Ashley Rudd gets into the spirit of our health special with her plans to take a step back and breathe this month

August is the last chance to recharge and reset before autumn arrives, and it’s back to business! This month is all about enjoying the lingering warmth of summer, making the most of the longer days, and indulging in welldeserved relaxation and rejuvenation.

Ice lollies and ice cream treats aside (I’m looking at you, Backford Belles), I’ll try to maintain a balanced diet rich in fresh, local

produce. Cheshire’s farmers’ markets and local shops are full of fruits, vegetables, and artisanal products.

My go-to at the moment are the local traders at Chester Market. They have all the BBQ essentials, from burgers and sausages to your favourite spices and sauces. I find it impossible to leave without picking up something new to try.

I’m also heading to Tatton Park, where Fearne Cotton’s Happy Place Festival is being held. The festival features a whole host of entertainment and inclusive activities, plus independent brands in health, fitness, wellbeing, and the arts, all promoting products and services that are good for people and the planet. I’m pretty excited about the wellness workshops such as Yoga & Stretch, Massage & Relax, and the Meditation & Mindfulness tepee. These sessions are designed to help attendees unwind and reconnect with themselves.

I will also 100% be taking part in a digital detox. Running a PR agency means I’m always glued to my phone, which can be hard to disconnect. To ensure I’m in the present moment, I’ll reduce my screen time. This break will allow me to fully engage with my surroundings and the people I’m with, fostering more meaningful experiences.

I’m swapping Cheshire for NYC – well, not entirely, but my friend Imogen and I will be heading to the Grosvenor Park Open Air Theatre to watch the Storyhouse production of The Gangs of New York. I love the outdoor theatre experience – the blend of fresh air, live drama, the historic backdrop of Grosvenor Park and a few cold glasses of Riesling.

Charlotte Donoghue and Stephanie Porter are behind one of the fastest growing jewellery brands in the UK. Absolutely meets them in Liverpool to discuss creations, celebrities and change

Liverpool-based jewellery brand Say It With has enjoyed remarkable growth in just eight years. Since its launch in 2016, under the name Say It With Diamonds, founders Charlotte Donoghue and Stephanie Porter have gone from a £500 startup to turning over £5 million to date, a new sprawling 5,000-square-foot warehouse and a fresh rebrand.

Combining their strengths, Stephanie and Charlotte ventured into entrepreneurship as mothers. They drove substantial growth and gained celebrity fans such as Molly-Mae Hague, Mrs Hinch, Sam and Billie Faiers, Lucy Mecklenburgh, Arabella Chi, and Malin Andersson.

With a proven track record of success in retail and online domains, Stephanie and Charlotte renamed the brand Say It With. Absolutely Cheshire sat down with the duo to find out why the change, the origins of their friendship and what they think makes them di erent.

Q Before 2016, what kind of thing were you working in?

A Stephanie: We started the business while I was on maternity leave with my second baby. I initially worked for a bank and then for an autism initiative for two years, which I loved.

Charlotte: I owned a successful candle business, and thanks to their ability to enhance ambience and decor, the products quickly became favourites in numerous restaurants and bars.

Q How long have you known each other?

A Stephanie: We have known each other since we were kids. Charlotte was next door neighbour to my aunty. We used to see each other at family parties when we were younger.

Later, we bumped into each other at my cousin’s summer BBQ, who is also Charlotte’s Godmother! We started talking, and Charlotte invited me round for dinner, which was fabulous – that was that.

Q What inspired you to go into business together?

A Stephanie: We have di erent strengths, which is good when working on a business. My background in psychology has helped me work in various customer service roles. We were on holiday together in Spain. Charlotte had recently started her candle business, and I remember listening to her on the phone with suppliers, thinking wow, I would want to be with Charlotte if I ever went into business with someone. There was no messing about, yet staying professional – she had me in awe.

Charlotte: I graduated from Archbishop Beck Catholic College and owned a candle business. The get-up-and go attitude I have trying to get that business o the ground was the foundation for Say It With. I definitely learnt a lot.

Q What inspired you to go into business together?

A Stephanie: The idea for Say It With Diamonds was a whirlwind. I had five necklaces I wanted to sell in the hope that it would generate some extra cash flow. I asked Charlotte if she wanted to buy one or knew anyone who wanted

one; within the hour, she had sold five. She asked if I could get any more, and I did, and she sold them out again.

Charlotte pushed me to solidify the brand’s logistics, setting up social media channels and a streamlined consumer payment process. From there, I asked Charlotte if she wanted to do this together.

Q Why do you think the business quickly took o ?

A Stephanie: Yes, we had a strong network within the North West, but the business’s USP had mass appeal. We wanted to make high-quality jewellery accessible to all.

Q What did you think made you di erent from the start?

A Charlotte: Marketing to consumers and Instagram was di erent back then; we lean toward organically building a solid foundation and community on social media. This is why our best-seller’s initial necklace was a much-wanted product.

Q How do you come up with jewellery creations?

A Stephanie: Originally, everyone knew us for the diamond-winged initial, and we quickly learned that, yes, people want on-trend, a ordable jewellery, but as our community and customers grew, we could see the intimate power

of jewellery. Each purchase was unique to each customer, carrying a story representing special moments and emotions, which we continuously consider when designing collections.

Charlotte: Agreed, it’s a delicate balance. As we entered the next phase of the business, we wanted to reflect this, as we promised to respect these stories, celebrate our customers, and create a community where each story shines uniquely bright. It’s not just about diamonds anymore; it’s about letting customers express themselves uniquely.

Q Was it an easy decision to rebrand as Say It With?

A Stephanie: We did go back and forth, but we’re heading in a new direction as a business, and it was time to refresh, refocus, and regroup. With that came a fresh new look and feel for the brand.

Charlotte: We embraced the brand’s variety by welcoming a range of alternative stones and materials, catering to our customers' tastes, injecting fresh energy, and staying more aligned with its new goals and direction.

Q How does it feel to have such a celebrity following?

A Stephanie: We are so thankful for our celebrity following. These are relationships we’ve nurtured for a long time.

Charlotte: With their access to other brands, it’s always flattering when they choose Say It With – it’s something we never take for granted.

Q How has 2024 been for you?

A Stephanie: It has been the most exciting year for us regarding growth. We’re gradually bringing everyone in-house where possible, which feels great for everyone to be under one roof and bounce o each other.

Charlotte: We believe this will be the biggest year for us.

Q What have been your recent launches?

A Stephanie: We recently worked with Love Island All-Star Arabella Chi. While in the villa, she always wore her personalised nameplate, 'Arabella', necklace, so it was a natural fit for us to partner.

Charlotte: The latest collection with Arabella pays homage to the vibrant energy of summer and those electric Ibiza island nights. The pieces include rings, delicate stud earrings, statement bold earrings, fine chain necklaces, and hinged bangles.

Q Have you always been based in Liverpool?

A Charlotte: Yes, we’ve stayed true to our roots. Our flagship store is in Liverpool’s bustling city centre, among renowned fashion brands and designers within the Metquarter.

Q Away from business, where do you love to go in Liverpool?

A Stephanie: We’re huge foodies and love supporting local Liverpool businesses. We love the juice bar and co ee shop Pressed Crosby. StoryHouse Crosby is a lovely, chilled-out co ee shop, too!

Charlotte: Liverpool City is a fantastic place to be. We start and end the week with reformer Pilates. We also love our local gym and walk our dogs around the area.

Q What are your ambitions for the future?

A Stephanie: We’re amid our national growth strategy, but we see the demand to take the brand global.

Charlotte: Agreed, and to do that, we need to grow the team and lean into the fantastic community we’ve built.

Let’s TALK

As Gossip prepare to play Liverpool, they reflect on life and bringing the band back together

Real Power, pioneering North West trio

Gossip’s first album since 2012, finds Beth Ditto, Nathan Howdeshell and Hannah Blilie back together and reunited with super producer Rick Rubin, who helmed their 2009 opus Music For Men. The result is a comeback of magnum force that celebrates the galvanizing might of music, the joy of creative expression, and the power of chosen family in the aftermath of collective and personal trauma.

It was Rick Rubin who coaxed the band back together again. What started out as a follow-up to Beth’s 2017 solo debut Fake Sugar quickly turned into a Gossip reunion when Beth and Nathan began

collaborating again as the pandemic was hitting in 2019. The pair travelled back and forth throughout the pandemic, recording in marathon spurts of creativity. Hannah Blilie subsequently laid down the drums, ratcheting up the immediacy of the 11 tracks.

Not only is there a mix of sonic textures and genres from propulsive rock to jubilant disco, as to be expected from a Gossip album, there’s also a mix of heady emotions on this inspired tour de force, encompassing the full range of the human experience.

“We all experienced a lot of deep loss, and we each turned 40 since we last recorded together,” says Beth. “Those are such big moments in your lives.” Beth and Hannah each got divorced, there were losses of close friends and family, and the world went through a pandemic since the band were last together, touring for the ten-year anniversary of Music For

Men. It all only brought the band closer.

“I’ve come to realise a lot of powerful things: that friendship is beautiful, that music is powerful, that we should never take life for granted,” says Nathan.

That attitude informed the creation of this album. “It’s been a real joy. We had a really creative explosion – we were on fire, recording day and night,” recalls Nathan. “It was like getting back on a bicycle, the jams were flowing. We were able to chase sonically whatever we wanted; we weren’t thinking about genres, we were just throwing everything against the wall.

“Rick has this amazing studio and it’s all windows; I would just be playing guitar watching the ocean. It did have an e ect on the music – it’s not as dark as it could have been,” he says. The vibe even extends in a literal manner to the dreamy track Turn the Card Slowly. “You

can hear the Hawaiian influence on the guitar lead, from the Hawaiian slide guitar music we were hearing on the radio.”

“It was isolated and beautiful working in that space,” adds Beth. “Everything we needed, we had to fly in, like if there was an amp or microphone we needed. And there wasn’t a real vocal booth – we had to build it out. It was recorded in the weirdest, discombobulated way, which makes sense for Gossip, because we are all so scatterbrained,” she says with a laugh.

The results speak for themselves. The title track Real Power is a dance-y clarion call to own your power, a celebration of personal agency in the face of overwhelmingly volatile times. Musically, Nathan likens it to a “KISS disco song – we come from a background of post-punk and dance music, that’s always been our jam. We were diving

into that on that song.” Hannah sees it as a coda to Standing in the Way of Control, which was written in response to the Federal Marriage Amendment that would have outlawed gay marriage in the States. “It’s a protest song and it has the energy and purpose of Standing in the Way of Control 20 years later,” she says. “It’s a song people can get viscerally excited about, lyrically, and it’s a bop!”

It’s a fitting theme for this comeback album, and the ethos of Gossip as a band itself, says Beth. “I think the real power is the power of family, chosen family and friendship. Trying to make music without Nathan was impossible! We always end up coming back together. I had my issues, but being able to talk about them openly and honestly between two maniacs, because we’re both insane, is so powerful. We started the band when I was 18, fresh out of Arkansas. So to be a 42-year-old and have the chance to create together as adults is really incredible. When you lose people, in whatever capacity, it really makes you know who your ride-or-die people are. And that’s definitely us.”

Liverpool boasts a rich and varied history that has shaped its identity and global significance. Liverpool’s maritime heritage continued to be significant into the 20th century. The city played a crucial role during both World Wars, with its port serving as a lifeline for Britain,

ensuring the flow of vital supplies. However, the post-war period brought challenges. The decline of traditional industries and the advent of containerisation led to a reduction in dock activity, contributing to economic hardship and social unrest.

Despite these di culties, Liverpool reinvented itself in the latter half of the 20th century. The city gained international fame through its contribution to popular culture, most notably as the birthplace of The Beatles. The "Fab Four" emerged from Liverpool’s vibrant music scene, bringing global attention to the city and establishing it as a musical mecca. This cultural renaissance was complemented by urban regeneration projects that revitalised the cityscape, particularly the waterfront, which was declared a UNESCO World Heritage Site in 2004.

Entering the 21st century, Liverpool has continued to thrive as a dynamic urban centre. In 2008, it was named the European Capital of Culture, celebrating its rich heritage and contemporary cultural scene. The city’s economy has diversified, with significant growth in sectors such as tourism, education, and digital industries. Iconic landmarks like the Royal Albert Dock, the Liverpool Cathedral, and the futuristic Museum of Liverpool symbolise the city’s blend of historical legacy and modern innovation.

Today, Liverpool stands as a testament to resilience and reinvention. Its history of maritime prowess, industrial innovation, cultural contributions, and social diversity has carved a unique identity.

For nearly 400 years the estate was the property of the Egerton family until it was bequeathed to the National Trust in 1958. It is now financed and maintained by Cheshire East Council. Köfte kebabs & garlic sauce

Makes 6 Köfte Kebabs

These kö e are so juicy and versatile. The minty, spiced garlic sauce complements them beautifully, and both the sauce and the kö e mixture can be made in advance and stored in the fridge overnight; however, don’t refrigerate the kö e mixture for longer than 24 hours – instead, freeze it, then defrost, and use when required. I bake the kö e in the oven, but you can cook them on the BBQ (ensure the BBQ grills are hot, to prevent them from sticking, and brush them with a little olive oil as they cook) or in the air fryer. Prep: 1 hour (plus marinating) Cook: 20 minutes

INGREDIENTS

For the köfte

• 3 tbsp olive oil

• 500g chicken thigh fillets, blitzed in a food processor

• 500g lamb mince

• 1 red onion, coarsely grated or finely chopped in a food processor

• 1 large kapya biber (capia pepper), red romano or red bell pepper, halved, deseeded and finely chopped in a food processor

• 30g fresh flat leaf parsley, leaves and stalks finely chopped

• 4 garlic cloves, finely grated

• 1 tsp pul biber (Aleppo pepper)

• 1 tsp paprika

• 1 tsp coarse black pepper

• 1 tsp sea salt flakes

• 1 tsp dried mint

• 2 tbsp tatlı biber salçası (Turkish sweet (mild) red pepper paste)

For the garlic sauce

• 1 tsp finely grated garlic

• 4 tbsp mayonnaise

• 120ml natural yoghurt

• 1 tsp finely chopped parsley

• 1 tsp lemon juice

• 0.5 tsp dried mint

• 0.5 tsp pul biber (Aleppo pepper)

• 0.5 tsp sea salt flakes

• 0.5 tsp coarse black pepper

METHOD

1 Add 2 tbsp of the olive oil and all the remaining köfte ingredients to a large dish, mix well, then refrigerate for at least an hour, or overnight.

2 Preheat the oven to 230C/210C fan. Line a large, shallow baking tray with parchment paper. Take the köfte mixture out of the fridge, wet your hands with cold water (so that the mixture doesn’t stick to them) and shape into 6 long and even-sized köfte, each around 4 x 18cm, directly on the lined baking tray.

3 Using two fingers, gently push down to create indents all along the köfte, ensuring that the köfte keep their shape.

4 Gently brush each köfte with olive oil, and place in the oven on the middle rack for 18–20 minutes, or until the köfte are golden brown and cooked through.

5 While the köfte are cooking, prepare your garlic sauce – mix together all the ingredients in a small bowl and refrigerate until ready to serve.

6 Once the köfte are cooked, serve immediately with the garlic sauce.

Whipped tahini, spiced butter & boiled egg salad

Serves 4

Can I let you into a secret? I’m not a huge fan of what the Western world refers to as ‘Turkish eggs’. Sorry, but the poached egg and yoghurt combo doesn’t do it for me. However, give me a perfectly boiled egg on top of creamy, tangy tahini, drizzled with a spiced pul biber butter and contrasted by the crunch of toasted sesame seeds and a fresh, chunky salad, and I’m all yours.

Prep: 15 minutes

Cook: 15 minutes

INGREDIENTS

• 1 tbsp sesame seeds

• 150g tahini

• 75ml ice-cold water

• 75ml freshly squeezed lemon juice

• 4 large garlic cloves, crushed

• 1 tsp sea salt flakes

• 4 large eggs

• 50g unsalted butter

• 1 tsp smoked paprika

• 2 tsp pul biber (Aleppo pepper)

• 1 small cucumber, roughly chopped

• 1 large, ripe tomato, roughly chopped

• 0.5 tsp coarse black pepper

• 1 tsp dried oregano

• 10g fresh parsley leaves, very finely chopped

METHOD

1 Place a small frying pan over a medium heat, and toast the sesame seeds until evenly golden brown all over. Take the pan o the heat and immediately remove the seeds so they don’t continue cooking.

2 Add tahini, ice-cold water, lemon juice and half of the garlic to a shallow bowl and whisk to a smooth consistency. Add half of the sea salt flakes, whisk again, then leave to one side.

3 Place the eggs in a small pan, cover with cold water and place on the hob over a medium heat. Bring to the boil, simmer for 5 minutes, then cool.

4 While the eggs are cooking, place the butter, pul biber, smoked paprika and remaining garlic into a small pan on the hob on a low-medium heat, and gently stir until the butter completely melts. Stir well.

5 Evenly spread the whipped tahini yoghurt onto four small plates. Peel the cooled eggs, cut in half and place with the chopped cucumber and tomato on the whipped tahini yoghurt. Drizzle chilli butter over the eggs, season generously with the remaining sea salt flakes, the coarse black pepper, dried oregano and finely chopped parsley, and serve with hot crusty bread or toast.

Spiced fruit baklava crumble

Serves 8

This has become my ‘I’ll bring dessert’ dessert. I love how the tartness of baked fruits can cut through the sweetness of a sponge, tart or crumble. However, I always feel a little hard done by with regular crumbles, as the fruit stews at the bottom rather than caramelising resplendently, like the topping, say, of a tarte tatin. So, I’ve flipped this crumble over and infused it with the mesmerising flavours, scents and textures of a nutty baklava. Although I’ve written the recipe for peaches and plums, you really can use any fruit you’d typically use in a crumble or tart, hence the more generic title; peaches, nectarines, plums, apples, pears, rhubarb and berries all work brilliantly.

Prep: 15 minutes

Cook: 40–45 minutes (+ 30 minutes cooling time)

INGREDIENTS

For the pistachio crumble:

• 200g plain flour

• 0.5 tsp baking powder

• 50g rolled jumbo oats

• 60g pistachios

• 0.5 tsp ground cinnamon

• 150g (5.oz) cold unsalted butter cut into 2cm (¾in) cubes

• 50g soft dark brown sugar

For the orange blossom syrup:

• 300ml cold water

• 100g caster sugar

• 2 tbsp runny honey

• 1 tsp orange blossom water

• Juice of 0.5 large orange

• 0.5 cinnamon stick

• 3 cloves

For the topping:

• 400g ripe peaches/plums, or a combination of both, stoned and cut into 1cm (½in) thick slices

• 0.5 tsp ground cinnamon

• Zest of 1 large orange, finely grated

• Juice of 0.5 large orange

• 1 tsp demerara sugar

• 25g pistachios, ground in the food processor + extra to finish

METHOD

1 Preheat the oven to 200C/180C fan. Line a 23cm pie dish with parchment paper. Add all of the pistachio crumble ingredients to a food processor and pulse slowly until the butter starts to form large crumbs, but hasn’t been ground down to a powder. Pour the crumble mixture into the lined pie dish and press it down so that

the top is completely flat. Bake on the middle rack for 15 minutes.

2 While the crumble base is baking, add the syrup ingredients to a small saucepan, place over a mediumhigh heat and leave it on a high simmer for 10–15 minutes until the mixture has thickened and reduced by half, then turn o the heat.

3 While the crumble is baking and the syrup is reducing, mix together the fruit slices, ground cinnamon, orange zest and orange juice in a bowl.

4 Take the crumble out of the oven, and scrape the flattened top a little with a fork so that it starts to resemble a crumble. Pop back in the oven for another 5 minutes until the top starts to look a little crunchier. Carefully take the dish out again, arrange the fruit slices on top, and scrape out any of the juicy residue left in the bowl and onto the fruit. Evenly pour the syrup over the fruit and crumble. Sprinkle over the demerara sugar and pop the dish back onto the middle rack of the oven. Bake for another 20–25 minutes, or until the fruit has softened, but is still tender, and the tops have slightly caramelised.

5 Take the dish out of the oven, sprinkle over the ground pistachios

so that they stick to the hot syrupy fruit, and let the crumble cool for at least 30 minutes before you try to remove it from the dish. Once cooled but still a little warm, gently lift the crumble out of the pie dish using the paper, and onto a large flat plate, carefully easing the paper out from underneath as you do so. Serve with cream or custard and an extra sprinkling of ground pistachios.

Notes

This crumble can be made the day before, covered with foil and stored at room temperature. Reheat in the oven before serving, if required. Alternatively, once cooked, you can also freeze the crumble for up to 3 months.

A 34-mile long-distance footpath stretching from Frodsham to Whitchurch, with shorter sections suitable for day walks and runs. It runs from the ancient market town of Frodsham on the broad Mersey estuary, in the north, to Georgian Whitchurch in rural north Shropshire, in the south.

Fans of Julia Bradbury and Ore Oduba’s popular ITV programme, Britain’s Favourite Walks, will be delighted to know that they have voted to include the Sandstone Trail on that list. The Sandstone Trail appears at number 70, above Clifton Suspension Bridge and the White Cli s of Dover.

NANTWICH OUTDOOR BRINE POOL

One of the few remaining outdoor saltwater pools in the UK, which is open during the summer months. The outdoor pool first opened to the public on the 1 July 1935 and the pool water temperature is now maintained at 22°c and through solar gain is usually much warmer. Some of their older customers still reminisce about their school days at the pool, when they claim the water was only just above freezing point and they still happily swam in it!

MARBURY COUNTRY PARK

This is a country park with woodland walks, open fields, and a designated swimming lake. At Marbury Country Park you can wander along the mere with splendid views over the water to the church at Great

Budworth, or explore the arboretum and community orchard. Children will enjoy the play area, close to the picnic area.

Many of the features of the Country Park, including the lime avenues and the arboretum, are a legacy of the days when Marbury was a grand estate. The last hall, built in the 1850s, was a fine looking house modelled on the French chateau at Fontainebleu, with an imposing carriage drive entrance.

There has been an open air pool nestling within the grounds of Marbury Country Park near Northwich in Cheshire since the 1930s. Originally built for the members of Marbury Hall Country Club, the pool was owned for many years by ICI for the use of their employees.

Since the early 1970s, the pool has been operated by Marbury Park Swimming Club, a volunteer-run members’ club whose aim is to keep this wonderful leisure facility and piece of local history open for the local community (and those from further afield) to enjoy.

Dr Emma Goulding somehow juggles being a mother to two under twos, a career as an NHS doctor and her growing aesthetics clinic in Hale. On top of this, she teaches at the awardwinning training academy Acquisition Aesthetics and publishes work in industry publications such as Aesthetics Journal. Whilst she could be forgiven for maintaining the status quo, Dr Emma has big plans, thanks to the growing success of her clinic, Dr Emma Goulding Aesthetics, based at 2 Broomfield Lane in Hale.

“The clinic has especially taken o over the last two years, although I’ve been an aesthetics doctor for six years,” she explains. “In the last two years, I’ve also had two children, so it has been chaotic, but I wouldn’t change it for the world.

“I get huge job satisfaction from being a medical NHS doctor, from being a mother and, of course, from seeing the clinic go from strength to strength,” Dr Emma says.

One huge area of satisfaction when it comes to aesthetics is the work she does around surgical scars, especially her pro bono services.

Dr Emma has been targeting elective surgery scars with techniques including

polynucleotides (which are currently huge in aesthetics thanks to their impressive skin cell renewal capabilities) and SkinPen microneedling. However, she wants to further branch into providing free scar treatments for individuals who have undergone surgery for illnesses such as cancer.

“Being an NHS doctor means I see first hand how devastating a cancer diagnosis is, and whilst scars may seem like a small price to pay for successful surgery, we mustn’t underestimate the impact of seeing those scars on a daily basis,” she says.

“I’m passionate about o ering pro bono scar treatment to patients who have gone through a health journey such as this to really give them the confidence boost they need; I’m excited to help as many people as possible,” she adds.

Dr Emma is also a big advocate for open conversations around women’s health, including pregnancy and post-partum care and the perimenopause and menopause. Her luxury but ethical approach to aesthetics has no doubt played a part in the increasing success of her Hale clinic.

Recovery after exercise and why it’s important

Recovery is an essential part of any exercise routine. It has a big impact on your fitness gains and it’s essential to muscle and tissue repair. Here we take a look at how best to rest up post walk, run or workout, and get the most out of your muscles.

REPLACE LOST FLUIDS

You lose a lot of water and important electrolytes, such as sodium and potassium, when you exercise, especially when you work up a sweat. Sweat keeps us cool but your body temperature will rise if you don’t replenish lost fluids. You also need to stay hydrated so as to flush out waste and toxins. Ideally, you should replace lost fluids during exercise, especially endurance exercise, and always top up once you’ve finished. Water is easy to replace – try to make sure you drink at least two litres of plain

water every day, and more on the days you exercise, and replace lost electrolytes with an isotonic or post-workout drink. WORK OUT THEN COOL DOWN

What you eat post-workout can influence your recovery. Your body’s preferred fuel source is glycogen. When you exercise, your muscles use up their glycogen stores. Proteins in your muscles can also be broken down and damaged. Once you’ve finished exercising your body tries to rebuild its

Rest is one of the best ways to recover and heal from just about any illness or injury and this is also true of exercise. Resting after intense exercise allows the repair and recovery process to happen at a natural pace and this includes getting enough sleep, as this is when the body does much of its repair work: when we sleep.

The Liverpool doctor championing safe, natural-looking aesthetics

Dr Amy Law is an experienced doctor who qualified as a dentist from The University of Liverpool in 2016. Whilst progressing her career in dentistry, she realised her true passion lay in medical aesthetics – and she hasn’t looked back.

Although Caroline Balazs’ name may not be as well-known as the mightily successful ‘SkinnyJab’ company that she founded, the impact of her business has stretched far beyond the Manchester-based GP where she first came up with the idea of her brand. ‘SkinnyJab’ was founded in 2017 and has subsequently helped over 30,000 patients to lose weight. Caroline’s client base includes A-list celebrities from around the globe, many of whom have publicly praised the programme and its incredible results. Caroline has helped the British public to lose tonnes of fat since first discovering her miracle weight loss injections. It was during Caroline Balazs’ time working in a GP surgery in Manchester in 2017 where she realised how unhappy many of her patients were. Caroline always struggled to lose weight. Once an essential feature of homes, even compact ones, the walk-in pantry is making a triumphant return in modern design. This kitchen hero is not just a nostalgic nod to the past, but a practical and stylish solution for contemporary living. Here, we talk to Tom Howley, Creative Design Director at the eponymous kitchen company, about the reasons why walk-in pantries are making a comeback and how to design one that seamlessly integrates with your kitchen.

THE MODERN APPEAL OF WALK-IN PANTRIES

The renewed interest in walk-in pantries can be attributed to several factors. Firstly, the contemporary emphasis on organisation and decluttering aligns perfectly with the functionality of a walk-in pantry. These spaces provide a dedicated area for food storage, kitchen appliances, and even small kitchen gadgets, keeping the main

kitchen area tidy and uncluttered. As Tom Howley explains: “A walk-in pantry can dramatically transform the way you use your kitchen. It o ers a space to keep your countertops clear, allowing for a more streamlined and e cient cooking experience. The beauty of a well-designed pantry is that it can accommodate all your storage needs without compromising on style.”

Moreover, as cooking and entertaining at home have gained in popularity in recent years, the demand for more storage and better organisation has increased. A well-designed walk-in pantry can enhance the e ciency of meal preparation and provide a perfect hideaway for unsightly items, contributing to a cleaner, more aesthetically pleasing kitchen space.

ESSENTIAL DESIGN ELEMENTS

Designing a walk-in pantry requires careful consideration to ensure it meets your needs and integrates well with your kitchen. Before you start planning your pantry, consider how you will use the space. Do you need more room for dry goods, or are you looking for a place to

store bulk items and small appliances? Your specific needs will dictate the layout and features of your pantry.

More often than not, walk-in pantries are small spaces. Tom says: “Space optimisation is key in walk-in pantry design. Utilise adjustable shelving to accommodate items of various sizes and incorporate pull-out baskets or drawers for easy access to smaller items. Shelving should be deep enough to hold large items, but not so deep that things get lost in the back.”

Good lighting is essential in a walkin pantry. Natural light is ideal, so if possible incorporate a window. If natural light isn’t an option, ensure you have adequate artificial lighting. LED strip lights under shelves can be a practical and aesthetically pleasing solution.

AESTHETIC CONSIDERATIONS

While functionality is paramount, the aesthetics of your walk-in pantry should not be overlooked. A well-designed pantry can be an extension or a contrast of your kitchen’s style, adding to the overall look and feel of your home.

Tom notes: “From a decorative perspective, I love choosing finishes for the external and internal cabinetry that work together to create a contrast, whether subtle or striking. If your cabinetry is deep green or soft black, choose a smoky wood finish for the internal shelving for a stylish edge. If your cabinetry is crisp white or cream, you could opt for a contrasting warm oak finish for the racks and shelving within.

“Glazed partitioning doors are excellent,” he continues, “especially if you have little to no natural light within your walk-in pantry. Half glazed doors are our preferred option as you can still show o your beautiful cabinetry and let light flow without showcasing too much clutter and kitchen paraphernalia.”

Working from home requires its own approach to decoration. Here’s how to create an impressive backdrop

For all the talk of home o ces, the reality is that the average house size in the UK is 729 sq ft. That will generally translate to three or four smallish rooms – so even before the shift in working habits, a certain degree of multi-use was necessary for most. While homes are generally far roomier across the States (at a staggering average of 2,273 sq ft), this belies the realities in many of its cities (New York City stands at 983 sq ft, Washington DC at 932 sq ft). If you live in or close to a metropolis and you have a family in an average-sized home, your workspace is likely to double up as a social space. But while you may not have the option of an optimally

balanced ergonomic chair or sound-proofing, that doesn’t mean that you can’t present a professional environment that helps you get into the zone when it comes to remote working.

The key principles for any good working space from a décor perspective are a) the best light possible, b) finding a low tra c zone – areas that don’t serve as thoroughfares through the rooms, and c) creating a backdrop that conveys your taste in a way that isn’t visually jarring or distracting.

The shift to remote working has brought countless benefits and for many of us it couldn’t have come sooner. The removal of the commute, the additional flexibility to manage caring commitments… the peace and quiet to form a sentence away from watercooler reviews

of last night’s Love Island. But we cannot deny that hybrid working arrangements have ratcheted up the pressure on our homescapes.

Whether it’s having to listen to a flatmate or partner’s calls or find privacy away from the Peppa Pig theme tune, finding a place where you can concentrate e ectively is vital to the new world working order. Instead of one fixed spot, I’m personally a home workspace hopper. Sometimes I’ll write at the kitchen counter, other times, I crave sitting softer on a sofa. My ‘desks’ aren’t all photogenic or set up with the perfect 90-degree elbow angle, but I’d wager that the majority of people reading this are similar and actually enjoy that flexibility.

But the one work environment setting that I am resolutely consistent about is where I take

my video calls, simply because it matters. You may have seen the homescreen critique accounts on Twitter and Instagram or the ‘You Are Your Backdrop’ memes circulating. While this may seem a little extreme, early research has proven the importance of the image you project of your home in a career context. A recent survey of 1,500 respondents showed that candidates on a job interview conducted via video calls were judged harshly for background clutter, whereas the presence of plants and an organised bookshelf in the background persuaded those surveyed of a candidate’s reliability and professionalism.

Your background has the potential to reveal a lot about your personality without you even realising it and that can have a big impact on professional perception. While it may be tempting to use the fake digital backgrounds, available for instant download, or even blur your hinterland, I would advise explicitly against it – they look creepy and just make you wonder what the hell is hiding back there. Far better to see it as an opportunity, rather than something to circumnavigate. As a freelancer, I have to make a good first impression several times a day. That good impression will simply

not be made from the bed or with the dirty dishes piled up in the sink behind me. Your background has the power to humanise you, adding another layer to your story. You should think of it as a visual complement to your CV and, for that reason alone, it pays to invest time and resources into getting it right.

Starting with the basics, as mentioned above, one of the most important considerations is lighting. The very best lighting comes from the direction of your computer, so ideally you will sit for a video call facing a light source – if not a window, then the area of the room with best indirect natural light. If you only have the option of a windowless space, consider investing in a ring light. Keep in mind that if you sit between a light source and your screen, you will find yourself eerily backlit and your colleagues may not be able to see your features.

The whole point of video calling is to see your expressions and get as close to real face time as possible, so always do your best to present a clear image of yourself. The intensity of light is something that décor can help with in the form of window dressings – ideal if you are looking to soften a blazing attic skylight, where home o ces are often located. Harsh

lighting can be just as tricky as low light. When creating a backdrop, consider what values you want your colleagues to take from your home space. Would you like to be perceived as hardworking? Au fait with contemporary art? Personable and approachable? Consider the objects that will fill your screen as props to convey those messages. One of the best ways to showcase those props is with shelving. Colour and pattern can bring further interest to your Zoom room, and both paint and wallpaper are great options – though less is more. For renters, removable, temporary wallpaper is a great option as it will cover all manner of sins. If you’re nervous, start small and go with an easy scalloped shelf, which you can decorate with some personal (though not provocative!) objects. I’m often asked where I get all my bits for shelves and cabinets and there isn’t an easy answer because I get them from everywhere. I never stop looking for beautiful objects, in charity shops, at markets, at airports abroad, on the high street. It’s about pieces that you are personally drawn to, not what is fashionable. I love collections of similar items, though it’s probably best to keep the theme to yourself or you might find you only receive dog mugs for every Christmas ad infinitum. Stripy ceramics are a good example of something that it is easy to purchase and look so cool together. Shapes hewn in di erent shades of marble, interesting candlesticks in pastel tones. Whatever you choose, keep your eye out wherever you go. Eclectic, personal mixtures of print, colour and texture, with pieces you’ve handpicked to create collections of objects that tell your unique story.

We don our wellies and head through the gasp-inducing countryside to the Guicciardini Strozzi Estate. We’re going on a tru e hunt in the forest. Leading the way is our tru e master and his specialist dog called Spot (Macchia in Italian – everything does sound better in Italian). It’s a real adventure with lots of enthusiastic digging from Spot, and we find several precious jewels. Brava Macchia. We eat them back at the estate for lunch, paired with some of their delightful wine. Quite simply heavenly. Sharing food and wine in celebration of the history and richness of Tuscan traditions and flavours brings joy to our souls and completes our Tuscan experience. How Afshin Sajedi is redefining luxury travel in the 21st century

Iembarked on my career journey right after finishing college when I took a job as a customer service agent at the local airport in my hometown in Iran. I spent three years there, during which I also participated in numerous trainings and courses with the tourism board. This was a crucial period that prepared me for my transition into becoming a tour guide and later a travel agent.

Always driven by ambition and a desire for growth, I made a bold move to Dubai. And my travels didn’t stop there; I journeyed across Asia, the Middle East, and Europe, before finally settling down in the UK in 2003. Over the next two decades in the UK, I gained extensive experience working with significant travel agents and tour operators, culminating in my purchase of a travel franchise in 2014. However, it was the challenges I faced while collaborating with suppliers and operators that drove me to realise my own vision for a travel brand, leading to the inception of my company Holiday Luxury in 2016.

At the same time, however, there was a noticeable disillusionment with traditional luxury: even though I was successful in the traditional luxury travel market, I became increasingly aware of the industry’s shortcomings. The frustrations that are inherent in public transit could not be eliminated by even first class travel. After all, even the most expensive seats were in the same planes, subject to flight delays and even cancellations. As I came to understand, genuine luxury required going beyond the comforts of worldly possessions.

I remembered an occasion, where I had booked a private jet (instead of a commercial

airline) to fly from Ibiza to London. On my way to the airport, I received a text message: “Dear Afshin, if you have a bag, please, could you arrive within an hour?” the text said. And then it went on: “If you don’t have a bag, 45 minutes is perfect. And if you get stuck in tra c, could you just send us a text? We take care of everything.” It was not the first time I had booked a private jet. But at that moment, the conversation brought home the stark di erence between the ease and comfort of private luxury air travel and even the most luxurious version of commercial airline o ers. But I also knew that the di erence in price would not make the former accessible to most people. The price tag was just too hefty.

Nonetheless, I dived into extensive research, taking advantage of my excellent networks and connections in the travel industry. I noted that one of the prominent players o ered experiences with private jets for large groups, typically serving an ultra-wealthy demographic with itineraries ranging from 13 days to five weeks, which came with very high costs. These experiences catered to billionaires and retired multimillionaires, positioning them as a role model for my own venture.

My research identified a gap in the private aviation market for entrepreneurs and C-level executives who were happy with domestic private jet travel, but faced a dilemma when considering international or long-haul trips due to the prohibitive cost of chartering a private jet. Instead of paying for expensive charters, these travellers would downgrade their standards to commercial flights, which led to various inconveniences and a lessened travel experience.

My secret ingredient was a flight share membership model, which enables members to enjoy the exclusivity of flying private without bearing the full cost of chartering a jet. By pooling together like-minded individuals that are part of smaller groups (between 13 and 19 individuals, including flight attendants), the service provides access to luxurious, curated travel experiences and also fosters networking opportunities.

As a starting point, I focused on locations and events revolving around Formula 1 (F1). It’s one of the highest-profile sports events that takes place across 24 worldwide destinations known for their popularity and the diverse reasons people travel there, such as business, leisure, or sports entertainment. It has been nearly two years since the introduction of the Projectbased curriculum at Abbey Gate College Infant and Junior School.

In that time, their teaching team have continuously explored ways to further enhance this rich, cohesive approach to their pupils’ education.

Exciting and animated discussions ensued within the experienced teaching team, brimming with ideas to enrich the pupils’ knowledge and skill rich curriculum base, to add further ‘stretch and challenge’ to their broad and balanced curriculum and to empower pupil voice within.

One aspect that has seen exciting development is learning outside the classroom – the concept they call Project.

Teachers have expanded Project-linked trips, with every year group enjoying several days out during the academic calendar to local landmarks, museums, and interactive visitor spaces. However, they have also looked at how they can enhance the Project work with outdoor learning, moving away from their fun ‘outdoor learning lessons’ to emerge into impactful learning outside the classroom, building within both Project and the curriculum.

Every class now experiences learning outdoors on a weekly basis, but with

stronger curriculum links. The pupils may be using DT skills to create a Saxon burh or be using the outdoor classroom as a book café to develop their love of reading. They may use science skills in the lovely ‘Nature’s Nursery’ area to explore parts of a plant or plant reproduction, or map the local area using geography skills, develop gross and fine motor skills in PE or use construction material to enhance their maths lessons.

This ability to develop the curriculum in the beautiful grounds around the school also allows pupils to develop independent learning skills and stretch and challenge their learning capabilities in the full breadth of the curriculum.

A prime example of the appealing overarching nature of Project for pupils was recently seen with a very exciting topic for their Infant 2 class – The Great Fire of London! The pupils studied various aspects of this, with subjects taking a particular focus of the Project topic.

English work was based around a non-fiction text called The Great Fire of London by Emma Adams. The pupils studied the book and wrote a fact sheet about London and the events of the fire. They also did some research and artwork based on the fire. In history, they learned about Tudor times. In art and DT lessons, they designed and constructed houses to build their very own Pudding Lane.

The very exciting culmination of this Project was to recreate the Great Fire on the school field and watch from a safe distance. The pupils talked about fire safety and understood why sand, water and a fire extinguisher were on hand, and there was a lively discussion about how firefighting has changed since 1666!

At Abbey Gate College they continue to build a curriculum for and with their pupils, based on courage and compassion.

Exploring the evolving world of esports for young

people

Esports, or electronic sports, have taken the world by storm in recent years. What started as a niche hobby for a few dedicated gamers has now become a global phenomenon, with millions of fans tuning in to watch their favourite players compete in virtual battles. For young people today, esports o ers a unique opportunity to connect with others who share their passion for gaming. Unlike traditional sports, which require physical prowess and athleticism, esports can level the playing field, allowing anyone with a computer or gaming console to compete at the highest levels. Essentially, esports is organised competitive video gaming, which is always human versus human. These games are based on skill and there is no option to pay a fee to enhance play. Esports are video games chosen by the community, with tournaments being played online or live for prize pools or medals. They’re gender neutral and, depending on the game, players compete as an individual or in teams, with the games being viewed via spectator mode. Pro-gamers (age 13+) usually specialise in one game. Right now, in the UK, esports is not o cially recognised as a sport, but as a game under the remit of the Department for Digital, Culture, Media & Sport (DCMS) and is not a rival to traditional sports.

Beyond professional gaming

One of the most exciting aspects of esports is its rapidly evolving nature. New games are constantly being developed, each o ering a fresh challenge and the chance to showcase new skills. From first-person shooters like Counterstrike: Global O ensive to battle royale games like Fortnite, there is a game for every type of player. Of course, esports’ growing popularity isn’t a secret, and we can only expect its popularity to continue to grow. With the introduction of new career paths and professional development, young people are rapidly realising they can make a career out of

a hobby they love. This is also going beyond just becoming a professional player, with many players looking to pursue other careers within the wider esports industry as well.

However, the world of esports is not without its challenges. As with any competitive field, esports can be intense and demanding, requiring hours of practice and dedication to reach the top. Additionally, the industry is still relatively young and faces issues such as player burnout, lack of diversity, and concerns about the impact of gaming on mental health. Despite these challenges, the world of esports continues to grow and evolve, o ering young people a new way to connect, compete, and pursue their passions. Whether that means a casual player looking to improve their skills or a dedicated fan cheering on their favourite team, esports has great appeal for many young people today.

Getting involved in esports is also a great way for young people to develop a wide range of di erent skills such as leadership, communication, dexterity, motivation, responsibility, flexibility, teamwork, cyber skills, strategy, problem solving, critical thinking and many more. These transferable soft skills can translate to everyday life, helping young people to navigate real life situations and challenges with greater confidence and ease.

New skills and a raft of career prospects

The esports industry also o ers an abundance of opportunities when it comes to career pathways. Because esports provides young people with so many transferable skills, there is a huge opportunity to branch out into a number of roles. When it comes to careers within the esports industry, this goes beyond being a professional player, including all of the wider aspects that go into organising and supporting tournaments and events etc. Some of the career pathways within esports include marketing, sales, event management, broadcast/ production, video editing, coaching, cyber security, software engineering, software development and more. As the esports industry continues to grow and expand, there will be many more new opportunities to learn about and explore. With esports becoming more accepted and mainstream, and with new technological advancements, increased investment and sponsorship, esports education and career pathways, not to mention new game genres on the horizon, there’s always something new to discover. Whether it’s honing strategic thinking and problemsolving skills, mastering time management and discipline or acquiring new abilities for various career paths, young people will always find fresh and exciting areas to pursue.

Education is not a one-size fi ts all business, and in the post-GCSE landscape, sixth form becomes a real chance to reinvent yourself. To some this seems daunting, while to others it is an opportunity. It can be di cult for anyone to know what to expect from the whole sixth form experience. That is what causes even the most confident to stumble a little at the outset. Is the day structured very di erently? What will the timetable look like? Will you feel like the new boy or girl again or will you be joined by others going through the same process?

And this is where colleges fit into the picture. Born out of the universitytutorial mould over 50 years ago, they have established enough of a foothold to suggest their relevance is beyond question. Sixth form colleges still require an element of myth busting. The stigma that they are only ‘crammers’ or for those who have been removed from mainstream schools is frankly nonsense today.

Sixth form colleges have morphed, diversified, grown and built and are, for many students, a number-one choice. This is because of the variety and diversity they can o er within a more flexible environment. With over 40 di erent A-level options – and some with Foundation courses now too – colleges are geared up for those who know what they want to do in the future. In this environment they can focus on it.

One issue for some students is whether college will be too big a jump? In fact, they are not as far removed from a school as one might expect. We need to explain the word ‘independence’, a red herring in marketing literature. Independence does not mean students are on their own, but rather that they are being taught to cope with what comes next. This ranges from ‘guided’ independent working to accommodation that o ers increasing levels of independence. The ultimate aim of sixth form colleges today is to bridge a gap between school and university, and they have become very successful at it. How? By recognising that what is required extends beyond the classroom – life education is just as important. Regardless of where they choose to go, students are now at the ‘business end’ of their school career and they should use the two years of sixth form to work out what they want to do next. They should expect more focus on careers and university courses, a sensible discussion on gap years (now they are old enough to understand the merits of one), university visits and CV awareness. They should make good

use of their university counsellors and, if they are going for specific programmes or universities (Dentistry, Medicine, Oxbridge), make full use of the specialist guidance o ered. They are at the stage where an element of proactivity is not only expected, but it should also feel natural.

A new environment for sixth form can often be the best source of inspiration for the next step. What should you expect as a student? A more adult learning experience. What should your chosen college expect from you? A more adult student.

Q Can you give us a bit of background to your business?

A Malcolm Associates was established in 2021. Having been a partner within a large firm of surveyors, I formed Malcolm Associates to o er a more personalised bespoke service to clients. Initially working out of Glasgow, we soon realised that the demand for HNW and UHNW services were being requested from London and swiftly moved into that geographical area, albeit we now cover the whole of the UK.

Q From day one, how did you want to be di erent?

A The drive to speed up turnaround through standardisation of reports didn’t always suit my clients and I felt that a more individual and bespoke service was welcomed by clients especially at the high end of the market.

Q Can you sum up the services you o er?

A We o er a full range of property consultancy services in both residential and commercial. Services range from Traditional Building Surveying, such as pre-acquisition

With a commitment to excellence, the consultancy’s services encompass both pre-contract and postcontract phases, ensuring a seamless and well-managed construction process. We have recently been working for a client on a residential refurbishment project which included full electrical rewire, underfloor heating, ornate plaster work, high end fixtures, fittings and finishes. Work included a new kitchen, games room, cinema room and swimming pool refurbishment. We also

undertook design works for garden and external landscaping, project value circa £2.5m.

Q How do you work in the commercial sector?

A We have carried out many pre-acquisitions on commercial properties, condition surveys and also worked with landlords and tenants in terms of leased properties. We can prepare schedules of conditions and schedules of dilapidations. We also have project managed fit-out works and refurbishment works for clients. Our work has covered hotels, o ces, retail and warehousing.
