F

or many, February is the bleakest month. We’re several months into winter and it feels as if there’s no respite in sight. All the dark mornings and afternoons, the relentless chill, the cruel grey skies. Any enthusiasm we felt for our winter wardrobes back in November has entirely evaporated. And to add insult to injury, it’s Valentine’s Day, a date that strikes fear into the heart of anyone single, even to those whose absence of coupledom feels fi ne on all the other 364 days of the year. Or should we make that 365? Because 2016 is a leap year, a confusing little quirk of time that makes the year feel a bit special. So let’s cling onto that – and in this February issue we are celebrating all the best things the month has to offer, such as Eddie Redmayne’s new fi lm The Danish Girl, which we

discuss with the actor himself, who despite all his Hollywood success turns out to be one of the most modest men in the business. With the Oscars coming up this month, our money's certainly on him. he Mayfair flat that was home to Jimi Hendrix during a pivotal period of his life will open permanently to the public on 10 February. Following a £2.4m two-year period of restoration, building and development, the upper floor rooms of 23 Brook Street are part of a unique new heritage site, celebrating the lives of two great musical figures separated by 240 years. Handel House at 25 Brook Street is the elegant Georgian townhouse where George Frideric Handel lived and worked for 36 years. He wrote many of his greatest works

there, including the Messiah, and died in his second-floor bedroom in 1759. At the heart of the Hendrix Flat is the main living room, painstakingly restored to how it would have been when Hendrix was in residence, and offering an insight into the domestic life of an American superstar musician at the height of his creative powers. Richard Young photographed David Bowie throughout his life. As his gallery hosts a tribute, Young shares his memories of the man who sold the world W o r d s p e a r l b oy d

R

ichard Young first met David Bowie as a teenager before he became famous. “In 1964 when I was 16, I used to hang out in the Bataclan Club on Princes Street near Oxford Circus, a very cool place to socialise in the day. Occasionally a guy called David Jones would come over and hang out. He was good pals with my old schoolmate Marc Bolan. Little did I know then who David would become.” Richard Young became a professional photographer in 1974 and began photographing David Bowie in 1976, covering countless international concerts, photocalls, premiere appearances and parties. Over the years Young captured Bowie both on and off stage, regularly crossing paths with each other on the London scene. “We always had a great relationship. He was always kind and friendly, and we loved to chat. I particularly remember when David met Iman. They would often hang out at San Lorenzo and at this point in time David was really getting into the art scene. I had photographed him with many women over the years, but I had never seen him as happy as he was with

Iman. This was a true love, and I have not seen that kind of passion between a couple since I photographed Elizabeth Taylor and Richard Burton in 1974. I find it interesting looking back at some of the photographs I have taken, every

now and again I find that I have captured some beautifully tender moments of such amazing icons. This kind of photography does not exist any more. Everything is controlled and hidden, as today’s major stars keep everything hidden behind closed doors.” “When David moved to New York I saw less of him, but when I used to cover The Tribeca Film Festivals for Vanity Fair in the noughties, we reconnected. My fondest memory was of getting into a deep conversation with him at the Tribeca party in 2004. Upon arrival he made a beeline for me, gave me a big hug and we got into a deep conversation about fashion and clothes, a shared passion. We were chatting for so long when out of the corner of my eye I could see Vanity Fair's editor, Graydon Carter, looking at us, very irritated that David was spending so much time with the me and had not yet spoken to him. I said to David: “You’d better go and say hello to Graydon.” I never got invited back to the Tribeca Film Festival ever again. Shooting Star Norman Parkinson’s seminal fashion photography is the subject of this month’s Elegance in Vogue exhibition Wo r d s A n d r e w Z u c c a l a

oinciding with The National Portrait Gallery’s highly anticipated exhibition Vogue 100: A Century in Style, the Eleven Fine Art gallery will be showcasing works from influential fashion photographer Norman Parkinson. Focusing on his time with Vogue, this show will celebrate the countless ways he helped transform fashion photography and the fashion industry itself throughout his career that spanned over five decades. Spending most of his working life with Vogue, Parkinson’s photographs amused, inspired and wooed worldwide audiences making him one of the most prominent fashion photographers of the 20th century. He is best known for taking portrait and fashion photography out of its traditionally rigid and formal setting by bringing a fresh and relaxed elegance into his images. He achieved this by injecting his own infectiously eccentric and charming personality into every shot. Those who he photographed couldn’t help but feel at ease in front of his camera. His impulsive and unstructured style meant that sometimes not even Parkinson

the 20th century, serving as a reflection of the great societal changes that took place during Parkinson’s professional life. Furthermore, his work acts as a unique record of the evolution of fashion design, photography and modeling from the 1940s up until 1990 when he died on the set of his last fashion shoot, a commission

REDMAYNE Just when Eddie Redmayne’s star couldn’t burn any brighter, he aces another incredible performance in The Danish Girl. However, the London boy remains his own harshest critic Wo r d s K a r e n A n n e O v e r t o n

ne would expect Hollywood superstar Eddie Redmayne to be somewhat smug and brimming with confidence, considering his phenomenal success of late: an Oscar win for his scintillating portrayal of Stephen Hawking in The Theory of Everything; the stunning reviews for his latest role in The Danish Girl (for which he is hotly tipped to win a second statuette); and his upcoming turn in the Harry Potter spin-off Fantastic Beasts and Where to Find Them. But far from blowing his own trumpet, the Londoner is not only incredibly humble, but also, rather hard on himself. "I have to watch my films more than once because always the first time, I'm like 'aaahhhhhh, there I am'...and you see things that you maybe you're not happy with," he says. "I'm always self-critical, it's difficult to have a sense of objectivity with the first watch. You need to see it again to get over that." These traits are what sets Redmayne apart from his peers. He is the quintessential British gentleman: polite, softly spoken and preferring to let the

From his first major movie role as Colin Clarke in My Week With Marilyn, in which the young and naïve film assistant becomes a confidante to the blonde bombshell during the making of 1957 The Prince and the Showgirl to the brazen revolutionary Marius Pontmercy in the film adaptation of Les Miserables, Redmayne has rarely put a foot wrong. Despite his success, he insists he still doesn’t get the pick of roles in Hollywood. “Let's just say, I am not in that league, or anywhere close. I'm not Brad Pitt, I'm not Will Smith, I get no choice, and nothing has really changed. It's about what scripts come my way and if you're lucky enough that they feel right, then you go with it.” All that is set to change though, with his stunning turn in The Danish Girl which tells the true story of Lili Elbe (born Einar Wegener) a Danish painter who was born male and became the first person ever to undergo gender reassignment surgery. The chance to play such an incredible character is a dream for any actor, but it was particularly special for Redmayne who believed his ‘once in a lifetime role had already come along. “I genuinely believed Theory of Everything

was it for me, nothing could ever come close. And then I get the opportunity to play a pioneer, another, someone just as extraordinary as Stephen Hawking. They’ve both been wonderful gifts I could never have expected and I'm so glad that they have been a part of my life.” Set in the blue-grey wonderland of 1920s Copenhagen, The Danish Girl is a sumptuous visual feast – from the sweeping shots of the ballet costume department to the gorgeous chiffon dresses and velvet hats worn by Swedish rising star Alicia Vikander who plays Gerda, Lili’s wife. The combination of raw emotion and heady, 20s glamour is simply spellbinding. It is also a love story, albeit an unusual one, between Lili and Gerda, and deals with the emotional implications of a married man realising he identifies more with being a woman, especially in a time when such a concept was unheard of. Ultimately the

message is that love transcends genders and even in our current climate where transgender people are widely accepted, it is still a courageous undertaking. Vikander, too, has been highly praised for her performance as the enduring and compassionate wife by critics and in particular her co-star. “Alicia is phenomenal. She is an eruption of talent. She is absolutely extraordinary and has such a heart and a strength and that was so evident from the first meeting,” enthuses Redmayne, “I remember we read one of our first scenes together, I was behind the camera and Alicia read and usually there's a snap of 'cut', but there was simply silence. And I turn around and Tom is in tears. He was so emotional because he, we, were astounded by her strength and purpose.” Next year will see Redmayne play Newt Scamander in the film adaptation of

to work as an actor, NOT TO WIN an Oscar. IT'S MORE than I can comprehend sometimes JK Rowling’s Magical Beasts and Where to Find Them and if there is anything that could tip Redmayne into megastardom it is certainly the lucrative world of Harry Potter. But even in that case, Redmayne would surely remain down to earth. After all his success he chooses to reside in London where he grew up, rather than relocating to Los Angeles. He has often spoken of his great love for the capital and after his stint as a Burberry model he is literally the Brit poster boy. But when asked if he ever imagined scaling such dizzy heights he is typically low key. “My dream was to get work as an actor, not to win an Oscar but the fact I've managed to achieve both, and the get the opportunity to play people like Lili and Stephen, it's more than I can comprehend sometimes. The dream was just to work and make a living.” With the Oscars on the horizon, the release of Magical Beasts and the recent announcement that he and wife of one year Hannah Bagshawe are expecting their first child, 2016 looks set to be another incredible year for Hollywood’s humblest star. u The Danish Girl is on general release

s Charles I was executed in Whitehall, a 15 yearold boy stood in the crowd cheering. That boy was Samuel Pepys, writer of one of the most famous diaries in the world, with the possible exception of Bridget Jones. Thanks to Pepys, we have a clear insight into not only the defining historical events of the 17th century (including the Plague, the Great Fire of London and the second Anglo-Dutch war, during which enemy warships actually managed to sail up the Thames) but also the everyday minutiae of London life. What Samuel Pepys: Plague, Fire and Revolution at the National Maritime Museum in Greenwich, seeks to do is flesh out the years surrounding the nine recorded in the famous diary’s pages, which ran from 1660 to 1669. The exhibition comprises over 150 different artifacts and displays that

ARTS & CULTURE / EXHIBITION range from fabulous portraits from the court (and courtships) of Charles II to Wenceslaus Hollar’s panoramic views of London before and after the Great Fire. In fact, one of the only things not to be found in this exhibition is the diary itself, which can never be removed from Magdalene College, Cambridge. One of the first and most poignant exhibits is the bloodstained waistcoat worn by Charles I at his execution in 1649. By the time his son Charles II returned from exile in the Netherlands in 1660 Pepys was at his side on the ship, a beautifully intricate model of which is on display. Pepys went on to enjoy the favour of the king whose throne he had helped to restore for much of his career. The first reward given was a job at the Naval Board where he was promoted to First Secretary to the Admiralty. Pepys’ love of theatre and music is represented by a display case full of the instruments he played and he can be seen holding his own setting for a song from William Davenant’s opera The Siege of Rhodes in John Hayls’ famous portrait. Peter Lely’s provocative rendering of a naked Nell Gwynne and King Charles’ love letters to his French mistress, Louise de Kéroualle, (nicknamed ‘chubs’) all speak to the libertine nature of court life and also to Pepys’ own vices. In the background of all of this is the ever-present reality of death, whether the Plague of 1665 that killed over 100,000 people, brought to grisly life by a parish

church’s Bill of Mortality (a record of weekly deaths) or the clever audio-visual display representing the Great Fire that destroyed 85 per cent of the city of London. Pepys fell out of favour in the turbulent 1670s. He was even imprisoned for a time in the Tower of London for allegedly passing on naval secrets to Louis XIV of France. Though cleared, Pepys had become disillusioned and weary of politics; when William and Mary replaced Charles’s brother James II in the socalled Glorious Revolution he retired to the village of Clapham, where he amassed an enormous library, which he ordered, bizarrely, not according to subject or even alphabetically, but according to size. After his death in 1703, Pepys seemed destined to become an obscure footnote in history, until his diaries were translated from their original shorthand in 1825. The rest is… well, you know. Samuel Pepys: Plague, Fire and Revolution succeeds brilliantly in painting a vivid picture of London during one of its most chaotic periods by using Pepys’ life as kind of lens through which to view it. We are able to get to know London through getting to know him and as a result, the exhibition becomes almost as personal and informative as his compelling and unfettered diaries. ◆ The exhibition closes on 28 March National Maritime Museum, SE10 rmg.co.uk

here is probably nothing more pertinent than the gift of carefully selected scent on St Valentine’s Day. The whole notion of fragrance is intertwined with love and passion. As people become more adventurous and prepared to try new and varied fragrances, it can be difficult to know where to begin. This month we look at some of the world’s most romantic perfumes, those that tell tales of loves won and lost. Probably the most romantic fragrance of all is Creed’s Fleurissimo, which was commissioned by a prince for his bride, a Hollywood movie star, for their wedding day in 1956. Prince Rainier wanted Grace Kelly, soon to become Her Serene Highness Princess Grace of Monaco, to smell like the bouquet which she carried down the aisle. The scent is a joyous mix of tuberose, violet, Florentine iris and Bulgarian rose. Inspired by a more recent personal love story, the unisex fragrances of Jul et Mad olfactorily chart the romance of

their founders, from Julien Blanchard and Madalina Stoïca-Blanchard’s first chance encounter on the streets of Paris (Terrasse à St Germain), the moment they realised they were in love (Amour de Palazzo), a tryst in New York (Stilettoes on Lex) to their eventual wedding in Aix-en-Provence (Aqua Sextius). Le Parfum de Thérèse from Editions de Parfums Frédéric Malle, was composed in the 1950s by Edmond Roudnitska, one of the most acclaimed perfumers of the 20th century, for his wife. It was never commercially released and Thérèse was the only person allowed to wear it until its release to the public in 2000. This masterpiece is an essential testimony to the elegance of a bygone era: tangerine and melon top notes, roses with rich prune at the core and cedar wood, vetiver and leather supplying the distinctive base.

N’Aimez Que Moi was created in 1916 by Earnest Daltrof for Caron. Translating as Love Only Me, it quickly became the love token that young French soldiers going off to fight gave their sweethearts. Caron still makes a version of the scent today – now called Aimez-Moi, it is a fresh blend of roses, violets and lilac on a soft base of iris, vanilla, musk and moss. Also from Caron and by Earnest Daltrof, but a much more salacious scent, Bain de Champagne was created in 1923 for an American millionaire who wanted something to replace his and his lover’s champagne baths during the prohibition period. Benzoin, incense and opponox are elegantly swirled in lilac, rose and violet on a foam of vanilla and musk. In 1943 the name was changed to Royal Bain de Champagne (and again in 1993 to Royal Bain de Caron due to the litigious nature of the Comité Interprofessionnel du vin de Champagne). Whatever the name, it is one of the few fragrances made to be used in the bath. From bath to bed, Dans Mon Lit, another from the Frédéric Malle stable, is designed to be sprayed in and on one’s bed. Using breakthrough technology, it uses Rose Water Essential, a newly discovered liquid which contains all the olfactory molecules of rose petals, and the result is, quite literally, a bed of roses. ◆

Master chocolatier Carlo Rotta spills the beans on Italian chocolate

ABS: What’s your favourite product from your range? CR: The Gianduiotto, with its unique shape of an overturned boat. It reminds me of the Italian Christmas and Easter, when we eat lots of them. But I also love the whole hazelnut covered in dark chocolate. The taste of the Piedmontese hazelnut is equal to none.

ABSOLUTELY: What makes your chocolate special? CARLO ROTTA: Carlo Rotta chocolate is produced in Turin, the capital of Piedmont in the northwest of Italy, where the best hazelnuts grow. In 1865, a Turin-based chocolatier had the brilliant idea to combine cocoa with the local hazelnut paste. The successful result was named after the Piedmontese carnival mask, ‘gianduia’. Our chocolate is special because rather than pure cocoa-based chocolate, it is gianduia. Our products are the traditional delicacies enjoyed by Italians for more than a century. They have picturesque names, such as Gianduiotto (‘little gianduia’) o Cremino (‘creamy gianduia’). ABS: How did you get into chocolate? CR: I have travelled extensively and on my journeys I noticed that among non-Italians, few people know what gianduia is. Of course, they know Nutella, but the general trend that sees people becoming more health-conscious has made them realise that there could be better products. So, in

ABS: What’s your best-seller? CR: British people seem not to particularly appreciate chocolate with hazelnut: they stick to dark chocolate. But surprisingly, they love pistachio in any form. So we created a Pistachio Gianduiotto and a Pistachio spread. At present, these products are our best-sellers.

ABS: And finally, what do you recommend as a valentine’s gift? CR: I suggest one of our elegant gift boxes, containing our Gianduiotti in three different flavours: hazelnut, coffee and pistachio... a feast for the most sophisticated palates.

CR: After several tests, we created a balanced cocoa blend: cocoa from Ghana, slightly acidic, is combined with cocoa from Ecuador, more delicate and aromatic. The other fundamental ingredient for gianduia is the hazelnut. We use only the Piendmontese one, which has to be certified, making it possible to trace the exact plot of land where the nuts has been grown and harvested. The almonds and pistachios are Sicilian, the highest quality on the market. ABS: How much chocolate do you eat? CR: I eat chocolate almost every day. I try

I n g r e d i e nt s Winter Pickles: • 200ml apple cider vinegar • 400ml water • 100g sugar • 2 tablespoons salt • 2 cloves garlic, smashed • 5 sprigs thyme • 1 tablespoon black peppercorns • 1/2 small cauliflower, cut into small florets) • 1 large beetroot, peeled, halved and sliced • 1 turnip, peeled, halved and sliced Falafel: 300g dried chickpeas • 1/4 small bunch fresh coriander • 1/4 small bunch fresh parsley • 1/2 tablespoon ground coriander • 1/2 tablespoon ground cumin • 1 teaspoon bicarbonate of soda • 1 small chilli, finely chopped • 1/2 small onion, finely chopped • 1/2 clove garlic, finely chopped • 75g hazelnuts, roasted and roughly chopped • 1 teaspoon sea salt Tahini Yoghurt: 150g natural yogurt • 3 tbsp tahini • 1 lemon, juice • 1/4 garlic clove, crushed • 1/2 tablespoon ground cumin • 1 teaspoon bicarbonate of soda • 1 small chilli, finely chopped • 1/2 small onion, finely chopped • 1/2 clove garlic, finely chopped • 75g hazelnuts, roasted and roughly chopped • 1 teaspoon sea salt Soak the chickpeas in 1 litre of cold water for 24 hours. Drain and rinse well.

To Serve: • 4 Turkish pita breads, as fresh as possible • 1 bunch watercress M e th o D 1 In a food processor, blitz chickpeas with a pinch of salt until they are the consistency of coarse, sticky breadcrumbs. Add all other ingredients (except for bicarbonate of soda and nuts) and whiz until they orm a bright green paste which still has a fine crumb - don't overwhizz. Refrigerate for half an hour before frying. 2 When ready to cook, heat oil to 180°C. 3 Add the bicarbonate of soda and nuts plus up to about 40mls cold water to the falafel mix. 4 Shape falafel into little patties and fry for 6-7 minutes until a deep crunchy brown. 5 Cut warm flatbreads, stuff them with the yoghurt, falafels, pickles and cress. ◆

FOOD & DRINK / RECIPES WARM CHOCOLATE & TURKISH DELIGHT BROWNIE with salted butterscotch & vanilla ice cream Ser ves 4 -6 I n g r e d i e nt s Brownie: • 200g butter, chopped • 200g dark chocolate, roughly chopped • 4 eggs • 250g caster sugar • 100g plain flour • 50g cocoa powder • 100g Turkish delight Butterscotch: 50g unsalted butter • 120g brown sugar • 150ml double cream • 1/2 teaspoon flaky sea salt, plus more to taste • 50g ginger nut biscuits M e th o d : For The Brownie: 1 Heat oven to 175°C and line a 24 x 20cm brownie tin with baking parchment. 2 Place the butter and chocolate in a double boiler and melt slowly. 3 Whisk the eggs and sugar together with an electric whisk until the mixture is pale and fluffy. Gently stir into the chocolate mixture and sift over the flour and cocoa and fold in. 3 Pour into the lined tin, poke the pieces of Turkish delight into the brownie and bake for 25-30 minutes. Cool slightly, then cut into squares.

CHICKEN & RICE PILAF STUFFED BUTTERNUT SQUASH with coconut & pomegranate Ser ves 12–14

Ingredients • ½ small onion, finely chopped • 250g organic chicken thigh, skin off, bone out, 1cm dice • 60ml olive oil • 75g butter • salt and pepper • 1/2 teaspoon allspice • 1/2 teaspoon cinnamon • 400g Basmati rice •650ml chicken stock, simmering • 75g Pomegranate seeds • 75g toasted coconut flakes • 75g toasted almonds • 2 tablespoons parsley, chopped • 2 tablespoons coriander, chopped To Serve: • Serve with a generous dollop of thick yoghurt M e th o D Squash: 1 Preheat the oven to 190°C. 2 Cut the squash in half, then scoop out the seeds with a spoon. Drizzle with the olive oil and chicken stock and season liberally with salt and pepper. Cover with

foil and bake for 30-50 minutes, depending on the size of your squash. Pilaf: 1 Sauté the onion in the oil and butter for a few minutes until softened, then add the chicken and cook on high for 2-3 minutes until the juices start to run out. Season with a little salt and pepper and the spices. Then add the rice and chicken stock. e live in a city fuelled by gin and prosecco. With temptation everywhere, the majority of us find ourselves finishing each stressful day with a glass of something intoxicating. Sometimes, however, you need to take a break and that’s why we love London’s very first dry bar, Redemption, recently moved from its Golborne Road spot to a new home in Chepstow Road. Here, absolutely everything is sans alcohol, gluten and meat. Sceptical? I was, too. But you won’t leave feeling deprived. With non-alcoholic cocktails such as the zingy apple mock-jito and sweet, earthy beetrootini to enjoy you’ll find yourself taking the time to actually taste what you’re drinking. Meanwhile, the food is on another level. We start with a platter of quinoa, avocado and enoki mushroom maki rolls. Nutty, creamy and, due to the cucumber, fresh, the starchy white sushi rice isn’t missed at all. For the main course we order grilled aubergine and baked pumpkin. The former comes covered in pomegranate seeds, pinenuts, micro basil and a generous dousing of tahini – a combination that is so comfortingly filling that I don't feel as though I am being too virtuous. My friend’s pumpkin feels more healthy, with avocado and cashew sauce used to complement the earthy taste. Finishing things up with a faux naughty dessert, a Madagascan vanilla and dark chocolate cashew and coconut cream cheesecake with hazelnut and medjool date base, we leave feeling very full but utterly angelic. ◆

The Ivy Kensington A W8 outpost for this London stalwart Wo r d s p e n d l e h a r t e

K

ensington High Street has never been a restaurant destination. Despite being a densely inhabited area full of residents who must like eating out, W8 has never spoiled them with multiple dining options. So when we visited the newly opened outpost of the fast expanding chain that the Ivy has become, we were expecting a quiet eaterie. We were wrong. A couple of weeks into its existence, this place is buzzing with a well-heeled crowd and looks convincingly as if it might have been here forever. Or since the 1920s, say. With its stylish brass light fittings, walls busy with pictures, marble floors and leather banquettes, it looks and feels like a Parisian brasserie. The all-day menu, the same as its Chelsea sister's, is an outsize single page featuring breakfast and tea as well as lunch and dinner; there are even

afternoon savouries ranging from crumpets with marmite to shepherd’s pie. For dinner, the options are diverse – you could have hamburger and chips, or a grilled lobster, or a duck curry. We start with battered wasabi prawns, which are crunchy and have a kick, and seared scallops with trufle creamed potato, which is luxurious and silky. Main courses are coconut duck curry with lemongrass, lime and chilli, which is deliciously aromatic, and a slow-roasted lamb shoulder with parmesan polenta, which is dreamily soft and fragrant. For pudding there’s a winning coconut pannacotta with chilli-infused shaved pineapple, not too sweet and full of tropical promise. The Ivy has found its spiritual home in Kensington.

hen designing a bedroom, it's easy to prioritise the final look over important factors like the use and functionality of this essential space. But according to Susan White, managing director of Iggi Interior Design, the bed is where the whole design should start. It is estimated that we spend a third of our lives in bed, so investing in the right one is paramount. “We all strive to have a decent night’s sleep and finding the perfect bed is imperative. You need to consider how much support you require from your mattress, which side you sleep on,

whether you read in bed, what style of bed you desire and your budget. You may find that you and your partner have different preferences when it comes to mattress support – and companies like Vispring offer split mattresses which provide differing levels of support. ” Second, think about how you use your bedroom and how long you spend in there. “Is it a retreat? Will a TV and surround sound system be required? Do you need to work in this area? Is getting ready the most important aspect? Do you have artwork that needs to be displayed?” asks Susan. “All these answers will help direct your furniture choice such as the inclusion of a dressing table for makeup application, a seating area and even the colour scheme.”

Another significant feature is storage space and how much of it you will need. Time and thought needs to be spent on the design of your wardrobes to ensure that they fit all your key necessities in one place and provide ease of access. “We even consider whether they need to be refrigerated to accommodate certain types of clothing, or cedar-lined to repel moths. It’s about form and function and the wardrobes being seamless, looking like they are part of the walls.” An additional consideration is lighting. “I’d recommend using a system which can zone the lighting at the touch of a button. You may even need a soft glow to guide you to the bathroom in the middle of the night.” Last but not least, Susan suggests that underfloor heating is a prerequisite of any modern bedroom - but don’t forget that all important finishing touch. “A silk carpet adds an elegant finish helping create a luxurious look and feeling underfoot.” ◆

Numbers Game Singapore maths has had amazing results in the Far East, and now it’s working its magic here Wo r d s A M a n d a C o n s ta n c e

icture two different maths lessons: one in the UK, one in Singapore. One is noisy, full of children working in small groups, folding paper and playing. The other is quiet, regimented, a teacher standing at the front of the classroom and children chanting times tables. The noisy class is in England and the regimented class is Singapore, right? Wrong, actually. It was Singapore that introduced innovative maths teaching methods a few decades ago while the UK was still staring at the blackboard. But with Singapore coming second for maths in the Organisation for Economic Co-operation and Development’s most recent Progamme for International Student Assessment tests and the UK a paltry 26th, we have taken note and Singapore maths is now all the rage among our primary and secondary schools. Last summer brought the first proof that these methods are working. The report – which looked at the impact of the Singapore method of teaching on five- and six-year-olds in 90 primary schools and 11 and 12-year-olds in 50 secondary schools – was carried out by UCL Institute of Education and Cambridge University and showed that children taught the Singaporean ‘maths mastery’ approach learn faster than their classmates and make, on average, an extra month's worth of progress in a calendar year. So what exactly is Singapore maths? It is a radically different approach from traditional UK teaching methods. Pupils are taught to master fewer mathematical concepts but in greater detail and they learn these concepts through a three-step learning process. In the first step, students will engage in hands-on learning experiences using objects such

Only then are students asked to solve mathematical problems in an abstract way by using numbers. Ling Yuan, head of maths at a school in Singapore, explains that there is a strong emphasis in Singapore maths “on gaining a good understanding of the basics before moving on. This provides a strong foundation,” she says. “Key to the programme is the insistence that children learn by sequence, first by manipulating objects in the real world, then by drawing pictorial representations before using the mathematical symbols. “The concrete, pictorial, abstract method is very powerful because it helps children to visualise number and proportion.” she says. “The children

form a mental picture and a deeper understanding using beans or pieces of pasta – then they might draw a box with green beans in it and for every 10 green beans you get a red one.” The simple task of folding paper can help children visualise division, she said, adding: “We don’t get our children to memorise times tables. We are not into rote learning.” The Department for Education introduced Singapore-style textbooks to 72 schools in England in January last year. And it’s funding the Maths Hubs programme, a network of 35 hubs created in the summer of 2014. The aims of the hubs is to bring together maths education professionals in a collaborative network to develop and spread best practice in teaching methods around the country. Hub schools have access to textbooks, receive extra teacher training and development and take part in exchanges with teachers from Shanghai. Each hub is led locally by an outstanding school or college. London Central and West, for example, is led by Fox Primary School in Notting Hill. Singapore maths is also revolutionising independent school teaching. Bernie Westacott, head of maths at Merchant Taylor’s Prep schools, says that after just a year of Singapore Maths, pupils are a year ahead. “Pupils focus intensely on a handful of ‘real maths’ topics, whereas in the UK the maths curriculum is a mile wide and an inch deep, making it difficult for students to master the most important skills. Rather than teaching pupils to memorise facts and routines, the focus is on maths concepts which are born out of practical experience.” “I have been teaching since 1973 and have never been happy with UK textbooks nor the way we have taught maths,” he says. “A few years ago I came across Singapore maths which seemed a perfect fit.” ◆

olidaying in the south of France is a standard British pastime. Every year we get into our cars and head south from Calais, lured by the promise of sun, seafood, sand and the Mediterranean. But there are downsides. The Cote d’Azur is a long drive and when you get there, it’s crowded. If you lay your towel on a beach at Nice, St Tropez or Menton, there’ll be someone else’s towel a few centimetres away. Not so on the islands of Noimoutier, Oleron or the Île de Ré. Still France, but less far south. Several hundred miles closer to home, the Vendee and the Charent Maritime have an Atlantic coastline beautiful enough to rival its southern sister, but easier to reach and less crowded. The area around

produces 10,000 tonnes OF OYSTERS EVERY YEAR

and local specialities include seasalt and oysters. Our road trip starts in Le Havre, after an implausibly comfortable overnight ferry from Portsmouth (spacious cabin, comfortable beds, even the breakfast is good) and a few hours’ drive takes us to the Island of Noirmoutier, famed for its salt, its wide beaches and its Mediterranean feel. Just 12 miles long and with a population of just 10,000 (rising to 100,000 in August) the island connects to the mainland via a bridge and its wide sandy beaches rival any of the world’s finest. Market shopping is an obligatory part of any French holiday. Our spoils from the daily market at Noirmoutier include Breton tops all round as well as kilos of seasalt and salted caramels plus delicious white peaches, fresh seafood, baguette and quiche, charcuterie and more. If we’d had any space left in our car, we’d have come home with furniture from the weekly brocante market too. And then of course there are the ecosystem and the Marennes basin,

La Rochelle is full of beautiful sandy beaches, delightful places to stay and wonderful things to eat. The most obvious destination is the beautiful Île de Ré, long a haunt of Parisians in August. It’s an island connected to the mainland by an impressive toll bridge; its towns and beaches are connected by a network of cycle paths. Distances are small, the landscape is flat, the narrow roads are clogged with cars in high season and bicycle hire shops are found everywhere, making two wheels by far the best mode of transport on the island. Beaches are of the dreamy, sandy variety

oysters. This region produces 10,000 tonnes of oysters every year, and those from the island of Oléron are the only French oysters to be awarded the Label Rouge for the ‘fine claire verte’ variety since 1989. The taste is a result of the exceptional cultivation in a unique

where the Seudre River meets the sea, producing a delicately perfumed oyster. Oleron is less well known than the Île de Ré, though larger and less crowed, is also the access point for Fort Boyarde, the location for the TV gameshow of the same name, a spooky looking abandoned military prison built originally as a fort in the middle of the sea. Now tourists are ferried to it for daytrips to admire its bizarre isolation. La Rochelle itself is a beautiful city, its old port, medieval towers and limestone buildings. Further south towards the seaside resort of Royan, we stay slightly inland in the grounds of a chateau at Les Castels’ Sequoia Parc, which has a vast pool complex with water slides, cycles for hire, good dining options and high class entertainments in the evenings from an energetic group of young actors. Aside from organic attractions such as beaches and shellfish, we make time to stop off at Futuroscope, France's first amusement park, which is so popular that half the population has visited since it opened in 1987. It's a surreal, futuristic world with rides including a 4-D cinema experience devised by Luc Besson and an award-winning Time Machine experience, all set in an environment that looks like something out of The Fifth Element. It's also a handy stop en route to the coast. SKI IN, SKI OUT How much more for a ski-in, ski-out chalet? Wo r d s N I G E L L E W I S

I

f you have ever been on a budget chalet holiday then you’ll appreciate the phrase ‘ski-in, ski-out’. Feeling very pleased that you had nailed a reasonablypriced week of skiing, you arrive at your destination only to find you are nowhere near a bubble or lift. At first the walk looks like a pleasant stroll. But in the mornings, laden with heavy skis, walking in leg-breaking boots and nursing a hangover from the previous evening’s toffee vodka-fuelled exertions, it’s like a polar trek. This may be fine when you’re in your 20s, but as most skiers get older and have a little more money in their pocket, they’re prepared to pay extra for a chalet that offers the opportunity to ski in and ski out. And so it is in the French, Swiss and Austrian Alpine ski property markets. Buyers with relatively deep pockets are prepared to go that extra £300,000 to £1 million for a ski-in, ski-out chalet. But finding the right one requires very detailed knowledge of each resort and it’s when a local estate agent is absolutely indispensable. Most ski resorts that are dominated by the chalet market (rather than flats and hotels) such

THE GREATEST PREMIUMS ARE PAID FOR THE CHALETS THAT ARE FAR ENOUGH UP THE MOUNTAIN TO OFFER EYE-CATCHING VIEWS ACROSS THE VALLEY as Meribel are often criss-crossed with small residential roads and peppered with hidden lifts and paths to the pistes. All of which makes property valuation very difficult, particularly in the Alps. For example, in the UK large houses in the leafiest streets with the best transport links and schools are usually the most expensive and sought after in our cities and towns. But not so in ski resorts. Size does matter but it’s more about the luxury extra such as sun balconies, indoor swimming pools, outdoor Jacuzzis and mountain views. But trumping all these qualities is the proximity to a ski lift. What’s the point of paying £3 million for a lovely chalet if you have to drive back down to the resort’s central lifts every morning? Or walk to a lift that gets you just a quarter

opened up investment opportunities for dollar and sterling buyers,” he says. “Val d’Isere has seen premium restaurants and boutiques open. Popular with the UK market, there is strong rental potential with yields of approximately 3.5% gross achievable for top chalets. The Chamonix Valley continues to see demand led recovery and prices are now at or around the pre-crisis peak.”

“The Austrian Alpine resort market has remained strong on the back of a vibrant local economy, which has generated house price growth nationally of 41% since 2008. “Austria continues to offer excellent value for money compared to the more established French and Swiss resorts. Committed investment in resort infrastructure and investor appetite means there is still room for upward price movement.”

SWITZERLAND of the way up the mountain? The greatest premiums are paid for the chalets that are far enough up the mountain to offer eye-catching views across the valley but from which you can ski out and straight on to a lift that whisks you up to the major runs. And ideally these chalets need to be further enough down the valley so you can ski back home directly in the evening from your après drinks in one of the midlevel sun terraces. There is a downside, though. Jeremy Rollason of Alpine Homes in Association with Savills, says the hunt for a home that’s got the ideal position can mean you end up with a chalet that’s hard to get to by car. “In fact, walking distance to the centre of a resort is considered to be equally important as ski-in, ski

out by the majority of buyers,” he says. “However, the attraction of skiing to and from your chalet is hard to resist and values can be 10-20% higher for this privilege.” Roddy Arris of agent Knight Frank, agrees. “In most ski resorts it’s all about altitude within the town and this, to a certain extent is about ski in, ski out,” he says. But which country or resort should you buy in at the moment? Jeremy Rollason reviews the main skiing markets.

Skiing however, is not really my thing and that’s why Gstaad is so perfect. You see, this is the ski village where there is no pressure

to ski at all. People-watching and shopping are full time activities here so while my friends hit the slopes I can wrap myself up in layers of fur, drink Gluhwein and eat fondue until I’m sick. Thankfully this set up works for everyone as the pistes are left unnaturally, but rather delightfully, quiet for my friends. Admittedly, the journey from London to Gstaad sounds like a faff – it requires at least one plane and one train – but when done with the self-proclaimed “skier’s airline” SWISS

it's relatively painless with enough baggage allowance for all of your skiing paraphernalia. Meanwhile, the ornate Goldenpass train winds its way around the mountains for two hours so the journey is more than enjoyable. Before long you’re the village known to be playground for the super-rich and famous – for those with refined but extravagant tastes – for the likes of Elizabeth Taylor, Grace Kelly and Valentino. As one of only four five-star century-old hotels, Le Grand Bellevue is the place to stay if you want to experience the luxurious side of Switzerland. New figures reveal how stamp duty changes have hit sales of premium homes

he Treasury’s overhaul of the stamp duty system at the end of 2014 contributed to sales of ‘premium London homes’ collapsing by nearly two thirds last year, according to estate agent Douglas & Gordon. New figures released by D&G reveal sales volumes of houses and flats in London selling for £2m and above have declined by 64% in the last nine months of 2015. t is often said that London is not a city, but a collection of villages in which we live, sleep and eat but rarely venture out of except to work and be entertained. There are over 50 of them and they vary, ranging from a few streets (such as Barnes village) to much larger areas (like Hampstead village). And while size is easy to measure, provenance is harder to tie down. Many of London’s villages have been created both in antiquity and more recently by those hoping to make money from the ‘village’ moniker. “Villages are often created by the freehold owners of the buildings in the area with a view to raise

the area’s profile because they have always been very popular with potential buyers,” says agent Christopher Sellwood, Central North Director of Foxtons. “A sense of community and residential atmosphere, typical for a smaller town or a village, are sought-after by many, as well as access to a wide range of amenities right on the doorstep. “Previously, buyers would move out of London to fulfil that criteria, but with the increasing pace of life and longer working hours, ‘village’ areas in central London are a more desirable option for many families and professionals. demand, there is a premium on accommodation which can be up to 20-25%.” New homes developers have cottoned on to this recently. For example, when developers wanted to give the myriad apartment blocks built within the Olympic site some appeal, it therefore became a village. And Berkeley Homes is currently building the latest – what it calls Kidbrooke Village, one of four new residential districts in Greenwich. There’s also New River Village, a new residential area being built in Hornsey. But some villages have more solid claims to the label. Battersea, for example, was a village from at least 1067 until the mid-10th

century when the railway arrived and the area expanded. In North London there’s also originals such as Highgate and Hampstead. Others are new villages created by communities. Zena Alkayat, author of the guidebook London Villages: Explore the City’s Best Local Neighbourhoods, believes it’s about the community taking ownership of its area, working together to provide markets, events, shops and public spaces that best serve the people living there. “When that happens, you get a really appealing, fun and interesting place,” she recently told City AM. An interesting creation is Connaught Village in Bayswater, an area that clearly fascinates agent
