Goodbye winter blues, and hello spring sunshine! The season of blooming gardens and chirping birds is upon us in full force. For me, spring has this magical way of bringing hope, renewal, and the promise of a fresh start.
With that in mind, this month I will make the most of Cheshire’s picturesque countryside and historic landmarks, and set time aside for personal growth and making positive changes.

Once. Plus, being a die-hard fan of Peaky Blinders series and like many other fans will recognise, Arley Hall was also the home of Thomas Shelby from the third series of the brilliant show.
I’ll likely be looping around Countess of Chester Country Park too, taking in that fresh air with our English bullmasti Trevor and British bulldog Tilly.

Adding a touch of personal development to my spring itinerary, later this month I’ll be attending the “Anything Is Possible Conference”, it will be an eventful and inspiring day with personal development and expert workshops. I’m looking forward to seeing the Wilmslow-based curve model and content creator Sophie Hughes’s keynote talk on the power of self-love, self-acceptance and body confidence. She has starred in Absolutely Cheshire before and is so inspiring.
As well as getting to enjoy the outdoors, there is something else that will entice me inside too this month. I have always been a fan of hitting the charity shops in Cheshire. Supporting the stores not only contributes to the local community, but I’ve found a few wonderful designer items and vintage pieces. Jen Graham (@charityshopgirlcsg) shares on socials the best places and stores to grab a bargain and thrift in Cheshire.

ver the weekend of 20-21 April, the popular Sandbach Transport Festival returns and this year is already revving up to be one to remember. This two-day extravaganza will have a brilliant Foden and ERF exhibition on the Saturday, plus 80 cars, 50 trucks, 45 motorcycles and 10 steam engines to see. With live music, food, drink and stunts, this will be a fun event for the whole family.
The town's transport heritage is celebrated with the main event: a variety of vehicles from vintage cars to modern classics, from trucks to planes and everything in between will be on show, with the opportunity to get behind the wheel of some true stunners.
Showcasing local talent in a celebration of music with a carefully curated line up of bands and acts, Saturday is live band day and they have some returning acts alongside some new talent. Thanks to Sandbach Town Council, they have a fantastic day of free entertainment including Henry Myles, Jon Stevens, Jordan Samantha Yates, as well as headline tribute acts such as Bon Jovi, Pink and Freddie Mercury.
There will be lots of family friendly entertainment suitable for all ages. Melissa Porter on her love for Cheshire, parenting books and why she’s set to be the new Jerry Springer on TV

Melissa Porter may have become well-known on our TV screens in rather sedate shows like Escape to the Country and Countryfile, but in person she’s something of a firebrand. Forthright, direct and happy to discuss her personal life, you can see why America sees her as the potential new Jerry Springer.
But first, the reason Absolutely finds itself in Mere is to chat about Melissa’s new book, Mastering the Single Parent Game. “It’s a 20 minute short read written for everyone frazzled thinking about common parenting conundrums,” she explains. “We’ve all had those moments when you hate your ex and can spend time angry at them, and instead want an alternative
way to deal with them or to think about them. Pick this book up and change your thinking if you want a di erent relationship with your ex and to be a better parent.
“I had a relationship break up and was a single mum for many years,” she adds, “and if I had £1 for every time someone asked me how come I was happy and peace-filled amidst it, I’d be a billionaire. I also wanted something short and sharp for people to shoehorn into their already overloaded days, versus adding to it with a 300-page book to read.”
Today, Melissa lives with her new partner Nick Freeman, a criminal defence lawyer, and their son Pierce, who is the key inspiration to writing down her parenting thoughts. “I was entrusted with the biggest gift I’ve ever been given, a human life, and I took the responsibility seriously,” she says. “Every stage I knew was valuable for him to learn from me
how to become a human. Children learn by mirroring the behaviour of their caregivers, so the way we behave is everything.”
Would she have changed anything about Pierce’s early years? “I’m a big believer in having zero regrets. Why? If we change one aspect of our life, it all changes. Think about a boat slightly changing direction. By the end of its trip, it will have moved miles o its original course, with one small adjustment. Human behaviour is the same and I love my son and my life and wouldn’t change any of it now as it’s amazing.”
Considering Melissa’s openness in this interview, it will perhaps come as no surprise that she is a trained life coach, which sits on her CV alongside her extensive TV presenting career, with qualifications in counselling (BACP) and as an NLP practitioner. “TV was first and gave me a chance to develop my love for people and their personalities,” she explains. “I love seeing a client come into a

session with what feels like the weight of the world on their shoulders and then to see them leave looking lighter and brighter and more energised is everything. I have a dynamic coaching style and with as few as one session results are immediate and transformative. I help men and women with confidence issues and to remember who they are before everyone else had an opinion about their life. Specifically, men and women who either want to leave or are amidst an abusive relationship.
“TV was an incredible training ground for me to learn to actively listen, which is an underused and underrated skill,” Melissa continues. “To use one’s intuition to figure out what someone is really saying behind their bravado or pain and hurt. I remember presenting a BBC format and relocating a family somewhere around the world, and the woman looked terrified, but was saying she was happy to move. Her words were saying one thing, but her body language contradicted her. She didn’t want to relocate and her husband was press ganging her into it.”
There’s plenty of strings to her bow. Melissa is an accomplished writer and has written travel, property and lifestyle articles for Google, Yahoo and AOL. She has been brand ambassador for various luxury brands, including Ferrari and Miele, and in her early career worked in marketing for big brands like Marks and Spencer, Playtex, Wonderbra and The Body Shop where some of her work won awards.
TV, she says, came about by chance. “I loved glamour and travel and after university

applied to work as an air hostess with Virgin Atlantic,” she says. “I got the job and was spotted by Granada Men and Motors and asked to host a car show. I asked Virgin if I could delay my training with them while I presented the show and they said no. The rest is history – the TV career snowballed.”
Many people will recognise her from the numerous shows she presented on TV over the last 22 years on the BBC, ITV, Channel 4 and Channel 5, including To Buy Or Not To Buy, Britain’s Dream Homes, Get a New Life and Put Your Money Where Your Mouth Is – and her career on the screen shows no signs of slowing down. “I was recently screen tested by NBC in NYC to work on the Maury Povich show or in a similar format and this is my dream. Move over Jerry Springer – a new girl is in town!”
Before answering a call from across the pond, Melissa remains more than happy at home in Mere. “We live near Knutsford and love the outlook onto water and being surrounded by nature. It’s so convenient to airports and motorways, but also is
peaceful and visually stunning,” she smiles. “I’m obsessed with walking so I love anywhere around Macclesfield Forest. The best massage in town is by Emma at the Body Clinic in Hale, Pilates is my guilty pleasure with Carrie at Soul Reformer in Knutsford, and I can’t get enough healthy food for lunch at Altrincham market.”

Parkgate is a charming and historic village situated on the Wirral Peninsula in Cheshire. A look back at some famous gambles
The very first winner Lottery (1839) was made 5/1 favourite following his earlier success in the Cheltenham Steeplechase.
Another successful 19th century punt came in 1866 when owner/trainer Edward Studd had £1,000 at 40/1 on Salamander. His £40,000 winnings would equate to nearly £3 million at today’s values.
Manifesto hit the bookies hard on both occasions he won the Grand National, in 1897 and 1899. He was sent off 6/1 favourite for his fi rst win when owned by heavy-gambling Irish solicitor Harry Dyas. He was 5/1 second favourite two years later when scoring for new owner John Bulteel. The 4/1 favourite was his halfsister Gentle Ida, who fell.
A confident Vincent O’Brien told owner Joe ‘Mincemeat’ Griffi n to have a good bet on Early Mist in the 1953 race. Griffi n won £100,000 when his horse came in and he also owned the 1954 winner Royal Tan, trained by O’Brien too.
Papillon’s success in 2000 for trainer Ted Walsh and his jockey son Ruby was a popular victory. Tipped by the Racing Post’s Pricewise column at 33/1 on the morning of the race, he was sent off at 10/1 by race time.
Part-owner Mike Cutter estimated his total winnings were £800,000 when Monty’s Pass scored in 2003. The fi veperson Dee Racing Syndicate netted over £1 million on the winner, who started at 16/1 but had been backed down from 66/1 by his owners.

changed regularly and ticked all boxes on budget and stylistic fronts. It became a great destination for those wanting well sourced wines, priced reasonably and served alongside high quality cheeses and charcuterie.
Q What food did you o er?
A Knowing how important food is to wine, but being limited by time and space, the original Covino relied heavily on the quality of what ended up being a very concise little list of snacks. Cheeses were sourced, and still are, from La Fromagerie in London. To complement the cheeses I’d slice charcuterie to order, this was sourced from a variety of places like Tempus, Une Normande à Londres and Brindisa.

Covino has been a Chester hot spot since opening as a wine bar in 2016. Owner Chris Laidler tells Absolutely how they did it
Q What was the original inspiration behind opening Covino in 2016?
A After realising I’m more motivated by the content of a job than its remuneration, I decided to pursue subjects that stimulated me most instead of what paid the best. This led to a degree in winemaking and a subsequent five years in London importing and distributing wine to some of the UK’s top restaurants and hotels. During these child free years, my partner and I had the luxury of spending weekends away in di erent parts of Europe where we fell in love with the charming little wine bars and restaurants of Italy and France. I guess you could say it was my interest in wine and a ection for the places I enjoyed drinking it most which led to me opening my own version in my home town of Chester.
Q You were a wine bar and shop then – what exactly did you o er?
A We o ered an abnormally large range of wines for a location of such small dimensions. Our selection of just over 100 di erent wines
Q Why was Chester the perfect spot for you to launch Covino?
A A little tired of living in London after five years I wanted to move back home. At the time Chester didn’t really have anything like Covino and I often wondered why no-one had filled that gap – so I decided to fill it myself.
Q How soon did you realise you were onto something?
A I was told by a few people in the run-up to opening the original Covino that it’d never work in its secluded, slightly o the beaten track location. A year later we were brimming with regulars, some of whom have gone onto invest in my most recent restaurant opening, Climat.
Q Why did you move to Northgate Street in 2018?
A At the time Chester seemed to have a huge number of vacant commercial properties, so you could say I was spoiled for choice. I was quite particular about the kind of unit I might one day look to relocate Covino to. After about six months of keeping an eye on things, a much-loved chocolate shop based just around the corner from the original Covino went out of business and provided everything I was looking for.

Q When you opened the new site, how di erent was Covino as a business?
A Serving cheese and charcuterie in old Covino was great, but it came with limitations when pairing certain wines on our list. Our evolution during the move from a wine bar to restaurant was by far the greatest change to the business. Having a proper menu of substantial dishes helped frame much of our wine list in a much better light than cheese and charcuterie could.
Q How do you approach the menus?
A Our chef, George Prole, loves using seasonal produce sourced as locally as possible. That said, if the best hogget we can get hold of at the time just happens to come from Yorkshire, he’ll be happy to go with whatever is best. For our popular sell-out supper clubs our approach to the menu di ers slightly from the norm, in that we choose the wines we’d like to serve and write the menu around them.
Q Why did you o er small plates?
A Although the concept of small plates has been available in tapas format for a long time, serving small plates was a relatively new concept to Chester in 2018. At the time there were many naysayers who didn’t like this ‘new’ way of eating, but small plates have quickly become the norm amongst many restaurants of varying cuisines and styles. I love them for the variety they allow the guest to experience in one meal.

Q Where do you tend to source your produce from?
A We source our wines from about 10 regular importers we use. They each specialise in something slightly di erent from the next. Produce for the kitchen comes largely from local growers, such as Field 28 in Daresbury who we use for organic vegetables. We source some of our beef from Jane Oglesby’s regenerative Cheshire farm. In between carcasses from Jane, we use Swaledale in Yorkshire who have some of the best hogget you’ll come by, as well as exceptional beef and pork. During the winter months the large majority of our vegetables come from Organic North. All our seafood comes from Flying Fish based down in Cornwall.
Q Could you pick out 2-3 dishes that you really love right now?
A I’ve just picked up a copy of today’s menu. One dish I enjoy every time I have a meal here is the queen butter beans served very
simply with decent olive oil and lemon. Where possible, I love cured or raw fish and meat raw. I think it’s a great way to enjoy very good quality produce. With this in mind I’d choose the cured chalk stream trout with rhubarb and ponzu – a really clean little dish – as well as a bistro classic with a bit of a twist in the beef tartare bound in tonnato sauce and capers.
Q What are the plans for spring?
A Spring is one of the most exciting seasons in many kitchens. I’m always a fan of wild garlic and its many uses. Coming out of winter Field 28 will start coming back into play, much to George’s delight! Jane Oglesby has some sheep she’s hoping to fatten up on spring grass, so we hope to take a carcass from her when they’re ready.
Q What kind of special events do you host?
A We host ever popular wine buying fairs in summer and at Christmas. They’re a great opportunity for us to go back to our wine retail roots. The only other events we run continuously are our quarterly sell-out supper clubs.
Q What do you make of Chester as a foodie hotspot?
A I’m from Chester, so I’ve seen it grow from strength to strength over the years. When it comes to food I think it punches massively above its weight. You can get the best pizza in the North from Stile Napoletano, some of the best tapas around at Porta, as well as enjoy the simple pleasures and comforts of Cornichon – one of my favourite places to enjoy a meal on a day o .

INGREDIENTS
• 1 x 7g/¼oz sachet fastacting instant yeast
• 1 tbsp granulated sugar
• 250ml (8fl oz/1 cup) tepid water
• 55g (2oz) butter, melted, plus a little extra for brushing the finished loaf
• 200g (7oz/1½ cups) strong white bread flour
• 150g (5½oz/generous 1 cup) plain (allpurpose) flour, plus extra for dusting
• 3 tsp fine sea salt
• 200g (7oz) chocolate hazelnut spread
• 75g (3oz) hazelnuts, crushed a little flavourless/mildflavoured oil, for greasing
METHOD
1 Combine the yeast, sugar and tepid water in a large bowl, or the bowl of a stand mixer fitted with the dough hook attachment, stir and leave it to sit and let the yeast ‘bloom’ for 10 minutes (it should look bubbly).
2 Add the melted butter and both types of flour to the yeast mixture, along with the salt, and bring together. Once a shaggy dough has formed, knead for 10 minutes by hand on a floured surface, or 5–7 minutes in the mixer on medium speed, until it forms a smooth, springy ball. Lightly oil the bowl, place the dough back into it, cover with a clean tea towel and leave to rest in a warm place for 1 hour or until doubled in size.
3 Lightly oil a 900g (2lb) loaf tin (pan). Divide the dough into about 12 balls then roll each ball of dough flat on a floured surface and top it with chocolate hazelnut spread in an even layer. Top with some crushed hazelnuts, saving some to scatter over at the end. Fold each piece of chocolatecovered dough in half, creating a
semi-circle. Place these pieces of dough in the tin with the folded edge at the bottom. Leave to prove in a warm place, covered with a tea towel, for 30 minutes.
4 Preheat the oven to 180°C fan (200°C/400°F/Gas 6).
5 Bake the risen loaf in the oven for 40 minutes until golden brown on top.
6 Remove from the oven, brush with some melted butter, sprinkle with the remaining crushed hazelnuts and serve warm!
7 The loaf will keep well for up to 2–3 days in an airtight container. Give it a 20-second flash in the microwave to reheat, if you like.
Goat’s Cheese, Fig & Walnut Tart

This is one of those recipes that may have you debating whether it totally fits into the savoury category, but it’s a wonderful thing for those who love a cheese course a er a meal or the cheese/fruit combination. There is added salt to keep it as a lunchtime treat, and this will sit amazingly as part of a lunch, perhaps alongside a Waldorf salad. 15 mins hands-on time

INGREDIENTS
• 320g (11¼oz) ready-rolled all-butter pu pastry
• A little flour, for dusting
• 125g (4½oz) goat’s cheese
• 100g (3½oz) crème fraîche
• 4 fresh figs
• 75g (2½oz) walnuts, coarsely chopped
• Sea salt and freshly ground black pepper
• Handful of fresh rocket (arugula), to serve
METHOD
1 Preheat the oven to 180°C fan (200°C/400°F/Gas 6) and line a large baking tray with baking parchment (or a silicone liner).
2 Roll out the pastry on a floured surface to create a rectangle a little smaller than your baking tray – it should be about 1cm (½in) thick – and place it on the tray.
3 Mix together the goat’s cheese and crème fraîche in a bowl and season with salt and pepper. Spread this mixture onto the pastry, leaving an edge of about 2.5cm (1in) around the border of the pastry to create crusts.
4 Thinly slice the figs lengthways and scatter them over the goat’s cheese mixture, then add the chopped walnuts. Bake in the oven for 30 minutes, until cooked through and the edges are a rich golden colour. Remove and leave to cool on a wire rack, scatter the rocket (arugula) over the top and serve.

Vegan No-bake Chocolate & Pistachio Bars (ti n)
Serves 8
Tiffin is another word for fridge cake or no-bake cakes. This recipe comprises lots of melted chocolate, biscuits and fruit folded together, then le to set in the fridge before slicing. This makes it really versatile, so do play with the flavours/ biscuits/add-ins. This will sit in the fridge for a few days, tempting you to come and take a piece every time you open the door.

INGREDIENTS
• 350g (12oz) dark chocolate, chopped
• 75g (2½oz) vegan butter
• 3 tbsp golden syrup (corn syrup) or light molasses
• 100g (3½oz) dried cranberries
• 150g (5½oz) digestive biscuits (or graham crackers), coarsely crushed
Topping
• 200g (7oz) dark chocolate, chopped
• 75g (3oz) pistachios, shelled and chopped
METHOD
1 Line a 20cm (8in) square brownie/baking tin with baking parchment.
2 Put the chocolate, butter and golden syrup (corn syrup) in a large heatproof bowl set over a pan of simmering water (making sure the bottom of the bowl isn’t touching the water) and stir until combined and glossy.
3 Turn o the heat, add the cranberries and crushed biscuits to the melted chocolate mixture and stir until combined. Pour this mixture into the tin and spread it out evenly, pressing to the sides.
4 Make the topping: melt the dark chocolate in the microwave in 20-second intervals, stirring regularly. Once melted, pour it on top of the biscuit base. Sprinkle over the chopped pistachios. Let it set in the fridge for at least an hour (overnight is fine). Once set, cut with a hot knife for perfectly smooth slices.
5 The tiffin will keep well for up to 5–7 days in an airtight container in the fridge.

London Negroni with a twist
If someone would ask you to name the 10 most popular cocktails of all time, the Negroni is always in there. It was invented in 1919 by Count Camillo Negroni when he asked for an Americano, but with gin instead of soda water, at Caffé Casoni in Florence. It’s one of the simplest cocktails there is - equal parts of bitter, vermouth and gin. It’s fun to use this as the base and adapt depending on your mood – subbing in the gin for whiskey, vodka or even mezcal. This twist on a negroni uses vodka, cynar (a bittersweet Italian liqueur) and lillet rouge for a sweeter twist on a negroni, but still a balanced version of the original.
INGREDIENTS
• 25ml Ketel one Vodka
• 25ml Cynar bitter aperitif
• 25ml Lillet Rouge
• Orange peel, for garnishing
METHOD
1 Add all the ingredients into a mixing glass with ice, and stir until perfectly chilled.
2 Strain into a rocks glass filled with ice and garnish with orange peel.

From £5,000, this is the Savile Row experience. In-house master tailor Raymond is given your measurements, who hand draws an original pattern and chalks it onto the fabric. This is then cut out and hand-stitched together, along with the chest canvas and padding. The suit is then brought to the first fitting It will be pinned and chalked for any minor alterations and taken back to Raymond, where it’s then completely taken apart, re-cut with any of the minor tweaks and made to finish.

DR NATALIE HAWORTH
Q Before launching your business, what was your background in the health and beauty industry?
A I graduated in medicine from The University of Manchester in 2011 and spent five years as an NHS doctor, progressing into training as a Womens Health Surgeon. In 2014 on the advice of a friend I completed an aesthetics course, I assumed this would be something I did on the side of my NHS career.
Q What inspired you to launch your business?
A This is a mixed answer, but an honest one. Firstly, I love learning new things and expanding my knowledge and I found the world of aesthetics empowering and inspiring. I could see the appeal of developing a science and evidence-led approach in the industry.
However, I unfortunately experienced an environment when training as a surgeon that wasn’t conducive to positive mental health. I was subjected to sexism and harassment, including when I was pregnant. Combined with some personal circumstances, I decided to leave that career and fully jump into my growing aesthetics business.
Obviously the work-life balance is much better, although I’m sure my husband will tell you that The Doctor & Company is always on my brain and you’ll often find me awake at night, or up super early, thinking of ways to improve further still for our patients.
Q What do you think makes you di erent?
A You only have to look at my Instagram (@drnataliehaworth – the clinic one is @thedoctorandcompany) to see how transparent, straight-to-the-point and scienceled I am. I will have no qualms in refusing to carry out a treatment on a patient if I don’t think it’s the right one. That isn’t meant to be patronising, but sometimes a patient may think they need treatment A, when actually scientifically and aesthetically, treatment B would achieve the results they desire.
Because I’m a perfectionist, the clinic is undergoing voluntary CQC registration, even though we are not obliged to. But to me, we can only be the best if we subject ourselves to the most stringent benchmarks.
Q How was 2023 for you?
A It was more than I could have ever imagined. To have gone from my own bricks and mortar clinic in 2021 to opening Manchester and then getting the keys to a Lymm clinic in 2023, the growth we’ve experienced isn’t something I ever take for granted.

In 2023, we saw almost 2,000 patients and had over 5,500 appointments. The clinic was shortlisted for an Aesthetics Award for Best Clinic North and we all developed ourselves professionally.
Q What's new for 2024?
A Well of course we have the Lymm clinic opening at Easter, so I’m excited to meet new clients and get to know the town, which seems to be really beautiful and in a great location.
In terms of treatments, we are also developing and bettering. We recently introduced the 30-minute lunchtime facial for those who struggle to fit longer appointments around children or work. We’ve also launched a back facial for those who su er from “bacne”, a scalp treatment and we’re currently working on pregnancy-safe treatments and skincare. We’re currently adding to our device range and introducing more regenerative medicine, we are always at the forefront.
Q On a personal level, what are your hopes and dreams for 2024?
A It’s half business, half personal, but I’m currently studying for a Masters in Skin Ageing and Aesthetics, so I obviously intend to give that my all. I have four beautiful children so the biggest dream for 2024 would be to see them continue to be happy and healthy. I got married in 2022 to my best friend, travelling with him and our children is my favourite thing to do.
Q What else does 2024 hold in store?
A We’re currently living in a never-ending renovation project, so I wouldn’t mind making some more progress on that! We love to discover new places, so a holiday or two wouldn’t go amiss, either. I am currently training for the Manchester Marathon in April, so finishing that will be a huge achievement.
Despite the third clinic about to open, I have dropped a day at work to further improve my work-life balance and spend time with my children, so I’m looking forward to extra family time (when I’m not business planning, opening clinics, renovating or studying!). I have an amazing team around me and I couldn’t do any of this without them.

Q Tell us about your platform
'At Home with Sarah'?
A At Home with Sarah was born in lockdown after the success of my zoom classes and now has almost 200 videos. It’s a place to come home to yourself. To check in with how you’re feeling. And the practices are all there with that in mind. My classes are not about physical appearances or whether or
not you can do the splits, it’s about how you feel when you turn down the noise of busy life. A place for you to find peace and ultimately feel at home in your own body.
Q And what about your yoga retreats?
A They are an extension of my teaching and values. Nothing needs to be perfect. I invite my guests to come as they are and rest as much as or as little as they need. There is always a mix of soothing and energizing yoga practices, alongside hearty, delicious, and comforting food! Mixed with the biggest dose of nature and just wonderfully feel good vibes. Nothing is restricted on my retreats, it’s all about enjoyment.
Q Has your relationship to movement changed since you became a mother?
A Oh yes! Motherhood has been the biggest learning of my life. I met a whole new person in myself, and having had an emergency c section, my recovery was very di erent to what I imagined. I’m sti er than ever so I appreciate the slow practices and the power of the breath so much more now. But equally reminding myself that I will find my strength again with the stronger practices when I’m ready.

Absolutely Cheshire chats to David Lisle about four decades in the business and what lies in store
Q How do you look back on the time 40 years ago before launching your own business? Why was it the right time?
A I was 24 and had just finished my degree in 3D Design at Manchester Polytechnic (now Manchester Metropolitan). I left knowing that I wanted to continue my passion for furniture design, and I had always envisioned working for myself, so I decided to set up my own workshop in the Adelphi Mill looking over the canal in Bollington.
Q How di erent was what you o ered back then?
A I was very much a craft designer maker. I would spend my days handcrafting individual pieces – clocks, mirrors, tables. With the Macclesfield canal path outside my door, I would sell finished pieces to the public walking past. Nowadays, everything we make is made to order to our clients’ exact specification.
Q What was the very first thing you created?
A A plant stand in white ash with dark walnut detailing.
Q How soon did you feel the company would be a success?
A It took about 10 years of trying di erent avenues. I gradually moved into making freestanding kitchen furniture for customers, but when I made and fitted my first full kitchen, I loved how rewarding it was to totally transform a whole room and knew it was the direction I wanted to take the business.
Q What would you say to the David of 40 years ago, any tips or advice?
A Keep on being inventive and persevere.
Q What have been the key moments for the business over the last 40 years?
A One would be the move into our stunning Chapel in Macclesfield in 2000. It is a wonderful showroom space with the original 200-year-old stained glass windows illuminating our displays. We also have on-site parking which is a good advantage. In 2020 my daughter Becky also moved into the business and is working alongside me designing spaces and meeting clients. It’s exciting to see where she will take the business in the future.
Q How would you say you have evolved?
A As our reputation grew, the pressure of getting new leads reduced, allowing us to concentrate on providing a better service, innovating our designs, and increasing the quality of our product.
Q Have there been any tough times?
A I remember the mid-90s was a di cult time and I was seriously considering giving up and changing profession. But I decided to stick with it and persevere. It was a decision that really paid o and the company grew from there.
Q Today, how would you break down what David Lisle is known for?
A Tailored designs, unique materials, a highquality service and interiors with longevity.

Q What exciting projects are you working on now?
A Most of our work now is for returning clients, when they either move home or extend. We are working on second or even third kitchens for some customers. Some clients’ children have grown up with a David Lisle kitchen and are now having us back to do their own. It’s a great testament to the service and quality we have o ered over the years.
Q Do you feel a real part of the Macclesfield community?
A Absolutely. The Chapel that houses our showroom has been a well-known part of Macclesfield’s architecture for nearly 200 years. When we renovated the building into our showroom in 2000 we were delighted to receive the Macclesfield Heritage Award for our e orts, which made us feel very welcomed into the community.
Q Where do you go from here?
A As my daughter Becky gradually takes the company into the next generation, it’s great to get a fresh approach to trends and new ideas for designs. We have the same dedication to providing our high level of service, so I’m looking forward to seeing where she can take the business in the future.

Charlotte Findlater takes us behind the unique touches she implemented in this renovation project in the Lake District
This was a two-year project in the Lake District, where we worked to specific briefs room to room. Here’s a snapshot of our design thought process as I take you through the intricacies of the project, from the challenges to the luxury touches we implemented to give the design the complete wow factor.
THE WINE CELLAR
Our clients are passionate about wine and required a dedicated space for their collection. Identifying what was once a pantry in the large basement of this historic home, blessed with a consistent cool temperature throughout the year, we used locally sourced Oak with gorgeous natural edge detailing to create a stunning wine cellar which can also be viewed from the dining room above. A large piece of architectural glass was inserted into the original wooden floor allowing our clients to enjoy their champagne collection from a di erent angle.
ATTIC BEDROOM
The attic bedroom was previously used as servant accommodation in its Victorian heyday. Taking o layers of plaster revealed the old wooden purlins, which we sanded to reveal their inherent beauty. The house is large and spread over four floors, we wanted to evoke the sense of being in the clouds, a feeling of being high up in an immersive yet deeply relaxing space. The wallpaper we chose is stunning and represents clouds, staying true to our clients’ wish to represent animals or birds in all rooms. This paper had the playful element of monkeys, which we took a step further and incorporated two hanging monkey lights. The area was large enough to add a sitting area at one end and utilising the sloping ceilings we created lots of storage cupboards. A custom four poster bed sets the room o , adding to the sense of drama. A small shower room was installed, tiled with large format ceramic Verdigris tiles, and we incorporated a stone pebble sink that connects to the rugged Lakeland landscape outside.

Being lovers of sport and entertaining, we were asked to create a bar and space in which our clients could watch matches with capacity for up to 12 people. The brief here was to give the space a real feel of a pub with seating at the bar, a space that was not too precious and connected to the garden for those late summer evenings to continue when the evening temperature drops, but the party’s still going strong.
THE KITCHEN AND DINER
Whilst the kitchen space existed, our clients were not happy with the way the space functioned and required both additional appliances and storage. The kitchen was hand repainted, cabinetry changed to house extra ovens, Quooker boiling water tap incorporated into the island unit and a custom made mirror was commissioned and installed behind the existing Aga. This mirror allowed our client to be more interactive within the space whilst cooking.
Our client wished to have a bespoke dining table made for the space, something completely unique to them. Taking our cue from the Walnut island unit, we proposed a large river resin table. This table would evoke the Lake District landscape in which this fabulous and historic property sits. We wanted to capture the movement of water, rivers, and woodland that the area is famous for.
THE SNUG
Leading o the kitchen we created a snug, a space in which family members could retreat to read the daily papers or relax watching the TV, but still feel connected to the kitchen and the daily life that revolves around this space. The snug was to have continuity from the kitchen, incorporate our clients’ love of pink and African animals and yet reflect its Lake District location. We love challenges!
We used locally sourced and produced Herdwick Fabric for the blinds, and the carpet is also made from the wool of Herdwick sheep and again produced locally – we ran
this carpet through all the bedrooms and principle lounge. The fireplace adds a real homely feel to the space.
THE STUDY
We chose to go dark on the bespoke in-house custommade cabinetry, including in the design a pull-out map drawer which our clients love. The light is a real focus, echoing the distinct colours represented in the cat, the main feature in the gorgeous wallpaper. The colours within the paper connect to the mountainous landscape beyond, thus creating a dialogue between inside and out.
THE DINING ROOM
The dining room had some wonderful architectural details that we wanted to highlight including the original fireplace that we restored and the mirror above that we carefully repaired. Our clients wanted to keep some of their own heirloom furniture, so we incorporated these into our design as well as commissioning a stunning hand-blown central pendant and glass wall lights which evoke a plate and bowl. We sourced a collection of antique Royal Copenhagen fine bone China plates representing various freshwater fish that can all be found within the rivers and streams that abound the area. Every detail was meticulously planned and sourced for this space right down to the dinner service, even the napkins!

The lounge had to accommodate up to ten people and would be used often for entertaining. A glamorous rich but eclectic look was the brief harmonising with the rest of the home. The seating in the lounge is meant for conversation, this room is a perfect example of what good art does for a space.
MASTER BEDROOM
The client loves the colour pink, but was unsure how this colour could be incorporated into the bedroom without making it overtly feminine – we did need to take account of her husband! This room had previously been used as a master bedroom and leading o was a huge en-suite that felt very cold. Our challenge was to divide this space up to provide our clients with a dressing room whilst still retaining a two metre shower, luxurious bath and his and hers sink unit.
Our starting point was the layout of the space, by moving the bed onto the back wall we were able to incorporate a bespoke Emperor bed, something our clients had always coveted. Blocking up the original doorway into the en-suite allowed us to utilise the depth of the doorway and commission bespoke joinery incorporating deep drawers. We created a new opening into what would become the dressing room and divided the original en-suite into two sections, the larger lighter space facing out to the beautiful gardens with a stunning feature bay window that we used as the focus for the luxurious Mother of Pearl bath.
Our clients required more space to house their clothes, so our solution was to convert the loft space to create optimum
storage, commissioning a bespoke automated staircase that operated by the simple push of a button, seamlessly descending from the ceiling in the dressing room. Very James Bond!
The thread we used throughout the home was the consistent use of the colour green. Our client’s favourite tree is Willow, so we selected a stunning wallpaper for the walls in the bedroom and continued this into the dressing room. A blush pink chaise lounge was incorporated into the large bay window so our client could relax and recline, observing the beautiful Lakeland backdrop. The curtains continued this subtle pink shade, which was echoed in the stunning silk rug and used for the colour on the bespoke commissioned dressing room cabinetry, designed by us. Opulent lighting added the sense of glamour along with the Art Deco inspired bedside tables. At the push of a button a TV appears from the chest at the end of the bed, bespoke commission from our in-house carpentry team, then silently disappears back into its housing in order not to dominate the space.
Each of the four guest bedrooms was to be given its own identity with the use of strong colour palettes to reflect the clients’ love of travel, animals and adding elements of fun where possible.
BEDROOMS
One of these rooms had a small space on the other side of the wall, previously used for storage. We saw this space as an opportunity to create an en-suite, revealing an original fireplace covered many years ago, now highlighted as a stunning feature. In forming the new access into the en-suite, we had to knock through an old flue from a hidden fireplace in the room below. Instead of covering this up, we decided to make a feature of it, lit it with LED, adding a climbing man sculpture as a pop of fun!

Eleanor Roosevelt wisely said: “The future belongs to those who believe in the beauty of their dreams.” As the longest-serving First Lady ever she must have known a thing or two. Everyone has a dream, though some people, like St Lucian hotelier Nick Troubetzkoy, dream bigger than others, resulting in the creation of two exceptional resorts that need to be seen to be believed.
Located on the south-west coast of St Lucia, sister resorts Anse Chastanet and Jade Mountain are spread over 600 lush tropical acres. Anse Chastanet sits down the hill, closer to the beach and this is where we begin our Caribbean island odyssey. After winding our way along the rocky road, we’re greeted with smiles and welcome drinks before being shown to our spacious hillside room. It’s open to the elements with only wooden louvres acting as walls. A lack of walls is something we need to get used to.
The large bedroom is decorated in vibrant tropical hues and flows seamlessly onto an
equally large verandah with fabulous forest and ocean views. There’s no air conditioning, but the natural through-draught makes for perfect ventilation. So we go to sleep to the sounds of the forest and wake up with the sun to the sound of birdsong and distant ocean waves.
It’s a beautiful way to wake up and just a short walk down the hill to breakfast. Then it’s all about sun, sea and sand. There’s plenty to see and keep us busy - one of the best snorkelling spots on the island is right here. There’s also paddle boarding, sailing and scuba diving. There are two beaches for some serious lounging, the main one at Anse Chastanet and Anse Mamin, a short walk or boat ride away. The crystal clear, sunshine-warmed water is waiting when we need to cool o , before checking in to our second hotel, Jade Mountain.
Jade Mountain rises above Anse Chastanet, overlooking St Lucia’s Pitons, a World Heritage Site, and it’s unlike anywhere we’ve ever stayed. The towering building blends into the St Lucian jungle and individual bridges lead to each of the 24 infinity pool sanctuaries. As
our Major Domo (a personal butler on hand 24/7 to ensure your every wish is fulfilled) explains to us, our room starts at that bridge.
He also tells us that people often burst into tears on being shown to their sanctuary (of happiness, naturally), so we brace ourselves as he opens the door to JB4. And wow, it does take our breath away. Every sanctuary is unique and ours is designed with the infinity pool running through the middle, like our very own (heated) river. It’s spacious and spectacular with a huge open bathroom and totally missing that fourth wall: the gap perfectly frames the Pitons, like they were specially placed there. Who needs a wall when you have your own mountains?
As well as successfully working with the surrounding terrain to create minimum disturbance, part of the vision was to create the resorts with an environmental consciousness at their heart as well as being places of beauty and luxury. This is evident in many

of the initiatives on site including admirable sustainability practices and community e orts.
We also see this reflected in the incredible food. Guests can dine between the two resorts and the genius of innovative chefs Eli and Frank produces dish after dish of deliciousness. There are five restaurants, and 40% of the food comes from their organic farm down the road. From creative breakfast dishes to weekly bu ets; wine pairings at the fine dining evenings in The Old Treehouse restaurant and the best burger on the island at the Jungle Grill, it’s food to dream about. We take a cruise and witness a picture-perfect sunset, watch turtle eggs hatching and the babies heading for the sea, have an in-sanctuary massage and take a guided walk through the plantation. We make our own chocolate in the onsite chocolate lab, enjoy rum tasting on the beach and a lionfish banquet afterwards, sample cocktails and live the headiest of lifestyles as if we’re living the dream. Nick Troubetzkoy’s belief in the beauty of his dream has become a reality.

We really don’t need to leave our room for the ultimate in relaxing breaks. But there’s plenty to explore outside.
The Grove is the perfect place for enjoying outdoor pursuits. We soon discover the walking and jogging trails that wind their way through the serenity of the forest and start our days with peaceful countryside walks. We enjoy a round on the 18-hole championship course and go for leisurely swims and chill-out time at the large outdoor pool, which even comes complete with its own beach area.
Indoors we relax in the Sequoia Spa, named after the giant, magnificent trees that pepper the estate. There’s a dazzling
black-mosaic tiled indoor pool with plenty of loungers and a Jacuzzi the size of a small pool nearby, a total haven for wellness enthusiasts. Once we’re suitably chilled it’s time for an invigorating B Vibrant Ritual massage in one of the beautifully scented treatment rooms.

Q Tell us a little bit about yourself…
A I have been teaching for 25 years having previously been a solicitor. Quite the career change! I have worked in both state and independent primary education, joining King’s in 2015 as Head of the newly built infant school, Willow Lodge. In 2017, the Head of Junior School retired and I took over, becoming Head of both infants and juniors.
Q Why were you originally attracted to working at The King’s School?
A Having worked in another local independent school, I knew the reputation King’s had for delivering excellent education and endless opportunities for the pupils. The opportunity to be the first Head of the brand new infant school at King’s, with its purpose-built buildings, Forest School, and the facilities of the wider school, as well as
to hand-pick specialist sta for the school, was too good an opportunity to miss.
Q Can you describe the setting?
A The Junior School is purpose-built and self-contained on the main King’s School site. Modern classrooms include specialist facilities such as our own science lab, library, art studio, DT workshop, IT suite and music pods. We are lucky enough to be surrounded by open countryside, giving the children plenty of space to play and explore; we really value outdoor education and make regular use of our outdoor classroom and Forest School area. Being part of the main school means that we can use all the facilities that junior school pupils don’t usually have access to, including the theatre where all pupils will perform at least twice during their time in juniors, the tennis courts and

Q How privileged do you feel in the role?
A I feel incredibly privileged. This is such an important stage in a child’s life and our job is to ensure that they are academically, emotionally and socially ready for the next step. At King’s Juniors, we nurture each child, gently pushing them to achieve their potential. There is nothing like witnessing the unique joy when a young child is absorbed in their learning and experiences that lightbulb moment when everything clicks.
Q How do you look to celebrate the individual?
A With small classes and teaching assistants in every year group, we ensure that every child is known, valued and cared for; we have the flexibility in our sta ng and curriculum to support children individually where needed. In addition, communication with home is regular, encouraged and personal to each child.
We love nothing more than celebrating the children’s achievements and we know that an achievement can mean something di erent to every child. Fridays are my favourite day of the week as I invite children from all years into my o ce to give out awards for excellent work and excellent behaviour. From our Reception class upwards, children receive rewards throughout the week. In Junior School, these are in the form of much-coveted House Points, whereas
in infants, children receive a golden leaf for our golden tree. We also have Cool to be Kind awards, which recognise when a child has been kind or thoughtful.
Q What would we find in a typical classroom?
A The three things that stand out in all of our Junior School classrooms are joy, a love of learning and respect.
It is an absolute joy for me to be able to pop my head into any classroom and observe the happy, purposeful talk around the task and to witness the cooperation and collaboration between the children and the teacher.
In a physical sense, you will find modern, state-of-the-art classrooms with interactive whiteboards, working walls, learning prompts to foster deeper pupil understanding, as well as celebrations of the children’s work.

A Our teachers are amazing! They are all specialists for the year group they teach and we are lucky enough to have a number of subject specialists for modern languages, music, art and more. In addition, pupils in Year 6 are taught Maths and English as stand-alone subjects by specialist teachers, giving them the confidence and skills they need to make a good start in Senior School.
Every single one of our teachers runs their own co-curricular clubs and gets involved in the wider life of the school.
Most importantly, they put the children at the heart of everything they do, taking the time to get to know each individual and ensuring that they can flourish and thrive.
Q What co-curricular activities do you o er and why are they so important?
A We o er a huge array of clubs that cover everything from drama and art to sport and academic challenge. In any given week, there are over 50 lunchtime and after-school
clubs for pupils to choose from, giving pupils opportunities to try new things, push themselves out of their comfort zone, express themselves through music or drama, and play a sport they enjoy.
Clubs give pupils an invaluable chance to mix across the year groups, form friendships and discover new passions. Current favourites include Rocks and Fossils club, run by the Headmaster, and Illustration Club, where pupils enjoy creating their own vibrant and colourful book illustrations.
Q Do you have much interaction with the Senior School?
A Yes, it’s important that I work closely with the Head, George Hartley, to ensure that the Infant and Junior School are aligned with the Senior School.
On a day-to-day basis, what the pupils experience is all the positives of being on the same site as Senior School; our Junior School pupils eat their lunch in the Senior School dining room, they play hockey on the
fabulous new astro, they use the swimming pool and sports hall in PE lessons, they perform in the theatre, they visit the library. Once a fortnight, as part of their Enrichment course, Sixth Formers come into infants and juniors to help with reading, art, sport or planting herbs and vegetables in our garden and it’s a real highlight. I love seeing the positive interactions between the pupils of di erent ages and it’s obvious that all of them – both older and younger pupils – benefit from the experience. The vast majority of pupils move up to the Senior School from King’s Juniors and I love stopping to chat with them when I’m in Senior School. Our first cohort of Reception children from our first year of opening Willow Lodge are now in Year 8. They are an absolute credit to the school and themselves.
Q What are your pupils prepared for?
A Academically, our pupils are frequently amongst the highest performers in public exams, but more than that, when they finish Year 6, they are happy, confident learners with a firm foundation of knowledge and understanding. Time for CHANGE
A unique conference at The Grange School sought to tackle major global issues, while enhancing students’ soft skills
The Grange School in Northwich hosted more than 200 students from 23 schools across four continents for a ‘climate change’ themed Model United Nations Conference on 2 February. Students debated and negotiated online to reach consensus on the resolutions from COP28 as well as on topics such as single-use plastics, fast fashion and food waste.
This student-led ‘Good Cop Bad Cop’ event was the third organised by Engage with China, a UK registered educational charity which works in UK schools to build China understanding amongst young people. Pupils from countries including the UK, Sri Lanka, Brazil, China, Zambia, Nigeria, Hong Kong and Dominica participated in the conference giving them all an opportunity to come face to face with students their own age from very di erent backgrounds and life experiences. Each school delegation

spoke from the perspective of another country enabling them to develop research skills, team-work and empathy.
One of EwC directors, Theresa Booth, said: “By representing another country at the conference, students experienced a flavour of what real global negotiations are like and appreciated that respect and good listening skills are essential if consensus is to be achieved.”
Conference President and A-level pupil at The Grange School, Remi Livesey, aged 18 added: “The beauty of this type of MUN debate is the chance to speak from another perspective. This ability is a great 21st century soft skill. Everybody absolutely did an amazing job and it was a really good debate with some great points and some high-level thinking. I was privileged to be this year’s President.”
This annual Model United Nations Conference is unique in three key ways, namely the decision to remove the competitive element usually integral to MUN conferences; giving pupils an opportunity to share the lived reality and impact of climate change in their
own country or local area during the opening plenary session and inviting participation from schools in both the independent and state sectors.
Dr Lorraine Earps, Headteacher at The Grange School, said: “As a school we value this conference for its ability to bring another dimension to learning for our students. It is important that all our young people are able to develop the skills of diplomacy, understanding how to work towards consensus and finding ways to overcome the challenges that we face globally now and in the future. This is our third year hosting the event and we are committed to growing it as a platform to enable young people from across the world to come together building relationships and finding shared solutions to global issues. There is a real magic in seeing our future leaders joining in the discussions from across so many time zones, sometimes even giving up their own holidays for the chance to be involved.”
Senior figures were also invited as guest speakers to encourage the students to develop skills and to take climate action
seriously. These included Dame Caroline Wilson, UK Ambassador to China, herself a fluent mandarin speaker, and Madame Zhang Jin, Minister Counsellor from the education section at the Chinese Embassy in London. Also speaking included Julian Hobbs from Vestas, producers of wind turbines, and George Harding-Rolls from Eco-Age, an agency seeking to create a post-plastic system and reduce individual plastic footprint.
