EDITOR’S LETTER

T

here’s a bit of a creative moment happening in Westbourne Grove. Not long ago, everybody was complaining about the antique shops closing, the useful shops being priced out and the post office vanishing. It looked as if the area was about to lose its quirky spark altogether. But instead, now we’re seeing a new influx of arty people using spaces in new ways. Last month, the abandoned sorting office building was taken over by the lovely Broken Down Doll team, who brought a slightly more upmarket version of their Kensal Rise vintage clothes and absinthe cocktail combo to the stretch. The dolls then handed over to the new Mile High Club with its high camp suppers inspired by the glamour of 1950s air travel. Up the road there’s London West Bank, a gallery with a homespun, urban feel that rescued a long-abandoned building and is selling a huge range of contemporary work. And then there’s the 20th Century Theatre, with its illustrious history and eclectic programme of events. Is this the new Notting Hill? Or the old one? There’s an enduringly unpredictable feel to the place – and we hope to reflect the mix in this issue. We’re focusing heavily on creative women in this issue – perfumer Lyn Harris, for instance, and shoe designer Cleo B, plus restaurateur Rebecca Mascarenhas, furniture designer Bethan Gray and the inimitable Caprice, who may have gone quiet over recent years but can be found living and working in Notting Hill as the force behind a huge, thriving lingerie business. We hope you enjoy the magazine.

ALEXANDER JAMES – INTERSECTION THE STUDIO BUILDING FROM 25 APRIL

An exhibition of works demonstrating the artist’s mastery of an entirely unique artistic process. Using objects from nature and handmade props, James constructs ephemeral sculptural installations underwater in black tanks filled with highly purified water, the final stage of which is to photograph the scene. He utilises the natural interaction between the object, light and lens when submerged in water to create a painterly effect. Razorlight’s Gus Robertson tells Pendle Harte why he’s organising a series of classical concerts at Notting Hill’s 20th Century Theatre

A

new series of Sunday afternoon classical concerts kicks off in Notting Hill this month. If that sentence doesn’t excite you, then you’re part of their target audience. This season at the 20th Century Theatre is designed to introduce a new generation of listeners to a variety of classical composers under the guidance of Gus Robertson, the theatre’s venue manager – who’s neither a classically trained musician nor a formal concert organiser. Not at all. Robertson is a rock and roll guitarist. His day job is with Razorlight and usually, he’s more at home with a riff than with a sonata. Though really, he says, they’re not that different. ‘Shostakovich is pure rock and roll,’ he says. ‘People think it’s stuffy and boring but it’s dark, twisted, psycho cartoon music,’ enthuses Robertson. ‘Anyway, everything is derivative and there are only a certain number of notes aren’t there?’ he continues,

rhapsodising about how all music is related and how awful a lot of new music is. ‘I think it’s amazing, what the classical composers were doing when you consider that they had no technology and had to do it all in their heads. They were writing incredibly complex music which people have forgotten how to do today.’ Robertson himself insists on writing music with cassettes, old-fashioned style, literally

always been here and has such an illustrious history. I think of it as part of the old Portobello – the last antique arcade is downstairs and we’re lucky that nobody has tried to turn it into a corporate venue yet. Also, it’s fitting to hold concerts here because the owner Sandra’s husband was the composer Michael Kamen.’ Robertson’s programme will feature relaxed Sunday afternoon concerts that are neither stuffy nor boring, with a large core of musicians, many of them students from the Royal College of Music. He is calling it The Hitchhikers Guide to Classical. ‘I’ve never been guided through classical music like this,’ he says. ‘It’ll be nice, part of the Sunday roast experience.’ Concerts will be informal, with children welcome and heckling, while not encouraged, at least tolerated. Westbourne Grove’s 20th Century Theatre: A Brief History Built in the late 18th century as the Bijou Theatre in what was then Archer Street, this was a popular and respected theatre, seating 300 and hosting the period’s most famous actors on its stage. The first ever production of Oscar Wilde’s Salome was staged here in 1905. In 1908 it became a cinema, famously charging children just a penny entrance, to include an orange and a bag of sweets. In 1918, the venue became a theatre again under Lena Ashwell, with a pledge to make theatre affordable, and during this time Sir Laurence Olivier made his professional debut here in 1925. In 1936 it was taken over by the Rudolph Steiner Association and renamed the 20th Century Theatre, and in the 1960s the space fell into use as an antiques arcade, as it remained until 1999 when the Grade II listed building was revived for use as a general venue.

Cleo B, Notting Hill-based shoe designer, shares her inspirations Favourite holiday destination It has to be Barbados. There are amazing resorts and restaurants and you can jump in a Jeep, explore the island, eat at local cafes and bathe on any beach you choose.

Most inspiring experience In 2008 I spent two weeks touring India with interior designer Nina Campbell. I spent time in her embroiderer’s factory, visited her suppliers and rode elephants. Favourite shoe of your own design My gold Sucker MCs cassette tape heels which come in a rainbow of bright coloured suedes (above). I also love Tribeca which is a classic Cleo B wedge shoe boot from Spring Summer 2010 (right). It has intricate crisscross detailing down the front, which I took from the facade of an Art Deco building in New York.

Most treasured possession Honey B – my miniature wire haired dachshund. She is a star and constant companion. She is also the face of our new dog collar collaboration with accessories brand Beauchamps, launching in March.

Style icon I don’t have a particular style icon. I love colour and I have a bold sense of style, so I find it’s influenced by anyone and anything. However, if I was allowed to steal anyone’s wardrobe, it would be Rihanna’s.

Favourite piece of art My favourite painting is Egret by James Aldridge (left). I received it as a 21st birthday present from my parents. BLONDE AMBITION Caprice Bourret talks to Pendle Harte about money, work and babies

T

here aren’t many people big enough to dispense with their surnames. There’s Madonna, famously, and Prince – then Beyonce and Oprah, plus probably a handful of others. And then there’s Caprice. Full name Caprice Bourret, which actually is her real name, and which she uses, even if nobody else does. Caprice has been ridiculed in the press over the years – ever since she launched herself onto the scene in that transparent Versace dress – but these days she’s certainly no joke. Bourret is a shrewd businesswoman with a lot of charisma and honesty, spending her days grafting at the lingerie business that she has built up to be one of the country’s biggest selling lines. This from a woman who ‘once wanted to be governor of California’, and never thought she was ‘hot enough’ to be a model.

Past interviews have given many a wrong impression of Caprice and the Caprice sitting opposite me eating onion rings at Westbourne Studios is not who I thought she’d be. She’s no sulky princess – she’s chatty, quick and honest. And who would have thought that she’d be funny? ‘Holy smoke,’ she keeps saying. ‘I never wanted to be famous. I just wanted to make money and have my own independence.’ This is a woman who’s not afraid to talk about money or admit to wanting lots and lots of it. We are officially here to discuss her new range of bedlinen but she tells me right off that what she really wants is a baby. ‘I’m 41, so I’d better get on that bandwagon soon,’ she laughs. ‘Now that I’ve finally found the man – and boy was that a struggle. I kissed a lot of toads. He is so dropdead gorgeous you would have a heart attack if you saw him!’ Of course she hasn’t always been broody. ‘I used to just care about me, me, me and for a while I did think I

was invincible and the hottest thing in town,’ she confesses, though that’s all in the past. And it is quite a past. Originally from California, Caprice moved to New York aged 18 and quickly launched her career as a model before coming to London and generating instant column inches thanks to the Versace dress (‘I didn’t even try it on, wore it over my M&S knickers and did my own hair and make up – and the next day it was on all the covers’). So Caprice was born. ‘It was journalists who just called me Caprice, and everyone thought it was a fake name – but my mum got it from a Doris Day movie.’ Instantly she was catapulted into a world of private planes, police escorts and overpaid personal appearances. Did she enjoy it? ‘Are you joking? I loved it! My day rate went from like £2,000 to £10,000, I had 5,000 43

boyfriends, I was travelling the world. One night I’d be on stage with Steve Tyler giving out an award and the next I’d be flying to America for the Oscars’ red carpet live feed. I’m from a normal middle class family! It was exciting!’ Throughout all this, Caprice remained grounded enough to make sure that the person making the money was her. ‘A lot of people are led by the fame and want to ride that wave but for me it was always a business.’ Quite soon she severed ties to the model agency and negotiated her own deals with photographers. She would retain ownership of her pictures and sell them to magazines herself in a way that’s quite common now but wasn’t then. ‘It was common sense to me. Owning my own pictures made me 200 grand a year just for doing nothing! I come from a very entrepreneurial family – I didn’t go to uni, I’m not book smart, I’m street smart.’ These days, Caprice isn’t modeling, apart from her own lingerie collection, and there are no police escorts or private planes. She runs a thriving lingerie business, By Caprice Lingerie, selling bras at about £25 each to a customer base that she says is ‘basically the OK! Magazine reader’. The collection is ‘affordable but looks expensive’ and started life as a licensing deal with Debenhams long before Elle McPherson or Kylie Minogue had even thought of it. But as soon as she started to make money for Debenhams, canny businesswoman that she is,

‘I thought: holy smoke, I’m going to do this myself, I can make a fortune.’ She bought back the license and went into production, running the business (she tells me more than once) as a tight ship (‘so tight and so lean and so mean. When it’s your money, trust me, you’re hands on’). Which is why she turns up to the office in Westbourne Studios every day and ‘knows what hard work is’. This despite the fact that she’s easily got enough money not to bother, thanks not only to the modeling and the

“I’ve been told many times I’m a man in a woman’s body” lingerie but also to a property portfolio sounds like a blueprint for the capitalist dream. ‘I used to buy government repossessions, properties in distress situations, I’d hold onto them for a couple of years then flip them, often for twice the price I paid. It was just a little hobby. This country’s great for that, even in this economy, property always retains its value.’ But then she got stung in 2008 and these days she keeps her money in the bank. So why keep ploughing away with the business when the security and the independence she always strived for

is already assured? ‘The thing is, that the more successful you become, the more you work. It’s crazy. And you know what? It’s not so much about wanting to make more money. It’s about the deals. I just love the deals. It’s the biggest high.’ That sounds very male, I suggest. The thrill of the chase. ‘Yes! I’ve been told many times I’m a man in a woman’s body!’ And what does she spend it all on? Apart from her own house off Westbourne Grove. ‘I don’t really like to shop. I just can’t go out and buy something full price, it’s a bit of a sickness. It’s embedded in my head – even if you’re worth billions you still want a discount.’ Business-wise, it seems that Caprice is leading a charmed life. Her recent appearance in ITV’s Splash led – despite the bad reviews and the ‘battering’ her body went through – to her swimwear range selling out immediately. And her new range of bedding too. Next up, she insists, will be a baby. ‘I never thought about having kids before because I wanted to secure their future but now we’re good. I don’t care about getting old – I have security that’s not totally contingent on my looks. I’m 41 and I don’t care! Look at me. I’m a mess. I have no make up on and grey hair and I don’t care!’ Needless to say, she is not actually a mess at all, and her hair is not grey. Caprice is very much in control, a clever operator with an iron grip on her life and everything in it.

I

f fragrance is ‘an expression of who you are’, as perfumer Lyn Harris puts it, then the same could be said about her Notting Hill store, which is every inch a reflection of its 45-year-old owner’s distinctive aesthetic and down-to-earth sensibility. It’s all heady ambience and rich colours but alongside the luxe, effortless glamour, the occasional bockety junk-shop piece finds its way in too. Since she founded Miller Harris with her French husband Christophe in 2000, business has boomed, and fragrances such as La Pluie, L’Air de Rien and Fleur Oriental have become modern classics. Now there is also Miller Harris tea, olive oil and candles. She is a great believer in ‘affordable luxuries’ in times of austerity. ‘I think women will skip other things, but we always like to have a good perfume and a few other small luxuries.’ In the laboratory downstairs endless jars containing exotic sounding ingredients, from Iris Root to Jamaican lime, are lined up on shelves. Classical music wafts soothingly from the speakers – she always listens to music while experimenting in her lab, if not classical, then reggae or jazz. ‘Usually something from Honest Jons,’ she says, as she settles into her sleek Cappellini chair and pours us a cup of Miller Harris tea, which is ‘not too flowery’, she assures me. ‘Maybe it’s my Yorkshire roots, but my tea is more

about character than fragrance.’ So what’s the key to perfume making? ‘Having a detailed sense of smell and knowing how to create a formula and then how to dissect that formula,’ she explains. ‘There are different segments – such as citrus top notes, herbs and spices. I start by working with raw materials, for instance a fig note, and it can take several attempts.’ The natural ingredients are ‘the soul’ of her creations, she says. ‘And certain fragrances can bring out subconscious or suppressed memories or emotions – I see that a lot when I make bespoke fragrances for clients.’

loves most about the area is the fact that ‘no one cares’ when they see a famous face. Harris was always obsessed with France and fragrance, and as a teenager, worked on Saturdays in a perfume shop sweeping the floor. Her parents taught her that anything was possible. ‘They taught us to be who we are – in Yorkshire you speak your mind, which gets you a long way in life I think.’ It was while training under a master perfumer at Robertet Grasse that she met Christophe. The couple settled in London, set up the business in 2000, and had a son, Henri, now seven. All very idyllic, but life is not without its difficult moments, she says. ‘I think just being a woman is challenging. There are so many demands on you – at work, at home. I take looking after my family seriously, including my parents who I’m very close to. And being a woman in business is very challenging – you have to believe in yourself, not be scared to speak out.’ It has certainly worked for Harris, anyway. The secret of her success? ‘Always put a smile on your face,’ she says, with a suitably broad grin. ‘It will make you feel better and make it all work out. And don’t be scared of anything, there’s nothing to fear – worrying is a waste of time.’ Spoken like a true Yorkshire lass, by way of west London.

‘Fragrances can bring out subconscious or suppressed memories or emotions’ When Harris opened her laboratory and store in Needham Road more than a decade ago, she quickly fell in love with the area, and although there are now two other Miller Harris stores – in Mayfair and Covent Garden - the Notting Hill branch remains the hub of her work, and close to her heart. She loves Goldborne Road ‘for the antiques and the neighbourly feel’, the Tin Shed on All Saints Road, ‘for the food and amazing interior’, and Grangers (‘very happening’). And although Lyn’s brand is a magnet for celebrity clients – Alexa Chung, Jane Birkin, Madonna, Victoria Beckham among them– one of the things she

My hair never does what I want it to do. It’s curly in all the wrong places and without a professional blow-dry it never looks how I want it to. So when I heard about keratin treatment, or a Brazilian Blow Dry, it sounded like the perfect solution. I am met by wonderfully welcoming staff and my stylist gives me all the time in the world to ask questions. Then I’m off to have my hair washed and the product applied, with a cup of Aveda blend tea waiting for me on my return from the basin. The hair is then straightened, and I am left to read a magazine for 20 minutes. Before I leave, my hair is rinsed again, this time without shampoo, and I am told to wait at least 24 hours before a wash with sulphate-free shampoo. My verdict? I am thrilled. he Spring Summer catwalks were brightened by swatches of vibrant neon make-up. What better way to step from winter into spring than with a splash of fluoro flair? Don’t be fooled: this isn’t 80s throwback neon, rather it’s cool, modern, clean and graphic. Your canvas is key here and beautifully exfoliated, glowing skin allows you to get away with a shock of bright colour. What was the inspiration behind the Talisman Crown? Hollie Bonneville Barden, Creative designer: The Talisman crown is the ultimate celebration of diamonds, revealed in all their natural beauty and rich variety. Diamonds are one of the wonders of the earth. I wanted to use the symbol of the crown alongside the symbol of the diamond to celebrate a beautiful journey of past, present and future told through the beauty and brilliance of light.

Describe the various parts of its design and what they mean. This beautiful story of time is held in a journey from the top of the crown and completes at the bottom. Beginning with the awe-inspiring 73ct lustrous rough diamond we showcase the natural beauty of the diamond as it is found in its original untouched state. The diamond provides us with a powerful sense of the past but holds the power to allow us to dream of the

future. This 73ct hero diamond has been held in the De Beers collection for many years and symbolises the beginning of our journey. As your eye is drawn down the crown the diamonds dissipate and are eventually replaced with open spaces. Whilst creating an amazing diffusion of light through the array of cuts and coloured diamonds we also conjure up a sense of the future and bringing a fresh and modern twist to the Talisman

aesthetic. The set diamonds signifying our achievements and the open space our future aspirations. What was the inspiration behind the Talisman Wonder? The Talisman Wonder was created to celebrate rough diamonds. Since ancient Egypt, these diamonds were the exclusive privilege of Kings and Queens and were said to protect, bring good luck and prosperity. Before it was discovered that diamonds could be polished, their natural brilliance and innate character were especially prized. With the Talisman Wonder, we wanted to create a modern-day treasure, celebrating the heritage of these majestic diamonds. How many diamonds were used to create it? There are a total of 691 diamonds making a total of 271 carats. It took 10 years to collect all its rough diamonds. Was the design finalised before the diamond sourcing took place – or was it more of an ‘organic’ process? Andrew Coxon, President of the De Beers Institute of diamonds: We started collecting for the Talisman Collection in 2001 but it was a slow process as most rough diamonds are not naturally beautiful and most need polishing. Occasionally, Mother Nature

will surprise us with a beauty, but very rarely. Only one diamond in 10,000 would be our own estimate, as we looked at so many parcels of rough diamonds. The very best and most exceptional diamonds were sometimes too big for the designs of the Talisman Collection but they were too rare to let go of , so we bought them anyway in the hope that we would create something very special with them one day. We were not disappointed! The first time we saw The Talisman Wonder we could not stop ourselves from touching its face, the beauty was really overwhelming. How was the white gold, which holds the Talisman Wonder together, hand-sculpted? The white gold selected for the Talisman Wonder is of the highest quality. Once it was cut, it was then hand-sculpted into its smooth, elegant

gradient using traditional techniques. The hand-mottled method used gives it an extra layer of texture to blend beautifully with the lustre of the rough diamonds. What’s the best way to maintain your diamond? When you purchase a diamond at De Beers, you can pop in store any time for a complementary cleaning of your piece of jewellery. For a quick clean at home, we advise doing it with a soft brush and soapy lukewarm water. To keep your diamond sparkly, avoid dust and grease, so do remove your ring when applying hand cream. In any case, we recommend a regular visit to the store for a full cleaning of the piece, as well as a check-up of the setting. Founder of Kensington’s Michelin-starred Kitchen W8 as well as Sonny’s in Barnes, she also owns Cantinetta in Putney and Sam’s Brasserie in Chiswick. Here she tells Absolutely about her path from waitress to restaurateur and philanthropist Kitchen W8 is four years old. How did it start and how has it changed? Kitchen W8 opened in November 2009. It came about as a result of several conversations between Phil Howard and me about the nature of neighbourhood restaurants and what we expected of them. It hasn’t really changed from that initial vision of a combination of good food and service in congenial surroundings. We said in our original brief that the benchmark of our success was to send diners back out into the world feeling better than when they arrived. We still believe in that. Tell us about receiving the Michelin star. The restaurant was awarded a Michelin Star in 2011. It came as a complete surprise to me, as I had never set my sights on gaining such a prestigious accolade. I guess it was less of a surprise

to Phil as he is more familiar with the expectations of the Michelin inspectors. Our head chef, Mark Kempson, must have hoped for such an award, but he kept his ambition to himself. We certainly never consciously set out to be awarded a star. However, it was such a wonderful recognition of the hard work put in by the team, and it has certainly helped in attracting customers and staff. You have built up quite a restaurant empire. Why restaurants? To be honest, I don’t know. I was working as a waitress while considering options in other careers. My then boss, Bob Payton, suggested I become a manager, as I seemed to have a flair for it. Once I had decided to give it a proper go, I made it my business to learn as much as I could as fast as I could. That and insatiable greed took me a long way.

You’re quite unusual as a female restaurateur. What would you say about that? There are many more female restaurateurs nowadays, but when I first started my restaurant in 1986 it was quite unusual to have a woman be a principal rather than a partner (wife or otherwise) to a man. The hours can be punishing and, because of the erratic nature of the business, not conducive to family life. I find it hard to believe that almost 30 years since I started in this business, the word ‘ambitious’ is still used in a pejorative sense when applied to a woman. How is it possible to run a restaurant and bring up three children? Running my own business meant that I could arrange my hours to suit myself. I am an early riser, so I managed to get through a lot of admin before anyone

What makes a good restaurant? A good restaurant means many different things to different people. I would say that a good restaurant fulfils the expectations of its customers. This means having the right menu at the right price with the right level of service in an atmosphere that is convivial. Basically, all your bottles should be in a row. Where the company culture is one of care, that extends to both the staff and the customers. And what makes a bad one? It’s easy to care about people that spend a lot of money or people that come in regularly, but I am more interested in turning occasional visitors into regular customers. Where do you like to eat out yourself? Apart from my own restaurants, I love River Café and have done so since it opened. I love the Union Square in New York and have been going there since that opened too. I guess I am a creature of habit – I should get out more.

Living above the restaurant when the children were little meant that I could feed them, then go straight to work without a commute and pop back in to bathe and put them to bed before the evening shift. It also helps to have great childcare as well as a supportive husband. The best advice I would give any woman with

children who wants to get back into the workplace is to pay for the best childcare you can afford. I had to juggle my guilt with the fact that I had to work, even when the children were tiny. I wish I had read the Sheryl Sandberg quote: ‘Show me a woman without guilt and I will show you a man.’ It would have made me feel better about myself.

What’s next for you? I have been exceedingly fortunate in my recently formed business partnerships with Sam Harrison and Phil Howard. I am enjoying the collaborative process so much that I have completely changed my business model over the past few years. I love being involved in projects with talented partners who bring different skills and I am in the process of setting up another restaurant project with a talented chef. I am looking forward to spending more time on philanthropic projects, predominantly ones that support the education of girls in countries where they do not have access to an education and therefore have almost no choices in life. I have three girls and I am very aware of the choices their education has given them. 61

Thinly sliced bresaola with beetroot, walnut, watercress and goats cheese

Haunch of fallow deer with creamed potato, Swiss chard and roast Jerusalem artichoke

INGREDIENTS: SERVES 8 Top quality sliced bresaola (80 extra thin slices) Walnut cream (see below) Heritage beetroot (2 medium tennis ball size) Watercress (1 bunch extra fine) White endive (1 head) Salad radish (8 pieces) Firm goats cheese (100g)

INGREDIENTS: SERVES 8 Trimmed fallow venison haunch (rump cut 1.5kg) Large French Jerusalem artichokes (4) Swiss chard (1 bunch) King Edward potatoes (800g) Unsalted butter (500g) Full fat milk (500ml)

BRESAOLA The bresaola should be sliced as thin as possible and firm right the way through. WALNUT CREAM 5 egg yolks 30g Dijon mustard 15ml vinegar 100ml water 100g peeled walnuts 200ml walnut oil 450ml grapeseed oil Place the egg yolks, mustard, water, vinegar and walnuts in a blender. Blend slowly and then emulsify with the oils. Season to taste and adjust the acidity with a little more vinegar if required. Pass through a fine sieve and chill until required. BEETROOTS Drizzle washed beetroot with grapeseed oil. Wrap in baking foil and roast in an oven at 160°c for 60 minutes. Peel and cut into chunks. Dress with vinaigrette. ASSEMBLING THE DISH Place the sliced bresaola on a plate. Top with dots of the walnut cream. Place the beetroot pieces on top and slice the radish as thin as possible. Finely chop the endive and watercress. Dress the radish, watercress and endive with vinaigrette and then top the bresaola. Finish with finely grated goats cheese.

For this dish the lengthiest process is the creamed potato. Ensure to make this the first job as the whole process will take 90 minutes. FALLOW HAUNCH Prepare four pieces of the rump, approximately 380g each. Set your oven to 160°c. Season the meat and seal in a hot pan with grapeseed oil. Place in the oven for eight minutes, turning the meat every two minutes too ensure even cooking. Remove from the oven and allow to rest for at least ten minutes before carving. CREAMED POTATO Place washed and peeled potatoes in the oven at 160°c on a bed of rock salt for 75 minutes. Warm the milk and 150g butter. Fry the sieved soft potato and slowly add the milk and butter until a smooth creamed potato is achieved. SWISS CHARD Finely chop the chard leaf. Peel the stalk and chop finely. Fry the stalk in butter, and add the julienne leaf after approximately five minutes. Sweat until tender and serve. JERUSALEM ARTICHOKE Peel the artichokes and then cut in half. Season the artichokes and place in a cold pan with grapeseed oil. Cook until golden, and place in an oven at 160°c for ten minutes. ASSEMBLING THE DISH Serve the venison on the potato, chard and artichokes, dressed with the roasting juices.

Vanilla rice pudding parfait with fruit INGREDIENTS: SERVES 8 Cooked vanilla rice pudding (450g) Whipping cream (1400ml) Large eggs (9) Castor sugar (190g) Icing sugar (360g) Passion fruit juice (320g) Digestive biscuit (100g) Fresh fruit Ice cream VANILLA RICE PUDDING PARFAIT (note you will need a mould 15cm x15cm) 350g rice pudding puree 9 egg yolks 190g sugar 550ml whipping cream 2 vanilla pods 100g digestive biscuit 20g butter Melt the butter gently and finely crush in the digestive biscuits. Add the butter and biscuit together and push into the mould ensuring it is lined with baking paper. Place in the freezer to set. Blend the cooked vanilla rice pudding with the fresh vanilla to make a puree. Whisk the egg yolks with an electric whisk until thick, then boil the sugar with a touch of water until it reaches 121°c. Pour the sugar syrup into the egg yolk and whisk until cold. Whip the cream until soft peaks form, then mix the egg with the rice pudding puree and gently fold in the whipped cream. Pour into the pre lined mould and freeze. ASSEMBLING THE DISH Remove the parfait from the freezer and de-mould. Cut the parfait into square portions and position on the plate. tsu celebrates 15 years this month with a special £15 menu, marking the restaurant’s rise and rise since its launch in Chelsea in 1998. The brainchild of Julian Metcalfe – of Pret A Manger fame – Itsu offers high quality sushi to take away now at lots of sites, and two restaurants, the original Chelsea one and the Notting Hill Gate one that opened as the chain’s new flagship three years ago. Which is where we are, for lunch, fi nding it busy with a smart crowd (Nicola Formby is there, alone, inspecting the conveyor).

It’s a stylish place, all bright colours and dim lighting, with a vast central conveyor snaking through the entire room. We sit in a booth at the back, more private than sitting at the bar – but offering just as easy access to the revolving counter with its endless stream of tiny plates. From the kitchen, we order miso and chicken and coconut soups, plus crispy chilli squid, soft shell crab tempura, warm edamame and a mixed plate of salmon and tuna sashimi, all of it flawless. From the (surprisingly fast) moving conveyor we just keep grabbing things, greedily.

Best of all was the eel teriyaki sushi, sweet and salty, and the hoisin duck crystal roll. We had crab California maki, Vietnamese chilli prawn and crab crystal roll, while the ‘not too spicy broccoli’ was truly not too spicy, accompanied by a tasty spicy(ish) sauce (though it seemed a bit strange as a cold dish and we would have preferred it hot). That was, though, our only complaint and we finished without taking any puddings from the conveyor (there’s something slightly off-putting about seeing your creme brulee circling the room next to a beef salad). Still, we love Itsu and will always be back. 65

T

he Royal Garden Hotel’s Park Terrace restaurant may be less exotic than its upstairs neighbour, Min Jiang, but it offers a different type of experience altogether. This international hotel has a variety of guests to cater for, and in addition to a global audience there’s also the Kensington granny. On our Sunday lunch visit there were several elderly ladies in glamorous dress, pearls and fi nery, drinking cocktails and enjoying views of Kensington Palace and suggesting that nothing has changed in this part of town for decades. Which isn’t at all to say that the menu’s dated. At £26 for three courses, it’s a traditional lunch with

contemporary notes, served in a calm, semi-formal setting. To start, options included cock-aleekie soup, though we had the less traditional grilled halloumi with watermelon, mint and green bean salad and spicy squid salad with chorizo, rocket and balsamic dressing, both of them good and full of flavour, though let down by awkward-shaped plates (what’s wrong with a traditional round plate? Squid came on a small rectangular plate, while halloumi was in a small bowl with an outsize rim). For mains, a roast sirloin of beef was wheeled around on a highly polished silver trolley and carved at the table, while a pan-seared duo of fi sh with sweet potato mash and spinach was

tasty, consisting of sea bass and sole. Puddings included plum crumble, coconut panna cotta and chocolate fudge cake, all of them sweet and satisfying. There’s an extensive children’s menu too, all of it named for Disney characters (Bugs Bunny pizza, Donald Duck cheeseburger, Scooby Doo spaghetti, etc) though you wouldn’t know it to see the actual dishes, which are so generous and served on such large plates that they’re not quite as child-oriented as you’d expect. As lunch rolls into afternoon tea, a pianist starts tinkling the ivories and tables fill with cake stands, cucumber sandwiches and fondant fancies. This is a comfortingly old-fashioned place.

H

ear mention of Lebanon and you may think of clubs, bars and restaurants in the capital, Beirut. Or perhaps you picture Mediterranean beaches towered over by ancient ruins. Skiing may also come to mind, and looming behind it all you may think of buildings reduced to rubble from the civil war that gripped the country from 1975 to 1990. The fact is that Lebanon is a melting pot of all the above, and much, much more. Thankfully times of turmoil are now fading into memory, and Beirut is booming – as Alain Feghaly, our tour guide, so aptly puts it; ‘buildings here are springing up like mushrooms.’ It’s a five-hour flight from London to Beirut and on arrival we are greeted in style. Forget a driver with your name on a placard, The Phoenicia greets its guests before they have a chance to mingle with the masses, welcoming them after luggage collection with a red carpet and their name displayed on a TV screen. The transfer (in a white Jaguar I might add) takes less than 15-minutes and within

an hour of landing on Lebanese soil we are lounging by the pool bar, Amethyste, nibbling on meze and sipping cocktails. The Phoenicia is not one of Alain’s ‘mushrooms’, rather it is a gem from Lebanon’s golden era, the swinging 60s, when the country became known as the ‘Switzerland of the Middle East’ and its capital the equivalent of Paris. Royalty, world leaders and celebrities (from Brigitte Bardot in the 60s to Angelina and Brad more recently) have graced the pillows of its 446 rooms, some of which have an opulent oriental feel, others have lighter French décor. Columns line Amethyste, softened by white linen drapes creating a colonialcum-Grecian feel. Super yachts line the marina below and a large projector screen hangs at one end of the swimming pool playing black-and-white classics. Our first day starts as all good holidays should, with an enormous buffet breakfast. The Phoenicia’s Mosaic Restaurant does a breakfast from heaven with different chefs serving different food behind different counters. There’s everything from typical

Lebanese pastries and breads, to eggs, fish, cheese, croissants, yoghurt and fresh fruit. Wondering if we’ll ever feel the twinge of hunger again, we follow Alain down the grand marble staircase and out into the city. Our first stop is the National Museum, a spacious and airy building with just enough artifacts (the first mention of Beirut is in 14th century BC – yes, that’s BC – and the museum has wonderful relics from the Bronze, Iron and Roman ages) to give you a feel for the city’s history without overload. Next we hit Downtown, grabbing a coffee in Martyrs’ Square, seeing the remains of a Roman bathhouse that was only discovered in 1968, and visiting the many churches and mosques which sit alongside one another reflecting the city’s multi-faith inhabitants. I am amazed how liberal people are – you see far more burqas and hijabs in London than Beirut. This is a Mediterranean city and most people wear shorts, skirts and airy clothes fitting to the warm climate. ‘Sometimes I think we Lebanese only live to eat!’ says Alain as we take a taxi to

Gemayzeh for lunch. Stopped in our tracks by an unusual traffic jam, we wait as a beaming bride stops in the middle of the road, bouquet in hand, and strikes a pose for her photographer using us as a nice backdrop. Tawlet is a restaurant with a difference; it is a non-profit organisation set up to bring people together (after years of conflict) with food and tradition. Literally, it means ‘table’ and the style is homely with an open kitchen mastered each day by one of 30 chefs from all over Lebanon. Our chef is from Tripoli, and for US $23 we pile high our plates with delicacies from the north including tabbouleh, baba ganoush and kibbeh (pounded raw lamb). Stomachs full once again, we return to the hotel for spa treatments. The ILA treatments are especially good and I opt for the Manipura Massage which involves 90-minutes of blissful scrubbing, massaging and poulticing. Relaxed and fully in the swing of things we head down to the marina for a drink before dinner at the hotel’s 11th floor French restaurant, Eau De Vie. ‘On a clear day you have eye contact,’ says

Alain as we set off up the coast the next morning. ‘You can see Byblos from Beirut’. It is 37 km to Byblos, but we stop off en-route at Jeita Grotto, a breath-taking pair of limestone caves. The upper cave is home to the world’s largest stalactite, and the lower – inhabited since prehistoric times – bears an uncanny resemblance to the entrance to Hades. You even have to take a boat, although our vessel is steered Tony who, I must admit, isn’t quite as formidable as Charon. Byblos is one of the oldest constantly inhabited cities in the world – dating back to the Neolithic period in 5250BC, it makes the Romans seem modern. Originally a fishing village, the Phoenicians arrived in 4,000 BC, using their time in Byblos to come up with the alphabet. Lebanon’s geographic position means that since time immemorial it has served as a gateway to the Mediterranean from the east, and to Asia from the west. Other big names who inhabited Byblos were the Babylonians, the Persians, Alexander the Great and the Romans who brought Christianity with them.

To compliment culture with glamour, Eddé Sands, Lebanon’s most fashionable beach – ‘where people behave like peacocks’, says Alain – sits alongside Byblos’ ancient ruins. We have lunch overlooking the harbour before heading back to the hotel. After all, The Phoenicia is a landmark in its own right; locals and foreigners alike come to soak up the atmosphere, perhaps taking afternoon tea, sipping local beer or wine by the pool, or dining in one of the four restaurants which range from Lebanese to Italian, French and Asian. Room with a Absolutely goes globe-trotting to round up three of the best hotels with wow factor vistas HOTEL CIPRIANI, ITALY When booking a room at the Hotel Cipriani you can choose either a pool, garden or lagoon view – that is, unless you opt for the Palladio Suite, which has a wall of windows framing 180-degree panoramic views across the lagoon. Known as the ‘glass capsule’, this spacious suite has two bathrooms, a living room, dining room (where guests can host butler-serviced dinner parties) and a large terrace with a heated plunge pool and jacuzzi. The interiors are inspired by 18th century Venice with murals, marble floors and pillars; and there’s even a private garden and dock from where you can be whisked across to St Mark’s by boat. Once in town, why not go from one boat to another and take a gondola ride through the canals to admire the colourful houses and humpback bridges. SHEEN FALLS LODGE, IRELAND Southern Ireland is home to some extraordinarily spectacular scenery; Kenmare, in particular, offers breathtaking vistas at every turn. Sheen Falls Lodge, take a trip to the spa for a Yon-Ka facial, or do a circuit of the jacuzzi, steam room, sauna and indoor heated pool. The stables were undergoing refurbishment when we visited, but the hotel recommended the Eclipse Centre in nearby Blackwater Bridge, and an enjoyable afternoon was spent trekking through the rugged countryside on horseback (eclipseireland.com). Dining at the lodge is second to none, but before your meal pop down to the cellar for a tour of the extensive wine collection. Overlooking the falls, Le Cascade is the perfect place to unwind and enjoy a delicious meal by candlelight – pheasant breast en paupiette with sea buckthorn sauce, anyone? Packie’s restaurant in Kenmare is also a five-minute taxi ride away and is a brilliant alternative if you want to venture into the local village for a more casual affair. VIVANTA BY TAJ, INDIA It’s not often you find a hotel with a threetone water vista: from infinity pool, to river and out to the deep blue sea, the only thing interrupting the view at Vivanta by Taj are palm trees laden with coconuts. Houseboats, backwaters and sunsets come to mind when you hear mention of Kerala, but word has spread, the tourists have flooded in, and few secluded spots remain. Thankfully, one of these idylls is Bekal, in Northern Kerala. Home to small villages, empty beaches and ancient forts, as of last year ‘secluded’ doesn’t mean slumming it as a new Vivanta by Taj came to town. Featherdown Farm at Canfields THE TENT

THE IDEA Escaping to the country to camp in a farmyard for an idyllic weekend isn’t as simple as it sounds. You can’t just pitch your tent in a field – and your average campsite offers little by way of luxury. Not to mention the packing of endless bits of crucial kit before embarking on the dreaded Friday afternoon urban exodus, only to arrive late, tired and in no mood to pitch a tent. Featherdown Farms have the solution. Happily, at Featherdown, you arrive at a working farm to stay in a spacious, stylish and fully equipped tent in the middle of a field, close enough to sheep, chickens and cows to feel like you’re in a real rural environment, but far enough to not have any actual animals bother you.

The Featherdown tent is nothing like the tent you are storing in your loft. It’s a proper canvas house with real wooden furniture (in this case, stylish Ercol chairs), a woodburning stove, separate bedrooms with comfortable beds, a large dining table, a sink with running (cold) water and – joy of joys – a flushing loo. There’s a large coolbox for food and the kitchen is stocked with everything you need. Outside, there’s a picnic table and a barbecue and (optionally) your own chicken coop, housing two birds which might each lay an egg a day. At Canfields there are six tents, spaced far enough apart for privacy, yet close enough for all the children to make friends.

WHAT TO DO The first thing to do is to get the stove going. Making coffee in the morning may take a while but once you’ve got the fire going, you learn quickly that you should always have a pot of water warming for washing up later. If it’s chilly, not letting the fire go out will keep you fairly busy all day. Checking to see if the chickens have laid any eggs yet is a job which children embrace with enormous enthusiasm. Ours checked on average every ten minutes. Once the work is done and the

eggs eaten, you can tour the farm. Canfields is a small organic farm run by a very friendly family. Children can pet the lambs and explore the fields independently while adults relax. In the evening, with the campfire lit, it truly is a magical place.

GETTING THERE There are more than 30 Featherdown sites in the UK, and Canfields in West Sussex is just over an hour’s drive from west London. Weekend bookings run from 4pm on Friday to 10.30am on Monday.

Absolutely meets furniture designer Bethan Gray as she prepares for an exhibition of her work at Great Western Studios this month

E

ven if you haven’t heard of Bethan Gray, you’ve probably seen or even sat on something she’s designed. Snapped up as a graduate after winning a New Designers Award in 1998, she spent a decade with Habitat, becoming head of furniture design. And then her Noah range for John Lewis became a best-seller. Now she works independently from a studio at Great Western Studios, where this month she and her own brand G&T are the focus of their Inside Design season. The world of furniture design might be mostly male, but Bethan Gray doesn’t have any theories about why, though she says it’s not that way in college. And she notes two female inspirations, French architect Charlotte

Perriand and Irish designer Eileen Grey, plus the contemporary Spanish designer Patricia Urquiola. Grey’s work trades on her own name, established over a decade at Habitat under Tom Dixon, whose emphasis on named designers marked a change in approach for the store. It’s easy to see why Gray’s sleek, stylish designs are successful, and she describes her own work confidently. ‘My style is contemporary but warm. The warmth comes from the use of natural materials like wood and leather but also through small intriguing details. I aim for a timeless appeal that will work in a contemporary as well as a classic environment, trying to create style in proportions as well as details.’ Longevity is important too, and she pictures her pieces being passed on to future generations. 79

Intriguing details include brogueing, inspired by the shoe process, in the form of a band of leather wrapped around a tabletop. ‘I didn’t know how brogue shoes were made so I worked with a specialist. It’s not handpunched, it’s laser-cut.’ The brogue table comes in various sizes and heights and it’s a considered, ‘high quality piece that people can use,’ in Gray’s words, and was nominated for last year’s Elle Decoration Awards. A new range of Brogue Tables with bright leathers are set to launch this month, with colours including fuschia, red and peach in addition to the initial green and white pieces.

One of the reasons Gray cites as the inspiration for leaving Habitat was a desire to work with different materials, especially marble and leather. ‘I’m obsessed with marble at the minute,’ she says. She is currently working on carved marble tables inspired by Italian and Swiss churches for the Inside Design exhibition. There will be brogueing in marble and a focus on highlighing how pieces are made by deconstructing them. ‘Many of my designs look simple but they’re not simple to make, so it’s showing that,’ explains Gray. So the tabletop will be separated from its legs, for instance, and we’ll be able to see how they attach. What about Gray’s own home? She has lived in west London for some years, moving from Chepstow Crescent to Basset Road and now Hammersmith Grove. Is she surrounded by her own work? ‘Yes,’ she admits. ‘There’s a lot of my own – I’m bringing some Habitat units from my home for the exhibition – and as well as the contemporary pieces, I have old things and vintage pieces from Golborne Road.’

LIGHT FANTASTIC Good lighting is key to making a space work. Lighting designer Sally Storey talks Absolutely through her latest project, a stylish house in Elgin Crescent W11

Why is lighting so important? Lighting is the most misunderstood of the interior design aspects. Good lighting is all about layering different effects, just as an interior designer plays with different finishes and fabrics. In an old house, it is important to be subtle and understated. Even simple finishes can become flattering if well lit and good lighting can make small spaces seem larger. There are so many tricks to play with, that lighting should not be forgotten.

Tell us about this house. What were its natural features and what were the problems? This is one of London’s classic terraced houses and luckily, most of the original features still remain – cornices, fi replaces, shutter boxes and original floorboards. With the lighting, we needed to make this a bright family home without losing its character and history. This has been successfully achieved with the

use of traditional chandeliers and lanterns that set the tone and discreet miniature downlights emphasising the artwork, flowers and books. For instance, it might seem as if the chandelier does all the work, but really it is dimmed and relies on the subtlety of the rest of the lighting. Even the simple plug-in square highlights add impact to the shutter boxes, creating another layer of light. 87

The basement kitchen clearly has little natural light. How did you overcome this to make it a welcoming space? The kitchen is a wonderful open plan space leading on to the garden. The cooking end is furthest away from the window, so it was important that our lighting could focus here during

because it is a soft, indirect light. Since the objects were not special and didn’t need their own lighting, we used the idea of back-lighting each shelf rather than front-lighting it. So the lighting not only provides a soft light for the space, similar to the lamp light, but it also works as a task light.

In an old house, it is important to be subtle and understated. Having lots of small pockets of light helps bring together a more interesting interior the day to provide a balance to the daylight at the other end. As night falls, the balance changes and the kitchen becomes softer: the island is lit underneath with LED Contour and appears to float, while the old cabinet is lit from within. All these effects help to soften the look at night. There’s a desk area with lighting built into shelves. What are the benefits of that? The lighting of the desk area works particularly well at night

Do you have a personal style when it comes to lighting? It is difficult to think of a personal style, as each project speaks to me in a different way and I react to the brief. But I understated lighting. I think having lots of small pockets of light helps bring together a more interesting interior and I would like to limit downlighting and ensure it is only used where it is required. I love it when people come and feel a space which seems wonderful without really knowing why.

Are there any golden rules? Think where you need the light. Do not feel obliged, with downlights, to follow a grid of light, but use the light to focus on surfaces. Do line them up with the elevation, not the plan. Do not rely only on downlights. Combine them with decorative wall lights, pendants and lamps. Also use uplights and concealed shelf lights. When large glass windows open onto a garden, consider that they will appear black at night and remember to light the garden to add to the feeling of space. And what are the most typical mistakes? A typical mistake is when people are trying out lighting effects, and they light too much with too many downlights all in a grid (often a developer’s solution) with no dimming control. I am not sure if this is worse than doing nothing and having just a simple central pendant. may as well come out and say it- I love Holland Park and Notting Hill! I have worked in the area for over ten years (including four at Carter Jonas), and I still feel as strongly that this is one of the best areas in Prime Central London as I did when I first came here. Why? Let’s start with Holland Park. MASTERCLASS: NEW TAX RULES FOR RESIDENTIAL PROPERTY From 1 April 2013 the government is introducing new legislation on residential property valued at £2 million held in corporate ownership, collective investment schemes or a partnership with a corporate partner (the government calls them ‘non natural persons’). This means that a ‘non natural person’ will have to pay a new Annual Residential Property Tax which is steeped according to the property value. Those worth £2-5 million will pay £15,000 leading up to £140,000 for properties over £20 million. There are many exemptions to this new annual tax, such as if a property is let out or bought to be redeveloped and sold. Additional changes are that residential property worth more than £2 million on 1st April 2013 bought by a ‘non natural person’ must pay Stamp Duty Land Tax at 15% and that any property at the same value owned by a ‘non natural person’ will now be liable to pay Capital Gains Tax (on the gain post 6th April 2013). Two pieces of recent research vividly illustrate the dilemma currently facing residents of Notting Hill. The first, by analysts Barbour ABI, reveals that people living in the borough of Kensington and Chelsea are amongst the most likely in the UK to carry out major home improvement projects. A study of planning applications nationwide found that in 2012 alone one in 20 households were planning works, a number that has been steadily increasing (and of course these figures do not include more minor work carried out without need of permission). The second study is a survey of 1,200 K&C residents which requested their views on basement extensions. Predictably more than half complained about levels of noise, dust, traffic and vibration. One in ten claimed to have experienced problems with damp, flooding and (shudder) vermin as a result of the work. Which is probably why neighbours of Adam Balon, co-founder of the Innocent smoothie empire, were so livid when they discovered he plans to excavate a huge basement beneath his £12.85m property in Notting Hill – just up the road from Claudia Schiffer’s place. The situation, of course, is a classic Catch 22. Everyone wants to be able to do what they want to their homes when they want; but nobody wants to live near someone who has called in the builders. Perhaps the most pragmatic view on the debate so far comes from Aisha Caan, the artist wife of former Dragon James. The couple hope to dig a basement beneath their west London home, with space for a studio and private art gallery to display Mrs Caan’s work. Their neighbours are outraged, and several have officially objected to the scheme - but Mrs Caan is gloriously unrepentant. Her view is that she and her husband have endured repeated, lengthy, noisy and disruptive building work in the houses around their Art Deco property. They have not, she says, raised a murmur of complaint. And now it is simply their turn to switch on the pneumatic drills. Underlying all this is the reason why home improvements are such big news right now. Partly it is because the sales market remains treacly slow and selling is a slow and hard business. And partly because, thanks to last spring’s Stamp Duty hike on homes worth £2m or more, it is significantly more economical to extend your existing home than it is to find another one. Whatever the neighbours might think.

TOP TIPS FOR THE GARDEN IN MAY May is a difficult month to predict weather wise. We can have warm summer sunshine one day, and then a penetrating frost a night or two later. With this unreliable weather, the main source of garden concern will always focus on the summer bedding that is always planted out at this time of year. This delicate selection of summer highlights needs careful introduction to the unpredictability of May, so a one or two precautions are needed. As May can be dry as a bone, it is wise to incorporate a water retaining gel in the compost of any containers that you plant up. This useful product ensures that when these plants are at their most vulnerable, they will not lack water. Mixed into the growing medium, it is the equivalent of adding small reservoirs to the planting to ensure they have enough to drink. In addition, ensure that all the compost in the planter is changed when replanted and drainage holes are clear. Some of the more tender plants like Ricinus communis ‘Impala’ require some careful weather watching before they are planted out. I’d like to start by saying that spring has finally sprung but sadly not so. With confusing weather conditions and “severe weather warnings”, it’s hardly surprising that we haven’t yet felt that warm glow in the air. The property market appears to be the same with stock levels stubbornly low and yet buyers galore who are desperate to move and experience the Notting Hill vibe. My most recent finding this month was a super cool new restaurant called The Rum Kitchen, All Saints Road. Well maybe not quite so new to Notting Hill but new to me. With its trendy vibe, Caribbean food and late opening, it’s a great place to find yourself hiding from the miserable weather outside. The “Rumbustion” cocktail is an excellent concoction to give you a false sense that you’re actually residing in a beach shack somewhere on the beautiful coast of Mauritius. Other news, well by the time this goes to print, we’ll have bagged ourselves another man – our new negotiator in Kensington Church Street office. Watch out for Ed Jephson to hit the ground running from our Chelsea office. He’s bright, hungry and ready for business. In the meantime, the clocks go forward on 31st March so these wonderfully light evenings are just around the corner.
