like to think that Scarlet is the jewel in the charity’s retail crown, selling pre-loved designer items at a fraction of their original cost. It goes without saying, it’s definitely worth a visit for those looking for a present for someone with impeccable taste or a bit of sparkle to brighten up Christmas celebrations! There’s so much to look forward to this month in Essex, but for me December is all about the three Cs – champagne, Chanel and charity. My passion for fashion isn’t my only motivation for running St Clare Hospice’s boutique; I know that I’m playing my part in making sure that local people are able to access free bereavement support and specialist palliative care, in their own home or at our hospice in Hastingwood. Every penny of profit I make in the shop helps. But I can’t do this without the generous donations of designer and top brand goods, the dedication of my wonderful volunteers or the continued support of our valued customers. Christmas is a very special time for the hospice. Our doctors and nurses will be spending Christmas Day caring for others who might not get to share another one together and our Bereavement Support helpline is open, supporting people through what can be a difficult time of the year. If, like me, you’re looking for a feel-good festive spend and prefer your fashion to be sustainable, then do pop in to see me and my team. By doing so, you’ll be supporting your local hospice to be there for people who need our care and support through death, dying and loss throughout Christmas and beyond.

OH YES IT IS… PANTO TIME Pantomime is a family favourite and this year it’s back with even more gags, colour and tomfoolery. The Mercury Theatre in Colchester has recently undergone a major refurbishment, so there’s no better time to treat the family to their spectacular production of Aladdin. Watch in wonder as the penniless Aladdin dreams of winning the heart of the rebellious Princess Jasmine. Will Aladdin defeat the wicked sorcerer? Can the Genie of the Lamp make all of his wishes come true? Tickets are priced from £15-32. The Civic Theatre in Chelmsford will be staging another panto classic, Beauty and the Beast (left). Be captivated by this classic love story and remember to boo and hiss at the wicked landlord, Lapiscine. This amazing story of love and transformation will have absolutely everything you’ve come to expect from a traditional pantomime including fantastic sets, bewitching costumes, roofraising songs and heaps of magic. WINTER WONDERLANDS Nothing gets you more in the Christmas spirit than the magic of fairy lights and illuminations. Enjoy a winter wonderland by visiting one of the county’s magnificent light shows. Hylands Estate in Chelmsford is hosting ‘Enlightened’ (right), where the stunning park grounds will be transformed into a magical illuminated trail for visitors to enjoy with all the family. Visitors will be taken on a specially crafted route through mesmerising installations for a truly enchanting experience. Tickets are priced £9 children and £12 adults, and doors open from 29 November until 2 January 2022. RHS Garden Hyde Hall is also offering a magical evening with a twinkling light trail. Follow the winding route through a series of gardens and discover shrubs and trees awash with colourful lights as well as willow structures and leaf sculptures immersed in festive colour. FESTIVE FAYRES Everyone loves a spot of Christmas shopping, and the county is full of festive fayres, which are ideal for finding unusual gifts for loved ones. Great Dunmow's Christmas market takes over the town centre on Saturday 27 November between 2-6pm and offers gifts, festive food and drink, a Santa's grotto, Christmas shopping, live music and children's entertainment. Braintree’s Christmas Street Market is back, a popular market right in the centre of the town featuring 50+ stalls lining the streets. Visitors will be able to pick up lots of goodies from handmade jewellery to Christmas decorations and more. The street market launches on Saturday 20 November and will include the town centre's Christmas Light Switch on event, and the market will also be open on 4 and 18 December from 9am. Hylands House Stables will be opening its doors on 1 December from 6-10pm for late night shopping. Meet the artists that reside in the studios and snap up unique pieces from the makers, designers and creatives. Festive food and drink will also be available. And opening on 4 December is the Epping Christmas Market. This is a traditional Christmas market with entertainment, food, gifts, crafts, Santa and festive fun. The Town Council also provide the Christmas lighting in the town centre including the mini trees on the High Street and large Christmas tree on the Piazza.

Head on over to the Nuclear Wild Forest Activity Centre in Kelvedon Hatch and have a go at Twilight Axe Throwing. It’s a great alternative to the traditional Christmas party and is also a great stress reliever; throw an angel, axe and knife for 60 minutes of medieval fun (priced at £30 per person). The Wild Forest Activity Centre is also staging a Christmas onesie 5km run on 11 December (right) and will have lots of Santa’s little helpers en-route to help you cross the finish line. Tickets are £7.50 and the event will raise funds for Parkinson’s. Or head over to Colchester Castle Park and sign-up to their Santa 5K: enrolment includes a free Santa suit, and the fun takes place on 5 December and costs £10 for adults and £7.50 children. DREAM

Heard the one about the all-female team running a raunchy male dancing group based in Essex? Alice Woods, MD of the Dreamboys, tells us more

I

don’t consider myself to be a prude, but even I was left a little speechless when Alice Woods, managing director of the Dreamboys, discusses why their candles shaped like male genitalia are sure fire hits for anyone looking for a Secret Santa present with a difference. However raunchy the subject, Woods doesn’t seem to bat an eyelid or even respond to my nervy chuckles, but then again she is the woman who has run the Dreamboys for the last two and a half years. How she got there is slightly surprising. “I trained as a classical musician,” she says. “That was my first career shall we say, gigging regularly and doing what musicians do. I also went to art school, so I was combining both careers – artist and musician – and I had an art gallery in London, which did quite well on the business side of things. It was the same with music, I ended up dealing with a lot of the business side, booking out gigs, being a promoter and representing other

people. Then I decided because I did always gravitate to the commercial side of the music industry, I went back and I studied finance and accounting at the London School of Economics and I did my masters. After I graduated, I worked as an investment analyst in the city.” Although none of this directly points to revamping an all-male dance/strip group, it actually makes sense when Woods goes into the reason for getting involved with the Dreamboys. “When I was working in finance, what I wanted to do initially in my head was to buy a venue and turn it into a cabaret club,” she explains. “I was researching and raising investment for that, and then one of the brokers I was working with mentioned the Dreamboys brand [was up for sale]. It just made total sense to me. I like being behind the scenes, I don’t like being on stage – I want to be in an auditorium with a thousand people watching the boys perform and seeing all these happy faces. I don’t want to be

up there myself, I want to create it and stand back and watch it all happen. Also,” she adds with a smile, “I am a woman, there’s never been a woman in charge of so many men and that appealed to me.” In preparation for this Christmas issue, I asked my colleagues what they thought about the Dreamboys – a couple of the female team were a little too quick in saying they knew them, whereas a couple of others looked a little perplexed by the idea of me featuring them. “My friends thought it was the perfect culmination of my life so far,” Woods says on how her own circle reacted to her business plans. “They thought ‘this is so Alice’. Some of my family were a bit sceptical, it’s a bit of an unusual career move. It took a while to get some of them on board, but now for instance my parents are in charge of the merchandise department! It’s turned into a real family business.” The Dreamboys were first launched in 1987 and have roots in Essex – today, their HQ is based in Wickford, with Woods A B S O L U T E LY m a g a z i n e s

What did Woods see in the opportunity to take over? “Because we are so dominant in the market, it was very easy for the previous owners to leave as it was because it was still doing very well, but I felt it needed to be brought into the 21st century,” she answers. “One of the first things I did was take away any gender specific marketing, so none of the girls’ night out stuff, to make it much more inclusive. Although we were still seeing 100,000 plus tickets sold every year, it was falling a little bit behind. It needed somebody younger and it needed a woman, just to bring it up-to-date and become more inclusive and diverse.” She also got to work on the stage show itself. “Before, all the shows had been choreographed and designed by men exclusively, but now we have an all-female head office team. So, the show was created not just necessarily from a female gaze, but from the gaze of everybody as opposed to created and performed by men. stripping at the end. In the cast, there would be some doing the full monty and others who would focus on dancing, but I thought that was silly. You want to get to know every cast member and character, you don’t want some getting everything off and others just dancing, so I merged the two. All the dancers have to get their kit off, and all the people who get their kit off have to learn to dance. It works much better, the fans engage with the personalities much better. It’s more of a tease.” I slightly stumble over the question, but bar the obvious, what does she look for in the cast? “It’s not easy,” she laughs. “You have to have an incredible physique – the guys are going to the gym every day, so there’s a lot of maintenance. You also have to be full of empathy. One of the most important things of our shows is the meet and greet with the fans after the show. The fans love that, they always want to meet the boys, so you have to enjoy talking to people. You have to be a

great dancer, you have to be comfortable taking all your clothes off… There’s quite a lot of elements that go into it.” After the nightmare of lockdown – “It was heart-breaking, the worse experience of my life,” Woods says – the Dreamboys have returned with a bang and are set to liven up Christmas for many this month. “No,” she says simply when I ask if she will have much time off in December. “We have our touring theatre and arena show, which goes all around the country, and that’s about 100 dates a year. Then we have another 500 shows, which are weekly nightclub residences, so we have 15 different teams of Dreamboys. In the first two weeks of December we have all our regional shows happening, and we have two special shows in London, so perfect for some naughty elf vibes.” Fancy something a little different this Christmas? Q What was your background in care before you started working at Haven House? A I trained locally at Whipps Cross hospital as an adult and children’s nurse, and it was at the Margaret Centre in Whipps Cross hospital, as a very junior staff nurse, that my passion for palliative care was ignited. After that, I worked at Great Ormond Street hospital for 12 years mostly specialising in children’s cancer. I also spent four years doing a community nursing post visiting sick children at homes across Essex.

Q Why were you originally keen on joining the team at Haven House and how long ago was this now? A Living locally, I knew Haven House was a valued local charity. I came to visit on an open day and just knew when I walked into the grounds that this was where I wanted to work. I was very embedded in the speciality of children’s palliative care and was keen to bring the knowledge and skills I had learnt in a specialist hospital and community setting to help the team provide high quality care for families in unimaginable circumstances. I joined the team at Haven House in 2012. Q What do you think makes Haven House so special? A Because Haven House is a small organisation, the great thing for me is being able to see and hear the impact of the work we do every day. I feel very connected to the children and families we support. The whole team at Haven House is very special. We have committed, passionate people who always go the extra mile. This might involve granting extraordinary wishes for children or covering extra shifts when short notice staffing issues arise. The team’s dedication and resilience really shone through during

the pandemic, and this resulted in us being highly commended for our ‘commitment to carers’ at the recent RCN Nursing Awards. Q What kind of things happen over the Christmas period? A Christmas is always a busy time of year. Often families are keen to move their children out of hospital to the hospice or home in time for Christmas. We work with amazing NHS colleagues to make this happen. Last year we had a little girl at home who was sadly coming to the end of her life. Our specialist outreach nurses visited her throughout the Christmas period to manage her symptoms working closely with local NHS colleagues and Great Ormond Street. We also host a special Christmas party for families, which is very poignant. Families really treasure having an inclusive Santa’s grotto that is accessible for all the family. I usually play the role of the elf and it is such a joyous day seeing the siblings in particular walking into a grotto where they can pick any present.

A I usually work up until Christmas Eve – often bereaved families visit in the lead up to Christmas so it’s nice to see them again and remember their children. W

hen I was little, my sister and I used to ask our mum what she wanted for Christmas and she always replied: “I don’t want anything, just a cup of tea in bed and a cuddle with you two.” At the time, we found it annoying, but now, as a mum of three, I’m beginning to understand what she was getting at. Now when my children ask me, aside from world peace (that would be good), I would just love a day of everyone being lurgy free, no bickering and maybe just an hour of relaxing with a glass of something special in hand. I have been busy booking some Christmassy events, in particular I am really looking forward to a roast dinner (vegan ‘beef’ wellington) and a screening of Home Alone at The Town Hall and Apartments (the old Bethnal Green Town Hall – a stunning art deco venue where I got married last May). If that doesn’t put us in the Christmas spirit nothing will. I am hosting Christmas this year and whilst some families go all out on Christmas Day for breakfast with smoked salmon, scrambled eggs and toast and the suchlike (sounds nice if someone else is making it for you), I am going to pop some pastries and baguettes in the oven, buy some ready-made fruit salads and hopefully fill everyone up with a kind of nutritious breakfast with minimal effort. I have asked everyone

joining us on Christmas Day to pitch in too by each bringing some canapes to keep us going until lunch, which hopefully will prevent ‘hangry’ men and children. December is my birthday month and being a true Sagittarian, I generally do not like to sit still, I am always on the move, going somewhere and doing something. However, my favourite time over the festive period are the few days in between Christmas and New Year when you don’t know what day it is and you literally indulge every day – days filled with board games on the lounge floor, afternoon movies and forest walks with friends. It really is the most wonderful time of the year. Merry Christmas and happy new year to all Absolutely readers.

ho would have thought that summer 2021 is now just a distant memory and we are gearing up for the festivities of Christmas 2021 already? Well the high street has been ready for quite a few months now, busily working behind the scenes to curate an extensive collection of red carpet worthy party attire and this month I've picked a few of my favourites. Let's start with accessories as the choice continues to grow with some beautiful options in both jewellery and hair adornment. Once just favoured for weddings, hair accessories are now a staple for any occasion and even for everyday wear. Accessorize on the high street used to be the main and only destination, however now you can find stunning hairbands, hair slides, embellished turbans and much more in every high street store – perfect for hiding a bad hair day. Embellished and elaborate hairbands are my favourite, with & Other Stories, Asos, Primark and Oliver Bonas being in my top ten for some fabulous options. A woman never needs an excuse to buy a new pair of shoes, but Christmas party season is a good reason to treat yourself to a new pair – they are an investment, after all. From a high end classic Manolo Blahnik Hangisi to an annual Zara strappy metallic, the choice is endless for any bank balance. Platform sandals are my current pick for the festive season as not only do they add height and elongate your legs, they are comfortable too. Take a look in Zara, River Island and even Primark for a YSL tribute inspired sandal. My advice is to choose a metallic gold or silver for a shoe that will complement every outfit and can be teamed with matching accessories. So that's accessories and shoes sorted, now time for the all important party dress. To pick just a few is a challenge as the choice is extensive, however my picks are statement and stand out with classic styling that can easily be worn for many party seasons to come. Q When did you turn your attention to the fitness industry? A At 19 I took a fitness and nutrition course to learn more about how to nurture my own body and took on my very first PT client. I then combined a dance career with my fitness classes and enjoyed meeting new people and keeping my own body fit.

Q What did you initially specialise in? A I’ve always stayed true to my dance background; I adore the way it sculpts the muscles, so I found a love of Callanetics (left) and I have been teaching this for over 25 years. These days I have a fabulous timetable of classes including strength training, cardio, weights, Barre inspired ‘Legs Bums & Tums’, Retro Dance Cardio and, of course, Beginners & Advanced Callanetics. Q How did the opportunity to work with Mr Motivator come about? A I have known Mr Motivator since my dancers appeared on stage with him at GMTV Fun in The Sun in Spain in 1994. When he set up his new Motivation Club he asked me to be one of his group of trained “Motivators”, many of us who have experience working with older people. Q How inspiring is he? A He is one of the most incredible people I know. Spend ten minutes with him and I guarantee you will change your attitude and outlook. It’s like he breathes in positive air and radiates a glorious aura wherever he goes. Q What type of classes do you offer on The Motivation Club? A I offer classes of various lengths and levels starting at just eight minutes. My classes include a mixture of body weights (no equipment needed) and cardio weights (little dumbbells or water bottles required). The beauty of the Motivation Club is that there is something for everyone no matter their age, fitness level or experience. FITNESS LEGEND MR MOTIVATOR

Q Why is the club a great way for someone to get in shape? A The club is a community. Statistics show that exercising alone is never as effective or maintained as well as when you have support, encouragement and advice. We have 14 Motivators that you can email and reach out to if you have questions. And Mr Motivator offers three live zoom classes a week where hundreds of people enjoy coming together to work out and feel good. It’s also a one-stop-shop for all your physical and mental needs. The club gives access to a mental health expert and a nutritionist, as well as 14 fitness instructors who are all experts in their own field. When you sign up to the club you complete a questionnaire which directs you to the best workouts and sensible eating advice to help you reach your own personal goals. Q What tips can you offer us all to keep on top of our fitness during this period? A I tell all my clients this… Christmas is only really two days (if you include Christmas Day and Boxing Day), so it’s important to keep your routine during the festive period and try not to skip workouts. If you have Christmas events just make sure you keep the balance: naughty days need super healthy days to balance them out! Q How long have you lived in Essex and what do you love best about it? A I have lived in Maldon since 1999. I adore its quaintness and a High Street that still has small independent traders. During lockdown I embarked on a mission to travel to as many villages in Essex as I could with my 15-year-old daughter, and we looked into the history of each village. I love the old churches we have here in Essex. We are so blessed to live in such a wonderful county.

Q Finally, what are your plans for this Christmas? A Last Christmas was tragic for families. I sadly, unexpectedly lost my mum in February 2020 before Covid, and my sister and I had planned a traditional Christmas Day in honour of our mum (and dad). So this year we hope to be able to recreate it. There will be Terry’s chocolate for breakfast (mum never failed to get us one and I always ate it for breakfast!) then later there has to be smelly Blue Stilton (dad’s favourite). And the day wouldn’t be complete without our childhood movie of The Great Escape. Christmas is so magical and a time families should all be together. I hope you all have a truly wonderful Christmas surrounded by those you love. had the pleasure of meeting up with Mark Wentworth, a global colour specialist, recently to speak about how colour affects the man's mind and perception. Most guys know a red tie evokes power, but did you know every colour evokes a different emotional response? Unfortunately, most people are "colour blind" because we only pay attention to it and see it when we decide to do things with it, like what colour to paint the walls, what colour to wear or if we have a business, choosing our brand colours. Beyond these everyday subtle, yet incredibly powerful influences of colour, there's a deeper side to it which, when understood, can help you to know yourself better and make sense of why you act the way do. It is what makes you feel connected with your Life Path Colour. A Life Path Colour is the foundation and essence of who you are. It could be described as a basic blueprint of who you were born to be. Think of it as a guide and reference point to help you navigate your

way through life. Mark shared with me how your colour path is derived, which is a straightforward calculation of your date of birth in the following way: 12/4/1964 (always include the whole year); 1 + 2 + 4 + 1 + 9 + 6 + 4 = 27. Keep adding your birthday numbers together until you end up with a single digit between 1 and 9, so 27 = 2+7 = 9. Each of the nine numbers relates to a colour, and each colour has its character traits: 1 Red – adventurer, energetic, rebel 2 Orange – empathic, funloving, self-assured 3 Yellow – confident, inquisitive, joyful 4 Green – determination, practical, sturdy, 5 Blue – communicator, simplicity, trust 6 Indigo – imaginative, independent, intuitive 7 Violet – inspiring, leader, visionary 8 Rose – compassionate, entrepreneurial, romantic 9 Gold – discerning, guiding, wise If you like your colour qualities, but know you would never wear the colour, not a problem. Instead, explore how you could "be your colour". If you are red, for example, how might you be more adventurous and energetic? What does your colour mean to you, and how will you personally express it? The important thing is making it personal to you, therefore choosing an item of clothing or an accessory is a subtle way of anchoring and reminding yourself of who you are from the inside out. Your Life Path Colour is like your best friend, and it walks beside you throughout your life. Explore all of its many shades and tones. Some you will like, others you won't, and that's ok, it's a relationship that's going to last a lifetime, so you have all the time in the world. BE MERRY A wonderful Christmas Day lunch all from local producers may feel out of reach, but the story of Deersbrook Farm may change your mind By MARK KEBBLE

W

hatever time you sit down to enjoy it, the Christmas Day meal is central to anyone’s festivities. Some may have a love/ hate relationship with it – particularly if, like me, you are not a great chef, but are down to cook it this year – but it wouldn’t be the same without it. There’s a lot that goes into Christmas Day dinner, but luckily there are local Essex producers out there ready to make the whole experience a little more enjoyable, especially if you are keen on knowing the farm to fork journey. Christmas at Deersbrook Farm in Shalford Green is special not only because

of the festivities, but for Anna Blumfield, it was the time when the family-run farm fell into her hands. “We are a third-generation family farm,” Blumfield explains. “In 2000, around the time I was choosing my career path, the UK had an outbreak of foot and mouth disease and the industry was devastated. My parents carried on the farm and weathered the storm, whilst I went to college and university. Then in 2012 over dinner at the farm we joked about swapping houses as my dad loves the coast [where I was living at the time] and my parents had made the decision to retire. Well two weeks before Christmas, my husband Phil, our two children and I moved back to the farm to take the reins.” They have achieved plenty in the nine years that followed. “I introduced the native breed of Sussex cattle to the farm and registered them with the Pasture for Life Association in 2015, becoming the first in East Anglia,” Blumfield explains. “Our cattle graze on pastures alone, which benefits them, the environment and the consumer. The meadows are full of herbs, clovers and grasses, and as the cattle graze, the meadow acts as a vast carbon sink absorbing it into the soils and locking it down as the roots of pastures burrow deep into the land. The bees and insects love the meadows too, which is a joy to see. “I started selling our 100% grass-fed beef at farmers’ markets and food festivals around Essex as well as the farm gate sales, but we soon grew out of our little A B S O L U T E LY m a g a z i n e s

outlet so built a full butchery and farm shop in 2018.” It was a great decision as the shop has become hugely popular with both locals and those further afield. “Our aim was for a real farm to fork experience,” Blumfield says. “It’s a celebration of local food, drinks and hand-crafted items. All our produce is either produced at the farm or carefully sourced from farmers and growers from Essex and the surrounding SUSSEX CATTLE ARE FOUND ON THE FARM

area. It’s wonderful to have such a great selection of local produce all in one place.” If you are still unsure what you want on your Christmas Day table, then it’s worth taking a look at Deersbrook Farm’s butchery counter. “We sell our very own 100% grass-fed beef and Gloucester Old Spot pork, alongside local free-range lamb, chicken, duck and turkey, plus wild venison and game,” Blumfield says. “We are a full carcass traditional craft butchery and make all our sausages, chipolatas, dry cure our own bacons, hams and guanciale, with our air-dried bresaola and sliced meats in the deli too. We also make scrummy pies, terrines and oven-ready dishes too.” There are some Christmas specials to look out for too. “Our hampers will be filled with locally sourced items,” Blumfield enthuses. “We have a lovely selection from East Anglian cheese and wines, and you can design your own hamper, which can include gifts such as goat’s milk from near Bures. We love that they help us support so many local businesses by bringing together their fabulous produce, from local honey, sauces, pickles and chutney through to [supporting] breweries and vineyards.” It’s going to be a busy run-up to Christmas for Blumfield and all her family, but at the risk of it sounding a little like a busman’s holiday scenario, what will they be sitting down to eat on 25 December? “We will have a huge free-range turkey from our wonderful local poultry farm,” she smiles. “It makes a change from beef for us, as a stable diet of cattle famers. All the trimmings, homemade bread sauce, my mum’s stuffing and our pigs in blankets!” deersbrookfarm.com

Leftover turkey and ham pie Serves 6

There is no better way to celebrate Christmas leftovers than with a creamy pie with a thick, crumbly pastry – and we believe that a homemade herbed, buttery shortcrust pastry is the best of all pastries to use. Serve warm with buttered cabbage and grain mustard.

INGREDIENTS To make the pastry • 275g plain flour • 130g butter, cubed • 1 tbsp thyme leaves, roughly chopped • 1 egg yolk, beaten • 1 egg beaten with 2 tablespoons of milk • salt and pepper For the filling: • 1 medium leek, halved lengthways and roughly chopped • 1 celery stick, roughly chopped • 6 shallots, peeled and quartered • 2 tsp olive oil or butter • 250g mushrooms, roughly chopped • 1 tbsp thyme leaves, roughly chopped • 100ml white wine • 400g leftover turkey (brown and white meat), shredded or cut into 2cm pieces • 150g leftover ham, cut into 2cm cubes For the white sauce • 50ml butter • 50g plain flour • 550ml milk • 2 bay leaves

METHOD Preheat the oven to 180°C. Begin by making the pastry. Sift the flour into a bowl and add the butter, thyme, a generous pinch of salt and a good twist of black pepper. Rub the mixture together with your fingertips until it resembles coarse breadcrumbs. Add the egg yolk and stir together until a smooth dough begins to form – if the dough looks too dry and crumbly, add a tablespoon of water at a time until it comes together. Shape into a round, wrap in greaseproof paper and rest in the fridge until ready to use. 3 Place a large pan over a medium heat and add the leek, celery, shallot and oil or butter. Lightly season with salt and pepper and sauté for 3-4 minutes until the vegetables begin 1

to soften. Increase the heat a little and add the mushrooms and thyme, stirring for a further 3-4 minutes until the mushrooms start to brown. Add the wine and continue to cook until the liquid has reduced by about a half. Transfer the mixture to a pie or casserole dish and stir through the cooked turkey and ham. 4 Return the pan to the heat and melt the butter for the white sauce before whisking through the flour. Whisk over the heat for a minute or so before gradually adding the milk, whisking all the time to avoid any lumps forming. When all of the milk has been incorporated, add the bay leaves, season generously and continue to whisk over the heat until a lovely, thick sauce forms. Remove and discard the bay leaves and pour the white sauce over the turkey ham and leek mixture and stir together, being sure to check the seasoning once more. 5 Lightly flour a cool, clean work surface and roll out the pastry, turning regularly as you roll it into a shape that will neatly fit your dish. Roll until it is about 0.5cm thick, then gently lift it and place it over your dish. Press it into the edges of the dish before removing any excess. Re-roll the excess and cut into shapes of your choice – leaves, stars, crosses or hearts. Arrange the shapes over the top of the pastry and brush all over with the egg wash (the egg and milk mixture). Bake the pie for 25-35 minutes until the top is golden and the pastry is cooked through. 6 Serve warm with wilted seasonal greens, grain mustard and a creamy mash.

Quinoa & lentil salad

with shredded turkey, raw sprout, toasted wild rice, cranberries & pistachios Serves 8

INGREDIENTS For the salad • 100g wild rice • 2 tbsp olive oil • 2 tsp nigella seeds • 1 tsp yellow mustard seeds

• 1 tsp cumin seeds • 400ml water • 100g quinoa • 80g lentil verts (or puy) • 300g sprouts, finely shredded • 350g cooked turkey, shredded • 30g parsley, finely chopped • 100g pistachios, toasted • natural or coconut yoghurt, to serve For the dressing • 3 tbsp olive oil • 1 onion, finely sliced • 120g cranberries • 4 tbsp pomegranate molasses • 8 tbsp white wine vinegar • 75ml water

METHOD 1 Bring a pan of salted water to the boil and add the wild rice. Simmer gently for 25-30 minutes until tender. Drain and allow to cool. 2 Heat the olive oil in a saucepan and add the spices. Fry for 2 minutes until the spices begin to pop and then stir in the quinoa and lentils. Continue to fry for 3-5 minutes, stirring continuously until the spices and grains are aromatic and toasted. 3 Pour in the water, stir well and bring to the boil. Cover with a lid and simmer gently for 18-20 minutes until the water has been absorbed and the grains are tender. 4 To make the dressing, heat the olive oil in a shallow pan and add the onion. Cook gently for 8-10 minutes until the onion is soft and slightly golden. Add the cranberries, followed by the pomegranate molasses, vinegar and water. Simmer gently for 10 minutes until syrupy. 5 Combine the grains, sprouts, turkey, parsley, pistachios and dressing, and plenty of salt and pepper, in a large bowl and stir well. Add a little more olive oil if needed and a generous squeeze of lemon juice. Finally, serve with a drizzle of organic yoghurt.

Ginger millionaire slice Makes 25-30 small bites

With a thick, lightly salted date caramel and a textured nutty base of almonds and ginger biscuits, this ginger millionaire slice is the perfect festive treat to have with a cup of tea or an ideal homemade gift when presented in a box or brown paper bag tied with string.

INGREDIENTS To make the base • 250g ginger biscuits, crushed • 240g skinned almonds, roughly chopped

• 50g shelled pistachios • 50g candied ginger • grated zest of 1 orange • 200g unsalted butter, melted To make the caramel • 250g pitted Medjool dates • 100g smooth almond butter • 1 tsp vanilla extract • 1 tsp ground ginger • pinch of ground cloves • 1/4 tsp sea salt • 100g unsalted butter To make the topping • 250g dark chocolate

METHOD 1 For the base, pulse the ginger biscuits in a food processor to small chunks. Add the remaining ingredients and lightly pulse until incorporated. 2 Grease and line a brownie tin with baking parchment and

pour in the mixture. Spread it around the tray and press into the edges until even and smooth, then place in the fridge to set. 3 Place all of the ingredients for the caramel in a high-speed blender and blend until you have a thick, smooth paste. 4 Remove the tray from the fridge and spread over your layer of caramel, using a palette knife dipped in hot water to smooth the top, returning the tray to the fridge once more. 5 Melt the chocolate by placing it in a heatproof bowl set over a pan of simmering water (do not allow the base of the bowl to touch the water). Pour the melted chocolate over the caramel and return the tray to the fridge to set for 1-2 hours. 6 Once set, cut into neat slices or chunks to serve or gift. daylesford.com

SINGING THEIR PRAISES The head of music at St Aubyn’s School on giving every pupil the opportunity to express themselves By PENNY MANSER

T

he music department plays a huge part in life at St Aubyn’s, with the main aim to instil a love of music in every child. Children have not only a weekly music lesson, but also a separate year group singing session per week throughout their school years from Nursery up to Year 8. Singing is at the heart of each lesson as we base our curriculum around the Kodaly methodology, where children explore music with their voices first and then develop their skills by playing an instrument. We have a staff of 16 peripatetic music staff who teach 170 one-to-one instrumental lessons per week. We believe as a school that every child should enjoy their music education and be given the opportunity to play or sing in an ensemble, so we also have Music Appreciation Club and Year 2 Singing Club, which are both open to any pupil who wishes to learn an instrument or sing with others. We also have a busy schedule of performances throughout the year that

include the entire year group. Nursery, Reception, Year 2, Year 5 and the Senior School (Years 6-8) all participate in an annual musical and dramatic performance. Children can audition for solo roles if they wish, or learn chorus parts. Suleman Sheikh is one pupil who has always been a huge part of the music department and continues to be a leading music ambassador for the school. He has represented the school in external music competitions with his singing voice and also plays cello in the Main School Orchestra. During his time in Year 5, his high grade achievement on the drum kit propelled him forward to a new challenge: learning orchestral percussion. His selfmotivation and practice regime has led him to be successful at audition for the Guildhall School of Music, where he is a member of the Junior Guildhall.

MEET THE PUPIL Suleman Sheikh Year 6 When did you first pick up a musical instrument and did you love playing straight away? I was four-years-old and played the drums at a friend's house, and I loved it! Today, which musical instruments do you play? I play the drum kit, the cello and various percussion instruments, like the xylophone, snare drum and cymbals. Do you have plenty of opportunity to enjoy playing music at St Aubyn's? Yes, definitely. We have different orchestras and ensembles outside of our normal lessons. You can have separate music lessons as well if you want to learn to play an instrument. There are concerts you can play in from time to time for the parents to watch. I'm also in the choir and we are practising for a Christmas concert. How encouraging are the teachers at school? All of the teachers are very encouraging and they work hard to get the best out of us. The teachers make the lessons enjoyable by making sure they have elements of fun in them. Do you see yourself specialising in music when you get older? Yes, I can see myself continuing music throughout my life, whether it is studying music at college or working in professional orchestras.

Moreen Barnard, head of Coopersale Hall in Epping, on the joy of having pupils back in school this term and plans for Christmas Can you give us a brief overview of your school… Coopersale Hall is a privatelyowned independent preparatory school in Epping for around 260 boys and girls aged 2½ to 11. We offer a high standard of education and a fulfilling learning experience in a happy, secure and caring environment. With an emphasis on courtesy, manners and respect, we allow pupils to fulfil their potential by working together for the benefit of each other. As we approach the end of 2021, has a degree of normality returned to the school? From the start of September, we have definitely been able to return a sense of normality to our families. Our children have enjoyed assemblies, clubs, breaks and lunches as a school community again. It

has been lovely to see friendships formed between children from different year groups and siblings seeing each other around school. We had three Harvest Festivals with families being able to see their children perform again. There has been a new found appreciation for spending time together. Have you had to still adapt how classes are run? We have been able to remove our ‘bubbles’ and many of the restrictions that we were required to have in place last year around school and return to our high level of creative and exciting teaching. Will you be holding any special Christmas events? At Coopersale Hall School Christmas is always a magical time

for our families. We are aiming to return to all of our normal events, including Nativity plays, a whole school carol service, a visit from Santa and his reindeer, going to a panto, arts and crafts with parents, and a delicious Christmas meal. Do you try and get a particular message across to your pupils at this time of year? For us this year the focus is ‘Hope’. We want to look ahead and enjoy every moment we have with the children. Our ‘Hope’ is that our families enjoy a magical Christmas together and that 2022 fills people with ‘Hope’. What are you looking forward to in 2022? Spending more time with our pupils and their families. Celebrating all the things we do well as a school. Taking the children out for fixtures and trips. Having the opportunity to extend our children’s learning beyond the classroom again. What do you have planned yourself over the Christmas period? After not seeing my family in South Africa for just over two years, I am very excited to spend Christmas in sunny South Africa.

Bearing GIFTS Absolutely looks at how Oak-Tree Schools are embracing Christmas and putting on a show for us all

A

ll four of the Oak-Tree Schools are gearing up for a very busy Christmas this year. These four local independent schools in the Epping Forest area take pride in the wealth of extra-curricular opportunities they provide in addition to the classroom-based learning. The programme of Christmas events started back in mid-November, with Oaklands School beginning their Christmas festivities early. Both the Reception and Upper Kindergarten children performed in front of an audience of proud friends and family before the Christmas activities begin in earnest throughout December. At Braeside School, the annual House Drama Competition is a calendar highlight for the Senior pupils, held at Lopping Hall in Loughton. Pupils in each of the four Houses wrote, directed

and performed in short plays that were judged by a panel. The Juniors have been no less busy, with lots of preparation underway for their lively Nativity, featuring pupils as young as 2½. At Epping’s Coopersale Hall, there are three festive performances for parents, in addition to the long line up of Christmas events for the children, which include a visit from real reindeer, and a trip to Santa’s grotto. Pupils will also perform at the Christmas Tree Festival held in St John’s Church in Epping. At Normanhurst School in North Chingford, everyone is very excited that the annual Nativity performance is back, and is looking to be so popular that multiple performances are needed. New

for this year is the highly anticipated Winter Sparkle Concert, where pupils are set to showcase their musical talents. Each of the four schools in the Oak-Tree Group also host a heart-warming carol service in their local churches, as well as a number of panto trips, Christmas parties and festive lunches, which are a great way to round off the autumn term. ust when we thought the world had gone entirely digital, games of the oldfashioned board and dice, chips and pieces variety are having a moment. These old-school activities that used to while away a rainy day and enliven Christmas holidays came out of the cupboard during lockdown. There's every reason for parents to encourage board games at any time. am sure I am not alone when I say the most creative I get with the Christmas decorations is adding an extra bit of tinsel to the tree. One year I attempted to fill my hallway with lights, but proceeded to buy a set that was way too long for just the wall, so ended up wrapping it around the banister, all the way upstairs and even into my spare room – when I turned the lights on, I could barely see it was so bright. Long story short, it’s best to trust the experts to add a little je ne sais quoi to decorations in your home – and no-one adds more va va voom to a celebration than Buckhurst Hill-based Ricky Paul. His eponymous flower business conjures up truly unique designs and concepts, so it was little surprise when

A creative installation designed to add some fun and festive giggles above the dance floor in The Soho bar at The Groucho Club, Soho. This was designed, made and installed by my team here at Ricky Paul. This fabulous roast added festive impact with all the trimmings!

BONSAI TREE

This was our amazing festive oriental Bonsai tree for Sketch Mayfair. This installation was designed to bring an oriental twist to the traditional Christmas tree, made as a metal work structure covered in cork bark, gold fans, storks, fresh pine, 3,000 waxed roses and blossom, and standing over six metres tall. The tree was also included in Dezeen Magazine’s top 10 Christmas trees in the world for 2019.

CAROUSEL HORSE

We love using our carousel horse that we hire for parties in various ways and this festive carousel idea was to bring a playful design with a golden zebra to the reception of the Groucho Club. We painted the carousel horse and added golden magnolia and ilex berries to bring the display to life for a fun and playful design.

BONSAI TREE

THE POODLES

Our famous Ricky Paul Floral poodles took a festive turn with this installation at Sketch London, with pink hydrangea, festive mini Christmas tree, lots of baubles and plenty of glitter.

Our fun wreaths are always popular, filled with candy canes and rocking horses. The more glitter, the better!

MAKE AN ENTRANCE

This was a fun festive door garland and wreath for a private local client. We worked to our client's brief of creating a fabulous festive entrance. His little girl was the one to impress, so we added candy pops, shiny pink baubles, two pink nutcrackers, pink poinsettia and teddy bears. Gorgeous!

ouse prices rose by 10.6% during August, up from 8.5% during July – bringing the average price to £264,000 (Office for National Statistics). This strong national increase is being fuelled by the perfect storm of high buyer demand combined with low housing stock levels. The stamp duty holiday helped increase house prices in the UK by 9.8% in the year to August, before coming to a close in September. Whilst growth rates were seen to be higher in Wales and Scotland, the average prices are lower at £195,000 and £181,000 respectively. At the same time, London has seen the lowest level of growth across all regions, but has reached a new height at £526,000 on average. Even though the stamp duty holiday has finished, experts believe that prices

won’t fall due to demand for homes remaining higher than supply. Online property searches spike over the Christmas period, giving you an optimal window to showcase your home and attract buyers in the new year.

INTEREST RATE In her look at the property market in Essex, Hayley Hunt considers buyer demand and what the Bank of England do next

T

he manic race for space prompted by the SDLT concession has definitely started to ease and we are now experiencing a near-normal healthy property market, albeit with a little less stock than expected – because we have sold most of it! According to the Halifax, the average UK property price now exceeds £270,000, with annual house price inflation at 8.1% – where else can you get that sort of return, usually tax-free? But it’s all relative and, with the level of interest we have from sellers considering a spring sale, the chances are that there will be a more balanced relationship between supply and demand next year, which is likely to reduce house price growth to more modest levels, despite the gradual return of foreign buyers. Building firms are now back on their feet again and are expected to plug a much-needed gap in the market and,

although the Bank of England held its base rate at the record low of 0.1% recently, inflationary pressures mean this simply cannot last for much longer. In fact, over 3.5 million first-time buyer mortgages have been issued since the base rate last dropped blow 0.5% in March 2009. That’s a lot of people who could feel hot under the collar if interest rates were to rise significantly. Whilst their equity has rocketed since then, they might struggle to pay substantially higher mortgage costs, meaning that some might sell. Whether new first-time buyers could find the deposit required to bail them out is another matter. In the meantime, as we begin to focus on Christmas and the New Year, which has now become a time of intense homebuyer portal-surfing activity, if you have any thoughts about tapping into the opportunities this market presents… well, you know who to call!
