Robert Lambert’s Rare Citrus Fruit Cake Full disclosure: the price on this cake may cause sticker shock. Where most fruit cakes are cheap, somewhat industrial and terrible, this is another species altogether. It's by far the best of its kind I’ve ever tried. Robert told me, “The recipe is British, Victorian era. It’s based on my grandmother Flora's cake, but instead of the storebought glacéed fruits she used I make my own candied fruit.” He chooses blood oranges, bergamots, Rangpur limes and more, many that he picks himself. Each cake is soaked in cognac and aged for a few months, then garnished with a slice of candied fruit and a bay leaf, all wrapped gently in cheese cloth. Panettone Balsamico At first I thought this was a gimmick since, for the last decade, it’s seemed like the Italians have been trying to inject balsamic vinegar into every food in sight. Turns out this invasion is an excellent innovation. It helps that it kind of makes sense since cooked grape must—the base of balsamic vinegar—was traditionally a sweetener in Italy. The balsamic is laced through the cake, forming a ribbon of dark glaze. Instead of finding panettone’s traditional gems of dried fruit you’ll discover veins of cherry-sweet, luscious caramel. We all know the line from The Night Before Christmas. If you’re like me, you might have thought the snugly nestled kids were hallucinating: visions of sugarplums? Let me assure you, they’re real. The long process of preserving and sweetening greengage plums—somewhat similar to what happens with marrons glacés candied chestnuts, see right—prevents the sugar from crystallizing. Slightly sweet, green, fuzzy on the outside like a peach. (They have a pit, so watch out.) Remarkably, the texture is firm, like a plum you’ve just picked. Marrons Glacés from Italy

One French expat who used to work at our Deli told me he would “crawl a mile on his hands and knees for these marrons glacés.” You don't have to go to such extremes, but I'd definitely recommend trying them. Despite the French name, marrons glacés are an invention of Northern Italy’s Piedmont region. Having tasted a whole bunch of them over many years, I can confidently say that the ones the Bardini brothers make near the town of Cuneo are my favorites. The chestnuts are aged for a week while submerged in water in underground caves. Later, they soak in a vanilla-scented sugar syrup bath, during which time the syrup is slowly pulled into the center of the chestnut. Last, they’re rolled in sugar and boxed. David Barbero’s family has been making torrone (hazelnut nougat) since 1883 in the town of Asti, but that hasn’t seemed to dull his passion for it. When you ask him about nougat his eyes light up and he talks in fast, clipped English. “We don’t kill the torrone! Industrial makers use no egg whites and they crank out a batch in an hour. They beat the mixture fast and use lots of pressure. Ours takes seven hours, we break for lunch! We use real egg whites. All of this makes our texture crumbly, not hard and tough. Here, take a bite, you can taste.” I love how lunch is so important. Barbero torrone is gently crumbly, delicious, spiked with loads of famous Piemontese hazelnuts. Maria Grammatico's Pistachio Torrone Now in her eighties, Maria Grammatico has been making torrone for over seven decades. Her Sicilian shop is considered a treasure in the culinary world, a destination for travelers. Her torrone recipe is simple. Just five ingredients: egg whites, honey, sugar, Sicilian almonds and pistachios. Everything is done by hand right down to the plain, individual wrapping of the bars. If you buy one of these I guarantee that when you take it out of the box you will be underwhelmed. Maria is obviously not spending her time on packaging. This one is made by a dairy nearly 2,000 feet up in the hills outside of Modena, Italy. Speck originates in the Alto Adige, the alpine region of the South Tirol in northern Italy (though this one is made in Iowa). This is mountain people’s meat, meant to fortify. It’s a lean piece of pork, cut from the rear leg, rubbed with sea salt and smoked over apple wood. Where prosciutto is delicate and subtle this is chewy and robust, earthy and rich, sweet and smoky. It may not be as well known as some cured meats you know but don’t let that stop you. Living in America we are forbidden from importing Cuban cigars, Iranian saffron—and Italian salami. I know, the salami ban makes little sense to me, either. But the FDA makes the rules. We're left with the next best thing which, to be honest, has gotten quite good: the cured meets from the recipes of Francois Vecchio. Made in the style of Verona a coarse cut creation, with thick, natural pork casings. The casings let the meat age more slowly. Portuguese Sardines

Tuna is our top-selling tinned seafood, but sardines aren't too far behind. It's surprising to me since sardines are not a big part of the popular food scene in America. One thing to know is there are actually dozens of different fish sold as sardines in the U.S. Most are either brislings from Norway or herring from the North Atlantic. While they aren't bad, they don't come close to the flavor of true pilchards like these. And unlike Norwegian sardines, these are never smoked, so the full flavor of the fish comes through. Jeff Koeze sources incredible Virginia peanuts, brings them up north in one ton sacks, then blanches them to remove the skins and keep them from going rancid (a common flaw in a lot of natural peanut butters). He roasts them in vintage coffee roasters, grinds them smooth, then adds a bit of salt. Why we carry only one brand of balsamic The Balsamic Vinegars of La Vecchia Dispensa

While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic: La Vecchia Dispensa. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors. Although aged for only 25 percent longer than the 8 year balsamic, the intensity of flavor is almost double. As you move up the age range—to 16 year and 30 year—the liquor thickens, the sweetness enhances, the carmelization takes you on a wild ride of flavor.

Twenty years ago you could count the number of great American cheeses on two hands. Maybe that’s exaggerating, but not by much. Back then, being a smallscale cheesemaker was like being a beekeeper—a strange hobby with little reward or recognition. Half the cheesemakers crafted nearly identical tiny wheels of goat’s milk cheese, which, given that we had no American goat cheese tradition to speak of, cheese shops insisted on calling chèvre, the French word for goat. If you went into any serious cheese shop in America in 1994, chances are the only American cheeses you found were chèvres and cheddars. Have things ever changed.
