ER Hops, what are they and for what are they used? Well, if you like reading ingredients labels on household products, you may see that they are in many items you buy, such as deodorant. Hops have natural preservative properties, which is the reason they have become ubiquitous with beer. In fact, the Federal Government requires the use of hops in “malt beverage” or beer. Historically, most beer didn’t utilize hops, as they were not as easily available as they are now. Brewers would often use what was available to them to help preserve and flavor their beer and one of the most accessible was juniper. Sahti is a Finnish style beer and also one of the oldest; instead of hops to flavor the beer it traditionally uses Juniper. There is a huge world of traditional recipes and styles that use other herbs for bittering, flavoring, and preserving beer that fall under the category of Gruit. Using anything from the aforementioned juniper to dandelion, burdock root, marigold, and horehound. Now that we’ve talked a little bit about what hops aren’t used in, let’s discuss why they became a universal ingredient in beer and required by law by the likes of the United States of American and the Reinheitsgebot. Hops, also known as Humuls Lupulus were first documented by Pliny the Elder (23 – 79). The first documented hop cultivation is from the Hallertau region of Bavaria in 736. Around 1150 near Bingen, we get the one of the first published uses of hops. Abbess Hildegard of Bingen (1098-1179), a philosopher and healer, published a book called Physica Sacra, which roughly translates to “The Natural World.” Book I, Chapter 61, “De Hoppho,” or “Concerning the hop,” says of the plant: “It is warm and dry, and has a moderate moisture, and is not very useful in benefiting man, because it makes melancholy grow in man and makes the soul of man sad, and weighs down his inner organs. But yet as a
result of its own bitterness it keeps some putrefactions from drinks, to which it may be added, so that they may last so much longer.” This suggests that hops are used for their preservative and antibiotic properties. However, it is unclear when hops began to be cultivated for use in beer. Germany likely began using hops for beer in the 1100s or 1200s and began exporting hopped beer in the 13th century. There is record that hop cultivation spread to Holland by the 1360s and was imported to England shortly thereafter. By 1412, we have the first record of Agnes Smyth brewing hopped beer in England. In 1603 King James I approved an Act banning the import of hops, thus paving the way for England to begin significant hop production. By 1752 hop use in beer was ubiquitous and Gruit began to fall by the wayside, more than 500 tons of English hops were imported through Dublin alone. Currently, the United State produces the most hops in the world, followed closely by Germany. Hops are a vining plant that grow 25 feet or longer. Each spring, the hop rhizome or root shoots bines (a climbing plant). They like long sunny days and grow best between the 35th and 55th parallel. 80% of US hop production comes from the Pacific Northwest because of its favorable climate. Although, Florida has shorter days, humidity, and diseases/pests not found elsewhere, the University of Florida has a hop farm where they are testing the production of hops. So far, results have been positive with several verities growing well. Next month, we’ll dive a little more into the science and use of hops in beer. If you’re looking to dive into a hoppy beer, you’re in luck! There are many locally brewerd hoppy beers of all styles from malt forward, dank hop-forward, tropical-fruit hop-forward, or intensely bitter. Scotty’s Bierwerks makes fine, hopped beers (along with other award winning styles), and recently released a Mosaic and Citra IPA.

Why Do I Go to a Gym? How long have you been working out at Kari Kardio’s? It was 12 years last February. I started 10 days after I turned 60. How many days a week do you attend? Half the year 4 days a week, half the year 5 days a week. Dictated by my league tennis. What do you like most about the workouts? That they are different EVERY SINGLE TIME, regardless of what body parts are being stressed. Week in, week out, they are always different. Also, from the beginning, due to my injuries, all the instructors were great about giving me modifications if a particular exercise was not good for me to do.

Have you noticed a difference in your body and how does it make your feel after the workouts? I can sometimes “see my muscles”, and that always amazes me. Love starting my day with boot camp. What advice would you give someone wanting to start at Kari Kardio but is scared they are too out of shape? I would tell them that I got injured and missed six full months of ALL physical activities with a torn Achilles and shoulder impingement. I gained wright with all the forced inactivity, and turned 60 feeling fat, disgusted, and that I would never lose it. Then I saw your boot camp sign on McGregor, called you, and got to start immediately. Within two months I had lost the weight and was “hooked for life.” So I would tell somebody that age and being out of shape are not valid reasons not to start working out at all. If you have the desire and determination, you can do it. And your facility just cannot be beat because it is small enough where the instructors all know everyone, their abilities, and where they need help and encouragement.

Now, you don’t have to have a bunch of room, a special degree, a big building, let alone a big expensive grow system to have a successful harvest. Heck, they sell pretty cheap indoor countertop gardens at places like Walmart or Home Depot, as small as 3 plants with seeds, pods, a grow light and nutrients. Follow directions and boom you’re growing an indoor herb garden that waters and suns itself! So, in reality, what seems unobtainable to most is readily available in small scale at your local super stores. It is fast and easy to try it out at little cost to you. Even better, get creative. If you are handy, or an avid gardener like myself, you can always build and design your own grow system using 16
the same basic ideas.
