Cow’s milk dominates the cheese best seller list. Chances are a cow’s milk creation is on your Top 5 list, too. The roster is just too good: cheddar, Parmigiano Reggiano, Gruyère, Brie… and it just keeps going. Cows are the productivity powerhouses of the dairy world, making five or ten times as much milk as sheep or goats every day, which is one of the reasons their cheeses are so common. Cow’s milk cheeses also taste great at a wide range of ages, from soft creamy mozzarella made just hours ago, to extra aged wheels of Comté (find it on page 2) that have been intensifying for over three winters.

For many Americans eating goat’s milk cheese is rare and, when it is enjoyed, is often a small puck of cheese that hasn’t been aged long and is spreadable. Proper Beef Brisket
This brisket comes to us from Tom & Tracy Dykstra’s Moraine Park Farms, here in Michigan. The cows begin their lives in the grazing lands in the western Upper Peninsula. Then they spend the rest of their time at the family ranch near Zeeland. The beef is antibiotic and hormone free. Each brisket is between 3–4 lbs raw, with a beautiful cap of fat that you won’t want to trim away. We’ll include the same recipe used at Zingerman’s Deli for holidays like Passover. It’s easy to follow, though it will have to brine overnight so keep that in mind. Also includes a recipe for gravy that you can serve for an extra bit of brisket flavor.
