On March 15th, 1982, Paul Saginaw and Ari Weinzweig opened the doors of Zingerman’s Delicatessen. "Our goal,” said Paul, “was to make a sandwich so big you needed two hands to hold it and when you took a bite, Russian dressing would drip down your arms.” Things have changed a lot in the last thirty-nine years. The sandwiches still take two hands, though. The Zingerman’s Reuben was, is, and most likely will forever be our most popular sandwich. We make about fifty thousand reubens a year for people who come stand in line at the Deli. And we ship thousands to deli lovers all over the USA—loads of them this month, when they're on sale.

Zingerman’s Bakehouse first fired up their ovens in 1992 with one goal: to bake full-flavored loaves for the sandwiches served at Zingerman’s Deli. Almost overnight, customers were beating down the bakery’s doors looking to buy bread. That demand never died down, and today we ship thousands of loaves every year to bread lovers nationwide. We bake them with minimal ingredients. We take our time—up to 18 hours for tangy loaves like Sourdough. And we bake in a stone hearth oven, which gives the bread a crisper, more flavorful crust.

Zingerman’s Creamery has been making fresh cheeses in Ann Arbor since 2001. The expert cheesemakers start with local cow’s and goat’s milk, hand-ladle the curd to preserve its delicate characteristics, and give the cheeses plenty of time to develop full, complex flavors.

Berbere Goat Cheese

Berbere is an Ethiopian spice blend of chili peppers, ginger, cardamom, and more. It’s bright red, a little hot, a little sweet. Duroc Pork Chops

Skip the pineapple here, these hams don’t need it. Juicy, smoky, thoroughly delicious, they come from hogs from a mix of heritage breeds, like Yorkshire, Hampshire, Berkshire, and Duroc. They are raised in the Midwest on small family farms, never given antibiotics or hormones and get outside with room to root and roam. The hams are cured by Smoking Goose with clove, juniper, bay leaves, and garlic, then smoked over a mix of applewood, cherrywood, and hickory for eight hours. Full of flavor, and easy to enjoy. Duroc pork has a tremendously deep, rich flavor. These heritage Duroc pigs spend their whole lives out in the woods and pastures of Greg Gunthorp’s farm, rooting for nuts, roots, and greenery. Fourth-generation farmer Greg Gunthorp not only cures his own bacon—he also raises all the heritage-breed Duroc pigs himself on his pasture-based northern Indiana farm. Cheddar, as Monty Python reminded us, is the single most England. Made with the milk of the Montgomery family’s cows, popular cheese in the world. Gouda is irresistible. The style of the “make” (the word cheese people give to the process of creating solid cheese from liquid milk) creates butterscotch caramel flavors that nearly everyone adores. If you are doing a good job aging gouda you retain its sweetness and never let it drift into acrid bitterness—something that afflicts many goudas I taste in the states, especially those aged for too long, but never an issue with these expertly-aged wheels.

Soft cheeses are some of the trickiest cheeses to sell. Their window of deliciousness is precious and short. Eat them too soon and they can be rubbery, bland, chalky. Eat them too late and they can be a funky sludge of moldy goo. But just right, ah, Goldilocks, then you have a luscious treasure. We offer just a few soft cheeses, which makes it easier to tend them in our cheese room. We can select a plump white specimen that’s ready to eat. Unwrap it and let it warm for twenty minutes at least—soft cheeses really benefit from being served at room temperature.

Blue cheeses are the anchovies of the cheese world. Controversial. Polarizing. They have fiercely loyal fans. They have diehard haters. But I want to tone down the rhetoric. My take is that the haters just haven’t had the right blue cheese, a superlative blue, a blue like real Stilton, or Bayley Hazen. These are the blues that change hearts and minds. And tastebuds. Mountain cheeses often have two qualities in common: big wheels and big flavors. These are no cute pucks of cheese, no little rounds you can lift with one hand. They are often the size of wagon wheels. Three feet across or more, they take two people to crack open. Big wheels can age longer before drying out which means a cellar full could feed a village during winter snows, a practical historical reason behind their size. “Miche” is French for loaf and typically refers to the large size and round shape in the style of traditional French country bread. Ours is made from a mix of Michigan wheat, rye flour, whole buckwheat, and spelt flour, all whole grain and freshly milled on our stone mill at Zingerman’s Bakehouse before being mixed into a dough and naturally leavened by its own unique starter. ryes Traditional Jewish rye bread is still an endangered American species. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. They’re the breads I reach for to make a sandwich or to eat with cool butter and fresh oysters. A perfect pairing with corned beef.
