G
illian Wearing has been recognised as one of the most influential artists of modern times, the blockbuster new Turner show at the Tate is snagging five-star reviews by the handful and I just finished reading about a 10 year-old prodigy who has made £1.5 million from his paintings. If I’m preoccupied with artists of all stripes this month, I’m not the only one: art is high on London’s agenda right now, thanks in part to the return of the world-beating Frieze London to Regent’s Park. Amid all the parties and price tags, though, it’s easy to forget that art isn’t (or at least shouldn’t be) merely an investment opportunity, and that behind every work is a real person with real passions. We were lucky enough to speak with one such individual for this month's edition. Catherine Goodman, the BP Portrait Prize-winning painter whose vocation has taken her around the world (and into the collection of the National Portrait Gallery, among others). Goodman is also the co-founder and Artistic Director of the Prince’s Drawing School, the only institution in the country to focus on teaching drawing from observation. It’s a skill many of us fear it’s too late to learn, but Goodman wants to convince us otherwise. Personally, I hope very much to be persuaded. Elsewhere in the issue we talk to people working at the crossroads where art and interiors meet, including a bevy of emerging makers recently signed up by iconic retailer Heal’s, and Lucy Ryder Richardson, the founder of Modern Shows. Ruby Hammer The modest Maida Vale-based make-up artist on famous faces, cult products and receiving an MBE Photography Kirstin Sinclair W o r d s L i n d s ay B a k e r
W
hen Ruby Hammer was awarded an MBE for services to the beauty industry in 2007 it was, she says, ‘a landmark moment’ in her life. She doesn’t go in for affectations of grandeur, though. 'I’m a jobbing make-up artist,’ she says matter-of-factly. ‘When I’m on a shoot, I’m a crew member like everyone else. I’m not being fake humble – I’m a team player and I’ve still got a passion for it. I’m certainly not some grande dame.’ Nevertheless, if anyone in beauty can claim doyenne status it’s probably the glamorous Hammer, who at the age of 52 has an illustrious career that spans decades. Ruby & Millie, the beauty brand she co-founded with Millie Kendall was trailblazing, the first UK indie cosmetics brand to be established for 30 years and the predecessor of subsequent make-upartist led products (such as the recentlylaunched brand by Charlotte Tilbury). Most recently she worked on the Sky TV series The Face. Her dad, she tells me, would have been very proud to see her collect the MBE. Ruby spent most of her childhood in Nigeria, the daughter of Bangladeshi parents. Her father was an eminent doctor and Chief Medical Officer and entertained at home frequently. Ruby has vivid memories of her mother’s outfits of saris in op-art, Pucci-style textiles, with fabulous eyelashes and hairpieces – the height of 60s glamour. ‘She was beautiful and smelt divine – Joy by Jean Patou was her favourite.'

The family came to Britain when Ruby was 12, and following school, she graduated in Economics at LSE. From early on Ruby was ahead of the curve, combining her beauty knowledge with a good business head. She has repeatedly championed cult products early on – it was she who first brought the now ubiquitous Aveda hair products to the UK. Ruby & Millie launched in the 1990s in association with Boots, and next came the teen version, Scarlett & Crimson. All the while she was working as a make-up artist for the likes of Marie Helvin and Jerry Hall. ‘They were the iconic beauties from my youth, like Bianca Jagger, they were the bomb – and they still are. Jerry is very funny, she doesn’t suffer fools.’ In 2011 Ruby lost her beloved mother. ‘It took me a good year to get back on my feet.’ And now she has launched her new website, which includes a blog. She is also a brand ambassador for oils by Udo’s Choice, which she enthusiastically recommends for ‘feeling good inside and out – I use it and works brilliantly.’ Maida Vale has been home for the past 14 years, where she shares a townhouse with her second husband, Martin Kuczmarski. It’s hard to believe Ruby Hammer is 52 – she looks more like a sister than a mother alongside her daughter Reena, who is creative director of Urban Retreats. So what’s her secret? Good genes, she says. ‘And I take care of my skin – lots of exfoliating, UV protection of no less than 30, I don’t smoke, I eat and sleep well and I don’t drink excessively – but I also don’t exercise excessively. ward-winning journalist Hilly Janes grew up hearing her father, the artist Alfred (Fred) Janes’s stories about Dylan Thomas. A lifelong friend, Fred painted the poet throughout his life. Using her father’s portraits as focal point Hilly’s biography traces Dylan’s journey from growing up in Swansea to scrounging, boozing and philandering in Fitzrovia and his untimely death in New York, aged 39. Drawing on a personal archive that includes letters and diaries she throws new light onto this complex figure now legendary as the epitome of Bohemian dissoluteness. ‘He was cruel, he was a sponger, even when he had money of his own he went out of his way to hurt those who helped him.’ Despite Dylan’s cuddly, cherubic attractiveness he was sexually predatory, and shamelessly exploited his friends but was also a brilliant poet, utterly dedicated to his craft. He married the beautiful dancer Caitlin Macnamara who was even wilder and more drunken than him. Although uncritical, Hilly’s honest account of Dylan’s life gives us a captivating picture of a flawed genius. She captures the thoughtfulness below the flamboyance. Amidst the booze and the brawls, Dylan fashioned some of the greatest verse of his age. He predicted to friends that he would die before he was 40, which was probably the only promise he faithfully kept. ◆ Alice Coke

till riding high after the triumph of Blue Jasmine, the ever-prolific Woody Allen brings the world Magic in the Moonlight. A slight departure from the realism and human tragedy of his previous film, Magic in the Moonlight is set in the 1920s and tells the story of a cynical and misanthropic stage illusionist Stanley (played by Colin Firth) whose stage persona is the mystical Wei Ling Soo. He is invited by fellow stage magician, Howard Burkan (Simon McBurney), to visit the Cote D’Azur in order to meet the mystic and clairvoyant Sophie (Emma Stone) who has enchanted a wealthy American family, so much so, their son is considering proposing marriage. Despite being an experienced illusionist, Howard cannot uncover Sophie’s tricks and has begun to believe that she has real supernatural powers. The cynical Stanley (Firth) is quick to express
his disbelief and disdain, but the more time he spends in the magical Sophie’s company, the more she strips away his doubt. Viewers will have to watch for themselves in order to find out whether Allen has turned his hand to the supernatural, but some things about the film are certain: a visual treat is in store, with gorgeous period costumes by Sonia Grande. Grande seems to have had an absolute ball with the Twenties theme, kitting out the beautiful Emma Stone in drop-waisted delights. The visual feast doesn’t end there, as cinematographer Darius Khondji’s superlative lighting bathes the film in a translucent glow – the very same glow that proved to be the saving grace of Midnight in Paris. Fans of Allen may not find all they have come to expect from the acclaimed director but what they will find is a fun film with moments of real beauty. ◆ Catherine Hales

DRAWING CONCLUSIONS BP Portrait Award-winner and artistic director of The Prince’s Drawing School Catherine Goodman on preserving Rossetti Studios and the difference between male and female painters W o r d s C at h e r i n e H a l e s

etting hold of Catherine Goodman is no mean feat. Juggling her duties as Artistic Director at The Prince’s Drawing School with an exhibition at the National Portrait Gallery, Portraits from Life, makes Goodman an archetypal ‘busy person’. When I do eventually get hold of her, her reassuringly non-flustered voice informs me she and her graduating students are currently sketching in the Tuscan countryside. ‘We’ve got a few friends of the school here, a few art critics, professional painters and some of last year’s graduates. So everybody is out working,’ she says. Goodman founded The Prince’s Drawing School in Shoreditch in 2002, partly in reaction to the decline in ‘unfashionable’ life drawing courses in art schools. ‘The Royal Academy and the Slade, who both had very active life drawing rooms, were closing down and observational drawing was becoming increasingly difficult to find at a

I THINK THAT A LOT OF the time men want women TO PAINT LIKE MEN serious level. So we set it up. The prince supported the venture with incredible generosity.’ Catherine has sometimes been described as Prince Charles’ ‘unofficial art advisor’ but she is quick to debunk this. ‘No, I don’t advise him. I’ve worked with him for 25 years so clearly we talk often about painting, but I don’t advise him. He’s got lots of people to do that.’ It is clear, however, that HRH maintains a high opinion of Goodman, calling her a ‘damn fine artist’ earlier this year. ‘Oh, right, I didn’t hear that but very good!’ she says when I mention it, pleased but unfazed. The Shoreditch studio became what Goodman refers to as the ‘mothership’ and is now one of four across London. ‘The Chelsea studio is in Sydney Close
Studios. We’ve got one big teaching space there that belonged to the sculptor Arnold Machin, who did The Queen’s head on the stamp. It’s always packed.’ Indeed, the slump in life drawing seems to have passed, with the Soho studio attracting 1,000 students a week. When I ask if preserving the art of drawing is an important aim for both her and Prince Charles, who has advocated the conservation of traditional artistic and architectural practices, she pauses for a second. ‘It’s not so much about "preservation", although of course keeping anything going is about preservation. But drawing is the way in which artists think.’ Her definition of drawing is not limited to pencil on paper, however. ‘Everybody draws. It’s what every child does when they’re tiny and most of us continue to draw throughout our lives, without maybe even calling it drawing. Even if it’s as simple as composing photos on our iPhones, in a sense that’s drawing too, because you’re making visual judgements all the time.’ Although many may be familiar with Goodman due to her BP Portrait Award win in 2002, she is not solely a portrait

painter – a fact she makes clear when I mistakenly pigeonhole her as one. ‘I don’t really call myself a portrait artist; I am a painter. I paint as many landscapes, interiors and paintings from my imagination as I do portraits,’ she insists. ‘But drawing is very central to my work. I work from drawings a lot, and I draw every day of my life, so it’s absolutely part of me. [My current] show has got a lot of drawings in it, on a kind of iPad display on the wall.’ Portraits from Life is Goodman’s first solo exhibition and the first solo exhibition by a woman to be shown at the National Portrait Gallery in quite some time.

I think the theme of the show is very much linked to the portrait I did of Dame Cicely Saunders.’ Dame Cicely was responsible for the hospice movement in the UK and, somewhat poignantly, Catherine was charged with painting her in the last year of her life, seeing her just days before she died. ‘What it taught me was that if you peel back the front of any life and look inside, you’ll see a whole multitude of crises and unexpected things.’

Many of her subjects are painted over two or three years and Catherine astutely observes their ups and downs. ‘That’s the point of it, really. Life becomes recorded, time becomes one of the subjects… You don’t exactly see the wrinkles grow and the hair turn grey, but...’ she laughs. I tell her she makes it sound like Dorian Gray and she replies, ‘but they are a little like that. They absorb a lot, portraits. They absorb my feelings, the feelings of the sitter and they end up being living things – if they’re good and if they work.’ Catherine’s personal studio is located in Chelsea. ‘I work in the Rossetti Studios, where Augustus John, Henry Lamb and everybody started the Chelsea School of Art.’ But these treasured buildings have recently come under threat as property developers have purchased the site. ‘They are fantastic studios and it’s very important that they survive as that,’ she affirms. As far as how her own work is perceived, I ask what she makes of comparisons to Lucian Freud. ‘Lucian was a great, great painter.
But I think I’ve got a slightly more melancholic eye. That’s to do with being half-Russian. People often say my paintings look sad. I wouldn’t say they’re sad but they often have sadness in them.’ Could this be because she paints more emotionally than Freud? ‘I think women see people and the world very differently. I learnt that through teaching. It’s not a political stance I take, I can go down to the barn now and tell which paintings were done by women and which were done by men; there’s a different sensibility. That distinction is very important. Because I think that a lot of the time men want women to paint like men.’ Whether that is the case or not, her solo exhibition indicates there is certainly room for more female painters. ‘There’s definitely more than room,’ she says seriously. I imagine her nodding her head as she repeats, ‘there’s definitely more than room.’ u Portraits from Life runs until 23 November. his London-based brand’s has always been T menswear distinctly understated. My massage would work on ‘balancing energies’ and promised to leave me ‘harmonised.’ In real terms this means a consultation with the therapist before the treatment starts in which you discuss ailments and stresses. The massage itself is a relatively gentle, full body treatment. Well, this is what I was supposed to have. About five minutes in, Charlene (the Incredible Therapist capital I, capital T) asked whether I’d like for her to release some of the tension in my shoulders and back. When I said yes, she did some deep tissue work that left my muscles feeling better than they have in weeks. I could have kissed her. ‘We do take a holistic approach,’ she explained when we’d finished the treatment, along with giving me some tips on how to improve the mobility of my left shoulder and capitalise on the post-massage suppleness. Go to spend time in one of London’s most beautiful spas, stay for the kind of expert care that you may not think you need, but will be inexpressibly grateful to get. ◆

he Autumn Winter Couture catwalks were uncharacteristically restrained. Save for a couple of statement (yet still subtle) eyes, skin was kept bare, and lips were nude. It’s a look that’s surprisingly hard to translate successfully to the real world. Here are my tips and products to help you achieve an unshowy glow. 1 Prep your skin as usual, then use this Green & Spring Miracle Nuturing Balm on any dry patches. I also use it to condition my eyebrows and lips. Apply foundation with Estee Lauder’s clever brush - it fits perfectly under your cheekbones and gives a flawless finish. 2 This Charlotte Tilbury Bronze and Glow palette is my go-to product for a successful nude look. Use the bronzer in the hairline at the top of your forehead and temples, then sweep it just under
your cheekbones (suck in your cheeks to show where you’re going), and under the jawline. Use the Glow on top of your cheekbones, brow bone, and a touch down the centre of your face. 3 To subtly define your eyes, this Chantecaille palette gives a perfect sheen. Use the copper shade in the socket and the pearl on the lid. The purple looks incredible just smudged into the lash line. revor Sorbie has seen and done a great deal in a career that stretches from his early days as an apprentice at his father’s barbershop to stints at Vidal Sassoon, John Frieda and Toni & Guy. Through it all, Sorbie has lived and breathed his craft – which, along with his superior knack for making even the weariest barnet look amazing, must go some way to explaining his success. Today Sorbie has five thriving salons, a market-leading hair product range and an MBE in recognition of his services to Great British industry (as well as his remarkable charitable work). It was a little bit accidental at first, to be honest; a friend of mine had opened several salons and one was in Covent Garden. So my friend phoned me up one day and said, "Look, I’ve got this shop in Covent Garden; it’s not doing very well and I’ve got two choices: either sell it or get someone in to take it over." So I said, "Well, I’ll have a go at taking it over – as long as I have 50% and my name above the door."
I AM SO FORTUNATE to have such an amazing TEAM IN HAMPSTEAD
ABSOLUTELY You’ve come a long way (geographically as well as metaphorically) from your roots. When did you decide to become a hairdresser? TREVOR SORBIE My father had a barbershop in Ilford in Essex and that’s how I was introduced to hairdressing. He asked me what I wanted to do with my life and I didn’t know at that point; he suggested I try hairdressing. Within three months, I was cutting people’s hair. I had wanted to be an artist at one time, so I suppose I put my artistic skills into hairdressing. I did five years with my father and then went into ladies’ hairdressing.
AB You must have fallen in love with the craft pretty early on. TS I worked at Vidal Sassoon when it was the top salon in the country. And when all the other staff were sat out the back complaining about the company, I was on the floor watching how all the top stylists did it.
AB Because it’s more creative? TS No, because women are much better looking than men! At that tender age, it’s important!
AB What gave you the confidence to start your own salon? I suppose it was just maturity; you come to a point where you’ve learned what you can

AB Was it a struggle at first? TS Yes! When there’s only 20 people walking past your front door you’re not exactly overloaded with work. But we persevered, and we were lucky enough to attract some of the pop world, like Adam Ant, Toyah Wilcox, Siouxsie and the Banshees; they were coming to me because I was the new kid on the block. What Shoreditch is like now – that was Covent Garden then. AB By the mid-Eighties, you were launching your own range of products. You must have been one of the first hairdressers to do that? TS I was; John Frieda was first and I was close behind. AB Were you heavily involved in creating the products? TS I don’t know if people think that you just stick your name on the bottle, but it’s not like that! So much goes into it: you have to work closely with chemists, designers

AB Hampstead must be a tough place to make it work – the average customer is probably relatively well-informed and unlikely to compromise on quality? TS Completely; I know restaurateurs who think that it’s not worth opening in Hampstead because local residents will go central for top quality food, but a woman who lives in Hampstead and used to go to, say, a top salon in Mayfair – well, to have a top salon in Hampstead that saves all the travelling time... we have a lot of clients who once would have had to go into central London to have their hair done. I am so fortunate to have such an amazing team in Hampstead. They are incredible hairdressers and technicians. I am proud of each and every one of them. AB So what can visitors to the salon expect? Does Trevor Sorbie offer something unique?
TS That’s a good question. I’ll tell you the truth: every hairdressing salon has the same tools, but what separates one from another is the quality of your work – it’s as simple as that. And what we put our people through – and bear in mind I’ve worked at Vidal Sassoon, John Frieda and Toni & Guy – is more demanding than any other salon. When people come to work for us, no matter how long they’ve been a hairdresser or what kind of clientele they have, we meet
them, interview them and, if we like each other, we ask them to do what’s called a Trade Test. That means they have to prove to us that they can do five industry-standard styles. If they pass the Trade Test, we train them for a month or six weeks. At the end of that training, we give them a final test – which I take personally – on nine different disciplines, ranging from commercial hair-cuts to free expression to hair-up and so on. If they are technicians, the same path is followed ending with a final colour test. Every person who works for me – and there’s 120 of them now – has passed this test in front of my eyes. It’s this quality of work, alongside customer service, that sets us apart. I still work in all my salons and know every member of staff. We're like a family. My longest-serving member of staff, my top colourist, has been with me for 20 years; my Head of Education has been with me for 16 years. I believe in leadership by example; I still sweep the floor and help clients with their coats. And if a client ever asks one of my staff, ‘Does Trevor come in to the salon?’ the answer is always ‘Yes’.

know it seems improbable, serving authentic Tuscan food I in Islington, but everything started when my boyfriend asked me to marry him... He asked me to choose the size of the stone for the ring. I told him to go for a small stone and buy me an olive grove instead... so he did. Everything in Food Lab is homemade in the real Tuscan way starting from our own extra virgin olive oil. I source all our core ingredients from small Tuscan artisans. For fresh produce I go to the markets every week. My favorite is Billingsgate, the fish market at Canary Wharf, just 15 minutes from Islington. I wake at 4.30am – if you arrive late the best produce is already gone. If you like a sleep in, Steve Hatt, the fishmonger on Essex Road is the best. He tries to get there earlier than me! On the way back, I stop for fruit and veg at the New Spitalfields Market. There has been a livestock market on the site for over 800 years – and yet it is as modern as tomorrow. When I go to the markets I am constantly inspired by the food. I always say, I don’t choose the food, the food chooses me – and our daily menu reflects this. My husband and I live in Islington. We enjoy the diversity the area has to offer. Food Lab, like our marriage, is the result of the fusion of Tuscany and Islington, and both our olive trees and our marriage are still producing fruit.u

DINING WITH DOHERTY Daniel Doherty, Head Chef at the legendary Duck and Waffle, on the pressures of big city cuisine W o r d s C a m i l l a D av i e s
W
ith the landscape of fine dining changing faster than ever, Daniel Doherty believes that the expression itself should be abandoned. He’s in favour of a different culinary ethos. ‘I’d like to see the notion of “fine dining” sort of disappear, so you’re creating forward-thinking refined food but in a much more relaxed atmosphere,’ he muses. When it comes to his own restaurant, Duck and Waffle, Daniel refuses to be drawn into a black and white definition. ‘Lots of people say, what are you? Are you British, are you Italian, are you whatever; we kind of create what we think is seasonal, creative food that people can enjoy and share whilst actively enjoying the view. I think from the start we didn’t want to be pigeon-holed.’ One thing this chef is intent on, however, is sourcing local ingredients and supporting local businesses. ‘British food has had a rough time in the last 50-odd years, where we’ve taken

IT WAS NICE TO HAVE a dish that wasn’t unanimously LOVED... food is SUBJECTIVE the direction of big supermarkets, that kind of thing. My parents still remember the time when they had a butcher, a baker, a fishmonger – and there’s an element of that that can still be brought back, I think if restaurants do it then hopefully it encourages others to do it too.’ Deciding to train as a chef at age 16, and winning an elite scholarship to study at The Academy of Culinary Arts, Doherty quickly built a name within the industry. But being a professional chef is a tiring vocation – particularly when you’re at the helm of a restaurant open an astonishing 24 hours a day. Despite the pressurised work environment, Doherty still considers cooking at home one of life’s ultimate pleasures. ‘I fell in love with this industry because I love to cook, and to eat – not because I wanted to run a 24/7 restaurant with
45 chefs. There is nothing better than cooking a meal and just enjoying what you’ve produced. Even if you mess it up, you realise what you need to do next time, you play around. I find cooking very relaxing, and doing it at home you know nobody is going to write about you, tweet about you, upload to Instagram and judge you.’ The most wearing aspects of running a restaurant such as Duck and Waffle are the practical implications of being open all hours. ‘At the beginning the senior team were having to cover a lot of strange shifts and weird sleeping patterns. Now we’ve found our feet and have systems in place with our teams, I think it’s more physical exhaustion from knowing that when you leave work at midnight, the restaurant is still open and you’re still going to serve up to 300 covers, and there’ll be a lot industry people, a lot of other chefs judging you when you are supposedly sleeping. When you wake up in the morning you’ve got that stress of “Oh god, what happened last night!?” – but we’re doing alright.’ He may be a top chef, but his own food heaven is very down to earth.

DUCK & WAFFLE Roasted Essex beetroot, goats curd, honeycomb, watercress and shallot dressing S e rv e s 6 Ingredients
20 assorted baby beetroots, preferably heritage, and all the colours • 6 tbsp goat's curd • Large bunch watercress • 6 tbsp of shallot dressing (recipe below) • Honeycomb (recipe below) Shallot dressing 4 finely chopped shallots• 300ml extra olive oil • 100ml sherry vinegar • 2 tbsp thyme leaves Honeycomb 8 tbsp golden syrup • 2 tbsp water 400g sugar • 5 tsp bicarbonate of soda
‘I’m kind of old school English, I love a Sunday roast with all the trimmings and treacle pudding with custard, a good old school English pudding.’ When we ask the chef his legacy meal, ‘I’d like to be known for more than a bloody plate of food!’ – he opts for his signature dish. ‘I suppose I have to say the ox cheek doughnut, it was nice to have a dish that wasn’t unanimously loved by everyone.
There’s something cool in that food is subjective; you soon realise that not everyone’s going to love it!’ With the restaurant situated on the 40th floor of London’s Heron Tower, look out for Daniel at table number 63… ‘It’s basically a really nice booth in the corner of the restaurant that overlooks Canary Wharf, Tower Bridge, the Gherkin, all those iconic buildings,’ he says, proudly. u

Method 01 To make the shallot dressing, sweat the shallots in a pan with a spoonful of olive oil and the thyme leaves. Add the rest of the olive oil and the vinegar. Give it a good stir and leave to cool. Mix well before use. 02 For the honeycomb, make a caramel by placing the golden syrup, water and sugar in a pan. Bring to the boil and when it’s bubbling and golden, add the bicarbonate of soda. 03 Use a deep pan and be careful, as when you add the bicarbonate of soda, the caramel will rise up dramatically. As soon as it rises, pour into a baking tray lined with baking paper. Cool until hard, then smash up into small pieces. 04 Take the beetroots and trim off the leaves. Wrap them in foil and roast at 160 degrees until a knife goes in easily (approx. 45 minutes). Allow to cool and peel off the skin. 05 Cut the beetroots into chunks, toss lightly in the olive oil and roast them in a pan to get some colour. When sizzling, add the goats curd sporadically around, then add the shallot dressing. 06 Finish with a few shards of honeycomb. 07 Dress the watercress in the shallot dressing, and serve on the side. u

Sweet, buttery broads love pork, so adding crispy, salty pancetta rounds up all the flavours of the risotto. A little bit of mint will go a long way – take it to the table in a separate bowl to stir in as you go.

I n g re di e n ts • 200g freshly podded or frozen broad beans • 1 tablespoon extra virgin olive oil, plus an extra
teaspoon for the pancetta and for drizzling • 25g unsalted butter • 1 small onion, finely chopped • 1 stick of celery, finely chopped • a pinch of freshly grated nutmeg • 2 cloves of garlic, crushed • 150g risotto rice • 175ml white wine or vermouth • 600ml fresh chicken or vegetable stock, heated • 50g smoked pancetta, cubed • 50g Parmesan cheese, grated • a small handful of fresh mint leaves, finely sliced • pea shoots, to serve

01 Bring a pan of water to the boil and add the broad beans. After 2 minutes, drain and refresh under cold water. Pop the bright green beans out of their skins into another bowl of cold water and set aside. 02 Heat the olive oil and half the butter in a large saucepan over a medium-low heat and add the onion, celery and nutmeg. Season and gently fry for 10 minutes, covered, until the onions are very soft and have almost lost their shape. Add the garlic and stir through, frying for a further minute. 03 Add the rice and fry for 5 minutes or so, until almost translucent. Turn up the heat and add the wine, simmering for a few minutes until the alcohol has evaporated and the liquid is absorbed. 04 Add the stock a little at a time as the rice absorbs it. Continue, stirring, until you have finished all the stock and the rice is tender. 05 Meanwhile, heat a little oil in a pan over a medium heat and fry the pancetta until crisp and golden. Set aside. Add the remaining butter to the risotto with the Parmesan and a generous pinch of salt and pepper and rest. Stir in the cooked and podded broad beans with the mint. Top with the crispy pancetta and pea shoots, drizzle with olive oil and serve. u

And it’s often when whisking the dressing that I decide to add a little of something else. Here it's pumpkin seeds. Roast chicken seems to live very happily alongside crunchy nuts and seeds – they give oiliness, texture and are subtle enough in flavour not to overpower – they are a sprinkle-on, effortless addition to any salad. Ras el hanout is a blend of spices used in Moroccan cooking and gives a wonderful fragrance to the chicken – the smell when it’s roasting will send you into a stupor. It is easy to get hold of but it’s just as easy to make your own and keep it in the cupboard to stir into tagines, dressings, roast lamb or soups.

ME T HO D Put all the ingredients into a pestle and mortar or a spice grinder and grind to a fine powder. Store in an airtight jar – it will keep up to 6 months.

• 300g giant couscous • 4 large handfuls of lamb’s lettuce and little leaves • 2 tablespoons chopped fresh parsley leaves • 2 tablespoons pumpkin seeds

pomegranate juice, simmered and reduced to 2 tablespoons (find pomegranate molasses at thespiceshop.co.uk, or buy Al Rabih pomegranate molasses from Sainsbury’s and Middle Eastern shops) • 1 tablespoon red wine vinegar • 50ml rapeseed oil • 2 tablespoons natural Greek yoghurt
Me t ho d 01 Preheat the oven to 200°c/fan 180°c/gas 6. Place the chicken in a large roasting tray. Mix the garlic with the ras el hanout and combine with the softened butter. Push some of the butter mix under the skin of the chicken, being careful not to tear the skin, and smooth out with your fingers across the breast. Rub the rest of the bird with the remaining butter and season generously with salt and pepper. Push half the unpeeled orange into the cavity. 02 Slide the chicken into the oven. After 15 minutes, turn the oven down to 180°c/fan 160°c/ gas 4 and cook for a further hour, basting with the juices every so often until cooked. 03 While the chicken is cooking, cook the couscous. Bring a pan of water to the boil and add the giant couscous. Simmer for 7–10 minutes, or until tender. Drain and rinse under cold water. Set aside. 04 When the juices of the chicken run clear, remove the bird from the oven, transfer to a carving board and leave to rest for 15 minutes, covered with foil and a tea towel. Drain off any juices from the chicken and reserve for drizzling over the salad with the dressing. Slice up the chicken and set aside. 05 For the dressing, mix the pomegranate molasses or reduced pomegranate juice and red wine vinegar together. Slowly whisk in the rapeseed oil until the dressing emulsifies, then stir in the yoghurt. Season well with salt and pepper to taste. 06 Assemble the leaves, parsley, giant couscous and remaining sliced orange in a large shallow salad bowl and top with the spiced chicken. Drizzle over the dressing liberally, along with the reserved chicken juices, and top with the pumpkin seeds. u

As a seasoned chef with many illustrious years in the food industry already under his belt, Ricky does more than cook at Tootoomoo’s Crouch End Hill eatery – he creates. New dishes constantly adorn the ever-changing menu – his current specials include Grilled Salmon Miso and Wasabi Lamb – and the Vietnamese shop-style open kitchen creates its own vibrant, family-friendly ambience. Tootoomoo also sets out its stall by being free of environmental impact. The restaurant uses recyclable packaging, cocktails like the Tootoomoo Martini and Lychee Bellini are collected by customers or delivered in reusable or returnable glass jars; even most of the bikes used to speed meals to hungry diners in ten North London postcodes are electric, with a carbon-free footprint. The same is true in Highgate, where a second outlet opened earlier this year with limited seating but a keen focus on takeaway and home deliveries. And by all accounts the tale of Tootoomoo, which has its roots in Indonesian folklore, is still being written with rumours of a third venue on the cards. Watch this space... u

The quest for the best natural ingredients at north London’s Tootoomoo f something sounds too good to be true, it usually is. I But every rule has its exceptions and a pan-Asian restaurant that promises free food for all must surely be a fine example: that’s food free of additives, free of anything other than the freshest ingredients, and available free from gluten and dairy. In fact Tootoomoo, a precocious youngster with two North London eatin, takeaway and home delivery venues and a reputation beyond its 22 months,

ROTORINO Real-deal Italian cooking in Dalston and there’s not a pizza in sight Wo r d s h e l e n b a r o n
O
nce barren land as far as fine dining was concerned, Kingsland Road is fast becoming one of the most rampantly fertile sources of culinary quality in town. Among the growing number of talked-about openings, Rotorino looms large. There’s been a buzz about this place since it opened back in April, and it’s already popped up on many a hipster’s birthday invitation. The long, 24-seat sharing table – the first thing you see when you enter the restaurant – is at least partly responsible, as are its Dalston location and the very respectable pedigree of its founder, Stevie Parle of Dock Kitchen.
The look of the place can’t hurt either, if the trend-savvy customers are anything to go by. Designed by Jonathan Mangham of Mango London Architecture (Milk & Honey, The Clove Club, Sager & Wilde), the airy space (it used to be a bank) offers a nice mix of booth seating, cherry wood ceilings and geometric patterned tiles. There’s a classy Soho sheen that’s been much needed in these parts for a while; plus, while everyone loves Italian food, Rotorino is a bit more interesting than your standard pizza-and-pasta joint. Parle excels in delivering simple Southern Italian fare in a sophisticated, stylish way. The menu champions wood-grilled fish and meats, putting the emphasis on fussfree cooking – not that you’d necessarily notice, as there are enough innovative flavour combos to content even the most

adventurous foodie. Day-boat fish and locally-cured meats are British-sourced, which means the menu ends up as a kind of British celebration of the best of Southern Italy: sweet. The cocktails are fun too, and the wine list is created by another local hero, Street Vin and Wine Car Boot founder Ruth Spivey. On our visit, grilled turbot with rosemary and vinegar oil and sasso chicken with ricotta were served whole, for a group dining experience that encourages sharing, comparing, conversation and general good times. Everything was superb: delicately prepared, beautifully served and tasty as hell. Don’t skip the ice-cream-filled Amalfi lemons for dessert: they are heavenly and so light that they barely require any room to scoff them down (who knew that mascarpone and lemon went so well together?). Another tip is to order your partner to get the chocolate cake with honeycomb, crushed pistachios and sour cream, which makes a nice foil for the lemon ice-cream as well as preventing you having to choose one or the other. In all, a perfectly pitched experience: informal but excellent, confident in every aspect of the cooking and overflowing with atmosphere. Plus, it’s unique – which (in this trend-led neck of the woods, at least) is saying something. u

ome restaurants are forced to rely solely on reputation, located as they are in drab side-streets and back-alleys; others are more spectacularly situated, possessing views and vistas along with an attendant sense of occasion. Hutong at The Shard certainly falls into the latter category, and it was with much anticipation that we ventured to its 33rd floor for lunch. Beyond the foyer-style entrance is a dining room with City views almost literally to die for. Being on the edge of your seat here entails sitting mere millimetres from the great blue nothing beyond the windows, and sitting comfortably suddenly gains a whole new
meaning – especially if, like me, you have a wariness (shall we say) of heights. Fortunately, our visit is on a sunny day; I’m not sure I could stomach meteorological disturbances at this altitude, and with this clear a view. Later in the evening, with intimate lighting inside and London’s full dazzle arrayed below, the panorama must be equally jawdropping. Still, the view is a bonus; we’re here first and foremost for the food. Our attentive waiter presents a selection of menus including signature cocktails and dim sum. A generous range of appetisers, seafood, meat and rice dishes and barbecues is on offer, as well as a hefty wine list, though we’re going alcohol-free – a shame, but the delicate jasmine tea makes a fine substitute for stronger tipples.

We begin with an enticing selection of fish starters including abalone, spicy seafood salad, cuttlefish and razor clams accompanied by green asparagus speckled with white sesame and some crispy vegetable spring rolls. The dishes are uniformly excellent, and we await our mains – fired prawns with dragon tea leaves and special fried rice prepared in chilli oil, and a pan-fried Dover sole in coriander vinegar sauce – with every confidence that they won’t disappoint. We aren’t wrong; the flavours are various and vibrant, combined in an immaculate balance that leaves us very satisfied while simultaneously wanting more. Happily, the dessert menu maintains the standard, though choices are relatively limited – a true Sichuan menu, we’re told, never includes dessert. I opt for a final sharp guava sorbet and light lychee ice cream, which is an exercise in subtlety and fragrance. And this would be the end of the experience, were it not for the final flourish: what one critic has described as a ‘loo with a view’ (and which l would rechristen a ‘view with a loo’). The men’s cloakroom is a must-visit – unless you’re a committed acrophobic, of course. In which case it could be your downfall… u

he second trimester is supposed to be when you glow. All those positive pregnancy concepts suddenly come into play, and if you’re lucky you’ll have all and sundry describing you as ‘radiant’ and ‘dewy’. In my case, though, ‘dewy’ seems a short step away from ‘greasy’, and entering the fourth month hasn’t meant the downsides have simply disappeared. Peeing for England is a given, as your baby grows and puts the squeeze on your other internal organs, bladder included. Many women see their morning sickness fade away at this stage only to be replaced by stints of digestive trouble and bloating. Whether pregnancy ‘becomes you’ or not is largely down to the hormones swarming through your system, so try not to get too worked up about it. The simple fact is, the beginning of your second trimester will hopefully see you settling into your pregnancy, and is therefore a good time to take stock and pay some attention to your rapidly changing body. Tackle stretch marks now by oiling up after a bath or shower: the Estelle and
Thild body oil is a new beauty best-seller. It’s also important to keep up with some form of exercise – not only can this improve your endurance during labour but it will help with maintenance, so there’s less to do post-baby. Remember, it’s unlikely you’ll get to do much at all immediately postpartum, so you want to keep your strength up for as long as possible before the sprog pops. I visited TenPilates for a special prenatal Reformer Pilates class, which I preferred to a prenatal yoga session. Truth be told, I was being a little over-cautious turning up to the latter (I hadn’t worked out in a while). All the other mothers were fit to burst and I was barely showing; and while I was impatient to get on with more dynamic moves, everyone else was tuning in to baby and extending the odd limb. I must have looked like I’d taken the class by mistake. At the four-month mark, I’d recommend sticking to regular yoga classes – with some slight adjustments. It’s just a case of informing your instructor that you’re preggers. I also went to the Aveda Institute for a special pregnancy massage designed to relieve tension built up in the first

Manners do Matter When the editor of Tatler said that politeness and respect are as important as good grades, her comments struck a chord

ood manners are as important as good grades when it comes to forging a successful career. So Kate Reardon, editor of society bible Tatler, told a group of teenage girls this year. In a speech at Westonbirt School (Gloucestershire), Reardon said, ‘It doesn’t matter how many A-levels you have, what kind of a degree you have, if you have good manners, people will like you... if they like you they will help you. I’m not talking about using the right spoon for soup or eating asparagus with your left hand. I'm talking about… making people you interact with feel valued.’ Her comments prompted a storm in a media tea cup; they were judged ‘anti-feminist,’ but among sniping about Reardon’s own privileged upbringing (Bute House, Cheltenham Ladies College, Stowe) there was also acknowledgement that she had raised an important issue. Reardon’s speech comes amid growing concerns that generation text are not fit for purpose in the working world. School leavers may have top notch computing skills but seem to lack some of the basic social skills such as good manners and the ability to hold a conversation. In a report by Barclays earlier this year, personal presentation, punctuality and decent manners were all highlighted as problems for some young people. Around 43% of business leaders said young people failed to understand when it was appropriate to use a mobile phone or when to take a break, and for how long. A worrying 55% said school leavers were unable to manage conversations properly when calling clients or suppliers. Employers and parents will nod in

I despaired of the workexperience graduate with a First and editorship of the student paper... who was too grand to make tea, photocopy or ask for advice, despite his atrocious typos.’ Pelling adds that she knows a financier who conducts all his interviews over lunch to see if candidates have table manners and are capable of conversation beyond football and celebrity. ‘No one wants to spend two thirds of their day surrounded by uncouth braggarts.’

Anthony Seldon, the pioneering head of Wellington College, has already called for schools to hold lessons in manners, punctuality and tidiness. And an All-Party Parliamentary Group on Social Mobility said earlier this year that schools need to place greater emphasis on the ‘soft skills’ such as resilience, empathy and self-control. It recommended giving all pupils a school-leaving certificate to mark their achievements in extra-curricular activities and work experience. In other words, there is a recognition that good old fashioned ‘character building’ needs to find its way back onto the curriculum, particularly in state schools where it has often given way to a relentless academic curriculum. In a report earlier this year, the Confederation of British Industry spoke of its concern that ‘schools were turning into exam factories, churning out young people who are not sufficiently prepared for life outside the school.’ Applauding the changes to the A-level system, the CBI said the business world wants ‘young people who have been academically stretched, but who also display a set of behaviours and attitudes that are vital for success, including determination, optimism and emotional intelligence.’ Reardon had her own tips for the Westonbirt girls: ‘Never hide behind a computer or mobile phone and understand the importance of eye contact'. She told them to use confident self-expression to rigorously research any prospective company before interview, and do as much work experience as possible: ‘Never underestimate the value of good manners. I can count on one hand the people who wrote me a thank you letter after interview and I gave almost all of them a job.’ u

t’s not often that you walk into someone’s house and feel like you’ve stumbled onto a film set. But when you visit Lucy Ryder Richardson’s 60s home, it’s hard to believe that you’re not on location for Mad Men. Filled with retro treasures, from Eames softpad deskchairs to Erik Buck barstools, this distinctive house is a lovingly-curated shine to midcentury design. ‘As someone who likes to collect, I see it as a legacy for my children,’ explains Ryder Richardson. ‘I love how the patina on the wood in these pieces takes on its own character over time and tells a story.’ Yet muddled in with the older furniture are some striking contemporary designs, many of which are Scandinavian-inspired: ‘The modern pieces help to sharpen the overall look,’ asserts the mum-of-two. ‘I think if you stick with Scandinavian design, it never goes out of fashion. The furniture is so beautifully pure; you can see that there’s a lot of love in it. It really compliments the retro look, too.’ And whilst Ryder Richardson has created an authentic period feel, she’s also been clever about her use of colour. A dark green splashback in the kitchen echoes the trees through the windows; an oversized red lamp in the living room stops the scheme from feeling too earthy. ‘My house is very wooden and brown, so I like to have little pops of colour around, like the bright

Don’t be surprised to see buyers from the likes of Heal’s and Conran milling around either; Midcentury Modern’s position as a leading brand within the world of design is well-established. This month, look out for an appearance in the window of Fritz Hansen in Fitzrovia.

I don’t want the house to feel like a museum.’ This appealing combination of old and new provided the inspiration for the Midcentury Modern shows, which Ryder Richardson founded alongside her business partner, Petra Curtis, back in 2003. Together, the pair decided to sink all of their savings into creating a one-off shop selling retro furniture. It was a risk that paid off: Time Out featured it, people came from all over London and the shop made £16,000 in one day. From there, a show was born and now 13 years later, Midcentury Modern pulls in thousands
MIDCENTURY MODERN pulls in thousands OF VISITORS As one of only three brands ever invited to take it over, the display will focus on Midcentury Modern’s own unique story. ‘We wanted it to be very personal,’ reveals Lucy, ‘so along with some of our favourite pieces, we’re also featuring my kitchen table – the one Petra and I sat around when we came up with the idea.’ Also taking place in Haggerston this month is the next Midcentury show, set against a backdrop created by renowned architect Erno Goldfinger. ‘Goldfinger was a very famous architect during the 50s and 60s – he was so prolific that Ian Fleming even named a Bond villain after him. The school he built in Haggerston where the show takes

place is perfect for providing an authentic setting for our midcentury furniture. It gives the pieces real context.’ It’s exactly this kind of building that appeals to Ryder Richardson, whose latest venture is a travel blog, Destination Modernism. he Wild Rabbit may retain many of the charms of a traditional country pub – beautiful old building, well-stocked bar, sunny garden and steady trickle of local customers – but it’s no ordinary village watering-hole. Truffles are serious business in Tuscany, and one boutique hotel offers guests the chance to take part in a secretive search for the elusive tartufo Wo r d s A m a n d a C o n s ta n c e

asta Luna, basta! The man jumped forwarded and grabbed something from the dog’s mouth. The size of a large golf ball, it was black, scored with deep lines, and covered with mud. Even from afar you could smell its earthy, strong aroma. This was a prized truffle and Luna, our trusty Tuscan truffle hound had just dug it out of the hillside. We were on private land – a truffle reserve – a hilly, unprepossessing patch south-west of Florence. We had driven there with Mauro, a Tuscan truffle hunter, and his dog Luna in his van. It had all been quite cloak-and-dagger. A secret meeting at an anonymous road junction between our chauffeur-driven Mercedes and Mauro’s battered van was followed by a rendezvous in a layby, where we climbed into Mauro’s van and headed off-road to the reserve which lay behind chained gates. Truffle hunting is taken very seriously in Tuscany. A truffle is a tuber, the fruiting body of a subterranean fungus. Highly prized around the world for its aromatic qualities in cooking, the rarest and best known is the ‘tartufo bianco’ the white
truffle, worth more than gold gramme for gramme. The best time to find white truffles is autumn; in late May we were hunting for summer truffles the ‘tartufo scorzone’. More abundant and therefore less expensive than its white cousin, the summer truffle is no less prized for its intense perfume and flavour. Once inside the reserve, Mauro set Luna to work. He encouraged her constantly and fed her titbits of truffle from his pocket to whet her appetite. At first sight, she didn’t inspire much hope. More mangy poodle than Hound of the Baskervilles, Luna seemed happy to meander about cocking her leg, much like a dog in a local park. But Mauro, who has hunted truffles since he was a small boy and admits to being ‘tartufo’ obsessed, explained this was all part of the warm up. We followed Luna, scrambled up and down hills, and then, as we stood chatting, it suddenly happened, Luna scrabbled frantically at the ground and a black ball seemed to roll out of nowhere – the elusive, fantastic truffle. After that she was on a roll and couldn’t stop finding them. After an hour or so of exciting hunting, we returned to the van, Luna smothered with appreciation by us doubting Thomases.

TRAVEL / ACTION Mauro then took us, pockets bulging with our booty, to an osteria in a nearby town where his friend the chef patron is famed for his cooking with truffles. Completely off the tourist trail, the restaurant was packed with locals; we sat drinking Chianti from jugs and sampled our treasure. First we ate them as fat shavings over buttery fresh ravioli packed with sweet ricotta and thinly sliced pear and then a typically Tuscan secondi piatti of fried eggs served with truffle shavings and lashings of black pepper. The extraordinary thing about tartufo is that you eat them with your nose –a little like fresh coffee, the smell is what excites more than the taste. It was a truly unique and very Tuscan experience and one offered to guests by the clever people at Borgo Santo Pietro, the boutique hotel we were staying at near the ancient hill top town of Chiusdino, south west of Siena. Enterprising Danish couple Claus and Jeanette Thottrup found the run-down 13th century farmhouse and land in 2001 and with hard work and obsessive perfectionism, they have turned it into a 16-room boutique destination. Part stately home, part rambling homestead, Borgo was never going to be big (though there is planning permission for eight more rooms) but it is quite perfect, from the moment you sweep through the wrought iron gates down a curving gravel drive lined with Cypress trees, you know you are somewhere special. The main house used to be a healing retreat for pilgrims and the Thottrups have worked hard to make this a dreamy haven from reality. Its size means that staying here is an intimate experience, the staff quickly know you and fellow guests soon become familiars.
Luxury is Borgo’s calling card and for the Thottrups this means an amazing attention to detail. Every aspect of the house and gardens has been restored attentively, beautifully and respectfully. The rooms are all furnished with pieces that Jeanette has handpicked from flea markets and antique shops across France and Italy. Hi-spec mod cons are artfully hidden behind paintings and each bathroom is stocked with lotions and potions from the hotel’s own spa. The overgrown gardens and desolate fields have also been lovingly restored. The Thottrups have planted more than 250,000 plants, built a lake and created an organic kitchen garden. Truffle hunting is just one of the activities on offer at Borgo as part of its Concierge Collection; you can have an art lesson, go quad biking, ride a horse or fly in a hot air balloon or plane. There are also authentic cookery lessons spanning learning how to make pizza or fresh pasta. Food is hugely important here. There is a great emphasis on seasonality and local produce, much of the fruit and vegetables come from the hotel’s own gardens. There are two restaurants, the Valle Serena, the hotel’s fine-dining restaurant and the Treehouse Bar, a more informal brasserie, all presided over by new executive chef Francesco Gasbarro. This autumn the hotel is opening its own restaurant in Florence, a step only the most supremely confident kitchen would take. We ate dinner at the Valle Serena one evening, looking out over the valley

after which it is named. The cooking is very formal and technical; the standout meal was a beef tartar made from the celebrated local Chianina cattle. An attendant sommelier wine-matched each of our dishes with an emphasis on local vintages of which there are many. For more hearty, informal fare, there is the relaxed Treehouse Bar, which serves great cocktails, fantastic fresh grills, salad and antipasti. And if the night air starts to nip, the waiters light you a personal wood burner by your table. A great slab of pork from the local Cinta Senese pig kept my other half busy, a langoustine spaghetti and a mozzarella salad all made with the sweetest of local tomatoes delighted me. Like everything at Borgo, the food is the very best it can be. What more could anyone ask for. Maybe just one more truffle shaving? u Truffle hunting is priced at €275 per person. The hunt can be arranged on request and the season runs from 1 September until mid-June. fter finishing my education I realised my childhood dream of working in the film industry. After nearly five years the reality of very long days interspersed with extended periods of inactivity didn’t fulfil my aspirations. A change of career was needed. Consequently on 17th May 1982 I started working as an estate agent for a longestablished professional firm in my home town of Windsor. Instantly I realised I was fortunate to find the profession that has become my obsession for over 30 years. After a varied career in London and the Home Counties, I joined Stadium’s parent company, Anthony Green and Spencer to run the affordable housing division in August 2005 before taking over the day-to-day running of Stadium Residential in May 2009. Stadium Residential has been an active partner in the sale of over 2,000 units within Arsenal Football Club’s Highbury regeneration scheme and continues to support this legacy, letting and selling homes across the borough of Islington, principally in the N1, N5 and N7 postcode areas. Operating from our two stunning marketing suites in Hornsey Street, N7 and the site of the former Highbury Stadium in Avenell Road, N5 we are blessed to be invited to deal with such a fantastic variety of desirable homes and to witness the changes to the area and specifically the property market during that period has been a revelation. We have also noticed that the profile of purchasers and tenants being attracted to the area has

also changed perceptibly. Of course we still find legions of people familiar with the area seeking homes here but the number of international clients, both working in the City or investors, has risen dramatically – clearly the borough of Islington is recognised as a safe haven and a great place to call home. On the topic of change, I feel privileged to have witnessed the changes to the way the industry has operated over the last three decades. There is still a need to have a mandatory registration scheme for sales and letting agents with all members subscribing to a redress system but generally standards have greatly improved to coincide with improved regulation and legislation. In addition to the necessity to understand the technicalities of 21st century property law, a successful estate agent needs to master a diversity of skills, this variety of knowledge and experience makes the work even more interesting than ever and working in the Islington area is fast-paced and exciting even for an old chap like me! When I’m not working I’m generally bored but I have been known to enjoy an Arsenal home game and occasionally quaff a glass of good wine with fine friends. I’m led to believe that I have two teenage daughters. Apparently they enjoy a social life the cast of “Made in Chelsea” would envy but as they are never at home I can’t really comment. However, I presume the pair of virtual strangers who bear a passing physical resemblance to my wife and myself, and visit occasionally in order to change clothes and empty my bank account are probably the duo in question. I only hope they reward my generosity by choosing me a nice nursing home.

irstly, it is worth pointing out that in circumstances where a joint owner wishes to sell a property, unless there are exceptional circumstances or compelling reasons not to do so, the Court will normally make an order for sale. You mention that you agreed that the property would be owned equally. It will be important to investigate whether there is any express declaration of trust between you and your ex-fiancé. This may have been made by using the Land Registry form though you may have entered in to an express agreement such as a Deed of Trust or a Cohabitation Agreement. These are increasingly common arrangements between cohabiting couples where the agreement will record the basis upon which the property is owned and will usually also include provision for the practical arrangements for the property such as the running expenses and dealing with a sale. An express declaration of trust is usually conclusive as to the parties’ respective interests in the property. If there was no express declaration of trust, the position is more complicated. Where a property is purchased in joint names and there is no express declaration of trust, the general presumption is that the parties hold the property as joint tenants, meaning that they are entitled to an equal share of the property. However, there is considerable uncertainty in this area of the law and it is possible that your ex-fiancé may be able prove that the property was intended to be held differently.
