ith May signalling the beginning of summer and the Season, we're looking at lots of events and their sartorial requirements this month. There's the Chelsea Flower Show of course, for which it is only right to wear something floral. Or at least colourful. Then there are the inevitable weddings, which we discuss with bridal designer Caroline Castigliano, whose corsetry skills are famed – and there's Jo Whiley, possibly more often associated with a muddy field event than a day at the races, but as a perennially stylish woman she is offering tips on what to wear while perusing your racecard. Fashionwise, we also meet Zoe Jordan, who in her Chelsea atelier notes the similarities between Formula One and Fashion (and she should know, her father is Eddie Jordan), and swoon over the new collection of artistic scarves by Emma Greenhill. But it's not all about clothes this month. We've also had an exciting few weeks for food, with Chelsea becoming more of a foodie destination than ever. The Ivy has opened on King's Road, and instantly it is one of the most beautiful restaurants in London, we think – especially its fabulous garden – while Scott Hallsworth continues to excite our tastebuds at Kurobuta and Joe's Oriental Diner. We have been thrilled (and disgusted)by The Twits at the Royal Court and are coveting designer Kit Kemp's new range of furniture at Anthropologie. So we're advocating lots of things for May and we hope you enjoy the issue. u

PRUNELLA CLOUGH orn in Chelsea in 1919, painter and printmaker Prunella Clough attended the Chelsea School of Art until WW2 brought her education to an abrupt end. Conscripted to draw both maps and charts, Clough became an engineer's draughtsman and her early work is characterised by the subject matter of labour and the urban landscape. Toward the end of her life, Clough became regarded

largely as an abstractionist but her work always retained a figurative base. Introducing plant motifs into her urban scenes, Clough’s work became freer in terms of colour and scale making her playful works of art fascinating to study. ature is all very well in her place, but she mustn’t be allowed to make a mess of things.’ Thus spoke Flora Poste, the tidy-minded protagonist of one of the funniest English novels ever written. Stella Gibbons’ masterpiece is a perfect pastiche of florid literature and self-conscious melodrama, which those who have read too much Thomas Hardy and D H Lawrence will be familiar with. Would-be writer Flora, bereft of family but firm of mind, arrives at the torrid Cold Comfort Farm and sets up correcting its self-obsessed, oversexed and untidy inhabitants. No target is spared, neither by Flora’s determination nor Gibbons’ sharp pen. If you have not read it, you really ought to, and if you have, you should probably read it again, because there just are not enough books that are this good. ◆

It does not end well for either of them. ◆

THE INVISIBLE COLLECTION Stefan Zweig

In the run up to the Chelsea Flower Show, landscape architect Marcus Barnett discusses his award-winning garden designs Wo r d s s t e p h a n i e k i n g

t is a bold garden. I don’t think you can stand by my garden and say, ‘Oh, I kind of like it.’; I think you’ll say, ‘I absolutely loathe it,’ or, ‘I absolutely love it.’” For noted landscape designer Marcus Barnett, the RHS Chelsea Flower Show is “not a time for playing safe.” The former Captain in the Scots Guards is renowned for his fearless and highly conceptual growing creations. So after trading his army greens for literally, greener pastures at the tender age of 33, it’s no wonder that the fivetime award winner has established himself as one of London’s best garden designers. Barnett debuted his first risk-taking Chelsea Flower Show installation in 2005. The self-funded submission was a collaborative effort with fellow Inchbald School of Garden Design student Philip Nixon, and featured some of Lord Lichfield’s iconic portrait photographs. The pair have since unveiled plots sponsored by Savills in 2006/07, where Barnett solo designed an entry for Royal Botanic Gardens Kew in 2011. What does being part of the Chelsea Flower Show mean to Barnett? “Immense pride,” he says. “It’s an incredible privilege to be there.” Though the landscape architect considers his Fulham studio client projects “incredibly exciting,” he also notes that “very often, 99% of our work has a specific brief with a budget, geography, location, architecture, and it has to deliver those things.

ARTS & CULTURE / CHELSEA FLOWER SHOW Ignoring everything is what Chelsea gives you a chance to do.” So, how does Barnett’s 2015 garden grow? For this year’s Chelsea Flower Show garden with The Telegraph, he took inspiration from De Stijl, the 1920s art movement centred on the “process of dramatic simplification and abstraction.” Being “rather fond” of the distinct geometric forms that typify this Piet Mondrian aesthetic, Barnett incorporated the same strong, architectural shapes exemplifying the 20th century style. Through rectilinear plant spaces and primary coloured blocks, Barnett’s flourishing ode to neoplasticism offers a refreshing take on the staidly romantic gardens often recreated at the May garden showcase. But how much of a hand did The Telegraph have in his final design? “The Telegraph were kind enough to hand over complete license for creativity... having

no boundaries has been incredibly liberating.” However their design approval is not the only consent Barnett requires: “The RHS want to make sure that you have money, that the design is sound, and that you have the correct constituent parts in place to deliver the whole thing.” In short, the year-long process involves “huge preparation” to bring the garden to fruition. And from the so-called “white canvas”

IT'S A PRIVILEGE to be at CHELSEA FLOWER SHOW Chelsea Flower Show affords the landscape designer, to commissions “when you have existing architecture to respect or topography with which to work,” Barnett believes, “while they may impose regulations on design that you might not want, in actual fact they make your design better, more balanced, and relevant to its surroundings.” And this is the exact attitude Barnett has towards his upcoming Scott’s Restaurant collaboration. For “the last two-thirds of May,” the Mayfair eaterie will be “festooned with plants and flowers” for added ‘wow factor’, where he aims to “bring the countryside to London and give a softness to the facade of Scott’s.” Whether Barnett’s working within boundaries or allowed free creative reign, his ultimate goal is “not necessarily world domination.” Rather, he is thrilled by the “exciting opportunities” that are offered to him and his design team because, “The work with our clients, to build something that is long lasting, I think that’s an incredible legacy.” Evidently Barnett’s mid-30s career move is paying off in spades. ◆

FASHION in the FAST LANE Designer Zoë Jordan on experiential fashion and why she booked herself into boarding school Wo r d s E d w i n a L a n g l e y

‘A

Formula One team and a fashion brand are not dissimilar,’ says Zoë Jordan, founder of fashion label ‘Zoe Jordan’, and daughter of former F1 team boss, Eddie. I look at her dubiously but unperturbed, she continues. ‘In terms of the moving parts. A fashion show and a grand prix are kind of the same thing. There’s a sh*t load of work that goes on behind the scenes… everything is quite unglamorous and business-like. And then you send out these beautiful cars… [or] these beautiful models. There are similarities.’ We are sitting in Zoë’s showroom in Rossetti Studios in Chelsea. It’s an open space, a minimalist space – very white, very light, very bright. A collection of clothes hang neatly on racks, overlooked by a sofa on which we are lounging. Chillout music plays softly in the background and I find it all very relaxing and cool – rather like Zoë herself. It’s hard to imagine

her as a child, growing up amidst cars, mechanics and oil grease. But a few minutes in and it’s clear that Zoë Jordan could fit in anywhere. ‘I was the eldest of four and my dad was away all the time,’ she says of her childhood in Oxford. ‘I went to Oxford High… and I struggled with the ‘all girls’ thing… So I went into Blackwells [booksellers], sat down with the Good Schools Guide, and started [phoning up] for interviews… I booked in for an exam at Malborough, then told my mum that I had an exam to go to, and would she drive me? That was it.’ Off Zoë went to boarding school – a haven for sports, she discovered. ‘My coach was the England Hockey Coach,’ she notes. ‘I’m glad I did [it]. My parents, who came from Dublin, [thought you only boarded] if you were really badly behaved. It was like a borstal – you didn’t go to boarding school if you didn’t have to. I was trying to educate them. I did, but…’ she pauses for a moment. ‘You’re exposed to too much, way too quickly. I grew up way too quickly.’ Following Malborough, Zoë headed

FASHION / PROFILE to Newcastle to study – of all things – architecture. ‘I wish I’d gone to an American university now,’ she says. ‘[Newcastle] was just an extra four years of school. Learnt f*ck all. But I played hockey a lot.’ Incidentally, she also met her husband there, Steve Aspinall, who works in Private Equity and with whom she has two daughters, Eden (2) and Dylan (1). Following graduation, Zoë spurned a career in architecture and went into finance. She worked as a successful bond trader in New York where, ironically, she cultivated the vision for her fashion brand. ‘[I wanted to be] taken seriously in a work environment, with enough edge or enough style to [take my outfit] through to night... There was no way I would have gone from work to seeing my friends. Because I didn’t feel that comfortable in my suits... A lot of [my ideas] come from that.’ Like her father before her, who left banking to pursue professional go-karting (much to his parents’ chagrin), in 2007, Zoë quit the city (much to her parents’

A FASHION show and a GRAND PRIX ARE KIND of the same THING chagrin) and set up the fashion label ‘Irwin & Jordan’, with her friend Georgie Irwin. ‘It was about creating the perfect white shirt, the perfect jeans, the perfect tailcoat… We taught ourselves as we went along – [Georgie] didn’t have training either…. She left fairly early on but I kept the name at that stage because we’d done quite a lot of branding.’ Zoë carried on solo and her hard work paid off when she was awarded the BFC Elle Magazine’s Talent Launch Pad Award in 2010. Bolstered by critical acclaim, in 2011, she changed the brand name to ‘Zoe Jordan’, and the following year, was a finalist for Walpole’s Emerging British

Luxury Brand Award and shortlisted for the BFC/Vogue Designer Fashion Fund. Her collections were shown on the catwalk initially, but she quickly discovered presentations worked better. ‘What I do is more of a ‘daywear’ vibe… [And presentation] is more impactful… I’ve moved [my presentations] to New York [because] I feel that in order to have a really successful line you need to have a solid presence in the States.’ Zoë walks round the showroom and picks out various pieces to highlight. Stylish and androgynous, each epitomises the ‘boyish elegance’ for which she is known. She pays particular attention

to a jacket from the AW13/14 ‘Chicane’ Collection – inspired by racing – and later credits the ‘get-up-and-go’ mentality of Hong Kong (where she lived briefly as a newlywed) for bolstering entrepreneurial enthusiasm. Her designs are clearly influenced by her past experiences, and indeed, one gets the sense she wishes she had worn them whilst experiencing them. When she tells me her brand is more about functionality than an outlet for creativity, I see exactly what she means. ‘I come at [fashion] as a consumer. I’m a shopper,’ she grins. ‘I know what I’m looking for… There’s a gap there and you want to fill that.’

FASHION / PROFILE HER designs are clearly INFLUENCED by her past EXPERIENCES, and INDEED, one gets THE SENSE she wishes she had WORN THEM whilst EXPERIENCING THEM ‘I’m pretty glad I didn’t go to [fashion] school,’ she says later. ‘Because I would have been forced to pigeon hole myself in a way.’ Following the fashion norm is not for Zoë, who likes to think outside the box; a fact she demonstrates by hosting go-karting events and canapé making classes to promote her brand. ‘I’d rather put something together that’s more experiential,’ she says. ‘[To get] away from that very preconceived idea of what fashion is.’ Whilst her work life thrives on boundary-pushing, her home life is secure

in west London. Having lived on All Saints Road in her 20s, Zoë has returned to the area, and currently rents near Golborne Road. ‘Without being cheesy, I think Notting Hill does feel like home,’ she says. ‘Portobello’s got that Friday feeling… Sometimes I try to take Friday off to do the market, [to] see what’s going on... I’m not sure I’m a Notting Hill ‘aficionado’, I’m clinging onto it.’

She’s a business founder, a designer, a mother and a wife, but there’s no resting on laurels here. ‘I think there are two forms of ‘making it’,’ she instructs. ‘There’s the one side, which is critical acclaim… which we’ve done quite well in... But without a solid business, which can show really solid profits…’ she tails off. ‘I feel that’s something to strive for.’ If Zoë Jordan is the woman I think she is, I have no doubt she will find that stability. Bridal designer Caroline Castigliano shares how she helps her clients find their perfect dress Wo r d s s t e p h a n i e k i n g

aroline Castigliano has a lot of feathers in her cap: an incredibly successful fashion designer, an innovative entrepreneur, a devoted wife, a loving mum. The list goes on. But apart from the several labels used to describe her, she has just one fashion label. Castigliano’s eponymous brand, born in 1991, is now a name synonymous with elegance, understated glamour, and above all, bespoke luxury. Her signature aesthetic marries “classic lines, clean cuts” with unexpected details to balance a woman’s form and ensure her designs always have a “contemporary look.” Sitting in her beautiful flagship store on Brompton Road, Castigliano says that her clients “come from all over the world. People fly in from the Middle East, from all over Europe, they stay locally and they come to us for their dress.” She continues that the vast majority of her clients “have a real understanding of style,” where her brides “really like quality pieces that are really understated and very high fashion.” Has Castigliano noticed specific trends come through in recent years? “It’s more of a sensual look in bridal right now. The 1950s is really fashionable – very Jackie O – and previous to that we had a massive lace surge.” Though ultimately Castigliano believes the secret to guiding brides towards the right style is “understanding the dream that they have so far

FASHION / BRIDAL I WANT TO GIVE YOU the best figure you've EVER HAD created.” The blonde Brit maintains it’s critical to find out everything about the wedding, “Because once a girl has gotten engaged, booked the venue, decided where everyone will have the wedding breakfast, [there’s no way] she doesn’t imagine herself there.” I quiz the designer about her dresses' corsets; a detail for which she's become renowned. Castigliano smiles. “I spent an extraordinary amount of time on them [because] I believe you have to have a sense of comfort. I base all of my corsets on cotton, old fashioned metals, spiralling and elastication so it breathes. I want to give you the best figure you’ve ever had in your life, but I want you to feel comfortable.” How does she achieve this? “I drop the gown over the top of the neckline so it doesn’t look a corset,”

discloses Castigliano. “On your wedding day you’re being photographed from every possible angle. You want to look fantastic without trying.” But surely constructing this effortless finish doesn’t happen overnight. “We have dresses that can take up to a couple of hundred hours [to make], and we have dresses that we can run up in twenty hours.” In short, it all depends on the design – most of which average at £5,000 in price, with some costing up to £50,000. Unsurprisingly, Castigliano advises booking an appointment several months in advance: “The minimum we say is six to eight months.” That’s not to

say last-minute brides can’t purchase the designer’s exquisite designs off the rack, especially in the case of wedding dress disasters: “Sometimes we will sell a sample, but we’re well known for creating the fit... We take great pride in people saying, ‘Where did the dress come from?’”

Castigliano warns that the lead-up is as important as ‘the big day’ itself, distilling two decades’ worth of experience into the following pre-nuptial advice: “Look after your skin so it's really glowing; get lots of sleep; drink lots of water; go and get your hair done a good month before so it's sort of ‘worked in.’ Really prepare that 4-6 months beforehand.” Why is this so important? “When you turn up on your wedding day you [want to] feel the best you’ve ever felt your whole life,” asserts Castigliano. ABS: What kind of dress length would you recommend? JW: Just above the knee seems to suit me – I prefer things that show off my knobby knees rather than exposing other bits that are more wobbly. There are some great skirts just above the ankle that look ace with the right shoe. So either short or ankle skimming, but nothing in between. ABS: Is there a particular shape or texture you think works well at an outdoor event? JW: Something that doesn’t wrinkle is a priority. Nothing too silky because in all the excitement there will undoubtedly be spillages and stains are never a good look.

Something that makes you stand out from the crowd is a must. I think it’s probably all down to colour to do that.

ack Howard is a colourist with a cult following. He's the man responsible for Gillian Anderson's beautiful shade as well as for Donna Air's blonde locks; he's on call for Poppy and Chloe Delevingne and the iridescent white blonde he concocted for Ola Rudnicka was unmissable on the catwalks at New York Fashion Week. And now he's taken residence at the uber-stylish Paul Edmonds salon on Brompton Road – though calling it a salon is like calling the Chiltern Firehouse a caff. This is a grand townhouse dedicated to hair, and it feels like somewhere you can come to just hang out. Almost. Edmonds has been a Knightsbridge staple since the 1980s but this new site with its stylish panelled interior is bigger, full of luxe detailing and busy enough to create an atmosphere without feeling hectic or crowded. Howard, the man credited with introducing balayage to the UK, brings with him his new technique, babylights, which I am here to experience. Babylights are like highlights, only more babyish, inspired by those innocent, soft blonde strands found in children's hair. This is the antidote to the terrible stripey highlight that looks more like a zebra crossing than a sunkissed strand. Howard's method is instinctive and seemingly effortless – he selects colours and carefully picks up tiny sections of hair, applies colour and tiny foil wraps, and the results are the most natural, sunkissed warm tones highlights have ever created for me. Roll on sunshine. u

Doctor Who? Absolutely talks to the man behind many a face, Dr Khan Interview eve herbert ABSOLUTELY: How did the Harley Street Clinic come about? DR KHAN: My wife was working in medically-based skincare and had a room in Harley Street where she saw celebrity and media clients. DK: Sometimes only surgery will achieve the result you want, but some people do not want surgery, or their health may not permit it. There are always ways of improving the skin’s tone, texture and quality, and that can be as valuable as full on surgery. Ultimately, it’s the assessment that’s vital to a happy ending. AM: What is the longest surgery you’ve ever performed? DK: Fat removal and body sculpting can take up to four hours or more. AM: If someone is determined to get a procedure, but in your opinion it’s not necessary, how do you deal with it? DK: We don’t do it and explain why. Unfortunately, someone somewhere may perform the procedure.

AM: In you opinion, what public figure has used surgery well? And, what about a celebrity who has taken things to far…? DK: There are many examples of good and bad surgery: Sharon Osborne for instance has openly admitted to having surgery and looked amazing, though she may have gone a little far now. People who have had great surgery often do not admit to it. Gillian Taylforth is an example of good and appropriate procedures – she has returned to EastEnders looking younger than the son she is supposed to have given birth to 45 years ago. Paprika Mayo: • 4 tablespoons mayonnaise • 1 tablespoon smoked paprika • glug of chilli sauce or Tabasco sauce • squeeze of lemon juice METHOD

01 Make the marinade by combining the buttermilk with the spices and maple syrup in a glass or ceramic bowl. Season with salt and pepper, then add the chicken and mix well. Cover and leave in the fridge to marinate for 1 hour or as long as your patience allows. 02 To make the onion and radish salsa, combine all the ingredients and set aside in the fridge for 15–20 minutes. 03 For the paprika mayo, combine all the ingredients in a bowl and season to taste. 04 When you’re ready to cook the chicken, combine the flour with the cayenne and lemon zest in a shallow bowl, then season generously with salt and pepper.

Working in small batches, remove the chicken from the marinade, trying to keep as much marinade clinging to the meat as possible, then put it straight into the flour mixture, coating it well on all sides. Carefully add to the hot oil and deep-fry for 3–4 minutes until golden brown. Remove the chicken from the oil and drain on paper towel.

To assemble the tacos, place the shredded red cabbage in the middle of a tortilla, followed by the paprika mayo and the crispy fried buttermilk chicken. Top with the pickled onion and radish salsa, before garnishing with coriander and chilli. 07

love this dish. It’s simple and hard to get wrong, which means it’s perfect as a brunch, lunch or dinner dish. The spices, combined with runny-yolked eggs, feta and fresh herbs work a treat. This is also great as a sharing dish, so don’t save it just for lazy Tuesdays.

INGREDIENTS • glug of olive oil • 1 red onion, roughly choppe • 3 cloves garlic, crushed and roughly chopped • 1 red chilli, thinly sliced • small handful of oregano leaves, thinly sliced • 2 teaspoons smoked paprika • 2 teaspoons ground cumin • 2 x 400 g (14 oz) tins of cherry tomatoes • 4–6 free-range eggs –one per person • 150 g (5½ oz) feta, crumbled • handful of roughly chopped coriander (cilantro) • handful of roughly chopped parsley For the Garlic croutons: • 1 fresh crusty loaf • glug of olive oil • 2 cloves garlic, cut in half lengthways • small handful of roughly chopped parsley METHOD

01 Start by pouring a glug of oil into a skillet or frying pan over medium heat, then add the onion, garlic, chilli, oregano, paprika and cumin. Season with salt and pepper and cook, stirring occasionally, for a few minutes until the onion softens, then add the tinned cherry tomatoes. Once the sauce starts to bubble, lower the heat and simmer for 10–15 minutes to let the flavours deepen. 02 Crack in the eggs, spacing them out evenly. Turn the heat up to high, cover the pan with a lid or foil and cook for 3–4 minutes or until the egg whites are set but the yolks are still runny. 03 While the shakshuka cooks, chop or tear your loaf into roughly 2.5–5 cm (1–2 in) hunks. Heat a frying pan over medium–high heat and add a glug of oil, followed by the bread. Fry the croutons until golden brown all over, shaking the pan every now and then. When you’re happy with the level of crunch, drain the croutons on paper towel, then rub all over with the cut side of the garlic cloves and sprinkle with parsley. 04 Serve the shakshuka topped with a generous sprinkle of feta, coriander and parsley and a grinding of black pepper. Scatter over the garlic croutons, then place in the middle of the table and let people help themselves.

STICKY TOFFEE CRÈME BRÛLÉES Preparation time: 25 minutes | Cooking time: 1 hour 40 minutes | Feeds: 6 (with leftovers)

METHOD 01

Preheat the oven to 190°C (375°F/gas mark 5).

02 In a bowl, combine all the sticky toffee sponge ingredients, then pour into a deep greased or non-stick rectangular baking tin (about 30 x 20 cm/12 x 8 in). For the sticky toffee sauce, scatter the sugar over the sponge mixture, along with the cubes of butter, then pour over the boiling water. Cook in the oven for around 40–50 minutes. You’ll be left with a gooey, sweet and sticky toffee pudding. Let this cool and it’s ready to use as the surprise centre of your crème brûlée. 03 Reduce the oven temperature to 150°C (300°F/gas mark 2) and place six small ramekins in a roasting tin. 04 For the crème brûlée, pour the cream into a small, heavy-based pan and add the vanilla pod and seeds. Bring to the boil over a medium–low heat – as soon as it starts to bubble, take it off the heat and remove the vanilla pod. In a heatproof bowl or jug, mix the egg yolks and caster sugar until just combined then pour in the cream, stirring well to mix 05 Divide the sticky toffee pudding between the ramekins: aim for a generous teaspoonful, along with a bit of the sauce, then pour in the cream and egg yolk mixture until it completely covers the sticky toffee pudding. Place the ramekins in a roasting tin or baking dish tin, then pour in enough cold water to come twothirds of the way up the sides of the ramekins. Bake for about 40 minutes until the custard has set – it should only wobble a little when given a gentle shake. Allow to cool, then chill until ready to eat. 06 Before serving, sprinkle the tops of the cold crème brûlées with demerara sugar and caramelise the tops with a kitchen blowtorch or under a hot grill (broiler).

Garden party The Ivy Chelsea Garden is King's Road’s most fabulous new opening Wo r d s p e n d l e h a r t e

e’re here a few days after a glitzy opening party and just a few weeks into this eaterie's new life, but already it feels as though the place has been here forever. In a good way – an authentic, lived-in way. Partly because it’s full of people all looking at home and partly because of the stylish look, cleverly calculated to look fresh and contemporary as well as established. The Grade II-listed former Henry J Beans’ site has been transformed into a vast, glamorous space that’s as

much 1920s Paris as 2015 London and its main attraction is the vast, south-facing garden (this was a bowling green in the 18th century) that has been beautifully landscaped by Ginko Gardens and is all fountains, roses and wisteria. Inside, there's a green and orange theme, with lots of plants, mirrors and beautiful tiles, designed by Martin Brudnizki. With half of tables set aside for walkins, competition for bookings is fierce. We kick off with champagne before our starters arrive: tuna carpaccio fills the plate in an impressive circle with spicy avocado and radish, while crunchy fried prawns with miso and wasabi mayonnaise offer the perfect crunch with a mild wasabi bite. It's an unpretentious brasserie menu and there are lots of steaks, grills and shepherds pie as well as an extensive fish list. We opt for rack of lamb which comes slightly bossily 'rare or well done, nothing between' so we choose rare, and they're right. Sauteed tiger prawns with ginger and chilli are huge and flavourful, though served slightly awkwardly on a too-small plate and accompanied by a boring-sounding but surprisingly delicious grilled sweetcorn salad, featuring slivers of almostblackened sweetcorn of the most moreish crisp texture and sweetness, almost as moreish as our mountain of zucchini fritti. For pudding, the chocolate bombe literally is the bomb, all melting chocolate and milk foam with hot salted caramel sauce that pours over to shatter the perfect honeycomb-filled sphere. Next time we'll sit outside and try the breakfast menu, because we'll certainly be back. u

Joe's Oriental Diner Scott Hallsworth is slowly taking over the King's Road Wo r d s p e n d l e h a r t e

intriguing, with ingredients spanning plum wine and sake. But we’re moving swiftly on to Joe’s, where there are just 38 seats with not much space between them, an open, busy kitchen and a tiny but well-stocked bar. Lights are dim and the vibe is definitely dive. It’s a small and understated menu, based on food from Asian ports, with all dishes designed for sharing, as at Kurobuta. We loved battered prawns and walnuts in sriracha mayo, and creamy crab wontons, and the mysterioussounding mushroom san choy bao, which

cott Hallsworth is certainly having his moment. This former Nobu head chef has devised a winning formula with Kurobuta, the Japanese-inspired eaterie that’s more grunge than starched and has blazed a trail for the successful pop-up. Kurobuta started as a King’s Road pop-up before establishing a permanent home near Marble Arch, but King’s Road remained so popular that it stayed, only on a larger site, and the original pop-up became Joe’s Oriental Diner. Are you keeping up? So now on King’s Road there is Kurubuta, which feels like a bit like a Berlin bar in the 1990s, all Sonic Youth posters and loud music, albeit populated by a shiny and slightly overdressed Chelsea crowd with drivers waiting outside. And down the road is Joe’s, less of a destination and more intimate thanks to its diminutive size. So it is possible, as we discover, to visit both in one evening, starting with

cocktails and snacks at Kurubuta – where we were blown away by Jerulsalem artichoke chopsticks with truffle ponzu dip. These are easily the best ever Jerusalem artichoke dish, enough to justify the root’s entire existence, using the unusual and distinctive flavour as a soft filling for a crunchy, spring-rollesque stick. Cocktails here are equally

is an intensely mushroomy and spicy mix served with a pile of crunchy lettuce leaves for wrapping and thin glass noodles. Next there’s the delicious yellow snapper curry, amazingly gingerish, and bbq pork belly which is soft and tasty, though slightly too oily, and a dish of eel fried rice with lime and sticky soy, which is minty and unusual. Duck leg red curry with lychees is intense, and a side of roti comes as a pile of little pancakes. Pudding is the alarming-sounding moshi ice cream balls, though they are only slightly chewy and delicious. It’s an appealing and busy place, offering fewer gastro epiphanies than Kurobuta, but a fun and laid back experience. ◆

EVE HERBERT: How would you describe your style? KIT KEMP: Colourful and carefree but deceivingly detailed.

EH: Where do you look for inspiration? KK: I love folk art, handmade crafts and natural materials.

EH: What is your favourite interior anywhere in the world? KK: Charleston House in Sussex. Every wall is painted in every colour and they have made their own carpets, it’s a work of art I just wish it had central heating. ◆

EH: What was the vision behind Ham Yard? KK: It’s a little village in the heart of London with shops and restaurants set around a central courtyard with five fully grown oak trees we had craned in place. EH: How does designing a hotel interior differ from working on personal projects? KK: Surprisingly little. I would never put anything in a hotel that I didn’t want to use in my home, but I can be more adventurous and slightly more theatrical with the hotels EH: Tell us about collaborating with Anthropologie. How does their vision tally with your style? KK: It’s a good fusion because they love handcrafted, hand-sewn pieces and they also love colour. The whole world is our oyster, we look all round the world for our inspiration. EH: Much of your work is in the states, where you are seen as having a very

Advice for students and parents on picking the best kind of holiday tuition before exam season starts he epithet of last month’s column focusing on the T need for balance in the build up to stressful public exams, should not be lost in their aftermath. Post exam leave and the long summer break should absolutely provide respite from arduous hours in the library. Of course steam must be let off and of course heady summer nights will be at the forefront of most teenagers’ priorities. And rightly so – they have worked incredibly hard (we hope) and should be rewarded for their efforts. I still vividly remember the post-GCSE holiday that my friends and I were let loose on… it was almost considered a rite of passage. Eleven weeks, give or take, is a considerable chunk of free time. Having spent so much time focusing on academics, it should be used as valuable period to align interests and skills. Encourage your child to balance their socialising with time to be productive and achieving – whether undertaking work experience, attending a sports camp, visiting a language school or perhaps becoming involved in local voluntary work. By broadening their horizons in this way, teenagers will not only learn the hugely valuable skill of balancing work and play, but with their achievements their confidence will flourish and they will relish the parties even more. u

Slow Learner

A new movement that says a real education can’t be rushed is gaining ground W o r d s A M a n d a C o n s ta n c e

emember the slow food movement? A reaction against mass-produced, air-freighted food led to a minor revolution. Well, now we have slow education. One of its promoters is Mike Grenier, an English teacher and housemaster at Eton who cofounded the movement. Grenier says: “It struck me that the model of processing people through exams with narrow ideas about teaching, was mimicking the worst aspects of a McDonald’s production line.” He became interested in creating a model for education that makes time for creative teaching and learning. It is less about teaching to the test and more about allowing children to think independently. It advocates long-term projects to allow children to experiment – and sometimes to fail as they learn. Matthew Moss High School, a mixed comprehensive in Rochdale, signed up to the movement 18 months ago and so far, it’s a great success. Three lessons a week have been freed up in years 7

and 8 to give students time to develop projects they are really interested in. At the end, a viva examination explores their knowledge and understanding. The school has also developed a scheme whereby younger students volunteer to attend classes given by sixth-form pupils. The topics they teach aren’t connected to the exam syllabus; they are just of personal interest to the student teacher. Some critics query whether such ‘project-based learning’ is a return to the bad old days of the 1970s when children were left with gaping holes in their factual knowledge. But Grenier robustly refutes this, saying that slow education is avowedly not anti-academic. “We’re not progressive,” says Grenier. “The academic is fundamental. We also believe in teaching people how to do stuff. It is about producing self-reliant children and adults. In fact, it could be seen as highly academic, since it values learning for its own sake rather than for where it could lead.” u sloweducation.co.uk

hy would you go to Gstaad in summer? I had been posed this question before setting off on my brief, mid-July sojourn to the idyllic Alpine village, and during the train journey from Berne airport through the picturesque Swiss landscape, I had time to ponder it. True, it was a few degrees cooler here than the London I’d left behind (typical) and the chalets did seem to have something amiss without their snow-covered roofs and icicles, but Gstaad outside of ski season is certainly not without its charms. For one thing, Switzerland is visually stunning in summer. The alpine peaks are still dusted in snow but the land flourishes with spring flowers. Everything is a lush shade of green, and great plumes of cloud seem to tumble down the mountains. The two-hour train journey simply flew by, with the glorious views providing ample distraction.

Gstaad’s motto is: ‘Come up, slow down’ alluding to its leisurely pace and high altitude. Actress Julie Andrews, who owns a holiday home in the area, describes it as the “last paradise in a crazy world.” Along with Andrews, a plethora of famous dignitaries have chosen Gstaad as their holiday getaway, and looming over the centre of town is the retreat of choice for the world’s elite: the famous Gstaad Palace hotel. Chugging into the quaint train station, a chauffeur in immaculate Gstaad Palace uniform doffs his peaked cap and imperceptibly takes my cases from me. A lift to the hotel is welcome but somewhat superfluous; the Palace is mere minutes away and is visible from practically every angle with its castle-like structure and extravagant towers. The Palace may look imposing on the outside, but once inside it’s as cosy and intimate as any alpine chalet. The interior decor is a tasteful Swiss palette of subtle check, muted colours and traditional wooden

A small balcony jutting off my spacious bedroom provides views across the village and a personal sanctuary in which to sit back, take in the sublime surroundings, and relax. Gstaad Palace opened in December 1913 and, following a hugely successful inaugural skiing season, the building was extended the following year. The hotel has survived two World Wars and ensuing economic turmoil, and has been managed by the Scherz family for nearly 80 years. After the Second World War, international music stars such as Marlene Dietrich, Édith Piaf and Louis Armstrong held exclusive concerts at the Palace, and the hotel has attracted Hollywood stars and royalty throughout its history, welcoming everyone from Paul McCartney to Princess Diana. Rumour has it that Michael Jackson, friend of Palace regular Liz Taylor (whose husband-at-the-time Richard Burton said they “only felt home in Gstaad”), enquired about purchasing the Palace, simply because he “liked the castle.” The hotel is still synonymous with celebrity clientele and there’s a distinct air of

glamour to it, particularly inside the retro Greengo night club, which opened in the 1970s. But the Palace embodies a relaxed, intimate atmosphere, and it’s this plus an unrivalled personal service that keeps guests – celebrity or otherwise – coming back year after year. But what is Gstaad’s appeal outside of skiing season? Well, for starters, summer may be the one time you’re physically able to stay in the Palace – its winter season sells out months in advance. However, another attraction is that, unlike other alpine resorts, Gstaad is very much open over summer, and there’s a host of cultural and sporting activity. Most famous is the Crédit Agricole Suisse Open tennis tournament, which

Another must-do is a visit to the Palace-owned Walig Hut, a traditional Swiss cabin 1,700 metres above the village of Gsteig, originally built in 1786. With little but the dulcet chimes of cowbells for company, Walig Hut makes a whimsical lunchtime or dinner excursion (traditional Swiss fondue is cooked by a private chef, followed by a shot of fiery Kirsch) or even a romantic overnight stay. Condé Nast Traveller awarded it Best Wilderness Hotel in 2013, and it’s easy to see why. One of my last excursions organised by the Palace was a horse drawn carriage ride around Gstaad. Our guide (born and bred in Gstaad) was infectiously enthusiastic, not to mention thoroughly knowledgeable. As the afternoon began to give way to evening, we trotted through the pristine town centre, where cars are forbidden and the Chanel and Louis Vuitton boutiques are ensconced in pretty, traditional chalet designs. Outside of the centre, at the grassy feet of the mountains, our guide told stories of growing up in Gstaad and pointed out her childhood home. In a moment of utter tranquillity, I deemed Gstaad to be the most romantic, idyllic and serene place on earth. So, why would you visit it in summer? e eschew the more formal Conservatory restaurant for the Gumstool Inn, a country pub that’s accessible through the main hotel. Seasonal local produce and hearty county fare are order of the day, alongside an extensive kids’ menu and roaring fire/ pretty courtyard tables. Breakfast in the Conservatory is extensive (there’s even a separate children’s breakfast menu, consisting mostly of pancakes).

e are in Tetbury, the deluxe family suite, which is really a dinky terraced cottage with its own front gate and little garden path. On the ground floor, a sitting room and vast bedroom with a four-poster bed; upstairs a spacious bathroom and children’s room with two beds. Fabulous details include dreamy window seats, a selection of toys and games, all the usual technology (large televisions, ipod dock, nespresso machine) and an array of Aromatherapy Associates products (albeit with slightly bossy notes instructing us not to take them home). The staircase comes equipped with stairgates, ideal for those with toddlers (and tolerable for those without).

he pool is mostly adults-only, aside from a couple of critical windows during the day when children dominate. There’s a stylish outdoor hot tub and an assortment of steam rooms. My relaxing facial, again with Aromatherapy Associates, leaves me rose-scented and peachy-cheeked.

TRAVEL / UK GETAWAY If you’re feeling energetic there’s a perfectly preserved 1930s, 50m outdoor lido and, of course, the entire Cotswolds for walking, horse riding, shooting even waterskiing. The town grew in fame and fortune following the visit of George III and the Queen in 1788 “to take the waters” and its Regency architecture, complete with garden squares straight out of Mary Poppins, survives intact. Where to stay in the “Jewel of the Cotswolds”? There is only one answer - Montpellier House. Cheltenham’s most fashionable, expensive and idiosyncratic neighbourhood. Montpellier is unashamedly genteel - a provincial Kensington that retains dozens of thriving local, independently owned shops, cafes, bars and restaurants. ON FOOD STREET Chef Ken Hom revisits Macau to sample the world’s original fusion cuisine Wo r d s K E N H O M

ne of the wonderful things about my life as a chef is that I never stop learning and finding cooking inspiration from my travels and the people I meet. So on a recent visit to Hong Kong I jumped at the chance to re-visit Macau, a unique East-meets-West corner of Asia, and uncover the vibrant destination I first discovered 25 years ago. The Portuguese arrived here in the 16th century and although Macau became a Special Administrative Region of China in 1999, their influence can still be clearly seen. I expected things to have changed since my last visit, but didn’t realise quite how dramatically the culinary scene would have evolved. Macau is much more than its ‘Las Vegas of the East’ reputation suggests and for a place measuring just 11 square miles, it packs a real cultural punch. After the 50-minute fast ferry ride from Hong Kong, my reintroduction to Macau started with a stroll around the historic centre, a UNESCO World Heritage Site. Around every corner of this atmospheric part of Macau there are beautiful Chinese and Portuguese buildings of every kind linked by a maze of narrow streets and squares. The marriage of Portuguese and Chinese cultures also inspired my first

culinary experience in Macau, with a visit to see my friend and chef, David Wong, who is an expert in the local Macanese cuisine. While he cooked up some delicious Gambas a Macau, he explained how Macanese cuisine came into being. It was down to the Portuguese, who brought with them flavours and cooking styles from their home and far flung voyages,

blending Portuguese and Chinese flavours with seasoning and ingredients collected from South America, Africa, India and Malaysia. It is amazing to think that Macanese cuisine was one of the world’s first fusion foods, established centuries before fusion became the ubiquitous concept it is today.

TRAVEL / GASTRO TOURS Together we headed to one of David’s favourite Macanese restaurants, Restaurante Litoral, where I fell in love with the Casquinha a Litoral, a baked crab meat dish served in a rich sauce followed by the classic Galinha Africana and African Chicken, roasted in paprika and basted in coconut, garlic and chilli peppers. The Pato de Cabidela, slowly braised duck infused with local herbs, wasn’t the prettiest of dishes, but tasted out of this world. The pièce de résistance was the Tacho, a rich winter stew with smoked meats. With a head full of new recipe ideas, I retreated to the Mandarin Oriental Macau. The hotel benefits from a gorgeous waterfront location which is best enjoyed in the evening when the skyline lights up and throws its reflection onto the surrounding lake. I was lucky enough to enjoy a meal at the hotel’s restaurant Vida

CUISINE WAS ONE of the first FUSION FOODS

Rica, where I caught up with my friend and brilliant chef, Dominique Bugnand. The restaurant impressed me with its signature dish of braised whole green garoupa with kimchi. The following day I headed for Taipa, the island sandwiched between Macau and Coloane, where I a whole street is dedicated to food. Rua do Cunha or the more colloquially named ‘Food Street’ and its surrounding roads in Old Taipa Village, offer a kaleidoscope of eateries serving Chinese, Portuguese and Macanese food, most of it from small local cafes, stores and stalls. Certain dishes have become synonymous with Macau and none more so than the humble Pork Chop Bun – mine was sweet and tender and the bun had a moreish crispy edge and was soft inside. That evening I returned to Taipa to dine at the famous Antonio’s. Opened in 2008, Chef António Coelho has brought his passion and gusto for Portuguese food and culture to the heart of Macau. To start I tried the Chouriço Caseiro

Assado na Canoa or roasted homemade Portuguese sausage and Bacalhau com Natas, shredded dried codfish baked in the oven with a creamy cheese sauce. My final day in Macau took me to Coloane, where Lord Stow’s bakery provides the sweetest of treats. Founded by Englishman Andrew Stow in the 1980s, the bakery is now run by his sister Eileen and is famous for one product – the sweet Portuguese egg tarts known as pasteis de nata. Following a visit to Portugal, Andrew developed his own version of these delicious, flaky pastries and thanks to his vision the bakery now sells an astounding 10,000 a day. A short walk through Coloane Village brought me to the

pretty Chapel of St. Francis Xavier, which was built in 1928 in the style of many of Macau’s baroque churches. My evening ended with a cocktail on the terrace of the hotel, Pousada De Sao Tiago. It was fitting that this delightful property overlooking the bay was once a fortress built by the Portuguese to defend Macau against pirates and other European nations. In many ways it represents what Macau has become – a place that protects its heritage but embraces modern luxuries. Over the past three days I had barely scratched the surface of what Macau offers foodies but it has certainly given me a reason not to wait 25 years before I board that ferry again. 

MODERNISM The uncompromising style that’s still controversial Wo r d s NIGEL LEWIS

odernism has a relatively short history in the UK but it’s been a contentious one. Disliked by a public who have struggled to embrace its tenets and reviled by Prince Charles, the style has remained a niche interest for most homebuilders and buyers. Consequently, Modernist homes are hard to spot in London. This would sadden Modernism’s original and founding architects. Mies Van der Rohe, Le Corbusier, Erno Goldfinger and Frank Lloyd Wright all tried to introduce a new way of thinking about architecture and, although they created very different designs, embraced a common set of ideas. These included that form that should follow a building’s function; simplicity; honesty about the material used (i.e. no cladding); walls at 90-degree angles and the use of materials originally destined for industrial, rather than architectural, purposes – such as plate glass. What few realise is that Modernism or ‘the Modern movement’ is really a US import via Germany. Architects such as Mies van der Rohe, who honed their skills in Germany’s Bauhaus school between the wars, fled fascism and emigrated to the US. Then, along with US home grown

THE MODERNISTS TRIED TO CREATE A NEW WAY OF THINKING ABOUT ARCHITECTURE talent such as Frank Lloyd Wright, they began designing the white, angular properties we have come to know. But it took another 15 or more years for the style to land in the UK. So where did Modernism spring from? Its roots came both from a desire to find a ‘new architecture’ after the two world wars, the availability of both new materials and building techniques and also from the heavy influence of Art Deco. Modernism went on to have a huge impact on our perception of what a house can be used for including open plan living. But planners are still suspicious of Modernism and in many of London’s conservation areas it’s impossible to get the green light to build a house in this style. Attitudes are changing, albeit glacially, and the occasional highviz project gets the go ahead, a good example being the Shadow House on St Paul’s Crescent behind Kings Cross, built in 2011. More famous but older Modernist houses include Erno

Goldfinger’s home at No.2 Willow Road in Hampstead. But perhaps the best known in London is the Grade I listed Isokon Building on Lawn Road, also in Hampstead, built and designed for furniture designer Jack Pritchard during the 1930s. While the Isokon is the most admired, Erno Goldfinger was the best known architect in the UK, partly because Bond creator Ian Fleming had a spat with him during the early 1960s and pinched his surname to give to one of his book (and later film) villains. As well as designing several private houses, shops and schools in London Goldfinger – who was a Hungarian émigré – designed a clutch of tower blocks including most famously Trellick Tower in North Kensington. This brutalist edifice, which features 31 storeys and some 217 flats, was originally built to house council tenants but a growing number of properties within it are now in private hands; a three bedroom apartment within it recently sold for nearly £700,000. Trellick Tower is an example of the controversy Modernism can stir up. Hated by many of the locals, it was given Grade II* status in 1998 and has been home to (and written about) by many musicians including Blur and The Clash. Perhaps finally Modernism is having its day. u

ou take a look at the unremarkable property details of this three bedroom Victorian house in South London and very little jumps out, apart from maybe its slightly shabby interior. And even that’s not too surprising – after all, the house is in the boho neighbourhood of Poets’ Corner near Herne Hill. “It’s one of those areas where a TV executive will live next to a wood cutter who will live next door to an up-and-coming singer,” says Anthony Shoring of local agent Kinleigh Folkard & Hayward. He says this property is generating plenty of online and offline viewings since it was listed on portal, OnTheMarket.com. So given South London is awash with terraced houses like this, what’s all the fuss about? The answer is that houses of this size and price within walking of a distance of a tube are becoming rare these days. The millionpound period home market is rapidly making its way further and further south of the Thames. Poets’ Corner is a rack of around six roads built between the twin forks of Railton Road and Dulwich Road north of Herne Hill. The area is called Poets’

Corner because most of the roads are named after bards – including Shakespeare, Milton and Chaucer. The developer who built these streets and houses during the late 19th century would be pleased. The area attracts the more artistic type including Claire Rayner’s son and restaurant critic Jay Rainer and singer La Roux, the ‘falsetto from the ghetto’ was brought up here. Poets’ Corner is popular not only because it’s a Conservation Area, but also because you’ve got one foot in Brixton and its reputation for urban grittiness, pop up restaurants, famous bars and clubs, while having another in Herne Hill, which is rapidly gentrifying into an outpost of Dulwich. “I’ve been selling homes here for eight years and the biggest joy of this area for me is Brockwell Park and its Lido, which is at the end of Chaucer Road,” says Anthony Shoring.

He says one downside is that good local schools are a bit thin on the ground and therefore the area attracts media types either without children or whose children have flown the nest. People like this, therefore, don’t need such large houses and tend to have more money at their disposal. This is all pushing up prices locally, and quite dramatically too. Houses like this have been going for nearer £1m but this property, because it has been rented until now and needs money spending on it, is going for somewhat less. Its interiors aren’t that bad really. The tenants who lived here until recently were a lucky bunch – one of the bedrooms has a chandelier and the house is awash with lovely, original fireplaces. On the flip side the lounge features an obligatory round paper lantern, beloved of all lets. “If the property’s right around here then there’s huge demand,” says Anthony. “We sold a house on Barwell Road recently and, after first listing it for £800,000, it went for £827,000 after sealed bids.” He also says a similar property to the Chaucer Road but in better condition went for £940,000 in Shakespeare Road recently, “which was new ground for us.” u
