Everything we've longed for Trine Vinther
Before starting this collection we talked a lot about what kind of Spring we hope 2022 will bring us. We hope for limited restrictions, hanging out with friends & family and enjoying the beauty of nature, that we have come to love even more this past year. We cannot ”get back to normal” because normal is forever changed. But all the lessons we’ve learned also last forever and I believe we are stronger by it. For instance, I would never have found it appropiate to host an outdoor party before lockdown, by now I look forward to the next gathering around the bonfire - no matter the weather. With this issue of the ZOEY Magazine we wanted to capture the feeling of some of the things we’ve been longing for during lockdown and restrictions. Don’t we all dream of haning with our team of girls? Of flashing big smiles in public? And of exploring the nature beyond our own backyard? I know, I do! Ann Bonde Guides: TRIFLE WITH RHUBARB Ingredients Enough for four.
Ingredients for rhubarb compote •300 g. of fresh rhubarb •50 g. sugar •1 tsp. vanilla sugar •3 tbsp. water Ingredients for the dessert Rhubarb compote 225 g. Digestive crackers 50 g. butter 2,5 dl. heavy cream 2 dl. skyr or greek yogurt 1 tbsp. powdered sugar 1 tsp. vanilla sugar
How to: Start by rinsing the fresh rhubarb well. Cut them into 1 cm pieces and boil them with water, sugar and vanilla sugar. It all needs to boil for 5-10 minutes but keep an eye on it, so it doesn’t get overcooked. While the rhubarb is cooling down, you crush the Digestive crackers. You can take a hammer to them or just use a blender. Melt butter, pour it over the crumbled crackers and stir. Whip the heavy cream and gently stir it with powdered sugar, vanilla and Skyr. Now all that is left is to arrange it. You can make personal portions or one big bowl. Start by pressing down the crackers-dough in the bottom of the container. Next is the skyr-cream and then the rhubarb compote. Use your imagination and decorate as you like. Enjoy!

Handcrafted in Denmark We were so lucky to be able to borrow the most beautiful jewelry from Libopé Jewels on our Spring 22 photoshoot. Lise Reo Larsen is the woman behind, and she agreed to tell us a little more about her business. ”All of my jewelry are limited editions, or one-of-a-kind. That means there are only 1 of each or only a small amount. Libopé is my hobby and a one-woman business. I produce everything myself in my studio at home. This gives me a lot of creative freedom and makes each piece unique. Lilac Spritzer Anns latest spring drink is based on local ingrediens - namely from her very own garden. Here she guides you through the making of this delicious Lilac Spritzer: ”Ahh... It’s Friday at the office. The sun sends its first warm light down on us after a cold Winter and the girls at ZOEY deserve to be spoiled with this fresh and sour Spring drink. Once you have the lilac juice you can also enjoy it without alcohol but note that it is only recommended to consume this eatable flower in limited amounts. ”
Ingredients Ingredients on lilac juice: • 40-50 heads of lilacs (Preferably the colored ones) • 1,6 kg sugar • 3 lemons • 60 g. citric acid • 2,5 L. water Ingredients for the drink: • 1-part lilac juice • 1-part white wine • 2,5 parts sparkling water • icecubes •lilacs and lemon garnish

Ann is an educated dietitian and a real foodie with a nack for delicious and easy-to-prepare dishes.
Cut or nip all the green off the lilacs. Don’t rinse the flowers otherwise you will wash away most of the flavor. Cut away the peel and all the white from the lemons and cut the rest into slices. Boil all ingredients in a large pot until the sugar has been dissolved. Leave the juice to soak in the fridge for 3-4 days. Remember to stir the juice every day. Once the juice is ready, sieve it through a cloth and fill in onto cleaned bottles. To make it last, the juice can be frozen down. Now you are ready to make your own lilac spritzer with even parts lilac juice and white wine, topped up with 2,5 parts sparkling water. Enjoy with ice cubes in the sun!

Where would you spend an evening out? ”Le FUSE is one of the city’s techno temples, and the biggest names in the field (without exception) play DJ sets there: le Fuse is a must for any decent, self-respecting clubber. The unique atmosphere attracts those in the know, and they come from far and wide. The end-of-the-night crescendos, as things approach hysteria, are legendary. Due to Covid19 restrictions le Fuse is doing Plein Air (open air) by Fuse. DJ scored liveliness and a relaxing kick-back-with-cocktails atmosphere in the lovely surroundings of Tour & Taxis. Sip some drinks and have a bubble dance!”

Where do you like to eat?
”A mixology and veggie dinner at Hortense & Humus. In early 2017, gastronomical wunderkinds Nicolas Decloedt and Matthieu Chaumont joined forces to open the doors of Hortense & Humus, an upscale-feeling yet reasonably priced restaurant that seems poised to become a Brussels showpiece. While Decloedt busies himself in the kitchen by making light veggie dishes that could turn a brown bear vegetarian, French mixologist Chaumont whips up original cocktails and mocktails infused with homemade syrups. The food-cocktail couplings are well thought out, and lending even greater harmony to the experience is the setting: a pastel-colored former teahouse with a Sistine Chapel-esque ceiling, luxurious but never gaudy.”
Where would you go shopping? ”The Dansaert neighbourhood is a top destination for shoppers that are looking for boutiques hosted by Belgian designers and top level retail shops. Located in the centre of Brussels, this focal point for fashion and design has not only beautiful shops, but a wide variety of restaurants and bars as well. This place is good for a walk, shopping, or just to relax somewhere for a bit.”

"Always be true to yourself" Carina and Lisa live in Graz, Austria and not only do the run the instagram accound @blondiebrownie.sis, they are also sisters. We asked them to tell us about life as influencers and their life philosophies.
How would you descripe yourself? ”We are sisters, best friends, partners in crime on the road, fashion victims and trend hunters. Usually we travel a lot and we are great USA fans. While Carina is still single and looking for Mr. Right, Lisa is happily in love since almost 10 years” What do you do besides being influencers? ”Carina is self-employed, and she advises companies on their social media and has a master degree in health and nursing science and management. Lisa is the head of social media marketing of an American football club and is recently writing her master thesis.” When did you begin to focus on your personal Instagram account? We started our instagram account Blondiebrownie.sis in 2015 as a hobby because we both love to take photos and especially always took so many during our journeys. After 3 years it turned out very successful and so Carina decided to bring it on a more professional level.
What makes you feel free in your everyday life? ”Freedom has become even more important for all of us since covid-19 turned our lives upside down. Freedom means for us that we are able to see our family and friends and being able to travel and visit new places.”
