13th anNual flight of the figs Roasted Calabrian Figs Franco Rao’s figs are an eagerly awaited seasonal crop. Prized dotato figs are picked by hand when they are fully ripe, beginning to dry and concentrate. They’re caramelized over twenty-four hours in a low-temperature oven, a step almost no one takes because it adds extra time and expense. The impact on the flavor, however, is immense. These figs have a roasted, caramel-sweet flavor that’s irresistible. Hand packed in a ball the size of an apple, wrapped in fig leaves and twine. It’s a traditional way to store them in Southern Italy, rustic and attractive. They are great with yogurt, with cheese, with ice cream. From just outside of Athens in the port city of Piraeus, Greece, comes my pick for the most playful confection of the new year. These candied fruits are enrobed in chocolate, coated in a crackling candy shell, then decorated to look like colorful pebbles. They’re adorable enough to catch your eye, but then delicious enough to eat them anyway. We have three fruits: Kumquats are a small, aromatic citrus, about the size of the tip of my thumb. The whole fruit, peel and all, is candied until the center is soft and gooey but the bright, tart citrus flavor still shines through the dark chocolate and orange-sherbert colored candy shell. Amarena cherries are small and dark with a superb sweet-tart balance. The whole, pitted cherries are practically juicy and pack a punch of tart cherry flavor to contrast with the smooth, dark chocolate and toothpaste green candy shell. Lemon features pieces of candied lemon. They bring a lemonade brightness to the sweet milk chocolate coating and bright yellow and pale green candy shells. Italian Sea Salt Chocolate and Hazelnut Cremini Truffles Cremini, that’s a mushroom, right? Usually yes, but not in this case. In the Piedmont region of northern Italy, a “cremino” (plural cremini) is an ultra-smooth cube of chocolate and hazelnut, the luscious mixture Italians call “gianduja.” You’ll find them in the cases of every fancy chocolate shop. These cremini come from Guido Gobino, a bean to bar chocolatier in Torino, Italy, the heart of gianduja country. The cremini are super silky smooth, each dotted with a few toasty hazelnut crumbles. A spicy sweet German tradition Lebkuchen Sandy Lee fell in love with lebkuchen, the traditional German Christmas cookie, while living in Berlin. “It was like nothing I’d ever tasted,” she recalls. “I couldn’t get all those complex flavors out of my head.” She became obsessed, learning all she could about them before returning to the states and starting her own lebkuchen bakery. The recipe dates back to Medieval times and has many steps. The dough is made from almond and hazelnut flours, whole almonds, egg whites, honey, marzipan and a bevy of spices. The dense dough rests for nearly a day before heading to the oven. The finished cookies are hand glazed and studded with almonds (classic variety) or cloaked in dark chocolate. Each tin includes three classic and two chocolate cookies. Each is about four inches across and an inch tall. They’re thick, moist, slightly spicy, sweet and very nutty. The consistency is a cross between cake and marzipan, making them the perfect after dinner treat with coffee or tea. Although traditionally intended to keep for months, I think these sweet, spicy, nutty treats will only last a few days (or hours!) at your house. Fruitcakes Full disclosure: the price on these fruitcakes may cause sticker shock. While England's national holiday cake has become a cheap industrial laughing stock, these are another species altogether. Puglian Olive Oils in Ceramic Bottles
Puglia, the heel of Italy’s boot, is known in Italy for its rustic, rural beauty and beaches, and for being the birthplace of burrata cheese, crunchy taralli crackers (online), and the little ear-shaped pasta known as orecchiette. But I’m willing to bet that soon it’ll be known for something else: ceramics. Specifically, gorgeous, hand-crafted ceramic bottles holding oustanding olive oils. Barbero Torrone Nougat from Piedmont David Barbero’s family has been making torrone hazelnut nougat—what I call Italian brittle—for five generations, since 1883 in the town of Asti. Neither the history nor repetitiveness seems to dull his passion. When you ask him about torrone his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours. We break for lunch! All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” First off, you gotta love the fact that he mentions lunch as a factor in how they make better food. More importantly, he’s spot on, especially when it comes to texture. Barbero torrone is gently crumbly, in a shattering, delicate way. Bonajuto has been making chocolate in the baroque Sicilian town of Modica since 1880. By that time Gustav Lindt had perfected conching, the process that makes chocolate smooth. Nearly every European chocolate maker adopted it. Bonajuto didn’t. They continued to make unconched chocolate, the texture crunchy in comparison. Nowadays that texture has come somewhat back in fashion. Here, you can experience it as it was and always has been. Freshly Milled Whole Grain Flours The latest new old innovation is here at Zingerman’s Bakehouse. Last fall, the team at Zingerman’s Bakehouse installed our own small stone mill. That's led to two major improvements. First, we can work directly with local farmers to get heirloom grains straight from the source. Our rye now comes from the Breslin family in Ottawa, IL. Our soft white winter wheat comes from Ferris Organic Farms in Eaton Rapids, MI. We’ve got a half dozen more local grains, and there are more in the works all the time. We bring in the grains and grind them into flours ourselves. Secondly, the flours we mill are truly whole grain. Most “whole grain” flour in the US is actually processed like white flour, then has some of the bran added back in. It gives the flour a longer shelf life at the expense of nutrition and flavor. When we mill our own flour, we never separate out any part of it. And since we use the flour the same day we mill it, there’s no danger in shortening the shelf life. We haven’t switched over to milling all of our own flour in house ourselves, yet. But month by month, we keep testing recipes for new breads and pastries, or to update classics we’ve made for years to make them even more flavorful. The result is ever bigger and better flavor, but don’t take my word for it. Try for yourself. You really can taste the difference.

“Miche” is French for loaf and typically refers to the large size and round shape in the style of traditional French country bread. Ours is made from a mix of Michigan wheat, rye flour, whole buckwheat, and spelt flour, all whole grain and freshly milled on our stone mill at Zingerman’s Bakehouse before being mixed into a dough and naturally leavened by its own unique starter. I have always been a fan of our Better than San Francisco Sourdough Bread, Service Star at but for a while I was hesitant to try our Chocolate Sourdough. I had a Mail Order Zingerman’s Goldilocks dilemma—would it be too sweet, would it be too sour, or would it be juuuust right? When I finally tried it, I immediately regretted all of the time I spent worrying about the flavor. the crown jewel of the sea Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourthgeneration family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. Inverawe Scottish Smoked Salmon and Trout Gift Box The Inverawe smokehouse lies at the dead end of an oak lined lane, downwind from the Campbell-Preston family’s centuries-old stone house. Walk past its black tar walls, keep the Awe river on your left, climb the foothill to Ben Cruachan, and you’ll leave tree cover quickly, coming upon hillocks of heather and gorse. The anchovies Ortiz cures for us are fished in April with traditional purse seine nets that skim silver-skinned anchovies from the surface. This old way of fishing has two effects. It keeps the sea healthier by leaving unneeded fish from the catch, and it bruises fewer fish because hauls are lighter than with drop nets. Once caught, the anchovies are cleaned, salted, stored for 6 months—a little shorter than usual, so they remain plump—then filleted and packed in olive oil to order, all by hand. These are the crème de la crème of ready-to-eat anchovies, the ones you want to eat on their own, whole. Toast, pasta, pizza, sandwiches, or salads, you name it, these are great on top of it. Kimberly started making vinegars by the Orleans method back in the 70s and they haven’t changed a thing. In a nutshell, the Orleans method mixes fresh wine with older vinegars. The ‘mother’ vinegar teaches the bacteria present in the air and wine to convert the alcohol into acetic acid, turning the wine into vinegar. Kimberly sources Pinot Noir grapes to create this champagne vinegar. It’s light on the tongue, not very sharp (thanks to a lower acidity), bright and fruity. It’s not too often you see the French taking a page from the Italians when it comes to cuisine, but they did just that in crafting this intense, complex vinegar. It’s made from the same grapes (Trebbiano) balsamic vinegar makers use in Modena, Italy. Just like the Italians, they reduce the fresh pressed juice in copper kettles, then age the concentrated juice in oak barrels formerly used to age Cognac, which gives it a French twist. Like its Italian cousin, this vinegar is smooth, complex, a little sweet with a finish that seems to linger for hours. Balsamic Vinegars from La Vecchia Dispensa Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni, her husband Marino Tintori, and their son Simone make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. 19th Century Turkeys Return to the Thanksgiving Table

Heritage Turkeys from Paul Kelly Paul Kelly’s family has raised old breed turkeys in England for almost half a century. They now have a farm in Virginia and offer a limited number of their impeccably raised birds. We snagged some this year and I’m quite excited to tell you about them. There are now a few farmers in American offering heritage breed turkeys which came back from near extinction just over a decade ago. You might even have some available where you live, which would be excellent news and you should order early from your local farmer to try one this year. Heritage birds are in sharp contrast to the modern Thanksgiving turkey, which is a bit of a monster. The modern broad breasted white, as it’s known, was bred to produce a lot of white breast meat as quickly as possible. As everything else got pushed aside in favor that goal out went its disease fighting genetics, out went its ability to survive on its own, out went its flavor. Today’s commercial turkey is raised on a daily cocktail of antibiotics, without which it would succumb to illnesses common in high-density feedlots. It’s also terribly bland. Commercial turkeys taste like salt and water, with very little turkey flavor to mention. Not so with these turkeys. They are full-flavored birds, rich with flavor and never mooshy in texture. Part of the reason is that Paul has them prepared in what’s called “New York dressed.” It’s the old way turkeys were processed on farms. They are cleaned without water, hung to age like steak. It’s a style that, as you can derive from the name, started in the USA but went away as American farmers switched to water processing with no aging. These might seem like small differences—a bit of water here, a bit of time hung to age there. But wait till you taste the difference. It’ll blow you away. This turkey is so tender, so flavorful, it’s so different from what we’re used to it shouldn’t even be called by the same name. None of these flavors are extreme. This is the kind of turkey that everyone at the table is going to enjoy. For many, it’ll be the first time they’ve tasted the real thing, and they’ll be fighting for seconds. You might have any number of great reasons to buy one of these turkeys for your feast this year. They’re sustainably raised. They support old breeds with diverse genetics. They keep alive a traditional way to dress the bird. But when you come back for one next year, it will be for one simple reason—they taste so good. Limited quantities.
