y business experience is somewhat limited. When I say limited, I mean non-existent. I remember work experience placements where I was stuck in the corner and probably didn't say a word to anyone for a week (and most didn't even realise I was there). I didn't exactly take the bull by the horns. Which is why the story of Dr Leah Totton so impresses me. Yes, she won The Apprentice, but she entered the show not for fame and fortune, but because she wanted to tap into the rather vast business mind of Lord Alan Sugar. Today, she has three skin clinics, including one right here in Loughton, so I enjoyed interviewing her to find out how she did it. Talking of taking a business punt, we also interview Tony Long this month, the man behind Il Vino in Buckhurst Hill. This was a shop launched in lockdown, which is rather brave for starters, but he had a vision and that is seemingly paying off handsomely as Il Vino approaches its first birthday. We will raise a glass to that. The biggest punt I ever took was getting married, and nine years later that's going well, so there's something!

s the days get shorter, the weather colder and we approach party season, I have just the place to tell you about: family-run Seasons Bar in Woodford. It is situated on Woodford Broadway just 50 yards from Woodford Underground Station on the Central Line. Open seven days a week and Woodford Green’s only bar, you must pop in for a tipple this November. They serve authentic Italian pizza to eat in the bar and paired with a cold beer, great wine or one of their fantastic cocktails, you can’t really go too far wrong. I am always looking for live music hubs in the area, and this is one of the best to catch some fantastic talent each and every weekend. Live singers and DJs on both Friday and Saturday evenings, special public events each month and some of the best tribute acts in the UK – if you are a George Michael fan, look out for their amazing tribute night as it will undoubtedly blow you away. Christine, Matt and John have worked hard over the years to make sure the bar attracts a really great mix of regulars, appealing to the 25 and over crowd, but everyone is welcomed with open arms. Since lockdown they have worked tirelessly to create a beautiful new secret
garden space with its own bar area, a great nook for private events such as hen parties, baby showers and birthdays. It is worth noting that Seasons now have four different event spaces catering for parties from 12 to 130 with event planning handled in-house to leave you well looked after and able to enjoy your event to the fullest. The upstairs bar is where live singers perform every week, if you have ever passed by on a Friday or Saturday evening you are sure to have witnessed the smiling faces, dancing and singing that occurs weekly – it is just a great place to let your hair down with friends and family. veryday we are bombarded with images on social media of ‘desirable’ looks. It’s one reason why the services by Dr Leah Totton, winner of The Apprentice back in 2013 and owner of three clinics including one in Loughton, are so in demand. “The demand is insane,” she says. “And that isn’t just me, I have been speaking to colleagues who have clinics and the demand across the board is absolutely huge.” Rather than thinking Dr Totton is benefitting from what many see as an evil of society, what she has offered since 2014 has certainly come at things from a different angle, and was partly the reason she impressed Lord Alan Sugar back on the BBC hit show. “I believe as a woman myself there is a benefit for wanting to improve your self-image,” she says. “Do I wish we lived in a society whereby women and men were not judged on their physicality? Absolutely, but the reality is that isn’t the society that we live in, and we are in a situation societally whereby your confidence and perception is intertwined with your cosmetic appearance. We offer services like birth mark removal, mole removal, wart removal, we don’t only do botox and dermal fillers – it’s skin health as well. I think it would be naïve of any of us to say that the [cosmetics] industry is a negative thing.” Dr Totton was 24 when she entered The Apprentice, when at the time she was an A&E doctor. “I really enjoyed working at the NHS,” she says. “The work that they do is exceptional and it’s so challenging. You learn a lot as an NHS doctor, so there’s a lot of transferrable skills like coping under pressure, ability to manage workload, work as part of a team, and develop the ability to lead a team.” How long was she thinking about launching her own business? “Not long,” she answers. “[The idea] was actually due to a negative incident that happened to my aunt. She had a botched treatment in Northern Ireland while I was working in my second year as a junior doctor. I was really shocked that it was done by a non-medical professional and that there was no legal recourse because it’s perfectly legal for anyone to inject botox and dermal filler. So the idea came from the point of view of wanting to medicalise the industry. “Now we are in a very different era,” Dr Totton continues. “You have got to bear in mind that The Apprentice was in 2013, and even at that time there was quite an uproar in the press when I won. There was still quite a lot of stigma around cosmetic treatments then, it was very much back street beauticians – and sometimes not even beauticians – doing these treatments, or very high end Harley Street clinics for your

elite celebrities. We approached the market as a medical brand, sitting in the middle of the industry in terms of price point.” It was a plan that convinced one of the very best in business. “What I wanted and needed was help in business,” Dr Totton says about the reasoning behind entering The Apprentice. “You have got to bear in mind I was a doctor at that point, I had zero business experience. I really needed a business person, not just some investor who wouldn’t help me day to day. I needed someone to be hands on with me in the trenches in that first year of the business, and that’s what The Apprentice gave me in Lord Sugar. “In that first year I needed support in pretty much everything apart from the medical aspects of the business,” she continues. “In terms of being a CEO, I needed to be literally taught all of that by him. The publicity that the show offered too – back then the viewing figures were huge – created a lot of brand awareness, to get that message out that this was going to be a medical business that’s run by an ethical doctor.” And taking part in the show itself? “It was challenging, but I just saw it as an opportunity. I had quite a bit of negative press after [winning it], which was obviously a shock as I hadn’t been in
the public eye before the show. As an NHS doctor you are not exposed to criticism. I found the loss of anonymity difficult.” Today, there are three Dr Leah Skin Clinics, showing the initial mentoring process with Lord Sugar was a roaring success. From Absolutely West Essex’s point of view, Lord Sugar was also key for bringing Dr Totton’s business vision to the area. “Loughton was Lord Sugar’s choice,” she says on opening here. “It’s a great area to be in. There’s that golden triangle of Chigwell, Loughton and Buckhurst Hill, so it made sense to open here. “We have become more trusted,” she says on the growth of the business. “We have built a really great culture. I think we have built a brand that people want to use – the biggest compliment in business is return custom. I have clients who came to me in the first few months of the business who still see me now eight years later. That’s a real privilege.” Repeat custom is one thing, but how does Dr Totton and the team help advise someone new to cosmetic procedures? “They would have a consultation with one of our doctors before any treatment and that’s really important,” she states, “because you need to understand the treatment and make sure it’s right for you. There will be an assessment, where expectation of
treatment is another important thing that can be established. It’s key that people understand when they are having these treatments what is being delivered.” I am intrigued to dig a little deeper into treatments they offer, so ask about something new at the clinic, Lanluma (lanluma.com). “It’s a new treatment we offer that can be used for the body to reshape and contour large areas such as the upper arms, hips, thighs, hands, décolletage and buttocks,” Dr Totton explains. “There were quite a lot of issues [in previous years] with surgical Brazilian bum lifts whereby there were some fatalities linked to that, so it is now not offered in the UK. We never offered it anyway, but this highlights how the industry is moving towards the non-surgical sector, safer treatments with less downtime. We offer a treatment where you can essentially have a bum enhancement in one hour by injecting this new product. It’s a pretty natural way to stimulate your own collagen and elastin.” Society and its obsession with looks will not change, but with someone like Dr Leah Totton in the cosmetics industry, it’s an obsession that doesn’t have to lead to life-changing issues. “I have mentored a lot of doctors who have gone on to run their own successful practices with good ethics and integrity, who genuinely want the best outcomes for their patients.” You are in safe hands. Q What inspired you to write your book Intrinsic? A I think we were in a motivational mess before the pandemic, but that’s become a full-blown crisis now. We’re deeply confused about what matters in our lives motivationally: in our work and careers, but also in our relationships and parenting, and as citizens. The book tries to be a guide and inspiration and helps us re-ignite our inner-drive in each of these key areas of our lives. We’ve been treading water motivationally through the pandemic and we need to start swimming again.

Q What kind of things can we read about in the book? A What we think motivates us doesn’t really motivate us. I was speaking to a trader who received a £20 million bonus this past year. His first reaction wasn’t happiness. He had heard that another colleague had secured a £22 million bonus instead. Things like money, a nice office or house, a fancy job title – they’re all nice to have. But they’re not deep motivators. In Intrinsic I talk about how the ideas of Purpose (how what we do helps others), Autonomy (feeling in control of our lives) and Mastery (becoming the best versions of ourselves) are really our deeper motivators. And I apply these concepts to all the key aspects of our lives, both our work and our personal lives, to help us feel more motivated. Q What has the response been like to it since its publication? A In just a few weeks the book has been sent to the CEOs of ten FTSE 250 companies – not by me, but by readers who really resonated with its ideas. I’ve been able to have talks around the book

LOCAL WALKS WERE A GODSEND IN LOCKDOWN
with the former Prime Minister of Greece, leading universities like Cambridge University, and companies like Adecco. And so many readers have written in to say how the book has helped them differently about their lives – as author, there’s no better source of motivation. Q Mental wellbeing has been a hot topic since the start of the pandemic. How did you cope during the many lockdowns? A It wasn’t easy – but I tried to walk my own talk. I realised the motivational crisis we were all in. And that inspired me to really work on the book so it could be ready for when it could help the most people, particularly as we come out of lockdown. I also developed a new business, Intrinsic Labs, that advises a range of organisations – from the Economist Education Foundation to the London School of Economics – on motivated related challenges. Q Did any outdoor spots in Woodford Green help? A I’m embarrassed to say this, but prior to lockdown I didn’t take advantage of the wonderful outdoor resources on our doorstep. We also re-discovered Ray Lodge Park and Butlers Retreat. And the walk along the Green to the Winston Churchill statue become a daily routine during lockdown. Q How long have you lived in the area and what do you love best about it? A I love the balance of feeling like you are cut away from the bustle of London, but still so accessible. My wife and sons (who are ten and seven) love the sporting facilities here – my son is a keen cricketer at Buckhurst Hill Cricket Club. Q If you can, could you pick out your three favourite local places? A I’m a big foodie and love the Traveller’s Friend in Woodford, Provender in Wanstead, and the Standard in Loughton.
Q Do you have any local secrets or interesting stories you are willing to reveal? A I love how the area is constantly evolving and changing with new local “gems”. In Woodford Green alone we’ve had a new deli, fishmonger and fish and chips shop – which are all great. Every month there always seem to be something new in the area, so it’s never dull. Q What does 2022 hold in store for you? A Intrinsic is already being translated into

o here we are in November and it’s time to get cosy. As autumn brings us colder weather, the high street and fashion labels are bringing us the most stylish knitwear. From classic cashmere wardrobe staples to statement embellished and motif jumpers, there truly is something for everyone. This edit focuses on statement knitwear from both the high street and independent labels. Summer wardrobes are full of colour and pattern and there's no reason that our winter wardrobes can't be the same. A knitwear brand that has the most unlikely designer behind it is George & Gyles, which is co-owned by broadcaster Gyles Brandreth. 45 Noak Hill is the latest group fitness training session to arrive in West Essex. F45, short for Functional 45, is the ultimate high-intensity, circuit-based group training concept from Australia. Sessions are 45 minutes long and fast-paced, burning up to 820 calories and pushing you to your maximum, with constant support and guidance from motivational F45 coaches. You don’t have to be fit to get fit, with classes suitable for all regardless of age and fitness levels, enabling you to workout at your own pace – as we find out here when talking to local Jess Pole. Q Why F45 Noak Hill? A When I started I wanted to join somewhere that felt approachable and non-judgemental as I was pretty much a fitness beginner. At my first session everyone was really welcoming and instantly made me feel part of the family. I was told exactly what to expect in my first session, but the main goal was to have fun. Classes have no more than 27 participants, which means you receive close attention from each of the trainers. I have found that has been key in keeping me motivated whilst also improving my form and technique from the instructors’ feedback. The smaller class sizes gives F45 that community feel where we all encourage one another, we can all have our separate goals, but feel like we are working towards something together. The trainers are second to none and have a fountain of knowledge when it comes to fitness. I love that I never have to think about structuring my workout as it’s all been carefully created by trainers who can encourage me to meet my goals. I always get pushed to improve my fitness, both physically and mentally. Pumping music combined with the motivational trainers truly gives F45 an upbeat atmosphere and immersive experience like no other – each class

is more fun than any other workout I have ever been to, you really have to experience a class to truly appreciate it. When I leave class I love that I carry that great energy into the rest of my day. Q How long after joining F45 Noak Hill did you notice any positive changes? A Within the first four weeks I noticed that I was less out of breath and I could do more in the sets. Being able to lift more or do an extra burpee made my confidence soar. My energy levels both inside and outside of the gym have also benefitted hugely. When I first joined I was doing three sessions a week, and now I’m doing five or six a week comfortably and enjoying each one. In addition to mentally feeling better, I could see that I was physically better, having more energy, feeling stronger, shedding fat mass and having leaner muscles. I have noticed how my clothes fit better too. My family has been so supportive in my transformation and have noticed how much more comfortable I am in my own skin. I am impressed at how my body has responded so quickly to the training and I’m massively pleased with the results. Q Why do you continue to go to F45 Noak Hill? A I go there because it always makes me feel good and it’s always challenging – in a good way. It makes me feel better in my day to day life. I’m happier at home because I’m healthier and fitter. My eight-year-old has noticed the difference to how I am around her, and I feel like I’m setting a good example for her. She now always asks me how my F45 Noak Hill session was, so she’s supportive! It might seem dramatic, but I would feel a bit lost if I didn’t have F45. It’s now
part of my everyday routine. I know I’m going to come four-five times a week, and if I can’t, I’ll do one of their online workouts at home. When I joined F45 Noak Hill I was a complete novice in terms of strength and endurance training and I’ve seen these areas improve massively. Q What would you say to anyone apprehensive about joining? A Don’t be scared or overwhelmed. You will be made to feel immediately welcome. Don’t worry if you haven’t done a deadlift or burpee before, or even if you don’t know what one is, you’ll soon be doing 20 of them and loving it! It might be more expensive than a traditional gym, but I was determined to get results and find a gym that made me look forward to classes and that’s now what I have. T IM E TO ADAPT How to work with your cycle, not against it

ver found yourself struggling to workout at certain times of the month? Or, one day you’re hitting PBs and the next, you can barely lift a dumbbell? It might be time to start adapting your workout routine to your monthly cycle. Exercising and the menstrual cycle are often confused and thought to be something that cannot be mixed – which is not the case says, Lucy Gornall, PT and head of wellness at Puresport. “Your menstrual cycle is split into four phases, across a time period of roughly 28 days,” she says. “Day one kicks off your
period, AKA your menstrual phase. Then, the follicular phase spans from around days 5 to 13, followed by the ovulatory phase on days 14 to 16 and finally the luteal phase, which runs across days 17 to 28. “During the menstrual phase, the hormones progesterone and oestrogen are at their lowest. You might struggle with energy levels, so walking, yoga and Pilates are good choices. “With oestrogen rising during the follicular phase, your energy starts to peak and morning workouts should feel a lot easier. With all this energy, try opting for more cardio-based workouts like running and cycling.
“The ovulatory phase is your most fertile time, and your energy peaks around this time. So jump on the HIIT bandwagon; short, sharp and sweet works well here. “However, if ovulation pains creep in, taking a walk or stretching with a yoga session can help. “As oestrogen declines and progesterone rises during the luteal phase, you might go from feeling energetic, to lethargic and fatigued as this continues. Q How did it go when you competed
in the London Marathon recently?
A It was good to finally be back on the

streets in a major marathon for the first time in a couple of years, the crowds were good and the atmosphere at the London Marathon is still an unbeatable experience. Having run 325 miles in the previous 25 days it was certainly the most tired I had ever been at the start of a race, but I still managed to enjoy the experience and completed the race in a time of 4 hours and 36 minutes. Q How do you feel to have
completed the 351 miles? A The last week was extremely tough having to run 161 miles in seven days and trying to fit all that into a normal working week meant I was running at 4am most mornings. It’s one of those achievements you look back at and say, “Well I’m never doing that again!” Q How much sponsorship have you raised? A So far just over £7,600 has been raised,
which brings my personal fundraising total from various running events over the year to just over £93,000, so I guess I’m going to have to think of something else for the future to get it over that £100,000 mark. Q Why were you keen to support
The National Autistic Society?
A I was keen to raise funds for The National
Autistic Society who do incredible work each year supporting the 700,000 autistic people in the UK and their families. I was diagnosed with autism in November 2019, so this charity is especially important to me. The National Autistic Society is the UK’s leading charity for people on the autism spectrum and their families. Since 1962, they have been providing support, guidance and advice, as well as campaigning for improved rights, services and opportunities to help create a society that works for autistic people.

between self-realisation and formal diagnosis, which was not an easy time for me. The assessment meeting itself lasted for seven hours and obviously covered a lot of personal history. There is no doubt I felt immense relief at the end of the assessment when I was given the formal diagnosis. Q What made you think
you might be autistic?
A I had always thought that “other people”
didn’t react in the same way that I did in most situations. I have in the past been called cold emotionally, overly calm or even robotic, which is not true, but visually I can certainly give that impression at times. After some banter in this regard at home I started Googling these traits, which led me to articles on autism and that was the lightbulb moment. of the agreement (which means having had full financial disclosure from each other); • It must not be unfair to uphold the parties to their agreement in the circumstances at the time of the divorce. Pre-nuptial agreements are more likely to be upheld in short marriages, as there is less chance of the agreement having become out of date or superseded by unforeseen events.
Forward THINKING Pre-nuptial agreements – should you get one? B y R AY D E N S O L I C I T O R S
W
hen couples get engaged and start planning their future together, there are a multitude of things to consider. Throughout the excitement the trickier subject of finances and assets, and how to manage or protect them, is often overlooked – unsurprising perhaps, in the flush of love and wedding prep. However, though it might seem unromantic, discussing your options is sensible. We are increasingly seeing couples who recognise that, in the sad event their marriage doesn’t last, a pre-nuptial agreement could ensure financial aspects of separation are less painful. People often say, ‘pre-nups aren’t

worth the paper they are written on are they?’ Well, not necessarily so, but as with many things in law, the answer isn’t straightforward. While there is no legislation dealing with pre-nuptial agreements in the UK, there is a growing body of case law. The law in England currently states that pre-nuptial agreements are not automatically binding. However, if properly prepared, they may well be upheld. So what does this mean? One of the most well-known cases, Radmacher v Granatino, sets out the key criteria for a pre-nuptial to be capable of being upheld in the event of divorce or separation: • The agreement must be freely entered into (including with each party taking independent legal advice); • The parties must fully understand the implications
Couples considering a prenuptial agreement should each seek independent legal advice and do what they can to ensure that the agreement is done properly. This will provide a greater chance of the agreement being upheld. Contrary to popular opinion, pre-nups are not just for the rich and famous. Whilst they are often used to protect the assets of a wealthy party, couples of more modest means are increasingly drawing up prenuptial agreements. Reasons for doing so might include: protecting inherited wealth, safeguarding future inheritance, retaining control of a business, providing for children from a previous relationship, even protection from liability for an outstanding debt. 1. Cleanse properly
You may be waiting to set the date, but it’s never too early to start perfecting your regime. Two leading bridal specialists give us their advice for being your best self on the day
It may seem obvious, but many of us aren’t doing this first step quite right. And think about it, if you’re not cleaning your skin properly (that’s surface skin as well as deep into the pores) none of your serums, moisturisers and treatments can penetrate efficiently. Consider what you’re using in the morning separately to the evening as these ideally should be different textures. Morning is easy: a non-foaming facewash with a gel or cream-based product will do the trick. The evening is where you should spend a bit more time after a long day, where you’ve likely been wearing skincare and make-up. Remove your makeup with a simple cleanser or micellar water, then clean your skin thoroughly. A balm cleanser is ideal for this as it will melt away impurities from fine lines and pores. 2. Exfoliate regularly
New, fresh skin is what we all want. Uncover it by promoting your skin’s renewal process. This means sloughing off any dead, dry surface skin, but also stimulating the next layer to come through. We’re not talking scrubs here (save that for your body) or anything too abrasive – gently does it. The best way is by using a liquid exfoliant. One containing BHA’s (beta-hydroxy acid) and AHA’s (alpha-hydroxy acid) will rid your face of surplus debris and you don’t even need to remove it. Some are mild enough to use every day, others you can space out throughout the week. Ease yourself in and get ready to see glass-like skin revealed.
3. SPF always
This should go without saying, but protecting your skin from sun damage and all the harmful rays we’re faced with on a daily basis, is integral. Sun protection (that’s UVA & UVB rays) is the most anti-ageing product you can apply to your skin. Rain or shine, winter or summer, if you can see your hand in front of your face, you should be wearing sunscreen. I always advise SPF50 and there are plenty on the market, most of which are very affordable and will pay dividends on your flawless skin goals.
retinol at night. Antioxidant vitamin C yields a host of benefits: radiance boosting, treating uneven skin tone (pigmentation) and calming redness. Available in a variety of percentages, go for the highest you can afford. Retinol (only to be applied at night) renews skin by promoting cell turnover. It will gradually shed the outermost dead cells of your skin, revealing fresh, new layers. Retinol comes in a variety of strengths so ease yourself in and gradually build up resilience. Be sure to wear SPF the following day – very important as retinol makes your skin more sensitive to UV rays.
5. Treat your skin
Whether it’s a mask or a moisturiser, keep an eye out for these key ingredients, depending on your main concern. If you want hydration, look for hyaluronic acid (naturally occurring in our skin), which can hold a hundred times its own weight in water. Humectants like glycerin draw moisture to the top layer of the skin, a great combination. For breakouts, salicylic acid is a good antidote, helping to control excess sebum whilst calming any redness or sensitivity. If you want an all-rounder Niacinamide is a great ingredient, helping skin to repair, retain hydration levels and build resilience. sophietilley.uk
4. Serum counts

A key trend right now is for very soft pretty hair – from loose waves to a sophisticated but relaxed chignon. Classic half up half down remains a favourite for brides (from 1960s volume to boho plaits) and works really well with a veil. It’s also smart, but ensures brides still feel like themselves. Accessories are also becoming popular with brides – some choosing this route over wearing a veil – and many are also keen to change their look from an up-do for ceremony to down for the reception.
Your wedding routine
Get yourself into a good hair routine. That includes trimming your hair every 6-8 weeks, avoiding unnecessary blow drying and applying treatments (try Michael Van Clarke 3 More Inches Pre-wash once a week, leaving it in overnight). Do get to know the hairdresser who will be doing your hair so they know your style – and the atmosphere you want to create. I recommend a hair trial after you have chosen your dress. IL VINO HAS A BOUTIQUE FEEL
C
onsidering the fact independent wine shop Il Vino is approaching its first anniversary in December, it doesn’t take a rocket scientist – or a wine buff – to work out this was a business born in lockdown. It was also the moment that owner Tony Long took a punt on following his passion. “I have been working in publishing all my career,” he recounts the story. “When I came back from running a media business in Dubai at the end of 2018, I took on the role of Publisher of an upscale wine and spirits lifestyle magazine called Club Oenologique. I have always had a passion for wine, so to me this represented a perfect combination. Then Covid came along and we had to suspend the magazine, and it THE NEW WINE TASTING ROOM
was at that point I thought, even when this was over, I didn’t want to go back in to publishing. I wanted to stay involved in wine and there are only so many ways you can do that – and buying a vineyard wasn’t an option! Then I thought an independent wine shop near to where I live in Woodford Green would fit in well…” Il Vino opened on Queens Road, Buckhurst Hill, just before last Christmas. It was boosted by the fact that they could open under the government’s rules on essential businesses, but the success Il Vino has enjoyed since is all down to Long and his wife Eileen and their vision for the business. “It’s quite spacious, very open, the racking system is very modern looking, and it gives you room to browse and to walk around without falling over boxes and crates,” he says on the boutique-type experience at Il Vino. “We tried to create a relaxing, contemporary environment within the shop – and customers have a really nice choice of wines that they can’t get anywhere else locally.” Regular readers of Absolutely West Essex will be familiar with Long’s wine column reviews on our food news round-up pages, which highlights his preference for smaller, independent wine producers. “Some I know and have worked with before,” he says on how these producers are sourced. “I really enjoy that relationship and the fact they are making efforts towards things customers care more and more about these days, such as the environment and the ecological impact of producing wine. We do get some customers coming in wanting slightly more esoteric wines, and wines that have been
produced in a certain style, but more often than not customers are looking for wines they know, which they have enjoyed in restaurants or when travelling for example, or wines they have heard of before.” Does he enjoy passing on his knowledge about wines? “Absolutely,” he replies without hesitation. “That’s one of the key elements of having an independent wine shop, which is you have got the time and inclination to help customers find what they are looking for, or even to help them understand why they like what they do. All it takes is a few questions and you get a pretty good idea of what they might like. Another part of what we offer is the assistance to help people enjoy different types of wines that maybe they wouldn’t have discovered themselves. Getting a customer’s feedback is lovely because it feels like you are adding something to the relationship with them.” It’s clear to see why Il Vino has been such a hit in Buckhurst Hill, but plans are afoot to take the offering even further. At the time of writing, Long is all set to launch wine tastings at the back of Il Vino. “They will be bespoke private wine tastings for 10-12 people,” Long explains. “We will design the wine tastings around the customer’s brief and offer our own input to ensure they get a great tasting experience. For example, if someone says they love Spanish wine, but they usually end up with Rioja, we will put together a list of wines from different regions, different styles, and really give guests that attend a fantastic wine tour of Spain. What we will also do is match the meats, cheeses, etc to those regions wherever we can so you will get a more authentic tasting experience.” The pandemic has been disastrous on a global scale, but positive elements have emerged from the rubble, in particular an increased demand for what local high streets offer. Il Vino is one such example, which shows what an independent business can truly offer the consumer. A very happy birthday indeed. Sesamecrusted feta and sun blush tomatoes on rosemary skewers Serves 8
‘Everything is betta with feta,’ says Tara, voted the number one feta fan of all time, and, to be fair, she might be right. We try really hard not to show cheese favouritism (cheesism), but we’d be lying if we didn’t admit that feta makes a prominent appearance in the OTK fridge, its salty, tangy properties lending it well to multiple preparations. This dish is a little bit sweet, a lotta bit salty, a tiny bit bitter and a whole bit crispy. It’s exactly what you’d serve for brunch (with bacon, if you like) and not much else, as it really is quite rich.
INGREDIENTS • 2 blocks of Greek feta (360g), each cut into 4 triangles (8 triangles in total) • 35g rice flour (or plain flour if gluten-free flour not needed) • 1 large egg, well beaten • 100g mixed black and white sesame seeds, lightly toasted • 2 tbsp olive oil • 0.5 tbsp picked lemon thyme leaves, or regular thyme leaves Syrup • 120g runny honey • 1 tsp ground black lime (optional) • 3 lemons: 1 juiced to get 1 tbsp and the other 2 left whole
METHOD 1 Line a shallow baking dish (or baking tray with a slight lip), about 30cm x 20cm in size, with baking parchment. 2 Pat dry the feta pieces, then dip each piece in the flour, gently shaking off the excess. Coat in the egg, followed by the sesame seeds, making sure the feta pieces are completely coated. Transfer each piece to your prepared dish and refrigerate for at least 30 minutes, or longer if time allows. 3 Preheat the oven to 220C fan. Drizzle the coated feta pieces with the oil and bake from cold, for 18 minutes, very gently flipping the pieces over halfway, or until golden and warmed through. 4 While the feta is baking, put the honey and black lime, if using, into a small saucepan on a medium-high heat. Once it starts to bubble, turn the heat to medium and cook, stirring occasionally, until it turns a deep
amber caramel, about 6–7 minutes. Take off the heat and stir in the lemon juice. Set aside to cool for 5 minutes. 5 Use a small, sharp knife to peel and segment the remaining two lemons and stir the segments into the cooled honey mixture. 6 When ready, pour the lemon syrup directly over the feta in the baking dish, sprinkle with the thyme and serve at once, straight from the dish.
Grilled courgettes with warm yoghurt and saffron butter Serves 2–4
This recipe is inspired by kousa b’laban, a Levantine dish of stuffed baby marrow cooked in yoghurt. In this simplified version the yoghurt sauce and grilled courgettes are cooked separately, then served with a quick saffron butter to spoon on top. There’s a bit of an art to cooking yoghurt without having it curdle; stabilisers such as cornflour and egg yolk tend to do the trick, as does cooking the yoghurt on a moderate heat, stirring continuously and gently warming through without boiling. The result: a silky-smooth and tangy sauce, great for these courgettes but also with other grilled veggies, fatty meats or even as a sauce to pasta.
INGREDIENTS • 30g unsalted butter • 0.25 tsp saffron threads, roughly crushed • 4 small, pale green or regular
courgettes, tops trimmed slightly and courgettes halved lengthways (600g) • 2.5 tbsp olive oil • 1 tsp cornflour • 300g Greek-style yoghurt • 2 garlic cloves, crushed • 0.5 tsp dried mint • 0.75 tsp coriander seeds, toasted and roughly crushed with a pestle and mortar • 1.5 tbsp picked mint leaves • Half a lemon • salt and black pepper
METHOD 1 Preheat the oven to a high grill setting. 2 Put the butter and saffron into a small saucepan on a medium heat. When the butter has melted, set aside to infuse. 3 Place the courgettes on a parchment-lined baking tray and toss with 2 tablespoons of oil, 0.3 teaspoon of salt and a good grind of pepper. Arrange them cut side up and grill for 15–20 minutes, until nicely charred and softened. 4 Towards the last 10 minutes of grilling time, make the sauce. In a large bowl, whisk together the cornflour and 3 tablespoons of water until smooth, then add the yoghurt, garlic, dried mint, the remaining 0.5 tablespoon of oil and 0.5 teaspoon of salt. Whisk to combine, then transfer to a large, non-stick saute pan on a medium heat. Cook, stirring continuously, for about 10 minutes, or until thickened slightly and warmed through. Do not let the sauce boil, or it will split. 5 Transfer the warm yoghurt sauce to a plate with a lip and top with the courgettes, grilled side up. Spoon over the saffron butter, then sprinkle with the coriander seeds and mint leaves. Squeeze over the lemon half and serve right away.

• 11 garlic cloves, peeled, 10 left whole and 1 crushed • 30g fresh ginger, peeled and julienned • 400g datterini or regular cherry tomatoes • 3 red chillies, mild or spicy, a slit cut down their length • 1 tbsp tomato paste • 2 tsp cumin seeds, roughly crushed with a pestle and mortar • 2 tsp coriander seeds, roughly crushed with a pestle and mortar • 0.5 tsp ground turmeric • 0.5 tsp chilli flakes • 2 tsp red Kashmiri chilli powder • 1 tsp caster sugar • 200ml olive oil • 180g Greek-style yoghurt • 15g picked mint leaves • 30g fresh coriander, roughly chopped • 2–3 limes: juiced to get 1 tbsp and the rest cut into wedges To serve • salt
METHOD Preheat the oven to 150ÅãC fan. Put the chickpeas, whole garlic cloves, ginger, tomatoes, chillies, tomato paste, spices, sugar, oil and 1 teaspoon of salt into a large saut. pan, for which you have a lid, and mix everything together to combine. Cover with the lid, transfer to the oven and cook for 75 minutes, stirring halfway through, until the aromatics have softened and the tomatoes have nicely broken down. 3 Meanwhile, put the yoghurt, mint, fresh coriander, lime juice, crushed garlic and . teaspoon of salt into a food processor and blitz until smooth and the herbs are finely chopped. 4 Serve the chickpeas directly from the pan, with the yoghurt and lime wedges alongside. 1

These chickpeas have had their fair share of Insta fame for a multitude of reasons. The first being that the simplicity of the dish makes it really
quite attractive: throw everything into a pan and pop it into the oven, leaving it to its own devices (and you to yours). The second being that slow-cooking the chickpeas in oil without added liquid makes them super soft, allowing all the aromatics to break down into the oil. Lastly, this dish can easily be made ahead and served later; it only improves with time. Swap out Greek yoghurt with a non-dairy alternative for a completely vegan meal, and serve with rice.

We're looking to place my daughter in a UK boarding school next September, but as we are living overseas we're not really sure how to manage the process of shortlisting and visiting schools. What would you advise? One of the first things you need to establish before you start looking at new schools is your daughter’s academic level. You want a school where your daughter will sit comfortably amongst her peers. Prospective boarding schools will also want to know what your daughter can offer

to them – both in terms of academics and extracurricular. At boarding schools, children become totally immersed in their surroundings, and what they give, they get back tenfold. With this in mind, look at the school and see what they offer to the child: will your daughter be able to get involved with school life? As you’re abroad, I’d advise you to look at full-boarding options, as everyone tends to stay in during the weekends. Even if there is the occasional quiet weekend, Saturdays will still comprise of lessons in the morning and sports fixtures in the afternoon, and many schools are keen to keep weekends as busy and as purposeful as weekdays. Visits and open days are imperative. Do go on these if you are able to, as they are the best way to gauge a school’s atmosphere and ethos. You’ll also get to see how pupils interact with one another and engage with their teachers, and in turn see how the staff interact with parents. Many schools are now offering in-person tours, so try and go for an open day, and then afterwards schedule a private visit. Having said this, Zoom is still a very good way to view a school and there are plenty of excellent virtual open days. Look at reviews, listen to word of mouth, but most importantly have confidence in yourself as a parent – you will know in your gut if a school is right for your daughter.

Is it a good idea to move my daughter to a new school for sixth form? She's said that she might like 'a change of scene' at 16, but we're not sure how easy it will be to make the transition – both academically and socially. If you’re looking to move your daughter for sixth form, ideally you need to have started shortlisting schools by the end of Year 10. Schools tend to close their registrations by the end of September, and by the very latest, the end of October, as many of their candidate assessments take place during October. Many children – whether they joined their current school at 11 or 13 – can find the change refreshing, but please bear in mind that this needs to be a very considered decision as she is at a critical age. The process will not only take up valuable time that she could use for GCSE revision, but she will also be leaving behind friends and a structure that she has been used to for at least three years. Remember, too, that competition is often tough for sixth form places, and some schools will have a limited number of spaces; rejection can be disheartening. Your daughter’s current teachers and pastoral staff know her academic ability and level of wellbeing, so be sure to consult them for their thoughts on the matter. Ask your daughter her reasons for a scene change; for example, is she looking

My son has his heart set on going to veterinary school, but knows he needs to prove aptitude as well as academic ability. What can he do to improve his chances? The methods of improving your chances of acceptance to veterinary school are very similar to those of getting into professions like medicine or law; work experience is essential. Besides academic ability, he will need to prove his enthusiasm for the field and should try volunteering or shadowing as many vets and animal practices as he can. Many

for a change in curriculum or is she looking for a better cultural fit? If you’re thinking of moving her from a day to a boarding school, this is often an excellent stepping stone for higher education. She’s likely to develop better organisational skills and grow in independence, all in the comfort of a school safety net – meaning moving to university won’t come as such a shock. Alternatively, she may be wanting to move closer to home with less school structure. Many children grow out of the school bubble before higher education, and flourish when working more independently. Overall, I would urge you to research what is out there and bring your daughter onboard the decisionmaking process. She will be able to give you a better idea of what she believes she is missing and this should help shape the final decision.

universities understand that sometimes it’s hard for certain candidates to gain experience, so they do not demand months of work under candidates’ belts, just enough to show an interest and an aptitude for veterinary. Work experience will also help your son to be sure that this is the field he’d like to pursue, as it can be a gruelling process preparing for this career. His time at university will be comprised of many exams, laboratory-based anatomy and a lot of contact hours, so it is imperative that he is prepared for the training. Research is equally important. There are currently only ten veterinary schools in the UK, so make sure to research the benefits of each course. Additionally, prospective students can only apply to four of those ten, and as you’re aware, each school has very competitive entry procedures. Regarding how he might prove his academic ability, consider employing a tutor. Many agencies – like Gabbitas – have tutors who are experts in their chosen field and specialise in veterinary school applications. This will also help him prepare for any interviews he has, and to know what to expect from the course. A tutor can also be useful in helping him revise for his exams, to ensure that he meets his offer.

Room to grow Leonard Blom, head of St Aubyn’s School in Woodford Green, discusses over 100 years of history and how they help pupils prepare for their next steps BY MARK KEBBLE
Can you give us a brief overview of St Aubyn’s School’s history… St Aubyn’s was founded in January 1884 as a boys’ preparatory school offering boarding for 7-13-year-olds. Originally in two modest adjoining houses in Woodford Wells, it is one of the oldest schools of its type in the country. How would you say the school has evolved over the years? St Aubyn’s opened with just two boys in 1884 and by 1921, there were 19 boarders and 109 day boys. Classes on Saturday mornings continued until 1970 and in 1975 the school became a Charitable Trust. In September 1995, St Aubyn’s became co-educational and by the year 2000 there were 440 pupils. Today there are 520 pupils with an equal number of boys and girls who experience an excellent all-round education.
It is a privilege to witness their personal and academic development Today, you cater to 3-13-year-olds – is that age group a privilege to teach given it’s the start of their educational journey? Nursery (3+) is the main point of entry into the school and we admit 60 pupils every September. It’s amazing to see how quickly and easily they settle in and, indeed, a privilege to witness their personal and academic development as they progress through the Pre Prep department. In Middle School we encourage inquisitive learning and foster independence so that each pupil is able to develop their full potential. By the time these pupils become Seniors and approach the end of their educational journey with us they are confident all-rounders, role models and leaders.

Outside of the class, what opportunities do you offer your pupils? We have an extensive programme of over 40 extra-curricular and after school activities, some of which (fencing, ballet, chess, table tennis, LAMDA) are run by visiting instructors. Other activities – such as coding, Lego, sports, music, drama, movie-making, cooking, sketching, STEM, cadets and many more – give pupils the opportunity to try something new, challenge themselves and to take risks whilst learning new skills and having great fun. When pupils leave you at 13, what are they prepared for? In all subjects, Seniors are taught by specialist teachers in dedicated classrooms and, whether they leave us at 11 or at 13, they are all well prepared for the challenges of secondary education and life beyond St Aubyn’s. The Senior School is friendly and supportive and is characterised by three qualities that make it a unique and special preparatory experience. Alongside
high academic achievement, we strive to make sure that each pupil fully participates in all aspects of school life and develops a strong sense of independence. Seniors are encouraged to take up positions of responsibility in their forms, Houses or in one of the many clubs and activities. FEELING STABLE The West Essex housing market remains strong, says Hayley Hunt, but things appear to be settling down
A
ccording to the Nationwide, annual house price growth last month was still very strong at about 10%, although this was down from 11% in August, and no doubt supported by the tail end of the SDLT concession, which has now come to an end. It is interesting to note that the average house price has risen by over £28,000 since that stamp duty concession was introduced in July 2020. This is 12 times more than the average SDLT saving enjoyed by buyers. The average house price, at £267,587, has now crossed into a higher SDLT threshold too. So rather than helping struggling buyers, the concession has supported massive and possibly unexpected house price growth. Funny old world! Over and above any concession, it would certainly seem that sheer confidence, coupled with alternative financing, strong employment, low interest rates, and an economy rebuilding itself are all playing
their part in proving once again that British real estate remains an exceptionally strong investment – and a tax free one for most homeowners. Rents are up too – by 7.5% over the year (Source: Homelet). Could this be why 44% of landlords are expecting to buy more properties this year (Source: FJP Investments)? So often though, the figures we see are already out of date by the time they are published by the Land Registry or a mortgage lender. Perhaps changes in asking prices might be a better indicator of the future than looking at the sales completion figures of the past. According to Rightmove, the average price of property coming to market hit a record high after rising by 0.3% last month (that’s a more modest annualised figure of 3.6%, which is about the same as many forecasters are predicting will be the average annual growth for the next couple of years at least). So things are stabilising, possibly due to a 14% increase in new properties entering the market, although buyer demand per property for sale is still more than double pre-pandemic levels. Of course, it’s the “power-buyers” who are successful in securing the property they want. These are the buyers who have nothing to sell or are already under offer or exchanged; they have their mortgage agreed in principle and they have a good conveyancer ready to go. And if you don’t yet fall into this category because you have a property to sell – well you know who to call!
