Shakespeare’s infamous quote, “That which we call a rose. By any other name would smell as sweet,” may be beautiful and inspiring. But, it is a good thing Shakespeare hails from England because in France they are a slight bit more particular about names.
WINE
Sparkling wines are produced in nearly every major wine growing region in the world, but if they are not bottled in the historic province of Champagne, France, they cannot employ the “Champagne” moniker. That means California bubblies, Spanish Cavas, Italian Proseccos and all their effervescent brethren are simply referred to as “sparkling wines.” It is interesting to note, sparkling wines were discovered accidentally. To produce wine, grapes are harvested, crushed into juice, and fermented, which involves adding yeast to devour the sugar in the grape juice; thereby, producing alcohol and carbon dioxide. Fermentation stops when the sugar is depleted or when the winemaker determines the wine is at the appropriate level of sweetness. Back in the early days of wine, however, the processes which stopped fermentation were somewhat rudimentary. They could result in a wine for which fermentation was not stopped, but rather paused by cold temperatures. After a year’s grape harvest in the fall, wines were fermented, bottled and stored in natural underground cellars which were sufficiently chilled in the winter months. When spring arrived and warmer temperatures crept into the wine cellars, the pause button switched off and fermentation began again. Since the bottles were sealed, the carbon dioxide did not have anywhere to go, resulting in the infamous bubbles.

There are a few techniques for making sparkling wines. Technology has afforded a number of variations on those processes, but the preferred general procedure currently known and used around the world is the Traditional Method. A base, still wine is made that is high in acid, low in alcohol and fermented dry (all the sugar in the wine has been consumed by the yeast.) Multiple base wines may be blended together to form cuvées. The base wine or cuvée is bottled, a specific amount of yeast and sugar is added and the bottle is sealed with a temporary cap. The additional yeast and sugar, known as liqueur de tirage, initiates a second fermentation in the bottle. This second fermentation continues for about a month and the now sparkling wine is left to age. Once the wine has developed to the vintner’s satisfaction, an exhaustive process to compile and remove the sediment from the neck of the bottle ensues. After which, the wine is topped off, sealed and ready for sale. So when the cork is popped at your next celebration, impress your friends with your substantial knowledge on the bubbly!

BEER The Vienna Lager is a crisp, clean, and incredibly drinkable beer first brewed in Europe in the 19th century. When we talk about a Vienna Lager, we’re diving into a history of malted grain. It gets its name from the Vienna malt that is used as the primary source of sugar for the production of this style of beer.

Vienna malt came about after new kilning technology came to England. Kilning is the process of malt production where the grain moisture content is reduced, stopping the germination process. This is done by passing heated, dried air through a shallow bed of malted grain.
Around this time, Anton Dreher was traveling with his friend Gabriel Sadlmayer II of Spaten Brewery to learn about the brewing process in order to take over his family’s brewery, Klein-Schwechat Brewery. During his time in England he learned about this new process of kilning grain. There are even reports that they went as far as stealing samples of wort and yeast from breweries they visited to take back for analysis.

lightly kilned malt with lager yeast and in 1841, the reddishcopper Vienna style lager is born. This revolution in beer led to Anton Dreher becoming known as the “king of beer.” Unfortunately, the Vienna lager did not last long. World War I left the entirety of Europe in tatters and the already waning Vienna Lager almost completely disappeared. However, thanks to an earlier migration from Europe to Mexico, this style of beer was able to make a comeback and thrive once more. In 1861, when Napoleon III invaded Mexico, a new regime was established there and Maximilian I, from the Austrian Royal House was brought in to rule. Although, his reign was short, it brought an influx of art, food, and craft from Austria, including brewers. Vienna Lager, the beer of choice at the time, led to various iterations of it being produced in Mexico. In Mexico, the Vienna Lager had an easily available adjunct, flaked Maize, added to its grain bill. This adjunct allowed it to be lighter
and more easily drinkable than the original produced in Vienna. In 1926, Cerveceria Modelo opened in Mexico City and began producing an adjunct version of the Vienna Lager, Negra Modelo, which is still produced today. Now, with the boom in American Craft beer, it is possible to find the Vienna Lager on tap in your local brewery or in bottles at the store. This style of beer is very similar to the Marzen or Oktoberfest style, which reportedly came about from Sedlmayr’s experiments with the new kilning method. He developed a Munich malt, which is kilned to a slightly higher degree. He then used lager yeast to create what we know today as Marzen. It is thought that Sedlmayr decided to market his beer as “Marzen gebraut nach Wiener Art” or “March beer brewed in the Viennese way,” suggesting he was copying Dreher’s Vienna Lager. Tasting Notes The Vienna Lager should have a thick, long lasting off-white head and should be orange copper and clear. Malt aromas of toast and bread come through predominantly with a light floral or spicy hop character. The beer should be creamy with a complex toastiness and bitter hop balance. It pairs well with bratwurst, chicken wings, or just about any grilled meat. Vienna lager can pair well with a mild Gruyere, Pepper Jack, Emmantal, or Stilton. A Local brewery from Bradenton FL, Motorworks Brewing Company, won a bronze medal for V Twin, a Vienna Lager at the Great American Beer Festival in 2014 for their rendition of the style.

Each of these 5 local associations are inside of the Florida Association, which is inside of the National Association of Realtors.
So, you can contact any of them to file a complaint. The Association will allow you to report a “Code of Ethics” violation. Then, they may dismiss the complaint, or they may take up the complaint and hold hearings.
Any hearing or other proceeding at the Association of Realtors would seek to uncover whether an Article of the Realtor Code of Ethics was violated.
Included in the 17 Articles of the Code of Ethics is agreement that financial disputes will be arbitrated, and that other disputes can be mediated. Realtor Association Arbitration is generally binding (by contract.) Realtor Association Mediation may or may

By rescuing dogs and pairing them up with Veterans based on their specific needs, they’re helping the lives of both Veteran and dog. Such

We recently interviewed the organization’s founders, Linda Fuller and Faye Keller.
Q.) Linda, can you explain the significance of the name “Wolfhound’s Legacy?” And what inspired you to start this organization?

Q.) How does the process work? “A Veteran will fill out our application and, after reviewing, we see what their needs are and how can we help them. We have them

service, which continued in the capacity of support for other Veterans
throughout the remainder of his life. One of our mottos is ‘No Fear on

Stand-up comedy is said to be a lot like fashion. It changes with the times and the seasons and people’s current tastes, styles and beliefs. The adaptation of one’s set over the course of decades can be an incredible transformation to watch.
“We went through phases” RC tells. “First observational, then political. You had to assume your audience was
very well read because all you had was the newspaper and evening news, so your jokes had to be more general in nature. Now, everyone knows what’s going on today just by picking up their phone, even someone who is the most casual about seeking out information. I stopped doing political because it was limiting in scope and it was a
LOT of work and research to be on your game. Political comics I knew were miserable pricks, very serious—which is the opposite of comedy.” INTRO TO CROWD WORK
One evening, RC was performing at Iona College with 4 other comics on the showcase. It was a casual night with
a loose format and no real order to the lineup. “There was a bunch of frat guys in the audience being douche bags and the guy who put the show together asked me to go out and put these guys in their place,” he said with a smile.
Although RC had been doing some crowd work, he had no idea that his next set would be the one that put his
future as an explosive improv comic in motion. “I spent 12 minutes hammering them and the audience went bananas.”
The other comics, having never seen someone be able to talk to an audience like that, were stunned. “That was
the first time since starting stand-up that I felt like myself,” RC says. And so began the start to his comedy career as the entertainer he was destined to be.
New York City gives you 2 choices. A city comic, where you end up running around to all the clubs, but to make
money, you have to do 5 or 6 sets a night for $25-30 each. Or a road comic, where you have 2 shows per week, Friday and Saturday. At that moment, RC decided that he wanted to be a road comic, which he describes as
being “more exciting” as he enjoyed the traveling element of the job. He hit the road, and his appearances as an inner city comic became far and few between.
Eleven years later in 2001, the national tragedy that we know as 9/11 occurred, and the tour industry in NYC took a dive. RC now had to make the conscious decision to “really bust butt and start booking gigs.” Around this time, he became friends with the Godfather of warm-up comics in NYC, Joey Kola.
The idea behind “warm-up” is making the audience feel like they are at a comedy club instead of a TV studio. Joey was the warm- up on the Rosie O’Donnell Show and asked if RC had ever considered trying it. Remembering the thrill of the frat-boy-roast, it became a considerable option for RC.
“I watched him and thought it would be a fun gig. He said he’d use me as a fill-in if he ever needed someone. I never expected to hear anything else about it. I figured he was just being nice.”
A few months later, Joey called to see if RC would fill in for him at Who Wants to Be a Millionaire. “Talk about
being scared (for the sake of family-friendly journalism) poopless! There were celebrity hosts, cameras, producers -- it was a whole new world,” RC tells.
Luckily, the TV is industry is very interconnected and, like most employers, once they know someone can do the job and do it well, they are likely to use you rather than keep searching.
RC performed as a warm-up comic for 2 weeks on Millionaire. From there, he was on the Caroline Rhea Show, Tony Danza, Ricky Lake, Rachel Ray, The Chew, and filling in on many others, as well as doing one nighters and

A Millionaire became an 18 year career. RC’s schedule was now bursting with performances, doing warm-up 3 to 4
days a week and stand-up as headliner every Friday and Saturday night on the road. Now, he truly had arrived! THE MOVE TO FLORIDA

“I wanted to be closer to my parents to help them out and keep an eye on them, and overall it was just time for some
new adventures. I couldn’t picture myself continuing to do the same thing for the rest of my life,” he says, leaving no hint of regret in his decision.

With his new home base in paradise, RC is optimistic

comic, only this time I know what I’m doing. Whatever projects I take on I am dedicated to making succeed. My
thought process in moving here was to ‘conquer Florida.’ After meeting my goals of becoming a headlining comic
and a top warm up performer, I want to start doing more
on my bucket list—hosting trivia, cooking demos, and staying on the road,” he says, having just returned from gigs in Canada, Pennsylvania, and New York. He is also scheduled for many more all over Florida.

A celebration of life ceremony was held in February in honor of Barbara Dell, founder and former CEO of Dress for Success SW
Florida. Dress for Success Worldwide CEO Joi Gordon, Fort Myers Mayor Randy Henderson, Florida House Majority Leader Dane Eagle, and fellow recipients of the Greater Fort Myers Chamber of Commerce Women in Business Apex Awards were among those in attendance for the event organized by Dell’s family and friends. Guests were encouraged to wear red, white or black, Barbara Dell’s favorite colors, to the celebration at the Broadway Palm Dinner Theatre. “Barbara Dell was a passionate advocate for the women in her community,” Gordon said. “She was a true inspiration to the women she served and the global Dress for Success network. She will be missed.”

Tax Collector’s Office raises $34K for art education Choice and creativity are the hallmarks of the more than 120 official specialty license plate designs available in Florida. The Kids Tag Art program was created to keep those qualities around for generations to come. The Lee County Tax Collector’s Office presented checks totaling $34,400 to 48 Lee County public schools. They honored nearly 100 children as part of a recent ceremony celebrating Kids Tag Art, a partnership between Lee County Tax Collector’s Office and the Foundation for Lee County Public Schools. The program encourages fifth-grade students to come up with front-end license plate designs, with this year’s “Sizzle N’ The Arts” theme serving as a prompt. The winning designs will be sold at leetc.com, with proceeds going toward the schools. The Tax Collector’s Office also sells sponsorships of the program, raising even more money that goes to fund elementary-level art classes.
“It’s heartwarming to see how Kids Tag Art inspires so many young minds here in our community,” Lee County Tax Collector Larry Hart said. “The program helps offset a lack of funding for art education, and it also shows students how they can apply their art in commerce, as witnessed by all the plate designs we have for sale.”

She also volunteers at crisis pregnancy centers and has offered her home to young girls who are pregnant. Lifeline Family Center provides a home in Cape Coral for homeless young women in crisis pregnancies to help them
become self-supporting through education, job training, parenting classes, professional counseling and spiritual guidance. It is the only residential program in Lee County for homeless young women in crisis pregnancies who are not part of the foster care program. In the residential program, Lifeline Family Center serves up to 12 young women, ages 16 to 25, and up to 24 babies at a time. In the Outreach Ministry program, more than 6,000 women have received assistance with material needs, adoption counseling and resource referrals. The non-profit also operates a 24/7 Pregnancy Helpline, provides free pregnancy tests, free ultrasounds by appointment, and does outreach to all areas of Lee County, including all college campuses.
