So in 2024, when the brilliant Zingerman’s Bakehouse bakers whipped up a new citrusy version, we were excited to try them. They exceeded all expectations. Nocciola Hazelnut & Chocolate Spread from italy

Gianduja is the classic chocolate and hazelnut confection from Northern Italy, but it’s not usually made like this. You see, Antonio della Corte was creating sweet mixes for pastry shops around Rome and Anna Marie Conti was running a farm with a bed and breakfast a few miles north of the city. They combined their talents to create delicious foods from amazing ingredients and this sweet, nutty, rich and chocolate-y spread is one of them. It’s made from Italian hazelnuts and cocoa, plus olive oil from Anna Marie’s farm. The olive oil adds a layer of ultra-luxe smoothness you won’t find in other giandujas. At least I haven’t and I taste a lot of ‘em. This one feels like an indulgence. Treat it as such. We all deserve a treat this sweet.

Tinned Smoked Trout from Denmark

I don’t know if smoked trout is going to go viral as the new food sensation, but it should. It’s lightly smoky, flavorful without being “fishy” and really easy to use. These supple filets are de-boned and skinned before being packed in the tin with rapeseed oil, which is light enough not to get in the way of the flavor of the fish, but hefty enough to keep its flesh tender, delicate, and toothsome. Serve over crusty bread, with some chopped up hard boiled egg, a bit of onion, squeeze of lemon and pinch of sea salt. Instant lunch!

Peperoncino Hot Pepper Spread from Italy

From the di Mauro family in Salerno, Italy comes this spicy condiment. They start with local chiles (called ‘Amante’ by locals), mash them and mix them with olive oil and a smidge of salt. Then everything is allowed to hang out for a few months, developing deep, spicy flavor, till they’re ready for heat loving folks like us. The heat hits you first in the cheeks, then on the tongue, but it doesn’t mask every other flavor you’re eating. Add a spoonful to pasta or mashed potatoes. Stir some into a bean or tomato soup. Spread some on a sandwich or a pizza, dab some on fried chicken or grilled shrimp or steak. Start slow when you begin to experiment. A little goes a long way.

Beef Summer Sausage from denver

This top-notch version of a midwestern classic comes from Bill Miner and his crew at Il Porcellino in Denver, Colorado. They’re sourc ing local, humanely-raised meats and they’re turning them into some super delicious salamis. Their summer sausage is lightly fermented and smoked so its flavor is bright, meaty, rich and spiked with spices like coriander and mustard seed and even a touch of garlic. Great any time of day, it’s fine for hours outside the fridge so it’s naturally a favorite of backpackers and picnic goers alike. A great tast ing food without pretense. Whenever I add it to a charcuterie board, I find it’s the first thing to disappear. Just saying.

Imagine you’re making a broth from scratch. When you start, it’s thinner and lighter in flavor. As it simmers, the liquid gets progressively thicker and the flavors get more and more intense. The same thing happens as balsamics age, only it takes years instead of hours. In general, a younger balsamic will have a consistency similar to wine and a bright, acidic flavor. As balsamics age for years at ambient temperatures in wooden barrels, each summer’s heat evaporates a bit of the liquid, giving the vinegar a thicker, more syrupy consistency and a sweeter, more complex flavor. Try a sip from a couple of different bottles and you’ll taste the difference right away. One age isn’t “better” than another—instead, different ages of balsamics are ideal for different uses in the kitchen.

Balsamic vinegar has been made in attics all around Modena, Italy, for centuries. Balsamic barrels were (and still are!) made to celebrate the birth of a daughter, and later used as her dowry. Such a precious resource was eaten only rarely, and then only on the richest of foods: sizzling roast meats or sumptuous stuffed pastas. Today, though, practically all balsamic on the shelf bears only a fleeting resemblance to these treasured family heirlooms. Our balsamics from Acetaia del Cristo in San Prospero, just north of Modena, Italy, are the traditional product, aged for decades, judged in a blind tasting to make sure they meet the local standards of excellence. Only a tiny amount is released each year, so our quantities are very limited. These are special occasion balsamics, offered with a rarely seen discount.

The Regal Rarities

Tradizionali Balsamics from Acetaia del Cristo

These are the vinegars about which legends have been woven. Tested by a panel of judges, the qualifiers in Modena are graded gold and white. During the decades-long aging process, the vinegar is shifted from barrels of one type of wood to the next. Cherry, chestnut, oak and mulberry all leave their imprint on the flavor of the vinegar. The result is an almost unbelievable concentration of sweet-sour flavor in a dense, intense, brown-black vinegar that hints of berries, grapes, vanilla. There is nothing like it in the world. An amazing treat you'll always remember. All traditional balsamics from Modena are bottled in Ferrari designer Giorgio Guigiaro's streamlined, sexy bottle, then gift boxed. They may all look the same, but the vinegar is not. We buy ours from Acetaia del Cristo. I think their vinegars are consistently fantastic—and the juniper aged version is unique.

DRIED GREEN MANGO AND DRIED IRWIN MANGO FROM TAIWAN

These two types of dried mango from Yun Hai are a world away from any dried mango you might find in the grocery. And although they’re the same tropical fruit, they taste as different as night and day. The dried Irwin mango comes in thick slices - each piece is one half of a mango. The texture is surprisingly plump and soft, and the deeply sweet flavor is purely mango with no added sweeteners or preservatives. Story has it that one upon a time, Pele, the Hawaiian volcano goddess, fell in love with a man named ‘Ohi‘a. Cyrilla Suwarsa grew up in Indonesia eating her grandma’s roasted cashews. Decades later, inspired by grandma’s recipes, Cyrilla and her sister began roasting and spicing cashews. They start with handpicked, sun-dried nuts which are peeled from their shells only just before slow roasting close to the source in Indonesia. They spice the nuts with chile and lime leaves. It’s not terribly hot, but there’s a little sizzle and the lime leaves give a bright gleam of green flavor.

AVOCADO OIL

We spend a lot of time extolling the nuanced flavors of olive oil, but what about other kinds of oils? Most vegetable oils are often intentionally bland and used primarily for high heat cooking without adding any extra taste. But that’s not the case with this avocado oil. Made from organic Mexican avocados pressed at peak ripeness within days of harvesting, it has a beautiful green color and a buttery rich texture with a flavor that tastes exactly like avocado (because that’s all it is!). We taste a heck of a lot of jam when scouting for new foods, so it can be hard for one to stand out amongst the fruity pack. But after trying this apricot jam and chatting with genial founder Jean-Eric Lavenir, I couldn’t stop thinking about it. The small family-owned company of Olbia uses a medley of ten varieties of apricots grown in their own orchards in Provence. The fruits are picked in the morning and in a jar by the end of the day. The sumptuous jam is a beautiful jeweled orange color with a balanced sweettart flavor that will brighten up any breakfast or dessert.

Harissa, the chile-based paste common to North Africa, is always in my fridge. But harissa comes in all kinds, and this rose harissa has me feeling “the more, the merrier.” It’s a dry blend of directly sourced spices including Turkish pepper flakes, Moroccan rose petals, cumin, coriander, caraway, and garlic. The rose tempers some of the spice for a more mild heat, and it adds a floral, earthy undertone without overpowering the mix. Sprinkle over eggs and veggies, add to a rub for grilled meat, or if you need a paste (perhaps while cooking from a Yotam Ottolenghi cookbook), don’t fret — you can mix it with water, oil, and vinegar to make a paste.

Razor Clams in Olive Oil

Most of us think of smooth, round castanets of shells when we hear the word "clams," but they can come in all shapes and sizes. Razor clams—aka Jackknife clams, since they look like that, too—are long rectangular shells that hold a wily (and very delicious) mollusk inside. Finding the clams is difficult—they burrow below the sand of the shore and you can only spot their “show” if you look carefully and see a tiny hole at the bottom of a shallow depression in the sand—but they are a delicious reward… and these might be the tastiest razor clams I’ve ever tasted. Tender and pleasantly chewy with a rich, buttery flavor. You can lay them out as appetizers with squeezes of lemon and good olive oil, or chop them up and toss them with pasta. They can even be the secret clam in your next pot of chowder.

Güeyu Mar is a seafood focused restaurant in Playa de Vega along the Asturian coast of northern Spain. They catch, grill, and serve fish straight from the sea—and they also preserve their creations in tins like this. Whole, local, fresh caught sardines are first grilled then smoked over select woods, then their tails are carefully removed and collected into this tin and packed in extra virgin olive oil. The tails taste like an indulgence. Rich, buttery flavor with an equally luscious texture, the tails are beautiful laid out on a dish—oil and all—and served with crackers or crusty bread. Rare. Latvian Smoked Sprats

Before last year I didn’t even know what a sprat was, but now I’m hooked on the little fishes. Similar to sardines but slightly smaller with a more assertive flavor, these sprats are fished out of the Baltic Sea in winter. They’re smoked over black alder wood and then layered in a tin with rapeseed oil and a touch of mustard seed according to an old Latvian recipe. They’re plump and meaty with a distinctly smoke-forward flavor. I love serving them in the tin alongside a hunk of crusty bread and pickled vegetables so the fish can really shine.

Potato Knish, handmade at zingerman’s deli

The knish is a Jewish pastry stuffed with savory filling wrapped in flaky, buttery dough. We’ve been making them at Zingerman’s Deli since 1982. The inside is made of mashed Yukon Gold potatoes, onions, and herbs. The outside is a tender, flaky, handmade crust crafted from fresh farm cheese from Zingerman’s Creamery. Kifli Almond Cookies

An Austrian and Hungarian favorite, kifli are crescent moon shaped cookies. They’re made with almonds, flour, butter, sugar, vanilla and a bit of powdered sugar. Each sweet cookie is perfectly balanced between buttery and almondy with a delicate, crumbly texture that practically melts in your mouth, a lot like shortbread. They are, in a word, scrumptious. Share them, if your will is strong enough. Zingerman’s Bakehouse makes them just one month of the year in February, so I’d order a few and stock up, if I were you.

Beautiful Babkas

Babka is a sweet loaf, both fluffy and rich, kind of like a light textured coffee cake with a dense filling swirled throughout. The master bakers at Zingerman’s Bakehouse make two flavors. Rustichella pasta, from Italy’s Abruzzo region, is made from hard durum semolina that’s extruded through bronze dies so it has a scruffy, rough surface, perfect for holding sauce. It’s dried at low temperatures for three to four days, which gives it a dense, chewy texture. Rustichella takes a quick weeknight pasta dinner from ordinary to extraordinary. Each shape comes in a 500 g bag.

From Gragnano, a hilltop town just south of Naples that’s known as the birthplace of dried pasta. The Zampino family makes Gentile pasta using a special type of wheat called Senatore Capelli, an old heirloom varietal that’s difficult to grow but incredibly aromatic. The Napoletani shape is like a shell, but with more embellished ridges. Ziti rigate are ridged tubes. Both are outstanding with chunky sauces.

Cravero’s Parmigiano Reggiano

Giorgio Cravero sources Parmigiano Reggiano from San Pietro dairy, located high in the hills above Modena. The diverse herbs and grasses at that high altitude makes for especially flavorful milk, which in turn makes for especially flavorful cheese. Giorgio ages the wheels to develop particularly soft, sweet flavors, good enough to eat all on its own (though it’s excellent for grating over pasta, too).
