Amarone Classico della Valpolicella DOP | Denominazione Origine Protetta Grapes: 40% Corvina, 30% Corvinone, 15% Rondinella, 10% Oseleta, 5% Croatina Alcohol: 15.5% Town/area: Negrar (Verona) Soil profile: limestone and clay Ideal food pairing: at its best with roasts and boiled meats, aged cheeses such as Parmigiano Reggiano or Grana Padano. Enjoyed on its own or at meal’s end, it is superb Serving temperature: 18°C Recommended glass: balloon-shaped stemmed glass Vineyard practices: the grapes for Amarone are grown in the oldest vineyards (20-50 years old). Organic fertilisation and hand-pruning; shoot-thinning, leaf-pulling, cluster-thinning. Harvest is in the 2nd and 3rd decade of September Vinification and maturation: minimum 3 month natural semi-drying of the grapes, with no use of dehumidifiers. After pressing in January, the grapes are held in steel tanks and in concrete vats, without added yeasts or other biotechnical agents, until the fermentation begins, with very few pumpovers or punchdowns performed. After maceration on the pomace for over 2 months, the wine matures in large Slavonian oak ovals for a minimum of 5 years. From this moment on, regular topping-up is the only operation performed: time very gradually shapes the wine’s characteristics. It receives one years’ bottle-ageing. Superb sipped on its own, as well as with chocolate and enjoyed along with a pipe or fine cigar Serving temperature: 18°C Recommended glass: balloon-shaped stemmed glass Vineyard practices: this Riserva is produced only in the very finest growing years. It is distinguished from the Amarone classico by an even more-rigorous quality-selection of the grapes, which are sourced from the oldest vineyards, 20-50 years old. Organic fertilisation and hand-pruning; shoot-thinning, leaf-pulling, cluster-thinning Vinification and maturation: three-month semi-drying of the grapes, with no use of de-humidifiers, followed by pressing in January. Vinified in strict accord with traditional methods, it ferments on the skins in concrete vats for at least 2 months, at natural temperatures and with ambient yeasts. After an initial racking it rests some 9 years in Slavonian oak casks and large ovals, and is bottled in its tenth year. This lengthy ageing favours further reduction of its residual sugars. The phrase “The fullest expression of typicity” conveys the concept of fidelity to tradition. The label bears the image of a grape leaf whose veins are replaced by the lines of a fingerprint, to underscore the importance of the hand of man and of the interaction of man and nature in the fashioning of this wine. The name Mattonara is a tribute to the sandstone quarry in which the winery lies, which was used at one time for the bricks used in building churches and villas.

Manual harvesting, between the 3rd decade of September and the 1st of October Vinification and maturation: this is a late-harvest wine, inasmuch as the grapes are the very last to be harvested; the Cabernet Franc and Cabernet Sauvignon are hand-picked, and then pressed the same day, while the Merlot clusters are hand-picked into small boxes then remain some 20-30 days in the drying loft. The must ferments with ambient yeasts in concrete vats at normal temperatures for about 40 days. The wine matures in new oak barrels for a minimum of 24 months, followed by 1 more year in the bottle Technical data: alcohol 15% - residual sugar 4 g/l - total acidity 5.7 g/l - dry extract 33 g/l - pH 3.50 Appearance: red tending to deep purple, and to garnet with ageing; glycerine-rich Bouquet: wild red berryfruit, blueberry, redcurrant, wild blackberry, musk and spices Palate: enters with immediately-appealing richness; austere, complex, long-lingering, and well-balanced, with pronounced tannins and form structure. The original 2001 label presented the name Oseleta contracted into Oz; the ”O” was the first letter of the grape and suggested the shape of a berry, while the “z” alluded to Zýmē and at the same time suggested the second letter of the variety, which is written with an “s” but pronounced as a “z.” The 2008 label bears the complete name Oseleta since, thanks to the expertise gained through the previous vintages, Zýmē has achieved the quality goal it set itself.

The label shows the link of Kairos to the Harlequin project: Harlequin’s costume is composed of pieces of many colours, just as the wine is composed of 15 different grapes, each with its own characteristics. In ancient Greek, Kairos means “opportune, at the right moment.” The addition of the sundial and the clock express the idea of exact time.

After drawing-off, the wine settles by gravity for about 10 days. A two-fold maturation process follows, for a total of 30 months, utilising new French oak 225-litre barrels (200%), with no rackings.
