Borsellino Salamis from La Quercia La Quercia's borsellino sausage is soft, sweet, porky and even a little earthy. Somewhere between a quarter and a half dollar in diameter, its natural casing is stuffed with pork that s coarsely ground, liberally littered with morsels of fat. The plain is mild but substantial, without the heavy salting that you often find in other salamis. The piccante sausage reminds me a bit of Spanish chorizo—smoky and slightly spicy, but not at all hot. The smoked has a tickles of caraway and black pepper. Serve either a cheese plate or toss chunks into pasta or salads. Like all their meats, La Quercia's salamis are made from hogs raised naturally, without hormones or sub-theraputic antibiotics.

american vanguard Baia Organic Elbow Pasta

Renato Sardo and his partner Dario Barbone have been making dried pasta in Oakland, California since 2011 and they’re already at the vanguard of the pasta world. They use organic wheat grown and milled in the Plains states, extrude their pasta through bronze dies to give it a rough texture, and dry their pasta slowly at low temperatures so the flavor has time to expand. Our two gold standards for dried pasta, Martelli and Rustichella, come from Tuscany and Abruzzo in the center of Italy, the country’s heartland. But there’s been a long tradition of great pasta in and around Naples, too. I’ve really come to like the pastas from Faella, a century-old firm in Gragnano, who pays attention to all the key details that make for full flavored pasta: high protein wheat, bronze die extrusion to make the pasta surface rough, and long, slow drying times so the noodles taste more like bread than flour. The two typical shapes for the area, gemelli and casarecce, are both short, so they work great with chunky sauces.

a poignant lack of progress Black Olive Spread

I visited Caricato, the two hundred year old family firm that makes this olive spread, a dozen years ago. No one spoke English and we started the afternoon in the parlor on the second floo , all the shades drawn because even in May the Southern Italian heat comes in strong. The mother, the father, the son, the entire business, met and we talked about olives with help from a translating neighbor. They took me to see the press. It was stone, the last time I’ve ever seen a stone press for olive oil (they’re all stainless steel now). They took me to the farm which had rows of olive trees interspersed with artichokes and grapes the old way of planting (most fields are monoculture now). The farm’s paths were flowered in chamomile. There was a hundred year old caper bush, itself living in another century, its trunk as thick as a blue spruce. I must have made a scene about it because when I left that night I was given a shoe box full of salted capers from the home's well-stocked pantry. I carried them back in my suitcase to Ann Arbor and gave them to our crew. All this has nothing specific to say about olive paste. It’s just black olives, crushed and salted, mixed with extra virgin olive oil. Italy's bacon sauce

Take a drive throughout southern Italy and you’re likely to see wild fennel growing all around. Along the side of the road, atop rocky outcroppings, throughout a grassy field, it’s practically a weed, as common to the landscape as dandelions are in Michigan. The bulb looks like an oblong base of a bunch of celery. Thin stalks shoot towards the sky waving feathery fine leaves that remind me of dill. Eaten raw its flavor is sweet and anise-like. Yet it doesn’t make dishes taste like licorice. It’s a light, bright, slightly sweet flavor that pairs beautifully with delicate meals like fish or salads. Since we’re not in southern Italy and wild fresh fennel only available a short time anyway, this sauce is a delicious alternative. It gives your cooking the bright flavors fennel is famous for in an easy to use sauce. Dollop on fresh baked fish or lighter flavored meats like poultry. Or toss with your favorite pasta (Baia or Faella on the facing page are a great fit) and a tin of tuna. P-WAP 180 g jar $15

The Noto almond from Sicily is an heirloom variety renowned for its sweet, buttery flavor and penetrating fragrance. They’re great straight, but they bring an added nuance to sauces like this one made with sweet peppers and olive oil from the same region. This sauce goes into my “long flavor hike” category, meaning there’s a whole lot going on, but in series, not concert. The first flavor is sweet pepper, then it’s nutty and creamy, then the pepper comes back and it gets a little savory, then bright, and it all ends with the slightest amount of heat and your lips tingle just a little. The trip is so good, you'll go back to the beginning and do it again. It’s easy to get creative with this sauce and it pairs really well with fresh goat cheese (p. 9) and some good crusty bread. Pasta, bruschetta, vinaigrettes, grilled meats, poultry, grilled vegetables, eggs...this could be one of the most versatile and flavorful sauces we carry. Try it for yourself and see. Made from tomatoes, onion, pancetta (Italy’s unsmoked bacon) this is a meal in a jar. The family business of curing ham went commercial in America's south in the early 20th Century. It didn’t mean it went big and corporate, though. Today, there are still a handful of small, family-run businesses left over from that time that make traditional southern hams, bacons and other cured meats.

Our most venerable pork master, Broadbent has been curing meats in Kuttawa, Kenucky since Ernest Shackelton first explored the South Pole. Their ham is a classic southern cure, with salt and smoke seeking a flavorful balance. Their hickory smoked bacon is one of the few dry cured specimens left in America, salted without a brine so it has less moisture, the flavor correspondingly more intense. But for me its their smoked sausage, stuffed loose in a two inch wide casing, that’s the jewel in their porcine crown. Sam Edwards III runs the curing business his grandfather started in Surry, Virginia. Sam's is simultaneuously one of the most traditional and forward-thinking of the southern ham houses. He still employs a seven-day hickory smoke and sets his rooms temperatures to follow the flow of the seasons. But he’s started to work with heritage breed Berkshire pigs from humane hog farmers—which, while I attribute up to forward-thinking, is actually traditional since it’s how pigs have been raised until modernity. Last year Castello di Cacchiano, which sits on an abrupt hillside an hour south of Florence, celebrated its 1,000 year anniversary. The Ricasoli family has owned it continuously for ten centuries, and it’s always been farmed, it’s always made olive oil. To put 40 generations in perspective, here are a couple historical comparisons: one thousand years ago the Crusades were still going on and paper hadn’t been invented yet. Cacchiano makes olive oil a little differently now than they did then but I think Tuscans from the middle ages would still recognize it. It’s a big, bold oil, redolent of green grass and artichokes. Compare do Cacchiano, Roi is a relative baby, just a tenth its age. The Boeri family has been making oil in Badalucco, a village in rural Liguria there since the turn of the century before the last century. Badalucco is just twenty minutes on the autostrada from the Italian Riviera but, before the autostrada, it might as well have been on another planet. Inland Liguria is all hills and valleys, a difficult place t travel quickly but a great place to make olive oil. Roi’s oil is the polar opposite of Cacchiano. The first time I tried this mustard, I had just moved back from Colorado to Michigan. Curiosity had gotten the best of me—it was a Michigan product and supposedly it was famous? I needed to know why. When the mustard arrived, I opened the jar, and scooped myself a heaping teaspoon to try this famous mustard out and…BOOM!!!! Ortiz Tunas from Spain Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Decades ago chefs used to select their preferred tuna batches from the factory at Ortiz, Spain’s highly esteemed fifth generation tinned fish titan. Cheesemongers still do this with cheese, in fact it’s a specialty of some exporters like Neal’s Yard Dairy and Essex Street Cheese. But it’s something that hadn’t been done for decades with tinned fish until we started two years ago. I went to Getaria, a fishing village in Northern Spain off the Bay of Biscay, to taste all the batches of tuna Ortiz had tinned that summer for America. I nabbed the most flavorful, a single shoal of amazing fish that resulted in some 40,000+ tins. We’re going to age some of it and sell the rest for as long as we have it. It was the first time in a generation this has been done and I think it’s resulted in a great tinned tuna.

Little sardines

It’s almost a forgotten bit of history, but it was Napoleon we have to thank for tinned sardines. He was looking for a portable, shelf-stable food for the troops fighting in his various wars. He conducted a contest and sardines won. It wasn’t long after when Connetable went into business. The firm is still there today, and the sardines are fished in the same cold Atlantic waters off the Breton coast of France. They are now bedded in extra virgin olive oil which I think is the only upgrade this tinned fish has seen in 162 years. Extra virgin olive oil makes them silkier. The saline sea edge of sardine is still there, but less sharp. P-CNS 4 oz, about 4 sardines $9

These wonderful, traditionally prepared sardines are packed by the Gonidec family in the old Breton port town of Concarneau under the name Les Mouettes d’Arvor. Currently in their third generation—a relative newcomer next to Connétable (left)— they remain true to old methods. The fish are fresh, never frozen. As per the old Breton way, the newly landed sardines go into a bath of ice and salt water. Called "pickling" this process firms the flesh of the fish. The fish are then laid out on racks and dried slowly in kilns then fried. Drained, they're hand packed in extra virgin olive oil. P -LMA 3½ oz, about 4 sardines $11

The Portugese call these “sardinhas”— little sardines. They’re about half the size of a typical tinned sardine. While the fish’s dimensions have been reduced the flavor is not. They’re every bit as rich and even more silky textured. Razor Clams from Ramon Peña

Razor clams, named for the way their shell resembles a straight razor—are the red headed stepchild of the clam world. Littlenecks, manilas and cockles get all the attention, while razor clams languish, rarely seen on restaurant menus or at the fish monger’s. Lucky for us Ramon Peña specializes in overlooked sea creatures, especially ones that are tasty. And razor clams are indeed tasty. Their shape makes their texture a bit different than a regular clam, a little more like octopus or squid. The flavor is deep and briny. Octopus from Ramon Peña Octopus is a tricky fish to tin. We’ve never sold it and it’s not from lack of trying. I’ve probably tasted octopus from twenty different companies. Those fish suffered a range of maladies: overly gelatinous, too cat-foody, or they had what I refer to as “rubber hose phenomenon.” I came to Ramon Peña’s octopus with low expectations born from experience. What I tasted was a treat, a surprise that ranks at the top of my new food list this season. Peña’s round tin holds over a dozen slices of tentacle, suckers intact. Octopus is never a melt-in-your mouth food and these are appropriately meaty with a satisfying ticky tacky bite that never once veers to garden hose. LEt’s skip the beach And eat some anchovies Anchovies from Don Bocarte

Santoña is a village in Northern Spain facing the Cantabrian sea. It’s got a great crescent shaped beach, which means it’s thronged with tourists in summer. It’s also got a well protected port, which has meant, historically, it’s thronged with anchovy boats during the spring season, April, May and June. There are fewer boats today, but Don Bocarte buys from them regularly, salting, aging, then tinning up prized Cantabrian anchovies in Spanish olive oil. Italy's classic balsamic, why we only carry one The Balsamic Vinegars of La Vecchia Dispensa

While we carry different vinegars and olive oils from different farms and acetaias we only carry one family's everyday balsamic: La Vecchia Dispensa. Working just off the historic square in the center of the old town of Castelvetro, southwest of Modena, Italy, Roberta Pelloni and her husband Marino Tintori make a range of outstanding balsamics. And while I've probably tasted another fifty balsamics since we started carrying theirs a decade and a half ago none have come close in terms of balance and flavor. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. You might not notice it at first, but after many uses overly sweet balsamics get kind of dull. Not so with Vecchia Dispensa. They have a legion of followers who return to them again and again. A staff and customer favorite, their 10 year aged balsamic is the most intensely flavored balsamic of its age I’ve ever tried. Its complexity, with rich flavors of oak, blackberry and dark fruit, is partly due to aging in very small batches. That allows more evaporation and contact with the barrel—both of which contribute to more intense flavors. Although aged for only 25 percent longer than the 8 year balsamic, the intensity of flavor is almost double. Like the tradition of balsamic in Modena, Italy, cider vinegar in the northeast was a family cure-all for various ailments, smooth and easy to sip straight from a glass. You can of course employ this vinegar that way, but it's also great when you're looking for flavor, not medicine. Made in Pittsfield, Massachusetts from local honey, organic cider vinegar and a blend of roots, fruits and herbs. It's a tad bit spicy—I wouldn't call it fiery, though—dazzling in vinaigrettes, sauces or to deglaze a pan. V-FCV 8 oz $20

Agrodolce vinegar has been selling at incredible rates. Maybe it's because we've been noting how it tastes like balsamic but it's a white wine vinegar. More than anything else, I want to chalk up its success to its flavor. It’s exceptionally delicate, subtly sweet and really delicious. Basil grows easily in that region's temperate climate. It's harvested very young, when just two leaves have sprouted on the plant. That's something very difficult to do in America unless you have your own basil farm. Yet it's the trick to keeping it sweet and herbaceous. Sorghum Molasses Most of the twenty-four hundred acres that produce sorghum in the U.S. are in Tennessee or Kentucky, where the Old Order Amish Yoder family settled in the 1970s. The Yoders plow their farm with a team of mules and the family works the land without machine. The cane is cut and pressed to extract the juice, then it's boiled and evaporated in a process similar to the production of maple syrup. Sorghum molasses is sweet with exceptional depth. Notes of burnt sugar and caramel are there, and the flavor is very long lasting. It's a great topping on biscuits or bread. The search is over Coop’s Hot Fudge I’ve been patiently searching for a great hot fudge ever since Zingerman’s Creamery started making gelato a decade ago. Till now it’d been a sickly sweet, unlucky quest. Most have too much sugar. Many have a laundry list of unpronounceable ingredients. Then along came Coop’s. To be honest, the jar caught my eye first. A wax seal drips from the top looking like chocolate that leaked out of the vat. Usually when I see clever packaging like this I’m suspect. It often overshadows the food. Maple Moon is a family affair. Since 2012 both mom and dad Peterson and all four kids have been working their eighty acres in Petoskey, Michigan to create some of the purest tasting maple syrup I’ve enjoyed in years. “Our entire grove is nothing but maples,” said mom Christi Peterson. “Birch, ceder and maples grow in this area, but the only trees we have are maples.” While the cause of why only maples strive in the grove are debated, what it means is the only trees influencing the soil are maples. The terroir (the French term meaning things taste like where their grown) is only maple, so the flavor of the syrup isn’t complicated by other arboreal influences. We’ve selected syrup produced towards the end of the season, when there’s less water in the sap, and therefore more sugars. The color is dark-amber and the flavor is robust, sweet, thick on the tongue and smells like the forest. The house bread at our restaurant, Zingerman’s Roadhouse and a local favorite. It’s based on an early New England recipe, made by combining rye flour and cornmeal with wheat. Anyone from an 18th century New Englander to Laura Ingalls Wilder would recognize and enjoy it today (it’s referred to in Little House on the Prairie as Rye ‘n’ Injun bread). French Mountain Bread has a chestnut colored crust nearly a quarter inch thick, a dense wheaty crumb inside and a toasty, long lasting flavor. It’s totally terrific for toasting. Martelli Pasta The Martelli family makes these pastas in the tiny Tuscan town of Lari, which is on the way to nowhere and out of the way from everywhere. The Martellis do everything right that most commercial pasta makers do wrong. American polenta italian polenta Mulino Marino Polenta

I returned from a visit to a family-run mill in the Piedmont region of northern Italy giving its polenta the highest compliment good food can get. This polenta made by Mulino Marino tastes purely, exactly like what it is: corn. It's a gorgeous golden orange, organically grown and absolutely the best I’ve ever tried. It's so sweet I thought they’d put sugar in it. The polenta is made from otto file heirloom corn. If you are looking for something special to serve with dinner, buy a bag and a chunk of Parmigiano-Reggiano and then hold on to your socks: this stuff is good. Pungo Creek Mills Indian Cornmeal

If we were in Italy, we’d call it polenta. But this is America, so we call it cornmeal. Doesn’t make it any less delicious or easy to use. It’s made from an heirloom breed of corn called ‘Bloody Butcher.’ It’s been grown at the base of the Blue Ridge Mountains since 1840, though it was likely traded among Native Americans for centuries before anyone arrived from the New World. The kernals are deep purple and the ground meal is speckled with hints of red. It tastes like sweet, nutty corn— surprisingly as much like corn than fresh corn on the cob and is likewise as easy to cook. Simply mix a cup of cornmeal with four cups boiling water and stir for about twenty minutes. Enjoy in the morning like oatmeal or serve as a side dish with dinner. Eating this for the first time is like taking your first promenade in Paris, France, when all you’ve known is Paris, Texas: you realize just how good oatmeal can be. The Walton family has been milling oats in Ireland since the 1700s, and they still use old stone wheels, which I think leave the oats better tasting than steelcut. The result is a coarse meal that has its natural oils still intact, making the meal darker than other oatmeal. Facts aside, the most important thing is the way it tastes, extremely good. Prune. It’s one of those words you should use with caution to sell a food. Almost all its connotations are bad. So let me start by calling these dried plums instead. Now doesn’t that sound better? Marketing magic! Dried plums from Agen, a town in southwest France just below Bordeaux, are kind of like hazelnuts from the Piedmont or sour cherries from Northern Michigan. A famed food, an agricultural one-of-a-kind people travel miles to taste in its home environment. Now you can save the trip. We’ve brought them to America. Though dried, these plums are incredibly moist, almost juicy when you eat them. There is a dark caramel note in the flavor. You can enjoy them as is, any time. This paprika comes from the Hodi family in Szeged, one of the two regions in southern Hungary that’s particularly noted for paprika production. It’s the highest grade of paprika available called kulonleges, meaning “extraordinary” or “special” in Hungarian. The Hodis are involved in the whole operation: they grow the peppers and harvest them when they’re at their peak of redness and ripeness, then they dry them and grind them to powder using an old stone mill. The result is phenomenal. It has a gorgeous deep, rusty orange color and the flavor is full, lively, sweet yet meaty. We have hot, sweet and smoky paprika; the hot has a gentle rising heat, the sweet is much milder and the smoky is much smokier with some caramel sweetness. All add a tremendous punch of flavor to any dish. Try swirling it into soups, whisking it into an omelet, sprinkling it on potatoes or pasta. Across Southeast Asia they make Srikaya (coconut jam) or simply Kaya. In Malaysia, the name means “rich” But a more detailed translation might also include "smooth," "creamy" and "more please." Made in Grand Rapids to a hundred year old recipe. Jeff sources incredible Virginia peanuts, brings them up north in one ton sacks, then blanches them to remove the skins and keep them from going rancid (a common flaw in a lot of natural peanut butters). If you have a soft spot in your heart for peppers or potato chips—or both—you’ll love these. Very mild chiles from the Massimo family in Basilicato, a region in the far south of Italy, are strung together by hand and then hung to dry in the sun for a few weeks. Finally they're fried in a bit of the farm’s own olive oil, and then salted. The result is a sweet, smoky, salty, crispy sensation that’s quite habit forming. This could be the Holy Grail of secret ingredients. Rangpur limes look more like mandarins than the little green citrus fruit we know, but their flavor is like a smoky lime. This syrup pours easily—like honey—and doesn’t leave sugar crystals as it dissolves in iced or hot drinks, making it excellent for cocktails. Sun Dried Sicilian Tomatoes

By far the best and the sweetest semi-dried tomatoes I’ve ever tried. Little known in the United States, this supersweet variety of tomato is grown only in Sicily. The ripe tomatoes are hand picked, dried in the sun for three full days—not in ovens, as most commercial versions are—then packed with fresh basil in a bit of vinegar and extra-virgin olive oil. Have some on hand for special entertaining (they make a nice addition to a cheese plate) or everyday eating (especially in a fresh pasta sauce). Pickled Raisins

Golden raisins (or sultanas) are cured in a mixture of cider vinegar, mustard seed, thyme, chili and a bit of bay leaf. They’re slightly spicy but nowhere near hot. The sweetness of the raisins really comes through and is the focal point of flavor. How do you use them? Any way you like. Toss them in salads or set some up as a side to grilled meats (they're great with pork loin). Include them as a bit player in a cast of appetizers. City Hams for Easter Unlike aged country hams (p. 12), these young "city hams" are the kind that most of us (at least those from the North) are used to eating. The ones you put in the oven for a few hours, sometimes pinned with pineapple slices. Skip the pineapple here, these hams don’t need it. They are full of flavor already. Just heat, slice and eat. Select which ham you’d like based on its flavor profile. Each is raised in the Midwest by farmers under the direction of Heritage Foods, the folks who bring us our amazing porterhouse pork chops (p. 4). My 4-year old daughter asked me where bacon chocolate eggs came from. I confessed I didn’t know, but I bet it’s the most delicious animal that ever lived. In truth, these chocolate-y, bacon-y eggs come from Vosges Haut-Chocolat in Chicago. Pieces of hickory smoked bacon are folded into soft, buttery caramel then covered in dark chocolate and formed into the shape of (half) Easter eggs. The salty-sweet combination is for more mature tastes (at least that’s what I told my daughter) so don’t feel bad about snatching them up and hoarding them for the adults.
