EDITOR’S letter

I

’m writing this on perhaps the coldest day of the year so far. It’s one of those beautiful, crisp, sunny days where the sky is a powdery lilac blue, everyone on the number 36 has rosy cheeks and I’m kicking myself, figuratively, for losing yet another pair of gloves. Why am I writing about the current weather you’re probably wondering? Well, even though it’s icy outside, the gleaming sun and the nearing of spring means that warm weather is just around the corner, and I for one cannot wait. Everything changes when the weather heats up: for example, events and attractions go al fresco, seeing our plethora of parks transform into verdant hubs of creativity. Turn to page 12 for what’s on in London this March. Gail’s Artisan Bakery share their beloved hot cross bun recipe for us to whip up this Easter, flick to page 46. We also catch up with Hammersmith born The Who frontman, Roger Daltery, to talk music, charity and what’s to come (pg 18), before heading to the Playhouse Theatre to experience the highly acclaimed performance of Women on a Verge of a Nervous Breakdown, based on the film by Pedro Almodóvar (pg 15). Your former editor Gemma may have moved on to pastures new (and boy do we miss her), but I am priviledged to be your new editor and look forward to many months ahead. u

ARTS & CULTURE / REVIEW interest in the proceedings than is strictly professional. The story occurs over the course of a single day during which each woman is forced to deal with problems that push them to the very brink of sanity, from being abandoned by their boyfriends to finding grenades under their bed. The play is dotted with musical numbers, some of which are inspired and others that seem to hamper the action. Candela’s ‘Model Behaviour’ for instance, perfectly captures and sends up that friend we all have who calls twenty times in a night leaving messages: ‘What was the name of that cheese that I like?’ and Haydn Gwynne’s brilliantly dramatic and ominous performance in ‘On the Verge’ has the audience in fits but some of the more sentimental tunes such as ‘Lovesick’ and ‘Island’ drag a little. Tamsin Greig’s excellent performance as the scorned Pepa provides the heart of the show and

f you’ve ever watched a film by Pedro Almodóvar, you’ll know that they don’t exactly scream ‘musical adaptation.’ As a result, I approached the West End version of the show with some trepidation, especially since its Broadway incarnation had been met with such thorny write-ups. Luckily, I was in for a pleasant surprise. Set in 1980s Madrid, the play centres around Pepa (played by Tamsin Greig), an actress whose relationship with her regular co-star Iván has come to an abrupt and unexpected end sending her into a tailspin of sleeping pills and despair. She is

joined on the verge by Iván’s ex-wife, Lucia (Haydn Gwynne) who was driven into an institution by the loss of her husband and has emerged 20 years later seeking restitution; Pepa’s best friend, scatty model Candela (Anna Skellern), who is worried her new boyfriend may be a terrorist using her flat as a base of operations; uptight and aggressively virginal Marisa (Seline Hizli), the fiancé of Carlos, Iván and Lucia’s son, who is trying to organise her new life whilst dealing with her hostile mother-inlaw and harbouring major doubts of her own; finally, Paulina (Willemijn Verkaik), Lucia’s self-possessed and forceful lawyer who seems to have more of a vested

PEPA provides the heart OF THE SHOW is almost universally hilarious. Haydn Gwynne, too, is truly exceptional as the borderline psychotic Lucia, who she mainly plays for laughs, making her moments of tragedy and truth all the more poignant. Overall, this colourful and unexpected musical remains true to its source material in all the wit and female empowerment it brings to the table, bolstered by a cast of seriously talented women and a fun, feelgood soundtrack. u by Catherine Hales

HOWE: THE MIGHTY FALL Chiswick journalist Jonathan Maitland on how the ‘dead sheep’, Geoffrey Howe, brought down the Iron Lady Interview Gemma Billington

Elspeth, who had a notoriously frosty relationship with the PM. Interestingly, the role of Thatcher has gone to Spitting Image actor Steve Nallon. The play is a mixture of comedy and drama but not, Maitland insists, a satire. So surely Nallon’s casting is misleading? ‘There’s a creative risk involved, I guess.’ Maitland replies, ‘people might initially think it’s something it isn’t, but the cast we’ve got lined up is so good that it shouldn’t be a problem. Ironically [Steve] may be the most fantastic Thatcher ever because she was described as the ‘best man in the cabinet’ by Ronald Reagan, and Steve has studied her more than any actor alive, so really it’s a plus.' After assembling a group of actors for an initial reading in his Chiswick home, Maitland took the play for a

IT WAS BASICALLY the mouse that ROARED

T

wenty-five years ago, Margaret Thatcher’s longest-serving cabinet minister Sir Geoffrey Howe resigned from government with a stinging, now infamous, speech aimed at his ‘political soulmate’ in the House of Commons. Just three weeks later, Thatcher herself resigned. Mild and unassuming, Howe was often belittled by Thatcher and his public speaking abilities famously likened to being ‘savaged by a dead sheep’ – giving his parting words all the more bite. ‘It was basically the mouse that roared’, says journalist and broadcaster Jonathan Maitland, who has written a new play based on the speech, due to be performed

at the Park Theatre later this spring. ‘I had the idea [to write the play] because I had seen The Iron Lady and various things about Thatcher and the Tories but they’d always missed what I thought was the best story: which is the Geoffrey Howe story. This timid little bloke whose public speaking abilities were compared to a dead sheep suddenly gave one of the great political speeches. That’s a great story! But you see any Thatcher film or play, and they just treat Geoffrey as a stupid, boring nincompoop, which is so wrong.’ Entitled Dead Sheep, Maitland’s play focuses on the year leading up to Howe’s resignation with flashbacks to when ‘he and Thatcher were getting on in better times’. As well as the two central characters, the play also portrays Alan Clark, Ian Gow and Geoffrey’s wife,

17 CHIS_MARCH15_Howe.indd 17

reading at the Park Theatre. ‘Nallon was mesmerising,’ he says. ‘It was this kind of extraordinary cross between acting, mimicry… almost a kind of psychological stalking version of Thatcher.’ Even after her death, Thatcher is a figure of eternal obsession for the British public. But in Dead Sheep, Maitland is determined for Geoffrey to take centre stage. ‘I’m fascinated by Geoffrey because he was a hangover from a more genteel [time in] politics. In those days, what was valued was intellect and argument. This is kind of a love letter to old style politics, when it wasn’t about soundbite, and it wasn’t about image... It was about Geoffrey quietly being diplomatic and clever and honourable.’ Eventually Margaret and Geoffrey buried the hatchet, but other people ‘took longer to forgive Geoffrey than Margaret did,’ Maitland says: ‘some of his friendships never recovered.’ So how does he hope people will feel about Geoffrey after watching Dead Sheep? ‘I don’t want this to sound like some arrogant claim but I hope that this play will contribute, in a small way, to Geoffrey being recognised and given his rightful place in history,’ he says. ‘He’ll still be known as the man who brought down Thatcher, but he was much more than that. He was incredibly honourable. He was the man, actually, who did the right thing.’ u From 1 April - 9 May at Park Theatre; parktheatre.co.uk

No Substitute

The Who frontman Roger Daltrey talks exclusively to Absolutely about music, charity and why the best is yet to come I n t e r v i e w c at h e r i n e h a l e s

I

t feels both impossible and redundant to try to introduce Roger Daltrey. His career with The Who (you may have heard of them) is the stuff of legends and is now in its fiftieth year, the band having been started by Daltrey in 1964 with John Entwistle and Pete Townshend. After the original drummer quit the band, Keith Moon joined up creating the ensemble that would go on to become the best (and loudest) rock and roll band in the world. Known for his energy onstage and his powerful vocals, not to mention his now iconic microphone spin, Daltrey and the other members of The Who skyrocketed to fame in the 1960s propelled by his charisma and extraordinary voice and by the undeniable genius of Pete Townshend’s songwriting. Although not always a peaceful partnership, the combination of Daltrey and Townshend has sustained The Who’s success through the tragic loss of two of its members and has seen them embark on their UK tour, The Who Hits 50!, followed by their US tour of the same name next year. Their last UK date is in London at the O2 on 17th and 18th December and when

I ask why they have chosen this venue, Mr Daltrey’s answer is immediate, ‘The O2 is the best place to play in the UK as there are so few big arenas. It’s one of the only places designed for music and even though it can fit 20,000 there, the audience isn’t that far from the stage.’ It’s an odd sensation speaking to Roger Daltrey on the phone. On the one hand, I am aware to the point of distraction that I am talking to one of the greatest rock singers of all time but on the other, he comes across as so down to earth and lacking in airs and graces that I feel put at my ease. ‘The only other places than the parks are Wembley which is horrible and the Royal Albert Hall,’ Roger (Roger!) continues, ‘but to play to the same amount of people in two nights at the O2 would take two weeks there.’ Born in Hammersmith and raised in Acton, Daltrey’s voice retains its west London roots and no nonsense tone whilst simultaneously drawing you in, making you want to know him. Even over the phone, his magnetism and sincerity is undeniable. ‘Its written in the songs and you can’t fake the music,’ he says when I ask him how he maintains the energy on stage that has become his trademark. ‘As

I GET on stage, I’m 20 years old. I NEVER GOT PAST 20 years old TO BE HONEST

ARTS & CULTURE / PROFILE I ALWAYS knew it would last... I KNEW IN MY BONES that we would KEEP GOING soon as we start doing that we’ll be done, we’ll stop forever.’ He continues, ‘When I get on stage I’m 20 years old. I never got past 20 years old to be honest [laughs]. The mirror lies!’ When I attempt to probe into the reasons behind the unprecedented success and longevity of The Who, Daltrey is quick to assign the credit. ‘We’ve been very lucky but its also down to Pete. The style Pete writes in is classically based even though its rock and roll and it hasn’t really aged. The words are thoughtful and insightful, they speak to everyone no matter what age and Pete had the courage, the balls, to express the things that other people weren’t saying but what everyone was feeling.’ He adds, without a hint of false modesty or self-consciousness, ‘It’s what music should be.’ I make the mistake of suggesting that perhaps his audience has aged with him, a notion that he is quick to rebut. ‘It’s this lazy journalistic thing of writing and talking about how old everyone has got, “Oh, wrinkles!” It doesn’t matter! In 1964, playing at the Marquee Club we were playing with people like Muddy Waters and Smokey Robinson, all in their 50s and the very best at what they did. Rock and roll’s the same, with the best people age doesn’t matter.’ In truth, age does not seem to have slowed Roger Daltrey down one bit. As well as extensive touring and producing new material with Townshend, The Who

frontman is also deeply involved with the Teenage Cancer Trust, a charity he founded 25 years ago. ‘When I started the charity I never dreamed it would get to this point. We started it because that age group are always forgotten. They worked out that children need teddies and toys, adults prefer a lounger and TV but this whole group ended up so isolated.’ As he gets into his stride, the passion in his voice is evident. ‘Being told you have this disease, especially in your teens, is psychologically devastating and we worked out that the best thing for a young person diagnosed with cancer is to introduce them to other people in the same situation. Fifteen years ago we had four units, now we have 28.’ The charity has also become known for its fantastic concerts held annually at the Royal Albert Hall and which have attracted the very best of the entertainment industry. This year’s lineup included Ed Sheeran, Suede and The Cure. ‘The TCT is 25 years old. Its the 15th anniversary of the live shows at the Royal Albert Hall and 50 years of the Who. That’s an achievement.’ I have to agree. At the mention of the band’s anniversary, I ask Roger whether or not he has plans for after the tour. ‘We’re making another

21 DUL_DEC_ROGER_DALTREY.indd 21

record at the moment – for some reason we feel revitalised!’ he says, laughing. Did he ever imagine at the beginning The Who would still be going fifty years on? His answer surprises me. ‘I always knew it would last. Even though sometimes it felt like it would end in a week, I knew in my bones that we would keep going.’ Again, there is no lack of deference to his partner in music when he speaks of the band’s continuing success. ‘I always say this: Pete has the intellect to write the best music he’s ever done. He’s like those genius composers who only got better.’ Then, with an impish note in his voice he confides, ‘We’re not going away, much to some people’s annoyance. We’ll still be up there, making that racket we’ve become famous for.’ Well after our phone call is over, a particular phrase from the interview rings in my mind: ‘That’s the spirit of music - no one’s going through the motions.’ As I think about it, I realise that’s what has made them great and is what people watching The Who see today; age doesn’t matter in music when passion, focus and brilliance endure. And that, of course, is just so rock and roll. u Peninsula Square, SE10; theo2.com

She had asked if they were comfortable, and apparently I had replied: ‘No, it’s like wearing devils’ tampons, but aren’t they beautiful?!’ I can’t recall saying this but don’t doubt rhetoric like that sticks in the memory, so I’m happy to concede. These days I shy away from devils’ tampons. Having worn so many in my youth, I now have an irreparably damaged back. That said, nothing in fashion excites me more than having my mind changed. Clever British designers such as Nicholas Kirkwood and Church’s have honed androgyny in women’s shoes to such elegant perfection that I can’t decide whether to treat myself to a pair of Kirkwood’s metallic azure leather loafers [ £295, pictured above] or Church’s studded Brogues. No one said life was easy…  V I O L E T N AY L O R - L E Y L A N D Stylist and owner of fancy dress boutique Violet’s Box;

t’s March. Christmas is long gone and summer is creeping I up slowly, so now is the time to treat yourself to a little pick-me-up. Take a trip to Beauchamp Beauty, nestled in the heart of Richmond, and choose from a selection of indulgent spa treatments because, well, why not. Here, no request is too much, and they pride themselves on working closely with each client and their specific needs and preferences. Before my facial the esthetician talked through my problem areas and asked me about my facial regime (of which there was little to tell). Then, using skincare products from Elemis, the facial began. Exfoliation, serum, massage and a rich deep moisturising cream were the order of the day, all accompanied by a hand, foot and shoulder massage. My face felt and looked refreshed and the temptation to try one of their other treatments – think massage, Elemis body wraps, waxing , manicures, pedicures – was too much to bear, so out I walked freshfaced and with perfect painted toes. The ideal place for a little R&R. u

DELPOZO

he hottest grooming trend for Spring/ Summer 2015 has taken a minimalist direction with the ‘Negative Space’ nail. And unlike a lot of nail art which should only be sported by teenagers, or Rihanna, this trend is not too cute for the discerning woman. One of the most interesting negative space designs was created by OPI’s nail art ambassador Sophie HarrisGreenslade – whose clients include Rita Ora and Nicole Scherzinger – using the new OPI Fifty Shades of Grey collection. Strong monochrome colours work well with this trend, so Sophie recommends OPI Alpine Snow for the best opaque white and ‘Boosh’ by Illamasqua, a lovely, deep glossy opaque black. Start by prepping your nails. Crystal files make light work of shaping, last a lifetime, and won’t weaken the nails. With negative space manicures the condition of your nails is important, so apply a ridge filler base to ensure a smooth and evenly coloured nail plate. Once the base is completely dry, apply striping tape in graphic shapes. Sophie

suggests placing the tape on the nail with tweezers, using your fingers can be fiddly. To create half moons or french tips, pros use sticky reinforcement rings to create perfect curves. Just place the ring curve on the line of the half moon. Paint between the desired section of the tape with one coat of black polish. Apply a second coat of either white or grey polish in the adjacent taped section, remembering to leave the negative space section blank, then remove the tape with tweezers slowly before the polish dries. Repeat on all fingers. If the polish has bled into the

negative space line or over the cuticle, clean with Leighton Denny’s Precision Corrector. Alternatively you could use a striping brush dipped in nail polish remover. When completely dry, apply a glossy top coat over all fingernails, except for the ring finger – use a matte top coat here instead. If you’re confident with a nail art brush Sophie suggests ditching the tape and simply painting your nails with a striping brush, leaving the geometric areas unpainted. Andrea Fulerton’s Nail Boutique Dot & Flick creates perfect, fuss-free stripes. u

CONFIDENTIAL West London’s latest food news, served with all the trimmings

INGREDIENTS The Buns: • 20g fresh yeast • 1 tsp caster sugar • 400g plain flour • 0.5 tsp ground cinnamon • 0.5 tsp freshly ground nutmeg • 1 tsp mixed spice • 200ml whole milk • 70g caster sugar • 1 large egg • 70g soft unsalted butter • 40g sultanas • 40g dry currants • 40g dried unsweetened cranberries • 70g mixed peel • 0.5 tsp fine sea salt

W o r d s R O M Y VA N D E N B R O E K E

Cross Topping: • 200g plain flour • 230g icing sugar • 2 tbsp olive oil • 3 tbsp milk Syrup: • 300g caster sugar • 200g water • 1 whole nutmeg • 1 whole star anise • 1 whole clove • 0.5 vanilla pod

METHOD Making The Buns:

01 In a large mixing bowl melt yeast with a tablespoon of whole milk and a teaspoon of caster sugar. 02 In a separate bowl, sieve the flour with the spices. 03 Add the spiced flour to the yeast. Keep adding the rest of the milk, the sugar and egg. 04 Begin to bind the mixture together using your hands, then add the butter a chunk at a time whilst kneading the dough. 05 Continue kneading until you get a smooth, shiny dough. 06 Add the salt and fruits and continue kneading. 07 Cover the bowl with a tea towel and leave at room temperature for 1.5 hours, until it doubles in size. 08 Divide into 20 pieces, roll into shape on a surface to create smooth buns. 09 Arrange on a baking tray lined with a baking paper. Cover the tray with a clean tea towel and leave to rise. 10 When the buns are ready make an eggwash by whisking 1 whole egg, 1 egg yolk and a teaspoon of milk. Brush the buns and leave to dry out for 10 minutes. Brush again. 11 Pre heat the oven to 200°C. Making The X Topping: 01 Using a hand whisk, combine all ingredients into a smooth paste. 02 Fill a piping bag with the topping mixture, cut a small hole. 03 Pipe thin crosses on top of the buns on the tray and pop it into the oven. The Syrup: 01 Put all the syrup ingredients in a small saucepan and over a low heat bring to a boil. Once the sugar has dissolved, increase the heat and simmer until you have a syrupy consistency. 02 Remove from the heat and fish the spices out. 03 Once the buns are ready, brush them with the hot syrup. 04 Leave to cool for 15 minutes before serving.

y strongest childhood memories are of the kitchen – and playing a game with my sisters – daring each other to run to the kitchen counter, which was heads and shoulders taller than us, and stretch out a fat hand to reach for the plate of freshly baked almond cookies. The prize was sweet, but if Mum caught us we’d forfeit dessert and treats for a week – for being disobedient and greedy. The rule was we had to wait until after dinner to enjoy an almond cookie and for me that was torture and worth the risk to acquire one commando-style.

M

Preparation time 30 minutes, plus 1 hour resting time Cooking time 10 minutes INGREDIENTS • 440ml semi-skimmed milk • 100g unsalted butter, melted • 125g caster sugar • 4 eggs, beaten • 2 teaspoons fast action dried yeast • 600g plain flour • 250ml vegetable oil, for deep-frying • 397g tin of condensed milk • 50g caster sugar, for dusting • 50g icing sugar, for dusting METHOD

01 Pour the milk into a medium saucepan and warm over a gentle heat. Pour the milk into a large bowl, add the melted butter, 75g of the sugar and mix well. Add the eggs

and mix again. Then add the yeast and stir into the mixture, which will start foaming as the yeast is reacting to the warm liquids. 02 In a separate large bowl, sift the plain flour and make a well in the centre. Pour the wet mixture into the flour and stir to combine into a thick batter. Cover the bowl with cling film and set aside in a warm place for 1 hour until the dough has doubled in size. 03 Preheat the oil to 180°C in a wok over a high heat. 04 After an hour, heat a large saucepan and fill with half of vegetable oil. Scoop some of the batter in your hand and, using the gap between your thumb and index finger, squeeze out a ball of dough approx. the size of two grapes. Add to the hot oil and cook for 4–5 minutes. Using a slotted spoon scoop out the fried doughnuts and leave to drain on kitchen paper. Cook the remaining doughnuts in batches. 05 Transfer the cooked doughnuts onto a plate and gradually drizzle over the condensed milk then sprinkle with caster and icing sugar. u

L I S A’ S T I P

When cooking with hot oil it’s important to drop the ball of dough carefully into the hot oil. Drop the dough close to the oil so the oil will not splash back on you.

PAN-FRIED PORK DUMPLINGS makes 12-13

ur grandmother was a huge fan of this dish because the dumplings could be cooked in three different ways – boiled, steamed or fried. Her favourite cooking method was to deep-fry them as it gave a crunchy texture that contrasted nicely with the juicy meaty centre. However, we prefer to pan-fry and steam them for a healthier taste. Traditionally served during Chinese New Year, because they resemble gold ingots, our grandmother used to hide a coin inside each dumpling – that is, until one got stuck in my throat and I had to be rushed to hospital. Thankfully the coin was coughed out, but from then on my grandmother banned all coins from being hidden inside dumplings – even if it meant breaking the Chinese tradition.

O

Preparation time: 25 minutes plus 10 minutes resting time Cooking time: 7–8 minutes INGREDIENTS • 1/4 Chinese cabbage, core removed and finely chopped • 1/2 teaspoon salt • 50g chives, finely chopped • 300g minced pork • 1 garlic clove, grated • 5cm piece of fresh root ginger, grated • 1 tablespoon Shaoxing rice wine • 1/2 tablespoon light soy sauce • 1 teaspoon caster sugar • 1/2 tablespoon oyster sauce • 1 teaspoon sesame oil • 2 tablespoons potato starch • 1 tablespoon vegetable oil • 50ml water For the dumpling wrappers: • 110ml boiling water • 1/2 teaspoon salt • 200g strong white bread flour, plus extra for dusting To serve: • Chinese red vinegar and ginger • strips, mixed together to form a dipping sauce METHOD

01 First make the dumpling wrappers. Measure the boiling water into a jug, add the salt and stir to dissolve. Sift the flour 2–3 times into a large mixing bowl, pour in the salted water and mix to a stiff dough with a wooden spoon. Turn out the dough onto a floured surface and knead for 10 minutes until smooth. Return the dough to the bowl, cover with a tea towel and set aside to rest at room temperature for 10 minutes. 02 Shape the dough into a long log and then divide into 13 pieces approx. 5cm wide. Roll into balls, flatten with your palm and roll into 7–8cm circles using a rolling pin. Arrange in to a stack on a plate, dusting with flour between each individual wrapper, then cover with a clean tea towel and set aside. 03 To make the filling, place the chopped cabbage in a large mixing bowl and stir in the salt and chives. Squeeze the cabbage mixture to extract as much water as possible and drain well. Return

49 CHIS_MARCH15_Recipes.indd 49

the cabbage to the mixing bowl and add the minced pork, garlic, ginger, Shaoxing wine, soy sauce, sugar, oyster sauce, sesame oil and potato starch. Mix clockwise with a metal spoon until the filling is thoroughly combined and sticky in consistency. 04 To assemble the dumplings, wet your index finger with water and moisten the outer rim of a dumpling wrapper. Place a heaped tablespoon of filling in the centre of the wrapper and fold in half to form a half-moon shape. Seal the edge by pleating it from right to left. Do this by using your left thumb to push the wrapper to the right, and your right thumb and index finger to pinch the two layers of pastry together; this creates a nice wavy edge. Continue until the entire dumpling is sealed. 05 To cook, heat the oil in a large lidded frying pan over a medium heat. Drop the dumplings in and fry them for 1 minute on each side until they have a golden crust. Pour in 50ml water, immediately cover the pan with a lid and cook until the water has evaporated, approx. 5–6 minutes. Reduce the heat to low then remove the lid and cook for a further minute. 06 Serve the dumplings with Chinese red vinegar and ginger strips as a dipping sauce. u

L I S A’ S T I P

Always check that the minced pork has very little liquid/juice. The meat must be super-fresh to hold the filling together. If you have a mincer you can mince fresh pork loin too.

FOOD & DRINK / REVIEW

East meetsWest Leiths students are taking over the kitchens at Shoreditch eatery The Boundary

to see, but there’s a sense of calm and control in Frederick’s domain as he flits between the chefs and Leiths students in their labelled aprons. The Boundary cuisine is classic French, and the Leiths dishes (devised by the restaurant but made by the students) are highlighted on the menu. First was a Leiths Coquille SaintJacques served with Barigoule Artichokes. Air-light, the scallops were cooked perfectly and worked well paired with sharp citrus flavours and tangy artichoke. My boyfriend enjoyed a butternut squash soup, served with a mushroom pie on a side plate and a salad of walnut and pear. Deciding that scallops weren’t quite decadent enough, I chose half a lobster baked in mustard cream sauce with Parmesan for my main course. The accompanying side salad was a little too peppery but the lobster itself was to die for. The sauce complimented rather than overpowered the melt-in-the-mouth meat. My boyfriend also opted for seafood, the Leiths John Dory Fillet served with French Seaweed and Ratte Potato Purée. Another beautifully cooked dish – I’ve never heard such rapturous praise for what is, essentially, posh mashed potato. We rounded off dinner with a Crème Brûlée and the Leiths Seville Orange Soufflé served with Cinnamon Ice Cream. Leaving the restaurant, we passed the students at the end of their first day. Positively buzzing with adrenaline, it was clear why The Leiths Diploma is renowned as one of the best courses for aspiring chefs, the students themselves are alive with passion and, while this collaboration is undoubtedly good for them, it’s truly great for us food lovers – both east and west. Top marks. u

ccustomed to reporting on the west London dining scene, travelling to hipster capital Shoreditch felt almost sacrilegious. I’m visiting the restaurant at Boundary, the stylish boutique hotel designed by the great Terence Conran. Though east London is the breeding ground of new culinary trends, the Boundary called on the services of a very west London institution when they wanted to embark on a new cooking partnership. Leiths School of Food & Wine run a prestigious

one year Diploma course, with famous alumni like Gizzi Erskine and Lorraine Pascale. The new collaboration sees select students from the course sent to work in the bustling kitchen of the Boundary restaurant. Despite Leiths celebrating their 40th anniversary this year, this is the first time such a scheme has taken place. Students are guided by head chef Frederick Forster, former protégée of Raymond Blanc at Le Manoir Aux Quat’Saisons and Michel Roux Jnr at Le Gavroche. Tall and muscular, Frederick cuts an imposing figure. Because of the open kitchen layout, any Gordon Ramsaystyle shouting would be visible for all

utting out majestically over the cliff edge above the crashing waves, Curtain Bluff is the Manderley of the Caribbean. Built in the 1960s by American horticulturist Howard Hulford, it nestles impressively amongst the rainforest on the southern coast of Antigua, dominating the ‘bluff’, or rocky promontory, upon which it sits. And while it operates a five-star hotel, it also doubles as a home for the Hulford family, giving it the sense of a glamorous 50s house party with timeless appeal. Now a 72-roomed home from home, it attracts a whole range of celebrities, from Eric Clapton to Giorgio Armani, all looking for it’s trademark simple, elegant luxury rather than an uber-glossy getaway. Many of the guests here are repeat ones, with 65% returning year after year for the old world grandeur which pervades the place. As a result, the staff welcomes them back as members of the family. And Curtain Bluff really is a family – the hotel strives to engage the local community in Old Road as possible, offering jobs to generations of families, even putting some of them through college in the US. Instead of giving tips, guests are encouraged to contribute to the Old Road fund which contributes to these programmes.

TRAVEL / WANDERLUST

Philanthropy aside, Curtain Bluff has plenty of other features to recommend it, particularly those bestowed by Nature. The hotel’s classic colonial architecture here sits in 20 acres of gardens, all sandwiched between two stunning beaches. Each engulfed by a different ocean, the two beaches are completely different in character. Choose from the tranquil, turquoise one perfect for sunbathing or the rugged one where the waves dramatically crash against the cliffs spraying salty clouds – a perfect view for balmy candlelit dinners. These sumptuous five-course dinners feature the hotel’s signature combination of French and Caribbean cuisine, filled with plenty of fresh fish hooked straight from the ocean, from Antiguan lobster tail to the King Fish and Wahoo I caught during the day’s deep sea fishing expedition. But these dinners aren’t just exceptional quality, they’re also great value, being included in the all-inclusive costing at the hotel. In fact, everything here from the exquisite food to the endless rum punches are included in the price. We loved the laid-back buffet lunches in the beachside restaurant and the traditional afternoon tea served on the stone Sugar Mill terrace overlooking

the gardens, but dinner here is the main attraction. Accompanied with live music and countless wines from the hotel’s legendary cellar, it’s complete FrancoCaribbean indulgence. Also included in the price tag are the many watersports available to guests. Water-skiing, paddle boarding, snorkelling, deep sea fishing and sailing are all on offer throughout the day, ensuring you stay entertained through the holiday. We jumped on a speedboat that took us out to the coral reef about a mile offshore from where we could do some snorkelling, spotting reef sharks, turtles and countless fish that made up an underwater rainbow. We even got a glimpse of a dolphin along the way. Back on dry land, the hotel has a longstanding reputation for tennis and hosts

57 B&C_MARCH15_Antigua.indd 57

WITH ITS cool, clean Balinese DÉCOR, CURTAIN Bluff’s stunning WELLNESS SANCTUARY is the perfect PLACE TO UNWIND the annual Antigua Tennis Week on its four courts overlooking the ocean. An islandwide professional tournament, it showcases six days of action-packed match play, as well as stroke-and-strategy clinics for guests and glitzy socialising in the evening. Look out for the other tennis camps run by various British stars, including Andrew Castle and Annabel Croft, which also take place throughout the year. But your holiday here doesn’t have to be high-octane – there’s also an exceptional spa on hand to help you relax. With its cool, clean Balinese décor, Curtain Bluff ’s stunning wellness sanctuary is the perfect place to unwind after stepping off the long flight from London. Try the Ultimate Destresser massage, offering deep relaxation and increased circulation in a treatment room filled with the soothing sounds of the waves lapping against the shoreline below. Afterwards, we lazed in the cliff-top infinity Jacuzzi pool with a rum punch in hand, watching the sun set over the sparkling sea – the ultimate way to enjoy the Caribbean. u

THE SITE

I

n a sensitively-reclaimed old University building, the Hotel du Vin in Cambridge has managed to meld the comfort and decadence of a 21st century hotel with the old-world charm of this ancient city. One of Cambridge’s most central hotels, you feel the atmosphere of dusty libraries and lacrosse pitches, candlelit chapels and punting on the Cam all around you. Turn right out of the hotel and you’ll be at King’s College Chapel in under 5 minutes and at the trove of artistic delights that is the Fitzwilliam Museum in less than 3. The Hotel du Vin makes you feel like you are a part of the life of the city, however brief your stay. u

THE ROOM

W

e had a spacious room on the lower ground floor. There was plenty of space for two put-up beds for the children, and an enormous bathroom with walk-in monsoon shower and rolltop bath. The finishing touches were all present: luxurious bedding, robes and Miller Harris toiletries. It was also, despite its location, blissfully quiet. u

ess than an hour from London on the train, Cambridge is ideal for a short city break. We were blessed with winter sunshine on our visit, and the spires and turrets set against an azure sky were breathtaking. Cambridge is a walking city: we followed our noses up Trumpington Street, into the alleys of the University colleges, took our children on a whistlestop tour of the Fitzwilliam Museum, visited a choral service at Corpus Christi, and the next morning we were on the train back to London feeling a little bit smug at our parenting/city break skills. u

THE BAR & BISTRO

I

n the old cellars of the building the bar occupies every nook and cranny, with cosy sofas and candle-light abounding. We tried their Marmalade Martini which was truly delicious. Afterwards we dined at the Bistro which was buzzing with both local diners and guests. The fare is perfectly executed French bistro cuisine. The children ate moules frites and my husband a beautifully cooked steak. u

NARCISSI Little Narcissi are probably the cheeriest of all the spring bulbs. Scented, pretty flowers are held well above the foliage and combine with lots of other plants, especially in winter containers. The Skimmia here are now in full flower, the tiny red buds that added colour from December onwards have opened into a profusion of cream flowers held on raspberry stems.

ho would’ve thought a baby W carrying could be so fraught with anxiety? Just Googling ‘baby carrier review ’ reveals a multitude of (apparently) catastrophic consequences that can come from choosing the ‘wrong’ equipment. Of course, the Internet is not an accurate guide to anything, so best to do your own research. In the course of mine I found the Baby Bjorn Carrier We, a new design from an old brand that hugs baby close in the most endearing chimp-like fashion, supporting both the head and neck. Thankfully your back is also supported with padded waist and shoulder supports. Top marks on every count, and judging by the reviews online even the Internet agrees. u £84.95; babybjorn.co.uk

KIDS & EDUCATION / SCHOOL TALK

Look North

There are alternatives to the pressurised arms race for schools in London and the Home Counties. And they are not as far away as you think Wo r d s A m a n d a C o n s ta n c e

M

any dream of getting out of the education arms race, but few of us actually do it. But Tessa Lumley did. Lumley shipped her family nearly 600 miles north, from London to Morayshire where her two girls now attend Gordonstoun. In a letter to the principal Simon Reid, a year later, she wrote: “There was a moment, around two years ago, when we lived in London, Alice was 9 years old and I found myself standing at her school gates wondering if the world had gone mad. Parents were discussing where and whether to get tutors, what their children were and were not reading, what extra-curricular activities they did or should do. … I want my children to be happy but we found ourselves in a system that seemed to be about to preclude that. The London academic process allows only certain kinds of children to shine — the lucky few who are either highly intelligent or highly diligent or both; the ones who are mature enough (at 9) to understand the need to give up playtime to study; and the ones with parents who have sufficient control over them to force them to. Anyone else is liable to fail in a system in which they are competing with hundreds for tens of places.” Andrew Johnson, headmaster of Stonyhurst College in Lancashire, couldn’t agree more. “People will thrive here academically but at somewhere like Winchester (where Johnson was head of modern languages for ten years) a very bright

THE ADVANTAGES of these partnerships ARE COMPLETELY TWO-WAY ten year old boy might not feel very bright, it’s a pressure cooker type of school. We’re just not like that.” “We are academically selective but not relentlessly so – it depends on the individual.” Between 5-10% of pupils at Stonyhurst – one of the UK’s most famous Catholic schools - come from London (30% are international). Johnson says parents come looking for something different, something more wholesome. “Here children can be themselves and grow at a sensible pace without the pressures of the city. It is an opportunity to create a rounded character, someone who is comfortable in their own skin.”

75 CHIS_MARCH15_Education.indd 75

And then there’s the space. Northern boarding schools are lousy with it: hills, dales, moors and the sea – they often have it all. Gordonstoun has 200-acre wooded campus one mile from the Moray Firth; the school even has its own yacht and is world famous for its unique outdoor education curriculum. Stonyhurst has a whopping 680-acre campus (St Pauls’ much-envied site by the River Thames in contrast is a paltry 43 acres). The schools are further away, but they bend over backwards to help parents get involved and visit the schools. Stonyhurst is only two hours from Euston station and holds regular weekends where parents are invited to come “and be part of the family of the school,” says Johnson. “The distance does mean a bit of planning but you will also have quality time with your child.” Plus, whisper it, northern boarding schools are generally cheaper. They are also likely to be more generous with scholarships and bursaries. Stonyhurst has an endowment that allows them to give away £2.3 million a year in bursaries and scholarships. 35% of pupils receive some fee support, often to local children. “Therefore we have a more diverse pupil body, not just the children of the super rich,” says Johnson. But the last word goes to Tessa Lumley who finished her letter with this: “Most importantly, both Alice and Emily have flourished. They have grown and matured. They are being robustly and effectively educated — but they are also, crucially for me, being encouraged to be children: adventurous, inquisitive and occasionally intensely muddy. But, best of all, they are happy. Without happiness, surely it would be impossible for them to fulfill their full potential.” Makes you think, doesn’t it? u

IN THEIR OWN WORDS

Harry Hammonds Sales Manager at Aston Rowe, Acton

I

Photography: rebecca noonan

often sit and wonder if my career in estate agency was one of chance or destiny. If I were asked as a young adolescent what industry I could see my future career being in, I most likely would have said media following in the footsteps of my father, who worked for the Financial Times for many years. Some of my close family had for many years been involved in the property business in various sectors, including a cousin who had embarked on a career in estate agency around the time, and frankly it had not even entered my head that this could be a path for me. Then arrived my Sliding Doors moment (for any of you familiar with the Gwyneth Paltrow film of the late nineties). Sat in form assembly on the day our work experience placements were announced, I was pinning my hopes on the two week placement I had applied for at the local Gazette, only to find I was to be spending a fortnight at a local estate agency on Ascot High Street. After a moment of initial disappointment, I embraced my new role and began tapping up family members in the industry for a bit of an insider opinion. And there it began, the property bug if you like. I enjoyed every moment of it and even then managed to get a Saturday job working for Savills nearby, and one could say I never looked back. I am originally from Ascot and began my career close to home, but there was a burning desire to edge closer to London one day and test my skills in the famed London market. After a brief spell in Middlesex, I then moved to a large corporate company and had spells in both Ealing and Chiswick before settling in Acton with Aston Rowe. After a number of years in the corporate agency, I decided the culture wasn’t quite for

ABSOLUTELY MAGAZINES

ITOW.indd 104

me and was in the market for a move. I had a really great experience working for a strong local independent in Ascot, so I wanted to find a London equivalent. After a few interviews, a cousin of mine had a word in my ear over a few glasses of champagne at a family wedding about wanting to recruit a strong team to head up Aston Rowe’s Acton sales team, and wondered if I was interested. It was a no– brainer really. Over the past three years, I have felt a terrific sense of achievement as to the progress we have made. It’s rewarding creating a business out of the ground and into an on-going success and far more interesting than being a number in a large organisation as before. I now head up the sales team and one of the most satisfying elements of my job here is working your socks off to do a good job on a sale, and getting a great review and pat on the back from a happy seller or buyer at the end. It makes it all worthwhile and far more so than the financial reward in my book. Three and a half years down the line, we look forward to the opening of our second office in Brook Green early this spring, and I am sure the story won’t end there judging by the drive of our senior management. There is certainly no nepotism within these walls and our desire to strive forward with a focus on excellent service is a good reason why a third of our business comes via referral. So I suppose I can thank my old tutor Mrs Ardy for picking me to work for the local estate agent and not the newspaper as today I could by contrast be writing this article for some event in the financial climate. And if you haven’t seen Sliding Doors, I suggest you do, as it’s an interesting theory.

hey wait to find a suitable property before advertising their current property: this is often a recipe for disappointment and with the market moving quickly in London, it is vital to begin marketing before searching for a new home. This can both alleviate the stress of the seller potentially losing out on their dream home and give them more confidence to make offers themselves, knowing they are in a strong position to buy. Sellers may instruct an inexperienced solicitor, or one based purely on cost. Selling or buying a home is often one of the largest transactions people will ever make and entrusting a quality solicitor is key; opting for the cheapest firm or a firm outside of London with little knowledge of the London property market can ultimately delay or even cause purchases to fall through. I firmly believe that solicitors are very similar to estate agents, in that ‘you get what you pay for’.

Most satisfying transaction I’ve had: We recently completed on a flat which we took on initially as the sales market began to change in Q3 of last year. Despite the difficult market conditions, we agreed the sale to a cash buyer at £125,000 over asking price! Most interesting property I’ve been involved with: We recently marketed a property of over 3,000 sq ft located in Woodstock Studios, a converted BBC studio offering a stylish mix of residential and commercial units. The property I'd most like on our books is:

We never have enough family homes which fall into the important school catchment areas, so I’d love a few more. Most unusual interior: I valued a flat a number of years ago owned by an Italian gentleman who worked with glass and mirrors. Over a 20-year period every wall and ceiling in the property had mirrors cut to size and installed. It was very surreal! Finest property showcase: Rowan Road, Brook Green, W6: £2,950,000 Freehold. A truly stunning five bedroom family home set over four floors.

H

aving worked in Brook Green for three years previously, my return to the area with Savills was an exciting move back for me from our Northcote Road office in Battersea. We have had a busy start to the year, with many tenants getting ahead of the market and looking earlier than usual. Like Battersea, Brook Green tends to attract young professionals and families. My advice to tenants this year is to act quickly as the popular properties do not hang around.

London's MOST POPULAR

Wo r d s N I G E L L E W I S

The floating trend: Back of the Moon, Taggs Island, TW12

F

loating homes are evidently popular among Londoners. Some 18,271 people have so far had a peek at this water borne property since it was listed in July last year – and it’s also this month’s most popular property on Zoopla.co.uk. Back of the Moon, which is for sale at £1.8m, is a recently completed 3,000 sq ft contemporary houseboat on Taggs Island, a slip of land on the Thames upstream from Hampton Court and reached via a humpback bridge. Like most of the 60 houseboats on the island, Back

ABSOLUTELY MAGAZINES

MOST POPULAR.indd 136

of the Moon is moored to piles driven into the bank but unlike most, it comes with a large 125ft mooring and a landscaped half-acre garden behind it, making it one of the largest plots on Taggs Island. Back of the Moon has been completed externally but it now needs finishing inside and could be an “artist’s home, workshop and gallery or a five bedroom home”, says agent Mary Hodgson of Waterside Residential. She says the property includes street parking for five cars, two driveways, a garage/workshop, summerhouse, outbuildings and its own slipway. But the person who buys Back of the Moon will be getting more than just a floating home. Taggs Island has plenty more to offer including an interesting history, a very famous boat owner and a strong community feel. The island takes

its name from Thomas Tagg who ran a boatyard on it during the 1870s and subsequently opened a hotel too. Then in 1902 Fred Karno, the theatrical impresario credited with nurturing the talents of Charlie Chaplin, bought the hotel along with the rest of the island. But Taggs Island slowly slipped back into obscurity until the early 1970s when it was used by film director Stanley Kubrick to shoot scenes for his 1971 film A Clockwork Orange. But development of the island only began in earnest when, in 1983, it was bought by a group of houseboat owners and proper sewage, water services and moorings were introduced. The decent services and idyllic position make the island popular with artists and musicians wanting to ‘get away from it all’ but be near London and that includes David Gilmour, guitarist and song writer with the band Pink Floyd. He owns the Edwardian houseboat built by Fred Karno and it is now Gilmour’s home studio. It is here that Pink Floyd’s most recent two albums The Division Bell and Endless River were recorded. But with such an extraordinary island come unusual aspects of life. The first is that mortgages for its houseboats are tricky to secure so most buyers make cash offers and, while the homes are freehold, the mooring and land are leasehold. Also, there are annual fees to be paid both to the Environment Agency for the mooring and to the island’s freeholders for its upkeep – but one of the island’s chores is also a pleasure. Some residents do their shopping by boat and chug up to Kingston to pop into Waitrose.

EDWARDIAN Elegance

The inimitable Edwardians

T

he Edwardian period was a brief but many-layered flash of late Victorian design brilliance. It ran for 30 years (compared to Georgian’s three-century stretch) beginning 12 years before Queen Victoria died, getting its name from the nine-year reign of Edward IV and then ending in 1914 when the First World War changed everything. “It’s not a period that makes a huge amount of sense in architectural terms because there wasn’t a big break either at the beginning of Edward’s reign in 1901 or in 1910 when he died,” says Christopher

Costelloe, director of the Victorian Society. During the Edwardian period, changes were afoot for London’s home owners. Servants had become more expensive and less common, commuting became more popular as the city grew, the Gothic style was falling out of fashion and the Queen Anne style was becoming more popular. All these features make Edwardian homes increasingly popular today as London’s high house prices persuade many people to look further afield for homes that are wider, broader and have larger gardens than their Victorian counterparts. But there’s another reason why Edwardian homes appeal. They hark back to a simpler, pre-industrial era and mix modernity with the rustic, the most common expression of which is gables with

mock Tudor black-on-white framing. Other period markers include Dutch and Flemish influences, prominent chimneys, intricate detailing, white painted windows and the breakdown of the terrace and the growth of more “articulated buildings opposed to the more pared down terraces of the 1850s and 1860s”, says Costelloe. In central London the most obvious Edwardian homes are purpose-built apartment blocks, a type of property that Martin Bikhit of estate agent Kay & Co often sells. “Edwardian properties are defined by their high ceilings and well-proportioned rooms and the typical purpose built flats that we see are grand in appearance and are loved by families who are drawn to their proportions and internal space”. One property that would appeal to any buyer, and that was last sold twelve years ago for £1.2 million, is The Tower House on South Parade in Bedford Park. It was designed by leading Edwardian architect and Arts and Crafts designer Charles Voysey and is an unusual, white rendered property in an area of largely brick Victorian houses that “somehow it fits in very well”, says Costelloe. From this high point of architectural innovation to the thousands of standard Edwardian homes that pepper London and reflect these more radical homes, the style remains remarkably popular and widespread given its short existence. victoriansociety.org.uk
