George Lang called Hungary “the land of ten million pastry lovers.” Given the entire population is just shy of that he may have been overstating it—but not by much. Budapest is stuffed with bakeries and drop-dead gorgeous coffeeshops serving up all sorts of confections, cakes, cookies and strudels. You can’t walk down a block without stumbling over a sweet. One of my favorites is Beigli (pronounced bay-glee), Hungary’s take on a sweet cinnamon nut roll. The cake is made by rolling a thin layer of sweet yeasted dough around a filling of ground walnuts and cinnamon. Similar desserts are served across central Europe, known by all manner of opaque names like orechovnik in Slovakia, makowiec in Poland and orehnjaca in Croatia. Beigli has been a Christmas staple since the 1800s and we sold many last holiday. During that time enough of us fell in love with it that we pleaded with the bakers at Zingerman’s Bakehouse to keep making them for Mother’s Day. Robert Lambert’s White & Dark Rare Citrus Fruit Cakes Full disclosure: the price on these cakes may cause sticker shock. Where most fruit cakes are cheap, somewhat industrial and terrible, these are another species altogether. The white has blood oranges, bergamots and Rangpur limes soaked in cognac. The dark has Buddha’s hand citron, bergamot, blood orange, Texas lemon and white grapefruit peels with hazelnuts, pecans, walnuts, dark raisins, prunes, black figs all soaked in bourbon. Summer Fling Coffeecake I don’t know about you, but just thinking about lime and coconuts feels like the right thing to do about this time of year. Spanish line-caught tuna Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourthgeneration family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught—never netted—cleaned at sea and quickly tinned in good olive oil. The olive oil is key. Cured fish connoisseur's corner Head to a bar in Spain or Portugal and you may find yourself snacking on seafood from a tin—and loving it. Don't be ashamed. It's not considered a character flaw. In fact, just the opposite. Preserved fish is treated like seafood royalty on the Iberian Peninsula, similar to how cured ham like Jamón Serrano is prized pork. Here are some of our most spectacular fish for your home tapas bar.

Salt Cod in Olive Oil It seems a little odd that the seafood-loving residents of Spain and Portugal love salt cod so much. In fact, the closer to the water they live, the more salt cod they seem to eat. These people, who have access to the best fresh seafood in the world, on any given night you’ll find them cooking slabs of preserved salted fish. It stymied me until I married into a Portuguese family and started eating more of it. Then I realized that salted cured fish has about as much in common with fresh fish as cured ham does with a fresh pork chop. They're two completely different things. People who raise pigs like fresh pork and they like salted cured pork like ham. Why wouldn't the same be true for people who fish? The salt curing and cooking—which, here, happens as a slow confit in olive oil—creates a cod fillet that’s almost creamy. It may seem counter-intuititive, but salt cod is one of the most luxurious fishes you can eat. That's the main reason Iberians spend hours—and I mean hours—soaking and cooking it. Scallop Rillettes
I’ve never really tasted anything like this. I hadn’t even heard of the Ile de Groix, the island off the coast of Brittany where scallop rilletes are made, until last summer. Nor had I heard of scallop rillettes. As far as I knew, rillettes, slow-cooked in fat like a pâté, were reserved for land animals. Octopus from Ramon Peña
Octopus is a tricky fish to tin. We’ve never sold it and it’s not from lack of trying. I’ve probably tasted octopus from twenty different canneries. Those samples suffered a range of maladies: overly gelatinous, too cat-foody, or, they had what I refer to as “rubber hose phenomenon.” I came to Ramon Peña’s octopus with low expectations born from experience. What I tasted was a treat, a surprise that ranked at the top of my new food list when I discovered them last year. Peña’s round tin holds over a dozen slices of tentacle, suckers intact. Octopus is never a melt-in-your mouth food and these are appropriately meaty with a satisfying ticky tacky bite that never once veers to garden hose. They also possess a scent of the sea so clear it’s disarming. A tin serves four as an appetizer. And since one of those four people probably doesn't eat octopus, there’s more for you. There are many versions sold these days and almost all of them are packed with peppers roasted on gas grills, not wood fired grills. There’s a huge difference in flavor. In the same way that home barbecue tastes better when it’s done with wood, roasted piquillos improve when they get a dose of smoke, the beech wood smoke imparts umami richness and amplifies the flavor. I visited Caricato about a dozen years ago. It was a business living in the last century, and by that I mean the one before the last one. They still grow olives in mixed fields, olive trees interspersed with artichokes and grape vines, chamomile growing wild in the rows. They still press olives by stone, something almost no olive growers do anymore. All this has nothing specific to say about this olive paste. It’s just black olives, crushed and salted. If you like that kind of thing, and imagine how Caricato’s poignant lack of progress affects such simple foods, you can guess how good it tastes. P-PDO 100 g jar $13
Europeans go gaga for asparagus that’s snow white and thick as a thumb. In season, there are restaurants in Spain that devote whole menus to it. It’s tender and mild, the green-grass flavor we're used to is absent. In its place there’s a fine floral aroma, subtle and mild, and it sports a texture as soft as squash. White asparagus’s season is diabolically short and it doesn’t travel well—two conditions that have historically conspired to keep it for locals only. There is a canning tradition though. One of the best sources we’ve found for tinned white asparagus is located in Spain’s Navarre valley. Serve warmed with a simple butter sauce or at room temperature alongside cured ham. Pickled Brussels Sprouts Daniel & Ann Trudel, the folks behind Ann’s Raspberry Farm in Frederickstown, Ohio, love brussels sprouts (and raspberries, obviously). They harvest the little cabbages when they’re still young and tender, then quickly blanche and cure them with vinegar, honey, garlic and a few spices. Roasted Eggplant Spread Dishes made with roasted eggplants are a staple across Greece and Turkey. This one comes from Messinia, the remote, sun-drenched region at the southwestern most tip of Greece. All summer farmers pick skinny Lagada eggplants and fire roast them the same day. Then the eggplants are peeled, crushed, and jarred with a pinch of salt and a smidge of citric acid—that’s it. The flavor is deep, roasty hinting at charred, a little tart, incredibly smooth. roadhouse bread french mouNtain The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. I’d have a tough time picking between this and Farm Bread for top spot on my European-style favorites list. French Mountain Bread has a chestnut colored crust nearly a quarter inch thick, a dense wheaty crumb inside and a toasty, long lasting flavor. It’s totally terrific for toasting. We offer it in two sizes, a ¾ kilo loaf (about 1.65 lbs) that’s good for munching and a 2 kilo (about 4½ lbs, illustrated) work of art. I love the 2K loaf. A good foot and a half across and four or five inches high, it’s decorated with a hand-cut “Z.” The size is significant because bigger loaves almost always taste better. Traditional Jewish rye bread is still an endangered American species. Twenty-two years after we started baking them in Ann Arbor you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. Koeze Peanut Butter Made in Grand Rapids to a hundred year old recipe. Jeff sources incredible Virginia peanuts, brings them up north in one ton sacks, then blanches them to remove the skins and keep them from going rancid (a common flaw in a lot of natural peanut butters). He roasts them in vintage coffee roasters, grinds them smooth, then adds a bit of salt±—no sugar. Traditional Turkish Delight with Double Roasted Pistachios I remember reading The Lion, The Witch, and the Wardrobe as a kid and being flabbergasted when Edmund gave up his siblings to the White Witch for plates of Turkish Delight. Mushroom Olive Oil from Spain Infused oils are a tricky business. Most are made from poor quality olive oil—if it’s olive oil at all—and strongly flavored cheap ingredients that try to mask the oil’s flaws. The problem is you can’t tell any of that until you’ve bought a bottle, taken it home and tasted it. Too late! It’s made me a real skeptic whenever an infused oil comes onto my desk.
