found it rather ironic that we went to press with this Interiors Special in the same week I decided to move house. As I stubbed my toes on boxed furniture, and pulled my hair out packing up clothes, the thought did cross my mind how much simpler it would be if I just threw it all away and started afresh. Simpler, and a great deal less stressful. Yes, you might argue, buying it all again could be more stressful. But as I flick through this issue now, I realise I could easily have found everything I’d need again, because it’s all in here… First off, a decorator. I would have liked one of those. They would have to have been artistic. They would have to have had taste – exceedingly good taste. They would have to have been Nicky Haslam. Read all about him, and his taste, on p.20. Whilst the decorating went on, my kitchen would obviously be out of bounds. So, I’d have had to decamp for dinner. Where? Any restaurant designed by Scandinavian style-master Martin Brudnizki. Read what he has in his kitchen – surely not IKEA – on p.80. Now, for the detail. Our interiors editor, Beata Heuman, has put together an exquisite PAD London-inspired collection of everything I’d have wanted in my new house on p.90, whilst three fantastic designers describe how to get around interior challenges (which may have arisen over the course of my decorating project), on p.86. And once completed, to show off my glistening new abode, I would have invited round all my friends and served them up an Italian feast by way of celebration – or convinced Theo Randall (who we chat to on p.62) to come round and cook one for me. Yes, it would have been so much easier to have thrown everything away and started again. I didn’t have the foresight – but next time you move, maybe you will. u

’m probably paranoid (I tend to associate pregnancy with Sigourney Weaver circa Alien) but everywhere I turn there seems to be another pal ‘with child’, merrily shuffling along, gearing up to casually propel a hefty bundle of baby down her crewman’s passage. Despite global warming, our jaded economy, the existence of acronyms like ‘YOLO’ and the genuinely appalling things that human beings do to each other, the Baby Business seems to show no signs of slowing. A question that scribe Ben Ockrent touches on in his play, Breeders (and one that I wish he’d developed further), is whether this world we reside in is actually good enough to bring a child into? Ockrent has himself asserted that people, ‘don’t need kids, we just want them, no matter how difficult they are to come by or how damaging they are to the planet – why?’ Breeders centres on a couple of lesbians, Andrea and Caroline, who are desperate to procreate. Snubbing the adoption toll road, they opt for artificial

omantic, dashing and impecunious, the poet Laurie Lee is best known for his novel Cider with Rosie – a memoir of his rural childhood in Gloucestershire. If he hadn’t drunk his talent away at the bar of the Chelsea Arts Club and the nearby Queen’s Elm, Lee would have celebrated his 100th birthday this last summer. Valerie Grove’s excellent biography, The Life and Loves of Laurie Lee, is an updated edition of her authorised biography, published in 2004. Grove includes new correspondence with fascinating details about Lee’s countless love affairs and liaisons, including the married love of his life, Lorna Wishart (who was also the love of Lucian Freud’s life). A muse to both legends, the charismatic Lorna would inspire and torment them all their lives. At the age of 19, Lee set off by foot to bask his way around Spain, breaking hearts with his romantic good looks wherever he went. He got caught up in the Spanish Civil War and famously wrote about his youthful adventures. When he returned, he quickly rose to celebrity status backed by influential literary friends, including poet Stephen Spender and publisher John Lehmann. An enthralling read, though the secretive Lee still remained a mystery at the end. He may have hinted at the great love of his early life, Lorna Wishart, but he never wrote publicly about how he lost her to Lucian Freud. ◆

insemination but ask Andrea’s brother, Jimmy, to lend a hand/sperm so that the child will be genetically theirs. They even go as far as moving Jimmy and his girlfriend, Sharon, into their home so that they can help the alleged ‘breeders’ when the infant arrives. Inevitably, emotional turmoil ensues that is both hilarious and heartfelt, with the ethics handled delicately by director Tamara Harvey. It’s a hit comedy with four outstanding performances, particularly from the wonderfully subtle Nick Burns. Ockrent has a talent for wit and there are some superb, guffaw-inducing scenes; a favourite being when the friends play with a practice baby called ‘Mugabe’ made from a swaddled packet of flour. Guess you had to be there; and indeed you can be – it plays until the 4th October. Go see. ◆

He’s the knowledge on taste, the epitome of style, the man everyone wants to know. Legendary designer Nicky Haslam shows why as he talks New York, interiors and ‘common’ cushions Wo r d s E d w i n a L a n g l e y
I
f you have lived in Chelsea for longer than five minutes, you will know of Nicky Haslam. No doubt you met him at a party, or know someone who knows him, or heard that hilarious story of his, or have stared enviously at one of his opulent interiors. That, or he’s your best friend. I imagine many feel they know Nicky. He has that warmth, that bygone English charm, a quality that draws you in like a stiff Martini. There is something familiar about him. His voice, for instance. It’s pure Noel Coward; less-clipped, perhaps, and slightly more gravelly, but eminently listenable. I get the sense people want to know Nicky – and want him to know them. It goes beyond the fact that he knows everyone (by which it follows, if he knows you – relax – you’re a someone). Beyond the fact he throws wild parties where the rich, rare and royal cross continents to attend. Beyond, even, that he knew Cole Porter and Andy Warhol, and once escorted Joan Crawford to a premiere. I think Chelsea’s desire to be friends with Nicky lies more in the fact that at 74, he delights in dressing headto-toe in Topman; that he once had a facelift and tells people about it; that he’s probably the only person left in Britain

Everyone LOVES a NATTER with NICKY...
who calls things ‘common’ and gets away with it; that he smokes Vogues at his desk without fear of HR or smoke alarms. He’s a character with a story, and he has an art for telling stories. Everyone loves a natter with Nicky – or so I’ve been led to believe. It is ironic, therefore, that my aim in visiting Nicky is not to become his friend. Whilst I am, of course, interested to discover why he has so many, I am mainly interested to hear about his life, his 40 plus years in interiors, and also to see how he, a celebrated decorator, decorates his own workspace. I am imagining something reminiscent of the Abundance Salon in the Palace of Versailles, on a slightly smaller scale (we are, after all, in Holland Park). Much has been made of his love of 18th century France, so perhaps Nicky works off a Joubert-style writing table, lit by an 18th century French crystal chandelier, like the one he included in his recent design for hoteliers Frances and Rodney Smith in New Orleans… To my dismay, however, I find this is
not the case. I walk into Nicky’s office to see it is distinctly modest: rich lime in colour, with piles of paper stacked neatly on surfaces and not one 18th century chandelier in sight. I clock what I think is an ottoman under a pile of magazines, on top of which is the most recent issue of Vanity Fair, where Nicky features – yet again – in the best dressed list. To the right is Nicky’s not-at-all Joubert-style desk, facing a painting of Tracey Emin. Comfortable and homely, it absolutely is. Flamboyant and loud, like I’d imagined Nicky to be, it absolutely is not. Nicky gets up to greet me warmly, but exits soon after to find cigarettes (I’d read he’d given up – ‘Good God, no,’ he replies). His hair is Colgate white, offset by deep brown eyebrows and an even tan. He wears a grey t-shirt, grey jacket and loose-fitted grey jeans (all Topman) over a pair of well-worn black boots. What can I say? The man looks cool. What is also cool, or rather, smooth, is his excuse for not being there the day before, when I had originally turned up to interview him. He could have spun all manner of yarns, but instead admits he had so gotten plastered the previous night, he had forgotten about our meeting and gone home mid-afternoon. That I might be someone who understands

the adverse effects of a heavy night out, he couldn’t have known. But he made that judgment anyway, trusting I’d not chastise him in print for having wasted my time over a hangover. And well, he was right – and so was I. Nicky Haslam has no trouble making friends. Nicholas Ponsonby Haslam was born in 1939, in Great Hundridge Manor, Buckinghamshire, to the diplomat William Heywood Haslam, and his wife Diamond ‘Diana’ Louise Ponsonby (goddaughter of Queen Victoria). Struck by polio when he was seven years old, his formative years were spent in bed, incapacitated for 18 months in a cast. Defying doctor’s predictions, he eventually made a full recovery. He attended Eton, excelling at art, and went from there to New York, where he was snapped up by Vogue editor, Diana Vreeland. ‘I was made assistant art director,’ says Nicky, puffing on a Vogue cigarette. ‘It was incredible. New York in the Sixties was heaven on earth. You could get things in New York, you couldn’t get anywhere else. All the department stores were so wonderful – and full of things we hadn’t seen.’ Nicky worked for five years in

Manhattan, brushing shoulders with Andy Warhol – who Nicky introduced to New York ‘society’ – and the Rolling Stones, before moving to the Wild West. ‘I bought a ranch in Arizona in the midlate Sixties. Who doesn’t want to be a cowboy? Everyone wants that look!’ Following a break-up some years later, Nicky fled to Hollywood, before returning to London where he decided to pursue
CUSHIONS on BEDS are COMMON. It looks HORRIBLE his hobby – interiors. ‘There was no training when I was younger,’ he explains. ‘There was no such thing as designers’ schools. So I learned when I was in New York, seeing wonderful houses, meeting extraordinary decorators. Americans always [made] a much stronger thing of decoration. [Here, people felt] it made them look as if they hadn’t got any taste. Now, they are proud of it. It’s ‘taste’ to have a decorator.’ This leads us onto a discussion about
‘taste’ in general, something on which Nicky is considered an expert. When I interviewed OKA founder Annabel Astor last year (incidentally, about her design collaboration with Nicky), she said there was no such thing as ‘bad taste’. Does Nicky agree? ‘I think other people think other people’s taste is bad. If you see something you don’t like in someone else’s house, you think they’ve got bad taste. But in fact, you haven’t got their taste. It’s a very different thing.’ I mention Nicky’s favourite word ‘common’ – what does it even mean these days? – and Nicky gains momentum. ‘[Common] means irritating,’ he instructs. ‘Cushions on beds are common. It looks horrible. A bit of fabric cushion on a white bed…’ he trails off despairingly. I recall a piece I’d read where the interviewer had noted cuddly toys on Nicky’s bed and remind him of this. ‘People have given me toys, I’ve got two monkeys and a hare.’ How does that differ from cushions? ‘They were given to me and I quite like them,’ he replies. So is it one rule for Nicky and another for everyone else? ‘I don’t think it’s…’ he changes tack. ‘The cult of teddy bears is common. Putting

teddy bears on people’s graves.’ And what about photographs? Nicky once said photographs are ‘allowed’ but they should be royal and on the piano. I spot a few of his own, behind him, some of which feature royals, but a couple of which do not. ‘I meant framed portraits. Those,’ he motions behind him, ‘are just snaps I’ve stuck up because they’re quite funny.’ I pick one up and see Nicky kissing a blonde, ‘Snogging Kate Moss,’ he quips. When Nicky arrived back in London in 1972, he made a living out of ‘helping’ his friends do up their houses. Gradually, word of his expert eye and flamboyant style spread – endorsed by clients like Ringo Starr and Charles Saatchi – so much so, that in the late Eighties, Nicky founded his own architectural and design firm, NH Design. 20 years on, he’s as busy as he ever was. I am loathe to ask what continues to ‘inspire’ him (it’s an all too common question), but alas it’s something people wish to know of creatives. ‘I hate ‘inspired’,’ he agrees, ‘but there’s no other word... I find inspiration everywhere. I think rooms speak. I have this funny feeling that rooms tell you things. They tell you what to do. And more [so] they
tell you what not to do. They’ve got soul. I can almost hear them speak in my mind.’ Sounds kooky but it obviously works for him; Nicky has a steady stream of clients who return time and time again.‘When they trust you, you can do anything you want,’ he says, eyes twinkling. He’s currently working on a hotel chain, two houses in Chelsea, a ‘thing’ in Park Lane, ‘Oh, I can’t remember…’ he trails off. He relies heavily on his three main designers, but insists he has a hand in every project. ‘I love the painting I’m doing now [and] seeing the whole thing come together. I love every step of it, really.’ But when it comes to his own home however, much like his office, I sense Nicky takes a far more modest approach. Saying that, he actually has two homes. He splits his time between a flat off the Cromwell Road, and a beautiful 16th century Hunting Lodge in Hampshire. ‘I’m not into big spaces,’ he admits. ‘My house in the country has tiny rooms, which I love – 12ft square, some of them. My flat in London is only one room, a bedroom and a bathroom. I’ve always liked small rooms. I like small beds, too. ‘I’ve always been in Chelsea,’ he

continues. ‘My mother lived there and I’ve never wanted to be anywhere [else]. Everyone wants to live in Chelsea, really…’ We touch briefly on his new book, A Designer’s Life, a ‘scrapbook’ of his work throughout the years – ‘what’s influenced me, the people I’ve loved’. ‘It was largely Flora [his assistant] who was so wonderful, having a record of everything,’ he says. ‘I’ve tried to make it a bit more personal than those boring designer books. I’ve even put things in that I didn’t [like]. ‘How could I have done that?!’’ he asks himself. In matters of personal style, however, he is less critical of past fads. ‘I like changing looks,’ he confides. ‘I like being different. I went through a Harrison Ford look this summer – baggy corduroys and Levi’s jackets. I loved it.’ I wasn’t aware that Harrison Ford was ‘in’ this summer, which makes me think Nicky doesn’t follow trends so much as he just does what he likes. ‘I used to go [to London Fashion Week] with Hilary Alexander. But I don’t go so much anymore. I think men’s fashion’s got so awful.’ I look at Nicky in his self-styled Topman get-up and think he might be on to something. Or maybe it’s just that he has the looks and physique to pull it off. ‘I eat white bread and chocolate mainly,’ he says, when I question his diet in light of the fact he’s never been to a gym. ‘I’ve just had a Mars,’ he chuckles. ‘They didn’t have Dark Bounty, I was furious…’ ‘I’m a very good cook,’ he says later, ‘and I’ve just started having dinner parties again. I have a passion for them.’ So no intention of slowing down on the social front? ‘[My socialising] has always been slightly exaggerated. I’m very lucky I get invited to lots of things. “You can always leave,” Diana Cooper said to me. “You can go, and you can always leave”.’ Sensing Nicky wants me to leave, I swiftly wrap up our interview. ‘Is that enough for you?’ he asks doubtfully, walking me to the door. ‘You can always make it up…’ Like I would need to. ‘The wonderful thing about my work is it’s all pleasure,’ he had said. ‘You see things and meet people – it’s all like magic.’ After all these years – the faces, the parties – to still find magic in meeting people... is it any wonder Nicky Haslam has so many friends? u A Designer’s Life: An Archive of Inspired Design and Décor by Nicky Haslam, will be published in November by Jacqui Small, £50

Body parts prints, silky pyjamas and minimalism catches our eye this October
ature and fashion have always hand-in-hand. Designers N walked have centred entire collections or brands around the animal kingdom especially. My favourite all-time show, Alexander McQueen’s SS08 collection, a tribute to the late Isabella Blow, featured the most exquisite explosion of butterfly wings, bird feathers and exoskeletal basques and face masks. But while real fur and skin have gone in and out of trend, animal prints have sauntered about, season after season, with the same popularity. My greatgrandmother in 1950 even wore it – to keep the rain off, apparently. I know this having found (in the attic), and pocketed, a leopard print rain mac belonging to her. (Even now it’s rather racy, worn only on special occasions or by my brother for fancy dress.) So with fashion having done leopard, snake, cow, pony, even shark à la Rodnik and dog (Bella Freud) – what is there left to do? A clue: it has two arms and two legs… that’s right – human is tout-le-rage darling! I have always loved Lulu Guinness’ pert red lips she’s often made into or embroidered onto her bags, but fashion has reached another level of anatomy with Guinness’ eye-print totes, Charlotte Olympia’s heels with hands on and Alice + Olivia’s knitwear range featuring arms, fingers and lips. Will this obsession with human body parts stop?! I hope not. I like it. u

Biba Fever Barbara Hulanicki looks back at the early days of her Kensington High Street emporium – with added glamour from Freddie Mercury, the New York Dolls and Liberace Wo r d s M a r t i n P e l

ig Biba was open from 9.30am, closing at 8pm from Monday to Friday and 5.30pm on Saturday. The Rainbow Room remained open until 2.30am Monday to Saturday and was open on Sundays from 10am to midnight. ‘You could go in there and not come out again for hours,’ Hulanicki says of the store. ‘You could go for lunch… or tea on the roof garden. You could spend a whole day in there. That’s what they used to do in the Thirties; they’d come up from the provinces and have a makeover. But in Biba you didn’t have to shop, you could just have a good time.’ Biba offered an antidote to the austere mood of Britain in the early 1970s. Riven by economic problems and civil unrest – 1973 had begun with the three-day working week as a solution to energy shortages caused by the miners’ strike – the country was in a ‘state of emergency’ and Biba provided glamour, decadence and escapism, all for the price of a bus fare. Hollywood had landed on the British high street and everyone could be the star of their own life, if only for a day. The first floor, named the ‘Biba Floor’, was given over to the bedrock of Biba’s

success: women’s fashion. Appropriately enough, it harked back to the company’s beginnings, with Art Nouveau décor and the Celtic knot logo designed by John McConnell in 1966. ‘All of the clothes can be colour-matched to different accessories – shoes, sweaters, cardigans, T-shirts, tights, bags, hats and flowers,’ the Biba newspaper informed its readers. Art Deco prints were, by this time, a
staple Biba look, appearing on vampish dresses with plunging necklines and billowing bishop sleeves in geometric form; on trouser suits with design features reminiscent of the 1930s, including Oxford bags and jackets with wide lapels; and on a two-piece consisting of a wrap-over top and a miniskirt. As with the first Biba trouser suit in pinstripe fabric, Hulanicki’s use of these fabrics had personal associations. A photograph in the Biba archive in Miami shows her parents on their honeymoon: her mother wears a cardigan with an L-shaped Art Deco design in white on a black background, which Barbara had reproduced and used on a variety of Biba garments, including a skirt suit from 1974. David Bowie, Marc Bolan and Freddie Mercury (the boyfriend of Biba girl Mary Austin) were regular visitors to Biba, and it became the unofficial hub of the glam rock scene. Mercury described it as ‘a beautiful shop done up well. When [Queen] fans come over here, that ought to be the first place they go.’ Glam rock reached its peak in 1974, with the fashions of that year shining their brightest before being extinguished by the coming recession. The 1940s revival reached its peak at the same time as glam rock. The Forties

FASHION / STYLE silhouette, with its wide shoulders and boxy tailoring, inspired Hulanicki to produce some of the strongest Biba shapes of the period, including a woven wool coat, a matched outfit consisting of a striped coat, blouse and trousers; and, an unmistakable Biba garment, the redesigned Biba mackintosh, which had first appeared in the second Biba catalogue of 1968. The first years of the 1970s also saw the growing influence of 1950s fashion. Mr Freedom, the clothing boutique run by designer ‘Tommy’ Roberts, sold bold, Pop art-inspired clothes in bright satins, beloved of pop stars including Elton John. Vivienne Westwood and Malcolm McLaren opened their first boutique, Let It Rock, in 1971, selling original 1950s records and reproduction clothing made by Westwood. Big Biba sold 1950s-style ‘brothel creeper’ shoes and bomber jackets (the jackets were unfortunately only made in children’s sizes). The spectacular 500-seat Rainbow Room at Big Biba was the focus of entertainment, operating as a restaurant during the day and a music venue in the evenings. ‘It was packed. We used to do 1,200 lunches every day,’ Hulanicki says. ‘We were the first department store to do French and Italian food, and we also had health food. We wanted really clean food, not awful stuff covered in sauce.’ The first chef was almost constantly inebriated and unable to cook anything more complicated than a hamburger. Allan Gearing was hired as his replacement: ‘I was living in Preston and answered an ad in The Caterer for the job. I’d never been there but knew about Biba – one of my girlfriends used to travel down to London to shop there. [Biba] was a crazy, beautiful place.’ As well as being responsible for running the restaurant by day, Gearing also hired bands to play at the Rainbow Room in the evenings.

Bill Haley, the Ronettes and the Pointer Sisters all made appearances and even Elvis Presley, it was rumoured, wanted to play there. Most (in)famous were American rock band the New York Dolls. ‘Oh, they were fantastic. They came up in the goods lift and they were very quiet, never said anything, very sweet and nice,’ Hulanicki remembers. ‘They looked amazing and so elegant, with beautiful shoes – sort of Jacqueline Onassis shoes, Italian shoes. I was so jealous!’ The New York Dolls also made an appearance on The Old Grey Whistle Test, the music programme on BBC2. Bob Harris, the show’s host, dismissed them as ‘mock rock’, an attitude perhaps influenced by the band’s outfits, which included Biba womenswear: singer David Johnsen was in a black-and-white polka dot blouse and bassist Arthur Kane was wearing a black Biba jacket with leopard-print, fake fur and cuffs. After the affected effeminacy of the New York Dolls, Liberace brought the genuine article to the Rainbow Room. ‘It was a private event and the elevator breaks down,’ Hulanicki recalls. ‘It stops with just Liberace’s head showing and I thought, ‘Who’s that behind him?’ Andrew Logan and Zandra Rhodes were gatecrashing. Of course, they looked far more exotic than he did. Liberace had on a double-breasted white mink with diamond buttons, which he never took off. The day before, I sent Del [Delisia Howard] out to Sotheby’s to rent a fabulous candelabra and it was worth something like £30,000. I said to Joyce behind the desk, ‘Whatever you do, do not give it to him.’’

f property is all about location, location, location, then Truefitt I and Hill might just be the finest gentlemen’s salon in the land. Best-known for its legendary wet shaves, it is situated halfway down St James’s, ideally placed to scoop up those who can afford a luxurious extra half hour after their lunches at White’s or Boodle’s. Indeed, given that it has been open since 1805, the raison d’être of the establishment may well have historically been just that. Inside, one gets the homely feeling that not much has changed in the intervening years. The décor of wood and leather puts you instantly at ease, while you wait for one of their charming and smartly turned-out staff to make you look more presentable. Entering with a sizable mane atop my head, and wishing to look ‘new job smart’, the task I presented my stylist, Julie, with was not insignificant. However, she was easily up to it. The conversation flowed, my hair fell expertly to the floor and then the piéce de resistance, the post-haircut wash – a simple solution to that age-old problem of itching your neck all afternoon. As with so much at Truefitt and Hill, nothing was over-complicated and everything worked a treat. Jim Morrison once said that, ‘Some of the worst mistakes in my life were haircuts’. One can’t help but feel that had he gone here, he might have opined differently. u

t’s officially autumn; time to dig those thermals – in my case, I out the trusty white-sleeved vest and long johns combo. Not joking. I’ve always liked the idea of being thermaled from top to bottom, so when Neville Salon invited me for a Thermal Haircut, in spite of having no idea what a Thermal Haircut was or if I’d even like it, I decided to go for it. I arrived at the lively Neville to be greeted by session stylist Stephen Low. He looked far too trendy to be handling my hair – and he was; I later discovered he counts Gwyneth Paltrow and Lily Cole as clients. Thankfully, though, I didn’t know that at the time, so I boldly announced I was there for my Thermal Haircut. Following a quick consultation, intense scrutiny of my split ends and a very relaxing hair wash, Stephen took out his thermal scissors (an electric pair wired-up to a plug) and started to snip. I was fascinated by this process. So much so, I didn’t ask any questions, which left him to ask the questions, questions like: ‘Did I know what a Thermal Haircut was?’ ‘No.’ When natural hair fibres touch the warm blades, he explained, the ends are sealed and therefore, preserved – sayonara split ends, hello healthy hair. There’s a reason A-listers go to Stephen, I thought to myself as I looked at my new ‘do’. Because if he can put the ‘Bang!’ back into my bangs, there is surely no end to his talents. I think you should all visit Stephen for a haircut; if you’re not into thermals before, you certainly will be after. u

EL: What type of cheese? TR: Italian. We specialise in Italian food. So we’re doing this carpaccio – a beautiful beef fillet, thinly sliced, with Alex’s variation on the Gorgonzola (a blue, nutty, salty cheese), wet walnuts and a type of radicchio.
EL: They’re rather funny, those smart festivals – not at all the hotdogs and burger vans of yesterday... TR: Glastonbury isn’t for everyone. And people want to eat good food when they camp. It’s a great idea. I love camping.
EL: WOW! TR: Then we’re doing a ravioli using some wild greens – things like nettles and chard. We make this amazing pasta using Italian eggs and TIPO ‘00’ flour (20 egg yolks for every kilo). Then we’re doing a guinea fowl dish with some wild mushrooms, and after that they’re going to have a plate of [laughs] Alex’s cheese.
EL: Seriously?! Why? TR: I don’t know. I remember going camping [with a friend in Italy] and one of my most memorable meals was when we sat in the woods, built a fire and grilled some steaks. We cooked Japanese yams in the embers of the fire, and ate them drinking Saint Joseph, a delicious Rome wine. The only problem was that the next morning, we woke up [to find] the smell of cooking had attracted all these bears...
EL: Do you do a lot of festivals? TR: We do a few – the biggest one we do is Taste of London. Festivals are very popular. 10 years ago, people weren’t that into them. It’s a sign of how the Food Revolution has changed the way people think about food. There’s one I’d love to do – it’s called the Wilderness Festival. EL: Didn’t they have a Hix tent there this year? TR: Yeah.

were that ‘weird kid with the homemade bread and Gorgonzola sandwiches’? TR: I wasn’t weird! EL: I didn’t say that, YOU said that! TR: My mum would make bread, religiously, three times a week. It was delicious toasted, but as a sandwich it was a bit crumbly. On a Monday morning, I would always have Gorgonzola sandwiches, in this bread that was kind of fresh [laughs]. Everyone else had Penguin biscuits and plastic sandwiches. EL: Is it true you originally wanted to go into metalwork? TR: I was kind of ‘arty’, and I loved metalwork. But I loved cooking more. I used to cook with my mum, when I was six or seven. The Italian thing came from her. Dinner was always a family affair and we’d all sit down together. My mum used to teach two nights a week, so she’d get home about 8 o’clock. I got into cooking because…
EL: What?! TR: Yes, these huge bears’ bottoms were there in front of me! But, yeah, I love that outdoors thing.
EL: Otherwise you’d go hungry? TR: No, I would help her cook! And then it got to the point where I would cook dinner. So, cooking came really naturally to me. My passion for food comes from experiences. I still remember the first time I tasted a pizza from a wood oven in Italy. Sounds a bit poncey – but it’s just what I grew up with.
EL: I read you have done since you were a child. Which reminds me, it’s funny you mentioned Gorgonzola earlier because didn’t you once say that, growing up, you

FOOD & DRINK / CHEF Q&A properly.” I did a three-year apprenticeship with Max [Magarian] at Chez Max. It was really hard-core, just me and him in the kitchen. [After that], I went to see a chef called Alastair Little, and he said, “Check out the River Café.” So I went to see Rose [Gray] and Ruth [Rogers] – it was a very exciting place. I was there for two years before I left to go to California to work with Alice Waters. When I was there, Ruth called and said would I come back and be Head Chef and Partner? So I said… EL: ‘Oh, ALRIGHT then!’ TR: [laughs] Yeah, ‘OK then!’. The River Café hadn’t done their first book then but afterwards, it snowballed. EL: Did you have any idea what was about to happen? TR: Not really! River Café really brought out the best in people. You couldn’t have [had it without] two characters like Rose and Ruth. They did things the way they wanted, the way they felt. And they had the experiences of Italy. I remember seeing Jamie Oliver in the back kitchen and thinking, “God, this guy is a real character. You’re going to be absolutely huge”. You just knew he was going to be really successful. EL: As you have been! TR: That’s nice of you to say. I’ve done quite
a lot of television, but I enjoy doing both [restaurants and television]. I love teaching; I do a weekly video blog on Huffington Post – I love that thing of cooking to a camera. I’m not mad about running around, juggling carrots, but I think that television is a great way to teach people. EL: What’s it like cooking in a restaurant? TR: There’s no half-heartedness. But I’ve always felt very fulfilled. I get inspired by produce. You’ve got suppliers calling up about amazing sea bass, turbot, red mullet, lobsters, beef and incredible vegetables... My philosophy is: find the ingredients, then write the menu. EL: What’s your favourite ingredient – a very dull question, I admit. TR: I can’t [say], I’ve got too many. EL: No, come on. You’re on a desert island. I’ll give you three… TR: Well, if I was on a desert island my favourite ingredient would be olive oil, as then I could catch fish and eat it in the oil. And I love tomatoes. But then I love mushrooms – I have seasons – I love grouse, I love game, I love fish… I just love fish. EL: Another trivial question: if you were a type of pasta what would you be? TR: God, I’ve never been asked that before...
EL: Well, pasta’s your thing, isn’t it? TR: My favourite pasta at the moment is probably paccheri. EL: Why? TR: It’s a very large pasta, a bit like rigatoni, but it’s quite wide. When it cooks, it goes flat. In southern Italy, they make Paccheri Fruita del Mare, which is basically clams, prawns, mussels, a little bit of tomato – tiny specs – garlic, parsley and white wine. You cook the pasta, put it in with the clams and… I’m salivating at the thought of it! EL: [cackles] So – am – I. TR: The pasta absorbs all the sauce really beautifully. It goes completely flat – like a sleeping bag – so when you eat it [pauses]... I think I would be that; because it’s chewy and just a lovely, lovely pasta. EL: What have you got coming up? TR: I’ve got few things. I’m doing Waitrose Kitchen, a programme on Channel 4, and we’ve got a book coming out next year. EL: What’s it called? TR: The working title is Speedy Suppers, Lazy Lunches. It’s about how eating is ‘social’. EL: Do you cook when you go home? TR: I do. But it’s a bit like having dinner with food critics sometimes. [My family] are very critical. I’ve been to restaurants where my son has sent dishes back because they haven’t been fresh enough. Deeply embarrassing – but he was right to, though. EL: Your restaurant, Theo Randall at the Intercontinental, is based, here, in Mayfair. What do you like about the area? TR: It’s good, buzzy. Mayfair is a very traditional place to have restaurants. Bored of your staple weekend roast? The Imperial’s mouth-watering roasted venison recipe has our taste buds tingling
METHOD
This basic technique retains the natural sweetness, bright color, and firm bite that often is lost when cooking carrots in traditional ways. Blanching carrots, for example, dilutes the carrots’ natural sugars, making them bland, whereas boiling tends to make them mushy. Cooking sous-vide prevents the possibility of overcooking at a moment of inattention (and packaging helps retain color, texture, and flavour). Place all the ingredients in a vac pack bag and make sure the carrots are covered in the honey and butter. Cook sous-vide at 194°F/90°C for 1525mins. Check the texture after 15mins. When the carrots bend a bit, they’re ready. Remove from the bag and colour in a medium to hot non-stick pan with a little butter, season with a little sea salt.
CREAMED TRUFFLE POTATO • 1½kg potatoes, such as Desirée or Maris Piper • 100-140g/4-5oz butter, cut into cubes • 300ml hot full fat milk • 6 tbsp double cream • ½ tsp truffle oil, or to taste
VENISON LOIN with Caramelised Carrot, Charred Red Onion, Truffle Creamed Potato and Red Wine Jus
Peel the potatoes and cut into an even size dice, so they all cook at the same time – about 12-15mins in boiling, salted water. Drain well, then return to the pan and cook for 1-2mins over a dry heat. Mash the potatoes very thoroughly, or press them through a potato ricer, back into the pan. They should be completely lump free (don’t be tempted to use a food processor though, as it will make the potatoes gluey). Gradually beat 100g/4oz of the butter into the potato until it starts to look shiny. Heat the milk in a small pan, and cream until on the point of boiling. Then slowly mix into the potato purée with some salt and freshly ground pepper. The potato should become a soft, velvety purée. You may not need all the creamy milk. Add the truffle oil and seasoning to taste. Keep warm until required or, if making ahead, cool and chill. When reheating, add a little extra creamy milk to soften the texture, and the last of the butter if you like.
RED WINE JUS • 2 chopped shallots • 175ml port • 175ml red wine • 1 sprig rosemary • 1 bay leaf • 759ml good beef stock • salt to taste • 2 tbsp butter METHOD
VENISON LOIN • 4 venison fillets 8oz
METHOD
Season the venison fillets with sea salt, and place in a hot non-stick pan. Colour all sides and remove from the pan to a tray. Cook at 180°C for 5mins. Remove from the oven and let them rest for 5mins before carving.
Peel and cut the red onions in half, lengthways, and season. Place a little oil in a non-stick pan and place the onion flat side down in the hot pan. Leave for about 2mins to char. Remove and separate the onion layers. Add a little olive oil and toss again quickly back in the hot pan. Add a tbsp of balsamic vinegar and remove from heat.
CHARRED RED ONIONS • 2 medium red onions • 1 tbsp balsamic vinegar • olive oil
GLAZED CARROTS • 4 carrots approx 50g each • 2 tbsp honey • 4 crushed juniper berries • 50g unsalted butter

Pan-fry the shallots until caramelised. Add the port, wine and herbs, and reduce by half. Add the stock and reduce by half. Strain through a sieve and bring back to the boil. Remove from the heat and add butter. Season to taste. To garnish, add a few shoots of garlic cress to the finished dish, 10g pomegranate seeds and 5g of bee pollen. For the Caramelised Fruit Topping: 50g golden caster sugar • 30g butter, diced • 1 Pink Lady Apple, halved cored and cut into wedges • 4 ripe plums, stone removed and quartered • 12 walnut halves For the Pain Perdu: 2 large free-range eggs • 25-50g golden caster sugar • 100ml whole milk • 4 slices brioche or bread, 2cm thick • 40g butter • cinnamon flavoured crème fraîche (optional)

Method 01 For the fruit, in a frying pan add the sugar and 2 tbsp of water. Cook on a medium heat until sugar dissolves. Turn up heat slightly and cook until the caramel is a light golden colour. Stir in butter, simmer for a minute until smooth and golden. Add fruit and walnuts, coating evenly. Leave in the pan keeping warm. 02 For the Pain Perdu, beat the eggs and sugar (use less if bread is sweet) together. Gradually add the milk. Place the bread in the egg mixture to soak for a minute before turning over. Allow them to absorb the liquid. 03 In a large frying pan, over a medium heat, melt half the butter. When it starts to foam gently, add two slices of the bread. Cook for approx 2mins, each side, until golden. Repeat with the remaining butter and brioche. 04 Serve with a spoonful of the fruit and caramel juices. If desired, add a tbsp of crème fraîche, with a pinch of ground cinnamon. ◆

Perfectly pink trout, soft in the middle, with crunchy, oily skin, served alongside tender summer veg... what more could you ask for? Actually, I can tell you: a just as good side dish. Hey pistou, one arrived, in the form of Green Beans, Chilli and Marcona Almonds. Bearing not one flabby, butter-drowned bean, all manner of colours sprang from that artistic ensemble. Yellow and green beans, flecked with scarlet chilli, lay resplendent underneath a showering of crushed, brown almonds. Visual: tick. Texture: tick. Taste: tick-tick-tick.

What will Absolutely make of Eel Brook Common’s newest opening? Wo r d s e d w i n a l a n g l e y
T
he first forkful of wood pigeon and sheep’s ricotta that I nonchalantly shovelled into my mouth, at Eelbrook one dinner time, was the most delicious mouthful of food I have eaten all year. Fact. So good was it, actually, that I had to stop my dinner companion, William, in the middle of his sentence to exclaim loudly, and embarrassingly: ‘My goodness, William. Yum. Yum, yum, YUM.’
The softest, smoothest, creamiest cheese ever invented, alongside succulent, gamey, skillfully-cooked pigeon, and the sweetness of crushed blackberries, came together in such a big hit of flavour it was like my taste buds had been turbocharged. Even the micro-herby things on top (usually redundant) added exciting pops of pepperiness. William’s starter of Mussels, Cockles, Chorizo, Fino and Aioli was similarly tasteful. The salty mussels, sweet cockles and fiery chorizo packed a punch, though

William’s Bavette with Caramelised Onion looked just as appealing and tasted even better. The pink, tender meat was lifted by this unusual, dark relish; one that tasted of soy and Worcestershire sauce, which we later found out was Mushroom Ketchup. Whilst I have to be truthful and say the interiors were slightly reminiscent of an Art Gallery Café, and perhaps not as cosy as one would like, it truly didn’t matter because the food was exceptional. Anyone who has seen MasterChef, for example, will know a Chocolate Fondant spells ‘danger’ for any chef impressing critics. Not at Eelbrook. A deep, thick chocolatey goo erupted from a volcano of sponge, cooled on the way down by a snowball of Salted Caramel & Buttermilk Ice Cream. As for my pud, well, had the Chilled Black Cherry Soup with Hazelnut Ice Cream and Cobnuts (as suggested by delightful waitress Elena), come in a glass, I’d have sunk it like a shot – in one. All that washed down with a bottle of dry Vrignaud Chablis (2013) and the Wynns Sidings Cabernet Sauvignon (2012), and I almost burst into song. Luckily for the other patrons, I didn’t. But since I couldn’t sing for my supper there, I’m singing for it here: if you go to one restaurant this October – for food, and food alone – make it this one. Truffles are serious business in Tuscany, and one boutique hotel offers guests the chance to take part in a secretive search for the elusive tartufo

asta Luna, basta!’ The man jumped forwarded and grabbed something from the dog’s mouth. The size of a large golf ball, it was black, scored with deep lines, and covered with mud. Even from afar you could smell its earthy, strong aroma. This was a prized truffle and Luna, our trusty Tuscan truffle hound, had just dug it out of the hillside. We were on private land – a truffle reserve – a hilly, unprepossessing patch south-west of Florence. We had driven there with Mauro, a Tuscan truffle hunter, and his dog Luna in his van. It had all been quite cloak-and-dagger. A secret meeting at an anonymous road junction between our chauffeur-driven Mercedes and Mauro’s battered van, was followed by a rendezvous in a lay-by, where we climbed into Mauro’s van and headed off-road to the reserve which lay behind chained gates. Truffle hunting is taken very seriously in Tuscany. A truffle is a tuber, the fruiting body of a subterranean fungus. Highly prized around the world for its aromatic qualities in cooking, the rarest and best known is the ‘tartufo bianco’ the white
truffle, worth more than gold gramme for gramme. The best time to find white truffles is autumn; in late May we were hunting for summer truffles the ‘tartufo scorzone’. More abundant and therefore less expensive than its white cousin, the summer truffle is no less prized for its intense perfume and flavour. Once inside the reserve, Mauro set Luna to work. He encouraged her constantly and fed her titbits of truffle from his pocket to whet her appetite. At first sight, she didn’t inspire much hope. More mangy poodle than Hound of the Baskervilles, Luna seemed happy to meander about cocking her leg, much like a dog in a local park. But Mauro, who has hunted truffles since he was a small boy and admits to being ‘tartufo’ obsessed, explained this was all part of the warm up. We followed Luna, scrambled up and down hills, and then, as we stood chatting, it suddenly happened, Luna scrabbled frantically at the ground and a black ball seemed to roll out of nowhere – the elusive, fantastic truffle. After that she was on a roll and couldn’t stop finding them. After an hour or so of exciting hunting, we returned to the van, Luna smothered with appreciation by us doubting Thomases.

TRAVEL / ACTION Mauro then took us, pockets bulging with our booty, to an osteria in a nearby town where his friend the chef patron is famed for his cooking with truffles. Completely off the tourist trail, the restaurant was packed with locals; we sat drinking Chianti from jugs and sampled our treasure. First, we ate them as fat shavings over buttery fresh ravioli packed with sweet ricotta and thinly sliced pear, and then a typically Tuscan secondi – piatti of fried eggs served with truffle shavings and lashings of black pepper. The extraordinary thing about tartufo is that you eat them with your nose – a little like fresh coffee, the smell is what excites more than the taste. It was a truly unique and very Tuscan experience and one offered to guests by the clever people at Borgo Santo Pietro, the boutique hotel we were staying at near the ancient hill top town of Chiusdino, south-west of Siena. Enterprising Danish couple Claus and Jeanette Thottrup found the run-down 13th century farmhouse and land in 2001, and with hard work and obsessive perfectionism, they have turned it into a 16-room boutique destination. Part stately home, part rambling homestead, Borgo was never going to be big (though there is planning permission for eight more rooms) but it is quite perfect, from the moment you sweep through the wrought iron gates down a curving gravel drive lined with Cypress trees, you know you are somewhere special. The main house used to be a healing retreat for pilgrims and the Thottrups have worked hard to make this a dreamy haven from reality. Its size means that staying here is an intimate experience, the staff quickly know you and fellow guests soon become familiars.
Luxury is Borgo’s calling card and for the Thottrups this means amazing attention to detail. Every aspect of the house and gardens has been restored attentively, beautifully and respectfully. The rooms are all furnished with pieces that Jeanette has handpicked from flea markets and antique shops across France and Italy. Hi-spec mod cons are artfully hidden behind paintings and each bathroom is stocked with lotions and potions from the hotel’s own spa. The overgrown gardens and desolate fields have also been lovingly restored. The Thottrups have planted more than 250,000 plants, built a lake and created an organic kitchen garden. Truffle hunting is just one of the activities on offer at Borgo as part of its Concierge Collection; you can have an art lesson, go quad biking, ride a horse or fly in a hot air balloon or plane. There are also authentic cookery lessons spanning how to make pizza or fresh pasta. Food is hugely important here. There is a great emphasis on seasonality and local produce, much of the fruit and vegetables come from the hotel’s own gardens. There are two restaurants, the Valle Serena, the hotel’s fine-dining restaurant, and the Treehouse Bar, a more informal brasserie, all presided over by new executive chef Francesco Gasbarro. This autumn, the hotel is opening its own restaurant in Florence, a step only the most supremely confident kitchen would take. We ate dinner at the Valle Serena one evening, looking out over the valley

after which it is named. The cooking is very formal and technical; the standout meal was a beef tartar made from the celebrated local Chianina cattle. A great slab of pork from the local Cinta Senese pig kept my other half busy, a langoustine spaghetti and a mozzarella salad all made with the sweetest of local tomatoes delighted me. Restaurant designer Martin Brudnizki on Scandinavian style, timeless designs and Scarfes Bar words Georgie Lane-Godfrey
I
’m sitting on a plush velvet sofa in the atmospheric lounge in Holborn’s Rosewood Hotel. It’s similar to a classic gentleman’s lounge, complete with smooth dark wood and clever caricatures by the eponymous illustrator adorning the walls. Yet in spite of Scarfes Bar’s quirkiness, it still feels sophisticated and sexy – a perfect example, in fact, of a room designed by Martin Brudnizki. If his name isn’t familiar, his interiors will be. Pick any of the capital’s hottest hangouts and most likely, he designed them – 34, The Ivy Club, The Rib Room, Annabel’s terrace, Le Caprice – the list goes on. Brudnizki has quickly become the go-to guy for any aspirational restaurateur looking to open London’s next big thing. His secret? A focus on timeless designs with an ageless appeal, rather than a ‘signature’ style. ‘With this kind of project in a historical building, we couldn’t really change much, so it was more about balancing it to make it feel authentic,’ explains Brudnizki of Scarfes Bar. ‘People always say after we finish a project that it feels like it’s been here forever. That’s because we use pieces

from the Twenties, Thirties, Forties and Fifties, so it’s historically eclectic, almost like a timeline or journey. That’s how you make something that will still be relevant in four years time. That’s how you create something timeless.’ Tall, blonde and lean, with classic clean-cut Scandinavian style, Martin Brudnizki is one of those people you just assume will have impeccable taste. It’s this impression which probably explains why his career has taken such an incredible trajectory since he moved to London two decades ago. Coming over to the capital to study interior design, he arrived, as he laughingly puts it, ‘with absolutely no clue!’ Yet Brudnizki had been surrounded by design from an early age, having been brought up by his German mother and Polish father in Stockholm. ‘It was very austere,’ he tells me. ‘It’s just an attitude and an approach which is about stripped-back simplicity. But Sweden has great design history and it gave me a real love of practicality.’ Practicality that also extends to the price tag; postrecession, Brudnizki is still careful to not overspend in any of his projects, turning to Sweden’s most famous export to keep

costs down in his own home. ‘The kitchen in my new flat is IKEA,’ he reveals. ‘It’s just so accessible and actually very good quality – you just use other elements to lift it.’ Like a bespoke granite worktop, I suggest? ‘Marble!’ he corrects me, with a disapproving tut. ‘Only ever marble.’ It doesn’t come as a surprise then to discover Brudnizki is rather particular about his projects, and the designer freely admits to being something of a control freak. ‘But not in the sense that I’m stir-crazy,’ he laughs. ‘I just like things in a certain way. I wouldn’t say I’m a perfectionist because I don’t think there is such a thing as perfection, but I like a certain level of order. There are so many variables in life that you need to have at least 50% of things fixed or you’d go mad!’ As to his work, this meticulousness translates into a level of detail for which Brudnizki is renowned. Chelsea institution. After long-standing Italian restaurant Daphne’s was ruined by a ravaging fire earlier this year, owner Richard Caring called Brudnizki for help. Rather than just remedying the damage, however, Caring wanted a full refurbishment – to celebrate the restaurant’s 50th anniversary and to reinvent it for the next 50 years to come. ‘It’s not an example we should give,’ chuckles Brudnizki. ‘We were given nine weeks. We did it, by hook or by crook, but let’s just say that there’s a very long snagging list!’ The end result, however, was a raging success, refreshing the restaurant’s the most comfortable places to sit so you won’t be disturbed, how to furnish it so that it’s cool yet comfortable, completing it with those final authentic finishing touches. ‘Here we have the feeling of an old lounge or library so we needed books,’ he explains. ‘But we don’t just buy them by the metre; they have to be picked on both look and subject. For example, when we did The Ivy Club, we created a fully-curated library, alphabetically organised by relevant subject area. It’s those details that matter.’ For this kind of project, Brudnizki says most require a year from conception to completion… unless, that is, you happen to be a

image and attracting a new, younger crowd. ‘Interior design is just like packaging, created to support the commercial side,’ explains Brudnizki. ‘Because Daphne’s is Italian, the idea was to create the feeling of the Amalfi Coast, which I love. That was, kind of, for me though – so I can go there and enjoy it! Daphne’s is one of my favourite restaurants and I’ve been going there for 20 years.’ Meanwhile, closer to his home in Parsons Green, Brudnizki also recommends local pizzeria Primavera, Jax, The Harwood Arms and finally Côte, ‘not because I designed it but because it serves great food!’ A creature of habit, Brudnizki has lived in Parsons Green since moving to London, a decision motivated by the convenience of the area. ‘I remember when I lived in my flat and I was doing it up, I moved in with a friend just off of Sloane Square,’ recalls Brudnizki. ‘I was worried because I thought I might fall in love with Chelsea. But I had to walk all the way down to Marks and Spencer to buy my food! What a schlep! That’s what I love about Parsons Green, it’s so easy. There really is no place like home.’ u mbds.com

A faux living wall and a 15th century Buddha, three top interior designers describe their most creative projects
SARAH FORTESCUE O r i e n ta l - t h e M e d f l a t Pimlico n returning from Hong Kong to England in 2013, my first London-based project was the design of a beautiful space in Pimlico, owned by Hong Kong-based clients. With a spark for the Orient, and clear influence from the East, the design specification had interesting variations to incorporate. The flat was going to be let, so stunning aesthetics were key, as were storage space and feng shui. My design for this apartment centred on my philosophy of ‘drawing the exterior into the interior’. Looking to nature’s palate, and drawing it inwards, results in an all-encompassing, beautiful interior space, and I wanted to incorporate this into the project. The idea was to create a very individual space with unique pieces. The bespoke walnut console tables in the drawing room [pictured] were based on the design of the bar stools I sourced. The lampshades were crucial to connect the room’s strong artwork with the darker furniture and curtains; gold and copper create warmth, so lampshades with golden innards were essential. I was lucky with the drawing room space because the significant height of the ceiling allowed me to use a bold fabric with a statement design. With the curtains

drawn closed, the fabric is illuminated in the early evening rays and reflected on the coffee table, which creates a desirable ‘natural’ effect. Having worked with a feng shui master in Hong Kong, I was able to incorporate elements of feng shui into this apartment fairly easily, namely by rounding off partition walls to soften the energy flow. I placed a 15th century Buddha to watch over from a 6ft high alcove, with an emerald green copper oxidised paint effect. This glistens under the fibre optics of the dropped-down ceiling above. Buddha faces towards the front door, opening out onto the abundant plant life of the communal garden beyond. Having lived and worked in the comparatively smaller spaces of Hong Kong, storage is key to any design and I managed to incorporate it here. I designed it so that on pushing the Budhha, a spacious room – aligned with cupboards and shelves – opens up, behind the alcove, for extra and private storage. This is reached by an extendable ladder housed in a cabinet in the coat cupboard in the hallway. The dining space is simple and one’s eye is deliberately drawn towards a painting that sits on the wall. A mirrored drinks bar and a walnut breakfast bar stand alongside it, to allow for both formal and informal dining. The master bedroom depicts the sky. With calming and therapeutic tones, the immaculate gold wall sconces draw attention to the room. I carried this gold theme right into the en-suite bathroom, with the addition of gold taps and shower fixtures. This is juxtaposed against the

rawness of some porcelain Calacatta wall tiles and a heated floor, as well as the vanity and bath surrounds made of granite, which is one of nature’s most durable stones. Finally, I designed the guest bedroom for dual-use as a study and bedroom. developer contacted me in 2012 to reconfigure and design interiors for a mews house behind Eaton Square. I started work on it in 2012 and only finished in July this year, so it was quite an extensive project. The property was formerly arranged across a ground and first floor reception,

living area and kitchen, and the second floor comprised two bedrooms and two bathrooms. I was asked to carry out the full interior architectural specification, which included reviewing the layouts and determining new ones across the basement, ground, first and second floors. The most challenging part of the project for me was to do something about the basement kitchen diner – which had no window at all! I decided to design a backlit ‘fake’ living wall, to add a green, natural space, which would make for a unique, conversational feature. The inspiration was taken from my observations of London, specifically, graffiti and wall art on the elevations of many buildings. I love the creative expression, and on one particular outing in the capital, I noticed a green wall and loved the idea. Similar concepts can be seen on the side elevation of Edgware Road Station and, most famously, The Rubens at The Palace Hotel. The initial idea was to use a living green wall, but this posed several challenges in terms of maintenance; the greenery would grow fairly quickly and would require cutting back. It would also cause sand to be dispersed along the floor and mark the surrounding walls.

Since the walls surrounding the green one were to be painted plaster, this too would require maintenance. polished surfaces and defined the large shower area. The dark polished walnut surfaces picked up on the grey slate wall opposite, and together with the white of much of the room, made it neither overtly masculine nor feminine, fulfilling the brief. I used sleek chrome fittings throughout as this kept the detail to an absolute minimum. Another feature I love, was the juxtaposition of the white freestanding bath and its surrounding area – the curve of the window, all about relaxation, against the energising, dynamic feel of the shower area. It added a contrast in energy, which I found interesting. My finishing touch was enabling an iPad to control the light and sound system, so a desired mood could be achieved at any time. This is a serene, contemporary bathroom, which combines a clever use of space, beautiful natural materials and bespoke finishing touches, to create a sanctuary of calm in the middle of west London. u

his bathroom was one of my absolute favourites as it encompasses everything I love – elegant proportions, an abundance of light, natural materials and a calming colour palette of white and grey. Our brief was to create a beautiful bathroom, making use of the shape of the room, the large bay window and the natural light that floods in. The client also requested clearly defined areas and a clean space, not overtly masculine or feminine.
With this in mind, I was determined to design a sanctuary, somewhere conducive to relaxation, which every bathroom ought to be. That said, the functionality of the space was important too, so the ‘flow’ of the room had to be well-thought-out. I decided to use a lot of white, which, when combined with natural materials such as slate, produced the desired, peaceful effect. The white wooden plantation shutters maximised the light and retained the privacy of the bathing area, not least since wood adds warmth and has a softening effect. I placed a large bespoke mirror above the vanity unit, to add a touch of opulence to an otherwise understated room. The mirrored doors on the cabinets enhanced the natural light, creating an impression of space, whilst the concealed storage and recessed shelves contributed to the feeling of order. Clever lighting, and a few well-placed accessories, were also important for general mood and ‘personalisation’. The dark slate wall was a defining feature of the room and my favourite element. It balances the extensive use of white, and adds texture. Slate is such a tactile, beautiful and natural material and I found that here, it complemented the

With private schools becoming increasingly unaffordable for the British middle classes, should they charge foreign students more? Wo r d s A m a n d a C o n s ta n c e
P
rivate schools should charge foreign pupils higher fees than children from Britain, an education entrepreneur has claimed. Alexander Nikitich, who set up the Oxford-based Carfax Tutorial Establishment, says private schools should follow the model used by universities and ask overseas parents to pay more for their offspring to attend Britain’s top feepaying schools to prevent British families being priced out of the market. The idea of a graded pay system has long been mooted in independent school circles but Nikitich’s comments follow a study published earlier last July, that claimed a four-fold increase in school fees in the last 20 years, has outstripped wages. Private schools are ‘increasingly unaffordable’ for the middle-classes and becoming the preserve of super-rich foreigners. Nikitich, who is originally from Russia, says: ‘It seems wrong that billionaires from Russia and the Far East are paying the same as British dentists, doctors and solicitors who are seeing their income plummet in real terms.’ A number of independent schools ask wealthy foreign parents for donations and offer means-tested bursaries to British children but this does not go far enough, says Nikitich, who called for an ‘open and transparent approach’. ‘Private schools overseas are entirely open about charging more to foreign students. It seems foolish for it to be a problem in England.’ But William Stadlen, managing director of super-tutors Holland Park Education, disagrees. ‘I don’t think it’s a good idea necessarily. I think there should be means-tested support based on income

levels and not based on nationality.’ The popularity of Britain’s private schools overseas is clear from the rising number of foreigners, with the number of pupils arriving from Russia up by more than a quarter last year, while there was a 16% increase in students from Nigeria and 5% rise in Chinese admissions. In some schools, the number of foreign students has crept above the 25% mark – many boarding schools wouldn’t have survived the economic downturn without them. But Janette Wallis, senior editor of The Good Schools Guide, said schools were, ‘increasingly aware that if they do not want to end up with their schools stripped of British children they need to rein in

fee increases’. The report into the rising costs of school fees – commissioned by the stockbroker Killik & Co – found that the type of family that could afford private schools fees ‘has changed dramatically since 1990’. ‘It is less likely to be the archetypal middle-class professional and more likely to be high net worth individuals, increasingly international. Many established independent schools like Eton and Harrow educate the children of some of China’s wealthiest multimillionaires.’ Figures in the Killik study, carried out by the Centre for Economics and Business Research, suggest that an infant enrolled at a private day school this academic year will ultimately cost their parents £271,000 in fees and added extras by the time they take their A-levels in 13 years’ time. A boarding education will stand at £435,000, it was claimed, and approach close to £1m for two children. Parents in traditionally well-paid careers such as accountancy, law, finance and academia are now less likely to afford an independent education than plumbers were in the early 1990s. Families taking the ‘state till eight’ route – with pupils enrolled in state primary schools for the first three or four years – will save £94,000, the report said. The ‘state till 11’ option saves almost £175,000 per child. Barnaby Lenon, chairman of the Independent Schools Council, has defended private school fees. ‘Independent schools remain affordable to a wide range of families via our strong bursary programmes. Last year, ISC schools provided over £320 million in means-tested bursaries and the total value of bursaries at ISC schools has risen by 27% since 2010, well above the rate of any fee rises.’ u

ver the past two years or so, you could be forgiven for thinking that all an agent had to do to sell your home was pull together some details, come up with a price and pop it on the web. Indeed, the new breed of “DIY” online agents have been rather vocal in backing this theory to further their own ends. The recent slow down in transactions in London has been blamed on everything from the Bank of England, the summer, the Ukraine, the Scots and the general election, and no doubt each of these factors have had an effect. However, the world does not stop spinning, life does go on and people still need to buy and sell property. Just
because the phone isn’t ringing quite as often as it did in April does not mean that the market has come to a halt as the press might have us believe. In a slow market properties don’t sell themselves; they need to be sold. Agents for both buyers and sellers will have to earn their commission by employing all their guile and cunning to generate sales. Calls will need to be outgoing, buyers encouraged on tours, vendors given honest feedback and their price expectations managed. Ultimately any market is what you make it, a quieter market is a pain to be endured but also an opportunity to be embraced, it sorts the wheat from the chaff and can show buyers and sellers alike that there is more to selling a house than pretty pictures on a website.

2.What will you do to ensure my property is properly advertised and marketed? We advertise widely on all the major property portals such as Zoopla, Rightmove and Primelocation. grew up in Cape Town and and always had a real passion for the health and fitness industry. At the young age of 19 I took a leap of faith and started a Health and Sports Nutrition business in Cape Town. While most of my friends were off to see the world on gap years after university, I had my head down crunching the numbers and saw my first single retail outlet multiply into five in just less than six years. In 2007 the itch to see the world became too strong, this lead me to sell my business in South Africa and I decided to see if the streets of London really were paved with gold. London soon showed its true colours in spectacular style and it became my new home. I have always had a little bit of a love affair with investment property and the passion for helping people achieve their goals. While in London, the penny dropped that maybe a complete career change was needed and that working in property was my next calling. Working

in the property industry is far from what I would have envisioned myself to be doing in my life but I have found it extremely enjoyable, and it is just as rewarding as my Health and Nutrition business in South Africa. Seeing my clients moving into their dream homes is one of the most satisfying feelings, and enjoying all the area has to offer is the main reason I put my roots down in Fulham. Having worked for over seven years now in the Fulham area, I consider myself to have my finger on the pulse and real empathy for the local property market. I can’t believe that seven years have gone by so fast and now property makes up a large percentage of my DNA. I couldn't be happier in my line of work and never really feel that I'm "going to work", but instead that I just follow my passion. Long may it continue!
