olchester is a historic, yet vibrant city with something for everyone. I work for our Colchester Business Improvement District (BID), a business-led, business-funded organisation that provides support for town centre businesses. Alongside this, we have our sub-brand, InColchester, delivering a wealth of information to visitors and residents of the town to help explore Colchester. There’s so much to do in Colchester especially over the summer months that I’d highly recommend booking a hotel for a long weekend stay. There are incredible concerts and festivals in Castle Park (which is also the site of the Norman Castle that acted as a stronghold for the Romans), many unique and experience driven restaurants to try and, not forgetting, the strength of our leisure offering through our theatres, cinemas and galleries. In July and August InColchester will be hosting the Colchester Garden Festival, which will see the city centre come to life in a celebration of the surrounding green spaces, planting, and caring for the environment. Expect pop-up workshops, kids’ activities, and themed events. It’s perfect for families and those looking for fun-filled summer activities. We cast the spotlight on the Thaxted Festival, which will be bringing a host of live events to the area from 17 June-10 July

his year, Thaxted Festival returns to a four-weekend format with the best in live music, in the glorious acoustics of Thaxted Parish Church. With performances ranging from classical orchestral and chamber music, through jazz, light opera, swing, and a family event, there is something for all tastes and all ages. Ensembles will range from full orchestras and a large choir, through to trios, duos and solo performances. Classical music is provided by Howard Shelley with London Mozart Players, Armonico Consort, Brodsky Quartet, and a closing piano recital by Leeds International Piano Competition winner Eric Lu. Jazz comes from Claire Martin with the David Newton trio, the Jason Rebello trio, and the Pasadena Roof Orchestra. Anna Lapwood gives a recital on Thaxted Church’s historic
Lincoln Organ, while music from Bach to the Beatles is played by guitar wizards The Katona Twins. With a programme of English song tradition from baritone Roderick Williams, Gilbert and Sullivan from Charles Court Opera, movie themes from Redbridge Brass, an afternoon of Sondheim, and a family concert from Festival Patron Zeb Soanes, there is something for everyone. There is so much to choose from, but a highlight is bound to be Gustav Holst’s hauntingly beautiful The Cloud Messenger on 1 July, performed by the Choir of King’s College London, with the English Chamber Orchestra. Gustav Holst is closely associated with Thaxted, where he lived for a number of years, during which time he composed his Planets Suite. Education projects are an important part of the festival’s activity. Last year Thaxted Primary School took part in a rehearsal of Carnival of the Animals. This summer, a year group will work towards an exciting session with the Pasadena Roof Orchestra. As well as music, the festival’s renowned home-made cakes, with tea or coffee, will be available during the intervals, and Friends of Thaxted Church will offer licensed liquid refreshments before each concert and during intervals. With its origins in Gustav Holst’s Whitsuntide Festivals from 1916-18 in Thaxted Church, in its modern form Thaxted Festival has delighted audiences since 1986. have for your child. Every day Santi does something new for me. I’m really enjoying this age, he’s just one now and we’re starting to see his personality. It makes me so happy. It’s the hardest job, but the best job in the world. There’s no love like it, I’m so proud of him and I love being a mum.
Q What was it like giving
birth during lockdown?
A I think if you’d already had a baby
before the lockdown, then it might have been different. But for me, it was just how it was, I didn’t have anything to compare it to. I didn’t have my mum at any of the scans, but I’d never had any of that because this was my first baby, so I didn’t feel like I was missing out.
Q How have you navigated solo
parenting? Has it been important to have a good support network? A You always need a support network, whether it’s friends or family, it’s so important. You go through such a rush of hormones and the feelings you get

I thought ‘should I be singing all these songs?’, but the experts on Tiny Happy People say how repetition and singing songs to your baby are so important. I play a game with him called Pots, Pans and Bangs (banging pots and pans to make music) and Santi loves to dance. are such a rollercoaster. Having people there for you is really important. BBC Tiny Happy People has been really useful because there’s so much information on there for all ages. The milestones which babies reach from 0 to 12 months is so incredible, they go through so much, so it’s nice to be able to go on to the Tiny Happy People website and read about child development and the little activities that I can do at home with Santi. It’s so beneficial. Q What have you found most
surprising about motherhood? A I read some books when I was pregnant, but without really taking on board all the different changes babies go through. I think what’s most surprising is how much change they go through and once you’ve got one thing, then another thing crops up. If it isn’t the whole newborn phase, then it’s weaning and then crawling, talking, walking, there’s so much. There’s always a new change. With Tiny Happy People, there’s plenty of information about child development. It’s so important to interact with the child. With Santi, I chat to him all day long and now I feel like he’s started to pick up some words, which I absolutely love. At first
Q What are the best bits and
worst bits about parenthood? A The worst bit is sleep deprivation! When you’ve not slept and you’ve been up all night, how do you function? The best bit is watching him grow and learn new things. Now Santi’s trying to walk, that’s the best thing. They make you laugh. He’s like a little best friend. Although apparently I pamper him a bit too much! Q Do you think motherhood
has changed you?
A Absolutely, motherhood has changed
me for the better. I know my priorities now and you’ve got more responsibility when you’re not just looking after yourself, but looking after a little one as well. I definitely think it’s put my head on my shoulders a bit more.
Q How do you juggle everything
and make time for yourself?
A With the help of my mum! I feel like
at the beginning it’s so hard to juggle, I don’t even think I could put a dinner in the oven, but you adjust to it. During the day, I’m always on the go and there’s always something going on but at night-time, once
Santi goes to bed, it’s my time to have my dinner and watch Bridgerton. Some days are harder than others. I’m really lucky with my job that sometimes it’s really busy, but sometimes I can be at home for weeks on end. It’s juggling, but I quite like being busy. Q What is the one thing you really
want to teach your son?
A To always be himself. I want to
teach him to love himself from a very young age and instead of looking at the negatives to look at the positives.
Q And finally, any advice
for other new mums?
A To enjoy every minute of it. Some
days are going to be harder than others, especially in the newborn bubble. We all struggle because there are so many different emotions that we go through, there’s so much pressure, but there’s no such thing as being a perfect mum, we’re all doing our own thing. I’d also recommend going on to the Tiny Happy People website to get as much information as you can, right from pregnancy, I feel like I definitely should have done that a little bit more. Always chat to your baby, it’s so important to communicate with them in those early years and to have fun with them. olchester is an historic and beautiful town with a host of attractions ranging from its 900-year-old castle to its highly regarded zoo, all of which make it great for a day trip; but stay a bit longer and there’s plenty more to discover beyond its big-ticket attractions. A short break is a perfect way to explore the very best of the town’s underthe-radar treats and hidden treasures. For the unfamiliar, start with Colchester Castle, Europe’s largest Norman keep housing a fantastic museum exploring the town’s famous history. The castle and two charming free museums, Georgian townhouse Hollytrees and the Natural History Museum, are located within two minutes’ walk of each other and glorious Castle Park, a green oasis in the heart of the old town. Crammed with treasures from one of Britain’s most important museum collections, the castle is a perfect starting point to get to grips with Colchester’s fascinating past. Built on the foundations of a huge Roman Temple destroyed by Boudica, and later the town’s prison where the women accused by the Witchfinder General were held, these and many other

and terrace, or a trip to its in-house cinema. Meanwhile, across town the award-winning Mercury Theatre has recently re-opened following a multi-million-pound redevelopment. Tucked behind the Mercury in St Mary’s At The Walls (damaged during the Siege in an incident reputed to be the inspiration for the Humpty Dumpty nursery rhyme!) is Colchester’s much-loved Arts Centre, hosting a packed programme that perfectly balances the popular with the challenging. Exploring the town centre wouldn’t be complete without a spot of shopping either and Colchester doesn’t disappoint in this regard, with well-kept shopping arcades housing the big-name High Street stores, whilst smaller lanes and roads host independent retailers and boutique stores. A prime example of this is Red Lion Books. Proudly independent since 1978, when the Donaldsons first ‘set up shop’, Red Lion Books

stories are told through rare objects, interactive exhibits, and self and guide led tours. The streets of Colchester offer just as much history as the objects in cases within its museums. In a compact city centre, you can discover Britain’s oldest and longest town wall, walk through the impressive ruins of St Botolph’s Priory, explore the historic Dutch Quarter and even discover musket ball holes in battle-scarred walls, a reminder of the 11-week Siege of Colchester during the English Civil War. Join an organised guided tour, or pick up a handy map or guide to explore at your own pace from the Visitor Information Centre (located within Hollytrees Museum). Perfect for an early evening stroll. But Colchester isn’t stuck in the past. Firstsite, ArtFund Museum of the Year 2021, is a contemporary art gallery, a curved, golden, space-age building that regularly hosts exhibitions by world-renowned artists and up and coming names. Even those sceptical about the merits of modern art will find something to enjoy within its walls – a Roman mosaic displayed in the floor of the gallery close by where it was found, a fantastic café

Marisa Arna designs and makes her jewellery at her studio in Thorpe-leSoken, near Frinton-on-Sea, in Essex. She originally set up her ceramic studio in 1997, making fine, thrown porcelain but since 2007 she has been working exclusively as a jeweller and goldsmith. The Church Street Tavern opened in 2014 as a tavern with ground floor bar and lounge and first floor restaurant serving simple, freshly prepared, wholesome food. Coaching inns and taverns are a rich part of Essex’s heritage with taverns springing up at a time when there were no telephones, social media or other ways we communicate today. If you wanted to do business, politics or socialise with people, you went to a tavern. It seemed right to give this handsome building, built as a Savings Bank in about 1852, this name as it has become the place to meet, have fun and be well looked after. and Constable Country are ripe for exploration to the north of Colchester, whilst Mersea Island lies to the south. The Dedham Vale is Essex’s only Designated Area of Outstanding Natural Beauty, whilst the saltmarshes on the mainland around Mersea are Sites of Special Scientific Interest, providing unique habitats for native species and migrating birds alike. The Essex Wildlife Trust run nature reserves at Abberton Reservoir and Fingringhoe Wick, and there’s no shortage of scenic country walks around the Essex landscape to enjoy – the riverside route from Colchester to Wivenhoe Quay is a particular favourite with locals and visitors alike. Mersea of course is also famous for its seafood and particularly its oysters, and you’ll find a fine selection of seafood restaurants on the west of the island, kept stocked by the local fishermen. But the other local delicacy can be found in nearby Tiptree, where world-famous jam manufacturers Wilkin and Son run their farm and factory. Stop by one of the several local Tiptree Tearooms to sample their unique little scarlet strawberry jam as part of a delicious cream tea. There’s plenty of other nearby hidden treasures too, from the country’s tallest Tudor gatehouse at the impressive Layer Marney Tower, to a first-class heritage railway at the East Anglian Railway Museum, neatly positioned beside the imposing Chappel Viaduct, one of the largest brick structures in Britain.

Q Tell us where you love to shop in Essex? A I live in Gidea Park near Romford, so
there’s plenty of nearby independent boutiques where you can find unique pieces. Favourites include Bonnie and Clyde in Loughton and Never Fully Dressed in Buckhurst Hill. I love Nu Rose in Billericay; they stock Mermaids Swimwear, which is worn by lots of influencers like Amber Turner. Q What is a wardrobe staple
for this summer?
A Floral prints is a huge trend right
now and block colour suits, which we started seeing last season, are here to stay especially for summer weddings. If you are brave enough, try out daring oranges, creams, and yellow suits. A white suit – recently seen on Kate Middleton and Meghan Markle – is a classic look. Q As we emerge from the pandemic, do
you have any top tips for people who feel they have lost their sense of style?

A The first rule is to dress for yourself; think about what makes you feel good. If your body has changed, I’m a true believer that you need to forget about the size tag. You could be one size in one store and different in another. Wear something that fits right and feels good. Think about which colours make you feel great – try to move away from black and grey. If you are afraid of bright colours, consider introducing it through your accessories. Don’t overthink it; find your style icon and slowly gather ideas to introduce into your own wardrobe. Get yourself a decentfitting pair of jeans, a few basic t-shirts, a great sandal and denim shorts or skirt. Q What’s it like styling your best friend Ferne McCann? A I see Ferne once a week for fittings and we try to squeeze in dinner and a proper catch up afterwards otherwise we’d never get any work done! We filmed a few times for the eighth series of First Time Mum and there is a focus on Ferne
finding love with Lozza [Lorri Haines] this series, which is so nice to see. I love it when she’s happy and I’ve noticed she’s more daring with her outfits. I think that when we feel good about ourselves, we are more open to trying different looks. Q Who is an inspiration to you from the fashion world? A There are so many! But LA stylist Maeve Reilly is my go-to girl crush, she has helped to transform Megan Fox’s style. Q Have you experienced any
celebrity wardrobe mishaps? A When I styled Ferne for the NTAs we had a white two-piece dress made for her which arrived on the day of the event – and didn’t fit! We had three hours until the red carpet, so I quickly Googled a local tailor. Luckily, the dress had long sleeves so we chopped them off to create a band under her breasts so it would fit her top half. It was all good in the end. As a stylist you must be prepared for wardrobe malfunctions!
Q What are your thoughts on fast fashion? A I think it’s changing. I am a fashion stylist and I’m not going to stop shopping at Pretty Little Thing and Boohoo, but I am trying to be more conscious. For example, on Ferne’s last Maldives trip we didn’t buy a single new item and styled her existing wardrobe. Ferne said it was her favourite fitting because clothes have memories and meaning. I have been working with Kate Ferdinand for five years and we are proud of her holiday wardrobe as we’ve found one-off pieces that can be re-worn. It’s about being more mindful. Q How can we make our wardrobes more sustainable? A It’s a fact that women only wear 20 per cent of their wardrobe. Find out what’s in your closet before you go out shopping; ask yourself how often you’ve worn a piece and when you last wore it. Q Looking ahead to autumn/winter, what are the key trends to look out for? A We’ll continue to see colour blocking and the cut-out trend is coming through heavily. Expect western influences – cowgirl hats, western boots, and lots of denim. Hot pink will be a big colour for next season.

The human body produces four types of fat, and each has different properties and purposes…
VISCERAL Visceral fat is the hard fat that is found wrapped around organs in the abdominal cavity. People with higher levels of visceral fat typically consume a diet high in refined carbohydrates, alcohol, trans fats and saturated fats. High visceral fat levels can lead to a higher risk of many health issues, including cancer, stroke, heart attack, dementia, and high metabolic syndrome.
SUBCUTANEOUS Also known as “soft fat,” subcutaneous fat is typically used to measure a person’s body mass index (BMI). Given its location under the skin and outside of the abdominal cavity, this is often seen around the waist, thighs,
hips and buttocks when we look in the mirror. Subcutaneous fat can provide some health benefits, according to the Cardiovascular Diabetology study in 2015. The study found that a build-up of this soft fat directly corresponded with a decreased risk of build-up of cholesterol and fat inside artery walls. Having too much subcutaneous fat, however, can put a strain on ligaments and tendons because it adds body weight.
BROWN Brown fat is found in humans of all ages, but it’s typically found in infants. Brown fat’s purpose in the body is to burn the energy it has stored and generate heat.
WHITE The human body relies on white fat to store nutrients and energy for use when it needs it. Most of the fat in the body
SO HOW CAN YOU REDUCE BODY FAT AND FEEL HEALTHIER? 1. Pack in the protein A high-protein diet has been shown to burn fat while decreasing appetite. Aim to consume protein-rich foods such as eggs, legumes, seafood, lean meats, and dairy. 2. Incorporate strength training in your workout Introduce resistance training into your workout, which helps build muscle mass and reduce visceral fat. Combining strength training with regular cardiovascular exercise that gets your heart rate up is also a great option to help eliminate the subcutaneous fat. Walking, running, or swimming are all excellent options. 3. Eat healthy fats Healthy fats include avocados, olive oil, coconut oil, seeds and nuts. 4. Get plenty of sleep It is important to get a good night’s sleep to encourage weight loss. Lack of sleep has been shown to stimulate appetite and alter the hormones that influence our hunger. 5. Sugary beverages Although they taste good, fizzy drinks, juices and alcohol are packed with unhealthy sugars that stimulate fat production in the body. Q Did you love baking as a child? A I didn’t really ever bake as a child.
I watched my auntie Carol bake for us because she used to make all of our birthday cakes. My mum really didn’t bake – it wasn’t her thing.
Q What are your childhood memories of Essex? A I was born in Rochford and grew up in Leigh-on-Sea. Childhood memories are growing up beside the seaside and going down to the old town and seeing all the old cockle sheds and fishermen in Old Leigh, the old fishing village. It was very community driven and all the kids in the town would play in the street. We used to hang out with my mum and dad in the local pubs called the Grand and the Leigh Tennis Club. It was so lovely to grow up by the beach. I try and go back at least once a week because my dad and my sister still live there.
Q When did you realise you had a talent for baking? A When I created a cake for [her son] George’s first birthday, which was a welcome to the world theme and became almost more of a christening party. George is now 24 and living in LA as an actor. Q When did baking become a career for you? A It became a career more organically – I started creating celebration cakes at home for friends and family and it grew from there. I also started making cakes for the local schools, then nurseries started ordering them and gradually I became the go-to person for creative celebration cakes. Q You have baked for some impressive names. Who was the most fun to work for? A I have had a lot of impressive names to bake for! Peaches Geldof was so out JUBILEE TRAYBAKE
there and had very specific wants for her wedding cake. She was so passionate about her wedding and all the things she wanted – she wanted camels, labradors and everything to do with her life in a Jacobean style. I delivered her cake to her dad’s house in Faversham. It was a special time, she was a very special lady. Nick Grimshaw was so much fun; we did a cheeky cake for him, he is such a laugh! And I made Ian McKellan’s 70th birthday cake – that was so emotional, he cried! Q Have you enjoyed putting together your books? A I love doing books – it’s one of the favourite parts of my job. I love the creative process. I like to see the physical book when it is all printed. I like being on the set – I style my own books. I am currently thinking up ideas for book number five. Q Why are you keen for inspiring others to give baking a go? A I am a feeder and I love parties – it’s a joyful thing. I like to demystify the process of baking. I like to inspire people and then encourage people to have a go and really not to be scared to give it a try themselves. Q What have you come up with for the Platinum Jubilee? A I have devised three delicious bakes for Silver Spoon home-grown sugar to help people get inspired to celebrate the Platinum Jubilee including the Queen’s favourite Chocolate Biscuit Cake – there’s a Right Royal Traybake and also a fabulous flapjack recipe! Q How does the rest of 2022 look for you? A Very, very busy! I’ve got lots of new
projects coming up that includes TV, live events and also my new range of baking tools and kitchen textiles that I’m launching very soon.

325g salted butter 100g Silver Spoon light brown sugar 150g Silver Spoon golden syrup 250g jumbo rolled oats 250g quick-cook oats 250g dark chocolate, melted
METHOD
Dark Chocolate Coated Flapjacks These tasty flapjacks are made with half jumbo and half quick oats which make them a perfect texture, plenty of bite but they don’t crumble apart too much. They hold their shape well, lovely and golden and crunchy on the edges and still a little soft on the insides.

The Queen loves dark chocolate, so these ones are half dipped in delicious melted chocolate across the diagonal for a little more indulgence. Makes 24 small pieces perfect for passing around at your Jubilee party. You’ll need a baking tin 20 x 30cm greased and lined with baking parchment Large saucepan Wooden spoon Rubber spatula Large sharp knife Pizza wheel is handy Large bowl Small bowl for the chocolate so you can dunk the flapjacks a good depth to coat half
1 Preheat the oven to 160c fan. Line a 30 x 20cm baking tin with baking parchment on the base and up the sides. 2 Melt the butter, sugar and syrup gently on low to medium until all melty and syrupy and the sugar granules have dissolved. Use a saucepan large enough to tip in the oats. 3 Tip in the oats off the heat and stir very well to combine and coat over the oats, pour into the tin and press firmly and evenly into the tin. Use a rubber spatula or dampened hands to push down to pack into the tin. 4 Bake for about 25 minutes for more of a chewy finish, or if you’re more partial to a darker golden and crunchy flapjack cook on for another 5-10 minutes. Allow to cool completely in the tin, but cut into little squares when they come out of the oven (I find using a pizza wheel is useful to get nice straight cuts) before they harden completely. Once cool, lift out of the tin and use a large knife to carefully cut them apart where you’ve marked. 5 Dip into the melted chocolate across the diagonal and set them to dry on a piece of non stick baking parchment. Once the chocolate gets a bit low you can use a spoon to drizzle the rest over if they become too tricky to dunk. These will keep well in an airtight container for up to a week, or store in the fridge to prolong this. They can also be frozen.

Are wine and whisky liquid alternatives to market bubbles?
t is estimated that $70 trillion of wealth will be transferred from baby boomers to Millennials in the next 25 years. Conscious of this, savvy investors are increasingly seeking less traditional asset classes to put their money into, and the diversification strategies to do so are progressively becoming more unique. Which is where Fine Wines and Rare Whisky come in. With the renewed interest in wine and whisky collecting and investing spurred by the pandemic, certain expressions and vintages have seen values skyrocket. Not surprisingly, Champagne and Burgundy remain two of the most sought after and best-selling in the wine investment sphere, with limited releases by the Macallan comfortably leading the whisky rise. And the most traded fine wines of the last year, according to Liv-ex, included Lafite Rothschild, Petrus, Screaming Eagle, Mouton Rothschild, Sassicaia, and Taittinger. London Barrelhouse offers access to the wine and whisky investing world through offering best in class procurement, storage, coupled with the industry first “buy back policy”. When asked about the motivating factors drawing investors into asset classes such as Fine Wine and Rare Whisky, co-founder Peter Charalambous says that three issues are driving interest: “diversification and low correlation during market corrections” combined with “double-digit annualized returns over the past two decades” and “younger generations investing in ideas and products that they are passionate about”. Investing in whisky is a hot topic right now, with Scotch producing annual returns of 15.4% over the past decade, with limited releases by Macallan seeing

four-fold increases on the secondary market weeks after being newly released. The statistics indicate that Scotch has consistently outperformed the S&P. While bubbles are lovely in Champagne, they tend to be quite dangerous in financial markets. Illogical valuations are being fuelled by unprecedented capital injections. While nobody knows exactly what will trigger the next market crash or when, a new wave of financial wizards are already “market-proofing” their portfolios to uncorrelated assets like fine wine and rare whisky to ride out the storm that many are forecasting. With captivating returns and the allure of owning rare vintages, the industry is set to continue its rise in popularity.

Cut the aubergine lengthways in two, then cut into squares, dress with olive oil, and cook in an oven for 30 minutes at 160 degrees. 2
Prepare the four curries. For the purple curry, mix the cooked beetroot with olive oil, ground cumin and whole wheat bread. For the yellow curry, mix the turnip with olive oil, garlic, ground cumin, ground turmeric and whole wheat bread. For the red curry, mix red pepper with olive oil, garlic, ground cumin, paprika and whole wheat bread. For the green curry, mix green pepper with olive oil, garlic, ground cumin, fresh coriander and whole wheat bread.

ecognition of the quality of Sicilian wines has grown constantly over recent years and continues to do so. However, this is largely because of the increasing awareness of their many award-winning producers, as the best Sicilian wines have always been something of a hidden treasure. One producer whose outstanding reputation was established many years ago is Donnafugata, named after the town in the classic 1958 novel, Il Gattopardo (The Leopard) by Giuseppe Tomasi di Lampadusa. The novel was made into an epic historical drama by Luchino Visconti in 1963, starring Burt Lancaster and Claudia Cardinale. Set during the Risorgimento (the unification of Italy in 1861), Tancredi is a young revolutionary who famously tells his uncle, “If we want things to stay as they are, things will have to change”, but eventually shifts his allegiance from the insurgent Garibaldi to King Vittorio's newly formed army to further his own political ambitions. Tancredi returns home from the war to Palermo as an officer in the King’s army and during a lavish dinner party held by Don Fabrizio, falls madly in love with Angelica and seeks her hand in marriage. And it was this most romantic of stories that inspired Donnafugata to create the perfect match of bold Cabernet Sauvignon with soft and seductive Nero d’Avola to make a wine of sublime quality – and naturally called it Tancredi.

ince December, I have been very fortunate to have made frequent visits to Somerset. It is proving a unique experience in my life, seeing how the seasons are evolving every month in one particular, very rural spot. From the dark December days to the joy of turning the corner and seeing the first budding daffodils, followed by May’s bluebells and watching the birth of lambs. All this is often missed in busy urban lives and it has highlighted to me, once again, just how important it is for all of us to learn from and in nature. One very obvious way for children to embrace outdoor learning is through Forest Schools. Not only are there opportunities
for young children to enjoy nature-based, child-led activities on a regular basis, but there are also opportunities for taking part in school holiday Forest Schools. Besides Forest Schools, there are many courses and activity holidays available for children of all ages to learn in and about the outdoors – such as sailing, kayaking, climbing, birdwatching... something for everyone. Indeed, many schools are, once again, taking classes on residential trips focussing on outdoor learning and activities. In my own early and adventurous teaching days, we took two classes of eight-yearolds to an island in the middle of the River Thames for a few days, crossing over in a small rowing boat type ferry. On another occasion, we even discovered the fjords
“It can lead to a lifetime of greater confidence and adventure” in Norway with a group of 11-year-olds. These educational visits afforded amazing creative education for those children. Of course, over the years, regulations and safety requirements have become tighter, but the same rewarding experiences still remain. As children grow older, many take part in the Duke of Edinburgh Award Scheme, the highlight of which is the expedition. If they stay the course through the Bronze and Silver Awards and learn, develop and familiarise themselves with the skills, the Gold Award Expedition can provide challenging and exciting experiences that can lead to a lifetime of greater confidence and further adventures. However, perhaps the most valuable times of outdoor learning are those spent as a family. I am a huge advocate of allowing children to dig in mud, climb trees, investigate worms and insects, and simply explore the outdoors. Not only do they learn about nature and wildlife but, without knowing, they are developing their co-ordination, spatial awareness, sensitivity to things and people around them, learning to work as a team – and embracing well-being. One of my happiest family holiday memories is set in the rural Languedoc. Our three young children and those of our friends spent two weeks messing about in a shallow stream, with a local French boy who spoke no English. They made dams, went “upstream”, watched fish and were totally engaged in all that they discovered and the adventures that they had. For them, it opened up a new world. Modern life has so much to offer, but let us all – children and adults alike – grab as many opportunities to learn in and from nature. I still have so much to learn. A Saint Nicholas School was established in 1939 in a group of buildings set in the heart of the attractive hamlet of Churchgate Street, near Old Harlow. The school quickly built up a reputation for its outstanding pastoral care, excellent behaviour and high academic standards. A move to nearby Hillingdon House in 1977 and a substantial building programme in recent years allowed for gradual expansion of the school to its present size of 500 boys and girls aged 2 1/2–16 years. Today, the school has recently achieved a grading of ‘Excellent’, in all areas from the Independent School Inspectorate, and boasts superb facilities including extensive outdoor learning spaces. Q Today, what does the school offer? A At Saint Nicholas School, our pupils
are at the heart of everything we do. We recognise the uniqueness of each child and it is our privilege to guide them on the road
to discovering their talents and achieving their true potential. We offer an authentic, family-friendly environment that nurtures and encourages a genuine passion for learning and prepares them for their future beyond school. Q How long have you been in post and what do you love most about the role? A Saint Nicholas is my third headship and I feel privileged to be returning for my second spell at the school, this time as headmaster. I returned in April 2022, after an eight-year absence where I was headmaster of both Thorpe House School in Buckinghamshire and Leehurst Swan School in Salisbury, and what I love most about the school is the daily learning interactions I have with parents, pupils and staff. Q How would you sum up the teaching
approach at Saint Nicholas School? A We strive to provide an engaging, interactive approach that is tailored to the needs of each individual.
Q What are the key challenges facing the younger generation in the 21st century? A Young people everywhere have borne the brunt of the COVID-19 pandemic. Their education and social interactions have been disrupted, their mental health has suffered and they have missed key elements that provide the foundations and building blocks that prepare them for life outside of the school environment. As schools, it is of the utmost importance that we identify these elements and provide the tailored support required so our young people remain optimistic about their future, armed with a skill set that supports their emergence from the pandemic stronger than before.
Q Do you have many pupils who stay with you from Early Years through to the Upper School? A Yes, affectionately referred to as ‘lifers’, the school currently has several senior pupils who started in Reception. Q Outside of the classroom, what kind of opportunities does Saint Nicholas School offer? A At Saint Nicholas we strive to offer the pupils a broad and exciting range of experiences that they may not normally access outside of the school environment. Our extra-curricular provision was graded as ‘Excellent’ in our recent ISI inspection and includes baking, yoga, gardening and a Law Society. Q Has this school year felt like things have returned to ‘normal’? A Definitely. It has been fantastic to see pupils reintegrate as a whole school and return to a full programme of residential and day trips, sporting fixtures, musical concerts, drama productions and extra-curricular clubs. Q What have been the highlights for you over the past year? A Where to start? There have been numerous personal highlights, getting married on New Year’s Eve being the stand-out moment, but professionally it doesn’t get much better than returning to a school you are passionate about as headmaster and playing a pivotal role in writing the next chapter in its history.

fter periods of lockdown and isolation, more and more students at New Hall School are opting for boarding. We find out why...
Q Why boarding? A “I’ve been a boarder for two years
now and it’s the best decision I’ve made,” says one Year 9 boarder. “My favourite thing about boarding is how I get the opportunity to interact with lots of different people. I’ve learned about different cultures and made lots of friends!” When day students at New Hall hear comments like this from boarders, they get an insight into the options and experiences open to them ‘after hours’. During their time at New Hall, most students will try boarding at some point. With full or flexible boarding
on offer, they and their families can tailor the number of nights at school to fit their schedule. Flexible boarders – staying one to six nights a week – may want to stay on a Friday evening to play a sport fixture the next day, arrive on a Sunday evening to catch up on work, or even make it to an unmissable formal dinner. Q What are the benefits of boarding? A Not only do boarders develop
independence and exceptional social skills, they also benefit from many academic advantages. The library, music practice rooms, classrooms, dance studios, the fitness suite, running track, tennis courts and swimming pool are all available to boarders after hours. For younger boarders, being surrounded by friends and having a balance of study and engaging activities every evening makes the difference between a good and a great school

With variable office hours, working from home and business travel, work structures are changing, and families increasingly need flexibility in their children’s education and care. Q What do boarders get up to after school? A Whether students board for one night or seven, their Boarding House is a friendly, homely place that they help to decorate, and everyone is involved in suggesting activities and trips, planning an active social life around academic study. Boarders are living their best life alongside their best friends – when would they otherwise have the chance to play pool, table tennis, swim, sing karaoke, have evening access to art studios, or even play a 20-person game of hide and seek or paintball on a 70-acre site? Q Is boarding the right choice for my family? A Although some parents are nervous about their children being away from home, once their child is calling them with stories of new friends and adventures, they feel very much at ease. Some parents might choose boarding for their child for a term, others opt in to boarding in the Sixth Form to see a ‘preview’ of the university accommodation experience. Anyone can try for a few evenings or even a term to see if boarding is the right choice – although at New Hall, most that try decide to stay!

New Era At St Aubyn’s
Meteorites land at Avon House S chool
St Aubyn’s School has been a thriving preparatory school since it was founded in 1884 as a single-sex boys’ boarding school. In 1995, the school admitted girls for the first time and has continued to grow and thrive as a fully co-educational day school for 520 pupils up to 13 years. Recently, the increasing success at 11+, coupled with fewer external 11+ applications, has meant that the school has seen dwindling numbers in Years 7 and 8.
Pupils from Avon House Preparatory School got their hands on rare samples of moon rocks and meteorites during a series of science lessons that were truly out of this world. Students were encouraged to reach for the stars and learn more about the Universe around us. Students were given the unique opportunity to actually touch a piece of space rock not of this Earth as they were allowed to handle some genuine meteorites. These rare samples were provided free of charge by the UK’s Science and Technology Facilities Council (STFC).
Len Blom, head since 2013, explains: “The Governors have therefore decided that the current Year 8 class will be the last at St Aubyn’s and from 2023, we will be an age 3 to 11 school only. It is a brave decision to make, but the right one.” staubyns.com

Katherine Jeffrey, principal of New Hall School, received a fanfare and spontaneous cheers by the assembled school body as she cut a cake and received commemorative gifts from children in the Nursery as well as the head girls and head boys in the Preparatory and Senior Divisions. A celebratory Mass in the school’s historic chapel celebrated by The Rt Rev Alan Williams SM, Bishop of Brentwood, took place the day after. The service included the premiere

We speak to Julia Cook from Down Hall Hotel in Bishop’s Stortford about the ideas behind their latest refurbishment Q Can you give us a brief overview of what Down Hall offers… A Seamlessly blending historic country house splendour with luxurious and contemporary décor, Down Hall hotel, spa and estate is an idyllic place to escape the daily grind and celebrate the British countryside. Located just 45 minutes from central London, the 19th century Italianate mansion boasts 98 beautiful bedrooms, a luxury ESPA spa and the newly refurbished Garden Room restaurant with its own kitchen garden and terrace, as well as 110 acres of landscaped gardens and thriving woodland. For the more adventurous guests, the hotel’s facilities offer something for everyone, with padel tennis and tennis courts, outdoor badminton, trim trail experience and a fully equipped gym to name a few.
Q Why was it time for a refurbishment? A The refurbishment was part of our continued commitment to develop and elevate the property following an extensive refurbishment of the hotel’s West Wing in August 2019, along with the reception area and Garden Room restaurant last year. Q What was the brief to the design team? A Our brief was to create a space that is appealing to both our longstanding and younger guests alike. One of the main objectives was to create a luxurious and intriguing interior while respecting the grandeur and the rich history of this magnificent building that dates back to the 10th century. With this in mind, we put great emphasis on restoring and incorporating the beautiful period
features alongside including new contemporary and elegant furniture and soft furnishings. Q How and why have you extended the terraces? A Our Garden Room terrace overlooks the stunning landscaped gardens and the hotel’s fountain. We wanted to increase the capacity of the space too so it can be enjoyed by more of our guests. Now accommodating 120 covers, the Terrace has its own outdoor bar, comfy furniture as well as plenty of heaters, making it a beautiful spot for dining al fresco, drinks and afternoon tea. Q What have you introduced to the bar area? A The reimagined bar, The Fox, features a scheme of rich blues and dark woods with pops of red and orange detailing. An illuminated 12-foot tall bar takes centre stage, whilst custom-made furniture includes chairs upholstered in soft leather and plush sofas finished in Italian velvet. A Dining at the hotel champions British cuisine with menus that pay homage to the produce grown in the hotel’s kitchen garden and surrounding areas. From leisurely dinners in the new Garden Room restaurant and brunch on the al fresco terrace through to afternoon tea in the beautiful lounge, the kitchen team work hand-in-hand with head gardener, David Parkin, to bring the best seasonal ingredients to the table. Q What else do you have planned for the rest of 2022? A Throughout summer, we have a number of exciting summer pack-
ages that are perfect for a family getaway or couple’s retreat. Our expansive grounds have something for everyone with a five-a-side football pitch, croquet, badminton, giant games, and a brand-new Padel Tennis court that was installed at the end of 2021. ature has a way of effortlessly arranging itself into beautiful and harmonious patterns This latespring plan adopts a pointillist approach, with points of colour working together to create bolder shapes. Allium ‘Miami’, Cirsium rivulare ‘Atropurpureum’ and the tall grass, Stipa gigantea, all have flower heads made up of lots of minute flowers. The fennel leaves provide a background foil for the bulbs and perennials, while Iris ‘Sable’ in rockand-roll purple roves gently through. This meadow-esque design feels unexpected in a small city garden and has even more impact as a result. In summer the fennel has yellow flowers.
Method
1 Use a spade to dig over the soil to a crumbly consistency, breaking up any big lumps. 2 Gather together all the plants.
3 Starting with the Stipa gigantea, space the plants out on the soil, still in their pots.This is a tall, airy plant, so consider how it will look in different spots, including when you view the scheme through the windows of your home. 4 Ad d t h e C i r s i u m r i v u l a re ‘Atropurpureum’ and Foeniculum vulgare, in ones and twos, so that the flowers and foliage mingle at the tips. 5 Dot the Iris ‘Sable’ at random among the other plants. Make sure not to place them too close together as they will grow to be quite hefty plants. 6 When every plant has a spot, dig a hole for the Stipa, Cirsium and Foeniculum. Tap each plant from its pot and winkle out a few of the roots using your fingertips. Dig a hole for each plant to the same depth it was in its pot before planting and firming the soil down gently with your hands. 7 Next, plant the irises. Take care not to plant them too deeply, as the top of the rhizome (the woody stem that looks like a root) needs to stay above the soil. Water thoroughly. A B S O L U T E LY m a g a z i n e s

n what is the fourth consecutive rise since December, the 0.25 per cent increase in interest rates that has just been announced by the Bank of England means it now stands at one per cent, which, however you look at it, is still incredibly low. With inflation predicted to top ten per cent by the end of the year, it’s hoped this hike will help curb even greater increases and, as such, was far from unexpected. However, with much of this inflation caused by extraordinary factors, including shortages resulting from the pandemic and, more indirectly, the war in Ukraine, it’s anticipated the circumstances will be temporary and that moving forward, things will begin to stabilize. What’s more, we are enjoying high levels of employment and business confidence in the housing market remains high. But what we really need now is activity, because there are plenty of people who want to move house, but have delayed as the shortage of stock means they can’t find what they’re looking for. Meanwhile, property prices continue to rise, with the average house price up by around 12 per cent on last year (at least
according to some sources). This, however, is an unsustainable rate of growth, which is bound to ease off over the coming months. Indeed, it appears likely that by the end of the year we’ll return to a healthy, mildly inflationary market of around five per cent. For those buyers who need to move house now, the rise in interest rates and cost of living crises may mean they have to consider a slightly smaller property than they had hoped. But this won’t automatically suppress house prices, as long as demand remains high, which at the moment it certainly is! As we move into summer, confidence is key. Doom and gloom mongers should be treated with a healthy dose of scepticism, for the fact is inflation rates are still incredibly low, demand remains remarkably high and mortgages are readily available. Better still, more properties are starting to come to market to satisfy demand, so all in all, it should be a good few months for anyone who’s been sitting on the fence. Our advice, then, is to act now, and we are ready and waiting to help. uying a property can sometimes feel like a long and overwhelming process, especially when purchasing a home for the first time or as a solo buyer. Perhaps unsurprisingly recent research (by Money Box Home-Buying) suggested over three in five homeowners felt they were ‘winging it’ when they bought their own home with 61 per cent feeling that – due to their lack of knowledge about the process, they were underprepared. However straightforward the process could prove to be, when you are confronted with an abundance of terms and phrases you do not know or understand it is easy to see how it could start to feel like a lonely undertaking, where second
guessing yourself or what you are reading becomes the norm. This appears evident in the study reporting 48 per cent of these homebuyers admitted they were left feeling anxious, hoping they’d not missed or misunderstood anything important. Knowledge is power. Buying a home is likely to be one of the biggest and most expensive purchases you’ll ever make, so it’s worth spending time researching the process to put your mind at ease and help prepare for circumstances that may arise. Try to remember you are not alone. It's likely friends, family, colleagues and acquaintances you bump into in the supermarket have been through the process and can share both their pearls of wisdom (or horror stories) giving context of their own experiences.
If in doubt, ask. Throughout the process you are working with property professionals, from estate agents and mortgage brokers to surveyors and solicitors, who speak in this jargon day in, day out, offering an invaluable amount of experience and can be on hand to answer any question. Expect the unexpected. There are a number of stages of purchasing a property, many you aren’t typically made aware of as they are handled behind the scenes, and no matter how many times you have been through the process a new issue can arise.
