Chocolate lovers, fruit lovers, and lovers of chocolate and fruit together take note. This is the first time we’ve had these famous figs in white chocolate and I’m going to call it now: this is a big deal. 3. 2. Juniper & Thyme Bacon Salted Pecan Praline Banana Bread When creating the ‘next big thing’ in the pastry world, it’s best to start with something people already know and love. So we took our classic banana bread full of classic charms like cane sugar, real butter and fresh eggs as well as a touch of Madagascar vanilla and nearly two perfectly ripe bananas per loaf. Then we upped the ante and topped the whole loaf with a sweet, crunchy, salty, praline made with toasted pecans. The result? Our new favorite pastry. From Underground Meats in Madison, Wisconsin. This bacon—made with pasture-raised heritage breed pork—is cured with juniper, brown sugar, and thyme for fantastic, herbaceous flavor. Using juniper to flavor bacon is an old English technique. Not only are there juniper berries in the cure, but the berries are also added to the sawdust used for smoking the bacon as well. Bavette Steak from Carman Ranch The bavette is a favorite among butchers for its huge flavor, but unknown to most of the rest of us—unless you’re a lucky one who’s enjoyed one over a glass of Cotes du Rhone at a bistro in Paris, where it’s more common. It comes from next to the flank, so it’s great for grilling up rare like a flank steak or for tossing in a stirfry. Beefy, juicy, with slightly sweet flavor. Pane Nero Bread We release a new bread about once a decade, so this is a big deal. Frank Carollo, founder of Zingerman’s Bakehouse, has been trying to replicate the recipe for this traditional Sicilian bread for twenty years, but it just wasn’t working. Then he met Filipo Drago from Molini del Ponte, a mill in Sicily, and he finally found the missing piece he needed: the right wheat. Made with Tummina durum wheat, special heirloom variety from Sicily, this dark brown loaf has a dense, compact crumb that tastes slightly sweet. Topped with sesame seeds and sea salt, it’s a hearty, flavorful loaf that’s been well worth the wait. B-NER 1¼ lb loaf $12

7. Guava Jam

Think of rillettes (ree-yets) as France’s version of pulled pork. This one comes from upstate New York, not Paris, but the style is all French. Ham hocks and hams from heritage breed, pasture raised pigs are smoked over applewood, then shredded and mixed with verjus, maple syrup, mustard, and spices. The flavor is rich but bright, and supremely porky. Serve rillettes in an appetizer spread with pickles and crackers, or warm them up and spread ‘em on crusty bread with cheese or jam. I have a soft spot for preserves of this nature: spreadable, luscious, bright and delicious. It sports only two ingredients: guava and cane sugar (well, three because there’s a touch of citric acid in there to help keep its color). Guava is one of those exotic flavors that feels very familiar. Its flavor is tropical and sometimes it actually makes me feel like I’m basking on a beach somewhere instead of nibbling away at my kitchen table. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although many believe Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors. Although aged for only 25 percent longer than the 8 year balsamic, the intensity of flavor is almost double. The house bread at our restaurant, Zingerman’s Roadhouse, and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). The same goes for almost anyone I hand a slice to today. It’s got great crust and a soft, chewy center that has a slight sweetness from dark molasses, making it a hit with kids. We used to bake this on special occasions and we’d get so many orders we'd run out of bacon. It’s Farm Bread dough with Nueske’s Applewood Smoked Bacon and Tellicherry black pepper. Every bite has a bit of sourdough tang and a lot of the sweet, smoky meatiness of bacon, plus a little spice. I’m sure it makes great sandwiches, but I’ve never had a loaf around long enough to try. Traditional Jewish rye bread is still an endangered American species. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. Bacon endures so many short cuts. I’m talking commercial bacon, grocery store bacon: bellies injected with water to add weight; curers, if you can call them that, who speed up the process with too many chemicals; excess sugar and salt to overcome a lack of flavor; liquid smoke! Shocking. There’s no other way to describe the experience of first tasting acorn fed pork. In the oak forests of southern Spain, heritage Ibérico pigs spend their lives rooting around on pasture. Sea urchin is an acquired taste. But once acquired it haunts you. For me, there is nothing else I can eat that evokes the sea as strongly as it does. Mussels are close. Oysters are closer. But sea urchin is briny and funky in a way that, as soon as the first bite hits, I can recall what the summer wind off the ocean felt like. I first tasted Paolo Licata’s sugo di ricci—sea hedgehog sauce, the Italian word for sea urchins—in Sicily a decade ago. When we got the first shipment of a few cases this fall it was just as I’d remembered: a sweet, delicious Sicilian classic tomato sauce, spiked with shrimp and anchovies, with a deep current of urchin flavor running throughout. It’s a smooth sauce, homogenous, no chunks of fish, and I adore it on a plate of just-cooked Rustichella bucatini with nothing else except a glass of cold white wine nearby. The sauce’s flavor is strong enough that a little goes a long way, which makes the expense of such a luxury easier to bear. A few spoonfuls per person is enough, so a jar can easily serve 8. I love this squid because it’s unusual. People usually think of squid as being chewy or rubbery as a result of having had cheap calamari. This is the opposite of that: it’s soft, succulent. The flavor isn’t super fishy. It’s savory but subtle, and the whole tin is really balanced and basically perfect. The three or four squids, stuffed with their own tentacles so they look like little seafood sausages, come in a ragout of oil, tomatoes, peppers and spices. Even that oil is worth saving—I like to rip off chunks of bread to dip in it, after pulling out the little squids and eating them whole, straight from the can.
