Coop’s Salted Caramel Sauce When I started working at Zingerman’s, I would try to impress my mom with exotic flavors from far off lands. She’d taste them, humor me, then worry I was becoming a food snob. Eager to please, I shifted gears and started sharing foods I knew she loved, and there’s nothing higher on her list than caramel. Coop’s salted caramel is her ideal sauce. “Oh. You can’t beat the buttery sweet taste of caramel. There’s nothing like it,” she told me the last time she received the wax-topped jar. “Better than chocolate any day. Zingerman’s Peanut Brittle My mom doesn’t have a huge sweet tooth—more like a healthy tooth. She drinks her tea black, she prefers her vegetables plain without sauces or dressings, and if she has any dessert it’ll probably be a piece of fruit. But there are a few sweets—especially ones with nuts—she has a hard time resisting. At the top of that list is the peanut brittle from Zingerman’s Candy Manufactory. She never buys it for herself, but when I bring a box of peanut brittle for Christmas or her birthday, I know it won’t last long. She says it best: “they start with better nuts and better sugar—it’s tasty. And then they make it really crispy, the way it’s supposed to be. American Spoon Red Haven Peach Preserves Zingerman's Inventory Analyst

When I was little, I remember playing in my mom’s grandparents’ yard on their ranch in California’s Central Valley. I think I probably ate some bugs in the grass. But when my mom was a child, she remembers summertime visits sitting outside at their picnic table, eating peaches from the tree in their yard, the juices running down her arms. Now, when she tastes American Spoon’s Red Haven peach preserves she’s transported to those summer days of childhood. She’s always got a few jars in her pantry for toast and oatmeal. The jam has a true peach flavor, not a flavorless sugary orange blob in the bottom of your yogurt cup. It’s not too sweet and has a wonderful chunky texture. And it tastes way better than bugs. tarA's favORite Wild Fennel Pollen I love cooking with (and growing) herbs and spices. In fact, it’s an interest I’ve had for a very long time. In college I visited markets in Columbia and Ecuador for a research project on ‘Spices of the New World Tropics.’ Over the years I’ve done a lot of experimenting with different spice flavor combinations (with and without success at times). My current favorite spice to experiment with has been our wild fennel pollen from Tuscany. I love the exotic flavor it lends to fish, chicken and especially pork. Most recently I found a wonderful combination combining it with our Urfa pepper from Turkey, ground ginger and sea salt as a rub for pork roast or spare ribs—a favorite lunch of many of our staff. Comté from France's Fort St. Antoine Recently I travelled to Marcel Petite’s Fort St. Antoine in Jougne, France where they age Comté cheese. This was a dream come true for me. Everyone acknowledges that the French make great cheese and Comté is king in France. Comté from Fort St. Antoine is the crown of the king and a trip there is like a cheesemonger’s haj. The Fort is special because it’s an ideal environment for very slow maturing of the wheels. Inside, the cheese can develop and express its individual flavors. Plus, it’s cool because it’s really a fort! It was built into the side of a hill in the 1800s and abandoned after it failed at its job stopping Germans in World War II. Before I ever visited the Fort or even knew of it, I was already a Comté convert. I love this cheese because I think it’s just about perfect. It’s a wonderful balance of flavors that include hazelnut, brothy French onion soup and butter. It has the most delicate hint of sweetness and a super long finish. Perfecto! Hummingbird Buttercream Cake My favorite product is the Hummingbird Cake. Seriously. The BEST. Cake. Ever. It’s moist and flavorful, with a bit of everything in every delicious bite. MAGIC BROWNIE, REALLY?

A DOZEN THINGS THAT MAKE FOR BETTER TASTING BAKED GOODS 1. Butter Tastes Better You can’t tell just from looking at a cookie or a piece of cake whether it’s been baked with butter or shortening. The bottom line on baked goods’ flavor is that butter tastes better. It’s also about ten times more costly, so more and more commercial bakeries are shifting towards less expensive shortenings or margarine. You can taste and smell the difference—the sweet, rich scent of butter is right up front in a Bostock, followed by almond and orange. Shortening, on the other hand, has no aroma to speak of. Good pastry should smell good.

2. Better Butter The Bakehouse doesn’t just use any butter. Many of our baked goods start with sweet butter from Grassland. Tastes better, with less water, and more flavor. There’s no way around it—the better the butter the better the baked goods.

3. Belgian Chocolate There’s chocolate. And then there’s Belgian chocolate. Our chocolate chunk cookies are loaded with big bites of Callebaut Belgian chocolate. Higher in cocoa content, Callebaut is chocolatier, richer, more delicious than the inexpensive, mass-produced chocolates you’ll find in most baked goods.

Quince is the main ingredient in Spain’s famous membrillo. The pear-like fruit is used to make a sweet paste, usually served along with manchego cheese. Luckily, quince can strive in the unique climate of northern Michigan which just so happens to be the home of preserve makers American Spoon. They take fresh quince from Northport, Michigan, turn it into puree, and cook it down with a local Riesling to create their own spreadable version of membrillo. Slightly acidic, its flavor is bright and a little earthy with a velvet smooth texture. I have always been a fan of our Better than San Francisco Sourdough Bread, but for a while I was hesitant to try our Chocolate Sourdough. I had a Goldilocks dilemma—would it be too sweet, would it be too sour, or would it be juuuust right? Txakoli White Wine Vinegar Txakoli wine, itself hard to find outside the Basque country, is rarely made into vinegar. The vinegar is as rare as an albino rhinoceros. It’s made by Emilio Lunegas, a devoted Basque wine maker in the town of Orduna. He decided to develop a vinegar from the traditional wine and broaden the recognition of the Basque region. Working with top-quality Txakoli made primarily from Hondarribi Zuri white grapes, as well as a bit from its cousin, the equally obscure black Hondarribi Beltza, Sr. Luengas and his colleagues make only about 1,200 liters of the vinegar in a year. The flavor is light, lovely, lingering. It’s not sweet, and there’s an airiness to it that makes it refreshing. It’s very nice on simple salads of most any sort. MAIN INGREDIENTS 1 tsp vinegar 2-3 tsp extra virgin olive oil (like one on the following page) Pinch of natural sea salt, like French fleur de sel A couple of grinds of Tellicherry black pepper OPTIONAL ADDITIONS A bit of finely chopped shallot A tiny bit of finely chopped fresh garlic Mustard, usually Dijon Red pepper, like Marash or Urfa Herbs, like chives, chervil or thyme Small squeeze of citrus INSTRUCTIONS Splash the vinegar in a bowl with the salt and pepper and let the salt dissolve. Whisk in any optional additions with fork tines or a small whisk. Drizzle oil with one hand while whisking with the other. Stop short and taste. If it’s too tart add some more oil. Dress the greens immediately before they go to the plate. If you need to wait a bit between making the vinaigrette and dining, you can cross the serving utensils in the bowl and lay the greens on top so they don’t soak and wilt. Mix your fresh, dry greens with the vinaigrette directly in the bowl with your hands. If you like it peppery finish with another grind of Tellicherry Pepper. Serves 2-4, depending on how well dressed you like your salad.

Acushla Olive Oil

The mountainous, rugged region of Trás-o-Montes—“beyond the mountains”—is in the far Northeast of Portugal. The hills are planted with groves of trees, primarily the native Portuguese varieities most of us—even olive oil veterans—haven’t heard of, like Cobrançosa, Madural, Verdeal and Cordovil. The olives are picked and quickly pressed while young, which leaves the telltale green grassy aroma and artichoke bitterness of a great olive oil. There is also a sweetness to this oil, though, and it’s a bit more tender than the big brassy olive bombs of central Italy. Use it on more delicate dishes like fish: drizzle a big splash over steamed cockles like they do in Portugal. Or pour a swizzle on a bowl of hot soup. Dress some roasted vegetables with a swig. Most of what we sell was once peasant food. I know it seems crazy, but if you think about it—cheese, bread, pasta, jam, and so on—this was all “low” food, farm food. Stories have it that in Spain, even when a family is down on their luck, there’s always money for ham. The crème de la crème in ham-crazy Spain is Jamón Ibérico de Bellota, the cured ham made from black Iberian pigs fed a diet of acorns (bellotas). The acorn diet has a magical effect on the meat, creating fat that melts in your mouth in a surreal, super delicious way. This is the pinnacle of ham—and its price is at the pinnacle too. For the pork-o-phile you know, this is a gift they will geek out over to no end. Full disclosure: the price on these fruitcakes may cause sticker shock. While we think of fruitcake as a cheap, industrial holiday laughing stock, these are another species altogether, crafted by Robert Lambert in California from rare citrus that he picks and candies himself. Taking a cue from its native England, where fruitcake is eaten for special occasions (including royal weddings) year round, Robert made a special batch of cakes just for us for Mother’s Day. A slice cut thin while the cake is cool—I recommend serving it chilled—looks like a stained glass window and is a taste revelation.

White Rare Citrus Fruitcake

Dark Rare Citrus Fruitcake For his Dark Fruit Cake, Robert starts by candying exotic citrus like Buddha’s hand citron, bergamot, blood orange, Texas lemon and white grapefruit peels. He adds hazelnuts, pecans, walnuts, dark raisins, prunes, black figs soaked in Poire William eau de vie—oh yes, there’s more—dates, cardamom, cinnamon, nutmeg, 10-year-old Port, and candied ginger. Then, wait for it... he soaks it all in bourbon. Like everything Robert creates, these cakes are made by hand in small batches with an obsessive attention to detail. Comes wrapped in a muslin bag. Gelato is an instant party. I think it’s entirely appropriate to eat an entire container on your own with a spoon. I’ve done it, I’m not ashamed. I’ve also often sent it as a gift, because I have never met someone who doesn’t like ice cream.
