Where are the skills our children will need to wipe out deadly viruses? Well, service provision skills are embedded in the curriculum at Sevenoaks School, so in theory we need look no further. Our alumni certainly go on to achieve extraordinary things; equipped as they are with the skills they need to change the waiting world. Laura Lopez Pascua for example, mastered service provision at Sevenoaks. She left in 2000 for Bath University, Imperial, Oxford and then a post at the

Radcliffe Hospital. Dr. Lopez Pascua also went to West Africa during the Ebola crisis; volunteer work that earned her the Queen’s medal for service. It’s worth considering then, that many of the skills your child may need to make a significant impact, can be acquired here at Sevenoaks.

ith corrugated iron cladding, lofty acoustics and deceiving lighting, abandoned spaces in London were once snapped up to host raves and new hipster bars. This is not the case for the disused rail arch in Elephant and Castle, however I still find myself at 6:45am on an endorphin high, pulse racing, jumping around to a hefty bass. All the makings of a great night out, minus the regret. But no, this is not a rave. As wellness soars to the top of the priority pile, club music heavy-hitter Ministry of Sound have monopolised the quirky space to bring you one of London’s coolest new fitness classes. I’m here to try Showcase; a 45-minute, full-body sweat session led by Rory Knight. Described as ‘the best fullbody workout you’ll ever do’ Showcase is circuit-based with eight separate exercises designed to strengthen, tone and quite frankly, make you pour with sweat. We do each exercise - which include weighted squat jumps, TRX pikes and treadmill sprints - for a minute before moving onto the next station. The circuit is carried out four times with a 20 second rest between rounds. It’s not even 7am and within seconds I’m wide awake, blood pumping. Rory is an encouraging coach and pushes me to the point I’d never reach by myself in the gym. By the end I’m knackered but exhilarated. It’s one of the funnest yet hardest classes I’ve done and well worth the early alarm. ◆ Classes are available in package bundles and range from £10 - £14 per session. reat British Bake Off winner Candice Brown stole the show with her stylish soufflés and enviable lipstick collection. More than 15 million people watched her take the cake in 2016 when she pipped fellow contestants Jane Beedle and Andrew Smyth to the Bake Off crown in a whiteknuckle episode of meringue, sponge and a marzipan peacock showstopper. Now Candice is back with her first cookbook, Comfort. In a nod to her childhood and home-life, the book is jam-packed with comfort food and baking. “It’s completely nostalgic and full of the sort of food you remember eating as a child,” Candice explains. “I like things that evoke memories and I wanted to go down that route. They are warm, hearty, ‘I can’t wait for it to cool down so I’m having a big slice now,’ kind of recipes,” she says. “That’s how I like to cook - with sauce dripping down the side and crispy bits on top that my dad would pick at and my mum or me would tell him off because we’d not finished making it yet.” Candice grew up in the pubs that her parents ran. She would watch her dad prepare meat - skinning rabbits, plucking pheasants - before her mum baked it into rich, hearty pies. But the earliest memories Candice has in the kitchen are with her Nan, Margaret. “I remember she’d make a bakewell tart and then give me the leftovers. Or she’d make Yorkshire puddings and put jam in the scraps to make me a little jam tart,” Candice recalls. “I would drag our heavy leather dining-room chairs through to the kitchen and I’d stand on it next to her. I was a bit of a limit, wherever she was I was attached to her,” she jokes. The book is named after Margaret in testament to the influence she had on Candice growing up. “She was the absolute apple of my eye and when she died the bottom of my world fell out. She was the most modest, hard-working lady and she took so much joy in the family being there,” Candice remembers, “If I could be half the lady she was I would be happy because she really was incredible.” The book is peppered with tributes to Candice’s family members and memories. Alongside Margaret’s Boiled Fruit Cake there’s Dad’s favourite Black Forest Gateau and Tottie Scones for partner Liam.

FOOD & DRINK / INTERVIEW “I really wanted Comfort to start off as mine, but as time goes on it becomes the reader’s," Candice explains, “So if you don’t like a flavour, an ingredient or a texture, change it. Start making things your own and stop worrying about baking, because it shouldn’t be worrying, it should be fun and relaxing,” she says. True to her word, Candice heads to the kitchen for a break from her busy schedule. “At the moment I’m trying to bake every day when I’m at home,” she says. “The other day I had two hours before heading over to my mum and dad’s. I could have spent those two hours doing something constructive, or I could bake and then run late... And that’s normally what I do,” she laughs. We’re all of course wondering how on earth she stays so svelte with all that sugar. “Well, I eat cake most days, so when I’m at home I try to balance it out with a decent lunch - I’ll have a salad, spinach and rice, and for dinner it’s normally stir fry or something similar,” Candice says. It is also no doubt partly down to having a schedule that barely lets up. It’s not even 11am and Candice has already done a hefty stint on Radio 2. She also writes for The Sunday Times and works on ITV’s This Morning, though things have calmed down now that the book is done. “I wrote every single recipe and I tried out each one. I really wanted to do it by myself and I got it done in just under three months,” Candice says. “I don’t think I slept very

Life before Bake Off saw Candice teaching at Ashlyns School in Berkhamsted, as a PE teacher, before moving over to the special needs department. “It was something I took great pride in and I worked really hard to get to where I was,” Candice says. So does she miss it? “I do some days,” Candice muses, “especially now it’s the end of term and the kids are sitting their exams; I keep thinking I should be there to help them out,” she says. “But on the other hand, when I do demonstrations and I talk to parents who’ll say ‘You’ve got my daughter or my son into baking,’ it's like I’m almost still doing that role of inspiring and teaching,” Candice continues. Now with the release of Comfort, Candice will certainly continue to inspire and encourage people to get cooking. Her life since Bake Off has been on a sugar high that shows no sign of dipping any time soon. ◆

1 Put the dried hibiscus petals in a small bowl and pour over the boiling water. Leave to soften for about 5 minutes. 2 Meanwhile, brush your madeleine moulds with melted butter, then dust them lightly with flour. 3 Combine the brown sugar, 50g of the caster sugar and the eggs in a large bowl and whisk with an electric hand whisk until light and fluffy. Add the orange zest, 90g cooled melted butter, plain flour, baking powder, salt, honey and 1 tablespoon of the hibiscus water, and mix together to make a batter. Leave for a minimum of 30 minutes. 4 Preheat the oven to 170°C fan (190°C/375°F/Gas Mark 5). 5 Spoon the batter into the prepared madeleine moulds (you will need to bake in batches). Take care not to overfill the moulds. Bake for 10–12 minutes until risen and golden. 6 Remove the madeleines from the moulds and place on a wire rack. Cool the moulds, then brush with melted butter and dust with flour again before baking another batch of madeleines. 7 Once all the madeleines have been baked and cooled, mix together the orange juice, the remaining 50g caster sugar and 3 tablespoons of the hibiscus water in a small saucepan. Stir over a medium heat until the sugar has dissolved and you have a thick syrup. 8 Poke a hole in the underside of each madeleine and brush over the syrup. Wait for this to soak in, then brush on a second coat of the syrup. Finish with a grating of orange zest. These are best eaten fresh on the day of baking.

ou can’t move for popups in London, and we thought we’d seen them all. But Platform 1 in east Dulwich has taken the concept and run with it. Local resident and owner Chloe Gounder-Forbes has addressed the temporary nature of the pop-up with a series of semi-permanent kitchen residencies on rotation in one kitchen. In the last few years the place has hosted an array of distinguished foodie ventures, many of which have gone onto notable success. Perilla did a stint here before

opening a permanent restaurant on Newington Green, likewise Smoke & Salt. They’ve just popped up in the space previously occupied by Kricket in Pop Brixton. Chloe certainly cherry picks her eateries with a clear eye for expertise. Platform 1 has a relaxed vibe and gorgeous garden terrace; it epitomises Chloe’s liking for "fine dining in trainers." We are here to see what talented young chefs Nick Ross and Max de Nahlik have on the menu. The duo are the brainwaves behind Oxalis, a beacon of exceptional British cuisine with a classic French twist. The pair have worked together in the past at various venues across London

and felt inspired to create a concept together. Their menu derives inspiration from great British produce put on the plate with a fine dining twist. Chloe certainly knows her way around a wine list and has curated a strong line-up for Oxalis. All are handmade from small-scale producers who cultivate no more than 2000 bottles per variety. We kick things off with a glass of Lemos, Vino Frizzante, an easy-going lightly sparkling white from Italy. Our first dish is cucumber, watermelon and feta - a classic combo that can do no wrong - and a pretty beetroot and curd starter, with spring onions and earthy dukkah. This was an intriguing dish, erring on the edge of sweet but with picante, lightly pickled onions and fragrant spice pulling back to the savoury side. We nearly lick the next plate clean of its mackerel, gooseberry and horseradish. It’s fresh, packed with flavour and perfect for the balmy evening. Next we share the pigeon and the beef short rib. Both are cooked well and rich in flavour. We end with sponge cake, blackberry and butter cream. hen Julia Feix moved into her apartment in a converted school in Elephant and Castle, complete with attendant beautiful proportions, she knew that she’d have her work cut out. “It was pretty grim,” she explains. “The previous owner had bought the flat as a shell and did the fit out himself. It was a pretty bad DIY job.” And of no room was this truer than the bathroom. “It was all green slate tiles and some fauxVictorian fittings. All in all, it was a bit odd. So the brief from my client (my wife, Emma) was ‘industrial chic’ – whatever that might be.” Happily Julia – along with Tarek Merlin, co–principals of their Peckham-based architectural firm, Feix and Merlin – was more than equal to the task. “We wanted to achieve an industrial look that didn’t feel at odds with the Victorian heritage of the building,” she says. “The result is a careful balance of industrial finishes, like the concrete floor and the steel/glass partition with more traditional fittings like a roll-top bath, ornate radiator and exposed riser/ shower head. The fully glazed partition took a little convincing and the compromise was the installation of a curtain track along the partition, which – funnily enough – has not been used to date.” The duo chose elegant yet gratifyingly industrial Crittall windows as a partition to visually join the two spaces between

VICTORIAL HERITAGE of the BUILDING the bathroom and the bedroom; hid all the plumbing in the floor build-up (you step up into the bathroom); and then finished the whole scheme in a palette of varying shades of elegant grey. “I’m a huge fan of grey,” says Julia. “You just don’t get tired of it. In fact, there are a couple of red highlights in the bedroom: the fabric cables of the pendants. And those are the bits I’d most like to change now,” she laughs. It was she says, a pleasure to be her own client, together with Emma. “It’s always fun doing things for yourself, and thankfully we both have similar tastes so it doesn’t usually create any problems. I also like to experiment with new ideas in our own apartment and then use the outcome on other projects.” The taps, the flooring and the partition were, she explains, the most expensive elements of the scheme, and she advises anyone working on their bathrooms never to scrimp on the detail. “Always spend money on taps,” she says. “The things you touch every day need to be of the highest quality. Save money on tiles – ceramic and porcelain is hardwearing stuff, you can afford to spend

less here without compromising on quality. Taste is of course a different matter…” As far as Julia and Tarek are concerned, their taste has never been called into question. The pair met while working for Will Alsop, where they both stayed for over a decade. It was there that they launched their own eponymous practice, which started – entirely in keeping with their outlook and style – as a bit of fun. “We entered a competition together just for the hell of it. The brief was to design a café at the end of Deal pier. We got shortlisted and didn’t win (Niall McLaughlin did) but we came out of it having realised that we work really well together. We won the second competition we entered, one of four commissions to build the “beach hut of the 21st-century” and ours was opened 10 months later. That was the start of Feix & Merlin. We both have a similar approach to design and our tastes overlap enough to allow us to always find a solution we both love, while at the same time creating enough friction to make the design process interesting and productive.” It may have been just for fun, but that nascent foray into launching their own studio paid dividends in barely any time at all; since they started, they have been nominated as Young Architects of the Year, an accolade they were “excited and honoured” to receive. It’s not hard to fathom why they garnered

such positive attention. It is, above all, Feix & Merlin’s unbridled joie de vivre that is the consistent thread that ties all their disparate work together. “We have been told that we are not like other architects, in that we design from the inside out, rather than from the outside in,” says Julia. “It’s where you live, it’s where you work, and where you play. We are interested in people’s lives and experiences and how, together, we can make them better.” At present, they are working on a

boxing gym; a private member’s club; the refurbishment and fit-out of a run of railway arches in Hackney (Henry Holland will likely be an occupant of one) and various private residential schemes. Their schedule is, then, near-dizzyingly busy and that’s just how they like it. As Julia explains, they would take on even more were it not for an insidious culture of caution that has crept into contemporary architecture. “Clients have become very risk-averse which, for small practices (read young architects), translates into a very real problem. Clients are often advised by their project managers or financiers to go with a safe pair of hands (read a grey beard) rather than to ‘risk your money’ with a young practice that might not have built a 10-storey tower, an airport, a museum, a school before. So small practices get stuck on a certain type of project size until they get ‘a break’ which allows them to leap to the next step on the ladder… that break gets harder and harder to find.” The duo considers much of their early work experience to have been formative. “Will Alsop taught me so much about the importance of telling a great story and not taking yourself too seriously,” she says. Although she equivocates about naming her favourite buildings – “Oh, I don’t think there is such a thing” – she professes to be a “huge fan of Oscar Niemeyer, and I love the work of Marcio Kogan and his StudioMK27 in Brazil.” There is a theme – or several, in fact: a sultry kind of elegance, certainly. What would be her dream project? She doesn’t miss a beat. “A beach house on a stunning coastline, please.” Sophisticate beach types take note: no one would do it better. u feixandmerlin.com

hen Jen Robinson and her husband Nick spotted simple metal plate racks in a Keralan hardware store, they immediately wanted one for her kitchen. As a visual merchandiser, she had a good eye and quickly realized that the traditional stainless steel wall-mounted rack would fit in with her contemporary British kitchen aesthetic, while also providing a versatile storage solution. These pieces are strong, stylish and practical, yet nobody was selling them in the UK. India is the world’s second largest producer of steel (after China) and steel tiffin boxes, balti dishes and jugs are commonplace. The plate racks are standard traditional pieces and their slightly uneven, imperfect look adds to the charm. Jen brought a few back home with her five years ago and sold them all immediately, so she started importing them as a kitchen table business. ‘The racks are so space-saving; you can empty an entire cupboard into one,’ she says. ‘The whole point is the simplicity of them.’ Since they launched their business, they have imported and sold thousands of them – and now they’ve launched an additional range of steel shelf units to match the racks and create a modular system. ‘The shelves are so versatile – they’re good for bathrooms, for books and as add-ons to the racks,’ says Jen. The CEOs told IBM that today’s business environment is volatile, uncertain and increasingly complex. erving as her home and the inspiration for much of her work, Jane Austen’s depictions of Hampshire have made the area a pilgrimage site for fans of her novels. To mark 200 years since Austen’s death, Tylney Hall Hotel is running the Jane Austen 200 Break. While the grounds and grandeur of the hotel are a natural fit for celebrating Austen, the hotel is going further by offering a chance to watch authentic performances by the Hampshire Regency Dancers accompanied by a traditional afternoon tea. Each dance is preceded by historical anecdotes about Austen, soldiers and the war, the royals and social behaviour common of the period. Lessons are offered for those interested in full Regency immersion.

ith a terrace overlooking the gardens, two lounges and the Oak Room Restaurant, choosing where to dine is the first hurdle to cross, and the second is making a selection from the menu. We trailed the scent coming from the Sunday roast served from a carving trolley, but opted for a slightly lighter offering instead. This included a poached fillet of buttery sea trout on a bed of browned butter hollandaise, accompanied by four large, delightful pockets of potato gnocchi and a vegetarian version of the gnocchi with radish and spring onions.
