When I started this business I really didn’t have a sense of what would make a good gift. I made a flyer with a few gift collections but no one really bought any of them. Well, they bought one—our Snackboard—and it’s still a top seller (p. 37). But the rest were duds. This whole enterprise would have probably been a total flop if I hadn't been lucky enough to have the kinds of customers I did. Customers who said a gift collection was almost good enough, they just wanted to know if they could change it a bit. Hey Mo, take that olive oil out, put in this cheese. Hey Mo, not so many brownies, let’s do some cookies instead. The result was nearly every gift I made was custom. Fast forward twenty-five years and my utter failure to make compelling gifts has ended up as a force of good. I might be a crappy gift designer, but I take some solace in the result. We basically set our business up to treat every gift box and basket as custom. It’s a huge benefit for you. If you ask us to change something it’s usually no problem. We’ll make it. Sometimes its size or perishability gets in the way, but most of the time we can work something out. It’s not too much different than getting a custom sandwich at Zingerman’s Deli. If you see an ingredient in the shop and want it on a sandwich, we’ll figure out how to do it for you. Same goes with gift boxes. We used to have to do all of our customizing on the phone. Websites and the software that runs them couldn’t deal with customizing. (They were so bad, in fact, that we built our own software.) They have started to catch up, though. We’ve been able to put some baked goods custom boxes online, like you see here. There are also customizable gifts of coffee cakes (p. 51), gelato (p. 40), and cheese and charcuterie (p. 4-5). We are working on more. Meanwhile, if there’s something you like that you don’t see, just ring or email. We’ll always customize for you. Always.

You CAN please all the people all the time with the right kind of party spread. The trick is all about variety. Start with color and think of the spread as any work of art (which it will be). You’re not shooting for a rainbow, but make sure the foods you serve aren’t all one color (an all beige spread is just as boring as it sounds). Now apply the same rule to texture: smooth and crunchy, soft and crusty, spreadable and sop-able. Combine an array of colors with an array of textures and you’ll create the perfect party spread every time!

I’m a sucker for traditions, especially when they’re this delicious. Peppermint bark has been a Christmas staple for my family thanks to my great-aunt Caddy’s sweet tooth and love of Fannie Farmer’s confections. While I’ll never forget Aunt Caddy, this peppermint bark from Chocolate Signatures in Toronto has erased all memories of that other candymaker. Dark Belgian chocolate is topped with white chocolate, then coated in a layer of crushed peppermint candies. Each slab of bark is nearly a quarter inch tall and thick with peppermint. Bonajuto has been making chocolate in the baroque Sicilian town of Modica since 1880. Since the beginning they’ve made unconched chocolate, which makes the texture crunchy, not smooth. Nowadays that texture has come somewhat back in fashion. Here, you can experience it as it was and always has been. These bite sized truffles are spiced with just a hint of red pepper, another typical addition to 19th century chocolate. An outstanding gift for a chocolate aficionado—or history buff. They’re a coveted varietal for making peppery powerful oils, which is what you’re going to get with this. It’s a condiment that can stand up to beans, pasta, red meats. Elia Pellegrino, who makes the oil, enjoys a slab of farm bread topped with fresh smashed tomatoes, sea salt, and a glistening coat of TyPuglia. It comes in a limited edition tomato red ceramic bottle, hand crafted in the studio of Elia’s friend, Michele Cataldo, in the nearby town of Terlizzi. taste the (oil inside the) rainbow Muraglia Olive Oil From Puglia, the heel of Italy’s boot, comes this spicy, racy extra virgin olive oil. Made from 100% Coratina olives, this one ain’t for everybody. But the oil aficionados who crave intensity will be blown away by its big, bold body and grassy, peppery finish. Fittingly, the bottle is just as intense as the oil within. Ceramic artists create each bottle by hand, about three per hour, which makes up quite a bit of the cost. The glaze is vibrant, a swirl of bright stripes. Not only is it beautiful to look at, it’s good for the oil, protecting it from light which causes olive oil to lose its flavor. Fruitcakes

Full disclosure: the price on these fruitcakes may cause sticker shock. While England's national holiday cake has become a cheap industrial laughing stock, these are another species altogether. Crafted by Robert Lambert in California from rare citrus that he picks and candies himself. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a taste revelation.

Robert's classic cake, the one we've offered for many years. It's by far the best of its kind I’ve ever tried. Blood oranges, bergamots, Rangpur limes and more, many that he picks himself. Each cake is soaked in cognac and aged for a few months, then garnished with a slice of candied fruit and a bay leaf, all wrapped gently in cheese cloth. It tastes fresh, clean and lively. IRresiStible italIAn fruits Wild Cherries and Hand-Picked Apricots in Syrup It’s been a dozen holidays since I found wild Italian cherries from Piedmont. I remember bringing the first jar to Christmas at home, spooning out individual fruits to top a crisp of cracker slathered with a gooey triple crème cheese whose name I forget. I kept at it for an hour—I have a big family and everyone wanted seconds. We barely made a dent in the jar. Prepared in small batches so they do not bruise, packed with syrup in a resealable glass jar, we've been bringing in a small quantity every holiday since and their fans gobble them up. We also offer soft, tender apricots, hand harvested and rushed into a simple syrup bath within hours. The speed is important, it protects the texture and flavor of the fruit. The longer they wait around, the more their texture breaks down, the mushier they get. But that’s the only rushing allowed. The apricots take their time once they reach their bath, allowing the sugar to slowly soak into the fruit, preserving them and freezing their flavor at its peak. An elegant gift. Fantastic with gelato or fresh cheeses. The cherries are pitted, but the apricots still have their stones so chew carefully. The Balsamic Vinegars of La Vecchia Dispensa While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of outstanding balsamics under the name La Vecchia Dispensa. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. 6 Year Aged Cognac Vinegar

It’s not too often you see the French taking a page from the Italians when it comes to cuisine, but they did just that in crafting this intense, complex vinegar. It’s made from the same grapes (Trebbiano) balsamic vinegar makers use in Modena, Italy. Just like the Italians, they reduce the fresh pressed juice in copper kettles, then age the concentrated juice in oak barrels formerly used to age Cognac, which gives it a French twist. Like its Italian cousin, this vinegar is smooth, complex, a little sweet with a finish that seems to linger for hours. Ortiz Tunas from Spain

Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena, so high it’s one of only a handful of Parmesans granted the designation Prodotto di Montagna. Harbison Cheese from Vermont

Harbison is a soft-ripened cheese from the acclaimed cheese makers at Jasper Hill in Vermont. It’s a small wheel made from pasteurized cow’s milk, wrapped in the inner bark of spruce trees. The bark holds the cheese together as it ages and imparts a woody, slightly piney flavor to the cheese inside. As it ages, the cheese goes from being light and firm to ooey, gooey, and spoonable. Let it come to room temperature, cut off the top, scoop it out onto something warm and crusty, then sit back and let your eyes roll into the back of your head. Regal Raisin from France One of the my favorite holiday cheeses is Regal Raisin: a triple-crème from France covered in Marc de Bourgogne soaked raisins. A little explanation on those terms is probably in order. Triple-crème is technical jargon cheesemongers geek out over, it basically means the cheese is really rich and made with lots of cream. Its level of butterfat is only slightly less than butter, if that helps. Marc de Bourgogne is aged brandy from eastern France that gives structure to the coating of sweet raisins. Together they slice through the buttery rich flavor of the cheese to open up complex, compelling flavor. Set this down after dinner, stand back, and watch the compliments fly. Recently I travelled to Marcel Petite’s Fort St. Antoine in Jougne, France where Production Manager they age Comté cheese. This was a dream come true for me. Comté from Fort St. and Head Cheesemonger Antoine is the crown of the king and a trip there is like a cheesemonger’s haj. at Zingerman's Mail Order The Fort is special because it’s an ideal environment for very slow maturing of the wheels. Inside, the cheese can develop and express its individual flavors. Plus, it’s cool because it’s really a fort! It was built into the side of a hill in the 1800s and abandoned after it failed at its job stopping Germans in World War II. I love this cheese because I think it’s just about perfect. Pleasant Ridge Reserve This may be the best American cheese being made today. Like a European mountain cheese, it's fruity in an appley sort of way— rich, deep and sweet. Production is very small—about 6,000 wheels a year. They utilize a seasonal, open grazing system, which means all the milk used to make the Pleasant Ridge Reserve is taken when the cows are happy and content out in the open pasture. Happy cows tend to produce great tasting milk. Cabot Clothbound Cheddar Cheddar was originally wrapped in cloth, not dipped in wax. To my mind it has a far more compelling flavor that way. Cheddars aged in cloth have a complexity and length of flavor that’s unmatched by wax. The wheels we get are made by Cabot Farms in Vermont, and then aged at Jasper Hill Cellars. The Jasper Hill team specially selects wheels just for us. The rinds are brushed with lard, and they have a beefy, brothy flavor. Aged at least 9 months, it’s a sturdy cheese with a complex, lingering finish you can’t shake. A great cheese for serious snacking or on a world class cheese platter. The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize it (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids.
