La Quercia's borsellino sausage is soft, sweet, porky and even a little earthy. Somewhere between a quarter and a half-dollar in diameter, its natural casing is stuffed with pork that's coarsely ground, liberally littered with morsels of fat. The plain is mild but substantial, without the heavy salting that you often find in other salamis. The piccante sausage reminds me a bit of Spanish chorizo—smoky and slightly spicy, but not at all hot. Serve with either a cheese plate or toss chunks into pasta or salads. Throw one into your backpack the next time you head out for a hike. It can go for hours—or days—without refrigeration. After a few years of research and recipe noodling the Aged Chelsea from Zingerman’s Creamery is back, ready for its close-up. This time it’s robed in a fine layer of ash. Made in the same style as the famous French goat cheese St. Maure, the five inch logs are rolled in ash when they’re four days old, then set to age for another week or so. The ash decreases the acidity on the surface of the cheese and works in concert with the natural molds and yeasts to develop flavor. Chemistry nuts and cheesemakers love these kinds of details, but what matters to the rest of us is flavor and this has lots of it. Buttery, brightly acidic yet surprisingly sweet, its texture is smooth with a faint crumble. Great on a cheese plate, served with crusty bread, scattered over a salad or even broiled over meat. Essex Manchego

Essex Manchego is one of Spain’s only farmhouse, raw milk, unwaxed Manchegos. Unwaxed refers to the rind and, for the most part, cheese rinds seem to be one of those cheesemaking details that only get the attention of cheesemongers and makers. They have a tremendous effect on flavor and texture, though. The active cultures in cheese cause it to breath. It loses moisture as it ages. When the rind is waxed it holds those effects in, increasing sellable weight, but often resulting in off-flavored cheeses that taste harsh. Unwaxed Essex Manchego has a lovely, dry crumble and never tastes bitey. It goes down smooth, with the unmistakable sweetness of sheep’s milk and a long savory finish that pairs well with almonds (p. 48) and plums. Red Wattles are an old breed of pig that was raised for flavor, not fashion. Today you might find Red Wattle in a few restaurants in New York. There was almost no supply for us home cooks. Until now. We’re working with Heritage Foods to secure big, fat, Red Wattle porterhouse pork chops. Each measures an inch and a quarter thick and tips the scales at fourteen ounces. The flavor is rich, herbaceous, even a little sweet. It packs more flavor than I’ve ever had in a pork chop. The crowning glory of Red Wattle pork, however, is its fat. It marbles the meat and wraps the chop in a soft, opaque band. When cooked it melts within the meat and softens its edge to a luscious, lip-smacking bite. The fruit is allowed to warm for a few days, either by hanging in direct sunlight or heated slowly in an oven. The liquid that’s released is collected and allowed to ferment. That’s it. No sugar, no banana “flavoring,” just straight fruit vinegar. The result is bright, sweet, slightly sharp, with a distinct flavor of banana. It’s rare to see a vinegar made from vermouth. In fact, I think this is the first time for me. To some extent it’s a function of vermouth’s complexity. Why go through the trouble of making vermouth, a fortified wine made with secret blends of botanicals, if you’re going just turn around and make it into vinegar? It’s cheaper and easier to just make wine vinegar. But there’s nothing cheap or easy about this vinegar from Mollerussa, Spain. Even the fermentation—a rare method known as Shützenbach—is complex and costly, involving constant circulation to expose the vermouth to a lot of air and evaporation. It captures the more delicate flavors and aromas of the vermouth, keeping it lovely, herbaceous and light. You can use this anywhere you might use wine vinegar, but expect a lot more flavor. A magic trick moonlighting as an Easter sweet. It started its life as a perfectly proper egg. Then the insides were removed, deployed for dinner, the shell rinsed. Arkansas Peppered Ham Arkansas peppered ham is a huge staff favorite. The jacket of peppercorns balances the natural sweetness in a way that I find really pleasing. L'amuse Gouda While Gouda is made everywhere in Holland, there are major differences between goudas from different regions. These wheels are made in the north from the milk of Holstein cows, two factors that give the cheese a distinctive creaminess speckled with big, crunchy flavor crystals. Selected for us by Betty Koster of L'amuse, Amsterdam's top cheese shop, aged for over two years at higherthan-normal temperatures so it essentially ages faster, the flavor is correspondingly intense. The house bread at our restaurant, Zingerman’s Roadhouse and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). French Mountain Bread has a chestnut colored crust nearly a quarter inch thick, a dense wheaty crumb inside and a toasty, long lasting flavor. It’s totally terrific for toasting. Traditional Jewish rye bread is still an endangered American species. Txakoli White Wine Vinegar

The Txakoli wine, itself hard to find outside Basque country, is rarely made into vinegar. The vinegar is as rare as the albino rhinorceros. It's made by Emilio Lunegas, a devoted Basque wine maker. He decided to develop a vinegar from the traditional wine and broaden the recognition of the Basque region. Working with top-quality Txakoli made primarily from Hondarribi Zuri white grapes, as well as a bit from its cousin, the equally obscure black Hondarribi Beltza, Sr. Luengas and his colleagues make only about 1,200 liters of the vinegar in a year. The flavor is light, lovely, lingering. It’s not sweet, and there’s an airiness to it that makes it refreshing. It’s very nice on simple salads of most any sort. Vecchia Dispensa's 10 Year Aged Balsamic Working in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and Marino Tintori make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. In Italy, they're called carciofini selvatici, which is the name you'll see on the label. They're a variety of artichoke that grows wild in Calabria during April and May. Picked by hand, they’re dethorned and cleaned, then blanched for just a few minutes so their texture remains firm. About the size of an acorn, they’re bottled with olive oil, wine vinegar, salt, black pepper and a little bit of red chili pepper— a spice you find in many Calabrian foods. The red pepper is so subtle you won’t notice its faint spice until you’ve had two or three, a feat that’s way too easy to accomplish with artichokes this good. Throw a couple in a pasta dish. Add them to salads. Serve alongside some sheep’s milk cheese. Or follow your heart, open the jar and just eat 'em straight up. Pizzuta trees bloom along the seacoast of southeastern Sicily in the winter, when most other crops are still deep in slumber. The conditions are perfect there: fertile soil, lots of sun, cool nights. The yield is small, but their flavor is unmatched. Milky, sweet, nutty and intense with a whisper of bitterness that lingers. No other almond compares to pizzuta’s intensity of flavor. (Eight) stone ground Raye’s Mustard

A smooth yellow mustard with crystal clear flavors, highly recommended. I think the most interesting part about J. W. Raye’s fourthgeneration operation in Eastport, Maine, is that the seeds are ground in the 105-year-old stone mill. It has a series of eight one-ton quartz grindstones that, though I haven’t seen them in person, must be a dramatic sight. As the mustard mash moves from stone to stone, it gets creamier without any addition of heat, which would drive off the aromatics and lessen the flavor. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of great vinegars. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with those from the Tintoris. We've been selling them for over a decade, and they have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic (illustrated) is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors.
