye on what they’re exposed to. No more watching over shoulders when the kids are on their phones. You can get peace of mind and let them explore the world of the internet with your own boundaries in place.
The younger generation are often described as ‘digital natives’, but even natives can be naive. Ofcom found that while the majority of 12-17-year-olds were confident they could identify a fake site online, only 11 per cent correctly clicked on the genuine social media post in a test. Parental controls can block these kinds of suspicious posts or websites, giving children an ongoing lesson in what sort of websites, links and posts to avoid.
Worried the kids are spending too much time on TikTok? Parental controls can let you set up time-restraints, helping reduce screen time and tackling unhealthy habits. You can also set access limits during certain hours of the day. This means you can prevent children from waking up in the middle of the night, grabbing their phone, and scrolling through social media until sunrise.
Rather than setting up controls in every device and app your children use, one option to protect your family is to use parental controls that are set directly at your Wi-Fi router. There are a number of products that give you this control. Green kitchens have been growing in popularity over the last couple of years, whether in paint, tiles or the kitchen itself. In fact, the use of green in a kitchen is now as popular as blue, which has been the reigning champion when it comes to colourful kitchens.
There is no hard and fast rule as to which shade of green to go for either, as both sage and dark earthy greens have been just as popular. The big di erence for 2023 will be the emergence of mint, which is fast gaining traction in kitchens.
If you do decide to go green, there are several ways to bring the colour to life, whether through just choosing it for a kitchen island, or the whole kitchen. There is also a growing trend for combining several shades of green in the same space in what is known as a monochromatic kitchen that has real standout – think lighter shade kitchen wall and base units, with a darker green for the kitchen island.
Q Why is green such a popular colour in the kitchen?
A After the pandemic, and now with so much economic and social uncertainty, we tend to design our homes with comfort in mind, creating cocoons where we can bunker down with family and friends. This means we turn to colours and textures that help us to create this, with much of it being routed in natural materials, forms and colours as a way of bringing a smoothing and grounding feel to our homes. For 2023, mint green is making its way into kitchens. It’s an uplifting, zingy yet calming and subtle shade, an evolution of the sage green that we’ve seen dominate over the last couple of years. Mint also works well alongside other green shades and contrasting with a forest green island can add more depth and a further dimension to the space.
Q How do you style green kitchens?
A As we’ve established that using the colour green is about bringing nature indoors, using similar materials for a cohesive look

is important. Choosing warm woods for your floor options, or a reclaimed wooden table for your seating area carries on this theme while also adding textural elements, both a visual and touch perspective.
When it comes to your hardware and brassware choices, green is a colour that works across pretty much the full spectrum of metallic finishes, giving you plenty of choice. In fact, another trend for 2023 is to mix metallics – no more than three though – so you can have some fun with your new green kitchen.
Q What about worktops?
A From our experience, most homeowners who decide to choose green cabinetry – no matter the shade – will choose a lighter
worktop. However, we have designed and fitted green kitchens with dark worktops, and this works just as well.
Q Is there a style of kitchen that works best with the colour green?
A Shaker cabinetry is by far the most popular; however, shaker doesn’t necessarily mean traditional. It can transcend across both modern and traditional kitchens, depending on how you style it; from door handles, taps, appliances and finishing touches.

Lisbon, Portugal’s vibrant, picturesque capital, is uniquely made up of seven hillsides overlooking the magnificent River Tagus. They stand guard over the city’s winding cobbled alleyways and are topped by terraces known as miradouros which provide the perfect viewpoints to get your bearings. As Europe’s second oldest capital (after Athens), Lisbon has a rich and somewhat dramatic history, including being decimated by earthquake, tsunami, and fire in 1755. It prides itself on its resilience and being home to some of the world’s greatest explorers, including Vasco Da Gama and Ferdinand Magellan.
The first stop in our two-centre villa stay is Prior Paradise in the stylishly peaceful Lapa neighbourhood, known as Lisbon’s embassy quarter. The elegant four-storey townhouse is surrounded by greenery, from its beautiful courtyard with a tinkling fountain to the terrace and plunge pool at the front. Blooming multihued bougainvillea cascades down the walls, and the sweet scent of jasmine fills the air. The
villa has five bedrooms, four bathrooms and a high-ceilinged, light-filled interior with white polished wooden floors. There’s an on-site butler, and all other services can be organised on demand. It's a stylish urban sanctuary that makes the perfect base for exploration.
Lisbon is a great city to wander around, though you’ll need to be prepared for a healthy dose of exercise with all those hills. One enjoyable alternative was to explore by motorbike and sidecar with Bike My Side (bikemyside.com). We whizzed through the streets taking in the sights and stopping to learn about the city’s history and traditions. We felt like celebrities as people photographed us at every turn – these sidecars are a show-stopper. Full of Lisbon knowledge, we returned to the comfort of our villa, where pre-dinner cocktails and our private chef awaited with dinner. The perfect end to the day.
For our next destination, we took the short drive to Setubal and an even shorter ferry ride to Comporta, a stunning coastal town that is also a highly protected nature reserve. This is an unspoiled part of Portugal where we felt we were treading the road less travelled. The biggest rice paddies in Portugal
criss-cross the landscape, nesting storks pepper the skies, and the most stunning of unspoiled (and uninhabited) beaches await backed by pine forests and dunes. We stayed at Herdade Da Comporta, a secluded 17-acre estate down a dusty road through rows of the flu est pampas grass. The ultimate dream beach house, with six separate bungalows decorated in muted shades and natural materials. We spent relaxing hours in the enormous garden (there are loungers, sofas, and chairs around every corner), taking long walks on the secluded beach, just five minutes away through the dunes and even galloping along the sands on horseback with the wind in our hair. Our private chef provided the most sumptuous breakfasts, with the large table covered in local treats, including delectable orange cake – yes, cake for breakfast. We also enjoyed a cookery course and ate delicious soup, seabass and traditional pastel de nata we helped to create. The villa has its own vegetable garden, and there’s also plenty of tasty local produce. Like the wine. We visited Adega da Herdade la Comporta for a tasting – so good we couldn’t resist taking some home. We also ate out at a couple of the local restaurants; one of them, Sublime, a short walk along the beach from our seaside sanctuary. Herdade da Comporta is a hidden gem of a discovery any explorer would be proud of… but don’t tell too many people.

Absolutely heads south of the Iberian Peninsula for a spot of history, cuisine, and sunshine in Andalusia
By CRYSTAL MCCLORYArriving in Granada, the ‘Place of Dreams’, during Holy Week, we squeeze through crowds, by the ‘pasos’ floats of thrones with religious icons, and marvel at the spectacle of the hooded holy men. Our hotel, Gar Anat, has a courtyard with a tinkling fountain and a metal tubular wishing tree to hang our wishes on. A brisk sunshine walk, past souvenir shops, towards old Moorish neighbourhood The Albaicin, and we reach the delightful Mirador de Morayma restaurant, in the heart of Sacromonte quarters.
A fountain gurgles in the tranquil terraced gardens and the views of Alhambra are so incredible it looks like a film set backdrop. After a delicious lunch, we walk uphill to meet our friendly Spanish guide for a private tour of The Generalife – Alhambra. The Alhambra was a palatine city and military fortress until 1870 when it was declared a Monument.
Generalife is beautifully planted with perfectly manicured hedges, with vibrant colourful flowers and wistful wisteria. Cypress trees line up across the horizon like a Van Gogh painting. Hedges create an emerald tunnel, and the courtyard has a canal, fountains and flowers.
At Palacio Nazaries, the water mirrors the building and skyline as we rest and
reflect on the view. “If what is beneath my feet is paradise, then what is the Alhambra? Heaven?” So said Lope de Vega.
Buildings have keyhole windows or stars cut out the ceilings and balconies overlook beautiful gardens. Wisteria winds a lilac garland around the awesome architecture. The Place of the Lions has reflective white marble with stone lions guarding the fountain. This rich decorative palace steeped in history is decorated with ornate tiling.
Remember, as in life, don’t forget to look up. You’ll see stalactite e ect Islamic carvings on the ceilings, admire the Gypsum stone decoration on the walls. As another famous quote testifies, “Granada is so moving that it stimulates and melts all of the senses” (Henri Matisse).
Next stop: Córdoba. It’s Good Friday so roads are closed due to Holy Week as the brotherhoods pass around the Mosque. We squeeze respectfully past a hushed crowd looking at the ornate mayhem; a swinging golden float with candles flaming. At Horno San Luis we stop for a much-needed drink and an innovative meal amongst cool, quirky interiors.
Breakfast is on a private roof terrace at Las Casas de la Juderia listening to bird song,
overlooking the cathedral. The hotel has a spectacular courtyard with large stone pillars and hedges and a fountain next to an honesty bar. At the Mezquita-Catedral we marvel at the serene expanse surrounded by seemingly infinite dimly lit candy-striped pillars.
It’s Bodegas Campos for dinner, with orange archways and retro posters, the wine glass is as big as my head. Roll out the barrel... the hallways are full of them.
A ‘water journey’ is the best way to start any day at Hammam Córdoba. Wish it was every day! An incredible massage, then hammam – floating about in dimly lit warm baths, then daring to take the plunge into an icy bath. Wim Hof would be proud.
We float out and into another religious procession. The church bells chime and the brass band play, as we are sandwiched in the crowd gawking at the candle-lit Virgin Mary.

Driving on to Seville via Carmona, giant black bulls loom on the horizon. (Thankfully, they’re cut outs.) On a tour of Alcazar and Cathedral of Seville, we scale the Giralda tower up a series of slopes, designed so you could climb the tower riding a donkey!
Onto La Terraza del EME for a refreshing drink on the roof. Dinner is at Bar Pelayo drinking sangrias and tasting tapas under the bull heads. Sunset cocktails on Hotel Doña María’s rooftop terrace enjoying the music and atmosphere. Next is relaxing sunny pool time up on Hotel Unuk’s roof, then a satisfying shop at boutique Tenderete.
Soon we are gazing up at blue skies through the honeycomb structure of Setas de Sevilla. The modern wa e-like structure, Metropol Parasol, juxtaposed with the historic buildings that surround it, has a gastro food
market and archaeological museum. Up in a spotty lift to the serpentine walkway on the observation deck, you can hear the chatter of people and the hubbub of the city below.
Perched at lively bar Donaire Azabache, we watch the world go by. Hanging jamons and amazing tapas washed down with a superb white wine. Clip-clop of hooves slipping on cobblestones as horse-drawn carriages pass. Oranges hang ripe in trees, threatening to splat on the pavement. A girl in a pink dotted flamenco dress runs past as we head o into the sunshine.
At Plaza de Toros Real Maestranza, the largest bullring in Spain, a large yellow sand circle of the round, red auditorium contrasts with the blue sky.
We dash to a flamenco show and can’t help but tap toes in time to the beat. An anguished singer wails. Loud banging heels, stomping and clicking fingers of the male dancer jolts me alert. Olé! The dancer loops
her spotted dress up, kicking the ru ed train into the air with her back heel. Fancy footwork. Clapping hands. Them, then us.
We cross over the river to the Triana quarter to Mariatrifulca for fine dining, hushed tones. We enjoy views of the river, but prefer to be in buzzy El Pintón, listening to Balearic tunes, stopping at a cute bar for a relaxed ambiance by the Alameda de Hércules arches.
Through the Renaissance gate of Casa de Pilatos where Lawrence of Arabia and Knight and Day were filmed, petals flutter from a magnificent bougainvillaea in a typical courtyard. Precious azulejo tiles adorn inside the Andalusian palace walls. Sherry tasting, stumbling out into the streets, blossoming jasmine scent infuses the warm air. Orange trees abound.
Saving the best until last, through Royal Alcazar Gardens into stunning Parque de María Luisa, to visit must-see Plaza de España, a giant curved tiled building with fountains.

Our education expert reaches a significant milestone and takes the opportunity to look at what has changed for the better in the industry - and what hasn’t
By SUE LAIDLAWThere’s a big birthday here, a 30th. However, it’s sadly not mine, but that of Laidlaw Education. We are now in our 30th anniversary year and are a long way from those first lessons around the kitchen table, with our first new-born baby asleep upstairs. It has been good to look forward to all the plans that we have in store and to reflect on our journey and, on a wider perspective, how things have changed – or not – in the world of education. Perhaps one of the biggest changes in the early 90s was the beginnings of the teaching of the National Curriculum. For those of you who are interested, the first elements of the National Curriculum were introduced in September 1989 as one aspect of the Education Reform Act of 1988 under the eye of Kenneth Baker. Nowadays, it is di cult to imagine school education without the structure of the National Curriculum, but has it improved the education of each child? Without doubt the structure of the plan ensures that all teachers know what they should teach and a clear plan is always important.
However, having worked through the preNational Curriculum days at the very start of my career and seen the changes that have been made through the decades, I can’t help wondering if there are elements that have been lost in the process. Like everything in education, drawing from the best of all parts leads to the best of experiences and outcomes for all children. I have seen wonderful inspiring teachers trying to continue to be inspirational whilst combining their unique skills with the limitations of the National Curriculum. I’ve seen children overcome by the constant testing and others who deem themselves “no good” as they compare themselves with their peers. The National Curriculum has enabled weaker teachers to teach better, but perhaps exceptional teachers have been less free to let their creative brains inspire.
Of course, so much more has changed too: IT, laptops and, latterly, Zoom and Teams lessons being one such area of development.
So, what of the world of tuition – a word that I hate, by the way. Well, that has certainly changed, too. Thirty years ago, any extra help that children needed after school and in addition to school was usually delivered by
Miss, Mrs or Mr Teacher who lived down the road. There were a few agencies, but there wasn’t an “industry”. Today, there are scores of agencies and companies abounding o ering all sorts of tuition services and making great promises. I have witnessed huge numbers of slightly anxious parents feeling that they must add this to their children’s list of activities and are cajoled into hours of extra tuition that may frankly not be necessary, required or best for the child.
Tuition has become a career choice for many graduates and, to be honest, a potentially very lucrative one for many, particularly for some who are less scrupulous and who have very little or even no teaching experience. Sometimes my heart aches for the wellmeaning parents who think that this is the answer to their child’s future success. Having been in the tuition world throughout these developing decades, I remain as confident as ever that it should be something that is used wisely and it is only right to guide parents as to when and how much extra help is required – integrity at all times, not profit at all costs.
So, in essence, there has been progress and development in all areas of education – they are pockets of excellence, but there have also been disappointments. Education has always swung like a barometer of ideas, best practice and opinions, back and forth. The truth is that there is a middle path that draws on the best of all aspects. Policies and ideas will ebb and flow, but at the centre is – or should be – the child. In our ever more complex world, this can sometimes become sidelined. And a final word to you as parents, and to myself, too: trust your own judgement as to what is best for your children and their education, in all its forms.

Q What originally attracted you to the role of Coopersale Hall Head?
A I joined Coopersale Hall School in September 2020, in the middle of Covid. It wasn’t an easy time for families, but they supported me and the provision we provided during that time. When I first saw Coopersale Hall School, I knew this was a school I would enjoy working at. The premises sell themselves, but when you meet the children you see just how warm and friendly the school is.
Q What would you say Coopersale Hall School is known for?
A We value the close working relationships we foster with our parents to ensure that our
pupils become capable, caring, responsible and enthusiastic young people who have the opportunity to make a positive di erence in the world. I am also privileged to work with an excellent body of sta who care about the children they work with and look to provide an exciting learning environment.
Q How do you feel about taking young children from 3 years upwards into the school?
A It really is a privilege to see such young children grow in confidence and character. I will have the rare opportunity to see those children when they are 11-years-old and some when they are 16.
Q September 2023 sees the first ever Year 7 cohort. How has this come about?
A Matthew Hagger, Group Managing Principal, purchased the neighbouring building in March 2020 as the world went into lockdown. It has taken three years to get to this point, with multiple specialists involved and various applicants to the relevant bodies.
This is an exciting time for our families as we now o er a facility for those families who want to keep their children with us rather than move them at the end of Year 6.
Q What will this o er parents of existing pupils in the juniors?
A The premises will be developed to accommodate the senior students, and the junior children will also have access to some of these new facilities. Our Year 6 children will have access to the senior Science Lab, IT Suite and Art/DT Studio. We are aiming for our new senior students to become learning mentors for our younger children as we develop the relationships between older and younger children.

Q What curriculum will you follow in the new senior set up?
A We are very pleased with the senior curriculum that we have been developing.
Matthew Hagger, Claire Osborn (Group Education Principal) and I have spent many months examining various models, recruiting sta and creating timetables. We emphasise creative and active learning. Academic success is something we
expect our pupils to aim for so that they can fulfil their potential and move on to happy and fulfilled futures after Coopersale Hall. Wellbeing has always been a core value at Coopersale Hall. We support our pupils to become confident, tolerant and articulate young adults. We will give them the tools to build their selfesteem and provide a compassionate and supportive environment.
Q Are you aiming to fill places in all senior year groups?
A In September 2023 we will welcome our first Year 7 students, and the phased introduction of Year 7 pupils will continue year after year. We feel that phasing in new classes is far better than a ‘scattergun approach’ as we will be able to dedicate the time and resources to creating a purposeful learning environment for all pupils.
Q What extra-curricular activities are o ered by the school?
A We currently have around 60 clubs and activities spread throughout the week for children of all ages. There really is something for everybody! Even more opportunities are being launched over the coming months to further develop our programme.
Q Finally, what else are you looking forward to as we approach the end of the current academic year?
A The summer term is my favourite term in the school year. Our children spend lots of time outdoors and there is real excitement in the air. We are a very busy school and I’m looking forward to Sports Day, Prize Giving, the concerts, class assemblies and plays just to mention a few of the forthcoming events.

Life at Epping’s Coopersale Hall School is set to change come September 2023 as the leading independent school will welcome its first cohort of Year 7 pupils.
Construction work is well underway on the development of new senior facilities in line with carefully crafted plans. Current buildings are being refurbished to accommodate new classrooms, toilets, a Science Lab, o ces, support rooms and an ICT Suite for use by the new senior pupils soon to be joining the school. A new senior block is also being built to accommodate further modern classroom
and learning spaces. Phase 1 of the project is due for completion in readiness for the new academic year starting in September 2023.
Moreen Barnard, Coopersale Hall’s Headmistress, comments on the changes: “We are very proud of our origins as a prep school that is now growing upwards. Our new senior developments are designed to preserve the supportive, family atmosphere of our already successful junior department.

The inside story on an art installation with a di erence, which is due to arrive in Colchester this summer 2023
Aunique visual arts event is set to arrive in Colchester later this year. Internationally known artist Will Teather will bring his illusionary globes to Colchester city centre this summer. The artist’s spherical orbs recreate real-life scenes in painstaking detail, taking in full 360 degree panoramas. These innovative site-responsive artworks will be displayed within the place it depicts, so you can compare Will’s scaled-down versions to their real-life counterparts. The globes present a unique marvel, and have been described by viewers as “ingenious” and “surprisingly absorbing and puzzle-like”, each containing surprises to draw the eye in.
These creations will be spread across Colchester, on a journey that will take visitors through everywhere from castles to a Georgian Townhouse and the iconic Lion Walk in the city centre.
Will’s globes have been exhibited across New York and London, but this will be the first time the artist’s works have been seen in Colchester. Each one typically takes months to create, as Will explains: “I can’t wait to unveil these new artworks. I hope that they present a unique visual spectacle and turn the viewer’s world inside-out for a moment. When developing the original idea of the globes I wanted to find somewhere di erent to take realist painting; a new adventure.”
