I

t’s the perfect time to reminisce and look back at another year gone by. The trials and tribulations, the good and the bad. Although it’s so much easier said than done, I’m going to try to disconnect from the rat race that is now my life and actually enjoy this month with all its nostalgic implications.

I had fun shooting for Houston PetTalk magazine with Evin Thayer last month as I was included with my Cujo-esque 13year-old firstborn child, Chihuahua Murci. Pick up a copy! s the city sealed the fate of “the 8th wonder of the world” last month, the recorded Texas Historic Landmark, THE LANCASTER HOTEL in the heart of the Downtown Theater District, was completing a $10 million renovation. The extensive re-design encompassed the hotel’s lobby and meeting spaces, all guest rooms and suites, and incorporated significant technology and core mechanical upgrades. “We are proud to refurbish this gem of a property that my great-grandfather, Michele DeGeorge, built as The Auditorium Hotel in 1926 and that reopened as The Lancaster in 1983,” said Charles (Charlie) M. Lusk III, CRE, CCIM and president of The Lancaster Houston. “This hotel has been in our family for 87 years and is the only historic hotel in Houston owned and operated by descendants of the original developer,” Lusk said.

The Menninger Clinic means business with its luncheon in 2014. It is bringing in two big mental health advocates, Mariel Hemingway and Brene Brown. The two ladies will keynote Menninger’s annual luncheon, May 14, 2014. Hemingway, granddaughter of literary genius Ernest Hemingway, uses the new documentary about her life, Running from Crazy (debuted theatrically last month), to tell her family’s struggles of mental illness, including seven suicides, and how she overcame depression and suicide thoughts. University of Houston researcher Brene Brown, Ph.D., will join Hemingway for a live, candid conversation. TV and Broadway celebrity Matthew Morrison will star in the Houston Symphony’s Centennial Ball scheduled for May 17, 2014. Well known for his portrayal of a high school teacher on Fox’s Glee and an acclaimed Broadway performer and recording artist, Morrison will be featured in a special performance with the Houston Symphony under the baton of conductor Steven Reineke. IT’S OYSTER SEASON And in honor of the slimy, salty delicacy, here are a few fun facts about the locally harvested mollusk. Most of the oysters harvested in Texas are from Galveston Bay, plus most of the oysters being eaten on the East Coast and West Coast are also from Texas. Each part of Galveston Bay grows a different-tasting oyster. For example, East Galveston Bay oyster reefs produce saltier oysters while oysters harvested farther to the west, away from the Gulf’s saltwater inflow, taste less briny and tend to be fatter and sweeter while Central Galveston Bay oysters are, naturally, somewhere in the middle. Because oysters grow best on other oyster shells, GALVESTON BAY FOUNDATION’S OYSTER SHELL RECYCLING PROGRAM collects empty shells from restaurants, cures them for six months in the sun to kill bacteria and then puts them back into the Bay. So far, the program has delivered 125 tons back into Galveston Bay.

The reasonable prices are hard to beat, and it’s such a beautiful restaurant. WHAT INGREDIENT CAN YOU NOT LIVE WITHOUT IN THE KITCHEN AND WHY? Chocolate. Because chocolate is a main ingredient in desserts and it can be used in so many things: molded chocolates, ganache, cake, mousse, etc. I love how there are different flavor chocolates depending on the region it’s from; and seeing how they taste different and act different, it’s really cool.

Laredo Taqueria has the best breakfast tacos – actually they have the best tacos period! Every time I go, there is always a line out the door and the food is just amazing.

WHAT UTENSIL CAN YOU NOT LIVE WITHOUT? Probably have to say a spatula. I don’t know what I would do without them. The perfect tool in the kitchen to get every last bit of a batter or ganache out of the bowl. Also the heat resistance is perfect for cooking on the stove with certain ingredients. WHAT’S YOUR PET PEEVE? Working dirty. I learned really quickly to never work unorganized and messy when I started my career at Bedford. I love being organized and clean. You work faster and you constantly stay ahead and it makes everything easy.

FAVORITE AFFORDABLE WINE? Marques de Caceres Rioja is a really inexpensive Spanish wine that is pretty good. I love Spanish wines, and this one in particular has a big berry flavor. FAVORITE PLACE FOR DESSERT? The boyfriend and I love going to Sweet Paris for crepes. Nutella® with strawberries and bananas with a scoop of vanilla gelato is my weakness. Crepes are probably the easiest thing to make – so thin and perfect, I could eat this dessert every day. WHO ARE YOUR FAVORITE CHEF, RESTAURANT AND DISH? If I had to pick it would be Thomas Keller. I love everything that he stands for and everything he teaches to our younger generation. I love all of his restaurants but especially Bouchon – their pastries and food are simply amazing. Bouchon’s Croque Madame, you just can’t go wrong. WHAT IS YOUR COMFORT FOOD? My mother’s cooking. She is a truly amazing cook. From tomato basil to meatloaf and caldo de pollo, she is the best cook in my book. DO YOU USE A RECIPE OR WING IT? I always use a recipe to make sure my desserts are consistent. When I first make something I obviously wing it and see how it tastes but while I’m doing that I’m also writing down as I go to make sure I know how much sugar to add or take away. I GOT WIND OF A NEW RESTAURANT THAT OPENED UP ON SAN FELIPE, JUST INSIDE 610, CALLED LIBERTY KITCHEN AND OYSTERETTE. I’D HEARD PLENTY OF GOOD THINGS ABOUT ITS OLDER SISTER IN THE HEIGHTS. THIS NEW SPOT IS LARGER, SEATING MORE THAN 200. AND NOT A SEAT WAS WASTED ON THIS NIGHT. A LOT OF CHATTER, A LOT OF ENERGY AT THE BIG CURVED BAR UP FRONT, PEOPLE MINGLING BETWEEN TABLES.

After ordering a couple of their signature drinks – the Fitzgerald, a blue agave, Gran Marnier, housemade syrup margarita, perfect – my dinner companion and I started with, what else?, some oysters on the half shell. Our server made us aware of the variety, some from New England, Mid-Atlantic, Maine, British Columbia. So there was quite a selection. But we opted for the home team, Gulf of Mexico selects. Fantastic. We also requested Deviled Eggs and Deviled Fried Oysters, a personal favorite, something I’ve savored more than a few times at BRC. Addictive, I’m telling you. For our entrées, my pal Cyn ordered Lobster Bolognese. I opted for the grilled Mahi Mahi. Our sides were included – some crisp, fresh green beans and the Cream & Butter Mash Potatoes with chive

sour cream and mushroom gravy. It was a tough call, but it won out over some other scrumptiousness: sherry-honey roasted cauliflower; shaved Brussels sprouts with smoked grapes, bacon, horseradish and parsley; duck liver dirty rice, to name a few. The menu is loaded. I wish I were three people. Sushi, caviar and soups that sound amazing. The steaks will await my return, as will several seafood selections and the King Crab, Tarragon and Fontina Mac & Cheese. Oh yeah. We happily, decadently shared our entrées. Then dessert. We’re talking substantial servings of Raspberry-Chocolate Bread Pudding and Petite Sweets Red Velvet Cheesecake. Wow. Neither of us could come close to finishing either of those knockouts. Simply wonderful.

RAMEN IS HOT. And I’m not just talking about the fact that it’s normally served as a hot bowl of steaming noodle soup. The craze is sweeping Tiger Den Interioir the country, and just like everywhere else, Houstonians have been clamoring for a place that serves this Japanese comfort food. Enter Tiger Den, the brainchild of owners Mike Tran, Martina Yang and Linh Nguyen, who also own Aka Sushi on West Alabama. Taking over a small strip mall location in Dun Huang Plaza in Chinatown, their idea was to open a ramen shop and robata grill – an izakaya-type restaurant for casual Japanese dining. Tran and Yang traveled all over the world, visiting ramen shops

from Hong Kong to Toyko, New York City to San Francisco, for research purposes. They decided to offer house-made noodles and traditional pork-based tonkotsu, miso and shoyu broths. The ramen toppings would be traditional chashu, bamboo shoots, wood ears, onions, seaweed and corn. They would also offer a robata grill, serving yakitori and other barbecued items, like chicken wings and whole grilled squid charbroiled over authentic Japanese coals. It was an instant hit. They sold out on the first “soft-opening” night, forcing them to push back the next day’s afternoon opening to 5pm. This continued for days until they decided they needed to close shop temporarily so that they could train staff and make improvements. It was a risky move, but it paid off. Their product is now better than ever. The only thing that is missing is the space. With high demand and limited seating, you can expect to wait for your bowl of noodles. However, it will be worth it. Houston, ramen has arrived in our great food city.

The tot’chos (think nachos made with Tater Tots®) were the first thing that arrived at our table. “Everyone says they’re to die for,” said my friend, who’d read online reviews prior to dining there. And it was indeed impressive: A gigantic scoop of guacamole sat atop a large mound of Tater Tots, piled high inside a cast iron skillet with a good mix of jalapeno, sour cream, pico de gallo and cheese. MORTON’S GRILLE (A SPINOFF OF THE MORTON’S THE STEAKHOUSE) IS A LOT LESS FORMAL THAN ITS FINE DINING COUNTERPART, BUT STILL SWANKY ENOUGH FOR A NICE EVENING OUT. The decor is sleek and dark, with large, comfortable half-moon booths and the same orange and gold-bulbed chandeliers you’ll find at the Steakhouse. An attractive bar sits to the right of the restaurant, the perfect place to sit and sip on one of their custom-crafted cocktails.

To hear him talk, you’d think that Jason Liao is a lot older than his 25 years. THE YOUNG SUSHI CHEF WILL TELL YOU ABOUT HIS MANY EXPERIENCES IN SUSHI RESTAURANTS, INCLUDING HIS MOST RECENT POST AS EXECUTIVE CHEF AT NANAMI IN AUSTIN. He’ll expound at length about his philosophy as a chef. He’ll talk like he’s been in it for so long that he had no choice but to open up on his own, but the reality is that he’s ambitious. He has ideas and talent that he wants to show off to the world – in his own way. And that’s what his new restaurant, Preview, is all about. It’s going to be his debut. “I kind of feel like this is the first time that I can express myself as a chef,” says Liao. With a tagline of “Modern Seafood Cuisine,” Liao doesn’t plan to offer traditional sushi or traditional Japanese cuisine. “I took the route of using a lot of local ingredients,” he says, likening his style to that of Uchi’s Tyson Cole. “My cuisine with Preview is more or less seafood items, sashimi grade items that I got used to working with. Tiradito The result is a menu that draws influences from around the world. A Peruvian-style tiradito of baby yellowtail is served with just-charred local okra, Thai chili cream and crispy shallot. A simple Italian-style yellowtail crudo comes with chili-infused olive oil, lime zest, candied garlic and blueberry gastrique. Ceviche might come in the form of “chips ’n dip,” with chips made of fried snapper nestled next to small mounds of tuna ceviche and butter-torched scallop. Instead of seared tuna, he’ll do “KFT” – Kentucky Fried Tuna – slices of battered and fried ahi tuna served with coconut creme fraiche, toasted almonds, peaches and truffle salt. The menu is whimsical and different, cutting-edge, yet accessible – and exactly the type of place that foodies will flock to in Sugar Land.

LOW RIDE The Orange Show’s Annual East End Lowrider Christmas and Toy Drive will take place December 14, 2013. The annual event is held in conjunction with the Latin Fantasy Lowrider Club as a way to give back to the East End community where both organizations are located. This year, two of Houston’s hottest Latin bands, Los Guerreros de la Musica and La Sien (2013 Houston Press Best Latin Band), will be performing, while the Latin Fantasy Lowrider Club shows off their incredible vehicles and guests are served homemade tamales and holiday treats. All toys collected during the evening are distributed on Christmas morning by the Latin Fantasy Lowrider Club to households in the East End. Additionally, artwork created by students that have participated in the Orange Show Art Bus Program during the Fall 2013 semester will be on display throughout the venue. American Heroes: Japanese-American World War II Nisei Soldiers and the Congressional Gold Medal opens December 19. Nearly seven decades after the beginning of World War II, the Congressional Gold Medal – the nation’s highest civilian award – was bestowed collectively on the U.S. Army’s 100th Infantry Battalion (INF BN), the 442nd Regimental Combat Team (RCT) and the Military Intelligence Service (MIS) for their extraordinary accomplishments in the war. The men in these units, comprised almost entirely of persons of Japanese ancestry, fought with bravery and valor against America’s enemies on the battlefields in Europe and Asia, even while many of their parents and other family members were held in internment camps. 8. THE MISSION promotes art of the Americas by organizing a diverse program of provocative exhibitions by emerging, mid-career and established contemporary artists taking a multidisciplinary approach to exploring cultural, social, geographical and historical contexts through presenting artists that shape, inform and challenge ideas and perception of contemporary art. Latin American Group Show runs through December 21 and includes Leap into the Void, an installation by Colombian artists Fernando Pareja and Leidy Chavez. The exhibition will feature recent works by Argentine artists Gustavo Díaz and Marcelo Grosman, including selected objects from Díaz’s new body of work, universo 1. The resulting objects – elaborately assembled, three-dimensional Plexiglas® acrylic reliefs – are hybrids of science and aesthetics.

Next up is British Arrows (12/7 and 12/8) featuring award-winning British commercials (including the pictured Furniture Playin’ Friends) and then they’re screening Un Flic/A Cop (12/13 and 12/14) about a burned-out French police detective. Their final Family Flick of the year is Le Tableau/The Painting (12/26), an animated French film about a painting whose subjects come to life. BEL-AMI YOUNG VOICES COME ALONG SOMETIMES WITH THE WEIGHT OF AN OLD SOUL. BEL-AMI IS ONE OF THOSE VOICES, EVEN IF YOU WOULD CALL HIS MUSIC CONTEMPORARY SOUL. HOW DID YOU GET YOUR BAND TOGETHER? DO YOU PLAY WITH THE SAME PEOPLE ALL THE TIME OR DO THEY ROTATE IN AND OUT? I’ve recently been trying to stick to two units — one for acoustic-type sets and the other for my full main stage setups. I like them both for different reasons. The full-fledge setup allows me to really go into the place of like rock. I like the feel of the guitar — and electric guitar, especially if you can add some, like some overdrive to it and really just set its tone to your music. The juxtaposition of those kinds of sounds set against my melodies that I implement, it really makes for a different experience. But my acoustic setup I like as well, because in that I have an acoustic guitar, a cello and a cajon. So visually, it brings something different. Most people don’t see a person come out with a cellist. Or a cajon — people are like, “What is that little box thing?” But you know, I got some great musicians behind me, and that gives me a chance to be a little bit more personal, because usually the environments that I’m performing in with that setup are smaller venues and there’s a lot more freedom there. WHY DID YOU CHOOSE BEL-AMI OVER AMIR BELLAMY? AMIR BELLAMY IS A GREAT NAME! Amir Bellamy is a great name. Bel-Ami came from — years ago my aunt gave me… I don’t know if it was a Christmas card or a shirt or something… it had Bellamy spelled a bunch of different ways, in different languages. And I took French in middle school, and as you start to understand history, and how names change, and how names are given, I kinda broke it down and I was like, “Oh, bel-ami, that’s beautiful friend.” And I think that encompasses everything that I believe in as a follower of Christ. I believe that God loves you, and that you should love your fellow man the way that God loves you, and that’s that unconditional agape love that… that love goes beyond anything, all boundaries. So I see that as being a beautiful friend. And so in my music, if I can relate a message that you feel, that you understand that you can somehow use in your life, then I’m being bel-ami to you.

INA GARRISON, HOUSTON’S FORMER WORLD-RANKED PROFESSIONAL TENNIS PLAYER, FIRST PICKED UP A RACKET AT AGE 10 WHEN SHE WANDERED OVER TO MACGREGOR PARK AND STUMBLED UPON A FREE TENNIS PROGRAM GIVEN BY THE NOW LEGENDARY COACH, JOHN WILKERSON. A QUICK LEARNER AND NATURAL TALENT, HER JUNIOR CAREER BOASTED EVERY MAJOR JUNIOR TITLE AND A NUMBER 1 RANKING. After turning pro at 18 and skipping her high school graduation to play in the French Open, Garrison finished her first year on the tour ranked 10. Fourteen top-level singles titles, 20 doubles titles, a gold medal in the ’88 Olympics, 3 Grand Slam mixed doubles titles, a trip to the Wimbledon and U.S. Open finals, and victories over Chris Evert, Monica Seles, Steffi Graf and Martina Navratilova followed. One of those rare, reluctant celebrities who doesn’t care much about her fame and fortune, Zina appreciates what her acclaim enables her to do: help people. Her desire to serve was the foundation for creating the Zina Garrison Tennis Academy, a program founded with John Wilkerson that provides tennis instruction and educational support to underserved children in Houston. I interrupted her as she coached the current number 1 junior player to talk about her life and found her as giving and down to earth as they come. You will too.

HARRISON: What’s the best advice you’ve ever been given? GARRISON: It was from Barry Gordy, the founder of Motown, who told me I had to be a champion off the court, not just on the court, that I had to be the same person in life that I was on the court. I couldn’t hide. Once you’re on that court, you’re wide open so anything you have going on, it’s going to come out once you’re under pressure. HARRISON: Name a time in your life when you were resistant to change occurring but when it did, it turned out for the best. GARRISON: The last five years of my life. I took a break from people and things and I just did my own thing and really wasn’t interested in being in the public eye – and now, I’m opening back up to doing what I love and that’s helping others.

HARRISON: What would you say is the meaning of life? GARRISON: For me, it is treating people like you want to be treated and to honestly love others just because. Each and every person has something to offer and you can be missing out if you judge a person rather than just accepting the person for who they are. I learned that at a very young age. My mom helped people and was like “you need a meal?” and sometimes gave people a place to stay. Then, I remember barely knowing how to play tennis at our summer programs and the way we paid it back to the program was to give lessons to someone else. Our practice would start afterwards. That was a major driving force in starting the academy, to give back. HARRISON: If you were a super hero, what would be your one super power? GARRISON: To be able to grant peace.

HARRISON: What’s the best Christmas present you’ve ever gotten? GARRISON: Seeing the enjoyment on the faces of my nieces and nephews. We always had someone dress up as Santa, and just watching their enjoyment, that’s my best gift. HARRISON: What would you say the biggest highlight of your career was? Not the stats, not beating Martina, but to you personally. GARRISON: I would still say winning my gold medal at the Olympics. It still is because I won it for my country.

JUSTIN’S TRIUMPH:

THE CLARK FAMILY IS PRETTY BUSY THESE DAYS. IN ADDITION TO MANAGING THE TYPICALLY HECTIC SCHEDULES OF TWELVEYEAR-OLD TWINS JARED AND JUSTIN AND EIGHT-YEAR-OLD LEXI, THEY OVERSEE WWW.JUSTINSTRIUMPH.COM, A WEBPAGE DEVOTED TO THEIR SON’S RECENTLY DIAGNOSED RARE AND FATAL DISEASE. JUSTIN CLARK, 12, has Giant Axonal Neuropathy (GAN), a rare, fatal genetic mutation. His pediatrician became concerned during a routine 11-year annual checkup when the family noticed Justin had an unstable gait. Shortly after, his little sister was also diagnosed as having the defective gene, though she hasn’t had any symptoms yet.

“Even though my family was passing down this gene, they had never had children with another person who had the recessive gene,’ she explains. “And my husband and I are not from anywhere near the same area! He was born in New Jersey and I’m from Kentucky. We actually met in Germany; we were both officers in the Army,” she reveals.

“With a growth spurt, his arches got so high that he was no longer able to get the balls of his feet to walk, so he was falling a lot,” explains his mother, Lagenia. Justin has since had surgery to help correct his arches. “This summer he was able to go to camp and just do normal kid things.”

Twin brother Jared has since vowed to be the “voice and legs” of children with GAN, referring to the loss of both these functions which inevitably affects GAN sufferers. To raise money to help find a cure for GAN, Jared and his mother each ran, swam and biked over 70 miles at the The Oil Man Texas Triathon (November 3rd). To date, they have raised over $58,000. Their goal is to raise $2 million in research money over the next year. All the funds go to Hannah’s Hope Fund, the only nonprofit dedicated to this orphaned disease which does not receive any other research funds because of its rarity.

Since the diagnosis, Lagenia and her husband have been tested with a cheek swab. “Whole genome sequencing has only been available for the last 19 months,” she points out. Turned out both had the recessive gene – a perfect storm.

Thanks to their efforts, a clinical trial is awaiting approval by the National Institute of Health, and the Clarks are headed to Washington early next year to participate in preliminary research. “The nice thing about this potential cure that we have is that it’s a ‘one and done’,” she explains. “It literally would be a one treatment cure.” The treatment consists of injecting a corrected gene in the patient’s spinal fluid. MAYBE YOU’RE HOSTING A PARTY, CATCHING UP WITH A FEW FRIENDS OR ARE DETERMINED TO COOK AN IMPRESSIVE DINNER FOR A DATE. FEAR NOT … EVEN IF YOUR CULINARY SKILLS ARE LIMITED TO MAKING A BOWL OF CEREAL, YOU CAN NOW WOW YOUR GUESTS WITH A SIMPLE, DELICIOUS AND BEAUTIFUL MEAL CREATED BY THE WISEST OF GUYS I KNOW, THE ONE AND ONLY CHARLES CLARK OF IBIZA, BRASSERIE 19 AND COPPA. PEPPER-CRUSTED AHI TUNA It looks complicated, but all you need are some rare tuna, peppercorns, kosher salt and grapeseed oil.

While your tuna is searing, gather a few simple vegetables (Charles gets his at Eastside Farmer’s Market or Whole Foods) such as green beans, Brussels sprouts and carrots for color and texture. Give them a quick stir fry in a pan – using grapeseed oil and high heat. Toss in a bit of salt and pepper and move the vegetables around using tongs. They will be done in a few minutes.

FIX IT FAST • Roast peppercorns in the oven for four minutes. Take out and crush them. • Get a great 7-ounce square piece of tuna. (He recommends Airline Seafood on Richmond; they’ll cut and measure for you.) • Season on top and bottom with a bit of kosher salt and then coat both sides with peppercorns. • Coat griddle or flat pan with a bit of grapeseed oil and set temperature on high. When oil starts to smoke, it’s ready for the tuna. • When you see a white color coming through at the base of the tuna, it’s beginning to sear. • Cook two minutes until peppercorns start to caramelize, then turn and sear the opposite side for two minutes … and that’s it! Remove and slice into four pieces, so that coating is on top and bottom of each piece.

A SIMPLE SAUCE Dice tomatoes and mango and place in pan with butter; cook until it emulsifies. Spoon out over plated tuna. TOP TIP WHEN COOKING WITH BUTTER, ALWAYS BUY UNSALTED. YOU CAN ALWAYS ADD SALT LATER.

DYNAMITE DESSERT Keep it simple with sliced fresh strawberries on a bed of Chantilly cream. (When whipping heavy cream, add in a bit of sugar and some liqueur – Charles recommends Number 43 from Spain, which is a sort of honey brandy.) You can make the cream a day before and keep it in the refrigerator. “Strawberries are the most romantic fruit,” says Clark. “They look like a little heart.” Sprinkle with chopped fresh mint for a festive Christmascolored confection. CAN YOU BELIEVE IT ONLY TOOK FIVE MINUTES TO COOK AND PLATE THE TUNA AND VEGETABLES. “IT’S A LOT OF FOOD, A LOT OF FLAVOR, BUT YOU’RE NOT GOING TO WANT TO PASS OUT AFTER EATING IT. YOU’LL WANT TO STAY UP UNTIL 3 OR 4 AM TALKING … OR SOMETHING,” CHARLES SAYS.

HE STREETS ARE ALWAYS BUZZING IN VIETNAM. WHETHER YOU’RE STANDING ON A CORNER TRYING TO CROSS THE ROAD, OR SITTING SAFELY IN A CAR, YOU’RE ENVELOPED IN A CONSTANT WHIRL OF SCOOTERS, MOPEDS AND BICYCLES, EACH TOPPED BY SOMEONE—OR TWO, OR A FAMILY OF FOUR—CLAD IN A BRIGHTLY COLORED HELMET. IT’S AMAZING TO WATCH THE TRAFFIC EBB AND FLOW, PARTICULARLY AS IT SEEMS LIKE NO ONE EVER YIELDS TO ONCOMING VEHICLES—YET YOU RARELY SPY A MERGING-RELATED ACCIDENT.

“Drivers here don’t look behind them,” explained a friend who lived in Vietnam for years.”They just keep moving and trust it will work out.” My friend was talking about traffic rules, but after just a few days in this vibrant country, that explanation seemed an appropriate metaphor for so much more. instead to move ahead with full force. Here are two areas that offer a diverse look at today’s Vietnam.

HANOI: CULTURE & HISTORY Close to 7 million people call the metropolitan area around Vietnam’s capital, and second largest city, home, but somehow Hanoi retains an elegance you might not expect from a Southeast Asian city. It’s probably all the lakes. Though the city has expanded out into suburbs and up into skyscrapers, the Old Quarter and colonial center sit between rivers and are dotted with lakes, around which you'll find promenading families, street vendors and even the odd sidewalk ping pong game. A few of the lakes feature floating temples, while others—like popular West Lake—offer swanboat rides. As Vietnam’s capital for over 1000 years, Hanoi is considered the country’s cultural hub; it was also the seat of the French Indochine government, and still features the leafy bouleHotel Metropole Hanoi vards and colonial mansions of that time. Base yourself in the historical center for easy access to all the main sites and indie shops (and if you venture too far off, a cab ride is just the equivalent of few dollars, anyway).

DO: • Hit the top historic and cultural sites, including the Presidential Palace complex, home to a Beaux Arts mansion, gardens and Ho Chi Minh’s Stilt House; Hỏa Lò Prison (aka the “Hanoi Hilton”), a former prison-turned-museum that once held US soldiers (including John McCain); and the Temple of Literature, a stunning 11th-century, five-courtyard complex with pavilions and halls dedicated to Confucius and scholars. • Sample Hanoi specialties like phở, a rice noodle soup made with chicken or beef, and served at all the streetside cafes, and bánh cuốn, a thick rice roll stuffed with pork, mushrooms and shallots. • Browse the boutiques in the old town for souvenirs like lacquer tableware, embroidered silk robes, vintage posters and a wide array of artwork, from traditional leaf paintings to striking modern pieces.

HOI AN: BEACH & STYLE Set in southeastern Vietnam, off the South China Sea coast, Hoi An was an important trade port from the 15th to the 19th centuries, and still boasts excellent examples of the eclectic buildings and street plans of those times—so much so, that it was designated a UNESCO World Heritage Site in 1999. Now a popular tourist spot, Hoi An’s charming, car-free Old Town is lined with ornate temples, historic homes (some featuring ceramic or antique museums) and relaxed riverside cafes. Once a month, the town center turns off all electric lights in the evening, illuminating the streets with silk lanterns – both a special experience and great way to travel back to the town’s heyday.

STAY: A mainstay on all the major Best Resort lists, The Nam Hai is set on serene Ha My Beach, a short drive from Hoi An (and linked by complimentary shuttle). The exteriors were inspired by the high-ceilinged Tu Doc royal tombs found in Hue (a day trip’s ride away through the highlands), while the suite and villa interiors evoke traditional Vietnamese residence in layout—though the decor is all modern, streamlined chic. DO: • True to its trading-hub past, Hoi An is known for luxuries like silk, peals, jade and fine linens—but not everything for sale will break the bank. The town is full of tailors who can whip up silk dresses, suits and even winter coats in just days (or copy your favorite pieces from home) for reasonable prices. Silk shoes and handmade lanterns are other Hoi An signatures, as are stylish ceramics. • For a small town, Hoi An has some standout eateries. Head to the Mango Room for modern Vietnamese fare with a Texas twist from celeb Chef Duc (a former Texas resident), or settle into a river view seat at Brother’s Cafe—set in a French colonial mansion—for a menu of local specialties. • Build in some time to just hang out at The Nam Hai—there’s nothing more relaxing than watching the waves from its beach, ginger-and-lemongrass-infused cocktail in hand.

NEW FACILITY The Center for High-Performance Computing off I-10 in the Energy Corridor, is an architectural show-stopper. COFFEE THE WHO: These local All Stars have been setting the city’s standard from their outpost on Washington Avenue for quite some time now. A cozy industrial interior with great outside seating attracts all types: wifi freelancer folks, business meeting folks, twitters, yelpers, Maserati drivers and many a small business owner. The line gets pretty long in the mornings, but it moves quickly and is worth the wait. THE BREW: Imported beans roasted right here in town from Amaya Roasting Co. make for utterly perfect coffee. Such craft and dedication is best shown straight up in a shot of espresso (accompanied by a complimentary shot of sparkling water). Of course adding milk or flavors (mocha, latte, cortado, etc.) won’t dilute your experience – this is great coffee. Get adventurous and try the V60 or chemex for the best in pour over extraction. THE FOOD: You will eat the fresh daily, delivered pastries, and you will like them, because, they are good. Sinfull Bakery and Fat Cat Creamery also provide nice locally made snacks and ice cream.
