THINGS TO DO IN THE 352 : CHRISTMAS EDITION

KIRBY FAMILY FARM CHRISTMAS TRAIN // THROUGH DECEMBER 27

Located in nearby Williston, this annual Christmas train is a holiday tradition for many. The 20-minute train journey explores the surrounding farmland and lights. This year’s festivities will include a visit with St. Nick (Please note there will be no sitting on Santa’s lap this year.), a Christmas Buddies character experience, the manger babies petting zoo, tractor ride, an antique Ferris wheel, an Italian carousel, rides, a secret elf shop and more. On select nights through December the gates open at 6pm, and the light ride gets underway at 9:30pm. Gates close at 10pm. The farm asks for a $15.99 contribution per person in advance for those ages 10 and up. $20 at the gate. Children ages 3-9 are $10.99 in advance and $15 at the gate if available. Kids ages 2 and under are free. If you can’t afford a ticket, a day’s worth of volunteering will earn a free ticket. Admission tickets include all activities. After December 25, the ticket will no longer include Santa, the Elf Shoppe or the live manger scene. For details and to order tickets, visit kirbyfarm.com.

THE NUTCRACKER // DECEMBER 17-20 REINDEER RUN 5K // DECEMBER 12

COVID can’t stop this annual holiday race from happening. The 41st annual Reindeer Run, hosted by CenterState Bank and the Ocala Runner’s Club, will benefit the Boys & Girls Club of Marion County. The race starts at 3pm, and participants will receive a race shirt and a finisher medal. There is also a virtual option to the race. Dress in your favorite holiday gear, lace up your running shoes and hit the pavement. Register for the race at runsignup.com.

The music, the dancing, the costumes—it just isn’t Christmas without sweet Clara saving the Nutcracker prince. This year’s Dance Alive National Ballet production will have the Sugar Plum Fairy dancing through the Kingdom of the Sweets on the mainstage at the Phillips Center in Gainesville. Shows take place at 7:30pm daily and a 2pm matinée will be offered on December 19 and 20. A CHRISTMAS CAROL // THROUGH DECEMBER 20 This holiday classic will once again make a return to the Ocala Civic Theatre stage. This five-week run will include an inventive adaptation of this beloved story. Adult tickets are $30, and ages 18 and under are $15. Performance times are Thursdays through Saturdays at 7:30pm, plus Saturdays and Sundays at 2pm. Peruse the aisles of Renningers Antique Center in Mount Dora for a wonderful collection of holiday items and goods. The event begins at 9am and will include antiques, vintage items and vendors selling crafts themed for entertaining, decorating and gift giving. Food and treats will be available throughout the market. Admission and parking are free. Details can be found at renningers.net.

Come enjoy the park after dark in this special series. Each date, there will be a different event to experience in the park after the gates are closed to the public. On December 17, enjoy an outdoor showing of A Christmas Carol, along with holiday music. A special holiday treat and hot cocoa will be included in the $15 admission price. Registration is required for this event. Gates will open at 5:15pm. Please arrive early and bring a lawn chair and blanket. The event starts at 6pm, and there will be no entry past 6:15pm. An MTP COVID-19 Release Form must be completed and signed at check-in. For more details and to register, visit sholompark.org.

In this fun holiday follow-up to Forever Plaid, The Plaids doo-wop group is brought back from heaven to provide a little harmony to the world. Enjoy holiday classics with a bit of a twist, including “Jingle Bells,” “Twuz the Night B4” and “The Dreidel Song.” This holiday performance is filled with fun, laughs and audience favorites, like “Mambo Italiano.” Join Sparky, Jinx, Smudge and Francis for a night you won’t soon forget. The City of Belleview will host this annual celebration from 4-8pm at Lake Lillian. Vendors and attendees are encouraged to maintain social distances and wear masks. Following the lighting of the lake, a free holiday movie double feature will be provided. The two 30-minute films will include Trolls Holiday and Merry Madagascar. Bring blankets and chairs to enjoy the shows. The event will also include a small craft festival, food, music and a visit with Santa between 4 and 6pm. Children in attendance will receive a goodie bag, plus a coloring book and crayons. Visit the event’s Facebook page for details.

This immersive, walk-through holiday experience will transform the Give Kids The World’s Storybook Villages into a holiday wonderland. Give Kids The World Village is an 89-acre, storybook nonprofit resort in Central Florida that provides critically ill children and their families with magical week-long wish vacations at no cost. The event includes more than 3 million lights, delicious holiday treats, storybook attractions and more. The 150-foot lighted tunnel leads visitors to 45 beautifully decorated wish family residential villas, more than 50 wire-frame displays and a large gingerbread arch. Be sure to check out the out-of-this-world, space-themed décor at Henri’s Starlight Scoops. Admission includes complimentary ice cream and hot cocoa, plus unlimited access to the Village’s rides and attractions. Additional food and drink are available for purchase, plus holiday merchandise and 3-D glasses to bring the event to life. he Dali Museum is the first North American venue to host Van Gogh Alive, a unique exhibit of thousands of Van Gogh’s most famous works of art. “Just as Salvador Dalí expressed boundless creativity and was open to new techniques, technologies and media, we at The Dalí are excited to showcase another unique experience that blends art and technology,” says Beth Bell, marketing director for The Dali. “We’re thrilled to be the first art museum in North America to showcase Van Gogh Alive.” The exhibit features more than 3,000 enormous Van Gogh images. have been a huge music fan my whole life,” says Heather Lynne. “My parents always had music playing. My first musical memory is dancing in the living room with my momma to Janis Joplin and Carol King.” Born and raised in Pennsylvania, Heather Lynne has now called Ocala home for over 20 years. “The people, the miles of horses, the music scene here—it’s a special place,” she says. A Man For All Seasons Ocala resident Bill Nassal’s career has taken him from the Wizarding World of Harry Potter to the far reaches of outer space. // B Y R O N A L D W. W E T H E R I N G T O N

hether you’re a fan of the Harry Potter novels or you’ve visited the Wizarding World of Harry Potter at Universal Orlando more times than you can count, people of all ages can thank not only author J.K. Rowling for the wonderful vision but also all those in Orlando who brought the theme park to life. Chief among these people is Marion County’s own Bill Nassal.

In 1979, Nassal relocated to Orlando from Pittsburgh to build Orlando Regional Medical Center, and the timing coincided with the opening of the Universal Orlando sound stages. “I tried to get in with Universal to build their sound stages and (eventual) theme park, but it was hard to connect with the right person,” shares Bill. “I finally connected with the head of design, Ray Brandt.” Now involved in the studios, Bill left Turner Construction and a steady salary to form The Nassal Company in 1984, which grew quickly from there, with the first project at Universal Studios, the Psycho House, completed in 1988. The Nassal Company focuses solely on custom scenic fabrication in theme parks, zoos, aquariums, museums, resorts and specialty attractions 14

around the world. In 2007, Nassal was introduced to the Wizarding World of Harry Potter and given the opportunity to create—alongside Universal and Warner Bros.—a world that only existed through the imagination of J.K. Rowling and the more than 120 million people who have read her books. This was a game-changer. From meager beginnings with just two employees to now employing over 300 workers and with offices worldwide, Nassal’s company has become one of the most award-winning scene-building companies in the world. From rockwork lagoons in Iceland to Volcanos in Orlando and a galaxy far, far away, Nassal has been a part of creating many amazing destinations around the world. The move to Ocala from Orlando in 2000 was a natural one. Cindy, Bill’s wife, has been traveling to Ocala from West Virginia her entire life to visit family, and her love of horses has become a life-long passion. Now, Cindy breeds, raises and races thoroughbred horses on their farm, Stonecliff, in Ocala. Another passion for Bill is the symphony and the performing arts. In the late ‘80s, he served as president for the Orlando Philharmonic and board member of the Orlando Ballet, so it was a natural transition when equestrian Chester Weber called him and said the downtown auditorium in Ocala needed saving. Nassal was instrumental in helping raise the $4 million needed to open the Reilly Arts Center in October 2015. Bill has been a key player in the development and success of this performing arts venue. “Ocala is a special place,” says Nassal. “It’s a

town you can get your arms around. Its community is authentic, down to earth and solid. Ocala is certainly home, so that drive to Orlando and back each day is worth the trip without a doubt.”

of limestone stalactites, stalagmites, soda straws, flowstones and draperies.” The limestone formations in the cave are more than 30 million years old. In addition to the numerous caves that are located within the park, other geologic features of interest include sinkholes, limestone bluffs and springs. These features were created over geologic time through a process called dissolution, which occurs when limestone is exposed to acidic water and is slowly dissolved away. The park recently reopened to visitors after being closed since October 2018, due to damage sustained during Hurricane Michael. “Florida Caverns sustained devasting damages and lost more than 90 percent of its thick canopied forest,” explains Alex. “Major progress has been made toward repairing infrastructure and utilities and removing debris. Thousands of trees that were generously donated by multiple groups have been planted throughout the park.”

ever knowing what’s around each corner or through each passage, caves provide a sense of mystery and wonder, and Florida Caverns is one of the few state parks with dry caves and the only state park in Florida to offer cave tours to the public. Located in Marianna, just west of Tallahassee off of I-10, Florida Caverns is about three and a half hours from Ocala, which makes it the perfect spot for a weekend getaway. “[The park] offers visitors a chance to enjoy the irreplaceable natural, historic and cultural resources found within the park, as well as a multitude of outdoor recreation opportunities along the Chipola River,” says Alex Cronin, with the Florida Department of Environmental Protection press office. “The Florida Caverns has dazzling formations

Cave tours resumed this past October, thanks to the hard work of the park’s dedicated staff and volunteers. “Guided cave tours now feature a state-of-the-art, energy-efficient lighting system that illuminates the cave while protecting the lightsensitive ecosystems of the cavern,” Alex says. “Visitors can now see the cave formations clearly without the use of a flashlight.” On the tours, visitors are guided through a dozen cave rooms where they can learn about the cave’s history, early uses and interesting geological formations. Visitors may occasionally encounter animals that inhabit the cave, such as bats, mice, cave crickets, salamanders, cave spiders and the occasional snake or frog. You can also see the chisel marks made by 1930s-era Civilian Conservation Corps workers. “These hard-working men enlarged the cave passageways by hand so visitors could stand upright during guided tours,” says Alex. “They also built the park’s spacious visitor center.” When entering the caverns, it will take a few moments to acclimate to the dimly lit environment and year-round 65-degree temperature. As the tour concludes, visitors ascend a 15-degree walkway to emerge into a hardwood forest and enjoy a self-paced walk back to the visitor center. Cave tours are offered Friday through Monday on a first-come, firstserved basis and last approximately 45 minutes. f Christmastime has you in the mood for cooler weather and some holiday cheer, a trip north could make all the difference. These two Southeast locales are just a day’s drive away and can help you celebrate the season in a special way.

There is no other town in Georgia that packs in quite as much charm as Helen. At just a little more than two square miles in size, Helen is the state’s third most visited city. SMALL TOWN HOLIDAY Just 45 minutes southeast of Helen, Dahlonega is another small town full of holiday charm, and because it’s nearby, the cities can be explored during the same trip or completely on their own. Dahlonega is simply magic at all times of the year but especially during Christmas. “It is a time of coming together in our small town,” says Courtney Randolph, communications coordinator for the Dahlonega-Lumpkin County Chamber & Visitors Bureau. “Dahlonega Christmas is put on by the Old-Fashioned Christmas Committee, a group of merchants and volunteers that work very hard to make our

town a beautiful place. They have done a wonderful job of convincing many of our shops to stay open later so that our guests can enjoy the lights and a carriage ride, strolling entertainers and more.” New events are planned for this year’s festivities, including private Creative Christmas classes, Christmas Coffee tastings and a Christmas Tea & Paint. The Christmas Market features the opportunity to shop for homemade baked goods and treats, while the Festival of Trees event is a collection of 10-12 decorated Norway Spruce trees displayed in Hancock Park. The annual Alpine Speedway Christmas parade will be held on December 12, and the Dahlonega Carriage & Horse Rides will be held at certain times of the month. “Our town has always loved Christmas,” says Courtney. “We always knew it was special, but when Southern Living shared a five-page spread in their holiday issue a few years ago, we knew it would no longer be a secret. We have also been the site of a few Christmas movies. The Hallmark Channel filmed one of its signature seasonal hits, Christmas in Homestead, in Dahlonega a couple of years ago.” When looking for a place to rest your head, the Smith House Inn & Restaurant is an excellent spot for lodging in the historic district, as well as the prime choice for Southern dining. Recreation in the area includes many waterfalls and hiking trails, which take on a lovely wintery appearance during the colder months. Dahlonega is also known as the Heart of Wine Country, so consider visiting one of the eight wineries while you’re in the area. But even with all these fun activities, the best of the season still comes back to the Christmas revelry. “I love to stop by the Picnic Café & Dessertery for a peppermint hot chocolate,” says Courtney. “But my favorite part is strolling the historic district after the lights all come on at dusk.” Sounds like the perfect holiday scene to us! “Yes, all of the snow at Snowcat Ridge is 100 percent real snow,” he says, “And our snow is only made of one ingredient, water. Making snow in Florida requires a lot of magic, but our elves have been hard at work to make sure you can enjoy fresh snow this winter season.” And because this is real snow, warm, water-resistant clothing, including gloves and boots, are recommended. Closed-toe shoes are required on the slopes and in the igloo. The pros at Snowcat Ridge suggest layering, as you might start out cold and then gradually warm up as you play in the snow. A change of clothing is a good idea as well. If you can’t make it down to Dade City— which is just a little under 90 minutes from Ocala—during the busy month of December, don’t worry. Snowcat Ridge will be a seasonal park opening in November and, weather permitting, closing late March. Tickets can be purchased on the attraction’s website, and all general admission tickets

come with a two-hour time slot for tubing and all-day access for the Alpine Village and the Arctic Igloo. f you’ve been around awhile, you know that Christmas in Florida is anything but a winter wonderland. A new attraction in Dade City, Snowcat Ridge Alpine Snow Park, aims to make that a thing of the past. Snowcat Ridge opened its doors to the public on November 20, and we couldn’t be more excited for this new adventure. “Snowcat Ridge will feature Snowy Slopes—a 60-foot-tall and 400-foot-long snow tubing hill— and the Arctic Igloo, which is a snow play dome filled with real snow for our guests to build snowmen and play,” says Jon Pianki, marketing director with Snowcat Ridge. The 10,000-square-foot, snow-covered Arctic Igloo will include a child-sized snow hill for younger guests, while those brave enough can ride in a single, tandem or family-style tube down Snowy Slopes. There’s even a pair of Magic Carpet lifts that will whisk riders and their snow tubes to the top of the hill. In the Alpine Village, guests can enjoy food, drinks and games in between rides down the tubing hill, as well as a holiday market. Each night at Snowcat Ridge, a magical music and light show will take place on Snowy Slopes that can also be seen from the Alpine Village. So at this point, we know what you’re thinking: Snow? In Florida? We understand the skepticism, and although Jon won’t give up the secrets of how all that snow stays frosty, he does offer some reassurance.

cala’s annual holiday kick-off event, Light Up Ocala, may have been canceled this year, but that doesn’t mean we are short on holiday cheer. Ashley Dobbs, marketing and communications manager for the City of Ocala, invites everyone to check out what downtown Ocala has to offer this holiday season. A few favorites are back, plus some new offerings as well. “We have a variety of events going on,” she says. “This year, instead of one or two larger events, we are hosting smaller, more spread out events. We take everyone’s health very seriously but also want families to be able to celebrate the season and experience some holiday joy. If we’re able to provide that, albeit a bit modified this year, then that’s important. It’s been a different year for sure, so we are excited to be able to offer our community a bit of holiday spirit and cheer that’s maybe been missing throughout the year.” On Thursday, Friday and Saturday nights,

you can enjoy the lights downtown while listening to live holiday music. On Tuesday and Thursday evenings, Santa will be on the square to greet kids and their families. “This year’s Santa on the Square will be done using a reservation system,” says Ashley. “Kids will get five minutes to interact with Santa and photos will be taken. Once the meet and greet is finished, the kids can pick up a prepackaged bag of holiday treats

to enjoy.” The reservation system was implemented to maintain social distancing and avoid overcrowding. Santa will be wearing a mask, and participants will be asked to wear a mask as well. New this year are the photo ops, an addition Ashley is especially excited about. “Throughout downtown we are offering life-sized photo ops where people can stop and take some great holiday shots with family and friends,” she says. Look out for the giant candy canes and gingerbread men, a Whoville, a tropicalthemed holiday scene that includes lighted palm trees and Christmas flamingos, Santa’s sleigh and more. And hopefully the traditions of the holidays can help bring about a little bit of normalcy. “At the end of the day, it’s about spending time with family,” says Ashley. “That’s the most important thing.”

his time of year can be both beautiful and stressful, joyful and overwhelming. The year 2020 has been one for the record books, so let’s end it on a positive note. Over the following pages, we’ve compiled some of our favorite ways to spend time with family and friends during the month of December. So, in no particular order, we present our 12 days of Christmas.

12. LIGHT IT UP

There’s something about piling in the car and going on a hunt for beautifully decorated homes at Christmas time. Tune the radio into a station playing classic holiday tunes, roll down the windows and enjoy the sights. According to foxbusiness.com, Americans spent an average of $230 last year on decorations alone. And displays are becoming more elaborate and thought out. While exploring Marion County’s neighborhoods, make sure to take a quick detour through the downtown area, where more than 300,000 lights are on display. And while you’re in the car, make a bit of a road trip out of it and visit Cottom Farm’s Christmas Villages and Santa’s Southern Home in nearby Weirsdale. The drive-through light display and other festivities are well worth the short trip. The entry fee is $10 for adults, $5 for kids ages 3 and over, and kids ages 3 and under is free. The Christmas light maze, hayride and Santa’s house tour are included. The light display will remain open through New Year’s Eve. New this year is the 50-foot Christmas tree centerpiece. 11. DIY DECORATIONS

Whether you have children or not, an afternoon spent crafting is a great way to relax and unwind. And rest assured you do not need to be an artist to add a personal touch to your Christmas tree. At any craft store you will find wooden, acrylic, aluminum and ceramic ornament blanks. A Google or Pinterest search will yield literally hundreds of easy-to-follow suggestions for creating unique ornaments. Stock your craft closet with craft paints, fine brushes and glitter, and spend the day crafting. GLITTER ORNAMENTS • Shatterproof clear ornaments • Fine glitter • Polycrylic or Mod Podge Using a medical syringe or dropper, add about 4 to 5ml of polycrylic or Mod Podge into your ornament. Slowly swirl the ornament to

cover the inside with the liquid. Next, pour a few ounces of glitter into each ornament, swirling to coat the inside. Turn the ornament upside down to allow excess glitter to drip out. Use a hot glue gun to secure ribbons or other embellishments to your ornaments. Paint pens also work for writing and adding detail to the ornaments. SALT DOUGH ORNAMENTS • 4 cups all-purpose flour • 1 cup salt • 1 1⁄2 cups warm water Preheat oven to 325°F. Mix flour and salt well, gradually adding water and slowly stirring. Once firmness sets in, finish mixing and kneading with hands. Roll the dough onto a hard surface or cookie sheet, and use a cookie cutter to cut shapes. Use a toothpick to create a hole for ribbon in the top of each ornament. Bake in the preheated oven about 1 hour, until hardened. Decorate your cooled ornament with paint, and then use varnish or a clear coat to seal and protect. Recipe courtesy of allrecipes.com.

10. HOST A MOVIE MARATHON

Put on the PJs, grab some blankets and settle in for a day of holiday movie favorites. Plan to do nothing else (except eat, of course) for

the whole day. Everyone in the family gets to pick a movie to add to the list. When each movie is over, take a few minutes to talk it over, discussing your favorite and least favorite parts. In the spirit of the season, we wanted to share a few of our must-see holiday faves. A Christmas Story – You’ll shoot your eye out. We’ve all heard that famous line. In this 1980s classic hit, Ralphie attempts to convince his parents and Santa to get him a Red Ryder BB gun for Christmas. The Christmas Chronicles – Two years ago this Netflix movie became an instant holiday favorite. Brother and sister Kate and Teddy stowed away in Santa’s sleigh without him seeing. Unfortunately, the sleigh malfunctions and crashes and the presents are lost. The kids must now help Santa, played by Kurt Russell, save Christmas. The Christmas Chronicles 2 is now streaming on Netflix as well. Home Alone – This one never fails to provide the laughs. When Kevin McAllister (played by a much younger Macauley Culkin) is left at home while his family travels for the holidays, it’s up to the 8 year old to protect his house against would-be robbers, played by Joe Pesci and Daniel Stern. it was a great idea. First, create a list of all the necessities (gingerbread, graham crackers, icing and plenty of décor/toppings) and make a quick grocery run. Set your date, and create your teams. Maybe the kids are old enough to build their own house. If not, pair with mom, dad or another family member. A glimpse online will offer plenty of inspiration for your gingerbread creations. Have a prize for the winning house (maybe they get to pick dinner or that evening’s movie selection), and take pics to share on social media. Encourage your friends to vote for their favorite house to make the results official. When all is said and done, bon appétit!

Cookies, cupcakes, cakes, oh my! There’s no time like December to indulge in a little sugary goodness. Gather together a few favorite recipes and spend the day with family making treats. 8. THE GIFT OF GIVING

This past year left many families struggling, both emotionally and financially. In the spirit of the season, have your children or family members create one or two shoeboxes of supplies for the underprivileged or for our soldiers overseas. Operation Christmas Child (samaritanspurse.org) has delivered more than 150 million gift-filled shoeboxes to children around the world, and Operation Shoebox 24

(operationshoebox.org) has sent more than 1 million shoeboxes and 50,000 stockings to our troops. All tallied, the organization and its generous donators have shipped more than 200 tons of goods to U.S. troops. For a child, select the gender and age range first. Take a large shoebox and fill it with one “wow” item, such as a sports ball with a mini pump, a hand-held game or a stuffed animal. Then add in filler gifts like small games, treats, books, art supplies and hygiene items like toothbrushes and soap. Our soldiers also love receiving care packages while on active duty. Some box suggestions include warm socks, candy and gum, magazines, granola bars and other individually wrapped snacks and even Ramen noodles. Most importantly, don’t forget to add a personal note of encouragement or thanks. If you prefer to give locally, maybe select an angel from an angel tree or contact a local charity to ask about sponsoring a child or family this season.

7. GET TO BUILDING

Our creative director, Kristy Taylor, shared how a friend of hers has an annual family gingerbread building contest, and we thought

Why not start a new tradition this holiday season? Whether you choose to kick in a few dollars for each family member, or you want to go cost-free and homemade, a secret Santa gift exchange will create a bit of excitement and fun. Put everyone’s name in a hat, and have each family member draw a name. If you have little ones, they will need a bit of help with the shopping or creating, but make sure to keep the final product a secret either way! If shopping, limit the cost to $20 per person to allow for some creative gift giving. And no lists allowed. Each person has to come up with a gift or creation for the person on their list on their own. On Christmas Eve, once everyone is comfy in their PJs, sit around the tree and take the time to go one by one, opening each gift. To make it even more interesting, you could also create categories for your gifts. Everyone has to buy books, games, food, etc. More than anything, have fun with your new tradition and encourage appreciation all around.

5. MAIL A LETTER TO SANTA

Did you know the United States Postal Service can help your child receive a letter from Santa? It’s true! When your child writes a letter to Santa this year, you’ll have a little homework to do as well. Create a personalized reply to your child’s letter


and sign it from Santa. Be sure to include personal accomplishments and share what you’re proud of. Put both letters into an envelop and address it (disguise your handwriting) to your child. Make sure to add the return address as Santa Claus, North Pole, and place a first-class stamp on the envelope. Finally, place that envelope into a larger envelope with proper postage and send it to:

If you don’t have little ones at home anymore or if your children are teens and looking for a way to help, you can actually adopt real letters from needy children that were written to Santa. The Be An Elf organization (beanelf.org) allows donators to read through letters written to Santa and adopt the ones that truly move them. Using a barcoded address label, you can then supply that child with a return letter and gift. Your gift can be mailed from one of 19,000 USPS branches that offer label scanning. Be An Elf is a tax-exempt charity and helps support the United State’s Postal Service Operation Santa organization.

4. COCOA & S’MORES The weather in Florida in December is ideal for being outdoors. This season, plan an evening of s’mores and cocoa at the firepit. Set up a topping station outside with sprinkles, mini marshmallows, cinnamon sticks and more. Have the kids gather sticks ideal for roasting marshmallows to get the whole family involved. Once the goody goodness has been enjoyed, settle in for an evening of campfire games appropriate for the whole family. Some great

During the holiday break, a day trip or two should be in order. We already know there’s no place like home for the holidays, but that doesn’t mean you can’t get out and travel here or there for a few unique holiday celebrations. Here’s a few we are looking forward to!

3. CHOP A TREE

It may be hard to believe, but it turns out you can cut down your own Christmas tree for the holiday season right here in Marion County. Gibb’s Christmas Tree Farm and Nicholas’s Christmas Tree Farm are located in Citra and Summerfield, respectively. Gibb’s offers a choose and cut lot and potted trees, plus hayrides, a petting zoo and other outdoor fun. Typically, the farm has sand pine, northern Fraser firs, Arizona cypress and red cedar trees. Nicholas’s also offers a choose and cut lot and potted trees, plus fresh vegetables, raw honey, pure beeswax candles and more. Here you’ll find red cedar, sand pine, Leyland cypress and Arizona cypress trees. Keep in mind that due to COVID-19, event offerings could be limited. Christmas At Gaylord Palms // Through January 3 Although ICE at the Gaylord Palms won’t be taking place this year, there’s still a ton of holiday cheer to experience, including the new I Love Christmas Movies walk-through experience. This limited-edition, 17,000-square-foot sensory pop-up exhibit includes interactive moments and characters from some of your favorite holiday movies, including Elf, A Christmas Story, National Lampoon’s Christmas Vacation and more. There are more than 13 immersive scenes, including the Griswold’s magically decorated home. Masks are required for this exhibit, and tickets must be purchased in advance. Nights Of Lights // Through January 31 Now in its 27th year, this annual event features more than 3 million sparkling lights throughout St. Augustine’s historic district. The lights will remain lit through January 31, and there are plenty of photo ops for impromptu family pics. St. Augustine’s trains and trolleys will also be available for special tours. Sure, Christmas specials are fun to watch. But what about the books? Make the month of December all about exploring the pages of some special holiday books. To make it extra fun for the little ones, gather the Christmas books ahead of time and wrap them individually in gift wrap. Each night, have a child pick which book to unwrap and read. COOKIE COUTURE Jessica Crouch, owner of Cookie Couture, offers fresh homemade decorated cookies, designed and personalized to your special event. “I give customers full freedom to be involved with choosing or designing their cookies,” says Jessica. “The themes and colors are their choice. I am available to help with ideas and give direction as needed, but I want each customer to walk away feeling like they have chosen the best cookie design ever.” Cookie Couture also offers DIY cookie kits in any theme in case you’re looking for a fun gift for the kiddo on your shopping list. For $22, you’ll get a dozen cookies, sprinkles and colored icing that coordinates with your requested theme. Jessica first began making decorated cookies as a fundraiser for a friend who was battling breast cancer. “The first cookies I made were simple shapes with drizzled icing created from a recipe a friend shared with me in December 2013,” she says. “I had never decorated cookies before, so the squiggly lines they were adorned with were a great way to hide the fact that I didn’t know how to decorate yet. Thankfully the recipe makes a tasty cookie, because those early designs sure weren’t Etsy or Pinterest worthy.” These days, Jessica offers not only decorated cookies but little works of art. To

GIGGLES GOURMET POPCORN COMPANY Welcome to Giggles Gourmet Popcorn, where popping popcorn is a family endeavor. Open for just one year, Michele Martini, owner of the business, works with her sister, Susie, and sisterin-law, Sandy.

“If I had to give out titles, Susie would be the ‘Head Popper,’ says Michele. “Susie is the most outgoing person you will ever meet. You will always hear her laughing and joking with customers, but when it comes to her making popcorn, she is all business. That’s why we have such great flavors. Sandy would be the ‘Head Drizzler.’ Sandy takes care of all of our chocolate creations.” Giggles is a small-batch gourmet popcorn company with 35 or more flavors available daily. Flavors are grouped in three different categories: savory, sweet and gourmet, which have chocolate and/or nuts included. The shop also carries retro candies and sodas, and they make their own caramel and chocolate pretzels, chocolatecovered Oreos and turtles. “We encourage mixing several popcorn flavors together to create your own unique flavor,” says Michele. “We actually recommend several combinations, such as pairing Cheesecake and Blueberry or our Brick City Mix-up that combines three flavors: Movie Time, White Cheddar and Caramel Corn. Our most popular flavor is Caramel Corn, with options like adding sea salt or a hot variety called Kickin Caramel, which is made with our Jalapeño Cheese popcorn. For me, my favorite is Beer Cheese, and every now and then I will mix it with Bacon Cheddar.”

COOKIE LAB OCALA Megan Nardino takes the ‘lab’ aspect of her company’s name seriously. “I make all kinds of different cookies,” she says. “I like to experiment, so I try to come up with creative cookie mix-ins and toppings. The menu changes every week with chocolate chip always being on the menu. I post the new menu about a week in advance on my Instagram and then save it in the story highlights so it’s easily accessible.” A new business as of this past October, baking has always been an interest for Megan. “Very early on in my life I would watch baking or cooking shows instead of cartoons,” she says. “I have always loved baking, so starting this business truly made sense for me. My husband and I have always joked about starting a dessert lounge, so this is possibly the first step to that. I have a deep appreciation for food and dessert, which is what fueled this business.” Orders are booked through the link in the business’s Instagram account. There are set delivery times every week, and they do fill up quickly, so plan in advance. Larger orders are also available for gifts, businesses, weddings and parties. “My favorite part of baking cookies is that I get to do something I truly love,” says Megan. “[I also love] surprising people with a delivery. 3 1⁄2 cups flour, sifted 1 teaspoon baking powder 1⁄2 teaspoon salt 1⁄4 teaspoon baking soda 1 cup shortening 1 1⁄2 cups brown sugar 1 egg 1⁄4 cup evaporated milk 1 teaspoon vanilla or almond extract

Sift together flour, baking powder, salt and baking soda. Cream together, in separate bowl, shortening and brown sugar. Add egg, evaporated milk and extract, and mix together. Blend in the dry ingredients. On a clean surface, sprinkle a bit of flour and use a rolling pin to roll out dough to 1/8-inch thickness. Using cookie cutter, cut desired shapes and place cookies on ungreased cookie sheets. Sprinkle with sugar. Bake at 400°F for 8 to 10 minutes. Sprinkle sugar on cookies or decorate as desired.

1 cup butter 1⁄4 cup powdered sugar 1⁄4 teaspoon salt 1 teaspoon vanilla 1 tablespoon water 2 cups all-purpose flour, sifted 2 cups pecans, grated or finely chopped Powdered sugar

Cream butter; blend in sugar, salt, vanilla and water. Add flour and pecans; mix well. Chill if dough is soft. Shape into finger-like ovals using level teaspoons of dough. Place dough on ungreased cookie sheet, and bake in a 350°F oven for about 15 minutes. Roll in powdered sugar once cooled a bit.

SOFT MOLASSES COOKIES From the kitchen of Donna Peterson

1 cup packed brown sugar 3⁄4 cup shortening 1⁄4 cup molasses 1 egg 2 1⁄4 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon ground cinnamon 1 teaspoon ground ginger 1⁄2 teaspoon ground cloves 1⁄4 teaspoon salt 3 tablespoons granulated sugar

Heat oven to 325°F. In large bowl, beat brown sugar, shortening, molasses and egg with electric mixer on medium speed or mix with spoon. Stir in remaining ingredients except granulated sugar. Shape dough by rounded tablespoonfuls into 1 1/2-inch balls. Dip tops into granulated sugar. On ungreased cookie sheet, place balls, sugared sides up, about 2 inches apart. Bake 13 to 16 minutes or just until set and cookies appear dry. Immediately remove from cookie sheet to cooling rack. Tips: Purchase shortening formed in oblong packages marked for easy cutting and measuring. It eliminates messy measuring in cups.Spray the inside of the measuring cup with cooking spray so molasses will slide out of the cup easily.

• 1 cup flour • 1⁄4 cup powdered sugar • 1⁄2 cup softened butter (not margarine) • 2 eggs • 3⁄4 cup granulated sugar • 3 tablespoons lemon juice (freshly squeezed or bottled) • 1⁄4 teaspoon baking powder • 2 tablespoons flour Preheat oven to 350°F. Stir together flour, powdered sugar and butter until it clings together. Pat into an ungreased square 8x8- or 9x9-inch baking pan. Bake at 350°F for 10 to 12 minutes. Remove from oven. Combine eggs, granulated sugar, lemon juice in mixing bowl with electric mixer. Beat 8 to 10 minutes until slightly thick and creamy. Stir in baking powder and flour. Blend just until all is moistened. Pour lemon/egg mixture over baked crust layer. Bake at 350°F for 20 to 25 minutes until center is set and toothpick comes out clean. Sift powdered sugar over the top while still warm. Cool; cut into bars. DEC ‘20
