From The Brewer......

Berliner Weisse is an enigmatic style that originated in the early 1700’s and still takes many different forms, flavors, and appearances today. In 1809, Napoleon dubbed this style the “Champagne of the North.” As the name suggests, Berliner Weisse hails from Berlin, a city that began its brewing tradition in 1572, and its wheat beer brewing tradition in 1642. Initially, these beers were brewed with up to 100% wheat malt, however, something between 50% and 70% was more typical. The grains used were under-modified, which would leave less starch to be converted to sugar for the yeast to consume and more proteins in the beer, which act as foam stabilizers, giving the beer good head retention. Typically, Berliner Weisse would be low alcohol, 3% abv. This allowed them to be consumed in place of water, which was typical in many areas of Europe at the time. The beer was also brewed using wooden barrels. Brewers would take fresh hay and lay it inside the barrel in order to act as a filter when extracting the sweet wort from the mash. The hay worked well, leaving the wheat behind. Now, you typically don’t see a grist profile above 50% wheat malt. That is because with the advent of new brewing technology, the typical mash tun is unable to filter the wheat as well as fresh hay can. From the mash, brewers would typically skip the boil, and thus skip the addition of hops, which as you may know act as a preservative and inhibit certain types of bacteria. Because Berlin in the 1700’s was a relatively new brewing town, they would have yeast brought in from other brewing towns. Although, it wouldn’t be until 1857 when Louis Pasteur outlined the role of yeast in brewing. Brewers at this time knew that adding the “left over” slurry from a previous batch would help make a new batch. The yeast was typically transported in baskets and would be checked, via smell method, to see if it had soured or developed unpleasant odors. After mashing out, brewers would run the sweet wort down copper pipes filled with cool water in order to cool the beer. Some of these cooling mechanisms are still in use or are still part of traditional breweries today. Brewers would also employ

something called a coolship, essentially a large, shallow, copper pan. Because of the increased surface area of coolships, brewers were able to cool large batches overnight. From here, it was typically transferred to fermenters and yeast was pitched. Traditional Berliner Weisse is unique. It is a wheat beer, like many styles of German beer, however, it has a reserved lactic sourness. This is likely due to the lack of hops, which often work as an inhibitor for lactobacillus, the main souring agent in beer. Along with the lack of hops and multiple opportunities of long-term exposure to air, this beer was known as being tart, bone dry, highly effervescent, with a long lasting white head. It often had the essence of peach or apricot from the alternative yeast Brettanomyces that was found in the beer. The fermentation of this beer was usually pretty quick. From there, it was bottled in champagne bottles to high levels of carbonation and served. During the 1800’s, this style became high-class in Berlin. It was common to have 9-year-old bottles that had been buried and aged in clay available. Typically, higher-end locations would offer fruit liqueur along with the beer. Because of the co-fermentation with Brettanomyces and souring bacteria, some have suggested it is similar to a young Lambic style beer. With the advent of Lagers in the early 1900’s, this style almost became extinct. By the 1980’s, all but one Berliner Weisse brewery had closed. Kindl Weisse is the only surviving historic example, however it does not represent the majority of historical Berliner Weisse. It is back sweetened and not fermented with a mixed culture. With the brewing renaissance, many American breweries began to research and revive this style of beer. Unfortunately, even now it is difficult to find a true historic example of a Berliner Weisse beer. Many of the breweries that make this style utilize a souring method patented by Otto Francke in 1906. This “kettle sour” method employs souring for 24-48 hours in a boil kettle, then boiling to kill off the bacteria, and finally pitching typical brewers yeast. This method gives the beer a clean lactic sourness but typically misses the head retention and peach and apricot essence of co-fermented Berliner Weisse.

Berliner Weisse Tasting Notes Berliner Weisse should have a thick, long lasting white head. Typically it is clear due to the acidity level. Peach and apricot should be present, along with lactic acid, sometimes a lemon quality. The beer should be subtly tart with no bitterness and finish bone dry. It should be well carbonated, up to 4 bars of pressure, low abv, and very drinkable. It pairs well with fruit such as cherries, strawberries, or melon. Havarti and aged ham or pretzel work as well.

When you decide to buy a home, whether it’s your first or your one-hundredth, it is vitally important to do things in the right order.

Last month we discussed the first few steps, this month we continue. What is the Best Time-Conscious Order of Things When Buying a House? 1. Get Pre-Approved with a Lender 2. Get Pre-Qualified with an Agent 3. Go Shopping 4. Write a Good Offer 5. Negotiate 6. Make Sure Your Agents Gets the Docs to the Right Places 7. Remove Contingencies 8. Close How Should I Shop for Housing? If you live in a house you need to sell, get it on the market immediately. You DO NOT want to write an offer contingent on your sale. That is a needlessly-weakened offer. Get on the market, price it like you’re serious about moving, and time the two closings so that you only have to move once. If you are renting, decide whether you’re going to time your purchase with the termination of your lease. Florida LandlordTenant law is very strongly in favor of the landlord, so do not skip out on your lease and expect your last month’s rent or damage deposit returned. Before shopping, ask yourself: If I find the home of my dreams, will I buy it? If the answer is anything other than an emphatic yes, it is a no. If the answer is no, you try to figure out why before going shopping. For example, “Yes, I’d buy my dream home, but only if I can get it for 10% under market value.” That is not a yes. Instead, that is a not-so-flushed-out attempt at being an investor. Make sure you get to yes before you go shopping. Having your agent talk you through it is a good idea. Use the Rule of 20 • Get your dream home search down to about 5 or 10 properties. Then, plan on going shopping 2, 3, or 4 times. Anything more than that is going to be very taxing. • Think about it in this context: Once you find the home you want, the process has now just started. You don’t want to spend months or years not-even-starting with this process. • We are on step 3 of 8. • Try to keep your home search to around 20 properties. If you’ve looked at 40 properties, go back to step 2, and ask yourself which of those 6 pre-qualifying questions you’ve not yet answered clearly.

How Do I Write a Good Offer? In short: Have a good agent. More specifically, your agent should not take the seller’s word for it, regarding value. Make sure your agent does a CMA (Competitive Market Analysis), to find the true value. Write an offer somewhere in the realm of that value. Keep in mind that the seller owes you almost nothing. Housing discrimination law protects a buyer only from discrimination for the following: 1. Race 2. Religion 3. Color 4. Sex 5. National Origin 6. Familial Status (kids) 7. Disability That’s it. ALL other discrimination is perfectly legal! In other words, the seller rejects your offer, stating, “This buyer has a horrible attitude, writes insulting offers, and is using a government-insured loan. Tell them never to talk to me again.” Nearly every word of that statement is discriminatory. However, attitude, perceived bad manners, and use of FHA loans are not protected classes. The statement would be discriminatory, and also perfectly legal. The buyer would not be buying that home, and would have nowhere to turn. The next step would be going back to step 3. With your agent’s help, write a good offer. What Are the Last Steps? 5. Negotiate 6. Make Sure Your Agent Gets the Docs to the Right Places 7. Remove Contingencies 8. Close Your agent, your lender, and your title company will collectively take you through these last steps. So, What’s the Bottom Line? The order in which you complete the first four of these eight steps is imperative. It will be the difference between a long, frustrating, failing effort, and a smooth transition into your new home. The last four steps will naturally occur in the right order, when the first four are taken in the right order. A good lender, and a good agent, will require you to go through each of these steps. And, if they are allowing you to go through these steps in a different order, it’s worth asking yourself who’s wasting the time and energy of whom. And that’s the bottom line.

Let’s take a walk..... all the way to your refrigerator. What do you see? Maybe some green onions, garlic, carrots, celery, romaine lettuce, potatoes, maybe some herbs. That’s just to name a few pf the over 20+ edible plants that you can regrow time and time again! All you need is a small jar, shot glass, cup, or even an ice cube tray/ These can all be perfect for these gardening experiments! Chop about 2 inches from the bottom, place in water for a few days until you see mature roots, then plant and enjoy!

Green Onions

Chop the end off about 1 1/2 inch from the bottom, set roots in water and watch them grow! You can plant them in a few days or keep chopping them as you cook. It’s that easy!

Chop 2 inches from bottom, place in water, then plant and enjoy.

One of my favorites! Not only is it a beautiful plant for your yard, it will bear fruit time and time again. Cut close to the top of the fruit, take off all the fruit, then peel the bottom leaves off until you see little roots. Place in water until the roots have matured, about 5 days to a week, then plant.

Carrots

Cut about 1 inch from the top of greens, place in water and watch them grow. The carrots themselves don’t grow much, but the carrot top are a great source of calcium, potassium, vitamin C and more. Not to mention they go great on salads & wraps.

Here in Southwest Florida, we have the benefit of being able to grill, cook out and barbeque year round. For all of us northern transplants, this a very big deal. It means almost endless opportunities for grilling newbies to expand their horizons with more than just burgers and for grilling aficionados to perfect their techniques on unusual meats or alternative fishes. With such a variety of grilled foods and grilling styles, our options for what to drink broadens as well. While visions of California Zins and Argentinean Malbecs symbiotically matched with juicy steaks are floating through everyone’s minds, there are countless other pairing options that will surprise and entertain guests at your next barbeque. One of the reasons the aforementioned Zins and Malbecs harmonize so well with the classic steak on the grill is due to the oak flavors in those wines. So if your menu will be featuring charred foods or meats cooked with the direct method on charcoal grills, you will want to include wines with noticeable oak flavors. In addition to the go-to Zins and Malbecs, a toasty California Chardonnay or Australian Shiraz is bound to please. For line ups including flame grilled chicken or pork loin, try a barrel aged California Pinot Noir.

When spicy barbeque sauces will be taking center stage, there are compatible options in both reds and whites. Full bodied, high alcohol, dry reds work to balance the spice, so bring out a Chilean Carmenère or Italian Barbera. Big bold reds such as these are generally served between 59-64˚ but it would be a good idea to chill the wine a bit cooler as the decreased temperature will counteract the heat. If a white wine is desired, go with a light bodied, low alcohol, sweet white. An Italian Moscato or a German Riesling will work very well. Please note though, not all Rieslings are sweet and a dry one just won’t compliment the spicier fare the way a sweet one will. One of the main principles of wine and food pairing is that bitter food and bitter wine accentuate each other’s bitter qualities and do not go well together. So, if you’ll be indulging in meats with turmeric based spice rubs or salmon steaks seasoned with dill you will want to avoid tannic wines and explore an Oregon or Burgundy Pinot Noir. Similarly, in season staples, broccoli and brussel sprouts, may make their way to an avid grillers repertoire and are inherently bitter, so avoid oaked wines and try go with a Sauvignon Blanc from New Zealand or Chenin Blanc from South Africa.

Grilled fish generally tend to pair well with lighter reds and a wide variety of whites. If a fish is delicate or flaky it is usually grilled en papillote which limits the amount of grill flavor imparted to the fish. That being said if flounder or sole is on the agenda, it will generally complement the same Sauvignon Blancs or Pinot Grigios it would have had it been pan fried or baked. To liven things up, try a Spanish Albariño or Argentinean Torrontes. They will go just as well as the old standbys and add an unusual twist. For Mahi, Grouper, Snapper and their meatier brethren, a full bodied Chardonnay or a single varietal Grenache (Garnacha as they say in Spain) is light and zippy. Heavy fish including tuna, salmon and shark go very nicely with a cool region Merlot. Other grill favorites from the sea include barbequed shellfish. Two good matches that are off the beaten path are Italian Greco di Tufo and Spanish Verdejo. A rosé from Province will please the crustacean loving senses as well. Since it’s always a great time here in Southwest Florida to try some new wines while perfecting your grill skills. Wow the guests at your next barbeque with some of these fresh and fun wine pairings.

Publix Serves Day

Enrollment Open for 30th Annual FMPD Respect for Law Camp

Publix Serves Day was on Tuesday, April 2. This is a company-wide effort of Publix Super Markets that involves Publix associates serving in a variety of volunteer work around the community. The United Way Volunteer Center facilitated the volunteer event as a United Way Day of Caring and worked with LARC, Inc., the agency who benefited from the volunteer work, and Publix Super Markets to make the event a success.

The 2019 Respect for Law Camp is sponsored by the Fort Myers Police Department each year. The Camp is now enrolling children ages 11-14 for its 4-day, 3-night camping experience.

LARC, Inc. is a United Way Partner Agency with the mission to empower and support individuals with disabilities and their families to reach their full potential. LARC accomplishes this mission by providing vocational training and community residential services to help people with disabilities live happier, fuller, and more productive lives in the community, as independently as each is able.

An enrollment fee of $125.00 includes food, lodging, shirts, hats, prizes, and fun. Enroll by April 30th and receive an early registration discount of only $110.00.

The law enforcement themed camp will be held at Paul Laurence Dunbar Middle School from June 6th to the 9th. Activities include S.W.A.T. Team and K-9 Unit demonstrations, emergency vehicle displays, law enforcement training and drills, dodge ball and more. Children experience the challenges and expectations that come with being a member of law enforcement in a fun and exciting camp atmosphere.

Publix associates painted, cleaned windows, laid lava rock, trimmed trees, and interacted with the clients. The volunteers came from 10 Publix stores in the community. 80 Publix associates participated in the project at LARC. Publix Serves Day is a unique volunteer opportunity for associates to give back to their communities in which they work. Associates volunteered on their own time for the project. The United Way’s Day of Caring is a yearround program, coordinated by the United Way Volunteer Center which matches businesses’ desires to help with the needs of the community. Many local groups and companies have participated such as T3 Communications; Markham, Norton, Mosteller, Wright & Company, PA; and Fifth Third Bank. The United Way Volunteer Center connects individuals and companies to volunteer opportunities throughout our community. Ronald McDonald House Charities’ 22nd anniversary “Eat.Clay.Love…Once Again” event held on March 28th raised more than $30,000 to help the charity support programs that keep families together and near the care they need. More than 90 guests gathered at the Ronald McDonald House and enjoyed hors d’oeuvres and cocktails, a live auction and dinner prepared by renowned Chef Brian Roland of CRAVE Culinaire. El Caribe Latin Flavor Hosts Brew with Blue Officers with the Fort Myers Police Department and members of the community enjoyed coffee and conversation at El Caribe Latin Flavor. The café hosted the event to allow people a chance to sit with many of their neighborhood cops and ask questions or request assistance from the FMPD. Inquiries range from business applications to calming traffic along local streets. This was one of several community events that have been held by the department to reach out to various sections of the City in a comfortable and convenient environment. Restaurants Lend Hand to Charity and Pass on Savings FORT MYERS, Fla.
